Hanging Up My Apron I should be more domesticated than I am. I’m not a good example of my Scottish education at a Miss Jean Brodie style Melanie Tinson school where young ladies were expected to graduate knowing how to fit a zip, make one’s own puff pastry and know her hollandaise from mayonnaise. I lasted three months at hotel and catering college so I obviously had an interest but clearly not the aptitude. Still, I love the idea of baking but I am too easily distracted and most attempts result in sunken cakes with blackened edges. This is why now, I love watching others do it; on tv programmes like Saturday Morning Kitchen, Masterchef, Great British Sewing Bee and now that Bake Off’s back, I’m inspired. I’m going to bake my husband’s 50th birthday cake – a first. With a visit to Cakecraft (p13) in Chandlers Ford and an empty nest I have no excuse but to succeed! It’s never too late to start learning different skills or trying your hand at a new hobby. There’s beekeeping at Hilliers (p14), chocolate making at D@rt, Hedge End, Bushcraft at Itchen Valley Country Park and Growing Orchids in Chandlers Ford! There must be something that appeals in our comprehensive What’s On listing (p8-p10). I hope you enjoy Discover and follow our slogan “Keep It. Read It. Use It.”!

ADVERTISER FEATURE

Real Life Therapeutic Parenting Foster Carers and adopters usually trudge in to our training, feeling worn out, drained and rather like they would prefer to be spending this precious free time relaxing instead! When they leave they are inspired, enthusiastic and say; 'It’s like the lights have gone on! I now believe I can really do this'! 'Everything now makes sense. I feel truly inspired'. 'I wish I had had this training years ago. It will make such a difference to me'. The reason? I adopted 5 siblings with attachment difficulties, 17 years ago. Once the children were all reunited and placed with me, traumatic issues from their birth family began to resurface more, and I found myself on a crash course about Attachment, Trauma and Therapeutic Re-parenting. With shame I remembered all the adoptive and foster families I had inadvertently patronised as a well-meaning Social Worker. Now I understood what it was like to live with children with Attachment Disorder! They taught me how to be a 12

therapeutic parent, and what attachment disorder meant. I then took all the strategies I had learned and opened my own fostering agency, Fostering Together Ltd. (Ofsted 'Outstanding 2013-2014). Within the agency, our Foster Carers became high level specialists in therapeutic parenting through our training. We knew that we needed to give more carers the tools they really needed to heal children, so I then started Inspire Training Group, and began delivering training to lots of fostering agencies and local authorities. As a Therapeutic Parent I learned the importance of routines and boundaries, never being vague, being 100% reliable, as well as the necessity to always be thinking outside the box and about the effects of the children's early missed nurture. I also learnt, and now teach all about how the children need a different kind of parenting. Take all the star charts and throw them away! It has been extremely tough to try to get all the children to where they need to be, and there have been many days where it

all seemed too much. I have learned about secondary trauma, or 'compassion fatigue'. This is when the carer literally 'runs out of care'. I now help foster carers and adopters to recognise this and give them strategies to overcome it. The most important thing was to break the 'cycle of abuse' and to help my children to form reciprocal relationships. I became a Granny three months ago and my daughter, aged 20 is an absolutely fantastic mum. My main motivation now, is to help as many foster carers and adopters as I can to achieve the same, or better, feel inspired to make a real difference and to become dedicated therapeutic foster carers and adopters themselves. Inspire Training Group are running a free workshop for foster carers, those who would like to foster, and adopters at Hilton Hotel, Chilworth, Southampton on 29th September 2014 10am – 2.30pm. To book on this free course call 03301 222062 and ask for Miranda or text ‘Fostering’ to 88802. Places are very limited.

RECIPE

Apple & Blackberry Crumble Cake Making the most of seasonal fruit, this moist cake is delicious as a warming pudding served with custard or you can leave it to cool and enjoy it with a mid morning cup of coffee. Ingredients:

Now get started...

• 350g self-raising flour

1.

Preheat the oven to 190C, Fan 170C, Gas Mark 5. Place a baking sheet in the oven to heat up. Grease a 20cm x 24cm cake tin and line the base and sides with baking paper.

