ANDREA CAMASTRA

One of Poland’s most talented and progressive chefs today, his accolades include a latest Michelin star for NUTA, and also previously at Senses. He is named amongst the world’s 100 Best Chefs by Le Chef and honored by the Republic of Italy as one of its most renowned culinary professionals.

Andrea Camastra
10

Plac Trzech Krzyzy (Three Crosses Square), in Warsaw’s heart is known for the historic neoclassic church, St. Alexander’s. Today there is another divine attraction here—NUTA, the recent Michelin-star awarded culinary home of the celebrated chef Andrea Camastra! Italian-born, he perfected his natural abilities at top venues across Europe, while also earning his master’s at Oxford. As Warsaw’s good fortune would have it, he chose this city to grace with his creative genius. His inspired creations are parts of set-menus, made with the confluence of sublime artistry, techniques of molecular gastronomy, yet endowed with an artisanal wholesomeness. The name NUTA refers to his philosophy of the ‘note-by-note’ steps of flavors, metaphoric rungs which make one ascend to gastronomic heaven! There is indeed an all-enveloping harmony which one experiences with Camastra’s craft, an unsaid testimony to his ingenuity.

If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are a tasteful amalgamation of cream and strawberry, candlelight, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm at AleGloria; her immense reputation comes from having taken traditional Polish cuisine to new dimensions. Her insights, her creativity, her culinary design, have all made this place one of a kind. Polish goose is a delicacy and Ms. Gessler is a master in dishes made with this; the confit of goose leg with cherry and horseradish sauce; or goose stuffed with dried apricots and walnuts, are examples. With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. A class experience in a monumental setting!

Alewino’s history began as a wine shop known for its focus on smaller, younger, talented winemakers with proven quality. Owners Kasia Blonska and Tomasz Czudowski soon expanded that vision to include gastronomy with the same equation; Chef Daniel Uliczny leads the young talent in the kitchen, while sommelier Damian Zakrzewski advises on the selection of wines. Alewino stands as an example of an unwavering culinary merit, emulated by others as it is now considered the go-to place where the combined expectations of the best wine, delicious food, perfect service, and a relaxed yet sophisticated ambiance are met on all levels. This distinctive amalgamation of outstanding culinary compositions, seasonally varied, along with wine from a stellar selection of over 250 labels, makes reservations at Alewino all but essential. In its lovely courtyard, one surely avails of the most pleasant dining experience!

Family Sundays, where families and friends can spend time in a festive environment.

› WARSAW › BACZEWSKICH 16

Baczewskich is located within a NeoRenaissance palace in the center of Warsaw; built in 1895 it was one of the few buildings that survived the Second World War. The restaurant is the younger sibling of Baczewskich in multicultural Lviv in Ukraine and harkens back to the nostalgia of merriment that prevailed in the 1920s and 30s. Chef Dmitriy ‘Dima’ Babak, brings his immense experience in crafting a menu that bridges the modern with its traditional roots in Galician cuisine. For example, the trout tartare served on guacamole with salmon caviar reflects the contemporary, while chicken Kyiv with truffle puree imbibes more tradition! The ethos here is that of feasting and fun, in the environment of an ‘event’ with piano and music, well-attired service, and drinks! A sophisticated wine list of course, as well as cocktails, classic liquors, and original tinctures made in-house, are all served joyously. A true delight!

Restaurant Concept 13 is located on the 5th floor within VITKAC, the splendidly designed shopping landmark in Warsaw’s center. With Chef Rabie Abed Alsalm at the helm, it is doing as much for the advancement of the city’s gastronomic credentials, as the premises that it is in, is doing for the world of high-fashion and style! Sophisticated interiors define its cutting-edge, contemporary intentions, and reflect on the place’s culinary direction. Here is a modern international menu suffused with elements of fusion that makes its gastronomic idea interestingly well-rounded and complete. An open kitchen is at its core, from which emanates impressive preparations such as the fish soup with seafood and coriander; or the grilled octopus with tataki sauce. There is the menu of the day, and an extensive wine list of course. The summer terrace with its panoramic views, indeed makes this a very special venue, once only imaginable!

