A REGION SOAKED IN THE SEDUCTIVE AROMAS OF ITSELF It’s been called the Burgundy of Canada. Niagara is an agricultural region with a large number of small farms. Drive the back roads and the checker board landscape reveals orchards, fields, gardens, vineyards and greenhouses. Depending on the time of year you could pass corduroy fields of strawberries with people dotting the green horizon picking to their hearts content. You may wonder why there is a crimson colour to an orchard you’re passing and then you realize you’re salivating for the deep red, ripe, sweet taste of cherries. Or perhaps you’re biking the back roads and all you can smell is the sweet, vinous aromas of another Niagara grape harvest. Niagara is soaked in the seductive aromas and sights of it’s own fare. In between the abundant orchards and lush, green vegetable gardens are net covered blueberry farms, hay-covered endive fields, fragrant, acres of purple lavender, a fromagerie, heritage pig farms, Highland cattle ranches

and farms that sell chickens, rabbits and eggs. Roadside signs are traditionally hand painted and pounded into the ends of laneways alerting drivers of the farmers’ daily offering. Summers are full of multiple harvests with road-side stands and farmers’ markets overflowing with fresh strawberries, raspberries, corn, tomatoes, onions, lettuces, plums, peaches and apricots. Get out of the city and drive through the back roads where the true flavours of a region are found in the fields. It’s most likely you’ll catch a farmer loading his truck with tomatoes still warm from the summer sunshine and wet from the morning dew. A wagon full of just harvested garlic sits to the side of the field littered with dried garlic stalks while melons dot another field like a young girls polka-dot dress. Follow that truck as it meanders through the countryside for it will most likely lead to a great restaurant where tomatoes will be featured on the menu that day, ripe and juicy, rich in flavour and screaming of pure joy as they’re bathed simply in a sweet, aged balsamic and sea salt. Niagara is a region of culinary smells, sights, sounds and moods. Each and every harvest emits their own aromas, like the church bell calling parishioners’ to mass, local food calls to hungry eaters and they gorge themselves on perfectly ripened, incredibly succulent local food until it’s all gone. They eat their fill of gooseberries, zucchini flowers, sweet peas, yellow corn, yellow plums and then never eat these foods again for the rest of the year. More than that, each season in Niagara has a food purpose. The summer is for canning and preserving, the fall is for wine and sausage making, while the winter months are occupied with pasta and bread baking. When you live in Niagara, food and cooking is about more than just filling your stomach. It’s a way to share, to love and to be connected to your food and your surroundings.

It’s called the rhythm of a region and succumbing to this rhythm means always craving the next harvest and next season. It’s about the powerful seduction and bewitching culinary hold that hits you in your psyche, makes your juices flow and your appetite ache. So what makes Niagara so agriculturally prolific you ask? It’s about geography. Niagara is surrounded by water that warms in the summer. In the fall when the weather turns cooler, the warmth from the water rises and is then trapped in the region by the Niagara escarpment. This warmth prolongs a growing season and moderates the climate so all produce grows slowly, building flavours (and nutrition), balancing acidity and producing excitement in flavours found no where else in North America. It’s the reason why people drive to Niagara from near and far to indulge in the sweet strawberries, juicy cherries and succulent peaches. Tomato plants grow in fields next to vineyards, each affected by the same soil, climate and geological influences. Each achieving similar characteristics of lively acidity and full, ripe flavours. Animals graze in pastures and grasslands also affected by the same influences, also achieving a unique taste of the region. Niagara flavours are the perfect balance of fruitiness, sweetness and acidity. Take for example a peach. When they’re tree ripened, Niagara peaches have a fully developed flavour, are pockets of juiciness and have a sensuous character. Bite into one and the juices squirt out through your fingers, down your arm and drips off your elbow. The flavour fills your palate, the acidity stimulates your tastebuds, the fruit luxuriates across your tongue and the aromas rush through your olfactory senses. The happiness – no the ecstasy of this is what Niagara flavours are all about. It’s the signature flavour of Niagara that is also reflected in its wines. Rieslings with the >>

