Amber Room, located within the Sobański Palace on inspiring Av. Ujazdowskie, is both an architectural and culinary gem with an interior that spells class. The menu is modern Polish created by Chef Robert Skubisz; his creativity has been honored with a range of prestigious awards. The á la carte menu, seasonally inspired, is prepared using the highest quality ingredients sourced as much as possible locally. Borpince, a piece of Hungary in the heart of Warsaw, has at its owners who hail originally from there and who attach enormous importance to authenticity. This is evident as one descends the stairs into this sublime, bricks-and-arches basement setting. The backdrop of Hungarian music, genuine dishes with original names, and a wine list which draws from Hungary’s wine regions, offer insight into the unfolding of a true dining experience. Many of the ingredients are imported, put together with care in traditional recipes, usually well seasoned with garlic and red pepper! The goulash soup; the halaszle, a spicy river fish soup; and the traditional pörkölt, a stew with boneless meat and vegetables, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!
BEEF N’ PEPPER
Located in the center of town, Beef N’ Pepper has quickly established itself as leading steakhouse in Warsaw’s culinary landscape with a menu that is direct and to the point. Mostly used here is the finestquality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are exhilarating indeed, each bite conveying to the palate that this is truly outstanding! Further completing the equation here menu-wise are items such as the chicken salad with seasonal vegetables and sous-vide eggs; and the beef tenderloin soup with cheese and chilli. The excellent dining experience at Beef and Pepper is significantly enhanced by the place’s well-equipped bar, affording guests a rich array of interesting whiskeys, bourbons, wines and cocktails that combine exceedingly well with the menu. Daniel Wasilewski’s Dekant WineBar & Restaurant combines the dual ideas of a wine bar and restaurant so completely, that this place stands out as an example of how this union must be achieved! Czerwony Wieprz, or the Red Hog was in its historical past a restaurant for the communist party elite, where surrounded by chandeliers, portraits, and flags, once feasted the likes of Lenin, Breżnev, Fidel Castro, and Mao Tse Tung! The walls are replete with portraits of old communists, and the dishes have names such as Delicacies of the Polish People’s Republic, a selection of pate, luncheon meat, blood sausage, and kielbasa; varied pierogi “made from rationed flour”; and Baltic herring and game pate for the “Dignitaries and Bourgeoisie”. The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!

D. PAWELEK KIELISZKI NA HOZEJ
When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kielszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

Get a taste of polish tradition
The word Gospoda means “inn” and Folk Gospoda is one of the oldest and more treasured restaurants in Warsaw with a history going back to the 18th century.
