y favourite time of year is without a doubt, the holiday season. Tacky decorations (Clark Griswold had it right…when the question is, “do we need more twinkle lights? ” the answer should always be a resounding “yes!!”), perfecting my tiny Christmas village, endless baking, finding the perfect gifts for people…I love it all! I even appreciate the snow and how it kind of blankets everything together just right (this snow-loving feeling dissipates by the time mid January rolls around). To me, Christmas is family, friends, cuddling on the couch watching movies, fitting as many Christmas carol car karaoke sessions into one month as possible and trying to really take a step back and appreciate that life here is pretty great. I’m extremely excited about this issue, because it is a celebration of everything holiday…the commercial aspect of it and the more sentimental side of it can coexist! You can love shopping for that perfect little black party dress
as much as you love creating the perfect table setting for a holiday feast. For our cover story, we had an awesome time bringing together six amazing ladies from the Niagara Region for a fun-filled fashion shoot. Each and every one of these women is engrained in the Niagara community and is consistently working to make it an even better place to live. It was inspirational getting to know them; they all gave me warm and fuzzy feelings about being a part of this community, and I am extremely glad they are gracing our cover. Whatever part of this season is your favourite, from the rush of hitting the mall to cozying up on the couch with a tasty hot chocolate while the snow falls outside, make sure to take time to relax, enjoy, eat and spend time with your nearest and dearest. 100 POINT SCALE With the arrival of the holidays, my inbox, voicemail 95-100 = Outstanding 90-94 = Excellent 85-89 = Very Good 80-84 = Good 75-79 = Drinkable 70 & under = Below average
and social media messages start to overflow. Why? Well, after fifteen years of teaching wine classes to professionals and wine lovers alike, their fancy begins to turn to holiday wine purchasing, and they seek guidance. Before providing advice, I always ask a couple of questions. The first is how much they wish to spend. The second is for what occasion. It is at this point that I envision a ‘reindeer in the headlights’ reaction as they slowly realize that there are many holiday purchasing scenarios. With this in mind, here are my top selections, for different occasions and at different price points.

ONE PREMIUM GIFT GIVING 94 The Foreign Affair Gran Q 2010, Niagara ($150) The name of this wine is a tip of the hat to the famed Amarone producer Guiseppe Quintarelli, whose wines were the reference point for Len Crispino, when he decided to start the Foreign Affair a decade ago. The grapes for this 17%+ alcohol monster were dried for three months before being pressed. It possesses the texture of syrup, and a sexy profile of plum, dried olives, maraschino cherries, anise, mint, milk chocolate and vanilla. Yes, the price is out of reach for most of us mere mortals, but this is a singular wine, which will continue to evolve for the next 15 to 20 years - and I have never said that about Ontario red before! Serious meditation wine here! (ES) 93 Justin Isosceles 2012, Paso Robles ($117.95) The 2012 vintage of this Icon wine from Paso Robles is a 15.5% monster that throws masses of dark fruit at you in the form of blackberry, plum, cherry and blueberry. Additionally, there are mocha, caper, mint, balsamic, vanilla and cola qualities that add dimension. Thick, almost syrupy on the palate with sublime length and enough tannins to cellar for a decade, if so desired. That said, it is in fine drinking form right now as it just keeps on giving. (ES)
WON’T BREAK THE BANK GIFT GIVING 91 J. Christopher Lumière Pinot Noir 2011, Eola-Amity Hills ($44.95) From Oregon come this unfiltered medium-bodied Pinot Noir. Dark fruits: cherry, plum, and cassis mesh with incense, graphite, roses and spice. Concentrated there is excellent length and enough structure to age five years. Perfect for the Pinot lover in your life. (ES) 90 Thirty Bench Small Lot Merlot 2012, Beamsville Bench ($40) A textbook example of Merlot. Plum, dark cherry, spice, roasted herbs, chocolate and red/purple flowers flow from the glass. The 14.4% alcohol, suave tannins and excellent length make for one tasty drop of juice. Drink until 2022. (ES)
TURKEY DINNER 90 Beringer Chardonnay 2013, Napa Valley ($22.95) This Chardonnay is always a stalwart of quality. Apple, peach, pear, vanilla and cream corn are all present in this medium-bodied Chardonnay. Lengthy, it is not heavy, thanks to the fresh acidity that tidies everything up. Very versatile with food. (ES) 90 Henry of Pelham Estate Chardonnay 2013, Short Hills Bench ($19.95) For the price, this wine packs a lot of punch. Medium body and well balanced, the pineapple, golden apple and honey of the grape is caressed by oaky notes of vanilla, spice and toast. On the palate, it is ripe with brisk acid and a long aftertaste of banana cream. It should evolve well over the next four years. (ES)
ROAST BEEF/ LAMB DINNER 93 Stratus Red 2012, Niagara-on-the-Lake ($44) Quite possibly the best Stratus Red to date! A saturated ruby colour leads into a complex mix of blackberry, cassis, raspberry, cocoa, coconut, vanilla, violets, mint and pepper/anise. It is concentrated and long lasting with sweet fruit on the mid-palate before the firm, dry tannins make an appearance. Hold for four years and then drink until 2025, preferably with a NY strip. A blend of all three Bordeaux varietals plus a smidge of Tannat. (ES) 89 Fontanafredda Barolo 2010 ($30) This is probably the best bang for the buck Barolo you will ever come across. Not a powerhouse, but a good mouthful of cherry, licorice, dried flowers, spice and chestnut. Solid length and tannins. Drink until 2020. It is perfect with red meats or saltier cheeses. (ES)
CHANUKAH/KOSHER 87 Barkan Classic Cabernet Sauvignon 2013, Israel ($16.65) This mid-weight Cab is easy drinking and food friendly. Cassis, blackberry, cedar, roasted herbs, toast and spice. Very good length and ready to drink (ES) 86 Ben Ami Chardonnay 2013, Israel ($15.25) This Chardonnay was fermented and aged in stainless steel so as to preserve freshness and purity of fruit. Light and fruity, there is pineapple, citrus, pear, melon and apple. Fine length and crisp acid make for immediate drinking. (ES)
NEW YEAR’S TOAST 92 Taittinger Prélude Grands Crus NV, Champagne ($79.95) Made of equal parts Chardonnay and Pinot Noir, all the grapes were harvested from the top villages known as Grand Crus - hence the name. A medium gold colour and a bouquet of yeast, toast, apple, cream, lanolin, banana cream, cherry and earth beguiles. There is superb length with fresh acid rounding out the experience. (ES) 87 Colio Lily Sparkling Wine NV, Ontario ($16.95) A new classy label has been created for this stalwart Ontario bubbly. Winner of a silver medal at this year’s Ontario Wine Awards. Made from 100% Riesling and off-dry, it features baked apple, peach, citrus and minerals. Perfect with spicy appetizers or coconut shrimp. (ES)

The brick red colour leads into a combination of prunes, dried raspberry, dried flowers, spice and hazelnut. Well balanced and smooth with a long aftertaste. (ES) 91 Graham’s Quinta dos Malvedos Vintage Port 2004 ($29.95/375ml) With the cold nights now upon us, there is nothing quite as satisfying and cathartic as a glass of Port in front of a roaring fireplace. Black as night, this Single Quinta (farm/ vineyard) Vintage Port is concentrated with masses of cassis, plum, kirsch, violets, mint and dark cocoa. It will evolve nicely over the next 15 years. Superb value! (ES)
THROWING A PARTY 87 Lindemans Bin 95 Sauvignon Blanc 2015, South Eastern Australia ($10.95) For the price, this wine packs a lot of flavour. Light bodied and refreshing, there is lime, grapefruit, gooseberry, pear, grass and some tropical nuance. Fine length and ready to drink, so make sure to pick up a few bottles. (ES)

DIRECTIONS 1) Combine milk, cloves, ½ teaspoon vanilla, and cinnamon in saucepan, and heat over lowest setting for five minutes. Slowly bring milk mixture to a boil. 2) In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for three minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves and let cook for about an hour. 3) Stir in rum, cream, 2 teaspoons vanilla and nutmeg. Refrigerate overnight before serving.

