Five Steps Toward a Water-Smart Landscape Our water supplies will be more limited and more expensive in the future. Up to half of your water use could be outside your home, and much of that use could be reduced, so this is a good time to think about reducing your water bill and protecting the environment. No single action would be best for all households, but here are five steps and related resources toward water-smart landscaping.

1. Reduce Your Water Needs

The first and best action is to use droughttolerant plants: California natives, other Mediterranean climate plants & succulent plants. Also, reduce the size of your lawn, preferably to zero. Replace turf with a low-growing grass or other ground cover, or perennial plants.

2. Irrigate Efficiently

Group plants according to their water needs, and install a drip irrigation system to control how much water you provide and where you provide it. Study the design of drip systems yourself or use a qualified contractor.

3. Develop Alternate Sources of Water

During our rainy months, you can harvest a lot of rainwater and store in tanks for garden use during dry periods. Visit the online rainwater harvesting community at www.harvesth2o.com for more information.

Also, recycle your gray-water for garden use. The water from your washing machine is easy to recycle, and should be your first target. To use gray-water on your plants, avoid bleach and soaps that contain sodium salts or boron.

4. Retain Water in the Landscape

Let water soak into the ground, and minimize evaporation. Retaining walls and terraces reduce the speed of water movement, giving time for it to soak in. Also, mixing wood chips or other organic material into the soil helps water to penetrate, and permeable surfaces allow water to flow to the soil. Mulches help to reduce evaporation and also make gardens more attractive.

5. Keep Our Watershed Clean

is also important to manage the quality of the water that leaves the landscape, carrying harmful chemicals and other contaminants into the watershed and eventually into the ocean. Plants that are appropriate to the local climate and soil type can be great additions to the landscape without requiring chemical supplements. When you need to fertilize plants, control weeds or reduce insect populations, avoid synthetic chemicals. Many environmentally friendly options work just as well and reduce costs too. The University of California’s has information on Integrated Pest Management, including the publication, Pests of the Garden and Small Farm. Search for it at www.anrcatalog.ucdavis.edu/.

Finally, when using potentially harmful chemicals anywhere on your property, minimize runoff and erosion to keep them out of the watershed and the ocean. The practices that retain water in the landscape also will keep harmful chemicals from leaving the landscape and entering the larger environment.

In This Economy, Why Go Green? Many perceive buying and building green to be a lot more expensive than going mainstream. It may surprise you to learn that there are a multitude of items that are priced the same or even less. Paint is a perfect example, and there are many cost-effective flooring options as well. Here is an offering of thoughts to refresh your resolve in shaky times.

The High Cost of Cheap Goods

When we purchase inexpensive goods, there are costs that we aren’t paying for at the cash register. We have become a society, if not a world, where the health costs we suffer from bringing toxic goods into our homes, putting them onto and into our bodies, pets and loved ones is often overlooked.

There are enormous environmental costs in the form of pollution created by the extraction of ingredients needed to make goods. These include poisoning of air and groundwater, which in turn poisons wildlife in present, as well as future generations. It is generally accepted that we pay more for good quality, also known as, “You get what you pay for.” One well-executed paint project can last several times as long as a poor job, with inexpensive paint for instance. Truly green goods start at a higher quality level, and hence price level, because they last much longer, perform better and are made with more expensive, higher quality ingredients. Truly green companies are spending more to do right.

Shopping Locally

Is a small additional cost worth supporting a small local business to STAY in business? You can think of that difference as making a charitable donation to a thriving local economy with local jobs! If there is a difference, is it worth your time and research to make sure the item, say flooring, has the quality and features you want, need and deserve for your money?

Naturally, the on-line business can offer you a better deal, since it’s not nearly as costly to operate out of a warehouse, with computer and telephone, where no one can check out samples, touch and feel, compare and be educated. Who do we hold accountable if something goes wrong? Worse, where will we touch, feel and research if there are no brick and mortar stores left to browse in?

As a society we are learning new lessons: living with less, and investing in durable goods that we know make the least impact on the planet and our health feels great, especially when purchased from friends in businesses that care about us, our families and our future, and will be around to help us again. In some ways, we are going back to the future.

