W

hen TOPS attended the Women Leading Kentucky Leadership Awards back in November, we were delighted to catch up with the incomparable Isabel Yates. When it came time to choose a cover girl for our "Southern Comforts" issue, the choice was unanimous. Isabel Yates embodies Southern grace and charm, from her impeccable sense of style to her service to the Lexington community. I sat down recently with Lexington treasure Isabel Yates and was immediately captivated by her still-sparkling dark blue eyes while we chatted about what inspires her to this day. At 97-years-old, Isabel is the epitome of southern charm, with a drawl that will leave you longing for more conversation about her extended list of accomplishments over her 58-plus years as a Lexington resident. Isabel hails from the small town of Winnsboro, South Carolina, and was a graduate of the University of South Carolina. Mother to four children, she's also grandmother to a slew of grandchildren scattered about the country – all while she calls Kentucky home. Isabel is known throughout Lexington for her many years of service in numerous community and civic organizations.

She was active in the political world for many years, first as an elected official on the Lexington Fayette Urban County Council, then as Vice Mayor from 1999-2002. She is known for the preservation of historic McConnell Springs and promoting of the original Horse Mania, as well as other public arts projects in downtown Lexington. A true ambassador for the Bluegrass, she's received many honors and awards over the years, the most recent being the Community Leadership Award from Women Leading Kentucky. Her passion for projects near and dear to her heart resonates as she speaks of the historical and educational significance of the many initiatives she's been involved with. She loves working with people for the good of Lexington and was instrumental in the recent renovation of the Kentucky Theatre, raising nearly $1 million along with fellow board members. "The Kentucky Theatre project was one of the most satisfying things I've ever done. I've always enjoyed the theater, and I'm very passionate about keeping it alive," she shared in her charming Carolina accent.

hen she drives in downtown Lexington (yes, she still drives her light blue Lexus!), she's proud to see the only monument dedicated to women, the 20-foot tall suffragists statue placed at the corner of Mill and Vine streets. Isabel served on the Breaking the Bronze Ceiling committee, which was responsible for raising money to erect the statue as a reminder to citizens of the crucial contributions women have made to the community. Among her many other interests and accomplishments are serving as Chair of the UK Sanders-Brown Center on Aging Foundation, President of the Philharmonic Guild Chair Emeritus, and member of the Public Policy Committee for the Kentucky Alzheimer's Association. Isabel has served on many boards, including LexArts, Downtown Lexington Corporation, UK Art Museum, Lexington Opera Society, and the YMCA of Central Kentucky. Many people don't know that Isabel once owned a women's clothing boutique in downtown Midway called Track Two – so named because it was on the other side of the railroad tracks – and says this was when her love for high-end fashion began. She also ran her own tour company at one point to showcase the beauty of the Bluegrass through area horse farms. An avid bridge player, Isabel enjoys this pastime twice weekly with her friend group. In fact, she started playing online also during the pandemic with players as far away as Florida and Argentina. Let's continue to praise this Lexington treasure, one of our community's strongest advocates who does it all with a touch of southern hospitality – and unrivaled style.

What Makes You an

INFLUENCER? by Amanda Harper

In the age of social media, “influencer” suggests someone with a lot of followers – and a lot of posts. But before the days of Instagram, it meant someone who had the power to get big things done. Being an influencer means a certain drive, a desire to reach for the stars. Here are some qualities that we think help define what an influencer really is. While not every influencer will necessarily tick all of these boxes, it’s food for thought as you contemplate those New Year’s resolutions.

You’re an expert in your field. Influencers are well-versed – and well-respected – in their industry or niche. If others turn to you for your particular expertise, you’re already an influencer.

Helping others is the most direct way to impact the lives of others – something a true influencer loves to do!

You use your voice. Influencers speak out about issues, projects and causes that are important to them. In turn, the influencer gives a voice to others who are in need.

You act deliberately. A strong influencer will consider their options, then make decisive moves. Taking action is a sure sign of the boldness needed to be a thought leader.

You adapt.

You give of your time. Volunteerism is a hallmark of an influencer. Rather than just “talking the talk,” influencers roll up their sleeves and support local nonprofits and charitable organizations.

Situations change all the time – Covid has certainly made that abundantly clear. An influencer is nimble enough to roll with the changing tide, whether it’s a minor setback or a global crisis.

You have high expectations. Influencers have high expectations of themselves – and those they work alongside. This enthusiasm and relentless pursuit of “more” or “better” often leads to innovations and bold ideas. You also expect those around you to stay true to the mission and not compromise their integrity.

You listen. Learning from others is foundational to leadership. From taking constructive criticism to simply sitting down and learning a different perspective, it allows you to broaden your horizons. You value others and empathize with their needs.

You connect. While a high follower count isn’t required to be a true influencer, having a broad network almost certainly is. This goes along with listening: the more people you know and make meaningful connections with, the more likely you are to experience new perspectives, which will, in turn, inspire fresh ideas.

You have integrity. Any person is only as strong as their word. When you have the trust of the people around you, you can go further and reach higher. Being honest, vulnerable and forthcoming is the best way to earn the respect and admiration of your peers.

You inspire others. The je ne sais quoi of an influencer is their ability to inspire others to act, speak and think. Whether through direct mentorship or simply leading by example, an influencer always spreads their enthusiasm around.

You believe. The real essence of an influencer is a particular kind of optimism. You believe that anything is possible, or at least plausible. You believe in hard work. You believe in the people you surround yourself with. You believe that tomorrow must be better than today. You believe in your vision. You believe. •

As a podcast editor and owner of Bourbon Barrel Podcasting, my job is to help clients hone their message and remove distractions in order to enhance the listening experience. I love working with new podcasters, whether it’s a passion project or designed to help promote their business or area of expertise. As co-founder of Lexington Podcasters and a presenter at events such as Podcast Movement, Podfest, and She Podcasts Live, I’ve seen quite a few shows come to life across a variety of genres and formats. My career in podcasting began in broadcasting, as a volunteer call-screenerturned-traffic-reporter on a small community radio station. I eventually became the production manager, a podcast producer and a co-host. The small station was purchased by a larger group, and I became a freelance podcast editor. Here are several tips I’ve picked up along the way to help your message come across clearly through a podcast.

DETERMINE YOUR TOPIC, AUDIENCE AND FORMAT Everyone has something they could talk about for hours on end. When deciding what should be the focus of a podcast, you need to consider topics that you will never get tired of. Brainstorm 52 show topic ideas, one for each week of the year. This will let you know if you have enough ideas to have a podcast of your own, or if you would be better off finding guest opportunities on existing programs. Of course, a show doesn’t have to be weekly, but it’s a starting point. Defining your audience will help to hone the direction of the show. Your audience is rarely “everyone.” Figure out who they are and talk specifically to them. As you plan your show, consider what type of format will be most effective. Will you host guests, have a co-host or fly solo?

Tips and Techniques for Creating a Professional PODCAST by Jennifer Longworth of

CHOOSE MEMORABLE, STRAIGHTFORWARD BRANDING When coming up with a title for your podcast, don’t be too clever or obscure. Make it easy to remember and spell and give some idea of what the show is about. Search potential names to be sure your idea isn’t already an established podcast. You’ll also want to claim a custom URL and related social media handles.

