Maybe you’ve been planning your wedding in your mind since you were a kid, or maybe you didn’t really start thinking about it until you decided to get married; either way, we hope this issue will help you get closer to creating the wedding of your dreams. Whether you are looking for the most creative cake or an innovative idea for a delicious midnight snack, you’re bound to find something in the pages of this magazine. We know that by now you are no stranger to the wonder that is Pinterest and neither are we; thus, the inspiration for our details section was born. We’ve highlighted a few of our favourite ideas in here but you can find many more on our Pinterest site under Today Magazine. And last but not least – wedding gowns. This year’s trends open the door to so many possibilities. With the addition of colour and the acceptance of daring cuts we’re afraid to say that the daunting task of finding the “one” just got harder (may we suggest a costume change before the reception?) othing says happiness quite like a glass of sparkling wine. Although it is often associated with celebrations and special events, bubbly really needs no occasion to enjoy. It looks elegant, is delicious on its own and with food, and always brings a smile! Planning a wedding and need to know the difference to splurge or save? This mini guide to sparkling wine will help!
GLOBAL BUBBLES Sparkling wine is made all over the world and called by many names, so committing them to memory is important! Cava is the most sparkling wine from Spain. Champagne is a region in France and only bubbly from that specific region can be called by that name. Most other regions in France call their bubbly Crement, for example Crement du Bordeaux and Crement d’Alsace. In Italy, you will recognize the names Spumante, Asti and Prosecco as sparkling wine – Asti being sweet, and Prosecco as their most well known sparkling. The Germans call their bubbly Sekt and you’ve probably sipped on other sparkling wines from around the world called Cuvee or Brut.
CREATING BUBBLES
‘Méthode Champenoise’ is the traditional method of making sparkling wine where the secondary fermentation happens in the bottle. It is the most widely known style of quality sparkling wine production, resulting in a wine that has smaller bubbles and ages very well in a cellar if made from a vintage year. It is also the most time consuming process, as bottles need to be kept for long periods of time and cared for with much attention. Under the ‘Charmat’ method, the secondary fermentation happens in tanks and the wine is bottled under pressure. These sparkling wines, such as Prosecco, have larger bubbles and offer good value to your pocket book.
THE GRAPES Most traditionally made sparkling wine is produced with Pinot Noir, Chardonnay and Pinot Meunier grapes, but you can really add bubbles to any wine and use any grape. The grape varieties in sparkling wine are not typically listed on the bottle, so learning about the practices in each region is important to understanding the world of sparkling. If a sparkling wine is made
100% from Chardonnay is can be called a “Blanc de Blanc” (translating to white of white), and if made from 100% Pinot Noir it’s called “Blanc de Noir” (meaning white of red)
WHAT’S YOUR STYLE? Sparkling wines come in a variety of styles, from light and fruity, to medium-bodied with amazing flavours, or rich and complex. Learning your preferences is a great way to define your bubbly personality! When pairing sparkling wine with food, always match the weight of the wine with the weight of the food. Sparkling wine can vary in sweetness from dry (Brut) to sweet. All traditionally made sparkling wine is fermented dry. But, don’t let the word dry on the label fool you, if the word dry is on the label (instead of brut) often the wine will be sweeter than you expect.
