AMBER ROOM

Amber Room, located within the Sobański Palace on inspiring Av. Ujazdowskie, is both an architectural and culinary gem with an interior that spells class. The menu is modern Polish created by Chef Robert Skubisz; his creativity has been honored with a range of prestigious awards. The á la carte menu, seasonally inspired, is prepared using the highest quality ingredients sourced as much as possible locally. Items such as the tuna tartare with avocado, ginger and lime; the duck breast with pumpkin, spinach, figs, and Porto sauce; and the lemon soufflé with Earl Grey ice cream, are all delectable. A special private room called the Krug Room can be reserved; one simply has to order Krug Champagne! Recommended by the Michelin Guide, Amber Room is the only restaurant in Poland to have received each consecutive year the 4 Forks and Spoons award, designating it as a luxurious restaurant!

Located in the center of town, Beef N’ Pepper has quickly established itself as leading steakhouse in Warsaw’s culinary landscape with a menu that is direct and to the point. The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!


D. PAWELEK KIELISZKI NA HOZEJ

When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kieliszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

HOZA

Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. Piotr Bienkowski founded the first Steak House in Warsaw over 30 years ago. As a member of the American Beef Club he was taught “steak secrets� by none other than Tony Perini, the personal chef of George Bush. And now following in his immense footsteps his son Robert has opened Hunter, the new place in town for steak, seafood, and more! With personal supervision and strong unbending focus on quality, the place is already garnering rave reviews. Items on the menu that indicate culinary fervor include the grilled baby calamari with lemon salsa and coriander; T-Bone marinated in pepper, garlic butter and jalapenos; the cod baked in white wine, butter and herbs; and for dessert pear baked in wine with vanilla sauce. With a superb wine and drinks list, informed and friendly service, Hunter is indeed at the top of its game! Note: Monday thru Friday there are attractive prix fixe lunch specials!

Kuchnia Warszawska, offers the finest Polish culinary traditions in an atmosphere enhanced by its location in the Old Town Market Square. Here rediscovered traditional recipes blend with modern interpretation at the hands of a passionate and experienced kitchen team. “Varsovian” cuisine is influenced by various cultures and incorporates several culinary traditions -- from the tables of Polish aristocracy, from faraway lands, from Jewish merchants, and from the culinary ingenuity of poorer workers as well. Marconi Restaurant, located within the iconic Hotel Bristol in the heart of Warsaw has its own separate entrance from Karowa Street, offering a relaxed dining experience throughout the day. Executive Chef Michał Tkaczyk has created an exhilarating, modern menu which emphasizes the finest seasonal produce derived from local farms and trusted purveyors. MOKOTOWSKA 69

Mokotowska-69, is the next culinary venue by the creator of landmark restaurant Merlienego-5. Andrzej Rudnicki-Sipayłło with his over thirty years expertise, drawing from his work experience in New York’s finest restaurants, “brought” Manhattan to Warsaw when he opened Merliniego-5 in 2010. Now Restaurant and Bar Mokotowska-69 expands on this success. Essentially specializing in seafood and steaks, classic Polish dishes with a contemporary interpretation are on the menu as well. The excellent, seasonal wine list comprising selections from all over, matches the dishes ideally on the seasonally varying menu. Items such as the halibut with carrot puree; the rack of lamb; the Black Angus rib eye from NYC’s Ottmanelli and Sons; and the Kobe style strip loin from Tajima, are indications of the place’s emphasis on top quality. Celebrity Chef Robert Sowa, winner of several awards over his long, illustrious career has furthered his top credentials with the opening of N°31 Restaurant & Bar, his new grand venue in the heart of Warsaw’s center. A place which is indeed the material condensation of his imagination, the menu is Polishbased with international influences at their very best, prepared with the finest products and techniques which even preserve the food’s nutritive elements. An open kitchen format emphasizes a personal touch for the guest, the passion evident in creations such as the foie gras with caramelized pear in a honey reduction with brioche and orange jam with anise; or the beef cheek with wild morel sauce, caramelized beetroot, and truffle puree. Besides culinary genius, the restaurant’s stellar wine selection, its elegantly stunning interiors, all make Robert Sowa’s N°31 a true culinary standout!