GET GOING The technological side of podcasting can be as complex or as simple as you need for it to be. You can get started with just a smartphone and a recording app. Audacity (audacityteam.org) is a free program that lets you record on a computer. Other options for a digital audio workstation (DAW) include programs such as Adobe Audition, Reaper and Hindenburg. Once you record a show, it does not magically appear on Apple or Spotify. You need a media host to bridge the gap, such as Libsyn, Podbean or Buzzsprout.

MONETIZE YOUR PODCAST One of the most frequently asked questions about podcasting is, “How do I make money?” In the business world, a podcast can be another arrow in your marketing quiver. The podcast itself may not directly bring in any money, but it will raise your perceived authority in your field and help to make more people aware of your product or services. Many popular podcasts are supported by paying subscribers. Sleep with Me Podcast is primarily listener supported, but also receives income from sponsorships. Some podcasts, such as Welcome To Night Vale, perform live to audiences across the country, and also sell merchandise, books and more.

In the state of Kentucky, local school boards are required to meet 12 times a year.

Over the course of 2021, the Fayette County Board of Education met more than 50 times. It’s no exaggeration to say they accomplished four times the work most school boards tackle in a year. Following the election of two new school board members in November 2020, and the unexpected passing of Fayette County Public Schools Superintendent Manny Caulk in December 2020, the Fayette County Board of Education began January 2021 with a new slate of board officers and an acting superintendent. Challenging enough under normal circumstances, the board also faced the Herculean task of safely returning to in-person learning during the COVID-19 pandemic after skyrocketing case numbers had forced schools into virtual learning for 10 months. Undeterred, the board team of Chair Tyler Murphy, Vice Chair Amy Green, and Board Members Stephanie Aschmann Spires, Tom Jones and Christy Morris met each challenge head on, committed to listening to stakeholders, returning to in-person learning, and finding a superintendent to match the vision and values of the community. Lines of communication were established, including weekly newsletters, video updates, and public comment during board meetings. Just seven weeks into 2021, Fayette County Public Schools campuses welcomed students back to in-person learning. The board launched a nationwide superintendent search, finding creative ways to engage the community that included more than 60 virtual listening sessions, video interviews, surveys, public forums, and a socially distant meet and greet. Following input from thousands of students, employees, families, and community members, the board hired Superintendent Demetrus Liggins to complete the “team of six.” Other accomplishments include lowering the local property tax rate, adopting a budget that prioritizes investments in students and those who educate them, authorizing an external review of district operations, giving teachers and classified staff a raise for the first time in five years, and launching an update to the strategic plan to guide the district for the next seven years. Communities across the nation traditionally observe School Board Recognition Month each January, recognizing their locally elected board members for their service. Our Fayette County Board of Education has certainly given us a lot to celebrate!

Tyler Murphy’s passion for education was fostered by his own public school teachers as well as his experience as a student at Transylvania University, before he channeled it into his career as a high school social studies teacher.

Speaking with Amy Green of the Fayette County Board of Education, it’s clear what motivates her service.

When the opportunity to run for the Fayette County Board of Education arose in 2018, Murphy saw it as a way to combat the toll that he saw politics taking on local public education. “Since I was uniquely positioned to lend a classroom educator’s voice to the decision-making table, I felt I could add needed and valuable perspective to support education,” Murphy explained. “Serving on the board of education while also teaching in the classroom has helped me gain important insight to improve my work in both realms to better serve our children, staff and families.” As Murphy himself reflected, his role as an influencer is one that depends largely on the community he serves. “As I often say, it takes a village to raise a child and it takes a village to support a public school system,” he concluded. “A board chair, superintendent or board of five individuals cannot effectively engage in the important work of our district without the help, support, engagement and investment of our entire community.”

They are our future.” Growing up, Green herself experienced poverty, seeing firsthand how generosity, kindness and the availability of opportunities can change young lives. She graduated as the valedictorian of her high school in Shelby County, attended the University of Kentucky — where she has worked as a faculty instructor for the mathematics department — and has served as a teacher at Paul Laurence Dunbar High School. “I have a unique vantage point on public education and community leadership being a mother, a school volunteer, a former PTA executive board member, a former SBDM (school-based decision-making) council parent representative and a lifelong professional in education,” she explained. “I try to live a life that my children can look on and say that they are proud of their mom. As the CEO of Spires Strategies, helping local clients with business strategies and executive coaching, as well as a foster parent who has opened her home to more than three dozen children, Spires is particularly focused on helping those most in need.

For his part, Jones has served Fayette County’s students and their families as a leader who guides one of Lexington’s most important and influential institutions.

“Our families are struggling and FCPS needs to work with our community partners to ensure that all students have their basic needs met and the tools for success,” she said.

Faster Way to Fat Loss

Keto

The Ketogenic diet, better known as Keto, focuses on foods that provide healthful fats, adequate protein, and a low number of carbs. This diet works by depleting the body of its sugar reserves, so it breaks down fat for energy. This process is called ketosis and happens when your body doesn't have enough carbs to burn for energy, resulting in weight loss. Keto boosts your metabolism and reduces appetite, can improve acne and PCOS symptoms, and even reduce high blood pressure.

Intermittent Fasting

Intermittent Fasting is an eating pattern that cycles between periods of eating and fasting. For example, the most common methods of IF include fasting for 16 or 24 hours twice a week, but you can fast however you see fit. The interesting thing about this diet is it doesn't specify what foods you should eat, but only when you should eat them. Now that probably doesn't mean fasting for 10 hours then scarfing down pizza and cake; instead, you'll be sticking to a healthy, well-rounded diet, relying on intuitive eating to dictate the amounts you consume. Because you're eating less food, this can lead to an automatic reduction in calorie intake, allowing the body to use fat as its primary source of energy.

The MIND Diet

The MIND Diet is not so much about losing weight, but is designed to prevent dementia and loss of brain function as you age. Recommended foods include vegetables, fruits, and nuts, while foods to avoid include butter, red meat, and fried foods.

Hiking

Hiking, especially when you're doing it with dogs, dates, or dads, can be a fun and healthy activity. Hiking not only helps you clear your mind but also gets your heart rate up, resulting in a great cardio workout. Like any cardio, hiking reduces your rate of heart disease, stroke, high blood pressure, and high cholesterol. Hiking with others can strengthen relationships and bonds while also contributing to your own feeling of relaxation and increased wellbeing. If you would prefer to hike alone, bringing your dog along is a great way to work in some exercise for them and you!

Breathwork

Breathwork is any breathing exercise or technique that can help balance the mind and body, improve mental health, and reduce stress. If you don't have much time to practice breathwork, a 20 to 30-minute session in the morning one to two times per week would be ideal. Some breathwork practices include shamanic breathwork, vivation, clarity breathwork, and transformational breath. Specific exercises you can try are box breathing, 4-7-8 breathing, and diaphragmatic breathing. Inscape, Headspace, Calm, and Breathe Easy are all apps you can download to learn more about breathwork.