perfect balance of fruit and liveliness, and icewine with sufficient acidity to allow it to last for years. It’s an industry so suited to the land that it has grown to international acclaim with over 100 wineries in only three decades. All of which are worthy of a visit. Niagara is the quintessential farm-to-table region filled with honesty, authenticity and integrity. It’s about the unbroken arc from garden to table that includes growing, nurturing, harvesting, preparing, presenting and sharing food from within the same region. Over the years, all of this home grown goodness has evolved into a world-class cuisine that depends on a trilogy: farmers, culinary entrepreneurs and consumers. Culinary entrepreneurs like chefs, caterers, bakers, food producers and others work with farmers in a world-class culinary collaboration that depends as much on the production of its ingredients as it does on the transformation of those ingredients into a delicious dish. You’ll find bakers offering peach pies, church socials baking up cherry pies and county fairs showcasing the best jams of the region. There is no place local food can’t be found from cupcakes to vinegar and from pasta sauces to charcuterie. This farm-to-table movement is rooted in the belief that it takes as much patience and attention to nurture a simmering pot of sauce into a luscious meal as it does nurturing a tiny seedling into a mature and fully productive plant. Chefs compete for the best produce from the farms to fill their kitchens, often contracting multiple farmers to ensure a continuous supply – or as continuous as Mother Nature will allow. You can find delicious examples of local dishes such as Niagara smoked chicken sandwich made with chicken from a local farm. A fresh pickerel dinner at a fine dining restaurant with pickerel fished from Lake Erie that very morning. You can go for gourmet mac and cheese with cheese from a local fromagerie or a charcuterie platter at a banquet with cured meats that just days earlier, were hanging in a cave within a twenty minute drive from the restaurant. Consumers are not blind to good food. They are naturally drawn to local agricultural destinations for the most valuable resources, the greatest intensity of flavours and the purest of produce, knowing the most satisfaction in eating and the most generous conviviality is embedded in Niagara’s farm and country traditions. Consumers are the third and final link in a farm-to-table trilogy. Consumers appreciate the hard working farmers, the creativity of chefs or the inspiration of a culinary region by buying at farmers’ markets, eating the restaurant dishes and eagerly attend local food events. They realize that in this hectic, mad world we live in today, we often lose sight of the very essence that promotes our health and well being – the goodness that comes from the earth, in its own time. It’s a lifestyle rooted in the firm belief that “eating local” seasonally and sharing food together is one of the greatest and simple joys available to us all. Succumbing to the rhythms of the region is to be nourished by life’s riches. On a more practical level, buying local is about protecting our farmland and water, about keeping the farming traditions and cultures in Niagara alive and also about providing our communities with good food. It’s about culinary culture, regionalism and having a healthy sense of pride in Niagara’s agricultural heritage. But food and the celebration of it is never practical, it’s emotional, inspired by the passionate people who make it happen. It’s about the pure joy of food and this simple joy relies on and creates healthy rural communities. It’s the rhythm of living well and living sensibly.

Executive Chef Sidney Krick of Edgewaters Restaurant at the Niagara Parks Commission is a huge champion of the food grown, raised and produced in the region. Krick has worked hard to have his restaurant ‘Feast On’ certified, the provincial designation for using a high percentage of local food in a restaurant. Krick thinks nothing of using the local foods to create stunning appetizers with a flavour of the region. Some are as laid-back as a charcuterie plate filled with Pingue cured meats and cheeses from Upper Canada Cheese Company. What Krick loves most is to combine flavours and show how sophisticated local cuisine can be. On one of his favourite appetizers, he starts with red veined Swiss chard and mounds artisan quinoa pilaf on top. Next he carefully lies a piece of pepper berry rubbed rainbow trout on top, glistening in its juices with a Niagara peach and St David’s bell pepper chutney on the side. He adds a sprig of fresh thyme and slice of lemon and it’s a delicious starter to any meal. The just harvested lake fish, the lemon and the peach add lightness and freshness to keep the palate cleansed for the rest to come. Another local food forager is Executive Chef Shaun Goswell at the Scotiabank Convention Centre. Goswell is inspired by the many moods of a Niagara season. He may recommend fresh greens dressed with strawberry, thyme vinaigrette in June. Too simple you say? Not when the greens consist of locally grown watercress, sorrel, shiso and other brightly coloured and intensely flavoured lettuces all mixing their citrusy, bitter, buttery and tart flavours with intensity. To fit a fall mood, Goswell explains, “most don’t think we can do much with local in the winter and I happen to like this one.” Most of the vegetables in the salad are traditional cold winter vegetables such as beets, broccoli, carrots and fennel. Goswell makes carrot jerky, pickles broccoli stems, candies fennel and roasts cauliflower. He tosses this around with red vein sorrel and enrobes it in a buttermilk pumpkin dressing. It’s a rich and exciting, savoury salad that satisfies on a cool weather day. New, clients boast that Goswell’s approach is refreshing. It’s not just a one sided push on creativity on the chefs part, but a process of discovery for the client as well.

