Have You Got The Baking Bug? By Kate McLelland

In recent years baking has become a bit of a national obsession. With new cakecraft shops opening in our high streets and countless community bake-offs taking place all over the country, it would appear that the UK has been well and truly bitten by the baking bug.

Much of the renewed interest in what can be achieved with butter, sugar, eggs and flour can be ascribed to the BBC’s now legendary TV show, The Great British Bake Off, which features a team of amateur bakers taking part in progressively harder challenges over a period of ten weeks. The first episode of GBBO traditionally kicks off with “Cakes” and it’s fitting that this aspect of baking should open the competition, as cake making and decorating has become one of the most popular hobbies in Britain today. Cupcakes are especially popular: decorated with butter cream icing, sprinkled with edible glitter and often topped with exotic decorations, they can easily be turned into individual, quirky masterpieces. These little cakes can even be displayed on a multilayered framework (a

“cupcake tower”) in place of a traditional wedding cake. The name “cupcake” first appeared in an American cookery book published in 1796. They were so named because they were baked in pottery cups, ramekins or moulds, the size of a small teacup. Their popularity was revived in the 2000s thanks to the US TV series “Sex and the City”, when lead characters Carrie and Miranda scoffed cupcakes from New York’s famous Magnolia Bakery as they discussed their love lives. These days you can buy special tin moulds for cupcakes and it’s possible to experiment with a huge range of recipes. Try them out on family and friends, or if you’re feeling ambitious you can even enter the National Cupcake Championships. Although many people enjoy pottering alone in the kitchen, trying out new recipes and finding original ways to decorate their cakes, The Great British Bake Off seems to have inspired a real enthusiasm for communal baking, whether that’s about learning together or indulging in friendly competition. You can look up cake decorating courses in your local area by going to www. cakedecoratingcourses.co.uk or alternatively visit your local library to find out if they hold a list. If you fancy getting away from it all in order to really focus on your art, then there are a number of cake decorating short breaks and holidays available, with one day courses costing from around £100 (not including accommodation).

If you want a real holiday experience you could sign up for a cake-making course in France, with accommodation and meals included for £649 per person. See www. frenchcakebreaks.com for more details. For those who simply don’t have the money to spend on courses there are a number of tutorials on YouTube (www.youtube. com) that will teach you everything you need to know, from creating a basic cake mixture to advanced piping techniques. If you don’t enjoy learning alone, you can always invite a friend around to experiment with you, or get together with neighbours

to create your own version of the Great British Bake Off. One thing’s for certain: there’ll be no lack of volunteers to help when it comes to tasting the results!

ROMSEY SHOW For the first time in its 172-year history The Romsey Show will have a theme: World War One and Hampshire Life 1914 – 1918. The theme will commemorate the centenary of the start of the First World War and pay tribute to the 350 local ‘boys’ who gave their lives for King and Country as well as reflecting on ahow life would have been for those who stayed behind to keep the home fires burning. More specifically, the 2014 show will recall the wartime role of Broadlands, which has hosted the Romsey Show since 1919. The parkland around Broadlands was the

site of a major horse remount depot during WW1, which was responsible for training thousands of horses and their handlers for war work. In addition, both the Canadian High Commission and the American Embassy will be represented at this year’s event to recognise the fact that their troops were stationed at Broadlands during WW1. There will be an aerial dog-fight by seven replica WW1 planes, a horse and mule remount display, an 18lb field gun from the Royal Armouries being harnessed and drawn by heavy horses and the WW1 tank that appeared in the film War Horse. As well as music by the Band and Bugles of The Rifles, re-enactments of the work of military farriers, a WW1 padre and FANYs nurses with a 1915 field ambulance. The WW1 Information Tent will house various static displays. A Garden of Remembrance close to the marquee will be planted with 350 crosses to commemorate those who died and there will be an Honouring the Dead ceremony in the Main Ring.

To add to the atmosphere, everyone attending the show, be they exhibitors, traders or visitors, will be encouraged to dress in period costume (although this is not compulsory) and all the different sections of the show will be reflecting the period, for example, the bakery demonstration in the Food Zone will be offering period breads at WW1 prices! All this is in addition to all the usual attractions that people expect from a traditional agricultural show like Romsey, which is one of the biggest and best events of its kind in the country with its wonderful mix of horses, cattle, sheep, countryside activities, food show, vintage machinery and over 500 trade stands. There are also alpacas, pigs, water buffalo, otters, fur and feather tent, caged birds, show jumping, parade of hounds, gun dogs, falconry, fly fishing, ferrets, traction engines, fairground … the list is endless! Romsey Show takes place on Saturday, September 13th, at Broadlands, Romsey. Children under 11 go free and advance tickets, with massive savings, are on sale from August. Have a Healthy Holiday By Alison Runham You’ve booked the perfect holiday in the ideal destination. In your dreams you’re already there, sunbathing, sightseeing and relaxing with a good book - but it could turn into a nightmare unless you ensure you’ve got your holiday health covered beforehand.