Portuguese seafood restaurant DioGo’s is first and foremost a love story! Chef Diogo, who hails from Portugal, met his future wife Gosia, who’s from Poland, during his many travels working with top chefs and restaurants perfecting his craft. They discovered their shared passion for seafood, for Portuguese gastronomy, fell in love, and the rest is history! It was wWarsaw’s good fortune that they chose this city for their ‘culinary lovechild’ to be born, aptly called DioGo’s! Here, most everything is flown-in several times a week from Portugal to the delight of those seeking fresh fish, seafood, and meats— crab, oysters, clams, lobsters, fish, shrimp, and more. Portuguese techniques, the use of fresh, never-frozen ingredients, and the charcoal grill, are how DioGo’s delicious flavors are derived. The couple’s generosity, the bonhomie, the congenial staff, and of course fine wine, all define its pure experience!

22

When Chef Marcin Przybysz was appointed to lead EPOKA, within the architectural landmark Hotel Europejski, he knew at once his culinary objective! This historical setting, home to brands such as Raffles, Hermès, Patek Philippe, Brunello Cucinelli, became the catalyst for him to ensure that soon EPOKA would be no less! He delved into historical Polish recipe books, examined what seasonality meant centuries ago, and blended this with present techniques to create epochs-based, culinary episodes. His two interpretative tasting menus are titled ‘History ‘and ‘Short History’— the latter good for a quicker introduction to his alluring concept! This creativity, a bridge connecting the old with the new, makes each course a discovery, a modern interpretation of a recipe from the far reaches of Polish culinary tradition. A sublime union of the epochal and the contemporary has indeed made EPOKA the culinary brand it has come to be!

For over a decade HOZA remains one of the city’s top Argentinian-inspired steakhouses, now under owner Lukasz Stachura’s direction. Located in a building which dates to 1900, its exposed brick walls, unique art and antiques reflect a sophisticated yet cozy ambience. Chef Karol Dabrowski is at the restaurant’s culinary helm, his 15-year experience ensuring the high quality of the kitchen’s output. The Argentinean-Latin thrust in the menu is evident; the beef or provolone stuffed empanadas, the parrillada with its varied mix of meats, and the paella with prawn, octopus, and squid, are all excellent, complemented by wine selected from the over 150 titles stocked in the cellar. Dining within the orangery, in its delightful private room which seats 10, or in the large summer garden in the courtyard, this is an outstanding venue where professional service and positive energy makes it all so delightful!

Chef Maciej Majewski has carved a niche for himself; his philosophy emphasizes a refined palette of flavors, the freshness of ingredients, and palpable creativity served in delightful compositions. At the elegant KUK, healthful products from trusted sources are pillared upon the inspiration from regular, local dishes, combining further with Maciej’s artistry of having “fun with form and content.” What emerges with his sophisticated haute-cuisine approach are unique, elevated interpretations. His differentiation is further evident in the structure of the menu with its two sections titled simply, “I like it salty” and “I like it sweet.” The style here is neo-bistro, where the motto of ‘eat-taste-share’ bestows an air of informality. In 2013 when Martin Gimenez Castro stood atop the winner’s podium at Top Chef, little could he have imagined that a decade later he would once again be at the peak with his venue, Tuna. His compelling vision for it propelled award-winning designer David Racchi to become a contributor to its creation. The result— an interior which conveys an elegant, sublime dignity; the fish-scale motif on the walls intelligently connecting to the marine leanings of the kitchen. This is amongst the finest fish and seafood fare, but Martin’s equal mission is the emphasis on origins, and the merits of sustainability. The discovery of new flavors, textures, and stand-out culinary creativity goes together with conveying his ‘as-little-waste-as-possible’ utilization of the fish and seafood. This evolved approach is Martin’s grateful prayer to Mother Earth; She, in return, has blessed him and Tuna with remarkable success!

