ALE GLORIA

If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are the tasteful amalgamation of cream and strawberry, appeal of candle light, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm of affairs; her insights, her creativity, her culinary design, have made this place one of a kind where she has taken Polish cuisine to a new dimension. Tradition has been fused with modern ideas; the otherwise staple beetroot soup, barszcz, is elevated here multiple degrees with raspberry vinegar, black currant syrup, and served with white bean filled ravioli! With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. An experience in a monumental setting!

BEEF N’ PEPPER

Borpince, a piece of Hungary in the heart of Warsaw, has at its owners who hail originally from there and who attach enormous importance to authenticity. This is evident as one descends the stairs into this sublime, bricks-and-arches basement setting. The backdrop of Hungarian music, genuine dishes with original names, and a wine list which draws from Hungary’s wine regions, offer insight into the unfolding of a true dining experience. Many of the ingredients are imported, put together with care in traditional recipes, usually well seasoned with garlic and red pepper! The goulash soup; the halaszle, a spicy river fish soup; and the traditional pörkölt, a stew with boneless meat and vegetables, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!

Located in the center of town, Beef N’ Pepper has quickly established itself as leading steakhouse in Warsaw’s culinary landscape with a menu that is direct and to the point. Mostly used here is the finestquality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are exhilarating indeed, each bite conveying to the palate that this is truly outstanding! Further completing the equation here menu-wise are items such as the chicken salad with seasonal vegetables and sous-vide eggs; and the beef tenderloin soup with cheese and chilli. The excellent dining experience at Beef and Pepper is significantly enhanced by the place’s well-equipped bar, affording guests a rich array of interesting whiskeys, bourbons, wines and cocktails that combine exceedingly well with the menu. A top-grade place indeed!

DEKANT

Daniel Wasilewski’s Dekant Wine Bar & Restaurant combines the dual ideas of a wine bar and restaurant so completely that this place stands out as an example of how this union must be achieved! Food and wine are in complete step –a wine selection of almost 300 has brought repeat awards by Wine Spectator. The kitchen which emphasizes above all a strict adherence to quality of ingredients and a focus on organic and native sources, emanates a refreshing Slow-Food menu that ascribes to seasonality and freshness. The inspiration for Dekant may well lie in places such as New York, yet the place feels very much of its own breed, inviting and complete. Each Saturday there is live music, unique wine tastings, and ongoing wine and cooking workshops as well. A fine menu and a wide wine choice advised on by sommeliers at hand, makes Dekant an absolute joyous experience!

D. PAWELEK ROZBRAT 20

Top restaurateur Daniel Pawlelek is the creator of five highly successful restaurants in Warsaw— Brasserie Warszawska, Butchery & Wine, Kieliszki na Próżnej, Kieliszki na Hożej, and Rozbrat 20.

When Daniel Pawełek, one of the best regarded restaurateurs in town, gets behind an idea it is sure to win acclaim; an appreciation that is for the long haul. This track of success is what Rozbrat 20 is clearly on, enhancing the quality of life substantially in the trend-defining area of Powiśle. Here breakfast has been given top priority, at equal notching with lunch and dinner. An array of wines, freshbaked breads and pastries are highlighted in an interior that is elegantly simple. The main thrust is focus on quality and an emphasis on innovative creations — from eggs with avocado paste, to steaks and salads with ingredients sourced from local suppliers who are equally faithful to the idea of organic, seasonal, and fresh. The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

D. PAWELEK BUTCHERY & WINE

Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. A comprehensive wine list, and friendly service make Butchery & Wine a top selection!

Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!

D. PAWELEK KIELISZKI NA HOZEJ

When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kielszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

This time tested venue which serves exceptional Polish cuisine alongside high Continental fare is a longtime favorite of the many who seek high quality dining. The early 20th century Polish décor is in itself a visual of the encompassing menu designed by Chef Krzysztof Drzewicki. There is the traditional tartar, alongside the exquisite carpaccio with parmesan; dumplings with cabbage and mushrooms; shrimp in butter with garlic; pike perch with leek sauce; tuna steak served with rice and blanched vegetables. Desserts such as meringue served with velvety mascarpone and strawberries serve as an exclamation point to an outstanding dining experience. With its own unique cozy ambience, enhanced on occasion with live music— it is no surprise that Grand Kredens has continued to dutifully bestow upon all patrons a sense of gastronomic fulfillment.

