Gentlemen, It was with heavy hearts that we found ourselves saying, “O Captain! My Captain!” twice very recently. Originally written by Walt Whitman in his famed 1865 poem following the assassination of Abraham Lincoln, the phrase has transcended both time and its original meaning. When “Dead Poets Society” starring the late Robin Williams was released in 1989, the line became popular with a new generation. John Keating, played by Williams, stands among his students and inspires them through poetry to become better men. The film is exceptionally moving. In the most tragic of paradoxes, Robin Williams, a man who could make anyone laugh regardless of their age or taste, could no longer find the happiness that he had so kindly imparted on all of us through his many films and stand-up routines. The world lost a comic genius. Up until his death, Williams made us smile, though he no longer could. Whitman’s words will be associated with Williams for all eternity. He will be forever missed. As we all know, Derek Jeter recently hung up his cleats. His illustrious career was more poetic than anything Whitman could have penned. His final game at Yankee Stadium ended the only way it could have. Jeter’s heroic walk-off single won the Yankees a meaningless game, but in that moment, this thrilling victory had more meaning than any of the playoff races going on at the time. For 20 seasons, The Captain was the classiest superstar in all of sports. Now more than ever, the world of sports is mired in scandal, distrust, and violence. In future decades, we can only hope that athletes will take note of Jeter’s example and forge a brighter, more inspirational, and scandal-free landscape in his image. The next Captain might not even wear pinstripes, but we will surely welcome him or her with open arms and hearts. Until that day, we bid adieu to #2. What an incredible journey it has been. Let’s talk about our favorite season: fall. There are many reasons why we love fall, but the fact that it’s perfect cigar weather is certainly up there. There are few things in life better than smoke rising through the brisk air, complemented by that glass of single malt Scotch whisky. T
here has been no shortage of quality television programming in recent years, but screw Don Draper and Walter White. This is New Jersey. “True Detective” was entertaining for a few months, but allow me to make myself clear: This is New freakin’ Joizey! We love “The Sopranos” here, even if the show suddenly cut to black back in 2007. The cast and crew became family to us during its legendary run, and if there’s one thing we should take away from the final scene at Holsten’s, it’s that family is what counts. Here in Jersey, we’ll never stop believin’ in the F word. The pilot aired 15 years ago. Isn’t that something? I find it hard to believe. Still, we talk about Tony, Chris, Paulie, Ralph, and the many, many other characters that graced the screen like we just watched the show for the first time yesterday. For the nerds out there—and I know there are many of you—now is the time for you to get even closer to the action. Hop on a bus in Midtown, and for a few hours, have an extra or stand-in actor from “The Sopranos” show you all of the famous sites from your favorite show of all time. It’s not going to be an especially scenic tour, except for that view of Manhattan when you first exit the Lincoln Tunnel listening to the cool rhythms of “Woke Up This Morning” by Alabama 3. But folks, none of us watched the show for the scenery. If you think you knew everything about Tony and Johnny Sack, you were wrong…dead wrong. I won’t spoil anything for you here, but there’s just so much to learn. When the guide calls out a question on the bus, chances are that the answer is “Law and Order.” So many actors from the show have appeared on “Law and Order.” This became a running joke on the bus. You’ll pass the Muffler Man and Pizza Land, and all the sites from the opening credits. The amount of thought that went into “The Sopranos” is incredible, and my guide knew just about everything. If you have a question about something on the show, ask away. He’ll know. The bus will take you past the school where that punk AJ vandalized the pool, Father Phil’s parish, the cemetery where lovely Livia was buried, and the site where Tony took his very first Prozac, just to name a few. There are stops aplenty. You’ll walk around Kearny, where many episodes were filmed, and the guide will tell you everything you ever wanted to know about Satriale’s. At Holsten’s, you can sit in the booth from the final scene and snack on a few onion rings. I tried them, and they are damn good. The Bada Bing, of course, is another stop—the last one, actually. So grab a few friends, and go celebrate “The Sopranos.” Hey, you can even bring your wife along. Who doesn’t love this show? I
am 25 years old. I have lived in the same house and in the same town for my entire life. The friends I made in my earliest years remain my closest friends to this day. I’ve probably had about three real pets (my dogs), and in some ways, they define certain timeframes of my life. I’ve loved baseball since I was a child. I remember my first Mets game—an unfortunate rainout. The highlight: meeting Mr. Met. But that’s not the point. The point here is that for as long as I can remember, baseball and Derek Jeter have been inseparable, and now it’s hard to fathom how that is about to change. Even though I was born a Mets fan, Jeter was my hero. Like every other 7-year-old who watched him play, I wanted to play shortstop. After practice, my teammates and I talked about #3, #4, #5, #7—The Babe, The Iron Horse, Joltin’ Joe, and The Mick. At the time, I remember thinking to myself the following: How did the Yankees know to give Jeter #2? Unfortunately, in true Yankees fashion, the organization has spent way too much money and received way too little in return in the last few years. This Yankees slump is something as
foreign to me as the idea of baseball without #2 in pinstripes. The Yankees won’t be making another classic October run this year. September 25, 2014 was one of the most important nights in baseball history. It was the last time Jeter took the field at Yankee Stadium, and he went out in heroic fashion. There was really no other way for his career to end. Whether the sport will ever be capable of producing another true American hero like Jeter remains to be seen. It’s difficult enough to find guys who have been around baseball for 20 years. It’s even harder to find one who isn’t tainted in one way or another. He is a true man of class. He is the kind of man every kid wants to grow up to be. Can you think of any instances of greed, cheating or substance abuse that you could associate with Jeter? I don’t think so. I bet lots of athletes wish they could have had an untarnished track record just like him. The Captain deserves his own wing in Cooperstown. It’s hard to compare Jeter to any athlete from this era. In terms of Hall of Fame play and pure class off the field, is there anyone who comes close to Jeter? If Peyton Manning had played for a bigger market team like the Giants or the Cowboys, instead of the Colts for so many years, maybe he would be up there on the same level as Jeter. Tom Brady lost in too many Super Bowls. LeBron James turned his back on his home state, only to come crawling back to Cleveland after getting what he couldn’t provide them the first time around. Don’t get me wrong, we will write one of these about Peyton Manning in the near future, but it just won’t feel the same. It’s amazing how 20 years have passed, and now #2 won’t take the field at shortstop for the world’s most recognized baseball franchise next year. He has gone on the record several times saying he wants to finally settle down and start a family. I’m sure we’ll still see plenty of Jeter in some capacity. Maybe he’ll become a broadcaster, or hey, maybe he’ll even become a part-owner of a team. Either way, I can say with the utmost confidence that there won’t be many more like Jeter in my lifetime. He might be the last of his kind. Long after his bust is unveiled in Cooperstown, Jeter will forever be remembered as one of the greats. Out of all the players who I’ve watched in the past 20 years, nobody has carried the torch of America’s Pastime quite like Jeter. We will miss you.