When you think of a convention entrée, you think of protein, starch and vegetables, when Executive Chef Jerry Nanda of the Marriott Gateway on the Falls thinks of an entrée, he thinks, “you’ve got to try this!” Nanda is well known for his small plates table. On one long banquet table he lines up hundreds of little plates and tiny martini glasses, they look like armies standing at attention. Each little plate is elegantly dressed with small portions of gourmet food. Each dish is seductively presented, each one crying out to be eaten. This type of buffet allows large groups of people to be in charge of their own meal; they can try one or many of the main entrees because each portion is small. You can try slices of Ahi Tuna grilled to medium rare in a Nicoise salad finished with a warm bacon vinaigrette and also slices of grilled Southern-style flank steak laying over

a medley of root vegetables drizzled with a warm remoulade sauce and garnished with crisp onions. You can go for a third helping of goat cheese and apricot stuffed chicken over warm quinoa mixed with grilled vegetables or if you like, a lobster and Chorizo sausage gourmet mac and cheese. Try one, try them all, each looking and tasting like a dish from a gourmet restaurant. “There’s an art to making pasta,” says Massimo Capra, Celebrity Chef of The Rainbow Room at Canadian Niagara Hotels. Capra is Italian and “pasta is a big deal”. “Every different shape of pasta has a different style of dough but the thickness of it is dictated by the place of origin,” he explains, “northern Italian pasta is stretched so thin you can almost see through it.” Capra’s favourite, lobster ravioli is made with paper thin dough, stuffed with sweet lobster meat, chives, thyme, and chervil

all dressed in a burnt butter cream sauce, diced fresh tomatoes, a squirt of lemon juice, fresh herbs and a sprinkling of toasted hazelnuts. It’s light, seductively sweet with a pucker of citrus and freshness of green herbs. It’s a delicious dish that serves 1,000 people. “It’s nothing unnatural, we do it in Italy all the time.” Capra stresses the dough is the key to perfect pasta. Capra’s dough is kneaded perfectly so the gluten becomes light, clean and elastic with a pleasant resistance when eaten. It’s so amazingly delicious that famous actor Tom Cruise insists on Capra’s Spaghetti Vongole when he’s in town. But spaghetti is not on the banquet menu because it doesn’t work as well for large groups as baked pasta does. His favourite is cannelloni with fresh asparagus and prosciutto, ripe ricotta and fontina cheese wrapped in feather light pasta and adorned with just the right amount of both tomato

and a cheesy bachamel sauce. “As it bakes, the edges of the pasta crisps up with the prosciutto and it becomes light, luscious with a surprise caramelized pasta crunch.” Pastry Chef Pradeep Dharmawardane of the Fallsview Casino Resort is a man who brings a world of possibilities very honestly to his exotic and unique desserts. Classically trained in Sri Lanka and having worked from Dubai to the Bahamas, the Americas and now Canada, Dharmawardane has a natural talent for mixing aromas and flavours of food to excite the palate. He mixes pineapple and rosemary “It’s freaking fantastic,” exclaims Dharmawardane. Another is Chambourd, cranberry and pumpkin and his favourite, strawberry and key lime. Dharmawardane has a light touch with his desserts and a sheer talent to create works of art for groups of 600 or more. He takes

