ERIC AKIS Akis is the author of the hardcover book Everyone Can Cook Everything. His popular columns have created a faithful foodie fan base and appear in the Times Colonist on Wednesdays and Sundays.
ADRIAN LAM A University of Victoria grad, Lam has been a staff photographer at the Times Colonist since 2007. His work has appeared in publications across Canada and he revels in capturing daily life in Greater Victoria.

rt adds an extra dimension to everyday life in the places we spend most of our time. It’s also an extension of ourselves. We can find joy and inspiration from these creations of paint on canvas and carved wood. They raise our senses of curiosity and can be points of focus as we search for deeper meaning. Art provides comfort or whimsy. It kick starts conversations, inspires us and adds beauty and identity to the places we live. For a retired couple who recently relocated to a Victoria waterfront home, art put the crowning touches on their dream home and provided the “doors and windows” to past adventures and places they love. A stunning feature of their Dallas Road condominium is a 500-year-old Mogul door that is a reminder of their extensive travels, which have included memorable trips to Mount Everest base camp in Nepal, Africa’s Kilimanjaro and India.

The exquisite teak piece with original iron hinges and latches is a marvel of carving and was acquired in an antique shop in Jodhpur, northern India, and shipped home. It is set inside a recess in the wall near their entry and is an instant conversation piece. The artwork in their home, acquired through West End Gallery, also speaks to the couple of their years living and working in Montreal. La Maison Cachée, a bright oil work of a stone cottage by noted Montreal artist Robert Savignac, not only provides a bright transition between living and dining areas, but takes its owners along a pleasant memory lane as the scene is reminiscent of the stonefronted dwelling they once called home near Montreal. Savignac’s painting, Breakfast, fittingly displayed in the dining area, gives the owners a joyful taste of colour and fancy. Savignac’s vivid work is noted for creating a beautiful escape scenes apart from the real world, where flowers spill over balconies and burst from pots, vines creep up walls and sunlight plays in light and shadow.

Perhaps the most alluring art in their home is Hiver de Givre, a mixed media work by Quebec-based Ariane Dubois. The magnificent large work graces the living room overlooking the Victoria waterfront. Translated it means Winter Frost, and despite our lack of traditional winter on the West Coast, its owners say the work mimics the ocean sprays of our winter months and the wind in summer. It brings “the outside indoors, and it inspires us in so many ways,” the owners say. “It brings us very different lights in the seasons and at different points in the day.” Dubois’ work is intriguing. The artist says she is inspired by nature and the sea-
sons, which act as the memory of passing time. The landscape image becomes “pretext to achieve a personal and meditative impression.” Dubois’ method involves thin layers of oil on top of acrylic, latex and enamel paint. Textured layers are built on top of each other and reveal a “lyrical imagery from patterns of nature.” Patricia Johnston’s Storm Season Pacific Rim has a prominent place above a gracefully framed fireplace in the living room. The owners say the scene is a reminder of their more recent closer-tohome adventures on the Island’s wild west coast and serves well their philosophy of bringing the outdoors into their home.

A Fairfield couple renovating their home chose a kitchen Island as a focal point for their family. The square cherry posts are hand-carved and it seats six for meals, homework and gatherings. Cabinet maker Jason Good and designer Clare Reimann did a meticulous job creating cabinets, fitting appliances and adding special touches, including a window seat and light valances.

Emily Carr House is alive. The 1863 two-storey heritage building, a national and provincial Historic Site, isn’t just a beautifully restored example of the Italianate style favoured by architects of its day. On any given day, it is alive with the sound of a kettle whistling from the kitchen, the smells of fresh-baked cookies, the sight of a delicate fine-bone china tea set on a linen tablecloth, and the sound of footsteps and conversation wafting through the house. Somewhere underfoot, Misty, an 18-year-old cat, emerges at the prospect of treats. 74