any of you hire landscapers to do the dirty work on your lawns. These folks might slack off on your turf if they think you don’t know the difference between Kentucky bluegrass and fine fescue. Despite the fact that you may not know the difference, we here at Talk of the Town are here to educate you so you know what to tell your landscaper. Read on, and make sure you do the follow-

ing. Once temperatures start to rise again, you’ll have a magnificent lawn.
Fertilize
Providing nutrients to your lawn before cold weather strikes is a good way to strengthen roots and increase the nutrients stored so you can get an earlier spring green. While the top growth of grass stops, grass plants are storing nutrients and energy for the following
season. To determine the best ratio of fertilizer for the soil in your yard, you should utilize a soil test. Otherwise, look for fertilizer with a nitrogen-phosphate-potassium (NPK) ratio of 3-1-2 or 4-1-2. When applying the fertilizer, make sure that you follow the application instructions and rate information on the package and use a calibrated spreader to apply the correct amount.
It is also a good rule to apply the fertilizer in the fall about two to three weeks before the ground freezes so the plant can start to take up some of the nutrients.
Aerate
Aerating, the process of removing plugs of soil and thatch from the lawn, is ideal in cooler months. It encourages deep rooting, improves water and nutrient penetration, and promotes growth of beneficial soil microorganisms. There are a variety of techniques you can use to penetrate the soil such as spiked shoes or spray-on liquids, but to most effectively aerate soil, attach a dethatcher, or a plug aerator behind a riding mower or tractor to remove plugs of soil from two to three inches deep.

building up under mower decks. Remember that grass needs sunlight in the fall to help store food for winter, so don’t wait until your lawn is completely matted down with leaves to mulch. A thin layer of mulched leaves is ideal and helps add nutrients to the soil, reducing the need for fertilizer. Selecting the right mower with mulching attachments or features can save a great deal of time and help ensure a consistent layer of mulch across the yard. 1. Thou Shalt Not Post a Selfie Did you know that your photos determine 90% of your success online? Well, they do. The absolute worst thing I see online are those selfies taken in the bathroom or bedroom mirror. Oy! The lighting is terrible. There is too much flash and I can never see the face. I can go on and on. Please invest in some professional photos for goodness’ sake. I promise you will see a marked difference in the quality of women you attract.
4. Thou Shalt Not Lie Listen, if you are hoping to have many bad first dates, go ahead and lie, but I wouldn’t recommend it. Trust me, there is a lovely woman out there who will accept you for you, warts and all. Be authentic and genuine. The results will speak for themselves.
5. Thou Shalt Not Ask To Speak Outside of the Site Too Soon I really can’t figure out why this happens, but it happens all the time. The site is designed for you to correspond and to get to know each other. My advice is don’t ask the ladies to correspond with you off the site. Stay on the site and communicate there. It actually turns many women off and creeps them out.
2. Thou Shalt Not Send a Wink I mean, you can if you want, but you will certainly get a better response if you send an email. Take the time to read her profile, then reach out with an email identifying some points that stand out to you. It shows that you took the time to find out about her and that you are taking your search seriously.
3. Thou Shalt Not Reveal Too Much Personal Information No one needs to know about your diabetes or how you’ve been on Match before and had a terrible experience with it. Try to be as positive as possible and don’t be a Depressing Dan! Keep the personal information private; there will be more than enough time to tell all.
6. Thou Shalt Not Become Email Buddies I know it can be stressful. All the pressure seems to be on you to initiate and court. That said, you must remember the goal of a dating site is to get an actual date. There is a great opportunity to meet a compatible partner online, but that won’t happen if you get stuck in the trap of endless emailing.
7. Thou Shalt Not Retaliate if Rejected If she “rejects” you, cut your losses and move on. She really doesn’t know you anyway. There is no reason to write a nasty email or worse yet, ask why she doesn’t feel you are a fit. The pool is big enough. Throw that line back in and see who’s out there. Move on!