Sleep Hygiene

Sleep hygiene refers to healthy sleep habits that are important for mental and physical health as well as overall quality of life. Some healthy habits we recommend are keeping a consistent sleep schedule, turning off electronics 30 minutes before bed, exercising regularly, limiting caffeine intake close to bedtime, and having a comfortable sleep environment. Managing stress before bed can also help you sleep more soundly at night. You can do this by meditating, journaling, reading, or using a weighted blanket to help with anxiety and insomnia.

Adaptogens

Adaptogens are non-toxic herbal supplements that help the body resist stressors of all kinds and adjust to life's little doozies. Benefits include improved attention, lower stress levels, balanced hormone levels, boosted immune system, and improved organ function. Each kind of adaptogen has a slightly different role, so base your decision on the specific area you want to address. Start off by taking one adaptogen at a time and find a creative way to incorporate it into your routine, like putting it in a smoothie or latte, then rotate the type of supplement every six weeks.

Manifestation Journal

A manifestation journal is a physical journal where you can write down all of the positive things you're hoping to attract into your life. You can obviously write anything you want in your journal, but make sure to be specific in spelling out exactly what you're manifesting. Once you've written down your ideas, try to internalize your manifestation to bring them closer to you. Journaling for at least 20 minutes a day, manifesting or simply just writing about your day, can lower depression, improve communication skills, and be more mindful of stress reduction, sleep habits, and creativity. •

GET T ING TO KNOW ST EPHANIE She earned her first degree in fine arts and second in interior design. She has a love for architecture, art history, entertaining and chinoiserie style. Her work as been featured on oprahdaily.com as well as multiple design platforms.

How would you describe your style? I consider my style Grandmillennial. Grandmillennial design incorporates vintage pieces, antiques and old world decor paired with modern day traditional design features. It combines French Country and English features, along with clean lines of modern day furniture. I grew up surrounded by similar brands and pieces that I use in my designs today. Anything I create always has art history behind it. Meaningful pieces share a story, create a sense of interest and add color and dimension to a space.

W hat are the essential elements of your décor and design? Some key pieces I have made a part of my interior design style throughout the years are Jasperware, Royal Coppenhagen dishware and Mackenzie-Childs accessories. My grandmother collected Jasperware, both my mother and my grandmother were avid Royal Copenhagen enthusiasts, and I grew up surrounded by the original Mackenzie-Childs. Nothing adds a gleam to a setting like Waterford crystal or tiny French Limoge boxes.

There are specific accent pieces I feel complete every Grandmillennial and traditional style home. They give a home that "Southern charm" feeling and a sense of femininity. W hat is one room in our homes that you think needs special attention? One of the most important spaces in a home is the bedroom. We spend half of our days there, and it’s a place for relaxation and recharging. This signature space represents you and your style. Investing in quality linens that provide both comfort and style will create a welcoming and personalized feel for you too enjoy. I prefer sheets that feature fine embroidered edging, monogrammed pillow cases, and shams. I love a scalloped coverlet paired with a soft duvet and cover.

Your tips for hosting an unforgettable event at home? I often use nontraditional colors when decorating and styling for the holidays. There are certain complementary colors I like to work with such as green and pink, as well as blue and white. Both tones always work well with one another and exude a whimsical and updated feel. When throwing an intimate or grand soirée in your home, you need three important entertaining essentials. There should be plenty of indulging food, limitless libations, and enjoyable music. For a quick and delicious appetizer I love a sliced baguette, brie or feta cheese, fresh cilantro, and a fig or pesto spread. It’s always a hit and so simple to throw together. A fabulous rose’, champagne or classic wine is perfect to serve up in stunning stemware.

Just like people, animals are susceptible to developing cancer. The Veterinary Cancer Society estimates that 1 in 4 pets will develop cancer during their lifetime and they say it is the leading cause of death in pets that are beyond middle aged with nearly 50% of dogs over the age of 10 developing cancer. Fortunately, there are a variety of cancer treatments commercially available for our pets as well as many new treatment options being studied each year. Prognosis, of course, is largely dependent on the type of cancer and early detection. As your pet ages, here are some of the top cancer warning signs our team says you should be on the lookout for: • Abnormal or rapidly growing swellings

• Difficulty eating, swallowing, or breathing

• Sores that do not heal

• Lameness

• Loss of appetite and weight loss

• Difficulty urinating or defecating

• Bleeding or discharge from body openings

If your pet begins developing any of the above symptoms, schedule a check-up with your primary care veterinarian right away. Diagnostics such as radiographs, ultrasound, or bloodwork may be indicative of cancer, but ultimately a biopsy, fine needle aspirate, or CT scan will need to be performed to determine what kind of cancer is present as well as stage the progress and grade of the cancer. Often times, these more advanced diagnostics will need to be performed by a specialist. Ask your veterinarian for a referral to a board-certified oncologist, internal medicine specialist, or surgeon for more advanced diagnostics and to discuss treatment options for your pet. Once referred to a specialist, it’s important to know what to ask during your consultation. For some, a frank discussion on prognosis is all that is necessary for decision making. For others, a clear understanding of the risks and effects of the various treatments available is important in deciding next steps. Keep in mind that veterinary medicine is an inexact science and the future of any patient or their individual response to treatment is unknown. Even the best specialists won’t be able to predict exactly what will happen, but they should be able to help you understand the range of possibilities to help you make the best decision to maximize quantity and quality of life for your beloved pet. While we were all probably hoping for a little more certainty in 2022, it still feels like a lot of our travel plans are up in the air. If you’re planning a spring or summer vacation, here are some tips to help make the entire process as smooth and worry-free as possible.

Make Use of Credits

If you have airline ticket credits from canceled flights in 2020, many expire this year. Make sure to check the expiration deadline. Some travelers who originally had international plans are sticking to domestic flights only, which may result in a partial refund or additional airline vouchers; you’ll have to check with your airline for exact details. However, most airlines are not fully refunding these credits – and many won’t allow transferring the tickets to another person – so use ‘em or lose ‘em.

Do Your Research

It’s more important than ever to get Googling if you want to take a trip. Look into the current situation in your destination and whether your hotel and transportation offers flexible cancellation policies. Some travel destinations are now requiring special insurance or proof of vaccination, as well. Arm yourself with as much information as you can before you commit. On the flip side, a little digging might turn up some great deals on certain locales!

Check Your Passport

When’s the last time you looked at your passport? Many, many travelers are realizing too late that their passports have expired. You also want to make sure your passport, ID and travel ticket names are an exact match. Making a copy of the photo page of your passport isn’t a bad idea, either: if your passport gets lost, having a copy can make the replacement process so much smoother.

Trust a Professional

Many people skip consulting travel agents or advisors, but this year especially, it may be more beneficial than ever before to trust your travel plans to a professional. These experts are staying upto-the-minute on travel advisories, restrictions and deals, and will best understand exactly when you need to book each leg of your adventure.

Treat Yourself

Pro:

The most obvious reason why a group trip is a great choice is that you get to share a magical, memorable experience with your loved ones. Having the opportunity to connect in this way to your family, friends or even colleagues is absolutely priceless. With Covid still looming, traveling with your own crew can make it easier to limit your contact with other people. Just be sure to make rules about what level of exposure you’re all comfortable with in your time apart during the trip! Traveling in a group can mean huge cost savings. If you share a single space, the price breakdown often beats individual hotel fare. Many modes of travel offer companion pricing while certain venues will offer group

rates if your cohort is large enough. On top of that, you can split costs of food and more!

