“When it’s time to party we will always party hard.” – Andrew W.K. As sad as it is that summer has wound down, it doesn’t mean the party is over. We might be taking off our bathing suits and changing into our favorite sweaters, but there are a whole lot of reasons to celebrate this fall and winter. We have three of the biggest party holidays all packed into a few short months: Halloween, Thanksgiving, and Christmas. Think about that for a moment. I guess we should call this the “holiday season” if we want to be politically correct. In addition to the holidays, there are hundreds of birthdays, sweet sixteens and weddings taking place in the coming months that will keep the party level high as the temperatures dip low. Speaking of weddings, did you know that 12/13/14 is the last sequential date of the 21st century? We sat down with brides and grooms who chose this December date for their special day. Did they pick this date for reasons beyond “being able to remember their anniversary,” or was that it? Read on, and hear what these lovebirds have to say. I almost forgot to mention that it’s gala season here in Bergen County! As the leaves fall to the ground, and the crisp air whirls around, hundreds of guests will pack banquet halls on both sides of the Hudson wearing their finest gowns and jewelry that only comes out for special occasions. Not sure what to wear? Flip to our fashion section to check out some of the hottest gowns and dresses for the rest of 2014. With the fire crackling in the fireplace, fall becomes the perfect time to entertain in your home. Not sure what to cook? We’ve got you covered. Chef David Burke, famous for his many restaurants in New York City and beyond, gave us a rundown of a few of his favorite holiday recipes. These dishes might not be the easiest to prepare, but your guests will surely be talking about your party until they finally convince you to host another one next year. Hand them a few cocktails from our recipe list, and they’ll be sure to have a great time. There’s one particular “occasion” I really want to focus on in this issue, and that’s the story of Steve Ciocci. Steve was diagnosed with brain cancer two years ago, but he knew that he wanted to live long enough to dance with his granddaughter on her wedding day. Six months ago, he found out that his tumor was inoperable. His family set out to make his wish come true, and the result is a beautiful, loving story we can’t wait for you to read. Our magazine is all about putting on and inspiring great celebrations. Whether you’re cooking for 20 at home, hosting a Halloween party for your children’s friends, or throwing a blowout wedding for 250 guests, Occasions is the go-to resource for them all. While we will surely miss the umbrellas in our cocktails, we look to this fall and winter with glowing optimism that the fun won’t stop. Simple Meets Special To transform a brunch from average to outstanding, follow these easy tips from Hollywood chef and caterer Paul McCullough.

Brunch is a fun and budget-friendly way for friends and family to get together. More than just a meal, brunch is the perfect way to celebrate baby showers, birthdays, family reunions and weddings. “There’s something revitalizing about friends and family coming together in the late morning, enjoying great food, coffee and conversation,” says McCullough. Your brunch will surely be one to remember if you take the time and effort to make it stand out. To get started, plan the menu around one of these simple, yet crowdpleasing recipes.

Coffee Granita

Brew two cups of double-strength coffee. Pour into a bowl and stir in a quarter cup of sugar until dissolved. Cool to room temperature. Mix in onehalf cup half and half. Place in an 8-inch square dish and freeze for two to two and a half hours. After the first hour, use a fork to scrape up the coffee crystals; scrape again at the second hour mark. Keep in the freezer until ready to serve. For an upscale presentation, serve in a martini glass and top with whipped cream and shaved chocolate.

Super Hero Scramble

Mix one pound sautéed spinach, one pound browned and crumbled turkey sausage, and one-half cup julienned sun-dried tomatoes, then set aside. Scramble eggs until almost done but still soft. Fold the spinach mixture through and then sprinkle with eight ounces of seasoned feta.

“A brunch should incorporate elements of breakfast and lunch with harmony. Contrast sweets like blueberry muffins and coffeeglazed scones with savory elements, like smoked salmon with capers and onions. Or try a scramble with new flavor combinations like chicken and asparagus or crab and avocado with a dollop of sour cream and chives.”


Once you’ve decided on the menu, set the stage for a special morning with these fresh presentation ideas: • Liven up bread baskets by lining them with fresh rosemary for added color and aroma. • A cheese board makes for an attractive and functional display. Create the perfect mix of flavors with this twist on a familiar adage: Something old, something new, something smoked, something blue (e.g., aged cheddar, fresh bocconcini mozzarella, smoked Gouda and blue cheese). Water crackers and sliced baguettes will round out the presentation nicely. • Create centerpiece arrangements using colorful veggies like Swiss chard, kale, parsley and bok choy. These beautiful and unique displays will cost less money than flowers, and can be incorporated into a meal in the near future. • An omelet bar requires a fair amount of prep work for all the toppings, but it’s a favorite for guests and a guaranteed way to satisfy picky eaters. Just remember to keep the guest list small or enlist a co-chef to handle all the enthusiastic orders.

From choosing the card or stationery that reflects your personal style, to accenting the letter with the right seal or stamp, every detail contributes to the thoughtfulness of the message.

