Amber Room, located within the Sobański Palace on inspiring Av. Ujazdowskie, is both an architectural and culinary gem with an interior that spells class. The menu is modern Polish created by Chef Robert Skubisz; his creativity has been honored with a range of prestigious awards. The á la carte menu, seasonally inspired, is prepared using the highest quality ingredients sourced as much as possible locally. Items such as the tuna tartare with avocado, ginger and lime; the duck breast with pumpkin, spinach, figs, and Porto sauce; and the lemon soufflé with Earl Grey ice cream, are all delectable. A special private room called the Krug Room can be reserved; one simply has to order Krug Champagne! Recommended by the Michelin Guide, Amber Room is the only restaurant in Poland to have received each consecutive year the 4 Forks and Spoons award, designating it as a luxurious restaurant!

ALEGLORIA
If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are the tasteful amalgamation of cream and strawberry, appeal of candle light, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm of affairs; her insights, her creativity, her culinary design, have made this place one of a kind where she has taken Polish cuisine to a new dimension. Tradition has been fused with modern ideas; the otherwise staple beetroot soup, barszcz, is elevated here multiple degrees with raspberry vinegar, black currant syrup, and served with white bean filled ravioli! With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. An experience in a monumental setting!

BELVEDERE
Stylish and elegant, Restaurant Belvedere is rightfully considered as one of the more remarkable culinary spots in Warsaw, located in the beautiful orangery at the Royal Lazienki Park, and recognized for its top credentials with remarkable consistency by the Michelin Guide for over a decade. The charm of 150 year architecture combined with fresh interiors within the glass pavilion created by National Opera’s designer Boris Kudlicka, enables a glamorous yet intimate atmosphere. Live music each day with piano, vocals, and smooth jazz makes dining here a pleasure; during summer and early autumn the open views of nature transport one into an idyllic state of being. Borpince, a piece of Hungary in the heart of Warsaw, has at its owners who hail originally from there and who attach enormous importance to authenticity. This is evident as one descends the stairs into this sublime, bricks-and-arches basement setting. The backdrop of Hungarian music, genuine dishes with original names, and a wine list which draws from Hungary’s wine regions, offer insight into the unfolding of a true dining experience. Many of the ingredients are imported, put together with care in traditional recipes, usually well seasoned with garlic and red pepper! The goulash soup; the halaszle, a spicy river fish soup; and the traditional pörkölt, a stew with boneless meat and vegetables, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!
BEEF N’ PEPPER
Located in the center of town, Beef N’ Pepper has quickly established itself as leading steakhouse in Warsaw’s culinary landscape with a menu that is direct and to the point. Mostly used here is the finestquality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are exhilarating indeed, each bite conveying to the palate that this is truly outstanding! Further completing the equation here menu-wise are items such as the chicken salad with seasonal vegetables and sous-vide eggs; and the beef tenderloin soup with cheese and chilli. The excellent dining experience at Beef and Pepper is significantly enhanced by the place’s well-equipped bar, affording guests a rich array of interesting whiskeys, bourbons, wines and cocktails that combine exceedingly well with the menu. A top-grade place indeed!

DEKANT
Daniel Wasilewski’s Dekant Wine Bar & Restaurant combines the dual ideas of a wine bar and restaurant so completely that this place stands out as an example of how this union must be achieved! Food and wine are in complete step –a wine selection of almost 300 has brought repeat awards by Wine Spectator. The kitchen which emphasizes above all a strict adherence to quality of ingredients and a focus on organic and native sources, emanates a refreshing Slow-Food menu that ascribes to seasonality and freshness. The inspiration for Dekant may well lie in places such as New York, yet the place feels very much of its own breed, inviting and complete. Each Saturday there is live music, unique wine tastings, and ongoing wine and cooking workshops as well. A fine menu and a wide wine choice advised on by sommeliers at hand, makes Dekant an absolute joyous experience!

D. PAWELEK ROZBRAT 20
When Daniel Pawełek, one of the best regarded restaurateurs in town, gets behind an idea it is sure to win acclaim; an appreciation that is for the long haul. This track of success is what Rozbrat 20 is clearly on, enhancing the quality of life substantially in the trend-defining area of Powiśle. Here breakfast has been given top priority, at equal notching with lunch and dinner. An array of wines, freshbaked breads and pastries are highlighted in an interior that is elegantly simple. The main thrust is focus on quality and an emphasis on innovative creations — from eggs with avocado paste, to steaks and salads with ingredients sourced from local suppliers who are equally faithful to the idea of organic, seasonal, and fresh. The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!
D. PAWELEK BUTCHERY & WINE
Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. A comprehensive wine list, and friendly service make Butchery & Wine a top selection!

Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!

D. PAWELEK KIELISZKI NA HOZEJ
When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kielszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

El Greco has become the yardstick in Warsaw of what a fine Greek restaurant ought to be. An intrinsic part of the culinary landscape of the city, most dining decisions made in this bustling part of town must include El Greco in their calculations! Its atmosphere is so thoroughly inviting, supported by a menu that is replete with excellent flavors, just perfect for those idyllic Mediterraneancharmed lunches and dinners. Especially imported ingredients impart authenticity to the menu; items such as the horiatiki, which is the traditional Greek salad with tomatoes, cucumbers, peppers, feta, and kalamata olives; the souvlaki kotopoulo, or the chicken shish kebab with fries served with pita and tzatziki; the arnaki me melitzanes, stewed lamb in wine and tomato sauce; and for dessert the braised pear served with delicate yoghurt cream, are all outstanding. Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. Mokotowska-69, is the next culinary venue by the creator of landmark restaurant Merlienego-5. Andrzej Rudnicki-Sipayłło with his over thirty years expertise, drawing from his work experience in New York’s finest restaurants, “brought” Manhattan to Warsaw when he opened Merliniego-5 in 2010. Now Restaurant and Bar Mokotowska-69 expands on this success. Essentially specializing in seafood and steaks, classic Polish dishes with a contemporary interpretation are on the menu as well. The excellent, seasonal wine list comprising selections from all over, matches the dishes ideally on the seasonally varying menu. Items such as the halibut with carrot puree; the rack of lamb; the Black Angus rib eye from NYC’s Ottmanelli and Sons; and the Kobe style strip loin from Tajima, are indications of the place’s emphasis on top quality. Stara Kamienica, located on a quiet street in the heart of Warsaw, combines traditional Polish culinary ideas with modern, pan-European elements. Chef Przemyslaw Butryn is responsible for the place’s success over the recent years. Chef Sebastian Ruta celebrates food by sourcing products regionally, cooking in ways which preserve nutrition and flavors, and finally serving it with love! At the heart of the kitchen is a oneof-a-kind wood-fired oven where meats, fish, vegetables, fruits and cheese are cooked or smoked to perfection without any artificial additives—this is where true flavors and aromas emerge, much as nature intended it to be! And furthermore, the bar serves a range of beer, liquor, wine and cocktails, making MOMU strike a deep chord within!

Famous cuisinière Magda Gessler has brought her interpretation of informal, yet high quality Polish dining in the form of Restaurant Polka. Located in the Old Town it provides an exemplary introduction to what the food of this land should be about. Served in true traditional style, with simply yet elegant cheer, it illustrates this cuisine’s true nature, that in actuality it is a sophisticated intermingling of various European influences. Polka’s emphasis on the use of local, authentic ingredients ensures intense flavors-- items such as the goose liver marinated in mustard, served with buttered apples and onions; the traditional Polish stew ‘bigos’ served in a bread bowl; the pork tenderloin with plum stuffing, drenched with rosemary flavored gravy; and pancakes with cream cheese for dessert, are all outstanding. This is true Polish hospitality indeed at its very best!

Dishes designed by Chef Tomasz Pieprzyk are made with locally sourced ingredients; items such as the sliced seasoned beef with plum salad; the pear filled ravioli served with roasted duck ragout; the fresh mussels with pepper sauce; and the sirloin with chestnuts flavored with whisky, are all excellent. With desserts such as the pumpkin soufflé with ginger sauce, a varied wine list, this elegant restaurant remains as a feather in Krakow’s culinary cap!

IN WARSAW H15 BOUTIQUE HOTEL
The H15 Boutique Hotel, a 5-star boutique hotel in Warsaw’s center, is the repository of huge history. Built during 1892–1897, it was here before the First World War that Polish patriots organized secretly to regain Poland’s independence. In 1924 the building was bought by the Soviet Union, becoming an example of socialist realism with symbols of the ‘red star’ and the ‘hammer and sickle’, carved figures of peasants and workers, and the Soviet Union Globe above the first floor balcony. In 1941 the building was taken over by the Third Reich, paradoxically saving it during Warsaw’s destruction. Now, H15 Boutique has 46 individually appointed luxury rooms and apartments for short or long stays, with comfort levels beyond that of most luxury hotels in Warsaw. With the SPA which ensures the highest quality services, and fine dining at the Signature Restaurant, H15 is indeed a class act.
