We’re into our food, my family. Of course everyone is ‘into’ food to survive, but some people do just Melanie Tinson & Tania Houston eat to live. Not us though – we finish each meal dreaming of what we are going to be having at the next. My husband is the cook and even though our children are 20 and 17 now, he likens us all to chicks in the nest, beaks open wide hungrily calling for the next morsel. But we’re really not into plates piled high with processed food, it’s food quality that counts for us. So one of the highlights for us in the calendar is Hampshire Food Festival. From the 1st July to the 2nd August venues across the area hold workshops, demonstrations, tours, tasters and special menus to celebrate the best of Hampshire food and drink. The award-winning Hampshire Food Festival will be in its 15th year in 2015 and last year attracted over 295,000 visitors. Many events, which are all held at numerous different locations across Hampshire, are free or low-cost, and there is plenty for adults, children and families. Mel and I were invited to the press launch day last year (unfortunately too late to tell you about it here) and had the most wonderful few hours sampling some of the producers’ wares. Chutney, ice-cream, cakes, cheeses, wines and beers…mmm, my mouth is watering just writing about it. I promise you I’m not just saying it to get another press invite, so much of what we tried was a league above the mass-produced versions. The full list of events is on-line at www.hampshirefare. co.uk and watch out for the logo as pictured here at local restaurants and food outlets, indicating they are using local produce. Until next time.

Care Home Conundrum: Responding to a Relative’s Complaints By Kate McLelland When I visited my 92-yearold mother at her residential care home recently, she wasn’t in a good mood. Her purse was missing and she was convinced that the cleaners were to blame: “They’ve stolen it! And I had thirty pounds in there.”

Although I checked her handbag, rifled through her chest of drawers, searched in the laundry basket and even bent down to peer under the bed, the purse was nowhere to be seen. It wasn’t until she stood up, ready to accompany me to the manager’s office, that I realised she had been sitting on it all the time. This story will undoubtedly be familiar to many people with an elderly relative living in residential care. It’s often hard to know what to do when someone who may be suffering from confusion or mild dementia complains about a care issue. Should you take their concern seriously or just put it down to their age and mental condition?

Moira’s decision to check out her aunt’s complaint – no matter how far-fetched it sounded – was undoubtedly the right course of action. Confusion in elderly people can lead them to make false accusations but the same confusion also makes it easy for care workers to get away with poor standards of care and sometimes, actual abuse.

Sending out a signal

Moira Wilson from Cumbria was worried when her elderly aunt kept insisting that a young male, carer – Jack - was bothering her. Her aunt told her that Jack had said he loved her and often stood at the foot of the bed, watching her.

My mother – who is almost blind and has limited mobility – gets help with showering twice a week at her nursing home. When, on a number of occasions, she told me that she hadn’t been washed “Because the shower isn’t working”, I began to be suspicious. On some days she had her shower as usual and on others it mysteriously refused to work: what’s more, it seemed more likely to break down at times when a particular carer was there.

“The home had a good reputation so I didn’t like to complain,” says Moira. “But you hear all these stories about elderly abuse and it played on my mind. I thought she’d probably imagined

All it took was a friendly email followed by a brief chat with the manager. After that, the problem disappeared and mum has enjoyed regular showers ever since.

Better safe than sorry

6

it, but I had to be sure. To my great relief the manager told me that they had no male carers currently working there.”

Sometimes that’s all it takes to sort out a problem: the very act of making an enquiry can signal to staff that are not pulling their weight that their actions are being monitored. If the problem is not easily resolved then your emails will provide a written record in the event that the dispute escalates.

New legislation to combat abuse The charity Action on Elder Abuse describes abuse as: “A single or repeated act or lack of appropriate action, occurring within any relationship where there is an expectation of trust, which causes harm or distress to an older person.” Recently new legislation has been introduced in response to the Mid-Staffs and Winterbourne View abuse cases. The Care Act 2014 comes into force in two

The right time to complain

stages, between April 2015 and April 2016, providing a new statutory basis for safeguarding vulnerable adults and making it easier to prosecute managers who have allowed an abusive culture to exist in their organisations. The public will also be able to see ‘Ofstedstyle’ ratings for hospitals and care homes so they can make comparisons between organisations and services.

When an older person swaps their own home for a residential care setting, they will inevitably have minor niggles about the care they are receiving. These comments may be just a way of letting off steam, but it’s important to keep listening. If you detect that an issue is causing real anxiety or distress, then you must act. If your relative is able to explain the problem, you should encourage and support them as they speak to the care supervisor or manager. If not, don’t be afraid to approach these people yourself: a good care home should welcome your feedback.