2.

Sift the flour and mixed spice into a large bowl. Add the butter and rub into the flour with your fingertips until the mixture resembles rough breadcrumbs. Remove 175g of the crumble mixture to a second bowl and set aside.

3.

Stir the caster sugar and beaten egg into the larger amount of crumble to make a soft and slightly sticky dough. Press into an even layer in the base of the cake tin using floured hands. Scatter over the diced apple and berries.

TIP

4.

You can vary the fruit filling, try pears with blueberries or thickly sliced plums and replace the hazelnuts with chopped blanched almonds.

Stir the Demerara sugar and chopped hazelnuts into the rest of the crumble mixture and spoon over the fruit, pressing down gently.

5.

Place the cake tin on the hot baking sheet in the oven and bake for 40-50 mins until the cake is risen and golden brown (cover the top of the cake loosely with foil after 30 mins if it starts to overbrown). Leave the cake to cool in the tin for about 20 mins then remove by gently lifting the parchment. Serve warm or cold.

• 2tsp ground mixed spice • 175g unsalted butter, chilled and diced, plus extra for greasing • 150g golden caster sugar • 2 medium eggs, beaten • 2 large dessert apples, peeled cored and diced • 200g blackberries • 50g Demerara sugar • 50g roasted hazelnuts, chopped

Makes 8 Slices Ready in 1 hour 20 mins, plus cooling

Beer of the Month One of the difficulties of being a composite nation like the UK is celebrating one’s nationhood without upsetting any of one’s constituent parts. I therefore declare October to be UK month because it includes the anniversary of our first great military triumph as a united country. The Battle of Trafalgar was fought on 21st October 1805 when a fleet manned by English, Scottish, Irish and Welsh sailors trounced the navies of France and Spain. Trafalgar was an all-British affair with no allies involved. But what beer to drink in October? Why, Bateman’s Victory, of course, from the plucky little Lincolnshire family brewery, celebrating its 140th anniversary this year, which in the 1980s faced a seemingly impossible fight to retain its independence and won. Victory Ale was first brewed soon after.

The colour of turning leaves, it’s warming enough at 6% alcohol and although it’s a fresh, clean-tasting beer with a touch almost of pine in the nose, its underlying malty richness, suggestion of chocolate, and spirity finish are perfect for the season. October’s second beer has been chosen to celebrate another great British oddity... Prince Charles. Duchy Originals Organic Old Ruby is brewed by Wychwood for Waitrose from a very old strain of malting barley, Plumage Archer, which HRH decided to revive on his Highgrove Estate. More copper-coloured than ruby, it’s got some heft at 5% abv but what marks it out as apt to October is its warming toffee-ish, caramelly nose, flavour, and finish. Like a beery Werther’s Original, really – very comforting. By Ted Bruning

HOBBIES

The Buzz of Helping Our Natural Environment by Jacob Thorson The buzzing of a honeybee is a familiar, timeless sound that we immediately associate with summer, and it’s fascinating to watch bees at work, gathering nectar that will eventually be turned into honey. As they as they bob in and out of the flowers in our fields and gardens, they pollinate 80% of the plant species in Europe, including most fruits and vegetables. The sound of the honeybee may be timeless, but sadly 20 bee species are already extinct and time may be running out for some of the remaining 267 species in the UK. This is because changes in farming practices over the years have led to the disappearance of many wild flowers from their natural habitat. In the summer a group of charities came together to launch the Great British Bee Count. As part of this initiative the charities produced a mobile phone app and asked

For the hive it is all about location, location, locations!

