I

t’s been one the strangest years in living memory. Nonetheless, nature continues as it always has. That means as long as the sun shines and the rain falls, the backyard honey-do list will continue to grow, and at the same speed as your grass. Typically, that list is nothing more than a few mundane tasks. That is, until the lawnmower breaks or the chainsaw refuses to start. At that point, the list is not only daunting, but also infuriating. Joe Kuhns, owner of Joe’s Engine Shop in Bremen, and his team have made a name for themselves by selling and repairing small-engine lawn and garden machines, parts and accessories. Since opening in 1998, they’ve won several awards, including the Hustler Diamond Dealer award for being one of the top sellers in Indiana. Throughout the years, Joe’s Engine Shop has grown from a small, rented shop to the retail and service shop that it is today.

In the beginning, it was only a part-time gig for Kuhns until he decided to take the plunge into full-time self employment in 2006. “My brother decided to get out of the business,” Kuhns says. “He stopped in and asked if I wanted to buy the business. Then I decided to buy part of his business and stop my parttime job. From there, it just kind of kept on growing.” On the retail end of the business, Joe’s Engine Shop sells brands like Husqvarna, Honda, Mantis and Hustler. Despite being a relatively small shop, Kuhns sells a variety of products like generators, tillers and mowers. He also offers hand-held devices like chainsaws, hedge trimmers, weed eaters and leaf blowers. Kuhns also sells a variety of battery

equipment from DeWalt, Makita and Husqvarna, which he believes is a benefit to his customers. “If somebody has Makita tools at home, then they can just get the bare tool because they already have the batteries,” he says. “It’s the same way with DeWalt.” In his 48-by-96-foot showroom, Kuhns has several kinds of lawnmowers on display, including zero-turns, small

tractors and walk-behinds. Although he mostly sells Hustler mowers, he carries some of Husqvarna’s batterypowered mowers as well. The backbone of the business is the service garage. “We work on any two-cylinder and smaller engine in the lawn and garden stuff,” Kuhns says, adding that his business offers chainsaw and lawnmower blade sharpening. “We can do overhauling engines or replacing the engines or transmissions - just about anything on a lawnmower.”

During the summer, the shop typically has around 50 to 60 engines and pieces of equipment, for both residential and commercial customers, in various stages of repair. Each engine is serviced by Kuhns’ talented team members, each of whom have their own specialties. Despite the number of jobs typically in the works at the business, customers can typically expect a turnaround of two to three days for repairs on machines purchased directly from Joe’s Engine Shop. “All equipment purchased from Joe’s Engine Shop gets priority service, and to ensure quick turnaround on repairs, we stock a lot of parts for the brands of equipment that we sell,” Kuhns says. For machines purchased elsewhere, the wait can be up to four weeks, depending on how long it takes for Kuhns to obtain the necessary parts.

At the end of the day, customer satisfaction is what makes the job fulfilling for Kuhns. “My greatest satisfaction in running the business is [the customers’] surprise at how quick we can do it, and at a fair price,” he says. Undeterred by the 2008 financial crash, she opened the doors to Welcome Mat Real Estate and survived the economic downturn. She has since added three licensed brokers to her team. Chandra Fase, Welcome Mat’s newest member, joined the team in March of this year. She has a degree in marketing from Manchester University, and looks forward to helping clients sell their homes or find new places to call home. Mike Hajek has been a part of the Welcome Mat team since 2013. Hajek grew up on a family farm and learned the agricultural side of business from his father, who was also a licensed realtor.

