earing a 60-pound dress adorned with red roses might be a huge feat for some women, but Shannon Burton makes it look simple. “The first year, it [the dress] weighed 60 to 65 pounds and had about 500 or 600 roses on it. I couldn’t sit down because the roses were on my backside,” she says. Amy Streeter, owner of Susan’s Florists, and stylist Andre Wilson worked together to create the red rose dress Shannon wears when she walks the red carpet at the Unbridled Eve Gala and Kentucky Derby. Annie Bender, realtor with Homepage Realty, has been attending the Kentucky Derby for as long as she remembers. Annie’s beauty prep routine for Derby day begins two months in advance with intensive facials that stop one to two weeks before Derby, layering of spray tans about three weeks prior with the last one on the Thursday of Derby week, and Botox about two weeks before the big day. Her one-stop shop for all of these treatments is Blue Halo Med Spa. To ensure a beautiful mane on Derby day, she gets fresh color applied one to two weeks before by Kelly Miller at Fusion Salon and Spa, the same salon where her hair and hat placement is styled on Derby morning.

ngie Zuvon Nenni never has a dull moment as one of the many organizers for the Unbridled Eve Gala, which benefits Blessings in a Backpack and Fund for the Arts. Between being a member of the planning committee and the Unbridled Eve Charitable Foundation Board, Angie has managed different tasks each year — from doing swag bags to creating marketing plans and dealing with finances. “It is so much fun to do, and it is a little bit outside of what I do in my day-today work,” she says. The varied list of job duties also includes hosting celebrities, which Angie did 7 years ago when she met actor Bill Paxton and his father John. Angie hosted them for the entire Derby weekend and walked down the red carpet with them at the gala. “I didn’t realize this, but I thought Bill was the only celebrity I was hosting, but his father played the role of the butler in Batman. As we were walking and before we got to the red carpet, his father looked at me and said, ‘You’re my date today.’ It just touched my heart,” she says.

April 9 is National Pimento Cheese Day. Celebrate this delicious dish that has been a staple on Southern menus for generations.

T

hrowing a Derby party isn’t all about impressing your guests, but sometimes you do want to pull out all of the stops. In those cases, a plate of crispy fried green tomatoes and creamy pimento cheese should do the trick and make grandma proud.

Fried Green Tomatoes and Pimento Cheese Serves: 8-10

Ingredients 2 cups coarsely grated sharp yellow cheddar cheese 2 cups coarsely grated extra-sharp white cheddar cheese 1 cup finely chopped drained pimentos 1/2 teaspoon celery salt 2 large green tomatoes Kosher salt Freshly ground black pepper 1 cup all-purpose flour 2 large eggs 2 tablespoon buttermilk 3 cups panko breadcrumbs 1-2 cups canola oil, for frying Mixed greens, for serving

Instructions For the pimento cheese, combine first four ingredients in a medium bowl and mix well. Refrigerate until ready to serve. For the fried green tomatoes, trim ends of the tomatoes and discard. Slice tomatoes into ¼-inch thick slices. Season tomato slices on both sides with salt and pepper. Set aside. In a shallow dish or pie pan, add the flour. In a second shallow dish, whisk together the egg and buttermilk until blended. Spread the panko breadcrumbs in a third shallow dish. Working with one tomato slice at a time, dip the tomato slices into the flour to coat evenly, shaking off the excess. Then, dip into the egg mixture, letting the excess drip back onto the dish. Then coat the tomato slices in the panko breadcrumbs, patting firmly to help the breadcrumbs adhere.

Heat ½ cup oil in a 10-inch non-stick or wellseasoned cast iron skillet over medium-high heat until it shimmers. Working in batches if necessary, carefully place tomatoes into the heated oil in a single layer. Cook until the undersides are golden brown, about 2 minutes. Turn the slices and fry until the other sides are browned, about 2 minutes more, adding more oil to the pan as necessary. Drain the fried tomatoes on paper towels. Serve fried green tomatoes on a bed of mixed greens with chilled pimento cheese in the middle.

or Doreen Barnhart DeHart and Jeaneen Barnhart, horses have been the heartbeat of their lives. “We’ve had horses our whole lives. Our first pony’s name was Patches, and we each had our own horse while in high school,” Doreen says. Therefore, it’s no surprise that these sisters would be replicating images of horses in artwork for the Kentucky Derby Festival. In 1994, they created their first KDF poster and just finished their fifth poster for this year.