Con:

For every person you add to the party, you’re adding a new personality and different interests. The wrong mix can put a real damper on everyone’s fun. Clashing personalities, strained relationships, naysayers… it’s always a mixed bag. If this is a concern for you, be sure to carefully plan to separate people who don’t get along or to accommodate people who tend to poo-poo every idea for fun. Another big con is that you lose a lot of the flexibility that solo travel offers. It’s harder to follow your whims when you have your fellow travelers to consider. You may find yourself passing up on experiences that you’d love to enjoy. A final “con” is the financial considerations. Splitting the costs for various aspects of travel can become a real headache. If someone in your group is struggling financially, it may fall to others to help foot the bill. And let’s be honest: someone is always going to weasel out of some of the expenses.

BBQ Sauce If there's one thing Kentuckians know, it's barbeque. A perfectly tangy BBQ sauce helps take your 'cue to the next level and leaves your guests with a finger-lickin' experience. You can purchase delicious BBQ sauces at local businesses around Lexington, like Red State BBQ, The Mousetrap, and J Render's Southern Table & Bar. If you would rather make your own BBQ sauce like a true southern belle, try making a traditional Western Kentucky mutton barbeque sauce. Being from Western Kentucky, mutton is a staple of barbeque. If you haven't tried it, I promise you're missing out.

Spices Though you don't need to stock your spice cabinet with every seasoning known to man, you do need a few basics to spice things up. We recommend going with what you like first and foremost - don't like cumin? Don't use it! Starting with the basics – garlic powder, onion powder, red pepper

flakes, dried herbs, chili powder – allows you to figure out what you like and how to use spices in different recipes. You can even make your own specialty mixture once you figure out what you like to use on poultry, seafood, or red meat.

Pecans Because you never know when you're going to have to whip up a pecan pie for unexpected guests! My family has a pecan pie (actually a few) at every holiday, as I'm sure most families in the south do. Pecans are sweet and buttery, making them a perfect option for desserts - yes, desserts is plural! From turtles to shortbread, brownies to Puppy Chow, pecans belong on your table all year long.

Buttermilk To call buttermilk an essential for southern cooking is an understatement. Use the carton that's been sitting in your fridge to make buttermilk waffles for the family, fried okra,

ranch dressing, or chicken and dumplings. Of course, we couldn't forget about every southerner's favorites. Mix your buttermilk with your cornmeal, plus a few extra ingredients, and get some lip-smacking fried chicken or dangerously good cornbread. And the best, of course, would be buttermilk biscuits!

Tony Chachere's Southerners fear no seasoning. The more flavor, the better! Tony Chachere's Original Creole Seasoning will leave you wanting to add a dash to any and everything. Trust me; my dad uses it on almost every dish. This classic seasoning enhances the flavor of meats, seafood, poultry, vegetables, eggs, barbeque, french fries, and more. Tea Bags Tea bags are an absolute must in a southern pantry. A glass of ice-cold sweet tea on a warm day always hits the spot if it doesn't, you're clearly not a true southerner! A good southern sweet tea is similar to classic iced tea, with just a little bit more sugar. (Okay, a lot more sugar, but we don't judge.) All you have to do to make this classic is steep the tea bags for a couple of minutes and add sugar – though simple syrup and a pinch of baking soda is a magic touch. If that's not sweet enough for you, add lemonade to make a refreshing Arnold Palmer.

Bourbon If you live in Kentucky, you know you have to have at least one bottle of bourbon in your home at all times! Place a bottle of Kentucky's native spirit on your shelf for a nightcap, or use it in your favorite recipes. Add it to your mamaw's pecan pie recipe for an extra bit of kick, or make a Kentucky classic like bourbon balls! If you prefer to sip your bourbon, a hot toddy is the way to go: bourbon, water, lemon juice, and honey are all you need.

Olive Oil A good olive oil allows you to make even the most uninteresting foods sing. The various health benefits associated with olive oil, including healthy monounsaturated fats, antioxidants, and anti-inflammatory properties, make it a great option to use in almost all of your dishes. It's basically liquid gold, so go in with a healthy drizzle! From simple sauces to desserts, you can use olive oil to make a classic vinaigrette, basil pesto, marinated manchego, roasted cherry tomato Caprese, or even the best olive oil cake ever. Of course, you can also use it to make an easy,

delicious bread dipping oil that will be your go-to with your freshly made focaccia bread.

Chicken Stock Much like olive oil, chicken stock is basically liquid gold. The versatility of chicken stock makes it perfect to use in many recipes, like a base for chicken noodle soup, a flavor intensifier for rice, braising meat, and much more! If you're looking for a quick and easy option, store-bought is fine. But if you're ready to take on the task, homemade broth tastes even better, and you can control the salt and flavoring. With some leftover chicken, a couple of vegetables, and tasty seasoning, you can whip up a delicious chicken broth in no time. Place some in the freezer for long-term storage and take it out in a couple of months when you're craving a hearty soup or stew.

Bread We recommend always having some kind of artisan loaf on hand, whether it be brioche, ciabatta, focaccia, or a classic sourdough. This is the jumping-off point for delicious dinners, fancy appetizers and tasty sandwiches. If you want to take it one step further, bake your own loaf. Your guests will be happy you chose to go the extra mile for quality ingredients.

Canned Tomatoes If you grew up canning tomatoes as a "fun bonding" activity with your family, you know that it's a long process, but the result is delicious tomatoes months down the road. Whether you like them whole, crushed, diced, or as a paste, tomatoes can be used in all kinds of recipes. Some of our favorites include a comforting tomato soup (with a grilled cheese, of course), a traditional Bolognese for your next pasta and wine night, hearty chili for those brisk winter months, or fresh huevos rancheros for your brunch get-togethers.

Hawaiian Rolls You always need a good roll at southern gatherings, and Hawaiian rolls are a fan favorite with their fluffy, melt-in-your-mouth flavor. One of my favorite ways to indulge in this sweet bread is serving it stuffed with ham, melted cheese, and topped with poppy seeds. They make great sliders. Smoke some pork, lather it with BBQ sauce, and you'll have a delicious, easy pork mini sandwich. No matter how you use them, just know you better buy extra because it's hard not to eat these things right out of the package! Not into the sweet side of things? Cheese If your guilty pleasure is eating cheese straight out of the packaging as a late-night snack, we're in the same boat. But it's a southern hospitality staple. When unexpected guests drop-in, you'll want to have something on hand to make a spontaneous snack spread. We recommend keeping the basics; a sharp cheddar, brie, feta, and mozzarella. This also ensures that you always have something perfect to pair with your nightly glass of wine!

Rice Almost no meal is complete without a side of rice. Some people might think that a rice-based dish equates to heavy and dense, but that's far from the truth - you can make a beautiful, light and tasty dish with various kinds of rice. It's sometimes difficult to know what type to use. Long-grain rice ends up light and fluffy, while short-grain rice is almost

round and tends to stick together when cooked. Brown rice is tan, has a somewhat chewy texture and a nutlike flavor. It also has more nutrients than white rice! White rice is still nutritious and goes well with many dishes, like a zucchini rice gratin, cheesy broccoli and rice casserole, or a creamy risotto.