Nicole Montecalvo knows the importance of recycling and its impact on the environment. The owner and creative director of NE Occasion grew up in the recycling business, and from a very early age, she realized how gratifying it could be to repurpose society’s castoffs by giving new life to discarded items. Montecalvo brings extensive experience to NE Occasion, a boutique business that specializes in creative event styling and design that includes comprehensive party planning services. Unlike many other planners, Montecalvo incorporates many aspects of reuse and upcycling into her work in order to ensure lasting memories for all of her clients. Only a few short years removed from Monmouth University, she has already started to make a name for herself. Montecalvo realized that event planning was her calling while she served as the Director of Public Relations and Event Coordinator for Bayshore Recycling, her family’s award-winning recycling business. During this time, Montecalvo coordinated and handled corporate and charity events which helped her to shape and hone her talents before launching NE Occasion. Her business venture began to come to life once she combined her passion for sustainable style, design, recycling, and upcycling, with her knack for entertaining. Many people assume that hiring an event

planner is a luxury reserved only for the affluent, but NE Occasion and Montecalvo demonstrate how that doesn’t need to be the case. BRECKENRIDGE BURRO 1 ounce Breckenridge Vodka 1 teaspoon simple syrup Juice of ½ small lime ½ cup ginger beer 1 sprig fresh mint IN A COPPER MUG, POUR VODKA OVER ICE. ADD SIMPLE SYRUP AND LIME JUICE. TOP WITH GINGER BEER AND STIR. GARNISH WITH MINT SPRIG SMACKED IN YOUR PALMS TO RELEASE THE OILS.

MASQUERADE COOKIES Servings: 2 dozen cookies

Ingredients:

2 ¾ cups all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 1 cup (2 sticks) unsalted butter, softened 1 ½ cups granulated sugar 1 egg 1 ½ teaspoons imitation clear vanilla extract ½ teaspoon imitation almond extract Orange, black, green, yellow, brown and violet royal icing colors, as desired Orange, yellow, lavender and black colored sugars, as desired Halloween jimmies, nonpareils and icing decorations, as desired Candy Melts candy Cookie sticks

Directions:

Preheat oven to 350°. In large bowl, mix flour, baking powder and salt. In second large bowl, beat butter and sugar with electric mixer until light and fluffy. Beat in egg and extracts. Add flour mixture to butter mixture 1 cup at a time, mixing after each addition. Do not chill dough. Divide dough into 2 balls. On floured surface, roll each ball into a circle approximately 12 inches in diameter by 1/ 8 inch thick. Dip eye and glasses cookie cutters in flour before each use. Arrange cookies on ungreased cookie sheet. Bake 8 to 11 minutes or until cookies are lightly browned. Cool completely on cooling grid. Decorate as desired using tinted royal icing, colored sugars and Halloween icing decorations. Use melted candy to attach sticks to backs of cookies; chill until set.

PUMPKIN SPICE POPCORN Servings: 6 cups

Ingredients:

6 cups popped kettle corn 2 cups mini pretzel twists 1 package (10 ounces) Pumpkin Spice Candy Melts candy 1 bottle (2.5 ounces) Pumpkin Mix Sprinkles

Directions:

Spread popcorn and pretzels on parchment paper-lined cookie sheet. In disposable decorating bag, melt candy in microwave at 50 percent power for 1 minute; remove bag and knead. Continue melting candy for 30-second intervals at 50 percent power until completely melted. Snip off end of bag and drizzle melted candy over popcorn mixture; immediately add sprinkles. Let stand for about 20 minutes, or until candy has hardened. Break into pieces to serve.

Ingredients:

3 cups all-purpose flour 1 teaspoon baking powder 1 ½ teaspoons ground cinnamon ½ teaspoon salt ¼ teaspoon ground nutmeg 1 cup (2 sticks) butter, softened 2 cups granulated sugar 4 eggs 1 teaspoon pure vanilla extract 1 ¼ cups canned 100 percent pumpkin (not pie filling)

Directions:

Preheat oven to 325°. Prepare a Wilton Dimensions Large Pumpkin Pan lightly with vegetable pan and spray with flour. Place on baking sheet. In medium bowl, combine flour, baking powder, cinnamon, salt and nutmeg. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs, one at a time, mixing well after each addition; beat in vanilla. Add flour mixture alternately with pumpkin; mix well. Pour batter into prepared pan. Bake 70 to 80 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes in pan. Turn onto cooling rack. Cool completely before serving.

Ingredients:

6 cups popped popcorn, buttered and salted ¾ cup roasted salted peanuts 1 package (10 ounces) Caramel Apple Candy Melts candy 1 bottle (2.5 ounces) Spider Mix Sprinkles

Spread popcorn and peanuts on parchment paper-lined cookie sheet, and repeat steps for Pumpkin Spice Popcorn.

WITCH’S BREW MOCKTAIL Servings: 6

Ingredients:

3 cups ginger ale, chilled 1 ½ cups pineapple juice, chilled 1 / 3 cup sweetened lime juice, chilled Green gel food color or green icing color (optional) Black colored sugar Gummy eyeball skewers

Directions:

In large pitcher, combine ginger ale, pineapple juice, sweetened lime juice and, if using, gel food color. To prepare glasses, dip rims of martini glasses in water, then in black sugar. Fill with drink mixture; add eyeball skewers.