8. Thou Shalt Not Wait to Ask for a Date You’ve emailed several times, found out her name and what she does for a living. So now what? Ask her out, darn it! What are you waiting for? If she wasn’t interested, she wouldn’t have invested time corresponding with you. The only way to gauge compatibility is to get to the actual date.
10. Thou Shalt Not Leave a Blank or Half-Completed Profile You should look at your online profile like a resume. Would you apply to a job with an incomplete resume? I don’t think so. When you leave your profile blank, it says that you don’t care. It says that you are not investing yourself in any way and you are not serious. I am sure there are wonderful women passing by your profile (at my suggestion) because the message is clear that you just don’t care.
9. Thou Shalt Not Use Texting as a Main Form of Communication This is a biggie for me. You’ve asked her if you can call. She gives you her cell number and a window of time in which to call—but all you do is text! Why can’t you pull the trigger and call her? Again, she has invested time in you and is waiting for your call.
If you haven’t given online dating a chance, I would encourage you to give it a try. Be sure to commit the commandments to memory and apply them when going online. Remember that you must market yourself effectively. It’s as simple as having the right pictures, the right profile and the right communication. Now, go forth, market yourself and get that date. W
hat is it about these current facial hair trends? As a lady, I cannot grow a beard or mustache of my own, but I have learned to grow and sculpt them vicariously through my guy friends. I consider myself a bit of an enthusiast. Hey, we all have our thing. Anyway, let’s talk about “Movember.” Movember, a portmanteau of “mustache” and “November,” occurs every November to raise awareness for men’s health, specifically prostate cancer. I see many faces with many different styles of mustache from behind the barber chair. During this exciting time of year, groups of friends, colleagues, and even corporate offices hold facial hair contests. They have

