The Opinel company was founded in 1890 in Chambery in the Savoie region of France by Joseph Opinel, and his descendants still own the company. Opinel employs around 100 people, produces 4 million knives per year and sells to 70 countries across the world. The easily-recognisable Opinel folding knife is acknowledged as one of the best knives in the world and has won design prizes. All handles are beechwood unless otherwise stated. All knives from size 6 upwards have a Virobloc safety system on the ‘collar’ which locks the blade into position – open or shut.

Traditional Range The main features of Opinel carbon steel are its exceptional cutting quality and its very easy sharpening. To protect the blade against rust, the blade must be wiped clean from fingerprints and washed and dried after each use.

Helle From Norway Brothers Steinar and Sigmund Helle started knife production in the old forge on their farm in Holmeland, Norway, in 1932 Then, as today, much of the production is done manually. The philosophy remains the same: Quality craftmanship is best preserved by skilled craftsmen -those with extensive experience and knowledge who still take pride in making each and every Helle knife unique.

Many Helle knives have a unique triple laminated stainless steel blade. The core is made of high alloy steel which gives it a lasting, razor-sharp edge. The outer two layers are of stainless steel(18/8) to protect the blade against breakage and corrosion, while the high carbon core still provides a superb cutting edge

The Alden has a 105mm long non-laminated stainless steel blade (12C27).The handle is curly birch with stainless steel fittings towards the blade and has a small finger guard that fits in a dark brown leather sheath

The Bl책fjell blade is triple laminated stainless steel, length 130mm. The beautiful handle is round and easy to grip and made from kebony wood with brass fittings. The sheath is genuine leather darkened oak colour.

Fire

The Fire has a full tang of triple laminated stainless steel, a blade length of 68mm, and comes with a carabiner clip. This caping/skinning knife has a handle of curly birch that wraps around the lower part of the tang leaving it only visible on the upper surface of the handle, forming finger protection. The black leather sheath has a snap style retaining strap.

The Fjellkniven blade is triple laminated stainless steel, length 100mm, and is a useful every-day knife. The comfortable grip handle is made of curly birch. It fits snugly into a traditional pouch- style sheath.

The Harding is a traditional barrel handle hunting knife.

The beautiful handle is made from curly birch and walnut, separated by layers of leather. It has a full length tang, and the 100mm blade is made from triple laminated stainless steel.

It comes with an embossed dark brown leather sheath with a handle butt retainer.

Helle From Norway Helle GT Helle GT is a big knife, but not a heavy knife. The blade is 123mm triple laminated stainless steel. The large guard is made of aluminium. The knife comes with a snap type dark brown leather sheath.

Hellefisk Hellefisk is a fishing knife with a cork handle. The Sandvik 12C27 stainless steel blade is 123mm long, and rather stiff. The traditional sheath hangs from a thong. The knife weighs 104g and it floats if it is lost overboard.

Sigmund

The Sigmund knife is a classic all-purpose knife. Its beautiful handle is made out of stacked pieces of birch and kebony wood mixed with leather spacers. It has a 107mm laminated stainless steel blade and comes with an embossed genuine leather sheath.

The Sigmund knife is designed by two generations of Helle men.

Knife-blade designed by Sigmund Helle in the early 1930’s and its handle by his son Torodd in 2012.

Skåla The Skåla folding knife is an all-purpose knife. It has a Cocobolo wood handle with hidden steel liners for strength, and a Sandvik 12C27 stainless steel blade of length 84mm. Skåla comes with a genuine dark brown leather pouch with an intergrated built loop.

Steinbit The Steinbit is a filleting knife with a flexible blade of stainless steel (Sandvik 12C27).The nicely curved birch wood handle sits comfortably in the hand. It is supplied with a tan coloured Nordic style sheath.

Temagami

Viking

The Tegami has a drop point blade 110mm long & is made of triple laminated stainless steel. The tang is exposed on the top and pommel end, but is covered by the wood of the handle on the finger side.

The handle shape allows excellent control of the knife when holding in varying positions. The Temagami comes with a Scandinavian style dark brown leather pouch.

The Viking is an excellent all round utility knife. The blade is rather thick, 110mm long, and made of laminated carbon steel. The black finish of the heat treatment is left on the sides for a rustic look.

The handle is a Helle classic -subtly shaped for comfort and control.

It comes with the traditional sheath that hangs from a thong.

The Viking is a revision of a Helle classic that was produced as part of a fund-raiser for an around-the-world- cruise of a Viking longship.

Victory knives have been made in New Zealand by E.Goddard Ltd. for over eighty years. Victory knives have gained a reputation for superior quality, and are used extensively in New Zealand and Australia by leading abattoirs and fish processing plants. The Victory stainless steel blade has a sub-zero (-78oC) quench after hardening. This particular process produces a strong, hard and wear resistant blade with improved edge retention. It also produces a finer grain and this is believed to be the reason that Victory knives are less prone to corrosion and maintaining its edge. Victory knives are also available in traditional carbon steel – butchering, skinning, boning and outdoor knives.

Goyon-Chazeau from France Goyon-Chazeau is a small family-owned company based in Thiers, the knife capital of France. It was established in 1976 by Denis Goyon-Chazeau who was the third generation of knifemakers in the family. The fourth generation is now also working in the company. Denis GOYON has always avoided mass production and advocated up market and hand craft production. This makes each knife he creates almost unique. Blade, bolster, tang and butt are just one piece, entirely forged in the highest grade steel for cutlery (Z50CD15).

These knives are one piece forged from stainless steel with Juniper wood handles. Juniper has an extremely pleasant natural aroma due to the oils and sugars contained in its wood. The wood of juniper has a beautiful colour and unique pattern, which makes the products made out of it so exclusive and striking.