DIRECTIONS 1) With a fine grater, zest, then juice the orange. 2) With the flat side of the knife, press firmly on the cardamom pods to bruise them. In a large pot (not aluminum) combine the zest, juice, cardamom, cloves, allspice, peppercorns, cinnamon, wine, sugar and brandy. Cook over medium heat, stirring until sugar dissolves, 1 to 2 minutes. 3) Reduce heat to low, simmer until flavours have melded, about 30 minutes. Pipe eight garnishes onto a waxed paper lined baking sheet. Refrigerate until set, about 10 minutes. 2) In a large pitcher, stir coffee and remaining butterscotch chips until chips are melted. Stir in cream and sugar. Pour into mugs. Top each serving with whipped cream and a butterscotch garnish. Who doesn’t love the meaty, brown, caramelized flavours puddled on a plate, daring every slice of beef, root vegetable or forkful of mashed potato to slither around it?>>

t’s almost expected these days for a dinner eaten out in a restaurant to include the mother of all sauces, demi glaze. Sweet meaty flavours layer with rustic earthy, spicy hints to peppery and the feather-light, sensual essence dances to heavenly elegance like Fred Astaire and Ginger Rogers. According to WhatsCookingAmerica.com, “sauces are liquid or semi-liquid foods devised to make other foods look, smell, and taste better.” According to me, sauces are a pain and in the case of demi glaze, can be pretty scary to attempt. It doesn’t matter if you’re talking simple sauces, pan sauces, classic French style sauces or everyday simple gravies, I don’t know of any home cook that embraces the job of learning the art of sauce making with joy. The reason professional chefs can serve you an incredibly rich, velvety brown sauce in your favourite restaurant is because they have spent days roasting bones, soaking packets of bouquet-garni and reducing stocks just to make the major and most important ingredient in sauces – the broth. Most of us home cooks don’t have the time or desire to make the most delicious and classic stock reductions for soups, stews, braises and sauces. Sure, we have no trouble making a batch of chicken stock for homemade chicken soup but how many of us want to spend two to three days making a demi-glace? Not me. But there is hope. There are a few tricks to sauce making that make it possible for home cooks to create some of the most delicious liquids easily. For me, it’s an easy three-step process that

includes perfecting the roux, being stingy with the brown bits on the bottom of every pan and buying the finest, chef-made stock. It’s logical and simple. Think about the last time you made turkey dinner with gravy. Did you take the turkey juices, drain the fat and use them to flavour your gravy? Of course you did. Once the turkey was cooked (aka, now you’re out of time) you used the pan juices, thickened them, added commercial broth and served it up. Doing it this way, the best you could hope for was an anemic beige coloured liquid that was cloyingly vicious and rather pastily dull. If that’s ok for you, read no further. But what if every time you make chicken (or turkey) you saved the brown bits and juices from the bottom of the pan? Do it! Pour them in a jar and put them in your freezer. Do you see where I’m going with this? Now you’re not held hostage until the turkey is done, now you’re free to make really good gravy while the turkey is cooking! But first you need to start with a silky roux. Roux is equal parts butter and flour and it has four stages that are distinguished by colour and flavour. For turkey gravy, cook the roux over low heat to reach the flavour and colour of a blonde roux. When you make roux, it doesn’t matter if you use two tablespoons of each butter and flour, three tablespoons or four. What matters is that you calculate the warm broth to be four times the quantity of the roux. This means for two tablespoons of each butter and flour (60 mL total), you will need four times the amount or 1 cup (240 mL) of warm broth. Likewise, if you use four tablespoons (120 mL) of butter and flour, use 2 cups (500 mL) of warm broth. To your silky roux, add lots of warmed pan juices (from your jar in the freezer) and then the broth. But a word of warning: if you’re not using good broth, it will all have been for nothing. Thankfully there are gourmet food shops that will stock broths that have taken days to perfect. ROUX Most sauces and gravies are thickened with roux. Roux is cooked in a saucepan over low heat to cook the raw taste of the flour out and to coat the starch in the flour so it doesn’t clump when you add warm broth. The four stages of roux are white, blonde, brown and dark brown. WHITE ROUX: The flour is added to the melted butter and cooked while stirring continuously until the flour is fully incorporated and evolves its pasty flavour into something a bit more neutral, about 15 minutes. It really doesn’t add any extra flavour to a sauce but it’s a great thickening agent for white sauce (Béchamel), creamed soups and chowders. BLONDE ROUX: A white roux cooked until it starts to develop colour, about 30 minutes. At this stage it will have a slightly nutty flavour and an aroma similar to popcorn. It’s a better thickener and used in cheese sauces (Mornay) or in chicken and turkey gravy. BROWN ROUX: Is cooked even longer than a blonde roux, about 45 minutes to a deep golden colour, almost the colour of peanut butter. It has a pronounced nutty flavour and is used for all brown sauces and soups. DARK BROWN ROUX: Is cooked to a reddish-brown colour, has a deep nutty flavour and used in robust Cajun dishes such as gumbo. To get to the dark brown roux it could take up to an hour or more.

You can find mason jars almost everywhere these days, so why not take advantage of their popularity to create cute Christmas decorations?
THINGS YOU’LL NEED: • Mason Jar • Fake snow • Any little decorations for the scene you are wanting to create (tiny cars, trees, etc) • Hot glue • Twine • Pretty paper to cover lid
STEPS: This project is really quite easy…decide first what kind of scene you want to create. The car with the tree on top is a cute one to start with. The first step is to hot glue your tiny tree to the roof of the tiny car. Use twine to tie the car to the roof of the car. It will stay secure if you take the string, wrap it around the wheels, then also hot glue the string to the bottom of the car. Put your car into the jar and add the fake snow until it looks like enough. Cut out a nice piece of paper that will cover the top of the jar, and then screen the mason jar ring on. put it on the mantel (or table, or wherever!) and enjoy. THINGS YOU’LL NEED • • • • •
1 cup of salt 1 cup unbleached all-purpose flour 1/2 cup water parchment paper or aluminum foil a straw/pen for punching a hole
STEPS: Preheat oven to 200 degrees (Farenheit). Mix together the salt, flour and water until it becomes firm. Knead the dough with your hands for about 30 seconds, then cut it into circles with a cup. Place your pets paw into the salt dough hard enough to make an impression. Use the straw or pen to poke a hole through the top of the dough. Bake in the oven for 2 to 3 hours. Once it has cooled own, you are free to decorate it as you want. Paint your pets name on it, fill in the paw print with glitter…whatever tickles your fancy. Tie a nice ribbon through the hole you made and hang it on the tree. craftymorning.com

THINGS YOU’LL NEED: • Tree branches • Tacky Glue • Colourfill Diamond Vase Filler 1lb or 2lb bag • Newspaper
STEPS: Place a piece of newspaper down in your work area. Put a pile of the Diamond Vase Filler in the centre of the newspaper. Open the tacky glue and spread it out on the branches, and spread it so that it is smooth along the branches (you don’t want any clumps of glue). Fold the paper slightly so the diamonds don’t fall out. Take the branch and roll it around in the Diamonds. Let it set for about 45 minutes. Repeat the last step on the opposite side of the branch. This is a week-long celebration that celebrates African heritage. There is drumming, musical selections, food, drinks, art and more. It culminates in a feast and gift exchange. The name “Kwanzaa” is said to translate to “first fruits of the harvest”. Kwanzaa was created in 1965 to help African Americans reconnect with their African culture costs. This is a festival primarily in North America.