categories ranging from “creepiest” and “most original,” to “worst” and “thickest.” Men come to me and ask me to shape their creepy mustaches and lumberjack whiskers. I love how they’ve utilized their facial hair in creative and positive ways. This is a wonderful time of year for me. An obvious perk of Movember is of course not having to shave your mustache and still being accepted by bosses, wives and mothers. Just say “it’s for charity,” and you’re off the hook, right? Well, if you’re using that as an excuse, you better donate to someone or something. Do the right thing this month, men. Put down your razors, and shell out a few bucks. Forget everything I’ve ever told you about your soft faces, and let your mustaches
grow. Join the movement. Aside from the Movember movement, it seems as though beards are sprouting up on the faces of every type of man. They’re not just for metal heads and hillbillies. No sir! Beards seem to always be in and out of fashion as time goes on, but now they are definitely in. If you prefer the clean-shaven look, you’re not necessarily uncool, but more and more dudes are rocking anything from a slight shadow to a full-on facemask. During my personal quest to gain some insight on the rising popularity of beards, I had the pleasure of meeting Adam Lichtman at an event in Morristown that featured two of my favorite things: beards and bourbon. What better place to see the coolest of
cool beards than at a beard contest? That’s correct, a beard contest. I exchanged info with Adam and have begun to pick his brain. Adam’s beard is pretty badass, in case you were wondering. Having a nice, clean haircut and a long, yet groomed beard is totally acceptable, as Adam would agree. Adam is a prime example of this. He works in a service industry where his appearance and professionalism is an absolute must, and he nails it. He describes the movement as more of a way of life, and it has led him to become an advocate for the New Jersey Beard and Mustache Club. The club holds contests, or “male beauty pageants” as he termed them, in addition to raising money and boosting awareness during Movember season. I’m a little bit biased. I love beards and talking to strangers, so naturally I approach people rocking beards. Still, I was curious if having one as epic as Adam’s would make someone more or less approachable. Adam assured me that he receives quite a bit of positive recognition for his face, so that answered my question. I also wondered how he felt about those who may have jumped on the beardwagon. We found the perfect analogy. I personally enjoy Jeeps, and own a rugged little banged up, woods-ready steel box of fun, but I also see body-lifted, swamp-tired, safari-racked, and clean jeeps with chrome rims where the owner refuses to get mud on the chassis. What may be a way of life for me may not be for the next guy. The world needs variation, and this is an outlook shared by many a beardo. That being said, I did ask Adam if he wanted to give anyone the straight razor treatment. After hesitating for a few minutes, he replied the “Duck Dynasty” guys. I think I agree with him.
CARING FOR YOUR BEARD Styled beards are an absolute hit, and the product industry has provided some cool assets for the guys out there who like to mix things up a bit. Give your barber the go-ahead to cultivate a foundation for your facial garden, and the rest is up to you. For shampoo, Adam uses Mane ‘n Tail—a product originally introduced for horse hair. Don’t worry, it has been proven to be an outstanding product for humans as well. As for styling your facial locks, I’ve combined Adam’s educated recommendations with a poll that I’ve crafted for my bearded buds and clients. ore investors are managing their own portfolios, according to a recent study from the investing firm Scottrade, Inc. Americans have turned to the Internet en masse to make key financial decisions. Personal intuition is now pivotal to successful investing. “Investors and traders are seeing the opportunities in the market, and they are able to take action,” said Kim Wells, Scottrade’s executive director of product development and chief marketing officer. “More resources and online trading tools are available to help them find openings to build their portfolios and reach financial success.” There are a plethora of options out there if you’re looking to invest on your own. Follow these three steps, and you will be well on your way to managing a successful portfolio.
1. Gauge Accessibility Needs Those who self-direct their investments tend to check their portfolio and log into their accounts more frequently. According to a survey commissioned by Scottrade, about 59 percent of investors are checking their investments at least once a week. A quarter of them log in on a monthly basis. Every investor and trader has different needs, and each investment company has their own pros and cons based on their business strategies. Ask yourself: Do you want to be able to walk into a branch? Interestingly enough, not all investment firms operate a branch network. Some only have a handful of offices, while others have local offices across the country. You may decide that you need support at all hours of the day. If that is the case, many investment firms operate call centers to handle customer questions. Firms have evolved to meet the needs of investors who trade on the go by expanding their mobile app capabilities. Out of investors who own a smartphone, 60% report using their devices for banking and investment transactions and related needs, such as checking account information. If you’re feeling youthful and want to interact with the firm on Twitter, Facebook or YouTube, then you can do so in many cases. Unsurprisingly, there are firms who go to great lengths to satisfy the need to connect via social media platforms. By prioritizing needs and comparing the various offerings at investment firms, self-directed investors will be better equipped to find the right firm for them.
2. Research Your Resources Before you dive too deep, it’s important to explore an investment firm’s online resources. More than one-third of investors say they taught themselves how to invest by using online investment education tools. When researching where you will put your money, make sure you educate yourself as much as possible. Learn what research tools each investment firm offers. Make sure real-time information is available to track a portfolio with charts and news. Learn about customizable features within each account and set up a system to easily see relevant information and take advantage of market momentum. You will also want to look for market calendars that present expected activity such as initial public offerings, earnings reports, and dividends in ways that are easy to understand. Check for on-demand webcasts and live webinars to educate yourself on a variety of topics that interest you and meet your trading experience levels. Engage in an online trading community. These virtual groups bring investors and traders together, allowing them to swap investment strategies and learn from like-minded people. Most communities are also moderated by an investment firm. Professionals who can answer investment-related questions and provide customer support make themselves available for your needs.

Garage Organization It’s one of the most feared tasks in household history. Remove some of that clutter and set up an effective workspace in just four steps. WRITTEN BY

any homeowners in America can only park one car in their two-car garage. Some barely even have space left for a bicycle. If you’re reading this right now, you probably need to tidy up a bit. The importance of having an organized garage isn’t just for improved functionality; it also helps add value to a home. Real estate brokers and agents say that a cluttered, unorganized garage can negatively impact a potential home buyer’s first impression. The garage might be the last place you check out at an open house, but it tends to leave a lasting impression. The garage is often the front door for a home. An untidy one can be very unwelcoming, and it actually says more about you to your guests than you realize. My ex-boyfriend’s garage was an absolute mess. It should have tipped me off right away. Luckily, there are four simple steps you can take that can help you prepare for the ultimate battle against clutter. It’s time to reclaim your space!
1. Clean and Prep
Clutter is one of the biggest issues with garage organization. The only way to know what is in the garage is to remove all of the items inside and start with a clean slate. As you remove items from the garage, be realistic about what you actually use and separate them into categories: Keep items you use regularly. Donate or sell items that are still in good shape but aren’t being used regularly. Toss items that are broken and that you don’t need. Remember that old woodworking project you never got around to finishing? It’s never going to get done. Throw it out.
2. Have a Game Plan
First, measure the garage so you can make an accurate plan for storage solutions. Factor in large items, such as lawn mowers and sporting equipment. Next, decide how to group similar items and determine what your storage needs are. For example, do you prefer to hang items on hooks, or would your rather
use baskets or cabinets to keep things out of sight? Explore the Internet for some design tool options. One great online tool we found was the studio at www.gladiatorgw.com. You can basically build and organize your entire garage from scratch on this site.
3. Build Your Storage System
Use the walls in your garage to get gear off the floor. You can maximize storage space by choosing long-lasting and durable storage solutions. Stackable plastic storage bins or shelving units can sometimes reduce clutter, but they aren’t always built to handle extreme temperatures in the garage. They also provide limited design flexibility and access to items when you need them. Karl Champley, a DIY expert and master builder, suggests using a modular storage system for your walls. “They get everything off the floor and allow you to customize so you can reclaim your space,” Champley said. “These garage systems are convenient and easy to install, giving you the ultimate wall storage solution for baskets, shelves, hooks and various other accessories. These systems are the perfect way
to achieve the dream garage.”
4. Add Final Touches
You have the large items stored. Now it’s time to add some final touches. Maximize efficiency and make your workspace functional by doing the following: Use a trashcan. Place one near your work area so it stays free of garbage and debris. Hang tools. Keep them near your workbench so you can easily put them back in their proper place. Utilize smaller bins. These are great for screws, nails and small items so they don’t clutter your space. Your lengthy steps to rebuilding the perfect garage will all be for naught if you don’t take the time to keep it tidy. Hang your tools up after you use them, and respect your property. Also, keep the seasons in mind. It’s time to get that leaf blower ready. Once it starts snowing again—and hopefully it will be a milder winter—you’ll need that snow shovel. When it gets close to that time, make sure everything is easily accessible.