However, Thunder Over Louisville is at the top of their must-see list, and April has easy access to the best spots for viewing the fireworks show. “The Thunder Corporate Village is on the Humana Witherspoon and Humana Waterside garage tops, and the Kentucky Derby Festival leases those spots for Thunder Over Louisville. We have corporate tents up there, and we have VIP tickets that we sell to the public, so we watch it from both of those places, which is amazing. You literally feel every boom,” she says.

veryone loves the hot brown, but the cooking and assembly can be too cumbersome when you’re cooking for a crowd. Get creative with this steaming Hot Brown Dip that tastes just like the sandwich, but in a rich, scoopable form.

Hot Brown Dip Serves: 12

Ingredients 8 ounces cream cheese at room temperature 1/4

cup plain Greek yogurt

1/4

teaspoon grated nutmeg

1 1/2 cups shredded white cheddar cheese, divided 2 cups chopped cooked turkey 1 Roma tomato, seeded and chopped 6 slices bacon, cooked and crumbled cup grated pecorino romano cheese 1/4

Crackers, sliced baguette, or crudite, for serving

Instructions Preheat oven to 350°F. In a bowl, stir together the cream cheese, yogurt, nutmeg, 1 cup shredded white cheddar, and turkey until thoroughly combined. Transfer to a baking dish and spread evenly. Top with the remaining cheddar cheese, tomato, bacon, and the pecorino romano cheese. Bake at 350°F for about 30 minutes, or until hot and bubbly, and lightly browned. Serve with crackers, baguette slices, and crudite for dipping.

ince her move to Louisville four years ago, Kendall Merrick, a native of Loudon, Tennessee, has been enthusiastic about Derby events around town. “So far I’ve been to galas, Thunder Over Louisville, fashion shows, pre-parties, Derby-day parties, and the races. This year, my list includes Festival Unveiled, a Derby-themed party to benefit the Family Scholar House, and Celebrity Day at the Downs,” she says. One of Kendall’s most memorable moments happened after the Derby when American Pharoah returned to Churchill Downs as the Triple Crown winner. “As luck would have it, I was standing in the perfect place, so close that as American Pharoah paraded through the paddock, I was able to take a photo of the engraved nameplate on his halter. I still can recapture my emotions when I think of the awe and fun I had that evening.”

hen Terryl McCray thinks about Derby, fashion takes precedence over horse racing and Mint Juleps. Terryl’s love for black and white attire ties in well with her classic and neutral style. Terryl and her sister-in-law get a jumpstart on picking out their Derby outfits by starting in January. Whether she is searching for an outfit for Derby, Oaks, or the Louisville Urban League Gala, Terryl says her objective is to find an outfit that no one else has. Last year, the Hat Girls and Terryl’s husband Scooter McCray created a design for her Derby hat. “I told Rachel (Bell of The Hat Girls), ‘I want you to go as wild as you can go,’” she says. Terryl, who has been attending Oaks and Derby for 15 years, has 25 to 30 hats that she displays throughout her home. “I treat them like artwork,” she says.

essica Pollio is a longtime Derby enthusiast who has been attending Oaks and Derby for 20 years and embraces every part of the tradition. She spent her first Derby in the infield while in college but snagged the good seats when she started a job at Churchill Downs in the marketing department after graduation. “In the last two years of working at Churchill Downs, I was in charge of suite services so I was in the really pricey seats, but I was working,” she says. She now works in sponsorship sales for the Kentucky Derby Festival. Jessica looks forward to attending the Fillies Ball and says her favorite part of the event is the crowning of the Kentucky Derby Festival Queen. “It is very traditional, and it is done by the spin of a wheel. There is a ceremony that goes along with it, and it is exciting to watch,” she says.

T

here aren't a lot of dishes that Kentucky can claim to be home to, but Benedictine is definitely one of them. Channel your inner Southern belle and serve these vintage-inspired tea sandwiches with all the sweet iced tea you can brew.