WHAT’S A VINTAGE? If there is a year noted on the bottle of wine, then all of the grapes were harvested from that year and used in the bottle (very rare for sparkling wine). Otherwise, grapes from several years are blended together to create a certain taste profile. TODAYMAGAZINE.CA 13

Take a look at wedding cakes on the web and you’ll see just how far we’ve come from traditional slabs of iced fruitcake. That’s not to say the evolution of wedding cakes has always gone in the right direction. I found a wedding cake made into a full-sized (5-foot!), likeness of the bride; another was a 36-inch in diameter hamburger wedding cake complete with fondant replicated lettuce, onion, pickles and special sauce. >> TODAYMAGAZINE.CA 15

found a cake where the bride figurine on top is holding a fishing rod and the hook is caught in the pants of the groom and the worst of all (if these aren’t bad enough), a threetiered wedding cake where the bride figurine on top has pushed the groom off the edge and he’s resting in a pool of blood at the base of the cake - what the heck? Ok, so besides some peoples bizarre ways to reflect their love for each other (and I’m sure the dead groom represents some sort of twisted love in the nicest way), wedding cakes were meant to bring good luck to all of the attending guests and of course, the couple. Thank goodness I found none of these bizarre examples in Niagara. The symbolism of wedding cakes started out in Ancient Rome where unsweetened barley bread was used as the wedding food and the groom would break the piece of bread in half over his brides head symbolizing breaking of the bride’s virginity and the subsequent dominance of the groom over her. For any feminists reading this, you’re probably wondering if this story gets any better; I promise it does. Wedding cakes are the centerpiece of a wedding ceremony and are shrouded in history, symbolism, mystery, personality and etiquette. It’s the day to honour a love you share and commit to a lifetime together. Designing your wedding cake is no cakewalk. Like the pieces that all fit together to make a perfect puzzle, artist and pastry chef Eda Marion of Vineyard Sweets (vineyardsweets.ca) in Niagara-on-the-Lake takes many details into account when she designs personalized wedding cakes. “I get to know the bride and groom, I look at the wedding dress, the style and graphics of the invitation, the floral choices and the theme colours to design a one-of-akind wedding cake.” We really have come a long way from breaking barley bread over a bride’s head. Barley bread evolved into fruitcake popularized by Queen Victoria that was replaced by the drier pound cakes of the early 1900’s (that no one liked to eat). Unfortunately, the image of dry wedding cakes lingers today. But Eda and other modern wedding cake designers assure me that todays modern cakes are light, moist, delicious and come in an endless variety of flavours that everyone will enjoy eating. Eda’s most popular cake flavours are coconut key lime and French vanilla. “The only time I do fruitcake is when Scottish grandmothers insist on it,” she laughs. In the early 1700’s baker Thomas Rich made a cake in the likeness of St Bride's Church, on Fleet Street in London, England to impress his bride. It was the very first tiered cake and quickly replaced the single slab wedding cake design from that moment on. It was originally thought that the Grooms Cake was stacked overtop of the Brides Cake making one out of the two. Typically smaller than the Brides Cake the Grooms cake can be made from anything from fruitcake to the groom’s favourite flavour. The most popular options on the outside of wedding cakes include buttercream, fondant, cream cheese and chocolate. These ingredients can be spread, shaped, moulded and formed into various textures, flowers, ribbons, icons and memorabilia. In addition almost anything can be added on the outside from little statues of the bride and groom to ribbon, jewelry and small articles of a personal nature. >>

In between ultra light layers of delicious cake can be Swiss meringue, buttercream or cream cheese. With Eda’s art and fashion design background, she impressively nails the perfect wedding cake every time. It’s no surprise that the most romantic of all wedding cakes come out of the honeymoon capital, Niagara Falls. Italian pastry chef, Giovanni del Priore of Criveller Cakes & Pastries (crivellercakes.ca) is the Michelangelo of wedding cakes. His signature cake is the most breathtakingly romantic vision with tissue paper thin sheets of crinkled white chocolate that hover over layers of moist, flavourful cake like floating peonies in full bloom. At first glance, most think a Criveller wedding cake is made from real tissue paper and are delighted to discover it’s really delicious chocolate. If you’re wondering if white chocolate is even chocolate at all, Giovanni explains that milk chocolate contains 38% cocoa butter and white chocolate has 29%. This explains why Criveller cakes are not pure white but a soft, romantic white. “People who claim to not like white chocolate taste it and when it evaporates on their tongue, they’re sold.” Criveller’s white wedding cake represents the traditional purity of the wedding ceremony and eating it is nothing less than a sensual act. Similar to Eda’s long list of available cake flavours, Criveller cakes come in over 25 different flavours from fresh berry to tiramisu. They’re moist on the inside with feathered chocolate on the outside. Giovanni explains the cost of a feathered chocolate wedding cake is about 30% less than a cake wrapped in fondant. Wedding cakes don’t come cheap, some are priced by the slice, ranging from $5.00 to $18.00 per slice while others are priced by cake and they can start at $250 and go as high as $1,500. Giovanni just finished a cake for the Prince of Dubai that sold for a whopping $2,800! It was a 4-tire wedding cake. The tips on the feathered white chocolate were painted with edible gold leaf. Besides the obvious “ability to pay” scenarios, most wedding cakes are one of the best values of any wedding ceremony considering the time it takes to create (often days and weeks) and the importance of the cake at the event. Like baker Thomas Rich changing the design of wedding cakes in the early 1700’s, Giovanni is revolutionizing the design of modern day wedding cakes with his one-of-a-kind cake. They’re so unique, he’s working with a TV production company on a television show. “Stay tuned,” says Giovanni. Since I started this story with some bizarre wedding cake examples, I would be remiss if I didn’t finish with an equally trivial ending. On the radar of some brides is the TurDuckIn (a chicken stuffed into a duck stuffed into a turkey) of wedding cakes. Just imagine a pie baked inside a cake. Now stack three of these on top of each other and ice appropriately. The name reflects the flavour of the pies and cakes used to create the tour de force. The one I found was called a PumAppleIce Cake (pumpkin, apple, spice). The sky is the limit when it comes to wedding cake designs meaning yes, you can have your cake and eat it too! Stack them high, decorate them elegantly or make them ooze with class. Wedding cakes are the icon of the love shared by newly wed couples from that day and forevermore.
