LETTER FROM THE

W

elcome to the very fi rst issue of Weddings by Today Magazine. Maybe you’ve been planning your wedding in your mind since you were a kid, or maybe you didn’t really start thinking about it until you decided to get married; either way, we hope this issue will help you get closer to creating the wedding of your dreams. Whether you are looking for the most creative cake or an innovative idea for a delicious midnight snack, you’re bound to find something in the pages of this magazine. We know that by now you are no stranger to the wonder that is Pinterest and neither are we; thus, the inspiration for our details section was born. We’ve highlighted a few of our favourite ideas in here but you can find many more on our Pinterest site under Today Magazine. And last but not least – wedding gowns. This year’s trends open the door to so many possibilities. With the addition of colour and the acceptance of daring cuts we’re afraid to say that the daunting task of finding the “one” just got harder (may we suggest a costume change before the reception?) Perhaps we should have consulted with legendary bridal gown designer, Ines Di Santo on this point. (page 40). Happy planning and here’s hoping you find a spider in your wedding dress (page 71)!

othing says happiness quite like a glass of sparkling wine. Although it is often associated with celebrations and special events, bubbly really needs no occasion to enjoy. It looks elegant, is delicious on its own and with food, and always brings a smile! Planning a wedding and need to know the difference to splurge or save? This mini guide to sparkling wine will help!

GLOBAL BUBBLES Sparkling wine is made all over the world and called by many names, so committing them to memory is important! Cava is the most sparkling wine from Spain. Champagne is a region in France and only bubbly from that specific region can be called by that name. Most other regions in France call their bubbly Crement, for example Crement du Bordeaux and Crement d’Alsace. In Italy, you will recognize the names Spumante, Asti and Prosecco as sparkling wine – Asti being sweet, and Prosecco as their most well known sparkling. The Germans call their bubbly Sekt and you’ve probably sipped on other sparkling wines from around the world called Cuvee or Brut.

CREATING BUBBLES

‘Méthode Champenoise’ is the traditional method of making sparkling wine where the secondary fermentation happens in the bottle. It is the most widely known style of quality sparkling wine production, resulting in a wine that has smaller bubbles and ages very well in a cellar if made from a vintage year. It is also the most time consuming process, as bottles need to be kept for long periods of time and cared for with much attention. Under the ‘Charmat’ method, the secondary fermentation happens in tanks and the wine is bottled under pressure. These sparkling wines, such as Prosecco, have larger bubbles and offer good value to your pocket book.

THE GRAPES Most traditionally made sparkling wine is produced with Pinot Noir, Chardonnay and Pinot Meunier grapes, but you can really add bubbles to any wine and use any grape. The grape varieties in sparkling wine are not typically listed on the bottle, so learning about the practices in each region is important to understanding the world of sparkling. If a sparkling wine is made

100% from Chardonnay is can be called a “Blanc de Blanc” (translating to white of white), and if made from 100% Pinot Noir it’s called “Blanc de Noir” (meaning white of red)

WHAT’S YOUR STYLE? Sparkling wines come in a variety of styles, from light and fruity, to medium-bodied with amazing flavours, or rich and complex. Learning your preferences is a great way to define your bubbly personality! When pairing sparkling wine with food, always match the weight of the wine with the weight of the food. Sparkling wine can vary in sweetness from dry (Brut) to sweet. All traditionally made sparkling wine is fermented dry. But, don’t let the word dry on the label fool you, if the word dry is on the label (instead of brut) often the wine will be sweeter than you expect.

WHAT’S A VINTAGE? If there is a year noted on the bottle of wine, then all of the grapes were harvested from that year and used in the bottle (very rare for sparkling wine). Otherwise, grapes from several years are blended together to create a certain taste profile. TODAYMAGAZINE.CA 13

CAKE and ƒ

EAT IT TOO BY LYNN OGRYZLO

Take a look at wedding cakes on the web and you’ll see just how far we’ve come from traditional slabs of iced fruitcake. That’s not to say the evolution of wedding cakes has always gone in the right direction. I found a wedding cake made into a full-sized (5-foot!), likeness of the bride; another was a 36-inch in diameter hamburger wedding cake complete with fondant replicated lettuce, onion, pickles and special sauce. >> TODAYMAGAZINE.CA 15