In Japan, KFC is traditionally eaten for Christmas dinner, all due to a successful marketing campaign that took place 40 years ago. The Colonel’s chicken is so popular on that night, that orders need to be placed two months in advance.
This tradition dates back to Germany in the Middle Ages. “Feast Day of Adam and Eve” was celebrated by parading down the streets carrying a paradise tree that had apples on them. During the Victorian Era, this tradition spread to England. It is generally assumed that German settlers brought the tradition over with them when they came to North America. The trees eventually started to be decorated.
Mummering This tradition, unique to Newfoundland (and some parts of Ireland), sees mummers dress up in elaborate disguises and visit their friend’s houses. As tradition goes, they try to remain unrecognizable to those they are visiting. If the homeowners correctly identify who they are, they are given food and drinks.
Rudolph’s Humble Beginnings Rudolph was originally created by a department store to put in a promotional colouring book. They got one of their employees (a copywriter with the company) to come up with a children’s story. Because he was small as a child and was often picked on, he decided to write an ugly duckling type tale.
Cheers This love it or hate it beverage developed from the British aristocracy, because only the wealthy could afford the milk and eggs. They added alcohol (liqueurs such as brandy & sherry) to help keep the drink from spoiling. It came to the U.S colonies in the 18th century and because expensive liqueurs were so heavily taxed, they began to add rum, which was imported from the Caribbean. It was originally called egg-n-grog, because rum used to be referred to as “grog”, and the drink was often served in wooden mugs known as “noggins”. The name was eventually changed to eggnog.

Ruth is a focus coach who specializes in helping to develop leadership skills for women, and to help them achieve success in both life and business. She is a public speaker, a workshop presenter, an extremely popular event emcee, co-founder of Women in Niagara Small Business Club and currently volunteers on the Women in Niagara council for the Greater Niagara Chamber of Commerce.
What would you say your greatest strengths are?

And we’re all in this together so “a woman of substance” also needs help and support along the way, and isn’t afraid to ask for it.”
“I choose to be involved with things that really matter to me. It’s as simple as that. During the photoshoot, you had us all in stitches with your “laughing yoga”, what is it and how did you get involved? “Haha! Wikipedia says, ‘laughter yoga is a practice involving prolonged voluntary laughter. Laughter yoga is based on the belief that voluntary laughter provides the same physiological and psychological benefits as spontaneous laughter.’ I learned about laughter yoga through an article I read about seven or eight years ago. I did some research, found a course, and learned how to do it because in addition to the health benefits, it appeals to my playful nature, and I love to have fun.” You seem to have a natural charm and engaging personality, have you always been this way? Do you ever feel insecure? “I’m mostly beyond the insecurity bit. Like most people, I have suffered from the ‘imposter syndrome’, but with age, I find I
Someone is sending you on a trip around the world: pick three cities you have to visit. Why? “Sedona. My first choice will always be Sedona. I’ve been there before, but there’s something about the desert and the red rocks that just calms and soothes me. Budapest. I’m not really sure why, it’s just somewhere I’ve always wanted to go. I’m less about cities and more attracted to places where there’s lots of space. It calms me, grounds me and connects me.”
RUTH UNRAU If you could go back and visit yourself as a child, what knowledge would you want to impart? “Don’t worry about fitting in. Be yourself. Don’t be scared.” Off the top of your head, what is your favourite movie in your collection? “The Princess Bride or Salmon Fishing in the Yemen. I can’t quite decide which one I like best.” What’s the last book you read for pleasure? “The Will Trent Detective Series by Karin Slaughter. Mysteries are great escapes for me.”

There is a campaign by Always called #LikeaGirl, that focuses on girls and young woman talking about the kind of limitations they experience as a result of social norms and attempt to take back the phrase, “doing something like a girl”. If there is one thing you could tell them to “do like a girl”, what would it be?
“I used to be really afraid of public speaking. Now, I can’t wait to get my hands on a microphone!”

MARY SPECK What does “be a woman of substance,” mean to you?
While many people can easily choose to retreat after a tragedy, there are those among us who find it within themselves to forge ahead in the face of adversity. Mary Speck is one of those people. After losing her son to heart disease, she gave herself a goal: spread the word in Niagara about the importance of heart health. She learned just how many lives could be saved with a simple bit of knowledge. Her program teaches children to become aware of the signs and symptoms of heart and airway emergencies and how to appropriately respond. So far, over 83 schools in Niagara have been introduced to the CPR training.
“A woman who believes that what she is doing will inspire other women to set a goal for themselves to achieve the best that she can be. A woman who will dare to challenge herself.”
Europe: Amsterdam because of the canals and museums, Lucerne, which is nestled amid it’s snowcapped Alps and cobblestone streets, and Venice, with it’s gondolas, arched bridges, palaces, Venetian glass and beautiful masques. I love all the different cultures these cities have to offer.”
What would be one thing people would you be surprised to know about you?
Off the top of your head, what is your favourite movie in your collection?
“I travelled alone at the age of 9 from Germany to Canada via London, Gander and Detroit with Pan Am Airlines. It was an 18-hour trip and I could not speak a word of English. My father had immigrated to Canada before my mother and I a year later. It was quite the adventure for me.”

What motto do you live by? “Appreciate all that you have, spend time with your family and friends and tell them you love them, for no one is guaranteed tomorrow.” If you could go back and visit yourself as a child, what knowledge would you want to impart? “Never lose your imagination that you are blessed with as a child, it will see you through your journey in life.” It seems like you are a person who is always very poised, is there anything in particular you like to do to let loose? “Yes, I love to dance!” Someone is sending you on a trip around the world: pick three cities you have to visit. Why? “I would probably pick three cities in
You’ve dedicated a huge part of your life to educating children on the importance of heart health and knowledge. Can you elaborate on why this is so important to you? “Yes...my son, Jeremy, was born with transposition of the great vessels in which the aorta and the pulmonary arteries were reversed on his heart. He underwent openheart surgery when he was 9 months old. This was called the Mustard Procedure after Doctor Mustard who invented this procedure at Sick Kids Hospital in the late 60’s and early 70’s. Jeremy did extremely well, played sports and grew up to be a very normal young man. The problem with this surgery was that the small side of the heart did the major work and this could present a problem later on in life, such as an enlarged heart and/or arrhythmia which is what Jeremy suddenly passed away from at the age of 23. I started a fundraiser with Heart Niagara called “Two Hearts in Motion” to raise money for CPR Bystander Kits for grade 7 and 8 at Princess Margaret School and later other elementary schools in Niagara. The young students learned how to administer CPR and also take the bystander kits home and teach other siblings and their parents the technique. They
also learned the importance of heart health, eating right, exercising and the dangers of smoking. I raised nearly $50,000 for this program. At each one of my fundraisers, I also involved the Niagara Fire Department to demonstrate CPR and the importance of knowing this life saving technique. I have produced a DVD along with Heart Niagara and the students of Princess Margaret School which outlines the importance of learning CPR.” Since you started this program with Heart Niagara, what advancements have you seen in the community as a result? “The results have been amazing as the program is now taught in all elementary schools and high schools as well.” What’s the last book you read for pleasure? “A Perfect Life by Danielle Steele.” There is a campaign by Always called #LikeaGirl, that focuses on girls and young woman talking about the kind of limitations they experience as a result of social norms and attempt to take back the phrase, “doing something like a girl”. If there is one thing you could tell them to “do like a girl”, what would it be? “There are no limits on what a girl can do. With determination and hard work, girls can accomplish anything they want to do in life. I encourage my granddaughters to follow their dreams no matter what roads they choose in life and never let anyone discourage them from doing so. Fear of failure will only hold you back in fulfilling your dreams. Surrounding yourself with positive people is the answer to achieving your goals.”