Dreaming of Spring & Summer? Keep warm weather home improvements on your wish list A harsh winter may have many Americans dreaming of daffodils, green grass and open windows welcoming in fresh air. How will you celebrate a day of warm weather that signifies spring has arrived? Many people will devote the day to spring cleaning. Cleaning windows is the most dreaded spring cleaning chore for nine out of 10 homeowners who intend to take on such projects, according to research from Pella Windows & Doors. Second on the list of least favorites is clearing out gutters or organizing the inside of the home and third is yard work.

Spring into action

Not only will spring bring warmer temperatures and cleaning chores, but a likely wave of remodeling projects. According to Pella's research, 61 percent of homeowners plan to make improvements to their current home, while only 6

percent said they would move into a home that doesn't require upgrades. A smaller group of consumers plan to build their dream home in 2010.

Spruce up for a new look

Installing new carpet or flooring is perhaps the most popular home improvement slated for the new decade. According to the study, 48 percent of homeowners planning to make upgrades have intentions of replacing carpet or flooring. Updating the interior or exterior of the home was a close second and planting a new landscape was the third most popular curb appeal task.

So for those pulling up the carpet or painting their house, what do the experts say are the latest colors and trends to consider? This year, the consensus on home decor and design is "ease."

Tranquil, cool colors fit the notion of relaxation and respite, while kitchen design trends showcase the total dining experience and blend the kitchen to meld seamlessly into the rest of the home.

Simple solutions

Rhododendrons

Most types of rhododendrons grow excellently in Santa Cruz County If you live in Sunset Magazine Climate Zones 15, 16, & 17

(www.sunset.com/garden/climate-zones/), you should have no trouble in growing Maddenii series & Vireya series rhododendrons. Even if you live in colder areas, such as in Ben Lomond, Maddenii series rhododendrons such as Mi Amor, with its huge fragrant white flowers, can be grown, though you might have bud blast after a cold winter.

Perhaps the best types of rhododendrons for Santa Cruz County are rhododendrons that have been hybridized in the western part of the United States, Maddenii series rhododendrons, Vireya Series rhododendrons, and deciduous azaleas.

When one thinks of hybrid rhododendrons, what one usually thinks of are the elepidote rhododendrons such as Point Defiance, Tahitian Dawn, Naselle, Sunspray, Queen Nefertiti, Senator Jackson, and Taurus. Rhododendrons are broken down into two types, lepidotes (rhododendrons with scales), and elepidotes (rhododendrons without scales).

The majority of rhododendrons in the nursery trade are elepidote rhododendrons, as are Point Defiance, Tahitian Dawn, Naselle, Sunspray, Queen Nefertiti, Senator Jackson, and Taurus. Maddenies and Vireyas are lepidotes.

Since the 1940s, many rhododendron hybrids have been created in the western

United States. The flowers of our rhododendrons are far superior to East Coast hybrids, English hybrids, and nineteenth century rhododendron hybrids which many nurseries and garden centers try to sell.

Maurie and Fran Sumner lived in San Francisco. They needed room for their hybrids and other rhododendrons, so they bought property in Aptos, and this became the Monte Toyon Rhododendron Garden. This garden, now a part of the Monte Toyon Camp and Conference Center operated by United Camps, Conferences and Retreats is very likely the premier rhododendron garden in Santa Cruz County. Maurie and Fran Sumner created some of

the Maddenii series hybrids Martha Wright, Mi Amor, My Guy, My Lady, Owen Pearce, and Saffron Prince.

John Hixson raised Fragrantissimum Improved from seed acquired from the American Rhododendron Society Seed exchange in 1982. For many years, John Hixson had a wholesale rhododendron nursery in Watsonville, and sold a lot of rhododendrons at the Farmers Market at Cabrillo College.

Nancy Ledyard, who lives in Aptos, has created many outstanding Maddenii series hybrids. Hopefully she will name, some of her creations, and make them available to the public. At the urging of Mike McCullough, some of her hybrids are being evaluated at a rhododendron garden in Larbert, Stirlingshire, Scotland. Mike McCullough has also created Maddenii series hybrids for the American Rhododendron Society Seed Exchange. Maddenii series rhododendrons can be seen at the Strybing Arboretum, University of California Botanical Garden, Lakeside Garden Center, Mendocino Coast Botanical Garden, Humboldt Botanical Garden, and at Monte Toyon. At the UCSC Arboretum, and at the Environmental Horticulture Center Botanic Gardens at Cabrillo College there are areas comparable to the Strybing Arboretum.