delicate, light meringue whipped with lime zest and steams it into a soft, billowy cloud. He places it over top a glistening puddle of uber-sweet, strawberry lime coulis with a hint of soft mint and tops it off with a compote of mixed berries, macerated in icewine. The angelic texture floats across the palate while the soft, drunken berries luxuriate across the tongue. It’s served impressively in a white, sugar Faberge-style egg. It’s simply stunning to look at and when eaten, will send your eyes rolling to the back of your head. Inspired by Pablo Picasso, Dharmawardane quotes, “Picasso says, anything you can imagine is real.” In Picasso style, Dhawmawardane sketches each dessert he creates. “I still have every sketch I’ve ever done.” Do his sketches look like Picasso’s? are being added to Niagara’s diverse portfolio of eco-adventure tours this Spring 2016. The world class Zip Line experience and Aerial Adventure Courses will captivate both the young and young at heart when visiting Niagara’s entertainment district. Brought to life by WildPlay Niagara Falls and the Niagara Parks Commission (NPC), both attractions promise a hybrid adventure and educational experience for groups wishing to explore and learn about the Niagara Parks in hands-on fashion; both featuring guided historical tours, an education on the surrounding eco-systems and a new and thrilling visual perspective of Niagara Falls. The four side-by-side high-speed zip lines will descend 2,200 hundred feet from the NPC’s Grand View Marketplace on the Niagara Parkway into the Niagara Gorge below at the decommissioned Ontario Power Generating Plant, looking up to the Horseshoe Falls above. “The zip line is right front and centre to Niagara Falls,” said Lindsay DiCosimo, Marketing Manager for WildPlay Niagara Falls. “the zipline will offer breathtaking views of the Falls and an opportunity to experience it like never before.” The first of its kind in Niagara, the Aerial Adventure course is set to open on the north side of the Whirlpool at Thompson Point along the picturesque Niagara Parkway. This recreational activity is said to improve physical skills and strengthen mental courage; all while providing

awe-inspiring vistas of the Niagara gorge. “It is going to feature a little bit of everything; wobbly bridges, mini zip lines, rope swings, cargo nets,” said DiCosimo. “The obstacles that are hanging from the trees will increase in difficulty as you go through the course. So everyone starts off at the same level and as you go through, things get a little more challenging. You’re facing your fears and overcoming your self-perceived inhibitions as you build your confidence as you get through the course.” DiCosimo says this unique attraction is ideal for corporate team building because it strengthens and builds trust amongst groups while encouraging team work and mutual support. “You’re in a group setting, you are doing challenges that you might not think you can overcome but with group encouragement and by working together you can figure out the best way to approach the different challenges,” said DiCosimo. “Some people are very shy in office settings but may excel outside of the office so by getting outside and completing a course like this people can shine in a different light,” said DiCosimo. “You can play off of different people’s strengths and bond as a group.” Guides are also in place every step of the way to lend support and encouragement to anyone who is struggling and wishes to bypass an obstacle. They will also provide historical anecdotes as you enjoy the attractions, with a focus on the surrounding landmarks including: the formation of the Falls, the previously active power generators, wildlife and plant life in the area and the early explorers who settled in the region. >>

Cyc l i ng There are over 200 scenic routes available for cycling options in the Niagara Region, so it is easy enough to find itineraries for every level of rider, every type of scenery and every length of ride. Many trails wind through several cities in the Region, so it’s easy to tour the Region by bike. What follows are just some highlights of what’s available.

WELLAND CANALS PARKWAY TRAIL

GREATER NIAGARA CIRCLE ROUTE

This paved recreational trail links the cities that the canal passes through and extends from Port Colborne to St. Catharines. The full length of the trail is 42 kilometres, and it’s great for walking, hiking or rollerblading. You’ll get the unique opportunity of watching the ships as they go through the canal, and for the most part, the path runs right alongside it.

This multi-use, paved trail makes its way through Niagara, linking Lakes Erie and Ontario, as well as the Welland Canal with the Niagara River. It passes through historic Port Colborne, where in addition to historic sites, you will pass various shops, attractions and restaurants.

NIAGARA RIVER PARKWAY TRAIL This is a beautiful 56-kilometre bike path that links Niagara-on-theLake and Fort Erie. It’s paved, so it’s accessible, and is great for both walking and cycling. This path runs parallel to the Niagara River, and passes some beautiful sights along the way, including numerous points of interest for tourists, such as the Floral Clock, Fort George and the Butterfly Conservatory.

FRIENDSHIP TRAIL This bike friendly path runs sixteen kilometres across Fort Erie, and winds through farmland, villages, watersheds and residential areas. Not only is it great for cyclists and walkers, but it is also wheelchair accessible. Parking is available on Ridge Road, Crescent Road, and Lakeshore Road.