If you are from Niagara, you’ve probably heard her name. She is currently the President of our very own Niagara Ice Dogs (and remains the only female president in the Ontario Hockey League). She runs the team with her husband, Bill Burke, and together, they have become an integral part of the Niagara community. They helped pave the way for the new Meridian Centre in downtown St. Catharines and continuously give back to the community that has embraced them with open arms.

We’re curious, what challenges, if any, do you face as a prominent businesswoman in a predominately male industry?
I’d be the one to get eaten by a lion, so maybe I should rethink that!”
“Well, there’s always that fear that you won’t be taken seriously. I was lucky that, in my previous life, Bill and I owned and operated what ended up being the largest independent printing company in Canada at the time. In those days, the printing industry was completely male dominated, so I learned early on that if I wanted to make it in a “man’s world”, I had to make sure that I knew my stuff. I worked in every aspect of the business to ensure I was educated enough to be able to not only understand what my industry was all about, but that I could converse with anyone about it. Walk the walk, talk the talk, so to speak. I refused to give up my femininity just to fit in, so I made sure I understood my business. The same holds true for the Ice Dogs. Yes, it is a predominately male industry, but I know what is required to run the business side of things, so as long as I don’t have to coach the team, we’re good to go!” You’ve really managed to immerse yourself in the Niagara community and in turn have been embraced, what do you like best about living in Niagara? “I think the answer is actually in your question. The fact that this community is so close knit that we have been embraced. Coming from Toronto, you live, work and play in this bubble of anonymity which you can actually hide behind. It’s so easy to not get involved, but here in Niagara, when you do immerse yourself in the community, there is this huge sense of belonging. That
it’s in your power to make change and be appreciated for it. There is a real sense of community.” What does the phrase “be a woman of substance” mean to you? “I don’t look at it as being a “woman of substance” but rather “a person of substance”. I think we all have to conduct ourselves in a way so that at the end of the day you can look yourself in the mirror and like who you see. It can be as simple as a small act of kindness but I’m a huge believer in the old adage, “do unto others as you would have them do unto you.” If you could go back and visit yourself as a child, what knowledge would you want to impart? “To embrace my own uniqueness. I think all of us have our insecurities, especially as children and young adults, but our difference is what makes us special. Discover what yours is, and own it!” Someone is sending you on a trip around the world: pick three cities that you have to visit. Why? “I’m very fortunate that Bill and I have been able to travel a lot, so we’ve been to many exotic places. But to be honest, the older I get, my wish list is pretty simple. First, I love Muskoka in the summer. We have a cottage there and that is the best family time you can have. Heaven on earth! Next, I love Cocoa Beach, Florida in November. This is Bill’s and my time to get away just the two of us. And finally, there is a part of me that would love to go on an African Safari, but Bill says
Off the top of your head, what is your favourite movie in your movie collection? You’re going to think I’m crazy, but it’s True Lies. It’s the perfect blend of action and comedy. I could (and have) watched this time and time again. What is one thing people would be surprised to know about you? That I can whistle louder that anyone I know! What’s the last book you read for pleasure? I just finished The Girl on the Train by Paula Hawkins. It’s been on the top seller list for a while and I think it lives up to the hype! If there is one thing you could tell them to “do like a girl”, what would it be? My advice to young women would be that whatever it is that you do, be true to yourself. Women can do or be anything they want, so don’t ever conform to anyone else’s idea of how you should look, or how you should act. SILVANA DIBELLONIA What does the phrase, “be a woman of substance” mean to you? “A woman of power, that is optimistic and has a positive influence on women and girls. Women that have meaning, this is truly one of the greatest compliments to ever receive.” If you could go back and visit yourself as a child, what knowledge would you want to impart? “It is proven that the early years set the framework for your future. As children if we are taught to have morals and values, and by the time you reach adulthood, it is just a natural and normal way to be.” You are involved in Niagara’s chapter of “100 Women Who Care”…what do you think it is about women getting together that can be such a powerful force? “What I really like about ‘100 Women Who Care’ is that it involves women from the entire Niagara Region, from Fort Erie to Grimsby to NOTL that are passionate about their individual charities. In just one hour, we learn about the needs of our community and are able to make an incredible impact financially to a charity. It allows women to become familiar with the

Find your passion in life, which will create meaning and generate happiness.” What do you find is special about the Niagara community? “I find the Niagara community very kind and generous. It is heartwarming to see how everyone comes together ready to lend a helping hand to the needs of the community.” What would be the one thing people would be surprised to know about you? “ That I am a Registered Nurse.”

Sue-Ann comes from a long family background of winemakers, and was the first (and youngest) female to ever win an Ontario Wine Award for “Winemaker of the Year”, which she did in 2010. She has worked as a winemaker all over the world, and in the time she has been making wine, she has won more than 450 awards. She opened her own winery in Jordon in 2009 and continues to be a positive force in the Niagara wine scene.

winery is still very small and needs improvement in every sector (improved production facility, better distribution, wider markets, larger selection, more events, etc.) At the same time, our region of Twenty Valley needs more recognition, awareness, exposure and growth-I look forward to being a part of its growth and development.”
“A woman that has started at the bottom and worked her way up, has taken the time to properly educate herself on her career, has the ability to “give back” through mentoring, community and does that.” If you could go back and visit yourself as a child, what knowledge would you want to impart? “I don’t have much to complain about in regards to my time as a child. I was lucky to have an amazing family (both nuclear and extended) experiences, sport, education, etc to give me the knowledge and confidence that I have today.” What would be one thing people would surprised to know about you? “I love gin and chocolate as much as wine. Actually, that may not be much of a surprise to anyone that knows me…” Someone is sending you on a trip around the world: where would you visit and why? “Adelaide, South Australia. I have amazing memories from going to grad school there plus stellar friends that are amazing contributors to either their community, agriculture and national politics. It is literally the opposite side of the world from us, making it tough to visit as often as I’d like. Then, any city in Italy. I’ve been lucky enough to spend a good quantity of time in Europe, but very little in Italy. And I even was privately tutored in Italian for three years in high school! I’d love to visit the sights, enjoy the food and savour the wine.”
When you come from a family that has been doing the same business for so long, did you feel any kind of pressure to continue on with it, or is winemaking just something that is in your blood? “I jokingly say, often, ‘I just don’t know better’ or ‘I don’t know what I would do’ without grapes and wine. From a young age, grapes and wines have been an enormous part of my life and so…yes, it is in my blood. There certainly was never pressure to pursue a career in this field however, once I decided on oenology (the study of wine), the pride in my parents and extended family was quite obvious.” Off the top of your head, what is your favourite movie in your movie collection? “Easy. The Sound of Music. I had to buy it since I was the only person under the age of 80 that incurred late fees when I rented it. It may now battle with “Rock of 80’s”-it is too corny and reminds me of my idealist years in the 80s.” In what ways are you able to put a little bit of your own personality into your wines? “The grapes basically tell me what personality they need that has to be expressed… kind of like raising children. Regardless, I make sure they express a level of elegance and subtleties as required or are as muscular and angular as required as well…just like people.” What is ahead for you? What do you hope to accomplish or bring to the wine industry? “There is quite a bit ahead of me. The