Holidaying in the UK If you’re holidaying in the UK, it’s easier; food, drink, transport and healthcare are all familiar and there’s no language barrier. You should still arrange travel insurance though, in case an accident or illness means your holiday is cancelled or cut short. If you’re planning to go way off the beaten track or hill climbing, check the weather forecast first. Wear appropriate footwear and ensure you take your mobile (fully charged), warm waterproof clothing and a first aid kit. Take a map too and make sure everyone knows the route (if only one person does, what happens if they’re injured and lose consciousness, or can’t walk?). Plan walks realistically as you’ll be slower over rough terrain. These things 14

sound simple but many deaths are caused every year by ignoring these precautions. If you’re going to a beach that’s out of the way, check it’s safe for swimming. Holidaying Abroad Read your guidebook and information from your travel company well in advance and visit http://www.fitfortravel.nhs.uk at least 8 weeks before departure for specific precautions for your destination. Make sure you’re aware of: • Air travel health and safety Newborn babies and women over 36 weeks pregnant (32 weeks if it’s a multiple pregnancy) can’t travel by air, and it’s also not advised if you’ve had a recent stroke, heart attack, surgery or trauma, or if you have a communicable disease or certain conditions affecting your ears, chest, head or cardiovascular system. Insurance can become void if you ignore advice about preexisting conditions or conceal them, so check with your doctor. Inside aeroplanes the air is very dry. Stay well hydrated

and avoid alcohol, as this will dehydrate you and altitude increases its effects. Ask your doctor’s advice if you are concerned about DVT (deep vein thrombosis) or if you’ve given birth in the last two months. The risk of DVT can be reduced by walking, stretching, avoiding alcohol and caffeine, and keeping well hydrated. Compression stockings may also help if fitted and worn correctly. • Local laws and customs Beware different traffic signals and different laws particularly about standards of dress. • Food and water safety Always wash your hands before and after using the toilet or handling food, and pack sanitizer gel or wipes in case hand-washing facilities are unclean or non-existent. If you’re not sure the water is safe, don’t drink it or use it for brushing teeth unless it’s boiled or treated with purification tablets – otherwise stick to bottled water. Avoid ice cubes too. Choose well-cooked, freshly prepared food where you can (especially if buying from street vendors), and avoid salads, shellfish and ice-cream (unless it’s from a large commercial manufacturer). Thoroughly clean or peel fruit and vegetables.


• Health precautions Depending on where you’re going, there may be a risk of malaria and it shouldn’t be taken lightly; it can be fatal. Use repellents on exposed skin and repellents and/or insecticides around your room and on mosquito screens and your clothing, as mosquitoes may bite through it. Wear long trousers or long-sleeved tops, particularly after dark. Anti-malarial tablets need to be started before you go and must be continued (sometimes for up to 4 weeks) when you return. Pack a supply of diarrhoea medication so it’s close by if needed. • Vaccinations Again, requirements depend on destination; check http:// www.fitfortravel.nhs.uk at least 8 weeks before travel to find specific guidelines for

the country you’re visiting as some vaccines are given in several doses, and factor in other countries you may plan to visit on holiday. Carry proof of vaccinations – some countries will require an International Certificate of Vaccination or Prophylaxis (ICVP). Hepatitis A, cholera, typhoid and DTP (diphtheria, tetanus and polio) should all be free, but you’ll have to pay for yellow fever, encephalitis, meningitis, rabies, tuberculosis and hepatitis B (unless it’s given as a combined hepatitis A and B vaccine). • Rules about prescribed medication Always take a copy of your prescription and a doctor’s

letter too, including your personal details, travel dates and details of medication you’re carrying. • Your healthcare entitlements If you’re travelling to Switzerland or a country that’s part of the European Economic Area (EEA), apply for an EHIC (European Health Insurance) card which entitles you to healthcare equivalent to that provided for residents. Outside the EEA, medical care is usually dependent upon your insurance. • Sun Protection Most people still aren’t careful enough about this. In hot sunny climates wear a hat and sunglasses, avoid midday sun, stay hydrated and apply high factor sun lotion regularly.