The Act also introduces a new, lower threshold for lodging a complaint with a local authority where abuse is suspected. An official enquiry can now be triggered if there is a “reasonable cause to suspect” abuse and this means that problems can be reported much earlier, before they lead to serious physical harm or longterm mental distress.

Should I start my business from scratch or buy an existing one? Investing in a “going concern” brings the security of trading history, established customers, suppliers and staff who already have relationships with your customers. On the downside, you have to pay for it. While starting a business from scratch gives the owner a completely blank canvass, there are significant hidden start-up costs not to mention a high degree of risk. Found empty premises of the right size, location, rent and lease terms? Are the premises are approved for your intended use? All commercial premises are classified by your local authority’s Planning Department and 10

planning consent will be needed if you want to change the current permitted use. The application process will take at least 8 weeks and you will have to pay £385 just to find out if your proposed use will be permitted. As a rough guide, florist shops, hairdressers and sandwich bars are classified as A1. Restaurants, snack bars and cafés selling hot food for consumption on the premises are A3. Hot food takeaways such as Fish & Chip shops, pizza and burger bars are A5. Will your premises need new flooring, lighting and heating? Have you sourced and worked out the cost of all the essential equipment? There are strict

Health & Safety laws protecting staff and customers - non-slip floors, hand wash stations, disabled access and staff rest rooms, for example. Your business plan will identify how long it takes to hit the monthly sales and profit targets needed to cover your monthly rent, rates, insurance, utilities and staff wages. Don’t forget that on top of these fixed monthly costs there is also the question of risk. What guarantee is there that your customers will support your new business within your estimated time scale?

Cloudy2Clear Windows – Service With A Smile! It’s been a crazy few months for Cloudy2Clear Windows. The company which specialises in repairing windows which are steamed up, broken or damaged by replacing the panes – not the frames has grown rapidly as homeowners take advantage of their services. Managing Director Justin Friel feels that it’s all about service. ‘Our product is simple. If your double glazing is misted up we can replace the glass at a fraction of the cost of a new window, in any type of frame, and with a new 5 year guarantee. But it’s not just about saving

people money, although that obviously helps. Many tradespeople have struggled since last year and I honestly feel that during the good times a minority perhaps didn’t focus on customer care as much as they should have done. We make sure we turn up when we say we will, do the job the customer requires and leave their house as clean as a whistle. I often get comments back from customers on how they really didn’t expect that sort of service which, in a way, is very sad for the service industry as a whole.’ Cloudy2Clear service the Waterside & New Forest areas and Justin is finding that his approach

is a major factor in his success.‘The truth is that it’s not just the personal satisfaction that I get from doing a good job but also it makes good business sense. I get a huge amount of business from friends and family of people I’ve done

work for, which just goes to show how much a little bit of effort is appreciated.’ So, if your windows are steamed up, broken or damaged give Justin a call for a free quotation on 0800 61 21 118 and he’ll be happy to help!

GARDENING

Making a Pest of Themselves by Pippa Greenwood www.pippagreenwood.com

They might be small but aphids - widely known as greenfly and blackfly - are one of the most common and widespread garden pests, with more than five hundred different species found in the United Kingdom alone. Greenfly and blackfly vary in colour, from green or black to grey, yellow, pink, brown or khaki. The majority are about 2mm long Most damage is done throughout spring and summer but there are aphids feeding somewhere pretty well throughout the year. In sheltered parts of your garden or in greenhouses and conservatories, some can be found even during the cooler winter months. They can breed rapidly and this is often done asexually or without need of a male. For much of the year females are predominant and give birth to huge numbers of genetically identical offspring. The symptoms they cause include leaf yellowing or other brightly coloured discolouration, puckering, poor growth and stunting. The plant sap on which the aphids feed has an extremely high 18

sugar content; in fact it is so sugary that the aphids cannot digest it all, so their excreta is very sticky and sugary. This is called ‘honeydew’ and you may have noticed it beneath aphidinfested plants. Because it is so sugary, honeydew attracts harmless but unattractive black ‘sooty moulds’. On roses there are several species of aphid which may attack, often forming dense colonies on shoot tips, new leaf growth and flower buds. These aphids are mostly green, pinkish or yellowish in colour and up to 3mm long. If vegetables are more your thing then you may see the black bean aphid as it forms dense colonies especially at the shoot tips and beneath the leaves of broad beans in the spring. If you pinch out the aphid-encrusted shoot tips on beans the problem is often solved. Another common one is the woolly aphid which attacks apple trees and is also often seen on ornamental Malus such as crab apples, pyracantha and cotoneaster. Colonies of the aphid covered with white, waxy, fluffy fibres develop on the bark, especially near pruning cuts on older stems, or on younger stems where they also cause swellings