If a client is on the selling side of the real estate market, Welcome Mat will provide a comparative market analysis showing how the property compares in value to similar properties in the market. Once a seller decides on a listing price, a listing agreement is signed with a preferred sixmonth contract. “If it is to the seller’s advantage to make the property eligible for FHA, VA or USDA, then we do suggested repairs to bring it up to that level,” Flory says. “If

hen Glenn Bailey was five years old, his parents were friends with Pat Fishburn, who owned Fishburn Marina on Bass Lake. Fishburn, who babysat for Bailey in the summertime, often let him tag along as he prepared boats for the water at the start of the season. “We would drain boat covers when it rained, and I learned how to siphon water out of the covers with a hose, which I thought was cool,” Bailey says. “Pat would then pay me by getting me a pop out of the soda machine.” From that point forward Bailey was hooked on marina life, so when Fishburn told him to come back once he got his driver’s license and that he’d have a job waiting for him, he remembered that promise. Bailey worked at Fishburn Marina in high school and at Boats-a-Float Marina through college. After graduating from college, Bailey

worked in sales for a short while, selling VCRs and other electronics. In 1989 Rich Albright, a mechanic friend who had bought Boats-a-Float Marina, offered Bailey a job, and he was persuaded to go back to work on the water. After getting married, Bailey took a factory job but was laid off after six months, so he fell back into the career he seemed destined for. In 1994 Bailey became a mechanic at Culver Marina. When he was invited back to the factory to work the afternoon shift, he was stretched thin in terms of time and energy. Burning the candle at both ends took a toll, and finally Bailey told his boss at the marina that he was going to have to quit so he could work solely at the factory.

Finally, in March of 2002 he chose to branch out on his own. A colleague named

Tom Heineman offered to partner with Bailey in his new endeavor. They found a 2,000-square-foot vacant building that wasn’t on the water, and in May of 2002, the pair started Culver’s Portside Marina. In 2003 they bought a 5,500-square-foot wallpaper factory that was situated on six acres and grew the business from there. “When they started the business, they were just doing service,” says Danyell Lang, marketing and public relations manager at Culver’s Portside Marina. “Over time they have expanded to doing sales, winterization and storage, providing anything that is marine related.” Today Culver’s Portside Marina is a Godfrey dealer, offering Sweetwater, AquaPatio and Monaco pontoons, in addition to Hurricane Deck Boats. Additionally, they are a ShoreStation, Yamaha, Kawasaki and Star EV golf cart dealer.

The establishment also sells accessories such as tubes, life jackets, ropes and parts. In addition, they have a full selection of new and used boats and personal watercraft items in stock. Plus, the shop has a service area with trained technicians. During the busy season, the business employs 27 workers. “You need a big team when you have 350 boats to get out of storage in a few weeks’ time,” says Bailey, who knows that his clients are all eager to have their hoists, boats and docks in the water by Memorial Day weekend. Bailey and his team get to work as soon as the ice melts, usually in February, putting in docks and lifts. They begin to deliver boats in March, depending on the weather. In the fall they reverse the process, picking up boats then taking out the docks and hoists

during the months of September, October and November. The staff at Culver’s Portside Marina goes above and beyond for service. For instance, when the staff members remove canopies, they wash them before storing them. In the spring, they deep clean the boats before delivering them. “A lot of other places don’t detail the boats and deliver them in the condition that we do,” Bailey says. “That’s important to us. We love seeing happy customers.” Bailey and his crew get a breather in December, but in the new year the boat shows begin. There is a show in South Bend at the Century Center at the end of January, and another in Crown Point in February at the Lake County Fairgrounds. Culver’s Portside Marina then hosts an open house on the third weekend in March.

In a typical year, the season doesn’t crank up until June when students are out of school. This year things were different, however, due to the coronavirus outbreak. “Everyone wanted their stuff early because kids weren’t in school, parents were working from home and everyone had extra time on their hands,” Bailey says. “Sales went crazy, too, especially after everyone got their stimulus checks.” Though Bailey appreciated the increase in business, the spike in sales made it more difficult to take care of regular customers. “When a guy is buying a boat today, he expects it to be delivered tomorrow,” Bailey says. “The thing is, you can’t drive a boat off the showroom floor like you can a car. It takes time to get it ready.” Bailey announced exciting news in June when he bought out all the shares and interests belonging to his previous partner, Heineman, making him the sole owner of Culver’s Portside Marina. His wife Dawn is the office manager, his daughter Danyell is the marketing and public relations manager, and his sonin-law Trevor is also employed at the marina. In the wintertime Bailey, who has four daughters, Danyell, Melissa, Sara and Blake, also runs a snowplow business. His hobbies include taking care of his yard, cutting wood and, of course, boating. “The kids always want to go out on the boat or float the river, but I spend a lot of time on the water with my job,” Bailey says. “My favorite way to relax is by sitting on the deck with a beer in hand, listening to music as I watch the river go by.” Culver’s Portside Marina is located at 514 West Mill Street in Culver. As far as human inventions go, the fence is one of the oldest and most versatile. One of the oldest fencing systems known to mankind was created from fieldstones and logs by the Celts in Great Britain nearly 5,000 years ago. The purpose is still relatable, even today - to mark boundaries between fields. This goes to show that some things never change, even if the materials used and the ways fences are installed have changed.