I

found a cake where the bride figurine on top is holding a fishing rod and the hook is caught in the pants of the groom and the worst of all (if these aren’t bad enough), a threetiered wedding cake where the bride figurine on top has pushed the groom off the edge and he’s resting in a pool of blood at the base of the cake - what the heck? Ok, so besides some peoples bizarre ways to reflect their love for each other (and I’m sure the dead groom represents some sort of twisted love in the nicest way), wedding cakes were meant to bring good luck to all of the attending guests and of course, the couple. Thank goodness I found none of these bizarre examples in Niagara. The symbolism of wedding cakes started out in Ancient Rome where unsweetened barley bread was used as the wedding food and the groom would break the piece of bread in half over his brides head symbolizing breaking of the bride’s virginity and the subsequent dominance of the groom over her. For any feminists reading this, you’re probably wondering if this story gets any better; I promise it does. Wedding cakes are the centerpiece of a wedding ceremony and are shrouded in history, symbolism, mystery, personality and etiquette. It’s the day to honour a love you share and commit to a lifetime together. Designing your wedding cake is no cakewalk. Like the pieces that all fit together to make a perfect puzzle, artist and pastry chef Eda Marion of Vineyard Sweets (vineyardsweets.ca) in Niagara-on-the-Lake takes many details into account when she designs personalized wedding cakes. “I get to know the bride and groom, I look at the wedding dress, the style and graphics of the invitation, the floral choices and the theme colours to design a one-of-akind wedding cake.” We really have come a long way from breaking barley bread over a bride’s head. Barley bread evolved into fruitcake popularized by Queen Victoria that was replaced by the drier pound cakes of the early 1900’s (that no one liked to eat). Unfortunately, the image of dry wedding cakes lingers today. But Eda and other modern wedding cake designers assure me that todays modern cakes are light, moist, delicious and come in an endless variety of flavours that everyone will enjoy eating. Eda’s most popular cake flavours are coconut key lime and French vanilla. “The only time I do fruitcake is when Scottish grandmothers insist on it,” she laughs. In the early 1700’s baker Thomas Rich made a cake in the likeness of St Bride's Church, on Fleet Street in London, England to impress his bride. It was the very first tiered cake and quickly replaced the single slab wedding cake design from that moment on. It was originally thought that the Grooms Cake was stacked overtop of the Brides Cake making one out of the two. Typically smaller than the Brides Cake the Grooms cake can be made from anything from fruitcake to the groom’s favourite flavour. The most popular options on the outside of wedding cakes include buttercream, fondant, cream cheese and chocolate. These ingredients can be spread, shaped, moulded and formed into various textures, flowers, ribbons, icons and memorabilia. In addition almost anything can be added on the outside from little statues of the bride and groom to ribbon, jewelry and small articles of a personal nature. >>

In between ultra light layers of delicious cake can be Swiss meringue, buttercream or cream cheese. With Eda’s art and fashion design background, she impressively nails the perfect wedding cake every time. It’s no surprise that the most romantic of all wedding cakes come out of the honeymoon capital, Niagara Falls. Italian pastry chef, Giovanni del Priore of Criveller Cakes & Pastries (crivellercakes.ca) is the Michelangelo of wedding cakes. His signature cake is the most breathtakingly romantic vision with tissue paper thin sheets of crinkled white chocolate that hover over layers of moist, flavourful cake like floating peonies in full bloom. At first glance, most think a Criveller wedding cake is made from real tissue paper and are delighted to discover it’s really delicious chocolate. If you’re wondering if white chocolate is even chocolate at all, Giovanni explains that milk chocolate contains 38% cocoa butter and white chocolate has 29%. This explains why Criveller cakes are not pure white but a soft, romantic white. “People who claim to not like white chocolate taste it and when it evaporates on their tongue, they’re sold.” Criveller’s white wedding cake represents the traditional purity of the wedding ceremony and eating it is nothing less than a sensual act. Similar to Eda’s long list of available cake flavours, Criveller cakes come in over 25 different flavours from fresh berry to tiramisu. They’re moist on the inside with feathered chocolate on the outside. Giovanni explains the cost of a feathered chocolate wedding cake is about 30% less than a cake wrapped in fondant. Wedding cakes don’t come cheap, some are priced by the slice, ranging from $5.00 to $18.00 per slice while others are priced by cake and they can start at $250 and go as high as $1,500. Giovanni just finished a cake for the Prince of Dubai that sold for a whopping $2,800! It was a 4-tire wedding cake. The tips on the feathered white chocolate were painted with edible gold leaf. Besides the obvious “ability to pay” scenarios, most wedding cakes are one of the best values of any wedding ceremony considering the time it takes to create (often days and weeks) and the importance of the cake at the event. Like baker Thomas Rich changing the design of wedding cakes in the early 1700’s, Giovanni is revolutionizing the design of modern day wedding cakes with his one-of-a-kind cake. They’re so unique, he’s working with a TV production company on a television show. “Stay tuned,” says Giovanni. Since I started this story with some bizarre wedding cake examples, I would be remiss if I didn’t finish with an equally trivial ending. On the radar of some brides is the TurDuckIn (a chicken stuffed into a duck stuffed into a turkey) of wedding cakes. Just imagine a pie baked inside a cake. Now stack three of these on top of each other and ice appropriately. The name reflects the flavour of the pies and cakes used to create the tour de force. The one I found was called a PumAppleIce Cake (pumpkin, apple, spice). The sky is the limit when it comes to wedding cake designs meaning yes, you can have your cake and eat it too! Stack them high, decorate them elegantly or make them ooze with class. Wedding cakes are the icon of the love shared by newly wed couples from that day and forevermore.

BUTTERCREAM

This is one of the most popular cake frostings, and it is made up of butter, powdered sugar and flavourings. Some recipes call for shortening, some for both shortening and butter. This icing offers the best value per slice due to the ingredients used. The texture is smooth and creamy (hence the name), but is not super sweet. It is easy to slice and can be made into numerous decorations for the cake. It does melt quickly though, so keep that in mind for hot climate weddings.

MERINGUE This type of icing holds well in heat, making it perfect for hot climate weddings. It is comprised of egg whites, sugar and flavouring. This can add a nostalgic feel to any cake

MARZIPAN This is a nutty flavoured icing, most often used to frost fruitcakes. It is often chosen as a flavour for filling or to use to make shapes to decorate the cake with. It’s not ideal for icing an entire cake with though, as it is tricky to roll out a whole sheet of it without it ripping.