This coming November for the Monterey Bay Chapter of the American Rhododendron Society, Allan Korth, Jerry Harris, Nancy Ledyard, and Mike McCullough will be conducting an “Ask the Experts� panel about how to grow rhododendrons successfully in Santa Cruz County.

In January, Steve Hootman of the Rhododendron Species Foundation (www.rhodygarden.org) will be presenting a program on species rhododendrons while in February, Polo de Lorenzo of the Sonoma Horticultural Nursery (www.sonoma hort.com) will present a program on good rhododendrons for our area; and in March, Christy Hartsell will offer a program on Vireya series rhododendrons. Tips for Your Organic Gardening What is Organic gardening? It isn't just gardening without the use of chemicals. It means working with nature to develop an ecosystem in your own garden. Organic gardeners only use animal or vegetable fertilizers rather than synthetics. It also means natural pest control devoid of industrial insecticides. It is a philosophy that stresses increasing the natural health of the soil, choosing appropriate plants that are suited to your area, and working with nature to produce a healthy and productive garden.

Using Bugs to Protect your Garden and Flower Beds

It’s important to learn about and encourage “good� insects like ladybugs, lacewings, and other predatory bugs to come into your garden so they control common insect pests. Another efficient predator is the praying mantis, a remarkable insect with a voracious appetite. Not only do they eat aphids, crickets & grasshoppers, they are fast enough to catch mosquitoes. How can one do this? You can plant fennel, dill, allyssum, ammi majus, and cumin in your garden to attract them.

Fennel is an excellent plant for attracting ladybugs. The statuesque plants are usually covered in ladybug eggs and larvae. Set aside a space in your garden for this beneficial herb. Keep garlic in 16

your toolkit. If insect pests like aphids become a nuisance, use the crush the cloves to make your own insect spray. Any garlic that sprouts can be planted in the garden to help repel other pests.

For the one herb your garden, try fennel. Not only do its leaves & flowers attract beneficial insects, fennel is a wonderful herb to use in the kitchen with its sweet anise flavor. A perennial, it's a very easy herb to grow. Remember, by learning to tolerate some damage by insects in your garden and flowerbeds, you give something for your guard bugs to feed on.

Controlling Pests

Don't let powdery mildew ruin your garden. Control it easily using milk! Mix 1 part milk to nine parts water and spray affected plants once a week. Whitefly can cause considerable damage as temperatures rise. Keep their numbers down by using sticky traps & organic sprays such as pyrethrum or neem.

Spider mites can suddenly become a problem during the winter months as plants are brought indoors into warm, dry environments. Keep plants well misted to increase humidity and keep spider mite numbers down.

Keep an eye on out on houseplants that have been outdoors all summer and are now being brought inside. Unwanted stowaways can flourish indoors where they have no natural enemies. Keep a bottle of soap spray handy to dislodge them before their numbers multiply.

Natural Fertilizer - Compost

Also, improve your soil to feed your plants. Add organic matter (Compost) in order to feed soil organisms that will break down this organic matter to feed your plants. Not only does compost nourish the soil, it makes kitchen and garden waste into a useful product!

You can compost almost all the organic matter from your household including garden cuttings, vegetable peelings and even eggshells. A definite no-no for your heap are meat scraps or dairy products. These will stink and attract rodents. Tealeaves and coffee grounds are great additions because they contain caffeine, a natural herbicide.

Growing in Containers

Growing sprouts indoors is not only nutritious but also ornamental. Before starting your seedlings, make sure your containers are clean. Wash them out with warm soapy water and sterilize them with a 10% solution of bleach. in the

Seedlings growing indoors will need to be fed every couple of weeks. Dilute fish fertilizer is a great choice but if you need to keep the smell to a minimum, try making a tea of worm casts with no worry about burning your plants.

Any container can be used to sprout wheatgrass. Start seeds in potting mix or compost and they'll be up in 3-4 days. To prevent damping off in your seedlings, sprinkle the top of your potting mix with cinnamon, a natural fungicide.