Piotr Bienkowski founded the first Steak House in Warsaw over 30 years ago. As a member of the American Beef Club he was taught “steak secrets” by none other than Tony Perini, the personal chef of George Bush. And now following in his immense footsteps his son Robert has opened Hunter, the new place in town for steak, seafood, and more! With personal supervision and strong unbending focus on quality, the place is already garnering rave reviews. Items on the menu that indicate culinary fervor include the grilled baby calamari with lemon salsa and coriander; T-Bone marinated in pepper, garlic butter and jalapenos; the cod baked in white wine, butter and herbs; and for dessert pear baked in wine with vanilla sauce. With a superb wine and drinks list, informed and friendly service, Hunter is indeed at the top of its game! Note: Monday thru Friday there are attractive prix fixe lunch specials!

Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. MOKOTOWSKA 69

Marconi Restaurant, located within the iconic Hotel Bristol in the heart of Warsaw has its own separate entrance from Karowa Street, offering a relaxed dining experience throughout the day. The Executive Chef here has created an exhilarating, modern menu which emphasizes the finest seasonal produce derived from local farms and trusted purveyors. One can savor Polish beef tartare, a light salad, or select charcoal grilled steaks and seafood. And of course a fine wine list and drinks adds so much alongside mesmerizing desserts prepared by the famous Hotel Bristol patisserie. Overlooking Warsaw’s most intimate patio, the restaurant is a great setting for casual meals, business meetings, family gatherings or romantic dinners. Special weekly events here are the Wednesday Aperitivo, Sunday Brunch, and Afternoon Tea served in the adjacent Column Bar.

Mokotowska-69, is the next culinary venue by the creator of landmark restaurant Merlienego-5. Andrzej Rudnicki-Sipayłło with his over thirty years expertise, drawing from his work experience in New York’s finest restaurants, “brought” Manhattan to Warsaw when he opened Merliniego-5 in 2010. Now Restaurant and Bar Mokotowska-69 expands on this success. Essentially specializing in seafood and steaks, classic Polish dishes with a contemporary interpretation are on the menu as well. The excellent, seasonal wine list comprising selections from all over, matches the dishes ideally on the seasonally varying menu. Items such as the halibut with carrot puree; the rack of lamb; the Black Angus rib eye from NYC’s Ottmanelli and Sons; and the Kobe style strip loin from Tajima, are indications of the place’s emphasis on top quality. A sure success which adds to Warsaw’s culinary orchestra!

Star Chef Jacek Grochowina has named his new culinary venture Nolita based on Manhattan’s inspiring neighborhood where traditions and modernity have come together to make it the new epicenter of culinary landmarks. So is it with Warsaw’s Nolita, a culinary juggernaut in the making with Grochowina commanding the kitchen’s course. Having worked at the Ritz in London, this internationally awarded chef has, in the opening of this Warsaw culinary hotspot, decided to carve out his own amazing niche. What one finds in this new, modern setting, is a menu that surpasses with creativity, which makes fine dining, much higher than merely fine! The aged beef fillet, braised aubergine, teriyaki jus; John Dory, leek confit, Jerusalem artichoke; foie gras bon bon; Octopus pastrami, saffron aioli, homemade pumpkin mustard, are just a few examples of culinary genius one is apt to find here!