FONDANT This is a smooth sheet of sugar paste and it can be flavoured, as well as tinted any colour. It gives a beautiful, clean finish to any cake. Some people don’t really enjoy the taste and texture of it though (it can be a bit chewy), so a good idea is to have a layer of buttercream underneath so guests can still enjoy the cake if they don’t like the flavour of the fondant. This is the most popular icing choice for wedding cakes.

GANACHE It sounds fancy, but it is essentially just chocolate melted with heavy cream. It makes a lovely shiny glaze on cakes, and tastes quite delicious. It does tend to melt quite easily though, and the colour of it cannot be altered.

In the details

in the DETAILS

Creativity is key for 2015 weddings; people want their wedding to reflect their individual personalities and who they are as a couple. While the basics of a wedding stay the same (the “I do’s”, the church, the dress etc.), where that uniqueness really shines through is in the details. We’ve scoured and pinned the web (thanks Pinterest) to compile a section of some of the prettiest and most creative wedding ideas out there.

FLOWERS Regardless of when you decide to get married, there is certainly a flower for every season, with new trends popping up every year. Check out these trends for 2015 and see what is going to be hot for ’15 nuptials.

FLORAL BACKDROPS One spectacular place to take your pictures is in front of a beautifully designed floral backdrop. Not only do they look good, but the high concentration of flowers in one spot can create lovely aroma as well. If the budget doesn’t necessarily allow for real flowers, you can try a paper alternative. Another option is to use mostly greenery with just a row of flowers: going that route will save a little bit of money. >>

TODAYMAGAZINE.CA 21

Why not grab some local deals

www.grabjab.com

LUXURY & ROMANCE This means flowers and lots of them. Less exposed stems and greenery and just full, big flowers such as hydrangeas, hyacinths and orchids that come in pretty, pastel colours. This is expensive though, so you can only go this route if you have a big budget.

STICK WITH THE CLASSICS If you are more of a fan of a clean, classic look, you are in luck because that look is on trend for 2015. White and ivory are going to be popular, along with traditional flowers such as roses and calla lilies. It gives an elegant feel to the bouquet.

HANGING FLOWERS A great way to decorate an outdoor venue is with the addition of hanging flowers. One way you can do this is by hanging bottles and vases from lower branches of any large trees in the venue. TODAYMAGAZINE.CA 23

WILD & FREE This trend is kind of a “right from the garden” look. It was popular last year and it seems like it won’t be going anywhere for this upcoming year. Picture an English garden, but in bouquet form. Instead of one single flower, choose an array of mixed flowers. If you wedding is taking place in the Fall, choose flowers inspired by the forest…ferns, foxgloves and untidy roses. Unstructured and wild is the key for this trend.

PASTELS Pretty pastels always shout spring and this year, that’s translating over into wedding flowers. Large, big blooming flowers, which give off the feel of a country garden. Peonies work particularly well for this type of look.

FLOWER CROWNS It used to seem a little hippie-esque, but the trend of brides wearing floral crowns just continues to grow. Depending on your overall wedding theme, you can use more delicate flowers such as gypsophilia or go with more impactful flowers such as roses and hydrangeas.

STATIONARY A trend in invitations is to have extremely attention grabbing invitations. Whether it comes in a decorative box, is covered in cellophane, tied with ribbon, rope or twine, shining with crystals or decorated with dried flowers, it’s all about the shiny, eye catching details. Other invitation trends include using bolder colours and skipping

the whites and ivories, incorporating photos into the invitations, invitations that tell a story, wooden invites, linen invites, or simply plain and modern invites. The choices are endless. When you send our your invitation, you are essentially giving guests a little peek at what kind of wedding they can expect to attend, so choose wisely!

BEYOND PAPER

DÉCOR FROM OVER THE POND A little bit of Britain is sneaking into weddings décor thanks to the popularity of shows like Downton Abbey. Think afternoon teas and garden parties. Really simple, almost rustic décor. Dining outside, with uncovered tables or covered with simple lace. Centerpieces hang from above, and greenery can be used as decoration. >>

RECEPTION DRINK & BE MERRY Big for drinks this year are champagne towers, flights of different beer and wine, shots of various liquors…whatever the beverage, the key is choice.

GOOD EATS A huge trend in weddings this year is to offer up tasting stations. From delicious local food trucks offering midnight snacks to a build your own taco bar, this trend is all about bringing the couples favourite foods to their guests. A big trend in seating is family style dining, it allows for a lot of great interaction and can be really relaxing and create a different vibe for the reception. Other popular midnight food options include milkshakes, an ice cream bar, cookies, pizza…any kind of comfort food makes for a great snack. To keep the energy alive, bring these snacks right out to the dance floor on trays. Candy or sweets tables are also becoming quite popular….just load up a table with your favourite candies (chosen to match the theme of your wedding of course), provide little brown bags for guests to fill up, and people will be in their glory!