I’d like to think we can move beyond gender issues however, statistics don’t lie and unfortunately this issue needs to remain in the forefront. I have been fortunate to have never really had issues, however, admittedly, there are sales people that are lucky they left my presence unscathed. I believe if you keep your head down, do your job well, keep focused and be willing to jump into the task with both feet, I’d hope there wouldn’t be any barriers. Accept and embrace differences.” Why do you think the arts have the power to transform a city? “The arts have the ability to bring people together, to create discourse; to help us understand the diverse world we live in. They help strengthen the local economy, as eye-catching storefronts and new cultural activities bring in people and attract new businesses. There is a building sense of community identity and local pride and make a neighborhood a more interesting, livable place. But most importantly arts and culture are a powerful force that help shape a neighbourhood's narrative -- telling the story of what kind of place it is; what kind of place we want our city to be.” Has the opening of the new performing arts centre in St. Catharines impacted the community, and in what way? What are your hopes for the future in regards to that project? “Being part of the team opening the FirstOntario Performing Arts Centre has been a once in a lifetime opportunity. The Centre is a new gathering place for our community. We are still in the early days of being in the facility but the initial response

has been inspiring. We now have not 1, but 4 purpose built venues that will set the stage for many touring and local artists. Having the new FirstOntario Performing Arts Centre in our downtown core in such close proximity to Brock University’s Marilyn I. Walker School of Fine and Performing Arts, the Meridian Centre, and the many businesses and other arts organizations will bring a sense of vibrancy and excitement that downtown St. Catharines hasn’t experienced in many years. People are starting to see this transformative dream become to a reality. I have great hope for the role of this Centre as the beating heart of our downtown core.” What do you see as the biggest challenge when it comes to the arts? “We need to continue to raise the profile of the social and economic impacts of the arts and their seminal role in our community and the reciprocal relationship necessary between artists, arts organizations and the public and private sector. We need to fight the isolation of screen culture and get more people out to live events. Once you get people in the door and experience a live performance, a thought-provoking film, a social gathering…they are hooked.”
What would be one thing people would be surprised to know about you? “I used to be able to play a mean rendition of Guns ‘n Roses’ “November Rain” on the piano. It was my ‘party trick’ in high school.” Someone is sending you on a trip around the world: pick three cities that you have to visit. Why? “Gagliano Aterno, a very small village in the Abruzzo region of Italy, where my dad was born. New Orleans. I’ve never been and have always wanted to go and experience the music scene (and food)! Paris. Because, it’s Paris. Romance, art…beautiful French men…what else do you need?” Off the top of your head, what is your favourite movie in your movie collection? “The Princess Bride” What’s the last book you read for pleasure? “The Hobbit, J. R. R. Tolkien”

A EUROPEAN’S GUIDE TO
NORTH AMERICAN My first voyage alone across the Atlantic took me to Venice - an effervescent city of divine beauty and inconceivable elegance. But it was not particularly the sites on offer which were the most extraordinary examples of refinement and allure, but, rather, the air of this enchantment was found in the ordinary, the Venetians themselves. They held themselves with great sophistication, seemingly without leaving a stone unturned when it came to their personal grooming and upkeep - not a hair out of place, nor a buckle un-cinched. It wasn't, however, until I returned to Europe two years later - this time across Italy, Switzerland and France, that I realized this refinement was not confined to the Venetians, but what seemed to Europe as a whole. Even in my subsequent journeys to the south and east of the continent did I return to a similar conclusion, a running theme of unparalleled grace, rarely seen in my Torontonian way of life. Upon my return home from this summer's European adventure, before de-boarding the plane, there it was: The first sight of sweatpants, followed by an avalanche of pajama pants, socks matched
with and flip-flops, ill-fitting attire with ghastly colors to match - it seemed somewhere along the Atlantic the imaginary line between comfort and sophistication had been drawn. I refused to submit - I returned to my day job wearing heels and a tailored business dress I had bought during my travels matched with fine jewellery and a designer bag. Compliments were abound and boastful pride was well in check. However, by the fourth day or so, my Europeanstyled clothing had been exhausted, and I returned to my frumpy dresses with comfort shoes and cardigans to match. In comparison to my European style, each day here made me feel worse and worse, and I knew then that my style required resurrection, a desperate need of mending, but without the additional cost of an eight hour plane ride. It was then that I stumbled upon the newly opened Lazar Couture boutique on Bloor, in Toronto. The boutique, which offers a beautiful variety of daywear, eveningwear and bridal wear, I was happy to note, was the fashion house of choice for the current Miss Universe Canada, Chanel Beckenlehner. >> TODAYMAGAZINE.CA 85
"I remember, honestly, my own mother never left the house without lipstick. Even if she went to buy bread from the grocery store. She would dress nicely, have pride in herself, put her makeup on carefully," Maria Lazarova Manceva, the mechanical engineer turned fashion designer and founder of Lazar Couture laughs of her European upbringing. "I used to be like that, but [when I moved to] Canada, the dynamic changed. It was sad to see, to me, at least, that most people didn't live in that European way. That pride is something I really miss because in Europe even the poorest of the poor is rich in spirit - they make an event out of every moment of their lives. Going out, even to buy bread, is an occasion. It's a lively spirit that I hope North America can one day reach because at the moment it's very sad not to have that pride in ourselves... She spent 10-15 minutes in front of the mirror just to buy bread!
Here [in North America], it's all about efficiency, the spirit is lost." Lazarova, who studied fashion in Montreal upon immigrating from Macedonia, a small country situated north of Greece and south of Serbia, is well aware of the North American market, though she intelligently designs for it with a European twist: "Growing up as a teenager in the early 90s in rural Europe, it was a totally different time. There was no internet, no computers, not even magazines. This characterized my teenage life. We didn't see anything remotely American. All of a sudden, in '92, '93, we had access to MTV. Suddenly, there were more magazines on the market. To me, this was another world, a dream. Being a teenager, I was probably seventeen, and it was like heaven; I couldn't believe what style ideas existed out there. But, of course, you cannot wear whatever you see on the television. I fell in love with bold, different
pieces, and from that point on, I always tried to be different in my style and designs, but different in a good way. I would make sketches of what I saw and incorporate that style into the surrounding European style. For instance, if I saw Madonna wearing a leather jacket, I would sketch myself a leather jacket but in a different way, incorporating only elements. Ever since then, I made custom designs for myself, incorporating various styles. Friends eventually started asking me to design for them, and here I am." The popularity of Lazarova's designs is unsurprising. She makes incredible pieces of high quality clothing promised to give any woman the confidence she needs. This is embedded in her own fashion philosophy, for which she credits her European roots: "In Europe, dressing and beauty is a culture, a ritual, that women have been exposed to as girls since young, passed from generation to generation. There, women are proud of who they are. They are proud of their gender, their age, who they are and how they live. Clothing can have the power to make a North American woman to feel like that for every occasion, for every minute of the day. When I design, I think of all beautiful women who are over thirty; they are mothers, they are strong workers, and take care of many responsibilities. Their lives, like all of our lives in North America are stressed and nervous. When they wear my clothes, I want them to feel relief, to feel the beauty of life again. To be able to go home or enjoy a coffee or a cocktail with friends and feel beautiful." To bring out one's inner beauty, Lazarova has a few suggestions on how to shop, look, and feel European. The first: Simplicity. "If the design is simple, then we can accessorize it with beautiful high heels, beautiful jewellery and our beautiful selves." The second: Quality Fabrics. "In my own designs, I keep them simple and feminine, but I pay attention to the fabrics. Many Europeans do. A high quality fabric, like silk or cotton, will feel better and outlast cheaper counterparts." >>