A seasoned yogi and surfer, Eoin Finn of Blissology Yoga has trained some of the highest-level Olympic athletes in the world. The yoga workout he shared with us emulates your moves on the slopes. This mind and body workout will have you ready to shred this winter.
1. Utkatasana (Chair pose)
This is the snowboarding equivalent of a carve. It opens up tight calf muscles and strengthens the legs to obtain the power required for the piston-like action needed for a loose and smooth carve. It also provides a ton of core stability and decompresses the lower back.
Instructions: Begin by standing with your big toes touching and your heels slightly apart. Bend your knees and sink the pelvis low as you reach the arms over your head. To increase traction and decompress the spine, lengthen the sit bones in opposition to the arms which are rotated slightly inward to increase freedom of the shoulders. 2. Parivrtta Prasarita Padottanasana (Wide-leg twisting forward fold)
This pose helps with all carving and spinning maneuvers, and is the snowboarding equivalent of a mute grab. It lengthens and strengthens the internal and external oblique muscles while lengthening the hamstrings, calf and back muscles. When performed well, it can also decompress the spine.
Instructions: Begin by standing with the arms spread wide and the feet roughly under the palms. Bring the hands to the hips, inhale, and lengthen the spine. Exhale and fold at the hip joints. Bring the hands under the shoulders. People who are tighter will love this pose more and get more benefits by bending the knees. Bring the right hand under the center of the chest. Inhale, then lengthen the spine again and exhale. Twist to the left and reach the left hand high. Try and keep the head and sacrum on the central axis so it feels like someone is pulling your left hand to the sky. More advanced people can bring the right elbow to the floor. Breathe long and deep, lengthening on inhales and twisting more on exhales for 30 seconds. Repeat, and enjoy on the other side.
3. Eka Hasta Ustrasana (One-arm camel pose)
This is the snowboarding equivalent of the method grab. This pose lengthens the whole front body including quadriceps, hip flexors, abdominals, chest, neck and arms. This increase in range of motion will help with any carve, spin or grab.
Instructions: Start by kneeling, with the knees directly under the pelvis. Bring the hands to the hips. Inhale, gather the inner legs in, press the feet into the floor and lift the pubic bone. Exhale, relax and stay long. Inhale again to get long, pressing the sternum away from the feet, and exhale. Arch your back without hinging and compressing the lower back. Take the left hand to the back of the right hip and reach the right hand up and back. Any lower back compression means back up. Stretch all the muscles of the front body with long, deep breaths for 30 seconds. Come out slowly into child’s pose and repeat with the opposite arm lifted.

Redefining What It Means to Be a Strongman WRITTEN BY

“N
ever, never, never give up.” Those are the words of Michael LaViola, an ambitious, hard-working student and athlete who was diagnosed with synovial sarcoma, a rare form of cancer, during his senior year at Northern Valley Regional High School at Old Tappan. Michael was a varsity football player, a volunteer firefighter, and a car enthusiast. He was a special young man, and he kept fighting and fighting until he sadly passed away in February 2008 at the age of 20. Michael lived up to his promise. He never gave up. He was adamant about beating cancer and he did not allow his sickness to slow him down—not even at the very end. After his passing, his family formed the Michael LaViola Foundation, and in July 2009, the foundation teamed up with Varsity House Gym

to host the first annual Strongman Challenge to honor Michael by raising money for pediatric sarcoma research. Going strong for six years now, the Strongman Challenge has inspired many people in Bergen County and beyond. With an ever-widening base, Michael’s message will continue to be heard, and by continuing the fight against this particular form of cancer,
it might be eradicated one day. Synovial Sarcoma is a rare soft tissue cancer that appears in the legs in the form of a tumor. In Michael’s case, the cancer originated in his foot. He had the option of undergoing chemotherapy, which could potentially save the foot, or he could have surgery. Michael’s first choice was chemo, but his cancer metastasized to his lungs,
and Michael had to commit a strong effort to fighting it there. Michael eventually had to use a prosthetic leg, but he didn’t let it get him down. He kept his never-give-up attitude, and did everything his friends were doing. He would go jet skiing with them, train at the gym, and drive in his favorite car. During his fight, Michael was the definition of a strongman. Continued on pg. 54