Grow Your Own Take-Away By Pippa Greenwood We all know that homecooked food is better for us than a stream of takeaways, but then we all deserve a little self-indulgence from time to time. So why not save yourself the guilt (and some cash) and grow your own Chinese takeaway right here in your own garden? No I haven’t turned cookery writer, but you can easily grow some of those tasty and crunchy vegetables that make the backbone of many a Chinese stir-fry... and the great thing is that oriental vegetables do well from late summer sowings, so it’s off to the garden centre (not the takeaway) you go! Bean sprouts are so easy to grow you could almost do it with your eyes shut. The common types are sprouted mung-beans, and you can either buy packets of seed or a small packet of the beans themselves from your local health food store. They’ll come with easy cultivation instructions and before you know it you’ll have 20

the beginnings of a stir-fry. Mizuna has got to be one of the most attractive leafy vegetables you can grow. Its green leaves appear soon after sowing the seed in a pot or in open ground, and they add a great spicy flavour to your stir-fry and also add a zing to salads and sandwiches. And where would your Chinese meal be without that delicious Oriental veg, pak-choi. It’s another easy vegetable to grow late in the summer: just sow the seeds in a well-forked soil, water, and wait. Thin out as per the instructions of the seed packet (you can eat the thinnings too), then just pinch off the roots and pop the plants into the wok. Pak-choi also grows well in a container of multi-purpose compost. Garlic is another essential ingredient. It’s not really the right time of year to plant garlic, but for an unexpected little extra take a few spare cloves and pot them in trays of compost. Keep the compost slightly moist and in a week or two the cloves will start to sprout. What you’re after here aren’t the sprouts though, but the bright green foliage which adds a definitely garlicy flavour to stir-fries and a touch of colour as well. Radishes add heat as well as crunch, and there are some

lovely oriental varieties such as Mantanhong, which is a British-bred Chinese variety with a superbly crunchy bright redto-pink inner flesh and spherical white roots – great for colour and texture and with a sweet almost nutty flavour. Sow in open ground or pots from now until early September for cropping in a few weeks’ time. Spring onions are another classic stir-fry component. You won’t get a fully mature crop for harvesting this year unless you’re extremely lucky; but what you will get is a super-young onion that will add both colour and intense flavour to the contents of your wok. And finally, mushrooms will add a meaty texture to your homegrown vegetable stir-fry. Kits for growing both oyster and field mushrooms are available in many garden centres or by mail order. It’s not always easy to get right, I know, but the challenge is definitely worth it when you have exotic mushrooms growing in your cellar, garden frame, greenhouse, or shed. Garden Maintenance A “Wee” Bit of a Problem There is an element of truth in the old wives tale that bitch urine is more harmful because they squat and deposit urine in one large dose whereas dogs go round spraying a bit here and a bit there to mark their territories, leaving insufficient amounts to cause much damage.

Dilution is the Solution! It’s the concentration that is the problem not the chemical. Urine is a highly concentrated nitrogen liquid not too dissimilar to ammonia or bleach. However, nitrogen is also a fertiliser which will help your grass grow but only if administered in low enough concentration. With dog urine, the concentration is so high that it both acts as poisons and therefore the grass dies within days. A week or so after the dead

patch has formed you’ll notice a green ring of tall lush grass surrounding it. This is because the urine has become diluted with rain or ground water and as the urine contains nitrogen (a fertiliser) it now starts feeding the grass. If stopping the dog peeing in the garden is impractical you can a) Keep your eye on the dog when it first goes on to the lawn and poor a bucket of water on to the place where the dog pees to dilute the urine or b) keep a high level of moisture in the lawn where the dog pees. During dry spells, put the sprinkler on once or twice a week for an hour. Then when the dog goes to the toilet the urine will dilute very quickly due to soil moisture thus reducing most of the damage.

Been Burned Already? Existing dead urine burn patches, less than two inches across will more than likely grow over in a month or two. If the patches are bigger or you want to speed recovery in smaller patches 1) Rake out the dead grass 2) Prick the soil surface about 1cm deep with the garden fork 3) Lightly sprinkle in grass seed - about 10 - 20 seeds per square inch, no more 4) Tread the surface to firm 5) Water regularly.

Here’s How to Manage Your Money Ann Haldon If you are off to university in September, your head will be full of worries and excitement about living independently, studying, and how to manage life in a new city. It might be a little overwhelming at times, but with forethought and planning you can organise your money and get to grips with the financial side of life. Managing money is often the biggest concern for new undergraduates, but the trick is to know your figures, set a basic budget where you can, and stick to it. One of the first decisions to make though, is which student bank account to open.