CANDY CORN DRINKS Servings: 8

Ingredients:

1 cup (half of 12-ounce package) Bright White Candy Melts Candy, melted according to package directions 1 cup (half of 12-ounce package) Orange Candy Melts Candy, melted according to package directions 1 package (12 ounces) Yellow Candy Melts Candy, melted according to package directions Orange flavored fruit drink. Orange, peach or mango juice, or other favorite drink

Directions:

Fill disposable decorating bag with melted bright white candy. Divide evenly among cavities of 8-cavity silicone shot glass mold, taking care to not get any candy on sides of mold. Repeat process with orange and yellow candy. Refrigerate for about 30 minutes, or until candy is set. Carefully remove candy glasses from mold and set aside. Fill with orange drink.

For desserts, we featured a two-tier fondant covered cake accented with red velvet and raspberry shortcakes. This was surrounded by dessert bites and simple floral arrangements that created a luxurious, yet intimate vibe.

Rustic Winter

Something about the glistening tree branches and roasting fireplaces makes winter feel magical. In the midst of all the shopping and perfectly decorated homes, the rustic and nostalgic qualities of winter still stand out. A Wedding Date Like None Other This winter, many couples will tie the knot on 12/13/14—the last sequential date of the century.

A wedding anniversary is a very special time. For years, husbands have wound up in the doghouse because they forgot them. However, this year, many husbands will walk down the aisle on a day that they couldn’t possibly forget. December 13, 2014 marks the last sequential date of the century, and thousands of couples have chosen it for their wedding day. Military couples can take it another step further by getting married at 1500 hours. If you can’t remember that, then you probably shouldn’t be getting married in the first place. "When 7/7/07 happened and all of a sudden we had an estimated 66,000 weddings on one day, it caught our attention," says Brian Beitler, executive vice president of David's Bridal. Sequential weekday weddings were popular in the past few years, with thousands of ceremonies taking place on 10/11/12 and 11/12/13. This year, David’s Bridal estimates that 9,723 American brides will wed on 12/13/14, and that about 20,000 weddings will take place across the world on this special Saturday. A Saturday wedding and a unique date? What more could a bride want?

For couples in New Jersey, the cold weather was not really a factor. Jesenia Zambrano and her fiancé Alex Gomez of Wood-Ridge will wed on this iconic date. They have family and friends coming in from Ecuador and the Dominican Republic. It should be quite a surprise for them. “They’re very excited. They haven’t been to a winter wedding,” Jesenia said. Alex and Jesenia met seven years ago, and it was meant to be from the very beginning. This date has a symbolic meaning for them. The couple explained how 12 resembled two becoming one, 13 signified the year when they became engaged, and 14 marked the year when they would culminate their love. “It’s a once in a lifetime kind of thing,” Jesenia said. The pair will start their next chapter in such a meaningful way, and they will certainly enjoy a long and happy life together. After they wrap up the wedding, the newlyweds will head off to Mexico for their honeymoon.

Brittney Lier and Bill Spencer of Old Bridge got engaged two years ago while they were in Las Vegas–one of their favorite places to visit. Bill gave his phone to an amateur photographer by the Las Vegas sign at the end of the Strip, and told him he was going to propose. When Brittney saw Bill down on one knee, she had to say yes. The two lovebirds grew up on the same block together in Edison, but after Brittney moved away in middle school, they lost touch. Brittney eventually made it back to the area, and started working as a bartender at a local restaurant. Bill came in one day. It clicked. They soon began dating, and now they will culminate their love for each other on this magical date. Brittney and Bill love the holiday season. They thought a Christmas-themed wedding might be interesting, but then they started looking at specific dates. “We were looking at the date, and it was just a no-brainer,” Brittney said. “This looked cool, and it was just like unique and memorable.” Unlike many guys, Bill is good with dates. Still, he likes to kid around about getting married on 12/13/14. “He always jokes that it’s something easy for him to remember as well,” Brittney said. For Brittney and Bill, it’s hard to believe that the big day is almost here. She just picked out her gown. “It’s real now,” Brittney said. After the winter wedding, Bill and Brittney will fly off to St. Lucia where they will enjoy their honeymoon with some nice, warm weather and beautiful beaches. It’s going to be a long time before another sequential date like this comes around, but for the math geeks out there, there’s always the possibility of a Pi Day wedding on 3/14/15. Here’s wishing all these lovely men and women a happy anniversary for years to come, and especially on January 2, 2103—the next sequential date just 89 years away.

Feeling Stressed in Your Relationship? Learn How Not to Sweat the Small Stuff with Your Spouse or In-law By Dr. Deanna Brann How many times has your spouse or in-law done something or said something that makes your blood boil so much that you can’t seem to just let it go? You keep replaying it over and over in your head, and the more you think about it, the angrier and more hurt you feel. You can’t stop thinking about it. We all have experienced this at one point or another. Even if you don’t say anything to the other person at the time, his or her actions affect your relationship because the bad feelings you think you are covering up end up coming out through your behavior. Trust me: even if you are sure this isn’t true of you, it probably is. As much as you want to believe you can hide those bad feelings, you really can’t. Let me give you an example. Let’s say your spouse or in-law says something to you that really hurts your feelings. You don’t want to say anything because you don’t want to make waves and you don’t think it is worth the time to talk about it. Despite being really hurt by what was said, you think to yourself, “Wow, that stung but I’m just going to let it go.” So what do you do? The typical reaction is to withdraw emotionally. You get quiet, and become a bit reserved. Pulling back feels natural because if you don’t, you’re afraid you might say something, which is what you’re trying to avoid—