Growing Tips

Are the forsythia in bloom? If so, it's safe to plant cool-season crops like peas, cabbage & Asian greens.

If you want to get a jump on planting peas, start them indoors. You'll get a far better germination rate and your seedlings will be less susceptible to fungal and pest attack. Test that old seed before you plant it. Most seed should germinate between moist paper towels so that you can gauge how much to plant in your garden without wasting time & money. Keep amaryllis well fed with compost or worm cast tea. Both contain nutrients that help build strong roots & bulbs, which then lead to larger blooms.

If you want your Christmas cactus to bloom by the holidays, it's time to put it into a cool, dark place where it gets less than 8 hours of light per day. The change in temperature and light levels triggers the plant to begin bloom production. Cilantro can be started in late summer for early fall production. Sow seeds often in short rows so that you can keep picking through the fall.

Keep tatsoi producing well into the fall by picking individual leaves instead of harvesting the whole plant. Older leaves can be clipped from the bottom and will encourage a new flush of younger leaves.

If you have a pool or hot tub you might need to have some place to go when you’re not actually in the water or where you can shower or have a sauna without having to go back inside the house. How about building a poolroom in that unused space under the house or getting a prefabricated poolroom and assembling it with the help of some friends? If you are having a relative moving in to live with you or you’re looking for a place for teenagers that is not too close. You could consider converting the garage to a living space for that relative or the kids without too much trouble.

“Sure sounds good, but won’t it be difficult and expensive?” The answer is like a lot of things - ‘that depends’... These types of projects are relatively easy to do & not too expensive, as long as it’s not installing a kitchen or bathroom. It’s usually fairly easy to get a permit for a garage conversion or a bunkhouse. It’ll be more work to get a permit for a cottage or a poolroom that has a bathroom & a kitchen. The easiest project is the garage conversion but it gets more expensive as you add features like a bathroom, a fireplace, or removing the garage door

We built this structure as a meditation cottage for a client in the 1990’s with a masonry fireplace to warm up those cool nights but without a bath or kitchen. The current owners, Matt and Kirsti Scott, added an outdoor kitchen to create an entertaining area that feels like a mini Tuscan villa. A bathroom is located inside the copper topped pavilion near the hot tub. The space is now the location for monthly Girl Scout meetings among the lively family’s activities and anything but meditative! I hope this has inspired some creative thinking. The Central Coast received a welcome reprieve from the drought with above average rainfall this winter. This summer we may not be faced with stringent outdoor water use restrictions, yet now is a great time to plan for future dry years, which are sure to come. Installing and establishing drought tolerant landscapes is easiest in good rain years, when plenty of summer irrigation water is available to get your new plantings established.

Reduce your summer water use

One of the best ways to reduce your summer water use (and your water bill!) is to replace water thirsty lawns and exotic gardens with California native grasses and flowering plants. There is a wide range of native plant landscapes styles to choose from. Whether your preference is a relaxed cottage garden or a more formal manicured landscape, there are good choices for even the most discriminating eye.

Many people who decide to remove their conventional lawns want to replace them with a drought tolerant lawn of some type. There are more options than ever for using native grasses as alternatives to traditional turf. The main considerations are: 1) what type of native lawn is suited to your property, 3) what are your use requirements, and 3) what method of establishment is the most cost effective?

Choosing your lawn cover

The first point is to determine what species of grass will perform the best and

use the least water at you particular location. It is important to match the native grass species to soil type, drainage and sun exposure. For example, Western fescue (Festuca occidentalis) is a good choice for planting in shaded areas, whereas June grass (Koelaria micrantha) is best for harsh shallow soil and full sun.

Ornamental or play area

The next point to consider is the intended use of the new lawn area. If the lawn area will be strictly ornamental, red fescue (Festuca rubra) or a grass relative such as Berkeley sedge (Carex tumulicola) are good choices. Perhaps the lawn will be used for a dining area or for a children’s play area, then bent grass (Agrostis pallens) or purple needle grass (Nassella pulchra) will do well. Currently the only limitation is for intensive play areas, as none of the commonly available native grasses are suitable heavy traffic.