FAVOURS One of the nicest touches during your wedding is the favours given out to guests. This is a great time to use your D.I.Y skills and give out something that guests will actually use (or eat). Some cool ideas for wedding favours include: mini bottles of liquor, candy bags, tiny recipe books with the couples favourite recipes, herb starter kits, tiny bottles of olive oil, personalized matchbooks, chocolate (can’t go wrong with this one), or a regional specialty (maybe mini bottles of Icewine for Niagara). offbeatbride.com

BRIDAL GOWN LEGEND

BY MARIANA BOCKAROVA

INES DI SANTO’S VENETIAN INSPIRATION Captivated by one of Europe’s most romantic cities, Italian-Canadian bridal gown designing legend Ines Di Santo's Venetian line is one of immense beauty. Venice, the “Queen of the Adriatic”, and it’s annual Carnevale, with its ornate masks, exuberant spirit and grandeur, served as prime inspiration for her collection. Reminiscent of the fashions of Italy’s opulent Baroque Era, the enchanting collection is rich with jeweled embroidery, infusions of colour and feminine elegance. It is with pristine detail Di Santo approaches her work - even the names of the gowns are steeped in history, in juxtaposition with the softness of the designs themselves, just as the collection blends lightness and decadence. Dreamy gowns of blush Silk Gazar and powder blue give way to rich Macramé and Alençon lace appliqués. Alluring translucent bodices and illuminated champagne metallic chiffon dance before tiered voluminous skirts and laser cut layers of organza. >>

When a bride sees me many years later and tells me that her favourite dress ever was that of her wedding gown, [it] brings me great happiness and is the best compliment.

"My Italian heritage has inspired me to appreciate art and fashion in a very special way. I knew from a very young age that I was obsessed with designing gowns. I made my first dress when I was 8 and after that moment I had all my friends asking me for dresses. I knew that this is what I wanted to do but I started with evening and then totally immersed myself in bridal. It was the right time in the bridal industry when bridal fashion took a real turn and I was there at the right moment." Her "right moment" has been one of immense benefit for thousands of sophisticated brides who have appreciated the vibrant femininity, marked by superb fit, originality and inimitable construction of the Di Santo gowns. Using soft silhouettes with ethereal movement and light texture and fabrics, Di Santo draws inspiration from people, travelling, architecture, fabrics and art, but often thinks selflessly - only of a bride and her unique personality when designing: "I would recommend that your look be as naturally you as possible otherwise you stand feeling like you are in a costume. Your gown, accessories, hair and makeup should really represent your every day sense of style but elevated by the degree of formality of your occasion. For the bride that loves to perform and dress up I say run wild with your personality and be you. This will make you feel the most comfortable on your wedding day. A bridal gown is a personality and the accessories and styling of hair and makeup should reflect that personality."

Di Santo recommends choosing a designer boutique that represents your style and sensibility and budget, then trying on a variety of gowns. The key here is to avoid bringing a large group to the consultation and instead listening to the consultants' recommendation, as "they are knowledgeable and can suggest gowns that would suit your figure and special requests". With winter weddings on the rise, she maintains that choosing the right accessories can help anchor the season into one's look. Selecting a dress with detachable pieces, such as the Ines Di Santo collection which debuted in NYC this past October, would further help fit the season. Her unique dresses, which in a word can be described as luxurious, are defined by Di Santo's Audrey Hepburn and Golden Eraadoring views of fashion: "For me fashion gives me a feeling of glamour, luxury and elegance that is unmatched by any other item. To me a couture gown can give you that feeling and ooze out of you when you feel glamorous and luxurious and elegant in a high fashion garment that does all the right things for your figure." Despite the well-received collections and the beauty of her work sold across Europe, Asia and North America, Di Santo remains humble, acknowledging her role as a mere aid to the bride. When asked what she loves most about her chosen career, she replies: " Brides are at a very happy moment in their lives and the energy and excitement fuels my passion and energy to create a work of art that matches their personality and style."

WHETHER YOU HAVE YEARS, MONTHS, WEEKS OR MERELY DAYS TO GO UNTIL YOU WALK DOWN THAT AISLE, HERE ARE A FEW BRIDAL BEAUTY TIPS TO HELP LIFT YOUR CONFIDENCE AND MAKE YOU INTO THE MOST FLAWLESS BRIDE AS YOU WALK DOWN THE AISLE.

one year before DEVELOP GOOD HABITS

• If you’re anxious about fitting into your dress, schedule an appointment to talk to your physician and/or a fitness instructor about developing a healthy eating and fitness strategy for toning and strengthening your body. The stress of planning can cause some to binge eat a few extra pounds or drop too many, so nix bad eating habits now before the stress of wedding planning takes a toll on your health. • Avoid cravings! Create a healthy menu you can realistically stick to instead of jumping on a fad diet. • Preschedule gym sessions into your everyday routine – it is easier to fit in workouts when they are already taking up a spot in your day planner. >>

• Stop tossing and turning before it becomes a habit! Your sleep cycle can take a beating when stress and excitement gets involved so try to maintain a consistent sleep schedule. This will not only help your mental stability, but improve the appearance of your skin and help control your weight. • Work on perfecting your complexion! Start drinking the recommended six to eight glasses of water a day (if you’re not already!). This will improve the appearance of your skin by hydrating and removing impurities and toxins from your system. • Create a daily skin care regime. Your bridal makeup will do wonders for photographs, but you have to help those artists by prepping the canvas. If your current cleansers, lotions and toners are working wonders, don’t switch it up; but if you are battling with breakouts and redness, this is the time to consult a dermatologist and get the products your skin needs to be radiant.

nine months DE-STRESS, EXPERIMENT & BUDGET • Even the calmest bride will have their anxious moments over the coming months. Prepare for those times when the stress boils over by practicing meditative breathing, yoga postures and positive thinking which can calm your mind and slow your heart rate. • Once a week, step away from the wedding for at least 24 hours to focus on other things that you love – like hobbies and your fiancé! • If you want to experiment with hair colour, styles or cuts, do it now! A week before the wedding is not the time to see if you love your hair permed or wish you had grown it out. Meet with a stylist and experiment while you still have time to go back to your original style if you so choose. • Create a budget – and stick to it! You don’t want to spend all of your savings on your appearance. Scout out deals, get quotes from stylists and weigh the costs and benefits now before appointments are booked.