BUTTERCREAM
This is one of the most popular cake frostings, and it is made up of butter, powdered sugar and flavourings. Some recipes call for shortening, some for both shortening and butter. This icing offers the best value per slice due to the ingredients used. The texture is smooth and creamy (hence the name), but is not super sweet. It is easy to slice and can be made into numerous decorations for the cake. It does melt quickly though, so keep that in mind for hot climate weddings.
MERINGUE This type of icing holds well in heat, making it perfect for hot climate weddings. It is comprised of egg whites, sugar and flavouring. This can add a nostalgic feel to any cake
MARZIPAN This is a nutty flavoured icing, most often used to frost fruitcakes. It is often chosen as a flavour for filling or to use to make shapes to decorate the cake with. It’s not ideal for icing an entire cake with though, as it is tricky to roll out a whole sheet of it without it ripping.
FONDANT This is a smooth sheet of sugar paste and it can be flavoured, as well as tinted any colour. It gives a beautiful, clean finish to any cake. Some people don’t really enjoy the taste and texture of it though (it can be a bit chewy), so a good idea is to have a layer of buttercream underneath so guests can still enjoy the cake if they don’t like the flavour of the fondant. This is the most popular icing choice for wedding cakes.
GANACHE It sounds fancy, but it is essentially just chocolate melted with heavy cream. It makes a lovely shiny glaze on cakes, and tastes quite delicious. It does tend to melt quite easily though, and the colour of it cannot be altered.

Creativity is key for 2015 weddings; people want their wedding to reflect their individual personalities and who they are as a couple. While the basics of a wedding stay the same (the “I do’s”, the church, the dress etc.), where that uniqueness really shines through is in the details. We’ve scoured and pinned the web (thanks Pinterest) to compile a section of some of the prettiest and most creative wedding ideas out there.
FLOWERS Regardless of when you decide to get married, there is certainly a flower for every season, with new trends popping up every year. Check out these trends for 2015 and see what is going to be hot for ’15 nuptials.
FLORAL BACKDROPS One spectacular place to take your pictures is in front of a beautifully designed floral backdrop. Not only do they look good, but the high concentration of flowers in one spot can create lovely aroma as well. If the budget doesn’t necessarily allow for real flowers, you can try a paper alternative. Another option is to use mostly greenery with just a row of flowers: going that route will save a little bit of money. >>

LUXURY & ROMANCE This means flowers and lots of them. Less exposed stems and greenery and just full, big flowers such as hydrangeas, hyacinths and orchids that come in pretty, pastel colours. This is expensive though, so you can only go this route if you have a big budget.
STICK WITH THE CLASSICS If you are more of a fan of a clean, classic look, you are in luck because that look is on trend for 2015. White and ivory are going to be popular, along with traditional flowers such as roses and calla lilies. It gives an elegant feel to the bouquet.
HANGING FLOWERS A great way to decorate an outdoor venue is with the addition of hanging flowers. One way you can do this is by hanging bottles and vases from lower branches of any large trees in the venue. TODAYMAGAZINE.CA 23
WILD & FREE This trend is kind of a “right from the garden” look. It was popular last year and it seems like it won’t be going anywhere for this upcoming year. Picture an English garden, but in bouquet form. Instead of one single flower, choose an array of mixed flowers. If you wedding is taking place in the Fall, choose flowers inspired by the forest…ferns, foxgloves and untidy roses. Unstructured and wild is the key for this trend.