not to mention the fact that you feel the need to protect yourself from being hurt again. The other person, sensing a change in your actions and feeling a tension that didn’t exist before, may ask you if something is wrong. You may answer, “No, nothing is wrong,” but your jaw is tight and you don’t make eye contact. Your tone of voice is abrupt. Regardless of what you actually say, the other person can feel that something is up because of your tone and body language. Of course, this affects the relationship. Hanging on to those feelings and stewing about them also affects you. After all, you’re the one who keeps the anger, frustration, hurt, or whatever you’re feeling alive and churning away. Whether or not they meant to be hurtful, you’re the one who gets stuck in these negative feelings—not the other person. You may think I’m going to encourage you to speak your piece, but realistically speaking, that isn’t always the answer. Sometimes that can make the situation worse. So when you decide saying something isn’t going to help, how can you stop sweating the small stuff for the sake of the relationship?


Here are some tips that will help: 1. Take an emotional step backward. Create some distance for yourself so you can look at the situation more objectively. 2. Don’t assume that what this person said or did was a personal attack against you. It is very possible that it has nothing to do with you at all—maybe you just happened to be in the line of fire at the time. 3. Look at the feelings you are having and ask yourself how they are serving you. For example, does the fact that you feel hurt or angry help you justify how you feel towards this other person? Does it allow you to feel better about yourself? Do you feel that you’re right, and that the other person is wrong? If so, how does this help the relationship? If these feelings leave you feeling bad about yourself, or if they feel familiar in some way, ask yourself if you have felt this way with other people who have mattered to you. If so, then this person’s actions may have less to do with how you feel than you think. After all, you’ve experienced this very same feeling with other important people in your life. 4. What is one thing you can do for yourself that can shift your painful feelings? You only have to do one thing to get your feelings to start shifting in a new direction—just one thing! You don’t have to have all the answers. Take that first small step and then you’ll feel more capable of taking another small step. On it goes until you’ve moved past the bad feelings. Remember that you have to start somewhere and that’s with one small step. So the next time you are in an awkward or unpleasant situation with someone who matters, don’t stew about it. If you decide it’s best to deal with the situation yourself by moving beyond your feelings, use these four tips and stop sweating the small stuff! As we got closer to the island, all we could see from the plane’s window was the beautiful white sand and the clear blue water. This is exactly what I remembered from thirty years ago when the love of my life and I landed on Aruba for our honeymoon. As great as those memories of yesteryear may be, the pearly white sand and clear blue water are probably the only constants. No longer did we have to walk down a portable staircase to the tarmac and walk between cones so that we wouldn’t get too close to another airplane. The days of dragging our carry-ons hundreds of feet to a boiling hot, one-level terminal were no more. The terminal was now air-conditioned, and it brought us right to where we needed to be in comfort.

LET THE PARTY BEGIN! A lovely couple picked us up at the airport, and we soon found out that they also own a party bus called “Kukoo Kunuku Express.” More on that later. Once they found out that we hadn’t been to Aruba in thirty years, they transformed into wonderful tour guides, and pointed out all the changes and improvements that have taken place on this beautiful island. This couple, just like everyone else on the island, was so kind, enthusiastic and helpful. It

immediately became obvious why they call Aruba “One happy island.” After checking into our hotel, we decided to spend the first few days on the island quietly. Long days resting on the beach with a cocktail, some nice romantic dinners, and maybe a little gambling—it was going to be nice and calm. For the second half of our trip, we were going to meet up with some friends. Knowing these people, we knew the relaxing part of the vacation would be over, so we needed to enjoy every minute of the first leg. Manchebo Beach Resort and Spa is a boutique hotel located on Eagle Beach, the widest beach on the island. Eagle Beach has white, warm sand that leads to a deep blue, see-through ocean—exactly what we had hoped for. We could look out over the beautiful beach from our balcony or walk just a few feet from our room and be lounging, looking out at the ocean with clear blue skies and boats gently bobbing in the water. Manchebo offered everything we wanted. We enjoyed receiving ocean-view massages at Spa del Sol, one of the few ocean-view spas on the island. There were also incredible on-site restaurants if we didn’t want to leave the premises, and of course, beachside service for our food and adult beverage needs. As we all know, location is key. Manchebo is just minutes away from all the other action on Aruba, and that was important for us. Aruba’s capital, Continued on page 54

Oranjestad and Palm Beach were right down the road. These two areas are where you’ll find a lot of the high-rise hotels, casinos and all the great nightlife you would ever want on a tropical island. This prime location made getting to some of our favorite dining destinations an Aruban breeze. (Despite being so close to the equator, there is a constant breeze on Aruba that cools the air so the temperature is pretty much perfect all year long.) So of course, we made the quick trip over to Pure Ocean at Divi Aruba Phoenix Beach Resort. Beautifully situated right on the water, the sunset dining here is up there with the most beautiful experiences I’ve ever had. We also made trips to The West Deck for their beergaritas, and the Ritz-Carlton, Aruba for a delicious lunch. One happy island and two happy guests. As with most relationships, opposites attract. So since we had spent the first few days relaxing on the beach, it was now time for us to explore the adventurous side of Aruba. To be blunt, there was no shortage of choices. We took an ATV ride through the rugged Arikok National Park with De Palm Tours and then took a Jeep ride with ABC Tours to cool off in Conchi, which is also known as “The Natural Pool.” Dennis from the Aruba Surf and Paddle School gave us great