six months BOOK & WHITEN • Avoid any “sorry we are booked” conversations with your makeup artist and hair stylist by booking all of your appointments now! Especially if you are getting married during prime May to September wedding season. • While booking appointments, make sure to schedule trials for your hair and makeup. You will want to have scheduled appointments for approximately two months prior to your wedding to show your stylist photos, describe your vision and nail down any final decisions on style and overall look. On your wedding day, keep in mind hair should be finished approximately three hours before the ceremony and makeup in tandem or at least two hours before you go. • Contact your beauty team and see if they would be willing to come to your hotel, home or venue on the day of your wedding. This will save you and your girls travel time and the hassle of

being crowded into a salon the day of your wedding. • Though it may not be time for your annual cleaning, make a trip to your dentist to address any concerns you may have or to look into teeth whitening solutions.

three months PREP & TRIALS

• Get lots of sleep! Yes you will be anxious, nervous, excited and a whole range of other emotions, but try to shut those eyes and wind down. Turning off electronics and jumping into a bath with soothing oils and scents will help you relax and get some shut eye. • Tidy up your eyebrows but do not go tweezer happy. If you’re nervous about doing it yourself wait for your makeup team or a friend with a steady hand. • Deep condition your hair. You will not want to wash your hair the day of your wedding [styled hair holds better when it is a little dirty] so wash it now and let it soak up the nutrients. • Drink lots of water and hydrate your skin with a really good moisturizer or body butter.

• Have your Pinterest board ready! This is when you will be heading to trial appointments to establish your bridal look. Don’t forget to bring with you any hair pieces, veils or accessories you may be wearing that day so your hair stylist and makeup artist can coordinate your look. • Treat yourself to a facial! Deep cleaning your skin now will establish a solid base for your makeup and remove any month old grime and dead skin.

one month DE-STRESS (AGAIN), GET TO THE ROOTS

GET IN GOOD CONDITION

& SHINE ON!

• Schedule a massage. This will help with your circulation and relieve stress and tension. • Touch up your roots if you colour your hair and make sure you are happy with your current colour. Keep in mind this is not the time for big drastic changes. • Speaking of hair, get a trim! This will keep your hair looking fresh and help it grow that extra little bit during the final stretch. • Cut down on coffee and tea [if you dare] and switch to brightening toothpaste to eliminate any lingering surface stains.

two weeks SLOUGH IT OFF & NO CHEATING • Your weeks may be crammed with bridal showers, bachelorettes and nights out, but continue to stick to a healthy eating plan – it will pay off to stay on track despite the temptation! • Don’t slip away from your exercise routine! It will help you sleep and keep stress at bay. • Exfoliate your body’s skin paying extra focus to elbows and your back - you would be shocked what will show up in photos!

one week GET DETAILED • Even if you’re rocking cowboy boots in exchange for open toed pumps, schedule a pedicure and manicure; it will leave you feeling put together literally from head to toe. • Get a bikini wax and tidy up any other areas prior to the honeymoon. • Confirm all of your beauty appointments for the day of. • Avoid salty snacks and alcohol. Both will cause you to bloat and dry out your skin.

wedding day SLIP INTO SOMETHING REMOVEABLE, MAKE SCENTS & DRINK! • Though the dress may be the only piece of clothing on your mind, make sure to think about what you are wearing to your makeup and hair appointment. Shirts with buttons and zippers are ideal for preserving your fresh coif and avoiding disaster by pulling a sweater over your head. • Apply light perfume just before you leave so that it is still lingering as you walk down the aisle. • Drink water AGAIN. This may sound repetitive but hydration is key to not only looking your greatest, but feeling your greatest. It’s going to be a long and amazing day!

You said “I will” to marrying your partner and starting the process of planning of the day! The magical list of amazing vendors that will assist you in preparing for the most unforgettable party and most special day of your life! Officiant, check! Wedding planner, check! Caterer, check! Florist, check! Photographer, check! What seems to always get put to the bottom of the list is…the skin specialist, the manicurist, the pedicurist, you get the idea here, the vendors that help you look your finest on the most photographed day of your life seems to be forgotten until closer to the wedding day. There is not a particular order that the vendors need to be called by but having your beauty vendors right after the “big” vendors is where they should be, since it is a big deal to look flawless. Your beauty vendors are your “glow” team, you need to get the routine started as soon as you get the ring on that finger especially if you haven’t started a beauty routine prior. You may have a year or more till your wedding day or just a short few months. It’s never too late to start your skincare regime and beauty maintenance. Now that we are all on track with your priority call list, here are a few trips for super hydration and radiance to get the ball rolling for both of you!