This innovative restaurant in Warsaw’s center, the EATERY, has garnered a reputation for the reimagining of traditional Polish home-cooking into its modern presentations. The adherence to creating everything in its kitchen is one reason why the quality is stellar. Much demanded by guests, as examples, are the onion flatbread with onions, poppy seeds, and salt; or the slow cooked ribs, for over eight hours in dark beer, topped with honey glaze! The menu pairs well with the natural wines and artisanal beers on the list. This remarkable venue is a consequence of the creative energies of hotelier-restaurateur Marcin Mazur and Agnieszka Dubas, fashion stylist and the EATERY’s interior designer! The internal space, with rattan and marble, with each element custom-designed, with music and film as part of the decor, serves to meditate one’s mind on the artful composition of the plate. This is an apt home where standards of Polish cuisine are enhanced by Chef Dariusz Barański’s skills. While they still emerge named as the classic beef tartare; or dumplings with potatoes, with wild garlic and gravy; or the slow-roasted sea bass with hollandaise sauce, the difference lies in their making. Only local, organic, seasonal products are used, derived from trusted, regional suppliers. Cold meats are cured in its own smokehouse on premises, cheese is made with traditional methods, the bread baked from organic grains, and even the ice cream made from natural milk. When celebrated Chef Martin Gimenez Castro, who hails from Argentina, puts his heart into an idea, what turns out is top notch! His culinary learnings from across Latin America and Florida, and his zeal to share, have given Warsaw a unique treasure of flavors at his popular Ceviche Bar. The underlying foundation here is his authored fusion of influences including Nikkei, or Peruvian-Japanese, Central American, Asian, as well as Mediterranean. The menu’s mainstay, of course, are the types of ceviche, which is raw fish and seafood cured in citrus juices, flavored with cilantro, spiced with onion and chilli. Further inspired innovations include the tuna tartare with Macha sauce and coriander aioli; the empanadas stuffed with shrimp and mozzarella; and the tacos with Cajun salmon. With an outstanding bar offering exhilarating cocktails, and live music in the evenings, Ceviche deserves its many ovations!

This extraordinary range is apparent in starters and dishes such as herring served in a cream sauce; Żurek, the white rye soup with boiled egg and white sausage served in a bread bowl; the Bitki or beef cutlet served with baked potatoes and candied beetroot; and for dessert the fluffy cheesecake with chocolate mousse and velvet raspberry sauce. Restaurant Muzealna, the younger sibling of the immensely successful Alewino, owes its name to the National Museum in Warsaw in which it is located. Built in 1935, in Modernist style, by a then new generation of Polish designers, the museum includes over 800,000 works of Polish and European art and applied design. Interesting parallels can be drawn with Muzealna! Here, at its helm is inspired Chef Przemysław Suska. It can be said that his work is art in culinary form, modern in its inclination, yet derived from the traditions of Polish and European roots; his creative materials being the seasonal produce from local, regional farmers. Gaia, an upscale restaurant par excellence, has brought to the center of Krakow a composite of fine Mediterranean-inspired dining. The cultural and culinary themes of the countries that comprise this magical region are diverse— from Israel to Lebanon, Greece to Italy, from France to Tunisia. Yet, they are tied by commonalities— the emphasis on freshness, on healthful ingredients best sourced from local producers, on cooking techniques that enhance natural flavors, the use of herbs, and on the supreme joy that food and wine must be in the company of family and friends. The hallmark of this fine restaurant is that each dish reflects its origin, yet its preparation entails fusion with neighboring cuisines. Dishes such as the Butterfly seabass with tomato, cucumber, chilli, and onion salad with tzatziki reflect that. With original drinks, and wonderful service in a stylish setting, Gaia is always terrific!

