Chef Wojciech Modest Amaro has done Poland proud receiving the nation’s first-ever Michelin Star in 2012. This top recognition is applause for his Nature Calendar, a unique approach that meshes acutely with each of the year’s 52 weeks. These, as Nature’s distinct episodes, are used by him to produce symphonic points of flavors. “Moments” is how he titles it— lunch comprises of 3 or 5 Moments, while more elaborate evenings consist of 6 or 9. “The ambassadorship of Polish cuisine is inscribed in this atelier’s essence” says Amaro, having garnered worldwide praise over the years. Polish liqueurs, vodkas, and mead, and of course a brilliant selection of wines, all meld with perfected service to bestow a magical experience. Designed by Agnieszka Amaro, the prestigious CovetED Magazine has included atelier Amaro to be amongst the most beautiful restaurants in the world. A destination well worth its own special trip!

If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are the tasteful amalgamation of cream and strawberry, candle light, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm having taken traditional Polish cuisine to new dimensions; her insights, her creativity, her culinary design, have all made this place one of a kind. Polish goose is a delicacy and Ms. Gessler specializes in dishes made with this healthy, delicious meat: the confit of goose leg with cherry and horseradish sauce; or goose stuffed with dried apricots and walnuts, are examples. With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. A class experience in a monumental setting!

BELVEDERE
The elegant Restaurant Belvedere is considered to be a remarkable culinary spot in Warsaw. Its 150 year old architecture combines wondrously with interiors designed by Boris Kudlicka. Comprising the orangery of the Royal Lazienki Park, Belvedere’s gastronomic credentials are underscored by awardwinning Chef Sebastian Olma who brings his experience with Gordon Ramsey and Tom Aikens in the UK. His interpretations combine the best of traditional Polish with modern culinary art, and emphasize sophisticated presentation. Wine pairings by sommeliers Piotr Zieliński and Tomasz Marczak include selections from top Polish vineyards. Valued by those who know Belvedere for the culinary summit that it is, it is no surprise that Michelin has designated it as a 3 Fork & Spoon over the last many years. Corporate events for up to 300 guests can be organized here as well. A class act on all fronts!

Borpince, a Hungarian-inspired restaurant and wine cellar, is located in the heart of Warsaw. Owner and manager Beata TrónNowak’s Hungarian background makes this place an enclave of authenticity. This is evident as one descends the stairs into the bricks-and-arches basement, home to a selection of over a hundred stellar wines from top Hungarian wine producers. The menu is dynamic and seasonal, made with traditional recipes with many of the ingredients imported directly; the result is original flavors served with a modern bent. The goulash soup; the halaszle, a spicy river fish soup; the traditional pörkölt, a stew with boneless meat and vegetables; and pork mangalica with chestnut puree, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!

D. PAWELEK BRASSERIE WARSZAWSKA
The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

Butchery & Wine, considered one of Warsaw’s top restaurants, owes its success to a strict philosophy that emphasizes where its ingredients— mostly beef, seafood, and wine-are sourced from. Its eminence is highlighted by the fact that over the last 7 years it has continuously been awarded with Michelin’s Bib Gourmand, which implies both stellar quality and good value. Owner Daniel Pawelek remains clear with his vision, that this be known as a place where guests can enjoy outstanding dining from a tothe-point menu without distractions that take away from the full experience. Items such as the roast bone marrow; seared scallops with ”boudin noir”; Bavette steak with shallots, are all outstanding, perhaps to be followed by the spiced pear and apple crumble with vanilla ice-cream for dessert. A comprehensive wine list and an informed service staff make Butchery & Wine a top selection!
D. PAWELEK ROZBRAT 20
Adrian Górniak
Rozbrat 20, with its modern Polish cuisine, is now widely considered to be a pillar of the contemporary fine dining trend. Its impressive culinary trajectory is the consequence of the energy and insights of two gastronomic visionaries owner Daniel Pawełek and Chef Bartosz Szymczak. Both of these individuals are driven professionals, inspiring each other to achieve the culinary heights so important for the both of them. Chef Bartosz’s emphasis is on being local, being seasonal, and above all being creative. The majority of the ingredients he uses are in fact sourced by him from local farmers within a radius of 50 km. around Warsaw and from personally known, reliable vendors. Rozbrat 20 is impressive indeed, serving within its relaxing and less formal atmosphere a modern Polish menu where the dishes are light, elegant, and full of flavor. A must-have dining experience in Warsaw!

