The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

RESTAURANT BUTCHERY & WINE

Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. A comprehensive wine list, and friendly service make Butchery & Wine a top selection!

The café offers a menu that’s always fresh, innovative, and guided by the Bristol’s stringent vision towards perfection---always! The elegant wooden retail counter displays the freshly baked cakes that are always ready to be taken away. The Tort Bristol, for example, is a tribute to hotel’s traditions; this signature Warsaw cake comprises layers of Polish plums, hazelnut cream, light sponge cake, and rich chocolate which endow this with its reputation of being a true Warsaw phenomenon. RESTAURANT CZERWONY NAZWA RESTAURACJI WIEPRZ

The last secrets of communist cuisine

Czerwony Wieprz, or the Red Hog was in its historical past a restaurant for the communist party elite, where surrounded by chandeliers, portraits, and flags, once feasted the likes of Lenin, Breżnev, Fidel Castro, and Mao Tse Tung! The walls are replete with portraits of old communists, and the dishes have names such as Delicacies of the Polish People’s Republic, a selection of pate, luncheon meat, blood sausage, and kielbasa; varied pierogi “made from rationed flour”; and Baltic herring and game pate for the “Dignitaries and Bourgeoisie”. This is Polish cuisine in fact at its very best, with main dishes that are outstanding--examples include the oven roasted duck, served with cherry sauce, roasted apple, and beetroot. The restaurant’s fame continually attracts celebrity guests; important government leaders, various sports personalities, and you!

The highest quality regional and organic produce, as well as deep collaborative relationships with local producers bestows an unsurpassable dining experience. The sommelier enables an appropriate selection of wine; there is whiskeys and cocktails as well prepared by award winning bartender, Karol Bobiński. An exceptional place indeed! Specials: Tuesday-steaks, meats- beef, lamb, venison; Wednesday, Thursday— large selection of fish and seafood.

RESTAURANT ELIXIR NAZWAbyRESTAURACJI Dom Wódki

Elixir by Dom Wódki is unique, being the first Polish restaurant to deliver firmly on the idea of pairing specific vodkas to complement the ingredients and flavors of each dish. Poland’s rich culinary heritage includes centuries of artisan distilling, and vodka is recognized the world over as one its most iconic products. The selection of over 250 vodkas, honey mead and liqueurs, is well complimented by the Chef’s modern interpretations of Polish cuisine; classic recipes made with regional products and prepared with novel techniques. The approach here --combining dishes inspired by the culinary traditions of different regions of the country, with alcohol--vodkas instead of wine—is culturally natural to the Polish. Items such as the spelt dumplings with spinach and goat cheese filling, paired with Orkisz vodka will indeed allow guests to discover Polish dining in a surprisingly refreshing form!

Located diagonally across from the Presidential Palace Giovanni Rubino has become an Italian institution in its own right. Celebrating its 20th birthday in 2011, this outstanding place is where modern Mediterranean fare rooted in traditional Italian has been created by Chef Piotr Rybicki who has been at the helm of culinary affairs since it opened in 1991. This long unfaltering collaboration over the years between owner and chef has resulted in interesting variations such as Pizza Pizzaiolo with Parma ham and arugula, spaghetti with mussels, and the much-in-demand pork fillet with mushroom sauce. With a well-appointed bar which leads to a chic, semi-private chamber, great home-made desserts, a committed and friendly staff, and an endearing value-for-money ethos, Giovanni is where everyone wants to come back to! RESTO & WINOBAR HOŻA

Warsaw’s culinary trajectory has definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the war, the ambiance here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. The team behind stellar restaurants Butchery & Wine and Brasserie Warsaw has teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to bring Kieliszki na Próżnej. Located on Próżna, the center point once of the Warsaw Ghetto, and now ironically at Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with “tapas attitude.” The creative fervor leads with an impressive wine portfolio, from known small and medium-sized producers from their regions, and whilst mainly from Europe the dominant source of wine here is Italy. The main wall of the restaurant is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it converses with a creative menu at this remarkably refreshing place indeed!

The inspiration behind Meza Beirut is the vision of its creator Rabih Chaya who hails from Lebanon and this restaurant, his creation, is his ode to LebaneseMediterranean cuisine. The rich culture and the flavorful legacy of Lebanon should always go together, and Meza Beirut is an apt reflection of this union— combining excellence from the kitchen with a dignified ambience, a welcoming attitude reflected even in the reasonable pricing of its dishes, each made with the highest levels of ingredients and effort at the hands of Chef Wael who is Lebanese as well. For authenticity ingredients, including spices and tahini, are imported from Lebanon, traditional cooking techniques are used, and there is complete avoidance of artificial enhancers. Modern presentations of traditional recipes are what set the place apart and make Meza Beirut truly inspiring!

RESTAURANT SŁODKI...SŁONY

Located on swanky Mokotowska Street, Słodki... Słony, pronounced “swodkey, swoneh” (and which translates to Sweet, Salty), is Poland’s top restaurateur and culinary genius Magda Gessler’s immense imagination coming together to produce gastronomic art of high order. Passion is clearly evident here with over 60 kinds of desserts, cakes, and pastries on the menu; what is different here is that recipes are 100% natural and date back over a century. Not surprisingly sweets were even sent to Pope John Paul II at the Vatican! Just as “Słodki” caters to the sweeter aspects of life, “Słony” caters to the salted, with items such as the caviar served on toast with egg and lemon, salmon in a marinade of green lemon and dill, alongside good old Polish bigos as well. A marriage of immense flavors, traditions, and an enrapturing ambience makes this place a sweet Warsaw experience indeed!

Meat varieties include Hereford, Black and Red Angus, Simmental, in cuts such as bavette, rib eye, and others; there is organic pork available as well.