POD ANIOŁAMI

Pod Aniołami, which translates into Under the Angels, is located on what is known as the Royal Route, impeccably delivering its history. In the restored chamber upstairs, grand receptions are organized amidst the splendor of 18th-century paintings! Starters such as the carpaccio of smoked goose breast with skin, served with cranberries; mushroom soup with noodles. The grilled sirloin with capers and rosemary; the huntsman’s wild boar steak, marinated in juniper sauce, grilled over beech hardwood fire, served with grilled bacon, green pepper and red cabbage with raisins in wine, are all exceptional. A beech-wood grill serves a wide array of meats to be had perhaps in the medieval-style courtyard garden that’s open all year round. Desserts include sernik, the Polish cheesecake; or szarlotka, which is the local apple pie. Pod Aniołami is indeed a culinary experience from when real nobility paraded along the Royal Route!

ZaKładka’s immense success follows his passion for being true to what he loves!

ZaKładka Bistro de Cracovie delivers its culinary excellence in a thriving part of Krakow across the river from Kazimierz. This spacious landmark in Podgorze, stands at one end of the footbridge within a neoclassical building from the 18th century. Its reputation as one of Krakow’s finest restaurants keeps ascending higher; created a decade ago by Chef Rafał Targosz and Rentata Targosz, the venue reflects the attitudes of a Parisian bistro. Rafał’s strong passions about French cuisine and history make him faithful to that culture in the kitchen— evident in dishes such as the confit of duck leg with spinach dumplings, or the steak-bavette with mashed pepper sauce, fries, and herb butter. Casual elegance and friendly service along with a wonderful selection of Old World and the best Polish wines, all makes it great for a quick bite, or a full meal at the table. The nostalgic spirit that pervades Restaurant Baster derives from its location on Szeroka Street; this is the heart of Kazimierz, Krakow’s Jewish enclave with its rich and varied past. When Krakow acceded to Galicia in the mid-19th century, it evolved alongside Austrian, Hungarian, and Ukrainian influences. This spot, with its synagogues and merchants’ houses was where religious feasts abounded, paving Krakow’s culinary evolution. Jozef Baster, the owner’s great-grandfather, bottled beer here in the 1920s under the auspices of the Hapsburg Archducal Brewery. This inter-woven history is what Restaurant Baster delivers with great aplomb, serving Galician cuisine in its modern interpretations— the pork knuckle steak with kohlrabi and gravy as an example. And the bar still serves its very own ‘Baster’ brand of beer, best relished perhaps on the terrace outside. A wonderful experience!

If a restaurant’s setting, its history, and its chef can mutually uplift each other to a greater reputation, then this can surely be said of Katowice’s Restaurant Monopol and its award-winning Chef Przemyslaw Budzinski. He brings a 15year experience having worked with the country’s top chefs such as Michelin star recipient Wojciech Modest Amaro. A strong proponent of the quality of ingredients, he prefers locally sourced, but imported too if it means getting the best. Within the refined elegance of this brick walled, glass-roofed space, with wonderful service, one can avail of selections from an Italian-International inspired menu. The menu changes with the seasons; spring means more fresh vegetables, the summer, asparagus and artichokes, and in the colder months, delicacies from the forest. The extensive wine collection, Italian in its proclivity, and fine desserts add much to the overall delight!

When Agnieszka Wlodarczyk decided to do something with her passion for Italy, she factored in her love for travel, experiencing new things, and building lasting relationships. She also tapped into her upbringing in a family of entrepreneurs, where strong women lived out their own decisions. Thus, Fettine was born. Her two Krakow stores now carry the “Buy Italy Certified” mark! The name means ‘slices’ in Italian, a reference to the way a delicatessen’s cheese or meats are typically sold. But on a deeper level it might mean ‘slices of happiness’ from the small, sweet relationships that arise with those that stop by from the neighborhood. There are pastas, sauces, cookies and desserts, and other fine packaged goods. All of what’s available here is what she sources by herself on her trips to the various parts of Italy. ‘La dolce vita’ is how Agnieszka thinks of life; and Fettine reflects this sweet, positive approach!