The third: Booking an appointment with a fashion and colour consultant; "It's much easier to shop for yourself once you know what works and what doesn't. When private clients visit me, I give them a full tutorial, with everything from what colours work for them personally, to jewellery, makeup, and especially cuts. Women have different body shapes, and only through consultation with an expert will you know what cuts work for you. For example, with Miss Universe Canada, she was at a loss for which colour to wear. Based on her dark hair, tan complexion and brilliant blue eyes, I suggested a royal blue dress would work perfectly for her and it did. I also see many non-celebrity clients, most of whom have larger tummies and are unhappy with how their clothing fits. Before seeing me, they would wear a slip dress, but that isn't the best cut for them and they don't know any better. The best cut would be to break the tummy area, ensuring a very visible part of the body looks more perfected
and less defined, so I either design clothing for them to cover their problem areas and also give them the knowledge to help themselves. A woman's height can also affect that looks best on her: I had another client, who was the mother of a bride. She was frustrated because she could not find a long dress that suited her, because she was very petite. Every long dress looked lost on her. Instead, I consulted and ended up designing her a highlow dress; it showed a little bit of skin, her shoes, her legs, and it was perfect for her." With the newfound knowledge of how to dress for my 5'5 frame, I walk out of Lazar Couture with an incredibly simple

PAST, PRESENT & FUTURE A FAMILY AFFAIR: FIDDLING WITH
Natalie MacMaster & Donnell Leahy BY JILL THAM
You won’t find a more genuine or family oriented couple in show business then the fiddling duo of Natalie MacMaster and Donnell Leahy. With over ten years of marriage under their belt and six children, the couple has been finding their way as they raise their family while performing and travelling together across various continents. The pair released their first album together earlier in the year and will end 2015 off with a spectacular Christmas performance at the First Ontario Performing Arts Centre that combines their talent and diverse fiddling sounds in one show guaranteed to please all age categories. With six children between the ages of eighteen months and nine years it can be a challenge for the family to schedule approximately 100 musical performances a year around life’s events. Both Leahy and MacMaster admit that being on the road with their family has its ups and downs, but they wouldn’t have it any other way. MacMaster and Leahy recognize the many hats working parents have to wear. “We travel together, so one minute I am on stage and the next I am disciplining,” says MacMaster. “It’s a real challenge for us as we are often booking a year and a half in advance and then sometimes when the performance date finally arrives our lives are different. Maybe there are hockey playoffs or we’ve had another baby. We always question if we
should take the tour or not,” says Leahy. The couple truly enjoys the times when they are not on the road and being at home on their farm in Ontario, Canada. “It is such a great out for us to be able to go to hockey and get a break,” says Leahy. “Farming is a big part of our lives and a wonderful place to raise our children.” Both Leahy and MacMaster come from highly musical families. MacMaster’s uncle, the late great Cape Breton fiddler, Buddy MacMaster, and her cousins Ashley MacIsaac and Andrea Beaton have had a positive influence on her musical career. Leahy has previously performed for over 20 years with eight of his 10 siblings in the Juno Award winning Canadian folk group, “Leahy.” The band was Shania Twain’s opening act for her 1998 Come on Over tour. “When we started performing we were all single. Then one of us got married then a bunch of us got married and then the little ones started coming,” explains Leahy. “My mom and dad have over 35 grandchildren.” Leahy and his siblings recognized that with such a large group and with each band member at a different stage in life it was becoming increasingly difficult to schedule events. “My siblings are still performing and playing music, just not as a group,” he explains. “Performing with Natalie and travelling as a family is what is important right now.” >>

What W hat is most impressive about Leahy is that he is a self-taught musician. In the modern age of the internet this is becoming increasingly more common, however at the time when Leahy picked up a fiddle he was three years of age and living on a farm in Ontario with no television let alone a You Tube video to guide him through it – as our youth today have at their fingertips. “I wasn’t around fiddle players very much. Our area is a hockey area and it’s not like Cape Breton where my mom grew up,” states Leahy. “I think it was very important that I was interested in it. I learned to play by ear by trying to play everything I heard from “Happy Birthday” to the standard fiddle tune “’Big John MacNiel.” I developed my own style and then I was given four records of other fiddle players: Graham Townsend, Ti-Jean Carignan, Jerry Holland, and Sean McGuire,” he says. Receiving these four albums was a pinnacle moment in his self-taught musical journey as it motivated him to learn four additional and different styles. “I was blessed to be around a lot of great music.” MacMaster admits that when she and Leahy began playing together was a bit of an adjustment, but it didn’t take long for them to find their groove. “It was cute we would both shy away from the lime light to be respectful of the other person. We realized we were not performing as well visually as we would if we were on our own shows. Neither of us wanted to hog the stage, so we have had to learn that fine line of giving the audience who they want to know and who they came to see. We have found a balance,” states MacMaster. MacMaster has found a new solace playing with her husband and children. “When I watch Donnell play or perform with him, I am elated because of who is beside me - my husband, my best friend, and the father of my children,” says MacMaster. “Every show we do I have moments when I am completely moved, especially when I am backstage watching my kids perform,” explains MacMaster. “And then my three year old tugs on my sleeve,” she laughs. MacMaster and Leahy’s individual styles and immense talent flow together in one performance that showcases not only a mixture of their styles, but their children’s talent as well. Although MacMaster and Leahy are committed to supporting their children’s musical interests and thoroughly enjoy watching them perform, they aren’t sold on the idea of having their children perform with them on a full-time basis. “Like most parents we want what is best for our children,” says Leahy. “You keep going and try to make the right decisions all the time.” “We are building a show and who knows what the future holds. They have hockey and other things they like to do,” adds MacMaster. “We always feel we have to re-evaluate for our family. I would quit all of this tomorrow if it was a negative,” says MacMaster. MacMaster acknowledges how hard it can be to perform an instrument that gets very little radio air time. “People don’t realize how hip the fiddle can be,” states MacMaster. Multi-talented musical performer Elton Lammie, who sings and plays instruments in four different genres of music, can attest to the struggles musicians face when combining a mixture of styles in one show. “Natalie is brilliant at Cape Breton style fiddling and Donnell can