Mullet’s Fencing & Supplies, LLC in Plymouth has been building commercial, residential and agriculture fences in the area for more than 30 years. The original owner, Ken Mullet, opened the business in 1986 and then sold it to pursue another business venture, Northern Indiana Axle in Nappanee. Throughout the next few years, Mullet’s changed hands a few times. Eventually Mullet himself approached some personal friends and asked them to consider buying it.

“He just said that us boys would do good with it,” says Jerad Borkholder, a current co-owner. “He really had a longing for someone to take it and keep it going, and to make something out of it. That’s what happened. We ended up investing in it.” It proved to be a good investment for Borkholder and his brothers, and an opportunity for which they are still thankful to Mullet.

“It’s unique that Ken got us boys into it he kind of pressured Reuben, David and me into buying it,” Borkholder says. In time, a couple friends joined the brothers in the business. “You tell Dwight how you want it, what you want to see, what kind of fence you want and what you’re trying to accomplish with the fence - holding animals or ponies, or if it’s decorative,” Borkholder says. “After that, it’s a matter of scheduling the Mullet’s Fencing & Supplies team to come out and install the fence. If you’re OK with the quote, we’ll be out in two or three weeks.” Service is not the only thing that Mullet’s offers. The business sells fencing parts and materials for DIYers, equine and

Dave Lambright, owner of Dalam Welding in Topeka, Indiana, says he has had many loyal customers since his business began in 1995. “We have had a lot of repeat customers, and that has really helped the business,” “I worked as an electrician for Forest River Lambright says. “People keep coming back. for 16 years,” Lambright says. “I learned We now have nine employees.” welding when I was 13 years old.” Lambright says he previously worked in the recreational vehicle industry.

good work there.” Lambright says Dalam Welding enjoys repeat business from farmers, as well as individuals who live on or near lakes. “We have a welder shop at our residence,” Lambright says. “There are quite a lot of lakes near our shop, so that really helps business. People need parts for their boats and engines - things they need to fix.” Positive word of mouth has also benefited Dalam Welding. “We get a lot of referrals from people that are happy with our work,” Lambright says. “We do welding work on pontoons, boat lifts, docks and piers. We work on the hinges of the pontoons, and work on hay bail conveyers. We also repair boats, work on chicken tractors, and make construction scaffolding.”

Dalam Welding also sells a wide variety of parts in the company shop. “We sell stainless steel bolts, nuts, hinges and latches,” Lambright says. “We also sell V-belts, bearings, sprockets, pins and trailer hitch couplers.” Lambright notes that business this year has been particularly strong.

“I like the fact that you can go uptown in a horse and buggy, and after you get there everything is easy to get to,” he says. “You can walk up to all of the stores. There are a lot of friendly people, and it’s great. I really like it.” Lambright notes that city leaders in Elkhart have been kind and supportive of his business.