the public to record bee sightings. Participants were asked to identify the species of bee and record its habitat so the information could be analysed by the National Biodiversity Network. It’s worrying in the extreme to think that these remarkable insects may one day disappear altogether from the landscape, and that perhaps explains why beekeeping has recently enjoyed something of a revival. While the UK has its share of commercial bee farms, most beekeepers are dedicated amateurs who maintain their hobby out of concern for the environment and a deep fascination with the life of the hive. There are three main types of bee – bumblebees, honey bees and solitary bees, but it is the honey bee that beekeepers commonly look after in an ‘apiary’ (the name for a place where bees are kept). There are several different strains of honey bee, some of which are more docile – and therefore easier to manage – than others. If you are thinking of starting up as a beekeeper the first consideration should be the location of the hive. Do you have a garden or piece of land nearby where you can easily feed and maintain your bees? Can you place it in a location away

from wind and in full or partial sun? Is the presence of the hive likely to disturb your neighbours? Even if the bees pose no direct harm to others, you should bear in mind that their presence may still cause anxiety to people living nearby. Beekeeping is a form of livestock management and looking after an apiary can at times be demanding and heavy work. It’s advisable to consider taking a recognised course such as those offered by the British Beekeepers’ Association (http://www.bbka.org. uk). The Association has branches all over the country, offering introductory sessions designed to tell you everything you need to know about setting up an apiary. In many areas where the course is run you will be given the opportunity to have direct contact with bees, so you can decide whether beekeeping is really for you before you invest in the bees and equipment you need. A hive is a miracle of organisation, where bees take on different roles to support their community. Worker bees forage for food, build the honey comb, feed the larvae, keep the nest clean and defend it from predators, while queen bees mate with drones, producing up to 1,000 eggs per day to form new colonies. The drone’s role is to

15 mate with queens from different hives but unfortunately the drone dies after mating. It’s important to feel confident about handling bees before you proceed to set up an apiary, as the initial costs can be quite high. Essential purchases are a hive (there are various types and designs of hive, including the ‘Heritage’ model for people who want to integrate their hives into a traditional garden layout) together with various components and accessories, including a veiled Bee Suit with special hygienic gloves - to protect both you and the bees - a hive tool to help you move the frames and a ‘smoker’ to calm the bees when they become disturbed. You’ll need to start out with a five or six frame nucleus (referred to as a ‘nuc’ by beekeepers) and gradually expand your colony as you become more experienced.

You should always purchase bees from a reputable bee breeder: it’s better to buy queens that have been bred within the UK as imported queens may carry diseases. Ask around for recommendations but if you can’t contact a local beekeeper then you can look up sellers in specialist magazines such as Beecraft (a 12 month subscription costs £16 for online or £27 delivered). If you join your local beekeeping association you may be able to buy your bees locally

from a fellow keeper. What you choose to do with the honey from your hive is, of course, up to you. One hive can produce up to 60lb (27kg) in a good season, however an average hive will offer a surplus of around 25lb (11kg). There are other products – such as beeswax and royal jelly – that can also be sold, which goes to show that beekeeping is not only a great hobby: it can be a great business, too!

Health & Wellbeing

What’s the Alternative: Reflexology Origins and Principles Reflexology was practised in several ancient cultures, but it was developed into its modern form by an American, Eunice Ingham, who based her method on Dr. William Fitzgerald’s ‘zone therapy’.

Reflexology is based on the belief that various points on the feet, lower leg, hands, face or ears correspond with different areas of the body, forming a ‘body map’ that can be used to treat the whole body; points corresponding to problem areas will feel tender when massaged. Most practitioners work on the feet with the right foot corresponding to the right side of the body and the left foot corresponding to the left side. Reflexology is often used to treat stress, insomnia, headaches and hormonal or digestive problems’.

19

Having a Reflexology Treatment A treatment lasts around 45 minutes. On the first visit, the reflexologist will discuss the patient’s medical history. Patients usually sit in a reclining chair for treatment, and the reflexologist may apply cream or powder before massaging their feet with firm, precise motions using the side and end of the thumb and sometimes the fingers. It may feel a little uncomfortable but should not cause pain. Hand reflexology is equally effective but rarely used in the UK. Reflexologists usually work on one foot or hand at a time, but massage both hands/feet during the treatment.

Efficacy and Evidence Reflexology is used to complement, not replace, conventional medicine but there is growing evidence that it may help with stress, pain, fatigue and depression. Research is not yet conclusive but these apparent benefits make reflexology a popular treatment for cancer symptoms. By Alison Runham

Planning for Building Work by Katherine Sorrell

Thinking of getting the builders in? Forward planning is vital. Our expert has some handy advice.