EAT, SLEEP AND HYDRATE

First off is your water intake, not only is drinking water on it’s own necessary, but eating superfoods high in water content such as watermelon, grapefruits and greens is vital for hydration on the inside. Next is a routine and clear understanding on how your skincare routine is crucial for the “glow”. Advice from your skin specialist is

a must when choosing the correct regime for your skin situation. We all have special care instructions and this is why your specialist will prescribe the routine and products for your specific needs. Your routine should always include your cleansing, and hydration. Cleansing must always include an exfoliation regime specific to your skin-this will be advised by your skin specialist. A very important add on to all skincare is a special serum of hyaluronic acid, a little goes a long way. This miracle holds 1000X its weight in water and since we naturally produce this in our own body the skin reacts beautifully, showing instant signs of hydration, firmness and that special glow-be sure to ask you skin specialist for this serum. Last but not least, get your shut eye! Sleep is so vital in all aspects of feeling rested, keeping your body at a balanced metabolic rate and diminishes the signs of exhaustion and calms your nerves, it is recommended that you get your eight hours and having a nightly routine that will train your body to repair more efficiently. With these few steps, you are your partner are well on your way to a glow-rific wedding day! Stay well and stay beautiful. Salute! TODAYMAGAZINE.CA 51

THE BEST OF BOTH WORLDS: THE DESIGNS OF YESTERDAY MADE FOR TODAY BY JILL THAM Is there a special diamond in your family? Perhaps it’s your mother’s, grandmother’s or great-grandmother’s stunning ring that tells a story of your family’s past. The old saying, “They just don’t make them like they used to,” easily applies to jewellery as more and more brides want a timeless and charming filigree look to their engagement ring. The Jeweller, designs by Tachjian, has been providing quality craftsmanship and service to the Niagara Region for the past 14 years. His authentic vintage era designs and expertise are something to be appreciated and admired. >>

From elaborately carved settings to twisted threads, antique rings not only tell a story of yesterday, but they embody character, simplicity and elegance.

s a young boy, Kevork Tachjian, owner and skilled jeweller, learned the ins and outs of the profession from his uncle who was a Master Goldsmith. “I admired his commitment and workmanship in the jewellery business and I have taken it to a new level. When you love what you do, it becomes natural,” states Tachjian. “I have to give him proper respect. He showed me the way. You need that when you get into a trade.” The name of his jewellery store came out of necessity from none other than his customers. “Before owning my own business, I worked in the industry for ten years. Sales representatives, customers and owners would all refer to me as ‘The Jeweller,’” explains Tachjian. “They never went by my name because it was hard to say,” he laughs. Along with specializing in watch and jewellery repairs, The Jeweller designs and creates custom made jewellery: specifically engagement rings. “We do it all here in-house, we don’t send anything out,” says Tachjian. Using computer software that displays a three-dimensional picture of the ring, Tachjian is able to show the customer exactly how the ring will look. “We use the computer program to change size or stone and we can also digitally put the ring on your finger so customers can see the height,” he explains. Although he acknowledges that anyone can work a computer and the image on the screen often relaxes the customer, it’s the craftsmanship that makes the ring. “The key is how you finish it and the quality of the ring,” says Tachjian. Tachjian has observed how social media has changed the industry. “Everyone wants a Tiffany ring, but everyone knows the price is outrageous. At the end of the day I tell all my clients it’s all about budget,” he says. With his expertise, Tachjian assists his customers in maximizing even the most modest of budgets. The appropriately named halo design is currently the most sought out ring on the market. “It enhances the diamond as it has a halo of diamonds around the centre stone. It used to be called the cluster, now it has been modernized and called the halo,” Tachjian states. From elaborately carved settings to twisted threads, antique rings not only tell a story of yesterday, but they embody character, simplicity and elegance. “Antique rings are making a comeback

because many individuals are looking at their parents engagement rings and re-creating them by adding a modern aspect,” says Tachjian. “Grandma’s ring has lasted forever because the quality and true art of the industry back then. They didn’t have casting and computer development - it was all done by hand.” Want a bit of the old mixed in with the new? As a true craftsman, Tachjian also uses existing bands to create new rings while keeping true to the antique style. “I’ve seen customers after 35 years upgrade their ring. We made a masterpiece by taking a client’s existing diamond and adding her grandmother’s diamond and new accent diamonds to create a new design. I always add something different to my designs.” says Tachjian. All of Tachjian’s diamonds are GIA certified and 100% traceable. “We can add a laser inscription to the diamond. It adds a serial number to it in case it is stolen,” Tachjian states. “Also, a lot of people will put their names inside an area of the diamond.” You won’t find cookie cutter designs at Tachjian’s store, but what you will find is a family run business with strong values and exquisite craftsmanship. “People shop and don’t see what they want. So they come here and we create it,” says Tachjian. Tachjian specializes in the unexpected as he takes a generic photo or design and creates something stunningly original. His designs are truly one of a kind. For more information visit thejeweller.ca

WEDDING SUPERSTITIONS & TRADITIONS BY:JILL THAM

From helpful rhymes to tell you which day and month is the most favoured for a wedding, to the act of carrying the bride over the threshold to ward off evil spirits, wedding superstitions and traditions have persisted since the f irst couple joined together in holy matrimony. Whether you place any stock in them or not is up to you, but it never hurts to try for that little bit of extra luck. And who doesn’t want to live in a world where a spider in your wedding dress is actually a good thing?

• It is good luck for the bride to cry on her wedding day. Shedding all her tears will ensure she will have none to trickle down her cheeks during the marriage. • Brides be sure to wear gloves with your gown and stuff a sugar cube into one of your gloves to sweeten the union. • In the time of arranged marriages, it was thought if a bride and groom saw each other before getting married there would be too much time to back out. • I hope you are not afraid or spiders because a spider found in a wedding dress means good luck. >> TODAYMAGAZINE.CA 71

For wealth, a bride should put a penny in her shoe.

Engagement and wedding rings are worn on the fourth finger of the left hand because it was once thought that a vein in that finger led directly to the heart.

Brides, be attentive to which foot you step into the church with. Using the right foot will bring good luck.