Cast iron skillet You're going to need a way to cook all of your favorite recipes, and a cast iron skillet is the perfect way to do so. They're inexpensive, virtually indestructible, versatile, and stay seasoned to give you even more flavor when cooking. From Our Table to Yours... Cooking is about nourishing bodies and bringing people together around a table. But for anyone who has experienced a proper Southern spread, you know: Southern cooking is about so much more than feeding one another. It’s about making the most with the least and transforming humble ingredients into something that feeds the spirit. Think about your favorite Southern dishes. Your mind is probably dredging up a hearty bowl of chicken and dumplings, a spread of beer cheese and crackers, honey-drizzled cornbread with soup beans or collard greens, bourbondrenched bread pudding, fried catfish with crunchy hushpuppies, boiling hot burgoo, steamin’ hot biscuits and a gallon of sweet tea. The thought of each dish is like a balm for the soul, soothing you with the memory of a full belly and the glow of love. But when you think about it, each dish is the end product of generations of hard work, perserverance and innovation. It’s an unbroken line of love between our ancestors and our own families. As we head into the New Year, let’s honor that connection by making dishes that are as much a part of our shared identity as bluegrass and horses. Let’s celebrate all of the unique ingredients that make up our favorite southern spreads. And let’s raise a glass (of bourbon, naturally) to the southern cooks who came before us in the kitchen!


Biscuits for Breakfast (or whenever !) 2 cups (240g) King Arthur Unbleached All-Purpose Flour 3/4 teaspoon salt 1 tablespoon (11g) granulated sugar 2 1/2 teaspoons baking powder 4 tablespoons (57g) unsalted butter, cold 1/4 cup (46g) vegetable shortening, cold 1 large egg 1/2 cup (113g) milk, cream, or half-and-half Mix together the dry ingredients. With two knives, a pastry blender, your fingertips, or a stand mixer, cut or rub the butter and shortening in until the mixture looks like breadcrumbs. Whisk the egg and milk together. Add them to the dry ingredients all at once, mixing quickly and gently for about 20 seconds until you have a soft dough. Dump the dough onto a lightly floured work surface. Knead it a couple of times to bring it together. With the help of a dough scraper, shape the dough into a 6” x 6” square, about 3/4” thick. Run a rolling pin over the top once to even it out. Wrap it in plastic wrap, and place it in the freezer for 1 hour. Preheat the oven to 400°F. Remove the dough from the freezer, unwrap it, and set it on a work surface. It’ll be very stiff, but still soft enough to cut with a sharp knife, sharpened dough scraper or rolling cutter (pizza cutter). Cut the dough into nine 2” squares, and place the squares on a lightly greased or parchment-lined baking sheet. Bake the biscuits for 16 minutes, or until they’re a light, golden brown. Remove them from the oven, and serve hot, warm or at room temperature. Store, well-wrapped, on the counter for 3 days. Freeze for up to 3 months. Courtesy kingarthurbaking.com

Sausage Gravy 1 pound bulk pork sausage 1/4 cup all-purpose flour 2 cups milk (2% or whole) Kosher salt and black pepper to taste Heat a skillet over medium heat. Cook sausage, breaking into chunks until crumbled and browned through.

Add the flour and cook until dissolved, stirring with a spatula. Stir in the milk. Cook while whisking until the gravy thickens and starts to bubble. Note: your gravy will thicken as it starts to cool. If you find that your gravy is too thick, simply return it to the heat and add a splash of milk. Season liberally with salt and black pepper.



Oven-Baked “Fried” Green Tomatoes Prep time: 15 minutes Cook time: 25-30 minutes Yield: 4 servings Serving size: 3 slices 1 1/2 pounds green tomatoes (about 3 large green tomatoes) 1/3 cup low-fat buttermilk 1 teaspoon hot sauce 1/2 cup panko bread crumbs 1/4 cup ground flax meal 1/4 cup reduced-fat Parmesan cheese 1/2 teaspoon cayenne pepper 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon paprika salt, to taste black pepper, to taste Preheat the oven to 400°F and lightly coat a baking sheet with nonstick cooking spray and set aside. Slice the tomatoes into twelve ¼-inch to ½-inch slices. Set up two shallow bowls. Fill one bowl with the buttermilk and hot sauce. In the other bowl, combine panko, flax, Parmesan, cayenne pepper, onion powder, garlic powder, paprika, salt, and pepper, and mix together. Dip each tomato slice in the buttermilk mixture, allow the excess to drip off and then transfer to the Panko mixture and lightly press breadcrumbs on the tomato on both sides. Arrange tomato slices in a single layer on baking sheet and bake for 25-30 minutes, flipping halfway through. Render’s Sweet Jalapeño Cornbread 1 c. butter, melted (2 sticks) 1 1/3 c. sugar 4 large eggs 2 c. buttermilk 1 tsp. baking soda 1 tsp. salt 2 c. all-purpose flour 2 c. yellow cornmeal 1/2 c. diced jalapeño pepper (2 large peppers) Preheat oven to 375 degrees. In a large bowl, whisk together melted butter and sugar. Add the eggs and whisk until combined. Add the buttermilk and baking soda and whisk to combine. Add the flour, cornmeal, peppers, and salt. Using a spatula stir until just blended. Do not over mix. Pour batter into a greased 13x9 pan. Bake for 38 minutes, or until toothpick inserted in center comes out clean. Quick Homemade Hot Honey 1 cup honey 2 tsp. red pepper flakes 1 T apple cider vinegar Combine honey and pepper flakes in a saucepan. Bring to a simmer over medium heat. Remove from heat and stir in apple cider vinegar. Cool to room temperature and transfer to a glass jar. Great over cornbread or biscuits!