paddleboarding lessons, and we then snorkeled the afternoon away with JADS in the beautiful ocean. One night, our adventurous friends who were coming to join us for the second leg of our trip picked us up on the Kukoo Kunuku Express bus so we could tour all the clubs and bars and party the night away. I feel mildly hungover again just writing about it. There was just one thing I missed while I was in Aruba. I realized at the end of the trip that my wife of thirty years and I could have renewed our vows right then and there, where our life together truly began. Although the island isn’t the same place it was back then, it has certainly changed for the better in every way. There are so many beautiful locations to have a wedding or renew vows. There’s no shortage of experts to help you plan every step and detail. Holiday Food Fun Nobody has as much fun in the kitchen as David Burke—our favorite celebrity chef. When you’re getting ready for Thanksgiving, Christmas, or even Festivus, consider one of Burke’s classic recipes. If you can pull off an Angry Lobster, you’ll be a hit at the dinner table—just don’t bring it to Rosh Hashanah. Burke’s Pastrami Salmon might be a better option for the Jewish New Year.

Apple Tart with Cinnamon Ice Cream and Applejack Caramel Ingredients for Apple Tart: 1 10-inch sheet puff pastry 8 tablespoons white sugar 8 tablespoons dark brown sugar 2 tablespoons cinnamon 4 apples 4 tablespoons lemon juice 4 tablespoons melted butter Directions: • Roll out puff pastry until about 1 /8-inch thick. Place pastry sheet in refrigerator for 30 minutes. • While pastry is resting, combine white sugar, brown sugar and cinnamon in a bowl. Mix and reserve. • Peel and core the apples and cut into thin slices. Add lemon juice and toss. • Remove pastry from refrigerator and place on a board. Invert a 10-inch plate over pastry and with a pastry cutter or a sharp knife, cut around the edge of the plate. Remove plate and carefully place circle of pastry dough on a baking sheet with a nonstick surface. Using point of sharp knife, prick holes in a circular pattern over entire sheet of pastry and return to refrigerator for 10 minutes.

Ingredients for Applejack Caramel: 2 cups sugar ½ cup apple cider 3 tablespoons water 3 tablespoons applejack brandy 2 tablespoons butter 2 apples, peeled and cut into small balls with a melon-ball cutter Directions: • Combine sugar and cider in a heavy saucepan and cook until caramelized. • Add water, brandy and butter. Cook until ingredients are combined. Stir in apples.

Ingredients for Cinnamon Ice Cream: 1 ½ cups milk ½ cup heavy sweet cream 4 sticks cinnamon, each stick broken into 2 or 3 pieces ¾ cup sugar 6 egg yolks Directions: • Combine milk and cream in a saucepan. Add cinnamon stick and half the sugar. Stir and bring to a boil. Remove from heat and allow cinnamon sticks to steep for 10 minutes. Remove sticks and discard. • Combine remaining sugar and egg yolks. Beat for about 2 minutes, or until ingredients are thoroughly combined. • Gradually add milk mixture to egg yolk mixture. Stir to combine and return to saucepan. Cook over low heat, stirring constantly, until mixture coats the back of a spoon. Be careful not to allow mixture to boil. • Cool and pour into an ice cream machine. Follow manufacturer’s instructions. To Assemble: • Preheat oven to 400°. • Remove pastry from refrigerator. Starting from the center, layer apple slices on pastry, forming a circular pattern. Apple slices should overlap. • Brush the apple slices with melted butter and top with half the sugar and cinnamon mixture. • Bake tart until apples begin to brown slightly (about 10 to 15 minutes). • Remove tart from oven. Using a spatula, slide tart onto a plate. Invert plate over baking pan. Pastry will now be on top. Sprinkle pastry with remaining sugar-cinnamon mixture and return to oven. Bake an additional 10 to 15 minutes, or until pastry is golden brown. • Allow tart to rest for 5 minutes, and cut into 4 to 6 servings. Place each serving on a dessert plate. Spoon applejack caramel around tart and place a scoop of cinnamon ice cream beside each portion.

Pastrami Salmon Ingredients: 1 side salmon, about 2-2 ½ pounds, skin and bones removed 1 cup coarse or kosher salt ½ cup sugar 2 bunches fresh coriander 1 bunch fresh Italian parsley ½ pound shallots, peeled ½ cup molasses 2 tablespoons cayenne pepper 5 bay leaves 4 tablespoons paprika 4 tablespoons ground coriander seed 4 tablespoons freshly ground black pepper 4 tablespoons cracked pepper Mustard oil Rye toast Potato pancakes (optional) Directions: • Place salmon on a platter. Combine salt and sugar. Mix well, and coat both sides of salmon with salt mixture. • Combine coriander, parsley and shallots in a food processor and purée. Coat both sides of salmon with purée. • Refrigerate salmon for 2 to 3 days. • Scrape marinade from fish and discard. Dry fish with paper towels. • Combine molasses, cayenne pepper and bay leaves in a saucepan. Bring to a boil and simmer for 1 minute. Allow molasses mixture to cool and, using a brush, paint fish on both sides with molasses mixture. • Sprinkle paprika, coriander, ground black pepper and cracked pepper on both sides of fish. Refrigerate salmon overnight. • To serve, cut Pastrami Salmon into thin slices on the bias, or diagonally and serve with mustard oil, rye toast, and (if you wish), potato pancakes.