Seed or sod

The final consideration is which method to use for establishing a native lawn. The main options, in order of most to least expensive, are: 1) native sod, 2) plug plants, or 3) seeding. Although native sod is more expensive than traditional sod, it is rapidly gaining favor as the preferred method because like traditional sod, you roll it out and it is done. Plug planting is a good option for larger ornamental areas, especially if multiple species are to be used. Broadcast seeding, of one or many species, is an economical choice for very large areas, but the trade off is often

seen in the amount of effort required to get it established. The cost of weed management alone can far out weigh the installation cost savings of seed versus native sod.

Lawn or garden

Another lawn substitute option is a native habitat garden. Habitat gardens are designed to mimic nearby natural plant communities, such as meadows, shrub lands or oak woodlands. The most adaptable plant community for a small garden is the native meadow. On the central coast, most of the grasses found in meadows are perennial bunchgrasses. Native bunchgrasses are very drought tolerant and remain green throughout the summer with little or no water. Bunchgrasses provide a diverse array of form, texture and color. Interspersed with native wildflowers, the meadow garden will provide year round beauty as well has habitat for birds and butterflies.

Here are some tips for saving energy in your remodel: Replacing incandescent light bulbs with fluorescent light bulbs can save 75 percent of your lighting costs • Installing faucet aerators and low-flow shower heads can cut water heating costs and water use by 50 percent • Reduce air conditioning costs by installing ceiling fans • Sealing air leaks and adding insulation can save up to 20 percent on heating and cooling costs • There are also tax credits for installing energy efficient windows and doors that expire 2011. to protect indoor air. However, with carpeting, you can now find products that meet the Carpet and Rug Institute (www.carpet-rug.org) air quality standards for low emissions through its Green Label program. Growing Mint

The mint family offers a mouthwatering array of different types, such as pineapple mint, chocolate mint, apple mint, orange mint, not to mention spearmint and peppermint. With these refreshing scents and flavors to enhance your cooking, add to beverages, and use in potpourris, mint can be an indispensable plant. In addition, bumblebees and other pollinators are attracted to the delicate flowers that appear in mid- to late summer. Some varieties even sport variegated foliage for added interest in the herb garden.

Mint's only downside is it will take over your garden if it gets half a chance. But you can contain its exuberance and keep it close at hand by growing mint in pots. And I do mean "pots" plural. With the array of varieties, it can be hard to choose just one. Or you can confine mint in a garden bed with edging of metal or plastic. Bury the edging to a depth of 14 inches around the perimeter of the mint patch.

A Sampling of Mints for Your Garden

Spearmint (Mentha spicata), with its slightly sweet flavor, makes a refreshing tea, and can be used to highlight flavors in a fruit salad, or to add to new potatoes or grain pilaf. It's the mint of mint jelly, and is a key ingredient in mint juleps. Plants grow 2 to 3 feet tall, with pale pink or white blooms appearing in mid to late summer. 30

Peppermint (Mentha x piperita) is more pungent than spearmint, growing to 3 feet tall, with pinkish lavender flowers. It's a common ingredient in teas, especially for soothing the stomach.

Corsican mint (Mentha requienii) is a groundhugging mint that prefers shade. It drapes over a container or weaves in between stepping-stones or in a stone wall.

Growing and Harvesting Mints

Most mints can be started from seed, with the exception of peppermint, which is propagated by cuttings. Choose a sunny location (except for Corsican mint) with moderately fertile, humusy soil. Use a light mulch to retain moisture and keep leaves clean. Most mints are hardy to zone 3 or 4; Corsican mint is hardy to zone 6 so treat it as an annual in colder regions.

Segmental retaining wall systems lend themselves to phased landscaping projects built over a period of years. That's a trend landscape designers are seeing more of as homeowners have become more cost-conscious.

Directions: Cover your work area with

newspaper and disassemble the fixture. Clean the pieces and tape off areas that don't need to be painted. Following the instructions, apply indoor/outdoor primer followed by the new metallic paint. Once dry, remove the tape and reassemble the chandelier.