Carrying the bride across the threshold and wearing a veil are traditions still guaranteed to protect the bride from evil spirits lurking below.

Save the top tier of the cake for your first anniversary.

Scheduling your ceremony when the hands on the clock are going up, and not while the hands are going down is considered a favourable time to marry. You don’t want your marriage to be going downhill.

Each guest should have a bite of wedding cake to guarantee good luck for the happy couple.

Keep track of the number of ribbons broken at the wedding shower while the bride is unwrapping her gifts. This will be the number of children she conceives.

THEY’RE PLAYING

OUR SONG The flowers have been ordered, wedding bands selected and the seating chart is in its seventh draft but you have one thing left on your to-do list – choosing a song for your first dance. For many, choosing a song is about expressing the uniqueness of your relationship. These original pieces from Niagara’s leading musicians are sure to reflect your special bond.

BY JILL THAM

“BEFORE SUNRISE” BY ELTON LAMMIE Two years ago, Elton Lammie set out to write a classic love song that embodied both passion and anticipation. “I wanted to write a song from the standpoint of a person who falls in love with someone in an incredibly dynamic order,” states Elton. Elton accomplished just that. “Before Sunrise” is the kind of love song that would give Celine Dion chills down her spine. Elton is an exceptionally multifaceted musician. Not only does he play a wide variety of instruments, but he also sings four different genres of music: rock, opera, Broadway and country. Elton’s vast talent of blending these genres together adds to his original sound; a flair he showcases in “Before Sunrise.” In true Elton form, “Before Sunrise” can be described as Keith Urban meets Adele at an opera, as the track is both dramatic and soulful in its composition and execution. With approximately 20 original songs under his belt, “Before Sunrise” is the title track of Elton’s third album and his most treasured piece of writing. His love story in song walks the listener through an instant desire that emerges when two individuals meet and develop a lasting relationship. “It’s the little things that make love last a lifetime. All of these thoughts and actions took place under the stars, before sunrise,” he describes. “For the solo, I wanted to write an orchestration that metaphorically represents intimacy. So I wrote a specific melody for a brilliant classical cellist from Toronto. The solo represents exactly how I think music can be as passionate as anything physical,” says Elton. If you are wanting a love ballad with a bit of edge to it, then “Before Sunrise” is the perfect song choice for your monumental day. “Before Sunrise” is available from iTunes. “BUTTERFLIES” BY HEARTS AND SOUNDS Can you recall a time when you felt butterflies in your stomach when you looked into the eyes of someone special? “Butterflies” by Niagara band Hearts and Sounds perfectly captures that feeling, allowing you to share it with your new spouse and your guests at your first dance. The musical group, Hearts and Sounds, emerged from the cover band The Madhatters. “The Hearts and Sounds project was basically The Madhatters doing originals,” states Frank Pietrangelo, vocalist and keyboard player. “We made a record that sold a bunch of copies. We are very proud of our accomplishment,” adds Pietrangelo. The cohesive sound that embodies Hearts and Sounds originates from a variety of musical influences. Hearts and Sounds is one of Niagara’s According to Spotify, top bands and does not the ten most popular first dance easily fit into one musical songs from the last couple of years are: category. Often being compared to U2 and “At Last” by Etta James Coldplay, their music is a combination of pop, “I Won’t Give Up” by Jason Mraz rock and easy listening. “ You Are the Best Thing” by Ray LaMontagne Their self-titled de“All of Me” by John Legend but album was adored by their fans and lead “Better Together” by Jack Johnson to musical opportu“A Thousand Years” by Christina Perri nities for the group that included perform“Everything” by Michael Buble ing on stage alongside “First Day of My Life” by Bright Eyes Bruce Springsteen, and “Then” by Brad Paisley opening for Usher and Smashmouth. That’s how I came up with “Butterflies.” Admitting he wrote the song in 15 minutes, Pietrangelo states, “Sometimes song writing is challenging and other times it just flows right out onto the paper.” “Butterflies” is a love song guaranteed to give you goose bumps. “LOST (IN YOUR EYES)” BY THE BLACK FLIES The Black Flies are one of Niagara’s most prized possessions in music. Their explosive folk rock sound that is filled with strong vocals and compelling melodies, is hard not to love. While often compared to Canadian legend Blue Rodeo, The Black Flies are the real deal when it comes to original music. “Lost (in your eyes)” is one of the many remarkable tracks on the band’s third album, Roots and Roll. The fresh guitar riffs and rich vocals are ideal for an intimate first dance between a bride and groom. One listen to the song and you will understand the motivation and meaning behind its composition. Band member Jeremy Vokey states, “It was the feeling of falling in love and the feeling of being in love that inspired me to write the song.” Vokey’s lyrics perfectly paint the picture of a long awaited relationship coming together. “I hope that people will get to experience the same feeling I got that inspired the song. It’s a special thing,” states Vokey. The cruising feel of their music can at times be difficult to categorize as its sound draws from a range of genres and influences. Although Vokey admits the song could fit into different categories, he states “It’s just music to me. If I had to guess at what it would be called I would say ‘Folk Ballad,’” states Vokey. One can easily be lost in the distinctive sound that encompasses The Black Flies’ music, making it the ultimate song choice for your first dance. The song “Lost” can be sampled and purchased through cd baby and iTunes or visit myspace.com/ theblackfliesmusic for more information. brazilian weddings: the CopaCaBana eXperienCe noW availaBle at the hilton garDen inn By lauren Charley A wedding planned with Copacabana at Hilton Garden Inn is more than just a traditional ceremony and reception; it is a spectacle. While the bride and groom celebrate an important milestone in their lives together, guests are treated to a dining experience which goes beyond the typical conventions of any ordinary wedding. The Copacabana restaurant delivers a performance of authentic Brazilian cuisine and entertainment, for a beautiful, unforgettable occasion. The elegant venue of the Hilton Garden Inn provides impeccable facilities for corporate and social events, and is an especially appealing spot for weddings. Because of a high demand to host weddings at the Copacabana restaurant itself, but inadequate space and resources to do so, the owners of both properties joined forces to offer the unique Copacabana dining experience at the capacious Hilton Garden Inn, which can accommodate larger parties and handle a majority of the planning needs.