FINE DINING
Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!
D. PAWELEK KIELISZKI NA HOZEJ
Kieliszki na Hożej is a continuation of Daniel Pawelek’s collaborative effort with star Polish sommelier Paweł Demianiuk. Chef Grzegorz Zięba heads the kitchen with a classic approach that is artisanal in its ethos. He pays strong attention to the seasons and on local products, extracts as much flavor as possible so that the dishes “simply allow nature to flow through.” Grzegorz rediscovers forgotten culinary methods, flavors, and traditions, updating these with modern, sophisticated, and practical forms. His culinary inspirations include potato with mackerel stock, yolk and spring onion; Polish lamb with broad beans, chanterelles, young cabbage and gooseberry; and Sękacz, or the traditional spit cake with blueberries and pudding for dessert. There are over 250 wines by the glass; the Sommelier’s deep knowledge of what goes best with what transforms this into a memorable dining experience!

When acclaimed restaurateur Daniel Pawelek embarks on the creation of a new venue, gastronomic excitement unfolds! So it is with Koneser Grill, his recently opened venue that is sure to elevate the culinary quotient of the entire Plac Koneser complex! Here, Daniel has brought his natural excellence in wine and meat into an intelligent juxtaposition, such that his audience will view Koneser Grill as novel. With an open kitchen format and an emphasis on barbecue and grill, he has transformed what folks are somewhat familiar with, into a highquality, wine-paired experience! With meats of course of the highest caliber, even the fire itself has become a central ingredient, fired with seasoned oak and alder wood, its unpredictability tamed to the right dance of smoke and flame to create ultimate perfection! This here is European dining at its finest, brought to life by an exhilirating menu and an inspired staff, mostly Ukrainian of course, that is so enthusiastic to share the best from their culture. Dmytro Borysov, Kiev’s ace restaurateur, has brought Kanapa to Warsaw to showcase his ‘New Ukrainian Cuisine’, wherein the best seasonal products are combined with innovative techniques to produce flavor-packed dishes that are a visual thrill to behold as well. Located in the center of Warsaw, La Brasserie Moderne is well considered a culinary landmark. His culinary spectrum allows one to savor a refined palette of flavors, a resultant of the freshness of ingredients and creativity, served up in tempting, aromatic, delightful compositions. This was once the Soviet embassy, today the restored sickles and hammer combine with modern design. Restored 1950’s Oswald chairs, genuine Serge Mueller and Tom Dixon lighting, as well as French hand-painted wallpapers with floral motifs, are the interior’s highlights. Events held in conjunction with celebrities (such as Borys Szyc, Małgosia Socha, Anita Sokołowska, Anita Lipnicka and Marek Gray to name a few), result in “autographed” signature dishes. Indeed, one of Warsaw’s top culinary venues!

SMAKI WARSZAWY
Smaki Warszawy, located in the city center, translates to “Flavors of Warsaw.” The name however implies much more; it aims to connect to a pre-war Warsaw where different ethnicities contributed to the culinary richness of the city. Today, as a metaphor to that ideal, Smaki Warszawy fuses a contemporary Polish and European restaurant with a café and patisserie that makes cakes, desserts, and ice-cream the old fashioned way; with butter, cream, and true, natural ingredients. The kitchen’s creative team emphasizes the use of seasonal local products; dishes such as the herring with beetroot leaves, compressed apple and rhubarb mousse; or chanterelles in a wine and butter emulsion, reflect that with their superb flavors. The stellar wine selection, as well as the café with its award-winning pastries adds an exclamation point to the overall experience, a sincere approach to dining that is so well delivered!

This is evident in the modern interpretations within Chef Filip Kosin’s menu, where he amalgamates traditions with new twists to produce his dynamic arrangements. And the restaurant’s interior -- its palette of colors, blends of different furniture, old photographs juxtaposed within new frames-- makes this an apt setting for these new, updated flavors of modern Polish cuisine. With welcoming service, delicious coffee and desserts, fine liqueurs and cocktails, POLOT always bestows a lovely experience!

Famous cuisinière Magda Gessler has brought her interpretation of informal, yet high quality Polish dining in the form of Restaurant Polka. Located in the Old Town it provides an exemplary introduction to what the food of this land should be about. Served in true traditional style, with simply yet elegant cheer, it illustrates this cuisine’s true nature, that in actuality it is a sophisticated intermingling of various European influences. Polka’s emphasis on the use of local, authentic ingredients ensures intense flavors-- items such as the goose liver marinated in mustard, served with buttered apples and onions; the traditional Polish stew ‘bigos’ served in a bread bowl; the pork tenderloin with plum stuffing, drenched with rosemary flavored gravy; and pancakes with cream cheese for dessert, are all outstanding. This is true Polish hospitality indeed at its very best!