He is also a violin master; one who is well rounded and can play traditional Irish fiddling one minute and improv a Cajun style the next. Her style is fun and beautiful and Donnell’s is fire meets honey,” says Lammie. The release of their first album together titled One is a combination of their flair. “We are really pleased with the finished product. It was produced by Canadian Music Producer, Bob Ezrin, who co-produced Pink Floyd’s The Wall and has worked with Alice Cooper and Peter Gabriel to get them on the map. It was cool that he wanted to do a fiddle record,” says Leahy. “One was co-produced by Justin Cortelyou who has worked with Taylor Swift and Alan Jackson. On the album we definitely honour our tradition, but we also embrace the music of today and that comes out in our final project. That is the way Donnell and I are; there is always a blend of the past, present and future,” says MacMaster. The Niagara Region is blessed to have MacMaster and Leahy on the events schedule at the new First Ontario Performing Arts Centre in St. Catharines, ON for two shows on Saturday December 5, 2015. “Christmas is a time we treasure and we are a very traditional Christmas spirited family and it becomes more valuable to us as we age in this world of ours,” states MacMaster. Their Christmas show will include a mixture of old and new Christmas melodies designed to take you on a journey of song and dance. “The old fashioned spirit of Christmas needs to be kept alive,” says MacMaster. In the opening scene of Breakfast at Tiffany's, with the overlay of an instrumental hum of “Moon River” playing softly, we are introduced to a grey Manhattan, likely just past the break of dawn. The busy streets still silenced from the night before, a lone yellow taxicab pulls up in front of an imposing building, like all those on Fifth Avenue. Out comes a woman, a very particular one. There she is, Audrey Hepburn, in an astonishing black dress. As she peers into the Tiffany & Co. window, she takes a bite of her donut, a sip of her coffee, and the rest is history: Here is born the Little Black Dress. >>

The history and the meanings of the little black dress - a term so popular it seems to have entered and never left the cultural lexicon - has been shaped and evolved time and time again. A black dress, as one might appropriately surmise, was first used for mourning - a meaning it still holds today. According to Sonia A. Bedikian, in the late eighteenth century, across England and France, for upper society, a set of complex rules was created for mourners. It was expected that mourners who had lost a loved one take part in a physical ritualization of sorts, through displaying their grief by wearing heavy black clothing and black crepe veils, caps and bonnets. In order to display their grief, widowers often wore the ensemble for up to four years after a death, and any removal prior to the four-year mark was seen as incredibly disrespectful. According to Bedikian, "formal mourning culminated during the reign of Queen Victoria. Her prolonged grief over the death of her husband, Prince Albert, had much to do with the practice. During the succeeding Edwardian rule, the fashions began to be more functional and less restrictive, but the dress protocol for men and women, including that for the period of mourning, was still rigidly adhered to." This practice of mourning changed, however, with the first of the World Wars, where a devastating amount of women became widowed. Nevertheless, because of the circumstances of the wars, they were still required to work. Wearing heavy attire, particularly a veil, seemed not only impractical but burdensome and dangerous for the otherwise "masculine workplace" which included factory work and transporting coal. Thus marked the end of lavish mourning,

Jewelry, if worn at all, was kept simple, but certain traditions, though relaxed, still remained: Widows' caps, a black hat with a peak at the front, continued to be worn, while a black veil was fashioned only to frame the face instead of completely cover it, and necklines were often cut in a v-neck, exposing the chest. As Bedikian notes, "during the following decades, gradually the rules were relaxed further and it became acceptable for both sexes to dress in dark colors for up to a year after a death in the family." But how could a colour and a dress that was used for centuries to signify mourning, be changed into a signifier of scandal in merely a few decades? While black still very well may signify death, it might just be those very associations with death that prove the shade so provocative. For instance, black is often the colour associated with evil, and many rituals which are culturally pervasive see evil as often associated with death, or the rising of the dead. Thus, in social spaces where black would be specifically culturally noted as a shade of interest mostly associated with either death or evil and the occult, wearing such a meaningful shade without any of the meaning habitually associated with it, such as a bereaved love one, would suggest that the wearer of that dress is marked. While she may not be evil, she is certainly different, certainly bold, and certainly an individual un-fearing of the scornful eye of society. This is perhaps what gives the little black dress such allure. As noted by Nancy MacDonell Smith in her book, The Classic Ten: The True Story of the Little Black Dress and Nine Other Fashion Favourites, "Black implies you have something to hide, such as a colourful past. It's a provocative colour, one few people are indifferent to...Wearing black implies transgression. Anna Karenina wore black to the ball at which Vronsky became smitten with her; her niece, Kitty, herself in love with Vronsky, wore pale pink - and failed utterly to get his attention. on a black dress, the world assumes she's sophisticated, sexual, and knowing." Fashion designer Coco Chanel can be credited for creating the little black dress for popular wear, beyond the sole scope of mourning: In the mid 1920's, "Chanel's Ford", a short black dress, was published in Vogue. The name of it was so, as the dress was expected to become a uniform of sorts, since the dress was simple, elegant, and available for all women regardless of their social class. In the book Coco Chanel: The Legend and the Life, Justine Picardine notes, “the little black dress was not formally identified as the shape of the future until 1926, when American Vogue published a drawing of a Chanel design... It was an apparently simple yet elegant sheath, in black crêpe de Chine, with long, narrow sleeves, worn with a string of white pearls; and Vogue proved to be correct in the prediction that it would become a uniform…” The great depression, which followed in the 1930s, allowed for the
little black dress to continue its popularity. It was simple and cheap solution to looking elegant yet demure in a time of deep financial worry. At this time, Hollywood made great gains and often used black attire, which helped avoid distorted colouring in films that had started using Technicolor. As such, many actresses took the idea of wearing black outside of only film and are often credited for the popularization of the shade. For instance, actress Joan Bennett was one of the earliest actresses to pose in black, wearing a flapper ensemble that characterized the time period. The following decade, as women returned to the workforce during the time of World War II, black dresses continued to be worn, only now, as businesswear. The end of the Second World War, however, again would mark a shift in the meaning of the black dress. With celebrations of a Nazi defeat, bright colours and whites became incredibly fashionable, and
thus the meaning of black as tied to either death or evil re-emerged. Hollywood used this shift in meaning, interestingly enough, to re-characterize its femme fatales as women in black halter-dresses, contrasted greatly with the wholesome protagonist, usually wearing white. Only in the 1960s, where the brilliant pairing of an actress known for her demure, wholesome, conservative appeal with a daring black Givenchy dress would the re-popularization of the little black dress be catalyzed. Wearing such a shade in one of the most popular films at the time was meaning again shifted in favour for the little black dress as popular and appropriate attire. Since that time, little black dresses have become a staple item, on nearly every runway, regardless of the season. Though they usually adopt the style du jour, our own little black dresses make their way inside our closets, for days in which we wish to, ironically, shine. TODAYMAGAZINE.CA 97

ou know it’s going to be a great girlfriend getaway when your weekend starts with an eager-to-please butler jogging out to your car to unload your bags even before you’ve popped the trunk. “James” (yes, that’s really his name) is one of a half dozen butlers on staff at the elegant 28-room Mansion on Delaware in downtown Buffalo that dates back to 1869. The butlers are happy to drive you around town, pour you a complimentary drink in the drawing room at cocktail hour — even run you a hot bath in your whirlpool tub. Their white glove treatment sets the stage for a couple of days of being spoiled rotten in Buffalo.

