AMBER ROOM

Amber Room, located within the Sobański Palace on impressive Av. Ujazdowskie, is both an architectural as well as culinary gem with an interior that spells absolute class. The menu comprises Polish cuisine with the personal touch and interpretations of Chef Robert Skubisz. His creativity has been honored over the years with a range of prestigious awards. The á la carte menu, seasonally inspired, is based on the highest quality ingredients sourced as much locally as possible. Dishes such as tuna tartare with avocado, ginger and lime; duck breast with pumpkin, spinach, figs, and Porto sauce; and lemon soufflé with Earl Grey ice cream, are all delectable. Beef N’ Pepper, located in the center of town, has quickly established itself as leading steakhouse in Warsaw. Mostly used here is the finest-quality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are all truly outstanding! Further completing the equation here menu-wise are appetizers such as tartar of seasoned beef tenderloin with dried yolks; shrimp in soy-oyster sauce with parsley oil, garlic and ginger; and octopus with mango salsa, fresh cucumber and balsamic caviar. The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. This track of success is what Rozbrat 20 is clearly on, enhancing the quality of life substantially in the trend-defining area of Powiśle. Here breakfast has been given top priority, at equal notching with lunch and dinner. An array of wines, freshbaked breads and pastries are highlighted in an interior that is elegantly simple. Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!


D. PAWELEK KIELISZKI NA HOZEJ

When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kieliszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

DEKANT

Daniel Wasilewski’s Dekant Wine Bar & Restaurant combines the dual ideas of a wine bar and restaurant so completely that this place stands out as an example of how this union must be achieved! Food and wine are in complete step –a wine selection of almost 300 has brought repeat awards by Wine Spectator. The kitchen which emphasizes above all a strict adherence to quality of ingredients and a focus on organic and native sources, emanates a refreshing Slow-Food menu that ascribes to seasonality and freshness. The inspiration for Dekant may well lie in places such as New York, yet the place feels very much of its own breed, inviting and complete. Each Saturday there is live music, unique wine tastings, and ongoing wine and cooking workshops as well. A fine menu and a wide wine choice advised on by sommeliers at hand, makes Dekant an absolute joyous experience!

DOBODO

Recently opened DOBODO, is located in the very heart of Warsaw where once stood ‘Cafe Bodo’, named after the famous 1930s actor and its founder Eugene Bodo. With the opening of DOBODO the venue has now been restored it to its former splendor. The emphasis here is on original culinary compositions made with select Polish products from well-known local producers. Lamb is a distinct specialty with items on the menu such as flatbreads with dry cured ham, lamb pate, seasonal carpaccio and Bursztyn cheese; or the unique Wrzosówka lamb tartare with quail egg, onion confit, oyster mushroom; and for the summer, refreshing creations such as the chilled peach soup with walnuts! With an incredibly welcoming atmosphere, an open kitchen, and period furniture the experience here is truly unforgettable. Of course outstanding food, informed service, and quiet style are the key to its top culinary reputation!

HOZA

Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. LA ROTISSERIE

La Rotisserie is located within an architectural gem, the elegant Mamaison Hotel Le Régina in a magical part of Warsaw’s Old Town. Its standing as an established star in the city’s culinary firmament is due to Chef Piotr Szulc, known for traditional French cuisine combined with modern trends. Alongside him, Sommelier Andrzej Strzelczyk ensures that wine selections are paired perfectly with what is ordered. During the summer the Patio, full of flowers and a roaring fountain, becomes an incredible setting to a light, refreshing, seasonal menu. Items such as the quick pan-fried turbot, served with cauliflower, purée au Comté, salsify, orange oil and creamy bisque; or the Scottish lamb with baby turnip, Pommes Anna with bone marow, are both clear indications of culinary creativity. Kuchnia Warszawska, offers the finest Polish culinary traditions in an atmosphere enhanced by its location in the Old Town Market Square. Here rediscovered traditional recipes blend with modern interpretation at the hands of a passionate and experienced kitchen team. “Varsovian” cuisine is influenced by various cultures and incorporates several culinary traditions -- from the tables of Polish aristocracy, from faraway lands, from Jewish merchants, and from the culinary ingenuity of poorer workers as well. This extraordinary range is apparent in dishes such as the trout marinated in vinegar; Żurek, or the rye soup with boiled egg and white sausage; the Bryzol or the fried beef served with baked potatoes and candied beetroot; and the simply delicious cheesecake with chocolate sauce for dessert. MOKOTOWSKA 69

Mokotowska 69, is the next culinary venue by Andrzej Rudnicki-Sipayłło, known from his landmark restaurant Merliniego 5. His over thirty years expertise, drawing from his work experience in New York’s finest restaurants, “brought” Manhattan to Warsaw when he opened Merliniego-5 in 2010. Restaurant and Bar Mokotowska 69, which opened in May 2016 in the center, inherits this success. Essentially specializing in seafood and steaks, classic Polish dishes with a contemporary interpretation are on the menu as well. The excellent, seasonal wine list comprising selections from all over, matches the dishes ideally on the seasonally varying menu. Items such as the halibut with carrot puree; the rack of lamb; the Black Angus rib eye from NYC’s Ottmanelli and Sons; and the Kobe style strip loin from Tajima, are indications of the place’s emphasis on top quality. A sure success which adds to Warsaw’s culinary landscape!

Merliniego, an iconic venue for food and wine aficionados, is simply named after its address on 5 Merlinego Street! It offers a unique experience, a reflection of Chef Bartłomiej Czerwiński’s vision.