Benedictine Tea Sandwiches Yields: 16 sandwiches

Ingredients 2 large cucumbers, 1 peeled and seeded, 1 peeled and thinly sliced 2 green onions, white and green parts, roughly chopped 2 8-ounce packages cream cheese, at room temperature 2-3 tablespoons mayonnaise 4-6 large spinach leaves, stems removed, roughly chopped Salt, to taste 8 slices of pumpernickel bread 8 strips of bacon, cooked

Instructions Grate 1 cucumber with a box grater. Place in a sieve over a bowl and let drain. Squeeze out excess moisture. Place green onions in a food processor. Process until finely chopped. Add cucumber and spinach. Process again. Add cream cheese, mayonnaise, and salt. Process until smooth. Refrigerate, covered, until needed. To assemble the sandwiches, divide the cream cheese mixture evenly between 4 slices of bread. Break the strips of bacon in half and top each sandwich with 4 halves. Layer the cucumber slices over the top, then cover with the remaining four slices of bread and press down firmly. Cut away the crusts. Slice the sandwiches diagonally in half and then diagonally again, to make triangles. Serve immediately.

Combine the ice creams and milk in a blender and blend until just smooth. Add the bourbon and mix until well combined.

A

lthough originally from California, Lisa Higgins quickly caught Derby fever once she moved here 25 years ago with her husband Sean, a Louisville native. In February 2008, the couple founded Mint Julep Tours and Transportation. “We are now celebrating our 10th Derby season,” Lisa says. “When we started out we had one 14-passenger bus and a van — both of which we parked in the driveway of our home. I used the kitchen table as my office. Sean and I both sold the tours, drove the vehicles, served as guides, and even washed the buses. I have truly done it all. Now we have 22 vehicles,17 fulltime office staff, and 35 tour guides and drivers. Our tour guides are all ages, are very accomplished people, and have a variety of

professional backgrounds.” Mint Julep Tours offers local sightseeing tours and getaways to Kentucky distilleries, wineries, horse farms, and breweries. The company also offers exclusive customized tours and what Lisa calls “elevated experiences.” “Each of our elevated experiences takes you on a one-of-a-kind adventure,” Lisa says. Last year the company showed off Kentucky’s charms to 30,000 guests. The weeks leading up to and after the Derby are especially busy, she says, with Oaks Day being the busiest as people will take a morning tour and then go out to the track. “Over the years, I have seen that people come to the city earlier before Derby and leave later after the weekend is over,” she says.

“Sean and I have been going to the Derby for 25 years,” she says. “I love the hats, the energy of the city, and the traditions that go with the event. And, of course, a mint julep.”

AGE 26 JOB Exercise Rider at Winstar Farm SHINING DERBY MOMENT While I worked for Dominick Schettino I was fortunate to work with the 2017 Kentucky Derby winner, Always Dreaming, before he switched trainers. HOW RIDING KEEPS HER FIT Riding, especially galloping race horses, is a very physically demanding exercise. Not only must you have strength, but you also need stamina. These [horses] are fit, lean, athletes, so you need to be one as well. HORSE TRAINING We normally train four to five hours six days a week, and I normally ride about 10 horses. Each horse has a unique training program designed for its individual needs. I usually spend about 20 minutes riding each horse. BIG WIN Running. I have always hated running, but now I’m starting to really love it. I plan to run in some 5Ks this year with the ultimate goal of running in a mini marathon eventually. BIGGEST EXCUSE Being tired or not having time. I currently work two full-time jobs. Both riding and serving at a restaurant. It truly is hard to find time to work out, and sometimes I’m just too pooped. Thankfully, I get paid to work out with my job so even when I don’t make it to the gym, I still get in some form of activity.

Your day wouldn’t be complete without a stop along the Kentucky Bourbon Trail, and the Bulleit Frontier Whiskey Experience at Stitzel-Weller Distillery is the perfect place for you to land next. lice Bridges wears many hats, including on occasion a fancy Derby hat as a Churchill Downs Host ambassador, welcoming horse owners to the track on Oaks and Derby days.