“We built a barge to clean the north branch of the Elkhart River,” Lambright says. “We picked up some logs and cut them up. “I don’t know if COVID-19 has had a lot to do with it, but we have had a lot more new customers from different places,” Lambright says. “There are a lot of customers finding out about us. I think people are wanting to visit rural areas, and we have had a lot more walk-in customers than we have ever had before. We also get a lot of customers from Huntington and Warsaw, Indiana. I’ve talked to other business owners around here, and they have said they have been swamped with business.” Lambright’s family helps him in operating the business. “My wife Marilyn does the accounting, taxes and paperwork,” Lambright says. “My sons, Karl, 19, and Lavon, 17, help me with the welding and the business. My daughter Malinda, 14, works with the shop’s parts, does the pricing of the parts, and handles the shipping. My daughter LouAnn, 11, works with the shop’s ring rollers. She gets up at 6 a.m. to do that work.” Lambright is proud of the work Dalam Welding has done for construction scaffolding. “We have received a lot of positive words from construction people that like our scaffolding,” he says. “I also have heard people say a lot of nice things about the attic stairs we do. We build pull-down attic stairs for garages. They are for a 12foot ceiling height, and are walk-up stairs. They are self contained, and they have been very popular.” Lambright says he loves Topeka and its residents. The purses, belts, wallets and other products sold at Silver Star Leather start out as hide that many people would probably throw away. Where others may only see a piece of leather, Loren Yoder, owner of Silver Star Leather, sees a beautiful fashion item in the making. When a piece of leather - whether it’s cow, crocodile, cobra or frog, to name a few of the options - arrives at the shop, Yoder begins to devise what he can make from it.

“The thing I like about this is that it is so endless,” he explains. “We’re just scratching the surface as far as the different types of products we can make, and the fashion industry as far as belts, wallets and purses. If you’re bored, it’s your fault. Just come up with a new idea and try it. It’s too much fun.” Even though the business offers dozens of creations, both wholesale across the nation as well as retail, Silver Star Leather is known for custom products. “I’d say that the most popular is probably gun holsters and knife sheaths,” Yoder says. “We also do a lot of custom wallets of every shape and size.” Yoder doesn’t work exclusively with domestic leathers. Some of his hides come from around the world, and all are internationally certified through CITES, an international organization that

oversees and protects endangered plants and animals. Therefore, the materials are legal to work with, even the extremely rare and exotic leathers that come from protected breeds like elephants, stingrays and eels. “Everything is so tightly regulated,” Yoder says. “CITES knows where it is, if it’s legal, where it’s going and who has it. I keep my paperwork until the hide is gone because each hide has a CITES tag on it.” The custom projects provide Yoder and his team with valuable inspiration. “My goal is to continue to do custom stuff where you not only help people with their little individual project, but you also gain knowledge,” he says. “There are so many variables in the custom world and that’s what got me started - and it’s something I don’t want to lose.” Silver Star Leather doesn’t only offer standard leather fashion goods. and wallets for those,” Yoder says. “That’s a hit for some people.” There is no denying that Silver Star Leather products are eyecatching. Surprisingly, however, all of the items are extremely durable. “I had a guy here who had a belt that was 10 years old,” Yoder says. “He must have bought it just soon after we got serious about this. He was still wearing it - he needed another hole in it. Ten years old and it was worn, but structurally, you’re looking at another ten years. If you buy them at a box store, they look nice, but if you wear them for a year, they start cracking and fraying. If it’s real, solid leather, there’s nothing to fray. It’s a solid chunk of leather.” Most of the fashion items Yoder makes require minimal maintenance. However, he does carry cleaning wipes and leather oils. As unique as the business is now, Silver Star Leather had humble beginnings as a harness shop that Yoder, who is Amish, purchased in 2006. At that point it was only a part-time job, something for him to do after he came home from his full-time factory job. A few years after purchasing the business, his wife Dorcas decided

to have some fun with a spare piece of leather. “One day we found a piece of leather that I had bought somewhere and it was soft,” Yoder says. “With this piece of leather, she made a purse. It wasn’t terribly impressive, but it was a purse. That’s what got this whole thing started as far as this type of business.” Eventually, Silver Star Leather drifted entirely into the artisan realm and Yoder handled the harness-making side of the business. “In 2012, I went full-time out of the factory,” he says. “Every year is a little bit more.” As time passed, Yoder hired three full-time employees. His daughters, Jennifer and Jody, also work in the shop part time, and both dream about taking over the business some day. Until then, Yoder strives to encourage their love for the creativity and craftsmanship required for the business. “With something like this, it’s important to enjoy it,” Yoder says. Social drinking, despite its common connotation, isn’t limited to alcohol and bars. As any hipster will tell you, it also refers to tea and coffee. There’s a wide variety to choose from in this area, too. Adventurous drinkers are constantly on the lookout for unique flavors and different ways to brew them. The crowning glory of coffee and tea culture is in coffee shops. Each one has its own personality. Although there are many in the area that are definitely worth a visit (there are far too many great options to list here), here are six to check out the next time you crave a hot cup.