Ready, Steady, Go? It may sound obvious, but do you know exactly what work needs doing to your home? Think structure first, then decoration. Are the walls and roof safe and sound? Is the house warm enough in winter? How good is your boiler – have you got hot water whenever you need it? Do your windows stick; do your stairs creak, do your gutters drip or is your plaster crumbling away? Aim to get all the boring but necessary repairs and renovations out of the way – you might want to look for tradespeople (from builders to carpenters, electricians to plumbers) in the pages of this magazine – before turning your attention to paint colours, floorings and soft furnishings. Then sort out your budget, agree a programme of work and get ready to make a few cups of tea.

DIY SAFETY

Before Work Starts

If you want your project to run as smoothly as possible, make sure you get the following issues sorted in advance: • Hours to be worked • Access to the house (especially if you won’t be living there), and security • Parking • Storage of tools and other equipment • Who is responsible for clearing the working area in advance, and cleaning up afterwards • Use of a WC, and a sink to clean tools • Disposal of rubbish • Use of power points • Potential aggravation to neighbours (anything from loud building noise to playing a radio)

Keep safety first and foremost if you’re doing any building work yourself. Never attempt any work that you are not competent to handle and, if it involves gas or electricity, call in a professional. If necessary, take the time to do a course, read a book or at least watch relevant internet videos. Use the right tool for the job, and ensure it’s in good working order before you start. Make sure you know how to use hire tools properly. Wear appropriate clothing, keep pets and children out of the way, tie long hair back and don’t smoke on the job. Heavy lifting to be done? Get help at the appropriate time. Be especially careful when using a ladder, don’t rush or cut corners, and store tools and equipment safely. Ventilate any areas where there are fumes or a great deal of dust and, last but by no means least, keep a first aid kit handy, just in case.

Rules and Regulations

Before you start any building work – and especially if it’s a major change such as an extension or conversion – find out whether or not you need to obtain planning permission from your local authority. Go to planningportal.gov.uk/permission for lots of information. If you live in a listed building, green belt or a conservation area, you should be especially careful to get the necessary consents – it is a criminal offence to fail to apply for listed building consent when required, for example, so it is always worth checking with your local planning authority. You may also be surprised to find that Building Regulations cover most aspects of work to your home, from the energy efficiency of new windows to electrical installations. It is important that you comply with them, because if you don’t you could be asked to alter or remove the work. You would also have problems when you come to sell your property. Confirm with your builder that he is taking responsibility for compliance – and get the necessary documentation to prove it once the work is finished. If you are doing the work yourself, talk to the building control department of your local authority.

GOING GREEN? Now is the time to decide on any environmentally friendly features that could save you money (and the planet) in the long run. Some eco measures, such as ground source heat pumps and wind turbines, are best suited for new builds or topto-toe renovations, but others – solar panels and rainwater recycling, for example – are more easily achievable. And don’t overlook the straightforward options, including fitting double or secondary glazing, installing water-saving showerheads and insulating your loft. Even tiny moves such as connecting an energy monitor or switching to energy-saving light bulbs can make a big difference. For more information, go to www. energysavingtrust.org.uk. MOTORING

Mitsubishi PHEV By James Baggott, editor of CarDealerMagazine.co.uk It’s not very often a car comes along with the promise of ‘changing the game’ – but that’s exactly what Mitsubishi believes its new plug-in hybrid Outlander will do. We took it for a spin on and off road to see if we can believe the hype. What is it? It’s an SUV with a seriously clever powertrain that combines a 2.0-litre petrol unit with battery technology. On pure electric the car can travel up to 32 miles, even at motorway speeds, and when the batteries are depleted an engine takes over to keep you motoring. All that clever technology has huge benefits too such as no road tax, Congestion Charge exemption, and just 5% BIK for company car drivers. But that’s not all – you get all this with NO price premium over the equivalent diesel model. That’s an industry first and to put it into perspective, Volvo’s plug-in hybrid V60 commands an £11,000 premium over the diesel. What’s under the bonnet? It’s not what’s under the bonnet that matters but what’s hidden in the floor; a wedge of batteries. As the plug-in name suggests you can top these up every night, for around £1, from a normal three-pin plug. If you do no more than 30-odd miles a day, and top the car up every night, you’ll never use the fuel in the tank. On those occasions when a longer trip needs to be made, you can use the electric range and then rely on the petrol unit to power the wheels,