If Emily Carr were alive, she would immediately recognize the house, with its yellow exterior and white trim. Horse-drawn carriages still roll down Government Street in front of the home, although they are now filled with camera-toting tourists. Followers of Carr, who died in 1945, would no doubt have read about her childhood growing up in the house in her book, The Book of Small. “Simply put, the house mattered to her,” says Jan Ross, the live-in curator of the home. “We know it was a loving home because she wrote of it in her journals. Even when she moved away, she wrote of how she wished the old house could fold up and fly away with her.” The house would remain a touchstone for the artist as she embarked overseas to pursue her education or during her journeys to what were then known as the Queen Charlotte Islands to paint her famous landscapes. After the family sold the house in 1938, it passed through a number of owners, suffering deferred maintenance over the years until demolition seemed imminent in the early 1960s. Saved from the wreckerâ&#x20AC;&#x2122;s ball by Member of Parliament David Gross in 1964, the house became a community arts centre until it was acquired by the province in 1976. As an interpretive centre dedicated to Carrâ&#x20AC;&#x2122;s life, art and written works, it attracts more than 5,000 visitors a year. They will immediately notice the house glowing from the thousands of hours of painstaking restorations. But the most unusual attribute could be its continued occupation. Unlike many historic buildings, which are merely repositories of artifacts of bygone days, part of the Carr house still functions as a family home. Ross serves as the resident curator and a
steward of the property, having lived in the upper level of the two-storey house for the past 19 years. She raised her family in the house, with her two girls the first children since the Carrs to celebrate Christmas there. In her time in residence, Ross has opened the doors to historians, architects, conservators, volunteers and fans of the artist over the years. Some come to marvel at the dedication of volunteers, who have peeled back a century of paint and wallpaper to uncover the original pattern and colour of walls. Others come with the hope of capturing the essence of the artist. They are seldom disappointed, with memories that fill every room, art in every corner, period bric-a-brac that line mantles and echoes from the past seeping from every pore of the house.

“It’s a unique experience,” said Ross, who began her career with a history-in-art degree from the University of Victoria. “For some, the visit is like coming on a pilgrimage. Many have seen pictures or have read her works in the past. Now they are walking in the steps, in the same rooms as the young Emily Carr.” If the walls could talk, they would perhaps whisper that her spirit still lives there. The walls continue to display art, with contemporary art exhibitions held in the house featuring works by various local artists throughout the year. While the province provides some of the core funding, the house still needs to generate revenue to keep the doors open.

Walk into the kitchen We show you how to prepare a skillet roast chicken and a delicious French-style dessert the cast-iron way, for centuries a favourite method of cooking PHOTOS BY ADRIAN LAM
of a Victoria home a century ago and you wouldn’t find Teflon skillets and silicone muffin pans. They weren’t invented yet. But what I call the original non-stick cookware — cast-iron pans — were in daily use and some from that era could still be in kitchens today. I say that because cast-iron pans such as skillets, Dutch ovens, griddles and other vessels are built to last — if you treat them right. The Chinese made the material for cast iron vessels as early as the Han Dynasty. In those early days, they used them for salt evaporation. That material later became moulded into castiron cooking pots and they eventually found their way to places such as Europe and the New World. For centuries before electric ovens, cooks were fond of cast-iron pans because they could retain and evenly distribute heat. The pans were also popular because they could be used in hot and rugged cooking conditions, such as in a hearth, hung over a campfire or even nestled in the coals of a fire.

Skillet Roast Chicken with Lemon, Garlic and Sage.
When pans with non-stick surfaces came into use in the 1960s, cast-iron pans fell out favour. One big reason was that they were prone to rusting if not cared for properly. But taking care of them is not difficult and if you do they’ll last for decades. Cast-iron cookware is made by pouring molten iron into moulds. During the process, microscopic air bubbles rise, causing tiny holes to form on the surface when the iron sets. If the pan is not properly seasoned (sealed) before it’s used, moisture getting into those holes can eventually cause the pan to rust. Some companies conveniently sell their pans already seasoned and ready to use. Other companies require you to do the seasoning and recommended techniques vary. When I season a new cast-iron pan, I wash and thoroughly dry it first. I lightly wipe the pan, handle included, with a thin coating of vegetable oil. Don’t apply too much oil or you may get a sticky finish. The pan goes into a 350° F oven for one 92