PASTELS Pretty pastels always shout spring and this year, that’s translating over into wedding flowers. Large, big blooming flowers, which give off the feel of a country garden. Peonies work particularly well for this type of look.
FLOWER CROWNS It used to seem a little hippie-esque, but the trend of brides wearing floral crowns just continues to grow. Depending on your overall wedding theme, you can use more delicate flowers such as gypsophilia or go with more impactful flowers such as roses and hydrangeas.

I made my first dress when I was 8 and after that moment I had all my friends asking me for dresses. From elaborately carved settings to twisted threads, antique rings not only tell a story of yesterday, but they embody character, simplicity and elegance.
s a young boy, Kevork Tachjian, owner and skilled jeweller, learned the ins and outs of the profession from his uncle who was a Master Goldsmith. “I admired his commitment and workmanship in the jewellery business and I have taken it to a new level. When you love what you do, it becomes natural,” states Tachjian. “I have to give him proper respect. He showed me the way. You need that when you get into a trade.” The name of his jewellery store came out of necessity from none other than his customers. “Before owning my own business, I worked in the industry for ten years. Sales representatives, customers and owners would all refer to me as ‘The Jeweller,’” explains Tachjian. “They never went by my name because it was hard to say,” he laughs. Along with specializing in watch and jewellery repairs, The Jeweller designs and creates custom made jewellery: specifically engagement rings. “We do it all here in-house, we don’t send anything out,” says Tachjian. Using computer software that displays a three-dimensional picture of the ring, Tachjian is able to show the customer exactly how the ring will look. “We use the computer program to change size or stone and we can also digitally put the ring on your finger so customers can see the height,” he explains. Although he acknowledges that anyone can work a computer and the image on the screen often relaxes the customer, it’s the craftsmanship that makes the ring. “The key is how you finish it and the quality of the ring,” says Tachjian. Tachjian has observed how social media has changed the industry. “Everyone wants a Tiffany ring, but everyone knows the price is outrageous. At the end of the day I tell all my clients it’s all about budget,” he says. With his expertise, Tachjian assists his customers in maximizing even the most modest of budgets. The appropriately named halo design is currently the most sought out ring on the market. “It enhances the diamond as it has a halo of diamonds around the centre stone. It used to be called the cluster, now it has been modernized and called the halo,” Tachjian states. because many individuals are looking at their parents engagement rings and re-creating them by adding a modern aspect,” says Tachjian. “Grandma’s ring has lasted forever because the quality and true art of the industry back then. They didn’t have casting and computer development - it was all done by hand.” Want a bit of the old mixed in with the new? As a true craftsman, Tachjian also uses existing bands to create new rings while keeping true to the antique style. “I’ve seen customers after 35 years upgrade their ring. We made a masterpiece by taking a client’s existing diamond and adding her grandmother’s diamond and new accent diamonds to create a new design. I always add something different to my designs.” says Tachjian. All of Tachjian’s diamonds are GIA certified and 100% traceable. “We can add a laser inscription to the diamond. It adds a serial number to it in case it is stolen,” Tachjian states. “Also, a lot of people will put their names inside an area of the diamond.” You won’t find cookie cutter designs at Tachjian’s store, but what you will find is a family run business with strong values and exquisite craftsmanship. “People shop and don’t see what they want. So they come here and we create it,” says Tachjian. Tachjian specializes in the unexpected as he takes a generic photo or design and creates something stunningly original. “BEFORE SUNRISE” BY ELTON LAMMIE Two years ago, Elton Lammie set out to write a classic love song that embodied both passion and anticipation. “I wanted to write a song from the standpoint of a person who falls in love with someone in an incredibly dynamic order,” states Elton. Elton accomplished just that. “Before Sunrise” is the kind of love song that would give Celine Dion chills down her spine. Elton is an exceptionally multifaceted musician. Not only does he play a wide variety of instruments, but he also sings four different genres of music: rock, opera, Broadway and country. Elton’s vast talent of blending these genres together adds to his original sound; a flair he showcases in “Before Sunrise.” In true Elton form, “Before