Michael built a lifestyle around strength training at the gym, whether it was with his football team or other friends. This lifestyle led him to Joe Riggio and Dan Goodman, the owners of Varsity House Gym. Joe has known the LaViola family since he began training Michael at the age of 12. For years, Joe witnessed Michael’s determination and dedication. Many people have the wrong impression of the gym culture. There is much more to it than just running a few miles on the treadmill or lifting weights. According to Joe and Dan, above all, strength training is a great way to

focus positive energy in a way that improves the body, mind and soul. At Varsity House, the determination to train hard unites young people of all backgrounds. For those who fully buy into that, they know that it takes a mentality like Michael’s to achieve the best results. Michael’s will to live kept him going at the gym, on the field, and throughout his fight against cancer. His story now serves as an example and an inspiration to the young men training at Varsity House. The Strongman Challenge exemplifies some of Michael’s core values. Joe said it best: “Whatever you want
to do, be great, be passionate, do 10% more than the next person and you’ll find true success.” After the sixth Strongman Challenge this past June, it’s clear that this has become a popular and fun event for everyone in the Bergen County community. The competition is divided up into three divisions based on age: eighth and ninth graders (junior varsity), high school students, and then college and professional athletes. Some of the competitors in the oldest group played with Michael when he was in high school. Competitors participate in five events over the course
of the morning and afternoon. The truck pull is a crowd favorite. Spectators can win various prizes throughout the day by purchasing raffle tickets. Everything goes to such a great cause. This past Strongman Challenge was the most successful one to date. Several hundred spectators watched the young men compete, and they raised $18,000 for synovial sarcoma research at the National Cancer Institute in Maryland, where Michael’s oncologist, Dr. Melinda Merchant, is based. Michael’s form of cancer does not receive much attention, and Michael’s parents have aimed to boost
awareness and research efforts for the disease that took their son away. “If the cancer metastasizes, you have a 3% chance of living,” said Mary LaViola. “Cancer doesn’t care. It doesn’t discriminate.” The success of the Strongman Challenge would not be complete without the help and support of the Old Tappan community. Leslie and Peter Skae are two local residents who have been active donors and contributors since the foundation’s beginnings, and each year, Old Tappan Borough Councilman Guy Carnazza helps coordinate and raise awareness for the event.
“The town has been very gracious and benevolent and is always doing whatever they can to help,” Michael’s father said. Because of the Strongman Challenge, Michael’s memory will live on for years to come. The community will not forget who this young man was. Even through the hardest times, Michael remained true to what he loved. He never gave up and his story reminds us that we shouldn’t either. The Godfather This classic 1972 American crime film set the standard for American cinematography through its characters’ complexity, mood, and great blend of action and suspense. Francis Ford Coppola directed Marlon Brando and Al Pacino. Need we say more?

Today, what I’m saying to you is this: when you’re facing a loaded gun, what’s the difference?” —Frank Costello in The Departed
The Dark Knight Possibly the most anticipated movie release ever, this movie showcases Heath Ledger’s incredible final performance as the Joker. Ocean’s Eleven A 2001 remake of a Rat Pack favorite, this was one of the only action/comedy hybrids that really allows you to show off a great home theater. Clooney and Pitt pull off the heist of a lifetime. It didn’t hurt that the editor’s family simply loves this film.
Star Wars Episode V: The Empire Strikes Back I need not justify this one. If you haven’t seen it, I sympathize. If you don’t own it, what are you waiting for? If you’ve never heard of it, put down this magazine and shamefully walk away.

ollege is a significant investment and how to pay for it can be a major source of concern for parents and children alike. Outstanding student loan debt has now reached $1.2 trillion, according to 2013 estimates from the Consumer Financial Protection Bureau. If families start preparing early, there are ways to help reduce the amount a family or student has to borrow to fund a college education. Cynthia Tidwell is the President and CEO of Royal Neighbors of America, one of the first women-led life insurers in the country. She stresses the importance of
families starting the financial planning process before senior year rolls around. “The key is to think creatively—whether it’s earning college credits in high school, using financial tools that allow for cash savings, or researching scholarship options,” Tidwell said. “Don’t mortgage your own financial future or saddle your child with debt that could keep her or him from reaching their dreams.” You have the power to make things much easier on your family. Take these necessary steps in high school so paying for college is more manageable.
1. Earn College Credit in High School Many high schools offer students the opportunity to earn college credit through advanced placement (AP) courses. Your son or daughter might be able to place out of some courses when it’s time to register for classes freshman year. Find out more about AP programs online.
2. Consider a Community College
Average annual community college tuition and fees are less than half those at public four-year colleges and universities and one-tenth those at private four-year colleges and universities, according to a 2008 report from the National Center of Education Statistics. If your child isn’t ready to attend a four-year college or university, this might be a financially sound option for your family.
3. Learn About College Savings Financial Options There are many different financial products that help with college savings. Under certain circumstances, some colleges and universities lock in tuition for all four years. Certain life insurance policies offer cash savings options to help pay for college tuition as well. Look for permanent or whole life policies with cash value accumulation options.
4. Research Scholarships Early Don’t wait until senior year to research potential scholarship options. Some require organizational membership, volunteer hours, or criteria that may take time for the student to become eligible. Make sure you explore every option.