Combines a 2.0 litre petrol unit with battery technology

which in itself will do 48mpg. The switch between the two units is seamless. Officially the combined economy is 148mpg, but this will vary depending on where you use it and how often you charge the batteries. What’s the spec like? The bottom of the range model gets 18-inch alloys, cruise control, air-con, leather steering wheel, reversing camera, Bluetooth and a lot more. On higher spec models there’s a mobile phone App (Apple and Windows) that lets you change the heating settings, view current range and even operate the headlights and horn remotely. Also, it’s worth remembering this is a proper off-roader with 190mm ground clearance, four-wheel drive and Mitsubishi’s renowned reliability. Any rivals? Not really. This is the first true plug-in hybrid SUV. The closest thing to a rival comes from Volvo, in the shape of its S60 plug-in hybrid – but remember that costs nearly £50,000, and commands a £11,280 premium over the equivalent diesel. The Outlander PHEV starts at a ridiculous £28,249. What’s it like to drive? In EV mode it’s near silent and although the petrol unit is a little revvy when it kicks in, it’s not nasty. It’ll hit 60mph in 11 seconds, which is quicker than the diesel, and reaches a top speed of 106mph. It’s all very refined though and wind and road noise is kept to a minimum. There are

lots of clever tricks up the PHEVF’s sleeve too – like the ability to hold a charge and use the petrol engine instead at the touch of a button, and the ability to recharge back to 80 per cent when left on tick over for just half an hour. Our only complaint would be a rather hard ride. The AOL Cars Verdict The biggest winners are company car drivers who effectively get a £10,000 pay rise a year if they’re higher rate tax payers, plus free fuel. Business owners are winners too as they can write down the full cost of the car in the first year. If you’re a normal car driver then the benefits of EV motoring, no road tax and Congestion Charge exemption will be equally attractive. And remember this is all wrapped up in a comfortable, highriding, go-anywhere off-roader. Our guess is Mitsubishi won’t be able to make them fast enough…

Model: Mitsubishi Outlander PHEV Price: £28,249 Engine: 2.0-litre petrol, Electric motor Power: 119bhp, 190Nm Max speed: 106mph 0-62mph: 11 seconds MPG: 148mpg (combined) Emissions: 44g/km

SHORT STORY

The Dare by Jackie Brewster

“I dare you to eat one”. Cole said, holding out a shiny conker. The twins had been collecting conkers as they scrambled through the darkening woods on their way home from swimming. Morgan liked conkers, but he also liked the spiky green casings that he prized them out of; his pockets were full of them. It was such a good dare that Morgan wished he’d thought of it. He was certain conkers were poisonous. And it wasn’t even Cole’s turn to set a dare. Just yesterday Cole had dared him to stroke Mrs Burgey’s mangy dog. Afterwards Cole had broken the first rule of Dare Club – that no one talks about Dare Club - and told their mother. She’d made Morgan take a shower, and it wasn’t even Sunday. Morgan had been biding his time, waiting to get his revenge. Cole couldn’t be allowed to get away with it, after all Morgan was the eldest by ten whole minutes. “Do you understand exactly what you’re asking?”. He said mysteriously, taking the conker from Cole. “Yeah”. Cole answered, unimpressed. “You know that conkers contain powerful magic don’t you?”. Morgan smiled thinly. Cole pulled a face. “Say’s who?”.

“I saw it on You Tube”. Morgan lied, “This guy ate a conker on a full moon, and he turned into a zombie”. Cole snorted, but could not argue with the authority of You Tube. “His eyes turned green and everything”. Morgan watched Cole closely. There were two things that his brother was scared of – zombies and mushrooms. “Tonight’s a full moon”. He glanced at the sky, “Just so you know what you’re asking”. “Rubbish”. Cole kicked the leaves, “That’s just werewolves”. “It’s werewolves too”. Morgan raised the conker to his lips. “Still dare me to eat it?”. Both boys stared hard at each other. Morgan shrugged, “It’s been nice knowing you”. He popped the conker into his mouth. Cole frowned. “You’ve got to swallow it”. Morgan indicted a need to sit down. The business of digesting conkers was arduous and shouldn’t be tackled while standing. Cole went to perch on a log, “Not there!”. Morgan spluttered, “It’s covered in toadstools”. Cole’s rapid inspection of the log gave Morgan just enough to time spit the conker into the leaves, and find what he needed from his pocket.