reserved for celebrities. My girlfriend Donna and I spend a couple of glorious hours with Katie that begins with a mini meditation session involving crystals and “angelic spray” to help balance our chakras and continues with a facial, “intuitive make-up lesson” and hair styling. A final application of feathery false eyelashes has us coquettishly batting our eyes over our lunch menus when we pop in next door to the Pan-American Grill & Brewery to fortify ourselves for an afternoon of shopping with scallop cakes and sugar beet salad.
EMPOriuMS ON ELMwOOD It’s no secret that Canadians love to power shop Buffalo’s outlet stores, but we opt to bypass the mega malls for some good old fashioned street shopping. We spend a few hours strolling the mile-long Elmwood Avenue, checking out the eclectic range of dozens of retail offerings. We peruse furnishings made by local craftspeople at rÓ, float in the aroma of hundreds of exotic seasonings at the elaborately stocked Penzeys Spices, ooh and ahh over the unique gift selections (dragonfly salad tongs anyone?) at the charming Everything Elmwood, browse bestsellers at talking Leaves, the city’s oldest bookstore, and try on flowing summer dresses in a range of
boutiques, from Anna Grace to Blush and Second chic, an upcycle consignment shop where I pick up a vintage halter dress for a bargain basement $22. When we stop to fuel up on caffeine, even the SPot coffee shop is

a delight with its powder blue Victorian settee and tempting display of red velvet donuts, a local specialty that proves irresistible.
Out ON tHE tOwN Our extended shopping trip means there’s little time for dinner so once again the butlers at the Mansion accommodate us by preparing plates of pizza and fresh fruit before driving us to the opening night of the raucous musical, The Book of Mormon, at Shea’s Performing Arts center. The restored theatre, which features a full season of blockbuster Broadway musicals, boosts eight-foot tall crystal chandeliers and intricately painted ceilings in the lobby, recalling its glory days as an elaborate movie house dating from 1926.

After the show, we aren’t quite ready to call it a night. Fortunately, another theatregoer recommends a stop at Buffalo Proper, a restaurant and bar that tips its hat to the prohibition era when wealthy Buffalonians found a way to sneak a drink in defiance of the 18th amendment. Here, master barman and cocktail curator Jon Karel regales us with further theatrical Shea’s Performing Arts Center antics, displaying his frenetic energy while concocting fancifully named drinks such as Bare Knuckle Boxer, Snake Charmer and Killer Bee’s. It’s the perfect end to a perfect day. Tomorrow, we have a couple more stops to finish our Buffalo getaway – including an afternoon outing to canalside, a beautiful new waterfront area with free events from pilates classes to classical concerts, and what will prove to be a very memorable five-course prix fixe menu with wine pairings at Martin cooks, the city’s first example of chef’s counter dining where guests look on while the chef prepares his signature dishes in an open kitchen. But right now, as the clock hits midnight, we’re ready to head back to our fluffy beds at the Mansion. We ring our butler who arrives in minutes. As I climb into the backseat I utter words I’ve been looking forward to saying all day: “Home, James.” Buffalo Proper

Rake back your hair and secure with a clear elastic at the base of your neck then choose your accessory – whether it be a frayed matte band, rope style or adorned with metallic, leather will give your pony tail that touch of edge to make it pop.
Chic Top Knot Meets Messy Sock Bun: Look effortlessly refined and edgy by adding a little volume to the overdone ballerina sock bun. The Trick: The key is to strive for the opposite of perfection – simple right? Straighten the top layer of your hair and slick the front part of your hair back. Twist your hair into a top knot and secure with an elastic while leaving the wispy pieces, even a bit of the tail end, free to do their thing. Add volume by pulling your hair forward out of the elastic towards your forehead slightly and mist with hairspray. This is a great style if you are prone to static and fly-aways. >>

AS TIME GOES BY CONTINUED INNOVATION AND LUXURY: PERFORMANCE BMW 7 SERIES BY JILL THAM
Imagine being transported back to 1941 exactly where Ingrid Bergman and Humphrey Bogart say their heart-breaking goodbyes. The classic tune, “As Time Goes By,” can be heard playing in the background and a 1937 Lockheed Electra Jr. Aircraft is ready and waiting to take flight at the end of the hangar. That was the exact atmosphere The Performance Auto Group achieved on October 21, 2015 when they teamed up with Invicta Air to create a memorable Casablanca night as they launched the all-new 2016 BMW 7 Series. As Bogart said in his famous line, “I think this is the beginning of a beautiful friendship.” The 7 Series, with more innovations than any other car in its class, represents the beginning of a beautiful friendship between driver, passenger, and machine,” states Andrew Marchand, General Manager of Performance BMW. The event was held at the Niagara District Airport in the private hangar of Invicta Air, owned by Performance BMW guest, Peter Ramm. “Invicta meaning ‘undefeated or unconquered,’ embodies exactly what the new 7 Series has to offer its drivers. It reflects both the elegance of past modes of transportation and the future of luxury automotive travel,” states Marchand. The 7 Series made its first appearance on the market in 1977 and has continued to represent the company and the brand by acting as its flagship car; setting the bar high for the competition and ensuring all that BMW cars benefit from the technology.
“The best and brightest have designed this car,” states Hans Blesse, President and CEO of BMW Group Canada. “This car is an innovation leader, the most luxurious product in the segment, and the most technological product we have ever made,” states Blesse. “We have taken a quantum leap forward in luxury and huge steps in comfort and well-being.” Blesse boasts that the new 7 Series is the most intuitive vehicle the company has ever designed and produced. “Who could have imagined that we’d have vehicles you can actually speak to, that are powered by electricity, or that can be controlled with a simple hand gesture,” says Blesse. “It’s elegant, it’s dynamic, and it’s cutting edge. This is what BMW is all about,” adds Blesse. The 7 Series, which goes 0-60 miles per hour in 4.4 seconds, demonstrates it is possible to have all the features of a luxury car without scrimping on the power and torque that can be achieved. Although the model has retained its functional grills that open to cool the engine and L shaped tail lights, it has undergone many structural and visually appealing changes. “Front to back it’s a new car to our guests,” states David Heidebrecht, Performance BMW Service Manager. Major design improvements include a sleeker look to the trunk and changes in the carbon core to strengthen the rigidity and shave significant weight from former models in the series. “The future will be lighter, leaner, stronger, and it will seem miles beyond others,” stated the video played as part of the 7 Series reveal. No detail was forgotten when designing the interior and technological features of the vehicle. “The iDrive controls, Traffic Jam Assistant that anticipates road conditions, Lane Keep Assistant, and Side Collision Avoidance are key safety features of the vehicle. What is causing a stir is the impressive touch technology. “BMW Gesture Control is the best feature. You can take a phone call with the simple wave of a finger,” states Blesse. The display key that acts as a cell phone, allows the driver to swipe back and forth to control various aspects of the car, such as climate control and fuel level. “The heads-up display has been increased to 10.2 inches, making it the largest in the industry,” states Bruce Redwood, Sales and Leasing Consultant at Performance BMW. Riding in the front of the 7 Series is luxury at its best, riding in the back is an impressive experience. “The Executive Lounge has 15,000 etchings in the glass of the panoramic sunroof that reflects the LED lighting. A touch-command
tablet between the two seats in the back of the car allows the passenger full internet access and control of climate, reclining seats, massage functions, and Bowers & Wilkins Sound System with 1400 watt 16 speakers of power,” says Redwood. The 7 Series’ distinct features explain why BMW has continued to live up to their slogan, “The Ultimate Driving Experience.” “Defining contemporary luxury and traditional values of a high-performing car and taking them to levels we have never achieved before…you just need to drive it,” says Blesse.