1. Culver Coffee Company If you’ve ever wanted to sip a coffee while enjoying lakeside breezes, this is the coffee shop for you. Located directly across from Union Township Park, this shop is easy to find and offers a beautiful view. Plus, it has been open for 17 years, which is extremely long-lived for a cafe. Currently, there is no indoor seating available due to the coronavirus pandemic. construction - because construction is just not my type of work.” Mullet enjoyed making the switch to woodworking. “My father Jonas bought a moulder to make interior wood moldings, and some other small machines to assemble wood doors,” Mullet says. “We started out just part time in 1995, with just some days working in the shop and other days doing construction. I have never regretted doing construction first, because it has helped a lot. It helps us know what our customers’ needs are when they put their orders in.” Mullet decided to purchase the business later. “In 2003 me and my wife Eva bought the business, and have been blessed with good employees over the years,” Mullet says. “We have been able to meet a lot of nice people to do business with.” Mullet also works with other family members. “Two of our sons and two nieces are working here at Mullet Custom Interior,” he says. “We have a great lineup of employees that all want to do their job, and that is what makes a good company. It also makes my job a lot easier when you can depend on them.”

Mullet has a solid business plan that has worked for him through the years. “Our business plan was always to have our customer in mind first, because we deal with a lot of homeowners, contractors and retail customers,” Mullet says. “In 2007, a choice was made to add a 12,000-squarefoot building so we could be more efficient on how we do things, and consolidate more to one building. Before, we were working out of about three small buildings, but we had to start somewhere.” Mullet says his company makes a wide variety of wood products. “We primarily focus on whole interior trim and door packages,” he says. “The people can order whatever style of door or profile of trim they want, and we are happy to make it for them. The stain choices are totally up to each customer, and we will also do custom stain matches if needed. One thing that works good for the customer is that they can let us know that they have a house that needs to be measured for trim. We will then schedule a date and time to come out and measure.” Mullet and his staff work with their clients extensively to make sure each one is happy. “We will make everything from stairway parts to a wide range of hardwood flooring to a choice of doors and trim, and will also help design it,” Mullet says. “We are able to produce hardwood flooring to be exactly what the

customer wants, because we manufacture it and stain it to whatever they want.” Muller says another part of his business is making wood parts for the RV industry. “With two moulders, we are able to keep up with demand at this time, and are thankful for all the work we have,” he says. “Overall, Nappanee is a great community for the working-class people, as there is work out there for everyone.” Mullet is happy life is starting to return to normal despite the effects of the coronavirus outbreak on businesses throughout the state and country. “Even with this COVID-19, I would say that we could still work some more, but we were real glad Governor [Eric] Holcomb opened up things when he did,” Mullet says. “People needed to get back to work, and we were also allowed to have church again, which is very necessary. Dr. Maria Montessori was a pioneer in the fields of psychology and education around the turn of the 20th century, a time when women were still limited by traditional expectations. Yet in 1907, she was asked to open a day care for inner-city children aged 3 to 7 in Rome. Instead of simply providing a place for kids off of the streets, she developed a high-quality environment and curriculum using five key areas of learning - practical life, sensorial, language, mathematics and culture. Within twenty years, Montessori’s methods had grown and spread across the western world, and in 1929 she established the Association Montessori Internationale to protect the integrity and high standards of her method. Since the 1950s, more than 5,000 Montessori schools have sprung up across the nation, including Max’s Playhouse in Culver, owned and founded by Brandy Pohl. As a Montessori-certified teacher, Pohl has seen fantastic results from her program. “Where your preschool focuses on 1-2-3s and ABCs, a Montessori curriculum focuses on the whole child, knowing that the child needs to know where they’re from and the world around them,” Pohl explains. “It builds the confidence in a child so they can learn things on their own.” Pohl was introduced to the Montessori school system when she needed child care for her young daughter, and traditional methods simply weren’t cutting it. “Something didn’t sit right with me the whole year that she was going to this program,” Pohl says. “Finally I told my husband, ‘I think we need to find a new program. I don’t think she’s engaged.’” In contrast with traditional day care, the Pohls were very pleased with how their daughter interacted with the Montessori day care they found. “My daughter was instantly attracted to everything on the shelf and just wanted to explore,” Pohl says. “The curiosity was there.” 56 / THE LAKES MAGAZINE / AUGUST 2020 / thelakesmagazine.com