hour, the oven gets turned off, I let the pan cool there to room temperature and then take it out. I then apply another thin coating of oil and it’s ready to use. During the heating process, you could put a baking sheet on a rack below the pan to catch any dripping oil. After each use, I wash the pan in hot, soapy water. I never let it soak too long and avoid using abrasive cleansers or scrubbers that may “un-season” the pan. I then dry the pan well and after the first few uses, will wipe it with another thin coat of oil before storing until needed again. If you own an old cast-iron pan and it’s rusted, you should be able to revive it by first moistening the pan with water and sprinkling it with scouring powder. Now scrub away the rust with a metal scrubbing pad. In this case, you can use abrasive cleaning products, as you will be sea-
soning the pan again. I’ll then wash, dry and then oil, heat and season the pan as I described above. When seasoned and handled properly, the pan darkens and forms a coating that prevents sticking and rust from forming. I’ve discovered that if I frequently use the pan and wash and dry it properly, I no longer have to keep oiling it before storing it away. I know that to be very true because my wife and I own a nice collection of new and old cast-iron pans that we, as folks in Victoria would have 100 years ago, frequently use to cook just about everything, from pancakes to steaks and roast chicken.

Eric’s options Skillet Roast Chicken with Lemon, Garlic and Sage Juicy, aromatic roast chicken flavoured inside and out with lemon, garlic and sage.
Preparation time: 20 minutes Cooking time: About 90 minutes Makes: 4 servings 1 2 1 ⁄2 1 6 16 1 ⁄2 •
medium lemon Tbsp olive oil tsp paprika (3 lb.) chicken, patted dry large garlic cloves, thinly sliced fresh sage leaves small onion, sliced salt and freshly ground pepper to taste
Preheat the oven to 350° F. Finely zest the lemon; place the zest in a small bowl. Cut the lemon in half and squeeze its juice into the bowl. Mix in the oil and paprika.
Cut the squeezed lemon halves into chunks. With your fingers, working from the cavity end, carefully loosen and lift up the skin off the top of each breast. Slide half of the garlic slices and eight of the sage leaves underneath the skin, pushing them into different spots around the chicken. Press and set the skin back into place. Stuff the onion, lemon chunks and the remaining garlic and sage into the cavity of the chicken. Fold and tuck the chicken’s wings under its body and tie the legs together. Set the chicken in a 10-inch castiron skillet. Brush the lemon juice/zest mixture all over the chicken. Season with salt and pepper. Roast the chicken, brushing it occasionally with the pan juices, for 90 minutes, or until an instant-read thermometer inserted into the deepest part of the thigh registers 170° F. Transfer the chicken to a plate, tent with aluminum foil and rest 10 minutes before carving and serving.
If you would like gravy, remove the fat from pan drippings. Add 2 cups of chicken stock and bring to boil. In a bowl, mix 3 Tbsp all-purpose flour with 1 ⁄2 cup chicken stock until smooth. Slowly whisk into the boiling stock and simmer until the gravy thickens.

dried black mission figs (see note) cups boiling water Tbsp butter, at room temperature large eggs cup milk cup granulated sugar tsp grated orange zest cup orange juice tsp pure vanilla extract tsp ground cinnamon tsp ground nutmeg cup all-purpose flour cup sliced skin-on almonds Icing sugar to taste, for dusting Whipped cream or crème fraîche, to taste (optional)
Place the figs in heatproof bowl and pour in the boiling water. Let figs plump in the water 30 minutes. Drain the figs well and then set aside. Preheat the oven to 425° F. Brush the inside of a 10-inch cast-iron skillet with the butter. Place eggs in a medium bowl and beat until thoroughly blended. Mix in the milk, sugar, zest and juice, vanilla, cinnamon and nutmeg. Sprinkle in flour and whisk until a smooth batter is created. Pour the batter into the skillet. Set the figs on top off the batter and then sprinkle with the almonds. Bake the clafouti in the middle of the oven for 25 minutes or until puffed on the sides, golden on top and the filling is set. Cool the clafouti 20 minutes and then serve warm. Or, cool to room temperature and serve that way. Lightly dust the clafouti with icing sugar just before cutting into wedges and serving. If desired, top each plated wedge of clafouti with a dollop of whipped cream or crème fraîche. Note: Dried black mission figs, which are about 11⁄2 inches long, are sold in the bagged, dried fruit aisle of most supermarkets. You will also find them at stores offering a good selection of bulk foods. Tangy, sour cream-like crème fraîche is sold in tubs at some supermarkets.