We asked her for her top five Derby moments: 1. I have been hosting horse owners with the Churchill

Alice Bridges is a convener, communicator, coordinator, facilitator, community advocate, fundraiser, marketing manager, and health and wellness champion. But throughout all those roles, Alice says “her passion is helping all people to thrive.” Alice started her own firm, AOB Consulting, with a focus on community health and creative initiatives that address the root causes of poor health, especially among the most vulnerable.

Downs Host program since 2004, and I have the amazing opportunity to walk with the owners and their horses from the backside to the paddock and back to the owners’ boxes to watch the race. When they come around the track with hundreds of thousands of people watching, you see the twin spires, and the people are singing My Old Kentucky Home … if you don’t get emotional, I don’t think you’re living. 2. I love going to the backside in the early morning, being around the barns and watching horses exercise. There is just that whole flavor and culture. 3. The outfits. Seeing people dressed to the nines in their finery and of course their hats. Seeing everyone turned out in such spectacular fashion, as well as the weird outfits. 4. To be in the paddock right before Derby starts, right before they’re saddled up. There is this tension because so much is riding on this. The owners and VIPs are all packed into the paddock, and you’re surrounded by the crush of people, news cameras, and media. It’s just thrilling to be in the center of it all. 5. Mint Juleps — I don’t drink them any other time of year, but I love them on Derby day.

This two-sister team has cornered the market on catering to a unique industry. It is their job to make sure our city’s private jet guests are living beautifully on the tarmac or inflight as they say goodbye to the Bluegrass State. Marci Epperson, owner of Beha Catering, and Mendy Frohlich, owner of cherryredevents (the bar side of Beha Catering), are third generation caterers. On the Saturday and Sunday of Derby weekend, the company fills about 200 catering orders — most of which aren’t placed until Thurby. “We have 48 hours to go through hundreds of orders. We start at 7am on Saturday morning, and I don’t return home or get any sleep until late Sunday night . . . I probably put in 35 hours over those two days alone,” Marci explains. “There are a lot of moving parts, but we’ve gotten it down to a science over the years. When people fly away, they are leaving our city eating our food,” Mendy says.

COLLEEN MCCARTHY CLARKE: MIXING UP DERBY’S FAVORITE By Ashli Findley Photos by Patti Hartog

C

olleen McCarthy Clarke didn’t seek to become an award-winning mixologist. Perhaps you can say the skill for mixing drinks simply found her. She had moved to New York City to study acting. Yet, around 1996, she got her first bartending gig on the Upper East Side of Manhattan at the French restaurant Gertrude’s. “I didn’t even know how to make a cosmopolitan,” Colleen says with a laugh, “but the general manager (Marion Mauer) gave me a shot, and I just took off from there.” With the talent she developed, she moved back to the Louisville area and, in 2010, started working as a bartender at Martini Italian Bistro. She’s been the head bartender there for the last four years and attributes much of her recent success to her mentors Gary Gruver and Jim Davis. It was those mentorships that helped Colleen make the jump from bartender to mixologist. Most notably, Colleen is a repeat winner of the Four Roses Bourbon Rose Julep Cocktail Competition, where creative mixologists put their own spin on the Mint Julep. In her first year, 2015, Colleen swept both categories — Judge’s Choice and People’s Choice. In 2016 and 2017, she won first place in People’s Choice. Four Roses then asked her to compete in the Kentucky Bourbon Festival in Bardstown, Kentucky. She won Grand Champion in 2017, competing against other top mixologists representing a plethora of Kentucky’s famous distilleries. “Louisville’s got a lot of talent,” she says. “If we lift each other up, we’re only going to get better. I just like to say, ‘We’re all in this together…to keep our craft elevating.’”

When it comes to podcasts, Linda’s back to bourbon – listening to The Bourbon Daily on the ABV network and The Bourbon Show. “They talk about different things going on in the marketplace,” Linda says.

llie Troutman has Derby planning down to a science, from attending the Barnstable Brown party to choosing the most appropriate footwear and fabulous accessories. Ellie has been around horses all of her life. She was a trainer for 33 years and still shows Arabian and Ranch horses. Today, she is the owner of Windy Meadows Equestrian Center, a horse farm where two movies starring Jon Voight, alongside Ellie’s horses, were filmed. For years, Ellie has shared her love of horses by offering programming for underprivileged children who want to learn to ride. In addition to her work with horses, Ellie is the author of The Tails of Windy Meadows, a children’s book about a day in the life at the farm as told by the horses. Her second book, Goodbye Horse, is due out soon. She is the owner of two shops in LaGrange — the boutique Absolutely Fabulous and a toy store, The Treasured Child. Ellie’s seven things are sure to prepare you for the upcoming Derby season.