Student bank accounts Most of the top UK banks operate specific accounts for undergraduates. In general, they offer 24-hour online banking, mobile apps, and interest-free overdrafts subject to eligibility. Budgeting tips Budgeting is simple once you get into a routine. It just needs commitment, and an awareness of how much you are spending. The first thing to do is calculate the total of your maintenance loan and any grants, wages if you intend to work, and any money from your parents. Then make a list of regular bills, such as food, electricity, insurance and books. Also factor in birthday and Christmas expenses, and the cost of running a car if you have one. The money left over is disposable income, but

you need to make sure you don’t overspend. The main objective is to live within your means rather than splurging all your money at the start of term. Divide the maintenance loan over three months to budget for living costs, and you are halfway there.

Knowing the difference between ‘good debt’ and ‘bad debt’ Knowing how to use credit cards effectively is an important part of managing your money at university, as the temptation to spend without thinking can be overwhelming at times. The important thing to note is that only paying the minimum amount off a credit card each month allows the interest to build up, and makes it increasingly difficult to pay off what was originally a manageable amount. Paying off the total amount owed at the end of each billing period gives you interest-free credit for a very limited time, but go beyond this timescale and you could be hit with huge rates of interest. Paying for higher education is an investment, and remains a popular choice even with the recent increase in tuition fees. You don’t need to be cash-strapped at university or debt-ridden when you leave – just make sure it’s memorable for all the right reasons.

Stars of the New York Motor Show By James Baggott The New York Motor Show might not be the biggest event on the automotive calendar, but there were some still some treats in store for car fans in the Big Apple. Land Rover Discovery Concept It was launched on an aircraft carrier, next to a spaceship, with the Manhattan skyline as a backdrop - this launch is a massive deal for the manufacturer. It’s packed with tech, including augmented reality that can project sat nav directions onto the smart glass windscreen, gesture controls that open doors without touch and the ability to remotely drive the car using a tablet or smart phone. How much will make it into production is unclear, but it’s exciting stuff.

Mercedes S63 AMG Coupe The world’s chief executives are sure to make their next meeting on time thanks to this luxury missile. With 577bhp under the bonnet, the monster S63 AMG Coupe can hit 60mph in just 3.9 seconds. It has a 5.5-litre turbocharged V8 engine and an interior that’ll please those used to five star hotels. Air suspension, an imaginatively-titled Magic Body Control system and other trickery 32

helps keep caramel lattes from spilling on Saville Row suits. On sale in November it will cost £100,000.

BMW M4 Convertible Convertible? Cabriolet? We’re not sure which term the Germans prefer, but all we know is the BMW M4 looks absolutely stunning with its roof chopped off. The M4 features a clever threepiece folding metal roof and some not-so-subtle design tweaks. These include quad tailpipes, a larger front bumper and a tweaked kidney grille. The convertible will go on sale in September costing £60,730 with a 3.0-litre turbocharged six cylinder. The 0-60mph time is now down to 4.6 seconds.

Ford Mustang 50th Anniversary It wouldn’t be an American motor show without some muscle, and thankfully Ford has been taking its protein shakes and come up with this. The night before the show, Ford chopped one up and rebuilt it on the 86th floor of the Empire State Building, recreating a stunt they pulled off with the original back in 1954. It’s only available in blue or white, has a retro four speed auto box and chrome detailing. Under the

“hood” is a 5.0-litre V8 producing 414bhp.

Kia Sedona At last, Kia’s not-so-pretty Sedona MPV has been given the same plastic-surgery treatment as the rest of the range. The new model might still be a little bit van-like, but with the trademark Kia tiger nose and smart headlights, it looks a lot more stylish – and it needed it. The MPV has seating for eight as well as some clever trickery that can fold seats away and remove them.

BMW X4 There were a number of models that didn’t make our top cars of the show cut, and this X4 was very nearly one of them. Let’s face it, the crossover fell out of the ugly tree and hit every branch on the way down. The maker has form here apparently 240,000 people bought the equally visuallychallenged X6. Borrowing engines from the X3, the X4 will go on sale priced from £35,590 – that’s a lot of money for a car only a mother could love. So why’s it included here? Well, we like manufacturers being brave – and revealing this with a straight face was certainly that...

A Seriously Good Flushing A power flush is a cleaning process that keeps your heating system efficient and in good working order. A high-pressure machine pumps a cleaning solution through your central heating system, clearing the sludge, which can build up over time as a reaction between water and steel radiators. It should always been done when installing a new boiler and carried out regularly on installed systems A power flush may be recommended if your boiler is slow to start up, has frequent pump problems, if your

radiators need bleeding frequently, or some radiators are partially or completely cold. If mud-like sludge is left in the system too long it will turn into sludge flakes which cause more damage and can brake parts such as the pump, radiator valves and heat exchangers. You may think the system is clear of sludge if the water drained is clear but clear water is often a signal of sludge flakes. Always use a professional to carry out power flushing!