Dupree’s Poblano & Cheddar Corn Pudding 8 large eggs 2 c. + 6 T heavy cream 5 oz. + 2 oz. shredded sharp cheddar cheese 4 c. fresh corn kernels (or 5 c. frozen corn) 1 small poblano pepper, roasted, peeled, seeded and diced (small like a corn kernel) 4 tsp. flour 1/2 tsp. baking powder 5 T sugar 1 1/2 tsp. salt 1/2 oz. melted butter Mix 5 oz. cheese with corn and poblano peppers. In a separate bowl, mix the flour, baking powder, sugar and salt. In a food processor, pulse 1/4 of the corn/cheddar/ pepper mixture with 2/3 cup of the heavy cream. Then add it back to the original corn mixture. Whisk the remaining heavy cream with the cracked eggs. Add the dry ingredients to the corn mix. Whisk in the wet ingredients. Finish with melted butter. Pour the mixture into a sprayed 9x13 inch casserole dish. Bake, uncovered, on 275 degrees for approximately 1 hour, until the eggs are set and it is lightly golden on top. Cover loosely with sprayed aluminum foil if the top browns before the center is set. Top with remaining shredded sharp cheddar before serving. Enjoy! *Casserole can be baked a day ahead and reheated, covered, on 350 degrees for approximately 25-30 minutes, then add the sharp cheddar topping and enjoy! Carson’s Bread Pudding 12 oz. raisins 4 oz. brandy 3 oz. unsalted butter 4 lbs. Sister Schubert Rolls 2 qts. + 3 c. heavy cream 3 c. liquid egg 32 oz. granulated sugar 2 1/2 T vanilla extract 1 T cinnamon Cut the rolls into 1/6 squares and place in large mixing bowl. (Let bread sit out to dry some. It will absorb more of the cream.) Pour heavy cream over bread and soak for 30 minutes. Place raisins and brandy into the skillet and flame off brandy (which means to catch the brandy on fire and remove from heat, continually stir the raisins with a rubber spatula until the flame has gone out) then add the butter and set to the side to allow butter to melt. Put liquid egg, vanilla, cinnamon and sugar into large mixing bowl and blend. Next add the raisins, butter and brandy mixture to mixing bowl and blend with rubber spatula. Once evenly blended, add to the bread mixture and fold it in gently so bread doesn’t break down. Pour mixture into buttered hotel pan. Once you have evenly spread out the mixture, take your rubber spatula and scrape out remaining liquid from the mixing bowl. You want to use this liquid to pour around the sides of the pan or any posts that need additional liquid (this gives a good edge to the pudding). Bake at 250° in oven for 1 hr. 30 min. and rotate every 30 min. Check the internal consistency of the pudding to see if it is done (insert a toothpick in several different areas; if it comes out clean, it is done. If pudding is on the toothpick, then it needs to cook a little longer.) With the pudding being internally done, you now want to turn the oven to 350° and brown the top of the pudding, about 5-10 min. When completely cooled, cut into 15 equal pieces and refrigerate.

Carson’s Banana Bourbon Bread Pudding 1 bread pudding portion ½ T butter oil 1 half banana (into 5 slices) 2 oz. caramel sauce 1 T bourbon/banana liquor mixture Warm bread pudding portion. Place butter oil in sauté pan and allow to get hot. Place bananas in sauté pan and get a quick saute on bananas without breaking them down. Add caramel sauce to pan and allow sauce to get hot and bubbly. Deglaze the pan with the bourbon/banana liquor mixture. Place banana slices on top of bread pudding and pour sauce over the entire pudding, allowing it to pull within the dish. Top with powdered sugar, whipped cream and a sprig of mint. Chef Cole’s Pot Roast 1 Chuck Roast 2-3 pounds 2-3 large carrots 2-3 red onions 4-5 stalks of celery 4-5 Idaho potatoes 3-4 boxes of low sodium beef broth Two 14 oz. cans tomato paste Two 14 oz. cans diced tomatoes Kosher salt Black pepper Vegetable oil Preheat oven to 325 degrees. Place a heavy bottomed pan or iron skillet over high flame. While skillet is getting hot, season the chuck roast liberally with salt and pepper. Add ¼ cup vegetable to skillet. When oil reaches the smoking point, add chuck roast. Brown on both sides 3 to 4 minutes per side, or until meat is evenly caramelized. Add seared chuck roast to a roasting pan. Smear both cans

Hush Puppies 3/4 c. flour 3/4 c. cornmeal 1 T sugar 1 1/2 tsp. baking powder 2 tsp. salt 1/2 tsp. garlic powder 1/2 tsp. onion powder 1/2 tsp. paprika 1/4 tsp. pepper 1 large egg 1 c. buttermilk 4 T. butter (cold) Preheat 2 inches of oil to 365 degrees in a skillet. Whisk together flour, cornmeal, sugar, baking powder and spices. Stir in egg and buttermilk. Cube butter into small pieces, and add to mix. Drop rounded teaspoons of batter into the oil, allowing to fry until golden brown (about 2 minutes). Remove to a paper towel lined plate. (adapted from therecipecritic.com)

While roast is cooking peel and chop carrots into 1-inch circles and reserve. Chop celery into 2-to-3-inch pieces and reserve. Peel onions and slice into 1 inch circles and reserve. Wash potatoes and set aside to chop later. After 1 1/2 hours, pull the roast out of the oven, uncover and check the seasoning of the broth. You will want it to be slightly salty. Slice potatoes in half long ways and cut again into 1 to 2 inch half moons. Add remaining ingredients to the roasting pans. Slow-Cooker Chicken Pot Pie


Prep Time: 10 minutes Cook Time: 4 hours on high or 8 hours on low 1 pound boneless, skinless chicken breasts 1 small onion, diced 3 1/2 celery stalks, diced 2 (10.5-ounce) cans Campbell’s Healthy Request condensed cream of chicken soup 1 cup fat-free milk 1 teaspoon garlic powder 1 teaspoon dried thyme 1/2 teaspoon salt 1/2 teaspoon black pepper 1 (16-ounce) bag frozen mixed vegetables, thawed 2 tablespoons chopped fresh parsley 1 (12-ounce) can Pillsbury Grands! Jr. Golden Layers Flaky Biscuits Place the chicken breasts in a slow cooker. Top the chicken with the onion and celery. In a small bowl, combine the chicken soup, milk, garlic powder, thyme, salt and pepper and whisk until mixed well. Pour the mixture into the slow cooker. Cover and cook on high heat for 4 hours or on low heat for 8 hours. About 30 minutes before serving, remove the chicken from the slow cooker with a slotted spoon and shred with two forks. Return the shredded chicken to the slow cooker and stir in the vegetables and parsley. Cook for an additional 30 minutes. Preheat the oven to 400°F. Oven-Baked Crispy Southern “Fried” Chicken Prep Time: 10 minutes Cook Time: 30 minutes 4 (4-ounce) boneless, skinless chicken breasts 3/4 cup fat-free milk 1 tablespoon Frank’s RedHot sauce 1 cup cornflakes 1 teaspoon paprika 1 teaspoon salt 2 teaspoons black pepper 1/2 cup panko bread crumbs Place the chicken breasts between 2 pieces of wax paper and gently pound with flat side of meat mallet or rolling pin until the breasts are about ½ inch thick. Cut each breast into 3 equal pieces. In a small bowl, whisk together the milk and hot sauce. Place the chicken pieces in a large resealable bag and pour in the milk mixture. Squeeze out excess air, seal the bag, and marinate in the refrigerator for at least 4 hours and up to overnight (depending on how much time you have). When you’re ready to cook, preheat oven to 400° F. Coat a baking sheet with cooking spray. In a food processor, combine ½ cup of the cornflakes, the paprika, salt, and pepper. Pulse until the cornflakes become crumbs. Pour them into a shallow baking dish and stir in the panko. In a small resealable bag, gently crush the remaining ½ cup cornflakes by hand into small pieces. Transfer the hand-crushed cornflakes to the panko-crumb mixture. Remove the chicken pieces one at a time from the marinade and place in the cornflake mixture. Evenly cover each piece of chicken. Arrange the chicken in a single layer on the baking sheet. Bake for 15 minutes at 400° F, then reduce the oven temperature to 350° F and bake until the chicken is cooked through and crispy, 5 to 10 minutes longer. Tomato-Basil Smoked Chicken 1 smoked or roasted chicken cooked, hot 12 oz. gnocchi, fresh or packaged 2 oz. olive oil 1 T garlic, minced 12 heirloom cherry tomatoes 8 cloves garlic 12 oz. roasted chicken stock 3 T butter, cold 4 T basil leaves, ripped Parsley or spring herbs Carefully remove the rib, breast and back bones from the hot chicken; separate the breast quarter from the thigh/ leg quarter, cutting each quarter in half. Place each piece skin-side down in a hot oiled cast iron skillet in a 400°F oven to crisp the skin for approximately 3-4 minutes. Add the gnocchi into salted boiling water and cook until