Over the next couple of years, Pohl’s daughter experienced rapid mental development thanks to the highly individualized Montessori system. “The Montessori curriculum is a very systematic approach,” Pohl says. “There’s an order in which you teach everything. It’s really based on where the child is at in the curriculum. Every child goes at a different pace, and they move on when they’ve mastered certain parts of the curriculum.” By the time the Pohl and her husband moved to Culver in 2011, she was sold on the Montessori method. Soon after moving they realized that the area was in desperate need of quality child-care providers. “There was only one day care in Culver itself, and it was based off of

the academy schedule, so even though it was a day care, it was more like a preschool,” Pohl says. “It was only open nine months a year.” In time, Pohl decided to open a yearround day care. “We came up with Max’s Playhouse just off of Lake Max,” she says. Max’s Playhouse originally offered a three-year program for preschool children, based off of the traditional Montessori method. However, in the eight years that it has been open, Max’s has expanded to include an after-school program and summer child care for school children up to 12 years old. Since Max’s Playhouse is well established in Culver, Pohl’s next step is to open a Montessori-inspired facility this summer at the elementary school in North Judson, for kids in preschool and elementary school.

“We wanted to go into Starke County and help because it’s considered a childcare desert, and there’s only one childcare spot for every three children who need care right now,” Pohl says. The program will be called SEEDS (Schools Engaging Early Development) Early Learning. The community is excited to have a high-quality, stateapproved program, and representatives from the Starke County Economic Development Foundation have shown their support. “I want to thank Ron Gifford and Larry Wickert for listening and caring about early learning and child care in their county,” Pohl says. Since opening in July of 2017, Burr Oak Whistle Stop in Culver has become a

unique staple for Marshall County. The shop, offering one-of-a-kind items any antiquarian would love, has had people from all over the globe find the perfect thing to complete a cozy, welcoming home. History plays a big role in Burr Oak Whistle Stop, but it doesn’t come from the antiques alone. The store has a lot of local and personal significance, says owner Kevin Overmyer. Customers come in on a regular basis to share stories of “the old days.” It happens so regularly, it

has become Kevin and his wife Melodie’s favorite part of their jobs. “They remember when it was a general store — the meat counter was in there. The post office was in there,” Overmyer says. “I remember when we were kids, when trains would stop and the engineers would come [to the general store] and get a sandwich and a pop for lunch, and then they’d get back in their engines and ride off again.” When the Overmyers sold their generations-old family farm in 2016, it

made perfect sense to take over 15295 State Road 17. Kevin spent plenty of time as a kid growing up in Burr Oak. He has many fond memories of riding his bike up to the general store with his friends.

Years later, after the general store was closed, and ownership was changing fairly often, it was disappointing to watch a community hub fall into disarray. “We had the opportunity to refurbish and rehab it and bring it back to life,” he says. “We salvaged it.”

