Gentlemen, I once watched a football movie called “Any Given Sunday.” In it, Al Pacino plays Tony D’Amato, a mess of a man but a hell of a coach. Before a big game, he delivers your cliché motivational speech to amp up his players. In summation: “You know, when you get old in life, things get taken from you. I mean that’s, that’s, that’s part of life. But, you only learn that when you start losing stuff. You find out life’s this game of inches. So is football. Because in either game—life or football—the margin for error is so small. I mean, one half a step too late or too early and you don’t quite make it. One half-second too slow, too fast, and you don’t quite catch it. The inches we need are everywhere around us. They’re in every break of the game, every minute, every second. On this team, we fight for that inch. On this team, we tear ourselves and everyone else around us to pieces for that inch. We claw with our fingernails for that inch. Because we know when we add up all those inches, that’s gonna make the fucking difference between winning and losing! Between living and dying!” When you take out all the Hollywood drama, you’re left with a speech that is perfectly suited for us as we head to MetLife or as we watch the games on the boob tube over the course of the next few months. As our tans fade and the leaves fall, we are left without any real certainty of what our future will hold. We may not be able to predict the worst parts, and we cannot always take all the credit for the best. We can, however, go forward, one inch at a time, until we reach the promised land, wherever that ultimately is to you. Talk of the Town is now going into its fifth year and it’s still far from perfect. At first, we weren’t so happy about that, but then we realized that it’s because the magazine is a reflection of us—sculpted from our diverse and unique perspectives into a themed grouping of words and images. Each issue, we set out to create this gentlemen’s guide. We scour every corner, local and beyond, to inspire you, the gentleman. When you read this magazine, we want you to feel that you can become a better gentleman than you were before—or at least a better dressed one. As gentlemen, we have always kept a promise to ourselves to be better men. What sets us apart is that we acknowledge our faults and embrace our shortcomings. Finally, right? These recipes are great for the parking lot at MetLife or if you just want to make something delicious in the comfort of your own home
OK, so this one isn’t so traditional, but when you’re stuck in a fantasy football rut, sometimes breaking tradition is exactly what you need. Technically, it’s still summer out there, and nothing refreshes us like a Mexican beer. Although many of you will quickly turn to Corona, we feel Montejo’s authentic Mexican taste did this recipe justice. Or maybe it was the beer talking… Recipe created by Chef Eddie Ruiz Prep time: 20 minutes Cook time: 15 minutes Serves 4 Ingredients: 4 ½ ounces all-purpose flour 4 ½ ounces rice flour ¾ teaspoon baking soda 1 ½ teaspoons salt 1 tablespoon sugar 12 ounces Montejo beer 1 ½ pounds sea bass fillets, skin removed Dipping sauce: ¾ cup Mexican crema ¼ cup mayonnaise 3 tablespoons malt vinegar 2 ounces chives, sliced thin Salt, to taste Directions: • For batter, mix all dry ingredients into bowl and mix together using whisk. Add beer and slowly whisk, making sure batter is smooth with no clumps. Set aside. • For fish, rinse fillets in cold water and pat dry with paper towel. Cut fillets lengthwise down middle. • To cook fish, fill 10-inch sauté pan halfway with preferred frying oil. On medium heat, bring oil to about 320 to 335°. • Dip fish into batter and coat evenly. Place fish into hot oil for about four minutes and flip. Cook for another four minutes. Batter should be golden brown. Remove fish from oil and place onto paper towel to absorb excess oil. Repeat process until all fish fillets are cooked. • For dipping sauce, in small bowl place all dipping sauce ingredients and mix together with whisk until incorporated together. Place dip in small bowl and refrigerate up to two days.

We aren’t going to sit here and tell you that Velveeta mac & cheese is the best macaroni and cheese combo you can find, make or buy. What we will tell you is it’s a damn delicious and easy foundation for making a great, hearty dish everyone will love. Serves 3 Ingredients: 1 package Velveeta Shells & Cheese Bold 1 ½ pounds lean ground beef 2 teaspoons taco seasoning mix ½ cup water ½ cup crushed tortilla chips A fresh jalapeño or two, chopped (if you dare) Directions: • Boil six cups water in saucepan. Stir in shell pasta and cook 8 to 10 minutes or until tender, stirring occasionally. Do not rinse. Return to pan. Add cheese sauce and mix well. • Meanwhile, brown ground beef in skillet and add jalapeños. Drain. Add taco seasoning mix and water. Simmer until most of the water is cooked off. Add meat mixture to cooked pasta with cheese sauce. Mix well. Top with tortilla chips.
It would be a shame to leave one of the tailgate classics, the burger, off of this list. So, we won’t. | Serves 4 Ingredients: ¼ cup mayonnaise 1 tablespoon lime juice 1 package McCormick Grill Mates Smoky Ranchero Marinade, divided
Stuffed Avocado: 2 ripe avocados ¼ cup crumbled Cotija cheese ¼ cup diced tomato
Burgers: 1 pound 80% lean ground beef 4 kaiser rolls 1 small red onion, thinly sliced
Directions: • For lime mayonnaise, mix mayonnaise, lime juice and one teaspoon of the marinade mix in small bowl until well blended. Cover. Refrigerate until ready to serve. • For stuffed avocado, halve and seed avocados. Carefully remove peel, leaving each half intact. Lightly season with salt and pepper. Mix cheese and tomato. Set aside. • For burgers, mix ground beef and remaining marinade mix until well blended. Shape into four patties. Grill over medium heat four to six minutes per side or until burgers are cooked through (internal temperature of 160°). Grill avocado halves, cut-sides down, 30 seconds. Turn over avocados. Place two tablespoons of cheese mixture into each avocado half. Drizzle with hot sauce, if desired. Grill four to five minutes. Toast rolls on grill, open-side down, about 30 seconds. • Serve burgers on rolls topped with stuffed avocados and onion slices. Press roll gently to smash stuffed avocado. Serve with lime mayonnaise.

For when you don’t want to rely on Velveeta, which could be most of the time, but still want a world-class macaroni and cheese. Serves 4 to 6 Ingredients: 6 ounces Gruyère, shredded 10 ounces extra sharp cheddar, shredded* 3 ½ tablespoons butter 3 tablespoons all-purpose flour 2 cups milk (preferably whole milk)* 12 ounces pasta* ½ cup breadcrumbs Nutmeg Salt and Pepper *See cook’s notes at bottom Directions: • Preheat oven to 375°. • Bring a pot of salted water to a boil. Cook the pasta according to instructions. • Heat up the milk but do not boil it. Then, melt three tablespoons of butter in a medium saucepan. Add the flour and whisk over low heat for a minute. Add the hot milk and continue whisking for an additional minute or two until the mixture thickens. Add the cheese, saving a small amount to sprinkle on top, and whisk until melted. Add a pinch of nutmeg, salt and pepper and mix until combined. • Combine the pasta and cheese sauce in a baking dish. Sprinkle the remaining cheese on top. • Melt the remaining butter and toss with the breadcrumbs. Sprinkle the breadcrumbs on top. • Bake for 30 minutes or until breadcrumbs are browned. Serve. Cook’s Notes: 1. I tend to use yellow cheddar to give it some color, but it is your preference. 2. Whole milk has extra fat that allows the sauce to thicken better, but any milk you have on hand should work. 3. Cavatappi (cellentani) is used in this recipe, but any small shaped pasta works. I also like rotini, shell or elbow pasta.