Papu transports its guests into a world of excellent Polish cuisine, where Chef Bartosz Kędra emphasizes the use of local produce in a unique menu where family recipes meet modern culinary techniques. Traditional flavors present in everyday Polish homes have been given a combined touch of simplicity and elegance here, emerging in dishes such as the dumplings stuffed with pheasant or venison; the roast duck with plum sauce and apricot; salmon tartar with green apple and fresh cucumber; cabbage with lamb stuffing; and the “hot lava stone” cooked-at-the-table prawns, tuna, or filet mignon. A place which is indeed the material condensation of his imagination, the menu is Polishbased with international influences at their very best, prepared with the finest products and techniques which even preserve the food’s nutritive elements. With a 20 year history, Le Cedre is the only Lebanese restaurant of its repute in Warsaw. Offering a diversity of flavors-cinnamon, cardamom, cumin, and mint--one can actually get a fine sense of Lebanon’s culinary traditions here. Le Cedre is not only a place offering an authentic menu, but is also a place which offers a virtual excursion to Lebanon, a resort country. A large collection of Lebanese wines, original interior design, and Arabic music in the background, all contribute immensely to this feeling! What matters here ultimately is that the food is absolutely top in its composition, immensely healthful and refreshing, and served in a traditional setting which completes this Lebanese experience.

Le Cedre, the top Lebanese venue in town, is the newer branch of its sister location which has been in operation since 20 years; the name Le Cedre in Warsaw already enjoys an outstanding reputation. This refined Mediterranean cuisine delights and refreshes with its healthful ingredients, the menu here replete with Lebanese classics such as the outstanding Kastaleta Ghanam, or the tender lamb chops grilled on charcoal; and an array of cold and warm appetizers or mezze. No surprise therefore, that this fine dining venue is a favorite place for discussing business over lunch for the city’s corporate bigwigs, dinner with family, or simply partying with friends! Lebanese cuisine is indeed a symbol of its people’s hospitality, where nothing strengthens the human bond more than eating together. With Lebanese wines on the menu, ingredients flown in from Lebanon, Le Cedre 84 is a class act through and through!

NAZWA ODETTE RESTAURACJI TEA ROOM

Opened in 2014 by Katarzyna Zieniewicz and Krzysztof Rabek, Odette has come to redefine the idea of a confectionery. Indeed this pristine parlor, located in the city’s heart with its own Zen-infused energy, is home to artful and meticulously hand-crafted confectionery which within elegant glass counters illumine as pieces of jewelry. And the visual matches the intensity of flavors that rush through when one bites into any one of these. A large part of this has to do with the fact that there is no compromise here on the quality of ingredients that go into the process, which itself is rigorous. The colorful macaroons, for example, are made with real almond flour, made to simply dissolve in the mouth. Creations with all manner of color and beauty imbibe flavors from types of teas, chocolates, and fruit, creating a universe of permutations. Indeed, there is no gift better than an elegant set of this sweet Odette creativity!

The owners of Odette have expanded on their success with the opening of Odette Tea Room, located on the street level of the high-end residential tower, The Cosmopolitan on Twarda Street. This is an apt home, since the interior of the Tea Room has been matched in design by award winning architect Hugon Kowalski of Ugo from Poznan. The menu here is meticulously crafted Odette desserts and a wide selection of hand-picked boutique teas served faithfully in this elegant atmosphere. These teas are available for purchase as well under Odettes’s own private brand--Tea Blanca. And the Afternoon Tea!--what an inspired way to spend time with friends or colleagues; fine teas of choice accompanied by not only the fine sweets that Odette is known for, but also a variety of savory snacks that complete the bouquet of flavors. A remarkably lovely place, with so much so good for the soul!

IN WARSAW H15 BOUTIQUE HOTEL

The H15 Boutique Hotel, a 5-star boutique hotel in Warsaw’s center, is the repository of huge history. Built during 1892–1897, it was here before the First World War that Polish patriots organized secretly to regain Poland’s independence. In 1924 the building was bought by the Soviet Union, becoming an example of socialist realism with symbols of the ‘red star’ and the ‘hammer and sickle’, carved figures of peasants and workers, and the Soviet Union Globe above the first floor balcony. In 1941 the building was taken over by the Third Reich, paradoxically saving it during Warsaw’s destruction. Now, H15 Boutique has 46 individually appointed luxury rooms and apartments for short or long stays, with comfort levels beyond that of most luxury hotels in Warsaw. With the SPA which ensures the highest quality services, and fine dining at the Signature Restaurant, H15 is indeed a class act.