Detail the rooms

Directions: Remove register covers or light switch plates and place them on newspaper. Sand the surface lightly and

The Better Hearing Institute found that only 4 in 10 people with moderate-to-severe hearing loss use hearing aids. The Foodies are on the loose in Northern California bringing a fresh new unconventional perspective on food, wine & culinary trends to fellow self proclaimed foodies everywhere. The Foodies Episode 2 The Foodies Deep Sea Caper

We’re five Foodies who wanted a little change from the day today grind in the restaurant business. We decided to take a different approach and shake the whole thing up. We’ve got Skeeter the Manager, jack-of-all-trades, chef in his own right, “The Eye” of the operation. There’s Paul the Boss, tall with salt & pepper hair, impeccably dressed and no question, the man in charge. Jolie the Hostess lends a hand with her attention to detail, and kind of wild card of the bunch. D.B the Bartender is young, up beat, funny and looks as natural behind the bar as he would strutting down the runway in a fashion show. And Marina, the Waitress, who’s calm presence is sometimes what keeps all of these guys in line, she puts you at ease with her good looks, gentle charm and warm presence. We know first hand that there’s a lot more that goes into a dining experience than sitting down at a restaurant and enjoying a meal and we want to show you just what goes into it. So we packed our bags and hit the road, determined to bring a fresh new dining experience to our friends and fellow Foodies. Here we are in beautiful Northern California traveling the coast to change the way you think about your food one dish at a time, “From the Earth, To the Pan, To the Table.” We’re all here, Skeeter, D.B, Jolie and Marina and we’re at a location of Paul’s choice. We’re at The Boardwalk in Santa Cruz. Overlooking the ocean where surfers ride the waves in their wet suits and pelicans and sea gulls rest atop the buoys and light posts you can see The Pier and just beyond it is a long winding row of historic Victorian and Mission Revival mansions lining the cliffs. It’s tempting to spend the day on the roller coasters and playing pinball but once The Boss arrives it’ll be all business today so we grab some cotton candy and salted taffy and decide to pass the time playing some arcade games. As we’re looking around and talking about The Pier, Jolie remembers that it’s home to a place called Stagnaro Brothers and she

suggest seafood. Skeeter is quick to add his two cents and needs no help coming up with the rest. The dish will be Chinook King Salmon, with a blueberry salsa, candied Mano De Leon Sea Scallops and a, white wine sage butter sauce. It will be up to D.B to choose the wine and a signature cocktail & Marina will be in charge of the fresh produce. When Paul arrives and finds us amongst the kids playing games and goofing off, it’s time for a new game to begin, one that we’re all familiar with, get to work and beat the clock. Paul plugs a couple tokens into an old pac man machine and we gather around to listen carefully to our instructions. Tonight we’ll serve an eclectic bunch of Foodies from the quaint little town of Aptos. We’re scheduled for dinner at 8:00PM, at Severino’s Grill in the Best Western Seacliff Inn. We’ll be preparing for 12 VIP guests, which is a breeze compared to our sometimes 100 plus guest list. It’s noon now and time for our favorite part, venturing out to purchase the freshest ingredients, From The Earth. Jolie doesn’t have far to go she can walk right over to The Pier for the Chinook King Salmon and Mano De Leon Sea Scallops.

Marina has a couple stops to make, so she’s the first one out the door and headed to the farms where she’ll pick her produce. D.B has picked out the award winning 2007 Lindsey Paige Vineyard Chardonnay from the Alfaro Family Vineyard. There aren’t many a people around these parts that don’t truly enjoy a nice glass wine but for those who prefer a cocktail, D.B will provide a lovely handmade ginger mint mojito with blueberry garnish. Skeeter will head straight to Severino’s to scope out the location and plan the best way to set up.

Jolie enjoys a stroll down The Boardwalk and along the beach. It’s a sunny Santa Cruz day and although it’s a lot slower this time of year on the beach, there are some beach goers picnicking and walking around. Along the Pier are musicians playing for tips and tourists shops filled with postcards and tshirts. There are plenty of restaurants that look good for eating but Jolie has no time for lunch, she arrives at Stagnaro Brothers

D.B. has picked out the award winning 2007 Lindsey Paige Vineyard Chardonnay from the Alfaro Family Vineyard. Seafood Inc. to hand pick the fish. She’s pleased to find that amongst the many fillets of fish that lie on top of the tiny crushed ice for you to choose from, the King Salmon and Sea Scallops look the best. She’s sure this is some of the freshest seafood around and goes ahead and orders enough for 12. Marina has a lot to do in a short space of time. She heads first to pick up the asparagus. When arriving at the Ocean Mist Farm in Castroville, she’s amazed at how interesting the farm looks because this is actually primarily an artichoke farm. What she learns is that this family owned farm has been the largest producer of artichokes in the U.S since 1924. She diligently hand picks the stalks of asparagus and has to hit the road after this time consuming process.

