rish Osborn is one of those high-energy, fun people who’s already working out at the gym by six in the morning. She’s lifting weights and running three miles on the treadmill while many of us are still asleep. With a full-time job as senior vice president and Louisville market president of American Founders Bank, along with being the 2015 board chair of the Kentucky Derby Festival (KDF), she’s going to need all the energy she can muster. Trish, like past chairs, has a task that would test Wonder Woman: She will be attending all 70 festival events, most of which are clustered in the last two weeks of April. Trish will be diving into a mountain of clothes and shoes, changing from ball gowns to her official black jacket with the gold Pegasus emblems to festival logo wear. Trish, 54, is a Louisville native who was raised going to the festivities as a little girl. “My father would take time off during the Derby Festival, and my parents and I would go to all the events. I have all kinds of wonderful memories. “I loved going to the balloon race. It was held at Iroquois Park, and we climbed to the top to see them lift off. I was a band kid growing up and marched in the parade. My family would have a picnic on the riverside and watch the steamboat race.” After her father passed away in 1983, Trish and her mother became festival volunteers, selling Pegasus pins at the shopping malls. In 2007, she was appointed to the KDF board.

• Focus on exercising, drinking lots of water, and getting sleep. “When I get super stressed or have too many things going on, cat naps rock!” • Use music as a motivator. “If I am tired or feeling down, a little Earth, Wind, and Fire can get my energy back up. Who can listen to that music and not want to get up and dance?” • Stash plenty of emergency makeup in several locations for touch-ups. “Keep a toothbrush and toothpaste, a change of clothes, rain gear, and extra shoes in the

car. Even my hair stylist, Todd Bauer, has agreed to be on call.” • Be flexible and prepared for anything. “I keep a supply of Pegasus pins (people forget or lose them), duct tape, bungee cords, a screwdriver, a box cutter, garbage bags, phone chargers, and safety pins. You could have an event start and a windstorm comes through and blows the tablecloths off. You definitely need a flashlight because you’re up at 3 or 4 o’clock in the morning setting things up for events like the Balloon Race and the Marathon.”

ouisville artist Peggy Modjeski has created a sweet way to memorialize an owner’s favorite horse, whether a Thoroughbred or a Shetland pony. Peggy, 58, is a needle-felt artist and can take a bit of hair from a horse’s mane and tail and handcraft a little heart. She then builds a wool sculpture of the horse around the heart. She fashions what she calls Keepsake Critters for dog and cat owners as well, working from photographs of the pet to create a “heart-felt” memento for the owner. In addition to her true-to-life custom sculptures of beloved pets, Peggy uses her imagination to create her Woofsong Woolies inspired by her love of animals and nature. James Jones, guest services representative for Churchill Downs, and Laura Dailey, who works in marketing and business development for Yellow Cab, have some tips for navigating your way through the madness. TIP: You can park at Papa Johns Stadium if you don’t have a parking pass and use the shuttle service. Patrons pay $25 to park and pay another fee for the shuttle. However, Jones says most people will bypass the shuttle and walk to Churchill Downs since it is only four blocks away. TIP: Park at Kentucky Fair and Exposition Center for $15 and catch the shuttle for an additional fee.

This year the gala will be held Derby Eve, May 1, at the Galt House. “It is a beautiful event,” Nikki says. “Last year 900 people attended. Derby is the time of year you are especially proud to be from Louisville and Kentucky. The gala really shines the spotlight on what Blessings in a Backpack does in providing food for elementary school children on free or reduced lunch programs to take home for weekends during the school year.” This will be Nikki’s fourth Unbridled Eve. Last year she rented a designer dress — a red, off-one-shoulder chiffon gown — from Rent the Runway (renttherunway.com). It’s a great deal, she says. “They sent two sizes of the dress — just to make sure it fit.” It might be a great option again since she just had a baby girl in March.

e all know that the Derby winner wears a garland of red roses. But what about a dress of roses worn on the Red Carpet at Churchill Downs? Such a gown has been the creation of Amy Streeter, owner of Susan’s Florist on Preston Highway in Louisville. Three years ago, at the invitation of Andre Wilson, president and CEO of Style Icon, Amy fashioned a full skirt of live, red roses to be worn in a fashion show at Churchill Downs. The next year, it was a black dress with a long train of roses, and last year she designed a black dress with a band of roses swirling from neckline to hemline. “Each dress is made of about 600 fresh roses,” Amy says. “Each rose is hand-wired to create the gown, making it quite heavy.” As of press time, this year’s design was still under wraps. Make Your Own

Tissue Paper Fascinator Host a pre-party for your girlfriends to make your own inexpensive tissue party fascinators. • 8 sheets of tissue paper (any color or pattern) • headband

• crafting or oral wire • s tring or thread • hot glue gun • netting

• extra details ( ower for center, etc.) • scissors

A. Line up tissue paper so all 8 sheets are neatly stacked together in the color order you’d like. (If using extra large tissue sheets, cut them down to 12” long.)

B. Fold tissue paper in a fan-like manner. Pinch in the center with crafting wire. Cut the edge of each end of stacked tissue paper either at an angle or rounded out to resemble a softer petal-like shape.

C. Begin on one side and uff up tissue paper one sheet at a time. Continue on to the other side and then uff as desired for extra fullness. You can add extra detail once uffed. Here we added a burlap ower in the center for an extra touch.