WATERFRONT TRAIL The Waterfront Trail stretches from Niagara-on-the-Lake to Quebec, following the shores of Lake Ontario. The Niagara portion begins in Niagara-on-the-Lake and goes through St. Catharines, Lincoln and Grimsby. The trail varies between off road paths and streets in residential neighbourhoods. It is a multi use trail and is good for cycling, walking or rollerblading. Trail maps are available online from the Waterfront Trail official website.

GORDON HARRY CONSERVATION TRAIL This is a 13km section of the Trans Canada Trail that runs from the Western border of Port Colborne to Wainfleet, out to Haldimand County. It’s a great spot for mountain biking, and links together numerous conservation areas in Niagara.

CHOOSE YOUR OWN BIKE ROUTE The Niagara Region website has a handy feature available when you are trying to plan the perfect bike route. You can devise a bike trail based on themes like heritage or culture, by terrain and surface, the length of the route and by difficulty. If they suggest they want less wine, we show them more food. It is that simple.” “If you try and enjoy the Niagara Region travelling by car or a bus, you miss a lot,” said Weingust. “The nice thing about cycling is that it gets you to your destination but you also get to enjoy the journey. You’re not whipping by on the highway, you are riding through the fields, connecting to the land and seeing everything at a slower point of view.”

Serve Chilled, BUT NOT STIRRED Winter in Niagara

Just imagine the freezing temperatures of January; the falling water stirs up mist that is carried by the wind to land on everything that surrounds it. Trees, rocks, railings, light posts and fences are coated in a thick layer of ice, dressed with icicles of all shapes and sizes. Sometimes it’s covered with a layer of beautiful snowflakes, other times it shimmers like diamonds. It’s the stuff fairy tales and dreams are made of. During the day the sun’s reflection makes the icy wonderland a shimmering oasis of beauty. Every evening, beginning at dusk, the Falls are lit in the colours of the rainbow that twinkle in the ice and the stunning beauty is romantically breathless. If you’re visiting Niagara Falls in the winter, there are still plenty of things to do, and probably the most anticipated are the Winter Festival of Lights and the Icewine Festival.

ONTARIO POWER GENERATION WINTER FESTIVAL OF LIGHTS Taking place from the end of November to the end of January every year, the Winter Festival of Lights has been a Niagara wintertime staple since 1983, when it was formed through a partnership of Niagara Falls Tourism, the City of Niagara Falls, The Niagara Parks Commission and numerous private businesses. It has continued to grow and evolve every year since then, attracting approximately 1.5 million visitors to Niagara Falls every season. It is recognized as an Ontario Festival of Distinction by Festivals and Events, Ontario and has been included on many other travel lists, including Reader’s Digest, Conde Nast Traveler and Canoe.com. Niagara Falls has become one of the top decorated cities in the world during the holiday season.

The festival is a draw not only for visitors to the area, but remains a time honoured tradition for many residents of Niagara to go down to Niagara Falls to see the lights shine. The Festival now includes over 3 million lights along a 5km route, as well as displays throughout Niagara Falls, and numerous other activities throughout the three-month event. You can travel down the Niagara Parkway to view the spectacular light show, as wells as take a leisurely drive around Dufferin Islands, where there are additional light displays, and accompanying music, which you can tune into on your car radio. ICEWINE FESTIVAL The Niagara Icewine Festival just keeps getting bigger and better every year, with an ever-increasing variety of events and activities that celebrate this national treasure happening throughout the Niagara Region. Canada holds the title as the largest Icewine producer in the world and is renowned for the quality and selection of this rare and wonderful dessert wine. This is an accomplishment worth celebrating, and every January, people come from all over the world to be part of this month long celebration of Icewine. Niagara is the heart of wine production in central Canada. Due to its unique location between the two Great Lakes, Erie and Ontario, Niagara’s climate remains moderate enough to allow grapes to flourish throughout the region. The red and white wines that are produced here are highly regarded around the world. But Niagara takes wine growing one step further: Although the area is hot in the summer,


