Broad, wholesome, charitable views of men and things cannot be acquired by vegetating in one little corner of the earth all one’s lifetime. Many of us have taken this to heart. International tourist arrivals have increased from 25 million globally in 1950 to 1.32 billion in 2017. More than 10,000 people visit the Mayan Riviera every day — an area where there are no established recycling programs. The impacts of tourism on wildlife and habitat, water, climate and humans cannot be understated. Canada is receiving an increasing

share of the tourism pie. 2018 was a record year with arrivals reaching 21.13 million. Visitors love us because we have stunning scenery and are seen to be clean, green, safe and relatively affordable. The cruise ship industry contributes significantly to our area’s tourism economy. According to the Greater Victoria Harbour Authority, 212 ships carrying 440,000 passengers arrived in 2010; this increased to 243 ships and 640,000 passengers in 2018. The Saanich Peninsula is the gateway to Vancouver Island for millions of visitors each year who arrive by air and ferry. For many years, communities losing

their industrial base were encouraged to develop tourism as a “green” economic diversification strategy. Tourism has evolved in many ways that are not clean, green, sustainable or ethical. Anyone who has visited Venice lately can attest to the impact of overtourism. As responsible hosts, we have a duty to be aware of and accountable for our impact on the environment and the community. We have an obligation to educate visitors about our expectations around limiting energy and water consumption, the four Rs of recycling, and about our culture and customs. We have a tremendous opportunity on Vancouver Island, to lead the world

in offering travel experiences for visitors who are mindful of their carbon footprint and are seeking sustainable tourism options. If you are interested in learning more about sustainable tourism, consider attending the third IMPACT Sustainability Travel & Tourism forum on Jan. 19 to 22, 2020 in Victoria. The laudable goal for this conference is to align the Canadian tourism industry, stakeholders and communities touched by tourism, behind a vision to achieve economic, social and environmental sustainability. Agri-tourism on the Peninsula his month, we briefly review a vital and core Peninsula Industry sector that is definitely under the awareness radar, i.e., agriculture, food processing and agri-tourism. Recently, a Saanich Peninsula focused agri-tourism initiative funded by the Canadian Experiences Fund through Western Economic Development (tiny.cc/s5uyfz) was approved and will soon be implemented. The program was applied for and will be led by Destination Greater Victoria, who received significant support this past spring during the application process. Supporting contributions to this initiative included CRFAIR (Capital Region Food and Agriculture Initiatives Roundtable). This program will have both a leisure marketing component to drive travellers, and also a capacity building and training component to help industries who are

interested to learn about and prepare to meet the demand for the very lucrative conference and incentive travel business segment. For example, representative companies that reflect this burgeoning agri-tourism industry include Country Bee Honey Farm (countrybeehoney.ca), 10 Acres Farms & Restaurants (10acres.ca/bistro) and the Fickle Fig Farm Market (theficklefig.ca). We have spent the last several years examining issues specific to the manufacturing sector on the Peninsula, includuing affordable workforce housing, skilled trades and transportation options. I will focus numerous upcoming articles examining agri-tourism, the exciting and burgeoning new industry sector on the Peninsula, understanding and explaining what they do and how these advocacy issues impact their operations. November BY DIGTHIS inish planting spring-flowering bulbs. Plant as many as you can afford and can find space for in your garden. Bulbs can also be planted in containers – a good idea where deer are a nuisance. Layer the bulbs in a large container. Plant them on top of one another in layers for a spectacular display from early to late spring. Clean up weedy paths. Clean their surfaces minimally, lay down cardboard and/or thick pads of newspaper, and cover with wood shavings or gravel. Mulch! Once you’ve raked up fallen leaves you have a terrific winter mulch. For winter mulching, you want fluffy stuff, so don’t bother to chop or shred the leaves. Just rake them up and spread them around winter veggies and other shrubs. Put excess leaves in your compost or store them in a wire cage to break down into a fine leaf mulch for next spring. Many municipalities sell leaf mulch at this time of year for very little cost. Top dress your beds with mulched leaves and it will break down over the winter greatly improving your soil. The cool-weather season is ideal for adding and shoring up structures like compost enclosures, fences, and arbours. Weed and clean emptied vegetable and annual flower beds. Lime all except for sites to be planted with potatoes. Cover the bed surfaces with compost or/and manure. (No manure for potato sites.) Lime lawns and plants that do best in slightly alkaline soils, such as lilac, artichoke, mock orange, pinks. Tidy. Cut back the more unsightly dead growth of perennials but leave some to mark their positions and help protect the plants. Shorten overlong rose canes that are prone to damage in winter winds. You can save money by keeping leftover seed for use next season. Most vegetable seed should last at least a couple of years, with the

exception of parsnips and onions, and some can last much longer. Store leftover seeds in a uniformly cool, dry, dark place. Helen Chesnut uses a closet next to the north-facing front door. I keep mine in a plastic container in a cool part of my house. Indoor tropical plants brighten the room but more importantly they contribute to air quality inside your home. Even a small house plant will do this. Pot an amaryllis bulb or start up some paperwhite narcissus for Christmas flowers. Keep on top of brassica pests on overwintering cabbages, broccoli and Brussels sprouts. Whitefly and cabbage aphid can build up over the summer and survive the winter, ready to move on to new spring crops if the cycle is not broken. Pick off infested lower leaves. Spray with insecticidal soap as a last resort if infestations are bad. Continue to keep a watch for cabbage caterpillars, and pick off any that you see. Tidy up strawberry beds and remove dead and yellowing leaves from perpetual varieties. Mulch with compost or manure. Now is the time to gather remaining apples and pears still on the trees before the frosts. Collect fallen leaves from beneath fruit trees to discourage diseases from returning. Also remove any infected fruit still remaining on the tree as this is a possible vector for infection of next year’s fruit. Divide plants of herbaceous herbs (perennial plants that die down each winter) such as lady’s mantle, chives, lemon balm, bergamot, sorrel, oregano, hyssop, lovage, sage and pennyroyal. Move tender herbs under cover. Make sure your greenhouse is ready for winter. Check that your heater is working properly and compost any plants that have finished producing. Move tender plants into your greenhouse to protect them from lower temperatures and even snow. digthis.com

Roasted Beets With Sauce

To roast beets, wash, then rub them with olive oil; add just a small splash of water, and then wrap them tightly in foil. Wrap two or three together and put them on a baking tray in oven at 375 degrees for about an hour, depending on size and freshness of the beets. When the time is up, just leave them sitting out of oven until you

need to peel them. The skins slip off beautifully and the flavor is better than steaming or boiling. SAUCE 2 tsp Dijon mustard 2 tsp horseradish 1 clove garlic, minced salt and pepper to taste 2 tbsp olive oil 2 tbsp lemon juice Mix ingredients together and serve with the roasted beets. Depending upon how you like

them, the beets can be served whole if they’re small, sliced or diced. Serve the sauce in a little pitcher at the table alongside the beets. Garnish with big swath of chives. Enjoy!