Sunrise” can be described as Keith Urban meets Adele at an opera, as the track is both dramatic and soulful in its composition and execution. With approximately 20 original songs under his belt, “Before Sunrise” is the title track of Elton’s third album and his most treasured piece of writing. His love story in song walks the listener through an instant desire that emerges when two individuals meet and develop a lasting relationship. “It’s the little things that make love last a lifetime. All of these thoughts and actions took place under the stars, before sunrise,” he describes. “For the solo, I wanted to write an orchestration that metaphorically represents intimacy. So I wrote a specific melody for a brilliant classical cellist from Toronto. The solo represents exactly how I think music can be as passionate as anything physical,” says Elton. “BUTTERFLIES” BY HEARTS AND SOUNDS Can you recall a time when you felt butterflies in your stomach when you looked into the eyes of someone special? “Butterflies” by Niagara band Hearts and Sounds perfectly captures that feeling, allowing you to share it with your new spouse and your guests at your first dance. The musical group, Hearts and Sounds, emerged from the cover band The Madhatters. “The Hearts and Sounds project was basically The Madhatters doing originals,” states Frank Pietrangelo, vocalist and keyboard player. “We made a record that sold a bunch of copies. We are very proud of our accomplishment,” adds Pietrangelo. The cohesive sound that embodies Hearts and Sounds originates from a variety of musical influences. “LOST (IN YOUR EYES)” BY THE BLACK FLIES The Black Flies are one of Niagara’s most prized possessions in music. Their explosive folk rock sound that is filled with strong vocals and compelling melodies, is hard not to love. While often compared to Canadian legend Blue Rodeo, The Black Flies are the real deal when it comes to original music. “Lost (in your eyes)” is one of the many remarkable tracks on the band’s third album, Roots and Roll. The fresh guitar riffs and rich vocals are ideal for an intimate first dance between a bride and groom. One listen to the song and you will understand the motivation and meaning behind its composition. Band member Jeremy Vokey states, “It was the feeling of falling in love and the feeling of being in love that inspired me to write the song.” Vokey’s lyrics perfectly paint the picture of a long awaited relationship coming together. “I hope that people will get to experience the same feeling I got that inspired the song. It’s a special thing,” states Vokey. The cruising feel of their music can at times be difficult to categorize as its sound draws from a range of genres and influences. Although Vokey admits the song could fit into different categories, he states “It’s just music to me. If I had to guess at what it would be called I would say ‘Folk Ballad,’” states Vokey. While the bride and groom celebrate an important milestone in their lives together, guests are treated to a dining experience which goes beyond the typical conventions of any ordinary wedding. The Copacabana restaurant delivers a performance of authentic Brazilian cuisine and entertainment, for a beautiful, unforgettable occasion. The elegant venue of the Hilton Garden Inn provides impeccable facilities for corporate and social events, and is an especially appealing spot for weddings. Because of a high demand to host weddings at the Copacabana restaurant itself, but inadequate space and resources to do so, the owners of both properties joined forces to offer the unique Copacabana dining experience at the capacious Hilton Garden Inn, which can accommodate larger parties and handle a majority of the planning needs.

Copacabana is no ordinary steakhouse. The unlimited banquet uniquely offers guests a chance to sample small cuts of delicate meats, cooked to perfection by trained Brazilian culinary professionals. The restaurant has a lively atmosphere replicating traditional South American culture with professional entertainment and colourful décor. The meal starts with “The Copa Galleria”, an unlimited selection of cuisine complete with a fresh salad bar, antipasto, grilled vegetables, baked breads, an assortment of cheeses and other hot and cold dishes. When they are ready, guests start their Rodízio by sampling over 20 juicy cuts of meat, brought to them directly by the carvers, called “gauchos”. The extraordinary dining affair is enhanced by live entertainment on Friday and Saturday nights. On Fridays Copacabana offers Samba Shows, which pays tribute to the Brazilian Carnival by showcasing the vibrant glamour and captivating rhythm of the culture through a production of music and dance by entertainers in traditional costume. Saturday evenings guests may also enjoy Capoeira shows, a Brazilian martial art which combines the thrill of fighting and acrobatics along with the grace of performance arts.