it consistently experiences freezing temperatures in winter. It is this yearly cold spell that is the magic needed to produce the exotic Icewine for which Canada has become famous. To produce Icewine, the grapes are left hanging on the vines long after the regular harvest is complete, waiting for the freeze to arrive. During that time, the sugars in the berries intensify as the grapes dehydrate on the vine. This maturation process gives the grapes very unique flavours. When the temperature finally drops to minus 8 degrees, the grapes freeze and are ready to be picked and pressed. This happens very quickly, while the grapes are still frozen, allowing only the concentrated juice to be collected for the production of Icewine. This extremely sweet grape juice is then fermented and the final result is a delicious dessert wine. You can find Icewine made from several grape varietals: Vidal, Riesling, Cabernet Franc and Cabernet Sauvignon, each one with its own unique flavour profile. White Icewine has aromas of tropical fruits, and red Icewine has intense berry aromas such as raspberry and strawberry. Wine enthusiasts return time and time again to sample each season’s new delights.

During the Icewine Festival you can: Stroll through Icewine Villages on the streets of Jordan and Niagaraon-the-Lake, where you can sip and sample your way through a carnival of Icewine, food booths, music and ice sculptures. LET THERE BE …in the sky Since the day Niagara Falls became a tourist destination, there have been attempts to try and light it up at night. It was first done in 1860, to celebrate a visit from the Prince of Wales. They were able to succeed in this illumination by using 200 coloured and white calcium, volcanic and torpedo lights, which were placed along the banks of the falls, as well as along the roadways and behind the water of the Horseshoe Falls. The lights were known as “Bengal” lights, and they were the same kind of lights that were used at sea to send signals or give warnings. When they used them on the Falls in combination with rockets, spinning wheels and other fireworks, it was said to be quite a spectacular sight. The Falls were first lit using electricity in 1879, again to celebrate the visit of royal dignitaries. The lights at this time had the illumination power of 32,000 candles, which shines pretty dim when compared to the lights of today. In 1892, the lights were

lit with colour for the first time, with the use of gelatin plates, which were placed in front of the bulbs. These days, you don’t need to be of royal descent to experience the spectacle of the Falls lit up…in fact, we’ve kind of advanced in technology in the last 150 years, and now you can even choose to light up the Falls in the colours of your organization. The (Canadian and American) falls are illuminated every evening, year round, and any company is able to see their organization colours illuminated on the mighty Niagara Falls if it is prearranged in advance with the Niagara Parks Conference Sales Office. If you use one of the Niagara Parks restaurants (Elements on the Falls (Restaurant at Table Rock Centre) or (Victoria Park) Edgewaters Restaurant) for an aspect of your conference (welcome receptions, dinners, galas, etc.), this light show will even be complimentary for your group’s enjoyment!

Niagara Falls is home to Canada’s longest standing complimentary fireworks show, which takes place every Friday and Saturday at 10pm, starting on Victoria day, going until Labour Day. After that, fireworks take place every Friday until the Canadian Thanksgiving weekend*. The first step in ensuring a successful entry process is to contact an International Events and Convention Services Program Coordinator (IECSP) nearest to the location where the event is taking place, one to six months prior to the event’s scheduled start date. The coordinator will be able to assist and provide advice on what organizers need to know about bringing different events to Canada, including information on: Letters of Recognition: a letter of introduction issued by the IECSP Coordinator that is presented to the Canadian Border Services Agency upon arrival in Canada to facilitate your entry process. They can also assist you with border-related requirements, fee exemptions, information on moving goods from the Canadian border to the event venue, visitor Visa requirements, duties and taxes. The benefit of going through the IECSP is that it helps to facilitate and expedite the border clearance of people and goods coming into Canada for an event, and will minimize any delays. They can provide guidance and advice right from the planning stage to the closure of the event. GREG FREWIN THEATRE Greg Frewin is one of Canada’s most mind-bending magicians. He has won every major award in the world of magic including the Magician of the Year in the World Magic Awards in 2009 and first place at the International Brotherhood of Magicians competition. SHAW FESTIVAL THEATRE The Shaw Festival is located in Niagara-on-the-Lake, and according to their mandate, “the Shaw Festival is a theatre company inspired by the works of Bernard Shaw. We produce plays from and about his era and contemporary plays that share Shaw’s provocative exploration of society and celebration of humanity.” The Shaw Festival runs from April to October, and in the winter months, a film series is hosted there. The Shaw Festival has four different theatres: The Festival Theatre, which is where the large productions are done, The Court House Theatre, a national historic site, used for smaller productions, The Royal George Theatre,