“Now we’re sitting comfortably”. Morgan mumbled with gravity, “I will swallow”. The violent gagging sounds he made as he pretended to swallow impressed even him. “What now?”. Asked Cole, wideeyed. “Now we wait”. Morgan folded his arms and leaned back against the tree. The shadows grew longer and a flock of crows came home to roost. “This is boring”. Cole said, glancing at his watch. The chill evening air had just descended to the forest floor when Morgan chose his moment. He began to cough and shake. He clutched his stomach and moaned. He spat foamy dribble down his coat for dramatic effect. “The magic is beginning to take hold”. He cried, “Run Cole, run, while you still have the chance”. Cole laughed nervously, “Stop mucking around”. “The pain, the pain!”. Morgan cried, burying his face in his hands. Writhing in agony, he uttered an unearthly moan. Then he took his hands away to reveal himself transformed. His huge zombie eyes were green and covered in gruesome spikes. Cole turned the colour of concrete, shrieked (like a girl thought Morgan) and ran off, leaving his swimming kit behind. Morgan laughed and took the conker casings out of his eyes. He knew he would get into trouble for this, but just for the moment it was worth it.

TECHNOLOGY

Pick A Side Apple or Android? Is Apple where it’s at, or are Android gadgets better buys?

Apple is due to launch the latest, greatest iPhone this September along with iOS 8, the latest version of its smartphone and tablet software. The phone will have a bigger screen and a better camera, but one thing won’t change: like all Apple gadgets, it won’t be cheap.

Apple isn’t the only game in town, though. Google’s Android system has been updated too, and Android phones and tablets from the likes of Samsung, HTC, LG and Sony are often just as pretty and just as powerful as anything Apple makes - and in many cases they’re a good bit cheaper too. Android isn’t quite as simple or as elegant as Apple’s iOS, but there’s not much in it and where Apple only makes a handful of devices, with Android there are dozens of phones and tablets to choose from. Unless you’re a big Apple fan then, is Android the smarter choice? Unfortunately it’s a bit more complicated than that. Apple and Google don’t just want to be your friend when you buy a phone or a tablet. They want to be part of your entire life. They want to be the companies you from whom you buy your music, movies, TV programmes and books, the companies who provide your in-car entertainment and navigation systems, the companies who handle all your messages, voice and video calls, the companies who

connect all of the appliances in your home and who track your health and fitness. By the end of this year both firms will have smart watches or wristbands that monitor your vital signs, settop boxes that stream music and video to your TV, software that connects to cars from the likes of Volvo, Nissan, Audi and Mercedes, music and movie streaming services and home automation systems - and that’s just the stuff we know about. This means you need to consider the bigger picture. It’s not just about the particular phone or tablet you want to buy, but what techy types call the ecosystem: the various things that the phone or tablet connects to and gets content from. For example, if you fancy Apple’s clever Apple TV system, you won’t get the best from it unless you also have an Apple phone or tablet; if you want to

35 use an Android smart watch, it’ll work best with an Android phone; if you’re a fan of iTunes Match you can’t use it on Android, and so on.

IT Services

Consider what your friends, family and colleagues use. Apple’s iMessage offers free SMS and MMS messages (and soon, voice messages too), but only to other iMessage users - and iMessage isn’t available on Android. FaceTime offers free video calling, but it can’t call Android users (although Google’s alternative, Hangouts, does work on Apple devices. As a rule of thumb Google services work on Apple kit but not vice-versa. Increasingly, then, choosing a phone or tablet is more like picking a football team to support or voting for a political party: the available choices all do essentially the same thing, but they do it in very different ways - and your choice might colour your life for many years to come.