She turns around and heads north to Watsonville to the Sand Piper Farms. On any other day, the sweet little berry farm would be the a great place to spend some time but with still one more stop to make and plenty of ingredients to hand pick, Marina loads a barrel of blueberries into the car and makes her way towards Los Gatos. This is the last stop but also the most amount of work. She’s relieved to get there. It’s nearly 2:00 now and the clock is ticking. Abounding Harvest Mountain Farm is a small family farm, complete with avocado and citrus roves. The multi colored trees abound the mountains and fill the air with a sweet smell. The view from the driveway is spectacular. Marina scrambles to gather the grapefruit and red onion and is happy to learn that she can also pick up some flowers for the centerpieces at Severinos Grill. She settles on bundles of Kangaroo Paws, Wisterias, Dahlias & Purple Iris’. The car is now filled with Northern California’s freshest produce and flowers. Satisfied with her finds, it’s finally time to meet the rest of the gang at the Sea Cliff Inn. D.B is the last Foodie on the loose and he’s at the Alfaro Family Vineyard in the Santa Cruz Mountains in Corralitos. He’s greeted by Richard Alfaro, bread maker turned winemaker who acquired the aging 75 acre apple farm and turned it into a vineyard. Richard not only provides enough cases of wine for D.B to haul off to the restaurant but he gives him a little tour of the 4 Vineyards that are lovingly name after family members and makes sure that D.B doesn’t leave without tasting some of his favorite wines. D.B is impressed with his selection and knows he’s made another good choice for this savory seafood dish.

Jolie and Skeeter are the first to arrive at the restaurant and are greeted by Dan Frazer, the Director of Food and Beverage, who is eager to show them around. It’s pretty hard to deny from first glance, this is a premier restaurant in Aptos. The California, three tiered resort style atmosphere is delightful. Outside there’s a patio surrounded by lush gardens and a Japanese style koi pond, clearly the place to be when weather permits. We couldn’t ask for a better place to host a Foodie party. Jolie works with Dan to determine what the seating and layout should be like and Skeeter hooks up with executive chefs Miguel Perez and Antonio Gomez to discuss the preparation required to begin the anticipated meal. We’re especially excited to hear Antonio Gomez’ outlook on cooking because it blends so perfectly with our train of thought he says, “the finest ingredients create the finest dishes”. This is exactly the frame of mind we’re looking for and we’re even more pleased to learn that Severino’s buys all locally grown goods to support local businesses. This is a routine we’re beginning to master, D.B shows up with the wine and cocktail ingredients and begins setting up the bar and schooling the staff on how to describe the wine of the evening. Marina hurries to set the tables and arrange the centerpieces just so.

It’s time to get busy in the kitchen and it’s effortless for Skeeter to work with Severino’s Executive Chefs Miguel and Antonio to bring this dish to life. Together, the three of them take on separate tasks to culminate the end result. Antonio is eager to work with the fish and takes on the seasoning of the salmon and sea scallops. Skeeter, Foodies King of Sauces begins on the white wine sage butter sauce. Miguel and Antonio graciously open up their kitchen to us and Miguel takes on the mixing of the blueberry salsa and blanching of the asparagus. As it often times plays out, once the aroma of these signature dishes begin wafting through the restaurant, the staff start nosing around for a taste. After everyone samples the dish, we’re confident and ready for the party to roll in. We’re all anxious to show off how they will masterfully bring these Northern California home grown gifts from The Earth, To the Pan. The bar is stocked, the tables are set, candles lit and the atmosphere at Severino’s Grill is chicly laid back. Skeeter has arranged a low key funk band that plays faintly in the background and the patio is lit up with twinkling lights to add that extra special something to this already special place.