originally used as a vaudeville house to entertain the troops, which is also a great venue for smaller plays, and the Studio Theatre, the smallest venue, and used for the most intimate productions. The Shaw Festival offers group programing and packaging, as well as group theatre tours. OH CANADA EH? DINNER THEATRE This all Canadian dinner show is a seven-time winner of “Niagara Falls Attraction of the Year”. The theatre is located on Lundy’s Lane, just a short distance away from the Niagara Falls tourism district. The Oh Canada Eh? Show is performed from April until October every year, and highlights everything Canadian! During the rest of the year there are a variety of other shows taking place. Group Sales Manager Ashley Auld notes that Oh Canada Eh? has, “meeting space available that can be rented out during the day, and we can host pre-show cocktail hours and host groups up to 250 for our dinner performance. We have inclusive group rates for groups of 15 and up.” The entire theatre can be rented out, as long as there is a minimum of 100 guests, and it can’t be rented out on a Friday or Saturday evening. Another unique option includes having cast members of Oh Canada Eh? go onto busses to welcome guests. There is a snack break and lunch menus available for meetings, and drink package are available as well. WE RECENTLY CAUGHT UP WITH GREG TO TAKE A LITTLE PEEK BEHIND THE CURTAIN.

NIAGARA FALLS TOURISM: Can you talk a bit about how you got started in magic? Did you perform magic as a child?

GREG FREWIN: “When I was 8, I got a magic kit for Christmas, because I had shown a little interest. I thought it was really cool, and I played and learned all the different tricks. When I was 12, my grandfather took me to see Doug Henning, and when I saw a live magic show for the first time, that’s the day I went, ok, this is what I want to do. From there, when I was about 14 or 15 years old, I met a gentleman at a magic club, who then took me under his wing and started teaching me and showing me the ropes of the real true, slight of hand and all that kind of cool stuff. So that’s how it all started.”

NFT: How do you come up with your illusions? GF: “For the most part, I create most of my magic. In the magic community, there’s a very good brotherhood of friendship. I think it’s because we have to keep things somewhat secret, so we are all on the same side. Sometimes, and I don’t want to sound like I dream it all the time, but I’ve had nights where I’ve been sleeping and I’ve dreamt something. But then the other times, I’ll just see something in life, I’ll be out somewhere and I’ll see something that is not even related to magic, and it might spark something. And I’ll go, ‘oh, that’s really cool, that’d be cool if I could…’ and I come up with an idea.”

NFT: And how long does that process take? GF: “It can vary, but for the most part, you’re looking at two or three months of research and development at that point. I like to draw things out and play around with them. Years ago I learned 3D studio max, which is an editing program for 3D visual cartoons. I’ll put in an illusion and design it to look like it would on stage, to get an idea of what it is going to be like. Then the process of building it and creating it comes next, and that can take up to six months, because now you’ve thought of something, but how do you make that work, and work well? Sometimes it goes faster, and sometimes it doesn’t even get out of the garage.” NFT: Do you have a favourite trick to perform? GF: In an overall blanket, I really love working with the animals. When I was a kid, I always thought it would be cool to be a veterinarian, but the sight of blood and all that stuff just doesn’t work for me. I’m a wimp.”

NFT: Why did you choose tigers as the major animal in your act? GF: “I got an opportunity about 18 years ago to meet a gentleman who

works in the movie industry and I was going into Malaysia in a show and I pitched it to them and he came there and spent a year with me, and we worked hand on hand every day. He taught me throughout the whole year, how to work, train and take care of the animals, not only how to use them on stage, but also how to have them in your life. Because it’s not just about the show, I mean, it’s a 100%, every day job. If they don’t love you and there is not that bond, they are not going to do anything. You have to understand them. You really have to have that connection and it’s built up with time, effort put in and just that trust, that bond.”