Angry Lobster on a Bed of Nails Ingredients: 2 1 ½-pound live lobsters (4 portions) 2 cups Wondra flour ¼ cup chili powder 2 tablespoons cayenne pepper Sea salt ¼ cup canola oil 1 ½ tablespoons fresh garlic, minced 1 ½ tablespoons shallots, minced 1 tablespoon red pepper flakes ½ cup fresh basil leaves ¼ cup chili oil, see note below* 1 tablespoon lemon zest, julienned, simmered in simple syrup, and drained 2 tablespoons unsalted butter 10 fresh basil leaves 4 lemons (approximately one lemon per person), cut into eighths Directions: • Separate knuckles/claws from each lobster. Split knuckles/claws on band saw and reserve. Split lobster from head to tail on band saw. Separate body halves from tail halves. Remove brain sac from bodies. Retain tomalley and roe in each body half. • Heat oven to 475°. • Mix Wondra flour, chili powder, cayenne and salt on a plate. Dredge lobster in flour mixture, shaking off excess, and reserve. • Heat oil in large skillet set over medium-high heat. Add lobster, cut side down. Cook until it begins to color and flip. Cook 7 to 8 minutes. Place lobster on a platter and reserve (keep warm). • Set skillet used to cook lobsters over medium heat. Add garlic, shallots, red pepper flakes, basil, and chili oil. Cook 2 minutes and add lemon zest. Cook 1 minute. Add stock. Bring to a boil and reduce heat to low. Simmer 5 minutes. • Add butter. Swirl skillet until butter is incorporated. Remove from heat and stir in lemon juice. Reserve (keep warm). • To serve, set round frog (small holder with spikes used for flower arrangements) on large plate. Impale lemon eighths around perimeter of the frog. Impale lobster in the center of the frog. Spoon sauce over lobster and garnish with basil leaves. *To make the chili oil, gently heat 2 cups canola oil, 2 tablespoons red pepper flakes, 2 tablespoons paprika and 2 tablespoons chili powder. Remove from heat and let infuse 4 hours. Strain. 60

Pretzel Crusted Crab Cake Ingredients: 1 tablespoon peanut oil ¾ cup onion, finely diced ½ cup celery, finely diced 1 cup unsalted butter, softened 1 cup mayonnaise 2 pounds lump crab meat, picked clean of all shell and cartilage 3 tablespoons minced fresh chives 1 tablespoon freshly grated lemon zest 2 teaspoons Old Bay seasoning Pinch of cayenne pepper 2 large eggs 1 box Pretz pretzel sticks (can be found for purchase in Japanese gourmet stores) 1 cup (or more) clarified butter Directions: • • • • • • • • • • • • • • • •

Heat the oil in a small sauté pan over medium heat. Add the onion and celery. Sauté for around 4 minutes, or until they are soft and translucent. Remove the vegetables from the heat. Drain off and discard the excess oil. Set aside. Combine the butter (make sure it is very soft) and mayonnaise in a large mixing bowl. Using a handheld electronic mixer or a wooden spoon, beat until the mixture is well-blended and very smooth. Fold in the crab meat, chives, lemon zest, Old Bay seasoning and cayenne along with the onions and celery. Cover the mixture and refrigerate for two hours to chill. Line a baking sheet with parchment paper. Set aside. Remove the crab cake mixture from the refrigerator. Line 1 row of Pretz (about 8 pretzels) closely together. Top with about ¼ cup of the mixture. Line the top with the same amount of pretzels, creating a raft. Place the pretzel coated cakes on the prepared baking sheet. Lightly cover with plastic wrap and refrigerate for about 30 minutes, or until the cakes are firm. Heat the clarified butter in a large sauté pan over medium heat until it begins to smoke. In batches, using additional butter as needed, fry the crab cakes for about 3 minutes per side, or until they are golden brown. Place crab cakes on paper towels to drain. Place cakes on a serving platter.

Let There Be Light (and Color!) Create the right ambiance for your next big event Written by Stacy Lawrence Trends and styles tend to change from season to season depending on the type of party you are hosting. In the past few years, uplighting has emerged as an important new trend for weddings and bar and bat mitzvahs. Uplighting is an event lighting effect created by placing lights below the object which is to be lit. This technique is often used on a blank wall or column to create a vertical lighting effect. Uplighting is a very important component of the room dÊcor, especially for evening events. Not only does it help color the room, but uplighting also sets the tone for the affair. When planning a party, you might want to consider a venue that offers uplighting in the room as an upgrade or as part of its package. Bright colors like red, fuchsia, or blue can light up the room and add excitement to the venue. When using uplighting, you do not have to use the same color lighting for the entire affair. You can alternate colors, or change the tone completely as the night progresses. Soft, romantic tones might be perfect during extended times when the guests are seated, while pinks or oranges can keep up with the DJ or band’s excitement. If you want the room to have an understated yet elegant feel, you might want to think about neutral but lively tones. This can be accomplished by using bronze, gold, silver, and cool whites for the linens. When choosing which color works best, consider your theme, but do not try to match it exactly. For example, if the room is lavender, purple lights should not be all over the room. Consider colors that complement your theme instead of washing it out. Colors generally dictate wedding fashion. When a bride chooses certain colors for the wedding party, she tends to incorporate these colors for the linens and invitations. This year, the colors for fall weddings are bold, yet soft. Shades of purple, blue, yellow and red are in the mix. Radiant Orchid has been a very popular color this year. Sangria is a bold shade that combines purple with a pop of red. It can be toned down with creams and pastel greens. Another popular shade is Bright Cobalt. You can liven up the brightness of the cobalt with shades of pink or orange, or you can accent the cobalt with soft grays and silvers. When choosing colors for an affair, check to see what flowers are in season. You can often save some money by picking these. Freesias, irises, orchids, cymbidiums, roses,