on the stem. It is pretty well impossible to garden without aphids causing some grief – the best you can do is to reduce their numbers. Encouraging naturally occurring predators such as blue tits, ladybirds, hoverflies and lacewings will all help. In some situations it is also worth introducing biological controls and these work especially well in an enclosed area such as a greenhouse or conservatory. Aphid predators such as the larva of the midge Aphidoletes and even ladybirds, can all be purchased, as can the tiny parasitic wasp Aphidius. Ladybirds (available from my website, www. pippagreenwood.com) are perfect for using on aphid outbreaks anywhere in the garden from pots and borders to hanging baskets and hedges. The great thing with these is that, once established they will start to breed and add to the natural ladybird population. There are a number of different chemicals (including organic or ‘green’ ones such as those based on fatty acids or plant oils) available for controlling aphid pests too, but not all are suitable for use on every plant, so check the label carefully before buying or using, and always follow the instructions carefully.

Lock Control

Bill Cooper, Thatcher

Adrian Gilson is the Manager of the Lock Control which allows leisure craft in and out of the marina at all states of the tide. With Hythe being very much a sailing community Adrian meets all types of people on a daily basis. “All different walks of life go through the gate, families, retired people and workers from all types of jobs, I get to meet a real cross section of the local community.”

The cricket clubhouse at Parc Pace on the way into Lyndhurst is a distinctive landmark that is currently having its thatch replaced, Bill Cooper is the thatcher. “Rather than being a dying craft it has gone mad this year, it is nice to carry on a tradition such as thatching, it has always been an important job in the community, ensuring the beauty and safety of people’s homes.”

Honeyfords Country Butchers

The Secret Garden

Kevin Winch is owner of Honeyfords Country Butchers in the High Street and not only does he supply the local community but wherever possible he sources his meat from local farmers as well.

At the end of the precinct next to the pier is The Secret Garden, a glorious gift shop full of surprises. Carol is the owner, “In today’s financial climate it is hard being an independent and competing with the big boys and the internet. But being in a community such as Hythe I find that people still prefer to walk into a local shop and get that personal service.”

“It’s important to use local independent stores to enable us to remain in the community, and in turn I also use local suppliers to complete the chain.” 22

CAKE AND BAKE

Strawberry Shortcake Tarts Serves 6 Make the most of sweet and juicy British strawberries with these divine fruit tarts. If you don’t have time to make the pastry cream then use fresh ready-made custard or just top with sweetened whipped cream.

Ingredients: • 225g self-raising flour • 1tsp baking powder • 75g butter, chilled and diced • 50g caster sugar • 1 medium egg, beaten • 2-3 tbsp milk

1.

Preheat the oven to 190C, fan 170C, Gas 5. Place a baking sheet in the oven to heat up. Lightly butter 6 x 8cm loosebased fluted tartlet tins (measured across the base).

2.

Sift the flour, baking powder and a pinch of salt into a large mixing bowl. Add the butter and rub into the flour to make fine breadcrumbs. Stir in the sugar, egg and enough milk to make a soft dough.

3.

Divide the dough into six equal pieces and, using floured hands, press each piece of dough into the base and up the sides of a tartlet tin. Place the tins on the hot baking sheet and bake for 10-12 minutes until risen and golden brown. Cool in the tins for 15 minutes then turn out and leave to cool completely.

4.

To make the pastry cream, beat together the eggs, flour, caster sugar and vanilla extract. Pour the milk into a small pan and heat the milk to almost boiling point then whisk into the egg mixture. Return the mixture to the pan and cook for 5 minutes, stirring all the time, until thickened. Cover the surface with greaseproof paper and leave to cool completely.

5.

Whip the cream until softly peaking and fold into the pastry cream. Puree half the strawberries by pushing through a fineholed sieve. Stir in the lemon juice and icing sugar. Slice the rest of the strawberries.

6.

Spoon the pastry cream on top of the shortcakes. Top with the sliced strawberries and spoon over the puree. Serve within 2-3 hours of assembling.

For the Pastry Cream and Topping • 2 medium eggs • 25g plain flour • 50g caster sugar • 1 tsp vanilla extract • 300ml milk • 150ml double cream • 175g strawberries • 5ml lemon juice • 1 tbsp icing sugar

Ready in 45 mins, plus cooling time

TIP

The shortcake tart bases can be made and stored unfilled in an airtight container for up to 3 days.