When the VIP guests begin arriving, the wine is uncorked, the fresh mint muddled for the handmade ginger mojitos with blueberry and the bands tempo picks up the pace just enough to really loosen up the room. After some very light fare, the guests are ready to get to the dish that has everyone talking and it’s time to bring the delightful creation From the Pan, to the Table.

Upon finishing the meal we’re touched by the warm welcome we’ve received as Dan Frazer makes a toast to us. We’re honored to be here and in turn we toast again, thanking The Sea Cliff Inn for their participation in another successful Foodies party.

ingredients:

4 x, King Salmon Filets Center cut boneless, skinless approximately 6 inches each in length 12 Fresh Sea Scallops Salt, pepper & sugar to taste. 2 bunches fresh Asparagus 1 cup white wine 2 sticks unsalted butter 2 tbsp. heavy cream Juice from 1 lime 1 tbsp. fresh sage 2 cups blueberries 1/3 cup ruby red grapefruit 1/4 cup. Red onion, chopped 2 shallots 1 jalapeno pepper 1/3 cup. Grape seed oil 2 tbsp. olive oil 1 tsp. cracked pepper 1 tsp. sugar Salt and pepper to taste

Directions: PAN SEARED KING SALMON WITH BLUEBERRY SALSA CANDIED SEA SCALLOPS AND WHITE WINE SAGE BUTTER SAUCE. In a medium sized bowl mix the Blueberries, red onion, jalapeno, grapefruit, lime juice, grape seed oil, salt & pepper, cover and let stand for one hour to blend flavors. To prepare the white wine sauce, heat the oil in a medium saucepan. You don't want the heat to be too high, then add the shallots and garlic to the saucepan and cook until soft. (About 1 minute) Now add the wine and bring it to a boil and let it cook and reduced by half. Now add the cream and this is the important part, take the butter and cut it into (1) inch pieces and slowly start whisking in the cold butter, piece by piece. It is important that you let the butter melt

Luckily, we’ve pulled it off again and are amongst a group of full and satisfied fellow Foodies. When the evening comes to a close, we all take a long awaited seat and the 5 of us have our own toast to another job well done. It’s time for us to enjoy the meal. Blueberry Salsa

2 cups blueberries 1/2 medium red onion, minced 1 jalapeno pepper, seeded & chopped 1 Ruby Red grapefruit segments, diced 1/3-cup Grape seed oil 1/4 cup lime juice 1 tsp. salt 1/8 tsp. pepper

White Wine Sage Butter Sauce

2 tablespoons olive oil 2 diced shallot 2 finely chopped garlic cloves 1 cup dry white wine 2 tablespoons heavy cream 2 sticks cold unsalted butter cut into 1-inch pieces Salt Freshly ground black pepper completely before you add the next piece. Continue to whisk until the sauce is emulsified and strain it into a bowl. Add the fresh chopped sage and season with salt and pepper to taste and keep warm. Blanch the asparagus in boiling salted water until tender, remove and keep warm. Season all sides of the Salmon with salt, pepper, season the scallops with salt, pepper and sugar and cover and set aside. Heat a nonstick sauté pan over a high heat, and add a tablespoon of clarified butte (or raw, unsalted butter) and a tablespoon of vegetable oil. Add fillets and cook, without moving fillets, until pan regains lost heat, about 30 seconds. Reduce heat to medium-high; continue to cook until lightly browned and bottom half of fillets turns opaque, 4 1/2 minutes. Turn fillets and cook, without moving them, until they are no

longer translucent on the exterior and are firm, but not hard, when gently squeezed: 3 minutes for medium rare and 3 1/2 minutes for medium. Remove fillets from pan; let stand (1) minute. Add more oil/butter mixture if needed before you add the scallops. Place the scallop’s flat side down in the hot pan until a caramel-colored crust appears on the underside, flip and don’t overcook. The scallops should be removed from the pan while their centers are still slightly translucent be sure to serve them with the beautiful caramel-colored crust facing up! Assemble your plate starting with the wine sauce, place scallops, layer the asparagus, top with salsa, crown with the salmon filets and finish with more blueberry salsa. Garnish with fresh sage and sprinkle with a little paprika for additional color.