Today, the space has been transformed into a clean, beautiful showroom with antique furniture galore. Customers also often appreciate the home decor, with 1803 Candles, gifts and various signs. Their signs are a big seller. Burr Oak Whistle Stop carries signs for nearly every one of the 26 lakes in Marshall County, in addition to a wide variety of Christian signs with Bible verses made in the United States. If you purchase some of their featured bowls or a MudPie, you can benefit charity and yourself. You go home with something new that you love, and certain items’ proceeds go to missionaries in Turkey or the American Cancer Society. The bowls are items from Turkey, and the MudPies benefit the American Cancer Society. The Overmyers’ charity does not stop there, however. Kevin says that


they try to do as much as they can to give back on a local level, too, by donating to all kinds of different auctions. “We try to help out as much as possible,” he says. “We’re just here to help the community as much as we can and provide good products for those organizations [to] help raise money for their efforts.” The care that they show for the community extends to their guests, as well. Kevin recounts multiple customers who were visiting from outside of the United States that loved their visit to Burr Oak Whistle Stop. People from Mexico, Brazil and England have all found things to love within the store. It’s not hard to believe, though, because, with an emphasis on customer service, patrons from all over are sure to feel welcomed. “They’re part of what we’re doing. If it weren’t for our customers, we wouldn’t have our business,” Overmyer says. “We go above and beyond to make people feel welcome. In the wintertime, we offer free coffee or hot cocoa. It’s a relaxing place, and we try and be as much help as possible.” Truly a family-centered business, on any given day, you may interact with Kevin, Melodie, their daughter Suzanne Barth, or one of the Overmyers’ granddaughters, Hannah and Grace Barth.

Main Street Diner Is Quickly Becoming a Knox Favorite Writer & Photographer / Angela Cornell

Small-town culture is a world unto itself. The center of it is typically the little diner downtown, where people go to chew the fat — both literally and figuratively. Birdie’s Main Street Diner in Knox is like that. “I have a group of guys come here every morning, probably eight of them, and they solve the world’s problems right there at the table. Tomorrow they’ll have a different problem to solve but they’ll get it done,” says owner Phyllis Foust with a smile on her face. “I stand behind the counter and I just jump in when I feel it’s needed and they know I’m going to. It’s fun and I enjoy watching all that stuff going on.”

As someone who has always led an active lifestyle, Foust knew she wanted a retirement project. When the restaurant that Howard had worked in went on the market, Foust pounced on the opportunity. She reopened it as a small family diner and named it after her mother.

Foust, a life-long resident of Knox, was introduced to the restaurant business early in life. Her mother, Birdie Howard, supported their family as a waitress for many years in the building that Foust now owns.

“When I bought this place, I felt like I had come home,” Foust says.

“Many years ago, when I was a little girl, she would walk here to work,” Foust says.

“What I really see for this building is a place for the younger [grandkids] to come after school or when they’re off, they can have a job,” she says.

As Foust grew up, she knew she wanted to follow in her mother’s footsteps. “I’ve always worked restaurants,” she says. Then in 2001, she, along with her daughter and son-in-law, opened her own. She worked in Castaways until retirement, when she passed the baton of the Plymouth

Understanding the importance of family legacy leads Foust to have an active influence in her grandchildren’s lives.

Even though Birdie’s has only been open since February 2019, it has developed a reputation for quality food and service. “If you’re a customer here, you’re going to be treated just like family,” she says.

Her staff, which includes family members like her daughter Jessica, and long-time friends, have played a significant role in helping Birdie’s take off. “We’re kinda close-knit,” Foust says. “We’re very small — it’s family-oriented.”

Birdie’s can be best characterized as a comfort food diner. The menu is full of American favorites like pancakes, biscuits and gravy, and skillets for breakfast. For lunch, there are options like burgers and fries and their big-ticket item, soup beans and cornbread. On Mondays, however, the menu switches to include Mexican foods.

There’s a two-part secret to what makes Birdie’s so well-liked. First, they serve only high-quality food. “Everything here is made in the kitchen. We don’t buy anything that is pre-cooked or pre-made,” Foust says.

It’s a commendation that speaks highly of her incredible chef, Manuel Ruiz. “In my opinion, I have one of the best cooks you’ll find,” she says. The second part of Foust’s secret sauce is her genuine love for making sure her customers have a wonderful experience. The comfortable family atmosphere is something that her guests have come to love and expect, too. “I think that’s the best part for me, watching people talk and have a good time and spend time with their loved ones,” she says.