t’s finally that time of year again. Parking lots at high schools, colleges and football stadiums across the nation are finally filling up with fans chowing down before the big game. It’s a wonderful time of year. Die-hard tailgaters take pride in crafting delicious and innovative grub, but sometimes they rarely venture past the menu staples. Hamburgers, hot dogs, baked beans and cold salads are certainly delicious, but they aren’t exactly nutritious. Tailgating is a classic form of food-centric entertainment in which people unintentionally become less conscious of the calories they consume. This does not need to be the case. This football season, try to score big in the health department with some nutritional eating options. Approaching your tailgating food shopping and preparation with slight changes can make a big nutritional impact. You’ll enjoy the game and the food that goes with it. According to Marisa Paolillo, a nutritionist at NuVal, a new system that is being integrated at supermarkets nationwide to help consumers understand a food’s nutritional value, you don’t need to ditch sensible eating when you’re gearing up for the big game. “Food can be fun, flavorful and better for you—even the snacks,” she said. “It begins with smarter choices at the grocery store, and simple swaps for some of your favorite foods. Tailgate Tips For healthier eating, always remember that baked is better than deep-fried, and that homemade recipes allow you to control the ingredients. Check out these tips from Marisa Paolillo that will help you pick tailgate foods that will fill you up and add some nutrition to the fun.
Choose lean grilling options such as skinless chicken breast or hamburgers made with 95 percent lean ground beef. Skip calorie-rich condiments and boost the flavor of your burger with fresh toppings that are rich in nutrition. Mushrooms, grilled onions, fresh pineapple, jalapenos and roasted red peppers are all great options. Add that avocado if you want to get a little wild. Ditch pre-packaged marinades for endless homemade and fresh options. Combine herbs such as basil, rosemary or dill with citrus fruits, spices, onion and garlic. Add in a little olive oil and you’re all set. Grilled corn on the cob is the perfect grill buddy, and it’s easy. Fresh corn on the cob can be cooked on the grill either wrapped in its own husks, which is more dramatic, or in aluminum foil. Add flavor with herbs and spices before roasting, and you’re left with a perfectly nutritious side dish.
Use whole-wheat pasta for macaroni salad, and add plenty of veggies and a meat or bean as a protein source to boost the nutritional value. Replace heavy pre-packaged creamy dressings which often contain hidden sugar and sodium with homemade vinaigrettes to control the ingredients. Black beans and corn add nutrients and a Southwest flair to guacamole and salsa, and they’re great for dipping tortilla chips and bite-sized vegetables. Shrimp or chicken skewers are a great protein alternative to traditional hamburgers and hot dogs, especially when prepared with chunks of onions, peppers, tomatoes, mushrooms, zucchini, squash and sweet peppers. Add water to the cooler to keep tailgaters hydrated. Fresh lemon and lime add a hint of flavor for those whining that water is boring.

earken back to the days when grandma would prepare a roasted leg of lamb for the Easter feast, or perhaps when Bubbeh fixed the traditional beef brisket for Shabbos dinner. It seems like the best-tasting prime cuts are always consumed in the home, in the company of your family. The home cook may put the love and care into the dish, but some of the magic also comes from one source: the butcher. A rare breed in today’s fast-paced world, a true butcher is an expert craftsman with a reputation to uphold. His livelihood—and good name—depends on the quality of meat he puts on the block. In many cases, these men have been perfecting this craft for decades. I was fortunate enough to speak to four such men. They’re all old school to say the least, but in this modern world, I’d trust them to deliver me the best quality cuts for an ordinary meal, or for a special occasion.
Andrew Ilnicki and Jerzy Kossakowski East Village Meat Market New York, NY Upon stepping into this ethnic Ukrainian shop, your nostrils are immediately filled with the delicious smells of traditional kielbasa, as well as pork, beef and lamb cuts. Beautifully marbled steaks are on display. Taking it all in, my salivary glands went into overdrive. Andrew, the former apprentice, and Jerzy (pronounced George), the master, don aprons, and sport white paper hats. The job takes expertise, and this duo certainly has acquired that over the years. Jerzy was enrolled in an intensive five-year butchering program in Bialystock, one of the largest cities in Poland, which Andrew calls the “Old Country.” Jerzy spent time in the processing plant, and learned how to take apart every kind of meat. Andrew spoke on behalf of Jerzy: “The week was divided into six days,” Andrew told me as Jerzy nodded in agreement. “Three days he spent learning and three days was practice—going into the factory and learning.” Sunday was the only day off. There was Sunday Mass, and a feast to follow.