they float. In a sauté pan, over medium-high heat, add the oil and garlic to flavor the oil. Add tomatoes to the pan and quickly toss in the garlic oil, then drain. Add the cooked gnocchi and garlic cloves, tossing to coat (all 30 seconds). Ladle the roasted chicken stock into the pan, bring to a quick boil, swirl in the whole butter; add the torn basil leaves. Neatly divide the chicken into large warm bowls, arrange the tomato- gnocchi mix around the chicken in the bowls. Pour the hot stock over and around the chicken; garnish with parsley or herb sprigs. Magnolia Bakery’s Banana Puddin’ 1 (14 oz.) can sweetened condensed milk 1 1/2 cups ice cold water 1 (3.4 oz.) box vanilla instant pudding mix 3 cups heavy cream 4 cups sliced barely ripe bananas 1 (12 oz.) box Nilla Wafers In a large bowl, beat together the sweetened condensed milk and water until well combined - about 1 minute. Add the pudding mix and beat well - about 2 minutes. Cover and refrigerate for 3-4 hours or overnight. It is very important to allow the proper amount of time for the pudding mixture to set. It will be watery if you don’t let it set up long enough.

In a large bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the pudding mixture until no streaks of pudding remain. Dessert can either be made in individual portions or in a large glass bowl with 4-5 quart capacity (a 9x13 baking dish also works). To assemble dessert, arrange 1/3 of the Nilla wafers covering the bottom, overlapping if necessary. Next, layer 1/3 of the bananas, and 1/3 of the pudding mixture. Repeat twice more, garnishing with additional wafers or wafer crumbs on the top layer. Cover tightly and allow to chill in the fridge for at least 4 hours - or up to 8 hours, no longer. As these clients have benefited from the firm’s bookkeeping, CFO oversight, benchmarking and forensic accounting services, many of them may not have been aware of the unique and inspiring journey that brought Peer House founder Ozlem Eva Davis to Lexington. Davis's journey to the U.S. is not just the inspiration behind her community and business leadership, it’s a reminder for many of us that the paths to our destinations are not always straight, that belief in tomorrow can get us through any day and that home is, ultimately, wherever you make it.

“Stories Of Survival” Davis was born in Hannover, Germany to a blue-collar family. Both of her parents worked two jobs each in janitorial services, mainly at the local hospital. She grew up with two older brothers from her parents’ marriage, as well as two stepbrothers from her father’s previous marriages. Davis's father was born in Xanthi, Greece, a city with hundreds of years of rich history that is rivaled only by the hometown of her mother: Istanbul, Turkey. Davis's own personal history is influenced greatly by the challenges forced upon, and eventually overcome by, her parents. “My dad was taken out of first grade, given a shoe-shining box and shown a corner so that he could start providing for his family,” Davis explained. “The same goes for my mom, she was

taken out of second grade and placed in an envelope factory to provide for her younger siblings. They lived during hard times and their stories of survival fascinated me. They grew up in one-room houses, literally.”

the neighbors knew each other, everyone took care of each other’s elders and children. There was not a single neighbor I could not knock on the door of and join for a hot meal.”

Her parents found their way to Germany as it sought to rebuild following World War II. Turkish immigrants flooded the country to accept “lower level” jobs, and Davis's parents were among them, arriving by train without knowing the native language.

“To Serve For Many More Years”

“Wonderful And Awful” Davis recalls her childhood experience as “wonderful and awful.” She cherishes her memories playing outside, making friends and gaining a scholarship to a private high school. She was even selected to host a national children’s show on television, becoming recognized by nearly every other kid she met. But her parents’ marriage was “tumultuous,” and when Davis was six, her mother moved with her back to Turkey, leaving her father behind in Germany. “Her reasons for leaving were many,” Davis recalled. “Dad was abusive and unfaithful toward her, she was ready to retire, but most importantly, she wanted me to grow up in Turkey, marry a Turkish man and take care of her in old age. As you can tell, that part did not go the way she hoped.” Davis missed her father, who would visit periodically, but when he retired and moved to Turkey with them, he had already begun showing early signs of Alzheimer’s. “He was not the same person in so many ways,” said Davis. “I had lost my dad before I could get him back. At the same time, my oldest brother who lived with us was battling a very severe drug addiction.” Davis was also subject to her mother’s extremely strict parenting style, which is very common in Turkey. “Her intentions were good, she was a deeply caring mom, but her actions were so scary to me,” Davis described. “It took me years to be able to forgive her, though I never stopped loving her and seeking her approval.” Still, in some ways, Davis feels that her childhood, tumultuous as it may have been, was critical to shaping her into the hardworking, positive and caring person that she is today. “We often lost power and water because these were resources that needed to be saved,” Davis recalled. “We heated our house with a wood- and coal-burning stove my entire childhood in Turkey. We never had centralized heating and air. We did not have a water heater — mom would boil water, have a hot bucket and a cold bucket of water, and wash me in a pan next to the stove during the winter… I loved it, all of SPONSORE D BY LG&E

Eventually, Davis became the first member of her family to graduate college. In 2000, internet access was just becoming widespread in Turkey, and Davis met an Eastern Kentucky University (EKU) student living in Richmond on a dating website. After nine months of online dating, he came to visit her in Turkey and the two decided to move together back to the U.S. and get married. What followed were several trying experiences with the U.S. Immigration and Naturalization Service (INS), odd jobs to make ends meet, and two failed marriages. Davis eventually went to EKU and received her degree in accounting, becoming a CPA and accepting a staff accountant job in Lexington. “I am very thankful that I started my life as a U.S. citizen in Richmond and Lexington,” Davis said, looking back. “I want to give back to the community that has been so welcoming to me… It is a wonderful feeling and blessing to be able to help others with your gifts, talents or just time and presence. I hope I will get to serve for many more years.” Eventually, Davis founded Peer House, which has served dozens of clients as well as supported numerous community programs, including Refuge for Women, Kentucky CASA Network, the YMCA and Women Leading Kentucky. Today, Davis is happily married to her husband, Michael, and they are navigating the challenging journey of parenting their kids. She said the biggest lesson she learned in life came from her husband. “Love is a decision, not a feeling,” she said This principle is now a core value of their family. Though aspects of her life in places around the world have been colored by hardships experienced by herself and her loved ones, those experiences have given her the unique perspective, work ethic and open heart that so many in Lexington benefit from today. “Having lived in Germany, Turkey and the U.S. and traveled to other European countries, I’ve been able to see things from different perspectives,” Davis concluded. “Due to the rocky path that led me to where I stand today, I know for certain that there is immense value in picking yourself back up time after time, dusting yourself off, making amends with people you hurt along the way and doing your best in leaving things a bit better than you did the day before.” •

During the New Year, as we gather with loved ones to enjoy the things that truly matter in our lives, our thoughts often turn to those who may be less fortunate. As we do, we remember the harsh truth that acute inequalities and struggles for even the most basic necessities sadly do not take breaks for the holidays. But many within the Lexington community confront this truth every day, working tirelessly to help resolve it. It’s worth taking a moment to highlight a few of the organizations who work year round to help relieve one of the most basic needs of the less fortunate: the food pantries that feed our neighbors.

