The nostalgic spirit that pervades Restaurant Baster derives from its location on Szeroka Street; this is the heart of Kazimierz, Krakow’s Jewish enclave with its rich and varied past. When Krakow acceded to Galicia in the mid-19th century, it evolved alongside Austrian, Hungarian, and Ukrainian influences. This spot, with its synagogues and merchants’ houses was where religious feasts abounded, paving Krakow’s culinary evolution. Jozef Baster, the owner’s great-grandfather, bottled beer here in the 1920s under the auspices of the Hapsburg Archducal Brewery. This inter-woven history is what Restaurant Baster delivers with great aplomb, serving Galician cuisine in its modern interpretations— the pork knuckle steak with kohlrabi and gravy as an example. And the bar still serves its very own ‘Baster’ brand of beer, best relished perhaps on the terrace outside. A wonderful experience!