Ellie never takes on Derby season unprepared. For her, the season sometimes starts in late fall when she begins buying for her boutique. She lays out the entire season and plans accordingly using a combination of planner, sticky notes, and large desk calendar.

“I get my makeup done with Chanel or Dior and they will give you tiny samples of your makeup, and you can also make tiny samples yourself,” Ellie says. “A lot of women forget that you can only have a 12-inch bag at the track, so don’t waste your space trying to carry all of this stuff around.”

Ellie has several vintage equestrian jewelry pieces, including one from the late 1800s and another originating from Russia that she interchanges each season. She also relies on Kentucky artist Lee Parker of A Little Silver Lining to design pieces for both personal use and her boutique.

“Every year I buy a hat, fascinator, and ball cap because sometimes you just get tired of wearing that great big hat and the fascinator is easier to deal with. By the end of the night I can pull my hair back and put on a sparkly, cute ball cap,” Ellie says.

“It’s going to sound lame, but I love Gucci because it has the horse bit as part of its logo. I also like Chanel,” Ellie says. “They’re classic, and I deal in classic.”

For Ellie, no accessory is boring or expected. Beautifully detailed handbags like those designed by Mary Frances are Ellie’s go-to for Derby. “It starts a conversation because that’s what Derby is about. You have a long time between those races, maybe 20 or 30 minutes before a race goes off, so those conversation pieces are crucial.”

I

f you are looking for the greatest two minutes in sports, I’d stick to the Derby. But if you prefer your sports on the meandering, cigar-smoking, bourbon-sipping side, the Great Steamboat Race is the Kentucky Derby event for you. Since 1963, the Belle of Louisville has challenged other classy vessels to cruise the Ohio River in a friendly battle for an odd prize: a set of silver-plated antlers. The Great Steamboat Race, however, isn’t your only opportunity to experience the legacy of the steamship — you could take a river cruise. The Belle and her counterparts have a rich history along America’s rivers. Since 1787, steamboats have been used to move precious merchandise such as cotton, sugar, passengers, and bourbon up and down the rivers of the American South. Rosemary Miller, retired general counsel for JCPS, and her boyfriend Mike Veach, a bourbon historian, recently returned from a seven-day cruise on the American Duchess, one of the American Queen Steamboat Company’s regal vessels that provide river cruises throughout the South.

“I’m not typically a cruise-type of person,” Rosemary explains, “but last summer Mike and I went on a bourbon tour cruise on the American Queen up the Mississippi and Ohio rivers — from Memphis to Madison, Indiana — and had a blast.” So, when Rosemary saw a Black Friday two-for-one sale for a river cruise on the Duchess, the American Queen’s smaller sister, she jumped on it. For $2,000, the boat offered travel from New Orleans to Memphis on a seven-day cruise of the lower Mississippi, stopping along the way to offer daily excursions in tiny river towns of days gone by. The deal allowed her to upgrade to a suite over the paddlewheel, which included a spacious room with a sofa and stand-up shower. Although the cruise was in January, the weather was warm enough for the couple to sit on their private veranda and enjoy a slice of history. Most of the cruising occurred at night while the passengers dined in the allinclusive dining hall, hobnobbed at the well-stocked bar, or chatted history with

the “River Lorian.” There were events such as trivia, a scavenger hunt, and musical theater to choose from if they were feeling social. During the day, the couple embarked on historical tours up the riverbank at each port of call. Each night, they returned to the grand dining hall for dinner and relaxation. It was the trip of another era, of a world long gone. “Sitting on the ship, going all of eight miles per hour down the river, you can convince yourself this might have been 100 years ago. Well, besides the fact that you could go downstairs and get a fabulous latte from the machine.” Sounds like the best of both worlds.