snapdragons, stocks, sunflowers, lilium stargazers, delphiniums and gerberas are all popular flowers for fall, so you might want to check them out. If you want to be a guest at your own affair, hire a coordinator for the day. Bring in professionals with good reviews and make sure that your personality gels with theirs, and always remember to enjoy the planning process!


Bar and Bat

Mitzvah Themes The theme incorporates many different aspects of the party including centerpieces, signs and seating cards. A travel theme might use a boarding pass as a seating card, while a New York theme might use a subway card. Ostrich feathers are used quite often for bar and bat mitzvahs. The feathers can be dyed many colors to incorporate the color scheme. Vibrant colors are typically used at these parties to get everyone feeling festive. A nightclub feel is a hot trend for bar and bat mitzvahs. Adding a “lounge” where the teen guests can hang out is a popular detail that many people have begun to include in their parties. These lounges include décor that showcases the theme of the party. The lounge area features couches with pillows, ottomans and tables that can have the uplighting to bring in the colors and tone of the affair.

A BUCKET LIST WEDDING FOR THE AGES Steve Ciocci was diagnosed with brain cancer two years ago, but he knew that he wanted to live long enough to dance with his granddaughter on her wedding day. Six months ago, he found out that his tumor was inoperable. His family set out to make his wish come true. Steve Ciocci—a brain cancer patient—and his daughter Erin Yates are two such people. Steve’s granddaughter Emmagrace may be only four years old, but Erin sought out to plan a wedding for her child so that Steve could fulfill his wish. With little time to prepare, Erin posted a simple request on a Facebook page looking for a flower girl dress. Mothers all over Ridgewood and Bergen County were inspired by her story and flooded her inbox offering their help. Erin was shocked and overwhelmed by all of the kind people offering to help with catering, photography and decorations. After 45 minutes and 147 emails, it was clear this backyard wedding was going to be much bigger than anticipated. As the guest list ballooned from 40 to 100, the family intended to make the day a celebration of the bonds that Steve has shared with each attendee. If the reality was that this could be the last time he sees many of them, then they were sure it was going to be

exceptionally special. Erin and Steve knew that all the help and support they needed was right there in the their community. “It reaffirmed my faith in humanity,” Steve said. “We met the nicest people in the world.” In today’s society, people are so quick to tell you when they are unhappy about something, but rarely act on the good deeds. That said, this family and this cause brought out the best in people. Erin was truly impressed by the goodness of those who reached out to her family: “Thank you was never enough,” she recalled. The garden-themed wedding between Emmagrace and her best friend Alexander was held on June 8. As a special gesture, Steve wrote the vows that Erin would recite for the children. Erin asked everyone in attendance to wear hats to create a more lighthearted atmosphere. The rhyming invitations also requested that guests wear spring colors to ensure a festive and lively vibe. Love was in the air on that special day. Guests felt like they were a part of this unique family dynamic, while the children basked in the glory of having all eyes on them as they each enjoyed the walk down the aisle.


It wasn’t until the wedding day that Erin suggested that her parents should renew their vows too. With a priest already present, it was hard to pass up the opportunity. At that moment, guests could no longer hold back their tears. The wedding certainly made Steve’s diagnosis real, but it also demonstrated how sometimes out of darkness comes light. Steve and his family are some of the most charismatic and loving individuals that you could ever hope to meet. Never ones to take anything for granted, they appreciate life’s greatest gifts—and they are fighters. Steve received his original diagnosis two years ago, but he is one of the longest surviving patients that his doctor has treated. He might have been living with brain cancer for as long as 20 years, but he showed no symptoms. It is primarily found in men in their fifties, but as far as Steve

knew, his complaints were normal for someone who was getting older. Nobody thought twice about it. It was very difficult for Steve’s family to come to terms with the situation, but the family’s beliefs remain strong. Steve’s message is clear: “Have faith and trust in God.” His unwavering strength has helped to guide his family through these trying times. The amazing people that helped make the wedding a success are a joyful reminder that the world is full of caring, loving people. We never know what tomorrow brings. Steve danced with his granddaughter. He laughed, and loved, and showed us why it’s so important to appreciate the people we meet, and the days we are given.

