Chef Wojciech Modest Amaro has done Poland proud receiving the nation’s first-ever Michelin Star in 2012. This top recognition is applause for his Nature Calendar, a unique approach that meshes acutely with each of the year’s 52 weeks. These, as Nature’s distinct episodes, are used by him to produce symphonic points of flavors. “Moments” is how he titles it— lunch comprises of 3 or 5 Moments, while more elaborate evenings consist of 6 or 9. “The ambassadorship of Polish cuisine is inscribed in this atelier’s essence” says Amaro, having garnered worldwide praise over the years. The elegant Restaurant Belvedere is considered to be a remarkable culinary spot in Warsaw. Its 150 year old architecture combines wondrously with interiors designed by Boris Kudlicka. Borpince, a Hungarian-inspired restaurant and wine cellar, is located in the heart of Warsaw. Owner and manager Beata TrónNowak’s Hungarian background makes this place an enclave of authenticity. This is evident as one descends the stairs into the bricks-and-arches basement, home to a selection of over a hundred stellar wines from top Hungarian wine producers. The menu is dynamic and seasonal, made with traditional recipes with many of the ingredients imported directly; the result is original flavors served with a modern bent. The goulash soup; the halaszle, a spicy river fish soup; the traditional pörkölt, a stew with boneless meat and vegetables; and pork mangalica with chestnut puree, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!

Both of these individuals are driven professionals, inspiring each other to achieve the culinary heights so important for the both of them. Chef Bartosz’s emphasis is on being local, being seasonal, and above all being creative. The majority of the ingredients he uses are in fact sourced by him from local farmers within a radius of 50 km. around Warsaw and from personally known, reliable vendors. Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!


D. PAWELEK KIELISZKI NA HOZEJ

Kieliszki na Hożej is a continuation of Daniel Pawelek’s collaborative effort with star Polish sommelier Paweł Demianiuk. Chef Grzegorz Zięba heads the kitchen with a classic approach that is artisanal in its ethos. He pays strong attention to the seasons and on local products, extracts as much flavor as possible so that the dishes “simply allow nature to flow through.” Grzegorz rediscovers forgotten culinary methods, flavors, and traditions, updating these with modern, sophisticated, and practical forms. His culinary inspirations include potato with mackerel stock, yolk and spring onion; Polish lamb with broad beans, chanterelles, young cabbage and gooseberry; and Sękacz, or the traditional spit cake with blueberries and pudding for dessert. There are over 250 wines by the glass; the Sommelier’s deep knowledge of what goes best with what transforms this into a memorable dining experience!

Kanapa, ensconced majestically in a grand, pre-war villa in Mokotów, has furthered immensely the image of contemporary Ukraine. This here is European dining at its finest, brought to life by an exhilirating menu and an inspired staff, mostly Ukrainian of course, that is so enthusiastic to share the best from their culture. Dmytro Borisov, Kiev’s ace restaurateur, has brought Kanapa to Warsaw to showcase his ‘New Ukrainian Cuisine’, wherein the best seasonal products are combined with innovative techniques to produce flavor-packed dishes that are a visual thrill to behold as well. Items such as the black dumplings; guinea fowl liver paté; mussels on the rocks; and oyster cream mousse, are simply outstanding; and each dish can be paired with the appropriate wine to enhance the experience.