East Village Meat Market opened in 1970, and has remained a mainstay, even as the neighborhood has changed drastically. Today, business is still decent, but the staff finds itself having to work harder than ever. “It was an ethnic neighborhood, Polish Ukrainian,” said Andrew. “There were not as many restaurants as you see today. There were a couple bars, a couple restaurants, and everybody cooked at home. So people used to come here and buy the meat. It was a very busy store.” Andrew started working there in 1980. Back then he only would handle the register. It was not until 1986 that Jerzy started to teach him the ways of butchering. “I had to make sure everything was nice and clean up front,” Andrew recalled. “I would sweep the floor, and then I started slicing the cold cuts. Then I worked in the kitchen, and then I came here.” Andrew paid his dues, and he now handles prime meats with the same care and expertise of his master. Together, both men take great pride and satisfaction in offering their customers the best of meats for memorable meals.
Robert Gutowsky Director of Meat Operations Inserra Supermarkets With a large supermarket, the price of the cut is lower, but the stakes (no pun intended), are higher for the company, due to the sheer volume of meat that they handle. Robert Gutowsky has been in the meat industry for more than four decades. As director of Meat Operations for Inserra Supermarkets, the company that owns 22 ShopRite stores in New Jersey and New York, Gutowsky will travel to six or seven stores on any given day to check in on his over 220 employees in the meat department. Everyone—the cutters, the wrappers—must answer to Gutowsky. He says he loves the people he works with. It’s a family environment, and that’s what’s most important when it comes to preparing meat. And Gutowsky oversees a lot of it. In fact, on any given week, his stores will handle a total of around 1.5 million pounds of meat. Like the great basketball players who arrive before sunrise and stay after sunset to shoot hundreds of free throws on the court, great butchers must show the same drive. Gutowsky usually hits the first store around 7 a.m., and finishes at 6 p.m. or later. “I started in the grocery store just doing little things,” said Gutowsky, who first worked at a little butcher shop called Phil’s Market when he was only 13. “They started me out with deliveries and boning out, and then I went to the boning out side, waiting on cus-
tomers and boning out neck bones and things like that.” Gradually, Gutowsky carved a future for himself. He went to school, and served as an apprentice butcher as part of a state work program with Acme Markets. Soon after, he worked as a meat manager, moving on to become a meat supervisor and also working in wholesale. In 1994, the company he was with was acquired by Inserra Supermarkets, which has an excellent tradition in meat (lamb and veal in particular), going back to the days of Patsy’s Supermarket, which started the franchise. He has been with them ever since, and his drive is a reflection of a rich history. Gutowsky dove right in to face the new challenges of working in a faster paced and evolving cooking environment. “When we started out years ago, I actually went to the farm, and we had to kill the animal, slaughter it, skin it, and then come back in a couple days and cut it up,” explained Gutowsky, who noted that in today’s world, people often don’t know how to get the right angles on their cuts, a true art form that takes the precision and expertise of a highly skilled, and deeply passionate individual. It’s a talent, and unfortunately the skill may be diminishing in modern butchers. But you’re safe with Gutowsky. He’s keeping the strong butchering tradition alive, one ShopRite shipment at a time.
Kevin Morgan united meat market new milford, NJ Like the previous three men, Kevin Morgan, owner of United Meat Market, has devoted his life to the perfection of meat preparation. From his butcher shop, the true meat veteran can prepare every imaginable cut. He is particularly renowned for his signature cut, Richard’s Jersey Broil, which you won’t find anywhere else.
Richard’s Jersey Broil, which comes from the top sirloin and has become one of the store’s top sellers, may not have come into existence had it not been for one fussy eater. Morgan took home this particular cut of top sirloin for his friend’s picky son. For some reason, this cut satisfied his tastes, so the father asked what it was. Continued on pg. 82

“I said there’s no name,” recounted Morgan. “I said ‘I tell you what, your son’s name is Richard; we’ll call it Richard’s Jersey Broil,’ and it stuck.” Not every man gets to name his own prime cut. Like the previous great butchers, Morgan first had to learn the basics and hone a warrior-like affinity with his blade. He was only 10 years old when he started boning out shins at his father’s market store. The meat from the shins was grizzly, and mostly used for grinding. “This way I was able to learn how to handle a knife without ruining any meat and that’s how they got me started,” said Morgan of his early beginnings. For many years, Morgan worked with his father at their store, Morgan’s Meat Market, located at 55 Vesey Street, right across from the World Trade Center. By 1989, however, Morgan bought United Meat Market and since then, he has worked there in New Milford. Morgan too has noticed that today’s world moves much faster. Wives and husbands don’t have time to prepare meat the way they used to. The extra work now falls on the experienced hands of Morgan and his crew. For instance, Morgan makes it a point to know where all of his meat comes from. The prime cuts come from Nebraska, and chuck comes from a place in New Jersey that gets its product from Maryland. Unlike most butchers, Morgan bones out most of his beef and chicken. “When the meat comes in, it’s just as it is when it’s killed. It’s skinned and it’s split,” said Morgan. “The four quarter has the bone and everything in it, so we have to bone out the neck and shoulder. We take all the bones out and then we separate it into different cuts.” Morgan has complete control over his craft, and with almost 50 years of expertise, it’s clear he’s doing something right. His marinated flank steaks and marinated blade steaks are popular sellers. He grinds his own chicken and sausage. Just as important as his meat mastery are his people skills. He has a good rapport with his two co-workers, and, of course, his customers. “We laugh with the customers,” said Morgan. “It’s just interesting—all the different people that come in.”