Peony Events pulled out all the stop (signs) to celebrate Peter Vincent’s first birthday. Nana and Pop’s backyard was turned into a construction site, complete with a tool tent full of sawhorse picnic tables, a refueling station for beverages, and a builder’s bounce house. The union only crew of 45 kids and 100 adults enjoyed quite the feast. They chowed down on barbecue sliders, mini hot dogs, and Philly cheese steaks before being treated to truckloads of cupcakes accompanying the threetiered dynamite dirt cake. Under baby general contractor Peter Vincent’s watchful eye, Sony recording artist

and beat boxer Bobby Beetcut entertained and pepped up the hard at work guests while they cooled off with chilled treats from Delicious Ice Cream, the oldest working ice cream truck business in New Jersey. When the day was over, the young guests left with buckets and shovels to continue their labor, though they were asked to leave the hard hats behind at the site.

the wedding of maria fruci and paolo frattaroli written by rachel rondon

On June 21, 2014 Maria Fruci and Paolo Frattaroli of Montclair walked down the aisle at Holy Family Church in Nutley, N.J. As fate would have it, the New Jersey natives and first-generation Italians grew up just a couple of blocks away from each other and attended the same Catholic Church their entire life. However, they never crossed paths until 2010 when a beloved religious sister—a close friend of both families—introduced Maria and Paolo to one another. 88

Soon after they started dating, Paolo knew that Maria was the one, and after being together for two and a half years, Paolo started planning a very romantic and sentimental proposal—one that Maria never saw coming and won’t soon forget. One night in July 2012, Paolo thought it would be sweet to bring something to the religious sister who introduced them. This particular matchmaker runs a preschool that Maria attended when she was younger, so Paolo insisted they


take a stroll over there to bring a gift he purchased for the chapel. When they arrived at the chapel, Paolo got down on one knee and asked Maria to spend the rest of her life with him. Two years later, they were married in a traditional Catholic ceremony. Maria’s sister Sabrina was her maid of honor, and Paolo’s brother Guido served as his best man. A full choir and orchestra, led by the very talented Adrienne Pavur on the organ, performed throughout the ceremony, and Adam Leffel Productions crafted a magnificent arrangement of roses, lilies and orchids for the service. At the end of the ceremony, 13 white doves were released out into the world. Maria debuted in a Pnina Tornai strapless ball gown from Kleinfeld Bridal, and a beautiful pair of Swarovski crystal Christian Louboutin shoes while Paolo accompanied her in a Ralph Lauren Black

Label custom tuxedo with Gucci shoes and diamond Bulgari cufflinks (a gift from Maria) to complete the look. Everyone in attendance noted Maria’s beautiful engagement ring and wedding band from Leon Megé, and Paolo’s Cartier band. Maria worked with Pnina and her team to craft the perfect dress, and when it was ready, it simply blew Maria away. Pnina also created a bolero for Maria to wear at the Church, and customized her veil to match both the ensemble and detachable train. “They are awesome. I get emotional when I think about them. There’s nothing else that gets me as emotional as Pnina and her team,” Maria said. “I really want to wear my dress again!” To complete the look, Maria wore a gorgeous Christie Lauren Swarovski headpiece. After the ceremony, the couple and 315 guests rejoiced and danced the night away to the incredible sounds of Angelo

Venuto’s band Voices and DJ Express Entertainment. The black tie reception, held at The Venetian in Garfield, was nothing less than extraordinary. Maria and Paolo danced for the first time as newlyweds to the Italian song “Il Regalo Piu Grande” by Tiziano Ferro. The song, which translates to “My Greatest Gift,” was the perfect soundtrack for their first dance. Guests enjoyed an hour and a half long cocktail hour, and dinner was spaced out perfectly. The incredible sweetheart table, and many other touches throughout the reception including an oversized bird cage, were crafted by Dalmazio Imports of Brooklyn. All the beautiful stationery leading up to the wedding, including the escort cards and menus, were custom designs of East Six in Manhattan. Palermo’s Bakery in Ridgefield Park created a 7-tiered white and gold masterpiece adorned with floral arrangements for the cake cutting ceremony. A cigar roller was on hand to provide the guys with celebratory smokes. A live painter captured the action with beautiful brushstrokes, while Studio Uno took photographs and videos of all the unforgettable moments. At the end of 90

the night, guests went home with Marquis by Waterford crystal candlesticks as a memento of the evening. Allison Sargent, the couple’s wedding planner, pulled all of these elements together and was pivotal in taking the pressure off the bride and groom on their big day. “Guests said that I was the most relaxed bride and I really was!” said Maria. “Allison knew me well enough that if there was any small decision to be made, she would make it and I would be okay with it.” Allison was key to finding the choir and orchestra for the ceremony, which blew everyone away. “I think everyone would wish to relive their wedding day, but we really got to enjoy it. We danced a lot,” Maria said. “The Venetian—I really think they are the best around. I feel comfortable saying that because that is why we picked them. The Venetian and Seasons team is just awesome!” After the wedding, Maria and Paolo went to Bora Bora for five days, which both said was absolutely stunning. The couple loved every minute of it. Even while on their honeymoon, however, the couple was active.


“We did different tours, including a boat tour and jet skiing. We definitely like to see new things and sightsee.” After spending time in Bora Bora, they took off for Auckland and Sydney, which was a nice change of pace. “We’re always looking up different places to go,” said Paolo. Maria received a J.D. from Seton Hall University School of Law, and currently practices at a large firm in Newark. Paolo received a dual M.B.A. from Cornell University and Queen’s University and currently works at an asset management firm in New York City. On the weekends, they enjoy spending time with family and friends, and taking trips into New York. Let’s wish these two lovebirds a loving and lasting marriage.