D. Cut the desired amount of netting and pinch in the center. Secure all to the headband where you desire with either thread or crafting wire. Attach ower with hot glue gun or wire until secure on the headband.

Country Ham Wrapped Asparagus By PAIGE RHODES 6 ounces sliced country ham, sliced in 1/2-inch thick strips 1 pound asparagus, trimmed 1 tablespoon olive oil Working one at a time, wrap a strip of country ham on each asparagus spear at an angle, spiraling from the tip to the end. Repeat with remaining ham and asparagus. Heat oven to 425°. Add asparagus and cook until ham is crisp and asparagus is tender, about 10-15 minutes. Serve immediately.

Corn Cakes Topped with Barbecue By PAIGE RHODES MAKES ABOUT 24 INDIVIDUAL CORN CAKES

For the Barbecue: 2 lbs pork butt 1 cup beef broth 12 oz of good quality barbecue sauce Pour beef broth into slow cooker, and add pork butt. Cook on high heat for 6 hours, or until meat shreds easily. Remove meat, and shred with two forks. Preheat oven to 350°. Transfer the shredded pork to a Dutch oven and stir in barbecue sauce. Bake in the preheated oven for 30 minutes, or until heated through. Add more barbecue sauce if desired. 1 large egg 1 cup buttermilk 1 fresh jalapeño, seeded and minced very fine 1 cup coarsely grated Monterey Jack

In a bowl whisk together the cornmeal, the flour, the salt, the baking soda, the pepper, and the sugar. In another bowl whisk together 2 tablespoons of the butter, the egg, and the buttermilk, stir in the chili pepper and Monterey Jack. Stir in the cornmeal mixture, stirring until the batter is just combined. Heat a griddle over moderately high heat until it is hot, brush it lightly with additional melted butter. Working in batches, drop 1 heaping tablespoon of the batter onto the griddle. Spread the batter slightly to form cakes into an even circle that is about 2 inches in diameter. Cook the cakes for 2 to 3 minutes on each side, or until they are golden, transferring them as they are cooked to a heatproof platter, and keep them warm.

Top the corn cakes with a heaping tablespoon of pork barbecue and serve warm. If you have more barbecue than corn cakes, you could use it to make mini sandwiches with Hawaiian rolls.

Mint Julep Jello Shots By PAIGE RHODES

MAKES ABOUT 25 JELLO SHOTS

/ cup of sugar / cup of water 1 cup of bourbon 2 packets of unflavored gelatin 3 bunches of mint 3 4 3 4

Heat the water and the sugar over medium heat until the sugar dissolves. Add 1 bunch of mint leaves to the syrup and simmer for two to three minutes before discarding the mint. Reduce heat to low and allow to cool slightly. Slowly stir two packets of unflavored gelatin into 1 cup of bourbon. PHOTO: PAIGE RHODES

Combine with the mint simple syrup and stir over low heat for 3-5 minutes, until the gelatin is completely dissolved and has had time to thicken slightly. Pour into an 8×8-inch pan, cover, and refrigerate for at least six hours until set completely. Each batch makes about 25 jello shots but can easily be doubled.

Miniature Chocolate Bourbon Tarts

6 ounces bittersweet chocolate, coarsely chopped 1/8 teaspoon salt 1/4 cup bourbon 1/2 cup sugar 1 stick unsalted butter, cut into small pieces, at room temperature 3 medium eggs, at room temperature 3 boxes of mini phyllo shells (45 shells total) 11/2 cups pecan halves Preheat the oven to 350°F.

Arrange the phyllo shells on a large baking sheet and pour a spoonful of filling into each of the shells. The filling should almost reach the top. Place a pecan half on the center of each filled shell. Bake for 35 to 40 minutes, until the filling has risen and the top is cracked in places. Transfer the tarts to a rack and let it cool completely. Arrange on a cake stand and serve at room temperature.

Put the chocolate and salt in the bowl of the standing mixer fitted with the whisk attachment. In a small saucepan, heat the bourbon with the sugar over moderate heat, stirring a few times, just until the sugar is dissolved, bringing it to a slight simmer but not allowing it to boil. Pour the warm bourbon mixture over the chocolate. Add the pieces of butter and the eggs and beat at moderate speed until the mixture is creamy and shiny.

s president of YPAL, Jean Lee sits as an ex-officio member on the board of the Kentucky Derby Festival. She is on the committee for Wine Fest, where attendees get to sample and enjoy great wines from Kentucky and Indiana vineyards. It takes place April 28 and 29 on the East Belvedere at Waterfront Park. “I will definitely be attending this event to insure that everyone’s wine glass is full.” Jean, 32, also volunteers her time to the PNC Tour de Lou which takes place on Sunday, April 26. This is the second year for the 20- and 35- mile bike event along the streets and parkways of Louisville. “I won’t be riding,” Jean says, “but I am recruiting groups of encouragers to be stationed at spots along the route to cheer the riders on.” Jean will compete in the Battle of the Bounce held April 29 from 11 am to 1 pm on the Waterfront Great Lawn. Proceeds benefit Christian Care Communities. She will be on one of the four-person teams from local companies and organizations that participate in this race through, around, up, and over giant inflatables. “There is a rock wall to climb, a hamster wheel-like ball to run in, and an obstacle course to overcome. Then, you have to cross the finish line riding an inflatable pony. It is all great fun!” TODAY’S WOMAN