EVENT HIGHLIGHTS Rendez-Vous Canada 2015 Rendez-Vous Canada (RVC) is Canada’s premiere international tourism marketplace. Lead by the Canadian Tourism Commission, RVC connects international buyers with Canadian sellers of tourism products. Each year, it is held in a different Canadian city, and this year, for the first time ever, it was held in Niagara Falls. The city played host to approximately 1,600 leaders in the tourism industry, and according to David Goldstein, President and CEO of Destination Canada, the conference was “one of the best events in our history” (the event has been running for 39 years). Rendez-Vous Canada is a huge event for tour operators and wholesalers from all around the globe, and events such as this greatly help to increase Canada’s tourism appeal. Over the

course of the event there were 24,000 pre-scheduled face-toface business appointments with over 900 Canadian sellers of tourism experiences and products from coast to coast. The conference was held primarily at the Scotiabank Convention Centre with offsite events taking place throughout Niagara Falls and the rest of the Region. “RVC gave Niagara an opportunity to really shine, as most people are unfamiliar with everything it offers, beyond our most famous natural asset,” says Vittoria Wikston of Niagara Falls Tourism. “All 12 Regions of Niagara came together to offer Regional tours, five different wineries came together to execute Niagara Night, and over 30 buses were used to provide the mass movement out of Niagara Falls to wine country. All

Michelle Bosc of Château des Charmes winery notes, “for RendezVous Canada there were 1500 guests for Niagara Night. Several properties worked together to produce similar events at each individual property but coordinated as a whole. So while the personal flair from each property shone through, each guest experienced the same quality event, meal, entertainment etc. It took months of planning but it worked very well.” The success of Rendez-Vous Canada 2015 proved that the possibilities of this world- class destination to make events and conferences truly memorable and one of a kind are endless. Carrie Paolone, Director of Events at the Scotiabank Convention Centre, notes that this event “proved to be the perfect example of what a true city-wide event looks like.” Requiring the involvement and cooperation of many municipal and regional partners under the direction of Niagara Falls Tourism, “this event was quite the concerted undertaking and everyone pulled equally ensuring an undeniably successful execution,” Carrie explains. The conference offered buyers the chance to participate in a wide variety of activities and day trips throughout the Region. Choices for guests included: shopping excursions, Regional tours, food and wine tours, historical tours, adventure hiking and jetboating, golfing, cycling, tree planting, horseback riding, a magic show, and live theatre. All of the activities were chosen specifically to highlight lesser aspects of the Niagara Region. Sanat Kumar Hegde, a travel buyer from India, told the Niagara Falls Review that attending Rendez-Vous Canada was his first time visiting Canada, and that it was “one of the best experiences I have had in my life. The wineries, the cuisine, everything. It’s unbelievable.” Magda Nassar, a buyer from Brazil told the newspaper, “I love Niagara Falls, it’s a cozy city. Of course the Falls are the big hit, but there is so much more that the Region has to offer.” During the conference, one of the highlights was “Niagara Night”, an evening of culinary delights expertly paired with locally grown wines bringing buyers up close and personal with the world-renowned Niagara Wine Country hospitality. PAST TIME The Niagara area has a long and storied past lining the pages of it’s history books; everything from melting glaciers creating the most unique landscape in the country, to the underground railroad assisting escaping slaves, to bloody battles destroying entire towns during the War of 1812. FORT GEORGE

MCFARLAND HOUSE

This historic landmark served as the headquarters for the Centre Division of the British army during the War of 1812. These forces were made up of British soldiers, local militia, Aboriginal warriors and freed slaves. It was built between 1796 and 1802, and though most of the buildings were reconstructed in the 1930s, Fort George is where the War of 1812 comes to life. More information: friendsoffortgeorge.ca

This beautiful home is particularly historically significant because it survived the burning of Newark (Niagara-on-the-Lake), which makes it one of the oldest buildings in the area. During the War of 1812, the house was used as a hospital for injured soldiers. It was left in disarray after the war, but was restored in 1939. WILLOWBANK This beautiful estate located on the Niagara Parkway, is the perfect example of the type of house a wealthy settler might have had in 19th Century Upper Canada. OLD FORT ERIE Old Fort Erie shares memories of the bloody battle that once raged there; in fact, it is known as “Canada’s Bloodiest Battlefield”, and though it was ruined by the end of the war, it was reconstructed in the 1930s. This is the site of one of the most famous battles in the War of 1812. It was also the spot where Sir Isaac Brock was killed in action (there is a monument there that you can climb for a spectacular view of the area).