Hope Center INSPIRATIONS:

How Lexington’s Food Pantries Are Feeding Those in Need by Peter Chawaga

Lexington’s Hope Center opened in June 1993 with a mission of serving the homeless beyond just providing food and shelter, quickly establishing a substance abuse recovery program, day labor program and more. But its food provision service is one of its most impactful programs, reaching those in need through its main Jacobs Hope Cafeteria, which is open to the public for dinner each night, as well as the cafeterias in its recovery centers and its mobile outreach program, which provides sack lunches to anyone in need in downtown Lexington every Monday through Friday. “At our main cafeteria, we typically feed 120 to 200 individuals per meal, three meals a day, 365 days a year,” said Carey Cairo, the volunteer and community relations manager for Hope Center. “Last fiscal year, we served 362,286 meals altogether.” Hope Center’s cafeteria in particular is a rewarding program for those seeking to give back this season, or really at any time of the year. “Come and volunteer to serve a meal with us!” Cairo encouraged. “Our kitchen staff and volunteers always have a great time and our volunteers continually comment on how much fun it is to serve meals — our clients are so grateful, and it’s a positive way to serve the community.”

God’s Pantry Food Bank In the 1940s, Mim Hunt, the founder of God’s Pantry Food Bank, left behind her profession as a child welfare worker after returning to her hometown of Lexington from New York


City. But when she witnessed the poverty plaguing her neighbors, she founded the food bank as a mobile operation in 1955, with the first pantry opened in 1959. Today, God’s Pantry serves 50 counties in Central and Eastern Kentucky through numerous programs, all dedicated to solving hunger. “The Fayette County Pantry Program serves those experiencing hunger through direct distribution at three different locations in Lexington,” explained Misty Beard, the community engagement and communications manager at God’s Pantry. “Through the Fayette County Pantry Program, we serve on average of 2,000 households per month. The Food Bank also works with many community organizations such as schools, shelters, meal programs and many more to meet those experiencing hunger where they are.” God’s Pantry partners with local organizations so that it can distribute its aid more widely, reaching communities directly, rather than expecting those in need to visit a central location. And over the decades that it has been pursuing this mission, its staff have found that the need for its services is much more widespread than many might think.

“There is a misconception that food bank visitors are those consistently living in poverty, but that’s not necessarily the case,” said Beard. “Food bank visitors very often live in a home where at least one adult is employed, and many are only relying on the food bank temporarily to get through a momentary rough patch… The position of not having quite enough money to cover every expense is not an uncommon spot for people to find themselves in.”

St. Luke Church

This dedication and willingness to meet hunger needs as they change have seen St. Luke become one of Lexington’s leaders in addressing hunger. Its team estimates that in November 2021, it served 602 households, representing 1,468 individuals, of which more than 400 were children. “As a volunteer, I am constantly amazed at the appreciation expressed by those who come for food,” said Mark Walz, Jr., the director of communications and technology at St. Luke. “They are very grateful for the food, but they are also very appreciative of the kindness and caring attitudes they receive. I also am impressed by the many who say, ‘I only come when I really have no other choice.’”

St. Luke Church, located on Alumni Drive in Lexington, has been a partner of God’s Pantry for almost three decades, serving as a community hub for food donation that evolves as community needs do. In 2010, it built an addition to its building, including a dedicated space for its food pantry which included a service entry and waiting room. In March 2020, in the midst of the COVID-19 pandemic, St. Luke recruited younger volunteers for its food donation program and saw those in need line up in their cars in its front parking lot, serving about 80 families per day.

eed Sheppard was genuinely surprised that some of his former teachers, family friends and many of his friends were standing and cheering for him when he announced he would play his college basketball at the University of Kentucky.

He also does extraordinary things off the court. He went to Lexington to surprise coach John Calipari and personally tell him he was committing to UK. He made his commitment at his high school before a youth camp so the youngsters could be part of the excitement.

"Then when I got home, a bunch of old teammates, friends and family along with a bunch of people I did not even really know were texting and congratulating me. It was really cool knowing they are all supporting me," said Sheppard.

"Those kids come to our games. I know if I was a little kid and looked up to somebody and they invited me to a big thing they were having, it would have meant a lot to me, and it meant a lot to me to have them there along with my teammates," Sheppard said.

The North Laurel High School junior guard is a four-star, consensus top 30 player in the class of 2023 recruiting rankings. However, in Kentucky, he's even more highly rated by most Big Blue fans because his father, Jeff Sheppard, was part of two national championship teams at UK and was the 1998 Final Four Most Outstanding Player. His mother, Stacey Reed Sheppard, is still 13th on the alltime UK scoring and sixth in career assists. "Kentucky, it just felt like home. The people around me felt like family. It felt different, and it has always been a dream of mine to play at Kentucky," Reed Sheppard said. He averaged 30.1 points per game and shot 41 percent from 3-point range last season at North Laurel, but his stock soared during summer league play. "A lot of people kind of questioned how good he was despite what he did for us and wanted to see him against national competition, but I see every day how good he is," North Laurel coach Nate Valentine said. "I am glad he got an opportunity to prove that last summer. I watch him every day, and nothing he did over the summer surprised me. He stands out all the time. He can just do things not a lot of players can do."

His older sister, Madison, stressed to him to look past facilities to see how players listened to coaches at schools he was considering and how they treat each other. "That was her big thing, and I did look at that. She always had good stuff to tell me, and that helped," Reed Sheppard said. His commitment ceremony was carried live on WYMT-TV. His decision made statewide headlines and was the main topic of conversation on sports talk radio across the state. Fans are anxious to see him play this season, and the North Laurel junior knows the spotlight will stay on him for two years until he gets to UK. "There was a lot of pressure not just to pick Kentucky but from the whole [recruiting] thing. You get phone calls every day, text messages every day," Sheppard said. "I am 17. I am a little kid. Having to deal with all that is a lot. It got overwhelming for a little bit." He added, "I knew what I wanted to do. I told my dad I did not want to wait and be overwhelmed. He said not to wait then, and we went ahead and did this, and I am glad I did."•

Dexter/Dexter: New Blood With the release of new episodes, it’s clear that many people missed out on Dexter the first time around. Catch up on both if you love to root for the bad guy or enjoy serial killer documentaries and podcasts.

From the creator of Downton Abbey, this drama set in 1880s New York City is sure to bring intrigue, snappy dialogue stunning costumes and incredible sets. The star-studded cast doesn't look so shabby, either. It premiers January 23rd on HBO Max.