hilton garDen inn

Located off the QEW in the quaint township of Niagara-on-theLake, the Hilton Garden Inn offers a prime location immersed in the essence of wine country, and just minutes away from the legendary Niagara Falls and tourist district. The property has hosted many traditional weddings since it’s inauguration in November 2005, and can accommodate up to 220 guests. Receptions take place in the Garden View Room, a 3,030 square foot ballroom with wall length windows overlooking the gorgeous landscapes of the hotel garden. The hall is equipped with state-of-the-art audio visual and sound equipment, providing the perfect location to

host live entertainment and dancing for an unforgettable evening. Photography facilitated by the diverse array of backdrops provided by the astonishing scenery and surroundings in the gardens and on the property of the hotel grounds.

CopaCaBana roDÍzio Dining

Copacabana is no ordinary steakhouse. The unlimited banquet uniquely offers guests a chance to sample small cuts of delicate meats, cooked to perfection by trained Brazilian culinary professionals. The restaurant has a lively atmosphere replicating traditional South American culture with professional entertainment and colourful décor. The meal starts with “The Copa Galleria”, an unlimited selection of cuisine complete with a fresh salad bar, antipasto, grilled vegetables, baked breads, an assortment of cheeses and other hot and cold dishes. When they are ready, guests start their Rodízio by sampling over 20 juicy cuts of meat, brought to them directly by the carvers, called “gauchos”. The extraordinary dining affair is enhanced by live entertainment on Friday and Saturday nights. On Fridays Copacabana offers Samba Shows, which pays tribute to the Brazilian Carnival by showcasing the vibrant glamour and captivating rhythm of the culture through a production of music and dance by entertainers in traditional costume. Saturday evenings guests may also enjoy Capoeira shows, a Brazilian martial art which combines the thrill of fighting and acrobatics along with the grace of performance arts.

COPACABANA CONCEPT WEDDING PACKAGE

New for spring 2015, Hilton Garden Inn (HGI) is proud to introduce a one-of-a-kind opportunity for couples wishing to unite in matrimony with a theme exclusive to the Niagara region, a Grilled Brazilian Wedding. The Copacabana Concept Wedding Package offers an all-inclusive wedding package starting at just $99.00 per guest. The ceremony itself can take place right on the HGI property, either outdoors on the gazebo and patio overlooking the garden’s majestic floral displays, or inside the hotel depending on weather and personal preference. Receptions can be held outdoors under a marquee or indoors in the comfort of the Garden View room. The HGI staff prepare an impeccable display: furniture decorated with elegant chair covers and linens, allowing the couple to organize their own colour designs, embellishments, and floral arrangements. The catering is prepared on site, from the initial cocktail reception, complete with the chef ’s choice of Hor D’oeuvres, to the full three course meal, including a host bar service and cake cutting, plus an optional late night buffet.

BRAZILIAN DINING

The Copacabana Family Style dinner concept brings guests all of their food directly to the table, for a more intimate social affair. Guachos approach each table in the same manner exercised at the Copacabana restaurant by circulating the tables with individual cuts of meat chosen by the couple from the kitchen’s selection. Following the dinner, a selection of decadent desserts are presented to each table, along with coffee and tea service. The cuisine selections for all courses include:

ENTERTAINMENT

Entertainment at your wedding is encouraged, and authentic Brazilian performances are available for an additional charge. Couples are welcome to provide their own DJ, acts, and musicians for the dance portion of the evening. The facilities are equipped with cutting edge audio visual technology systems for a flawless presentation of entertainment of all kinds. Upon request, Copacabana will supply their talented Samba and Capoeira dancers, to deliver a performance on your special day which is energetic, exotic, and will elate the mood of your guests. The male and female performers are dressed in gorgeous, full traditional Brazilian samba outfits, appearing as they do during the Brazilian carnival in Rio de Janerio.

LATE NIGHT BUFFET

Following dinner and the optional Copacabana entertainment, brides and grooms will generally perform the official cutting of their wedding cake, assisted by the banquet staff. For an extra fee, clients may choose to extend the dining experience by adding a Late Night Buffet for their guests including treats such as pizzas, fresh fruit displays, and assortments of mini cakes and pastries.

PLANNING A COPACABANA CONCEPT WEDDING PACKAGE

To plan the ultimate Grilled Brazilian Wedding with Copacabana and Hilton Garden Inn, call the hotel at 905-7043805, or visit the property at 500 York Road, Niagara-on-the-Lake Ontario.

Brazilian lifestyle is a combination of influences derived from the indigenous native, African, and Portuguese cultures. Portuguese is the most dominant of these influences, as it is where the Brazilian people acquired their language, main religion, and most of their customs and traditions.
