Finally, the time we have all been waiting for since February: Football is here. As always, the preseason has taught us nothing, just teased us until the real excitement can begin. Will our hometown Giants be able to repeat? I sure hope so. Will the Jets be as embarrassing as they were last year? Tebow only knows. Although I can’t be sure what will happen, I do know one thing: Every Sunday from the minute I wake up, until Sunday Night Football has ended, I will be in my media room. Why even go to the game anymore? I have my plush leather chair, a fridge stocked with beer, a sound system that makes me feel like I’m at the stadium, and the 90-inch flat panel HD screen that gives me a better view than if I were actually there. Adam Ramos of Virile Barber & Shop in Waldwick knows a thing or two about close shaves. ew pleasures in a man’s life are more enjoyable than a hot towel shave. It’s relaxing, soothing, and about the only time when I’d feel comfortable with a blade held to my face. What better way to unwind after a long day and tiring commute than to just sit back in an antique barber chair, and let a master of his craft remove all that grimy facial hair? Adam Ramos, owner and head barber at Virile Barber & Shop in Waldwick, has perfected this manly craft, doing it better than just about anyone. Upon entering the shop, Ramos offered me a beer—a nice touch of welcome to the men’s club. Ramos, born in Jersey City, has been around styling his whole life. His mother cut hair for a living, and was one of the best in Jersey. From a young age he grew up watching her do her hair thing, but at first, music seemed to be his calling. (He plays about half a dozen different instruments.) Gradually, however, he realized he was pretty damn good at styling, and took his schooling to another level, working at shops in Jersey and SoHo, before finally having the opportunity to open Virile in September 2011. The shop has become a welcome addition to Bergen County, and Ramos keeps customers coming back. In my experience, some barbers don’t know how to hold a good conversation; they just don’t know when to shut up. Ramos and the other barbers at Virile can feel out their customers, and adjust the conversation accordingly. He travels a lot, and draws inspiration from every pocket of the world. Virile is his canvas; with this shop, he has painted a beautiful, cohesive vintage portrait of manliness. What struck me most at first was the vintage Play-

boys. Who can forget the sly curiosity you exhibited as a kid when your Pop was in the barber chair? Sure, there were Sports Illustrated issues, and maybe even a Maxim, but then there was that mythical mag that was published by Hugh Heffner that always caught your eye in the magazine rack. You had to sneak a peek. Ramos keeps a few Playboy copies from the 1960s and 1970s with the other magazines that customers can thumb through, and also has a few more framed. Some of the jokes may be a little dated, but they’re still funny. In the “Mad Men” era we live in, it’s interesting to see what ads from decades ago looked like. The Playboy issues are a nice touch, and as Ramos says, “You got to have the vintage Playboys.” But back to the shave. Ramos took his time, a nice contrast from my usual “on-the-go,” hack-and-slash style of so many other barbershops. Before applying each hot towel, he provided ample warning of their temperature. Yes, they were warm, but in no way did my face feel overwhelmed. I could have been there all night, with a hot towel sitting on my face; it was that comfortable. After each towel was removed, I felt as if I had just gone to a hot spring in the mountains. My face felt refreshed and rejuvenated. And there was something about my eyes, which felt and looked completely revitalized. Really does make you feel young again. Ramos is as old school as it gets. When he first opened Virile he used to create his own simple soaps and creams right in front of his clients. He had a little lab area set up with all his ingredients and fragrances. He would then walk customers through the process, and listen to their opinions about what they needed out of a hair and skin product. Continued on pg. 12

Tips for the Perfect Shave When you don’t have Adam Ramos around to give you the shave of your life, follow his guidelines for a smooth do-it-yourself shaving experience. Invest in a shower mirror. There is no better place to shave, unless you have a vintage early 1900s barber chair. The steam against your face softens the skin, allowing smoother gliding with your razor. After cleaning your face and body, make sure to rinse off your face. This will remove any remaining soap, which could create irritation. Use hot water to keep your skin softened. Apply your shaving cream and go at it gently. Even if you do not enjoy doing it on yourself, racing through the process increases the risk of irritation, and the likelihood of missed patches of hair, noticeable to everyone you will see, and who will see you. After you have cleanly shaved your face, apply chilling cold water, the colder the better. Although this may not be ideal in the shower, it will close your pores, minimizing the chances of razor burn and irritation. Lastly, moisturize generously. Congratulations, you now look better than you did ten minutes ago.

Ramos’ issue? A chemist he was not. The formula was different each time. So eventually Ramos threw product making to the wayside, and began his search for a strong team of fellow barbers to bolster his business. These days, he’s leaving the product creation to the pros, but says to expect a Virile men’s grooming line in the coming months. Strong, cooling fragrances filled my nostrils as I waited for Ramos to begin the process of banishing my week-old beard to barbershop Siberia. After the towel was removed, the warm shaving cream felt much different once applied. If I could liken it to anything, I’d say think about this: You’ve just shoveled snow for an hour on a cold December day, and want to relax, so you sit by the fire, and have a glass of bourbon. You know that instant, warming sensation your face feels, that almost encompasses your entire body? It’s like that.

But alas, the blade. I came here for a reason—to remove my facial hair. It was time. Ramos began meticulously taking away my brown hairs with the straight blade. I was sad to see them go. I’m not good at goodbyes. But if there was anyone to do this for me, it was Ramos. While in the antique chair, I kept thinking to myself, “How the hell did this guy learn to do this?” To hear Ramos tell it, he started getting into it a few years ago, and then he got really nerdy about it—the craft, the tools, the history, everything. But I wondered, you need to practice on someone, no? Luckily for Ramos, he has some really good—and brave— friends. It takes a certain level of trust to let someone hold a blade up to your neck. Some practice runs would take him two hours, but he had to get it right. It took some time to learn, some trial and error, but I can say with the utmost confidence that Ramos knows what he’s doing

He takes a no-BS approach to shaving. Each man has different hair, and different skin. Ramos adjusts accordingly. For me, he did two passes with the blade, which meant that, lucky for me, I got to have another warm towel placed over my face; three in all. Some barbers will do more, some less. Ramos does what’s best for the man. After the second pass, and after every last hair was removed, Ramos used a combination of after-shave cream, a cooling towel, and one last, glorious warm one. The journey was complete, and I was a changed man. I looked in the mirror, and released a breath of sheer relaxation. My friend said it was the most clean-shaven I’ve ever looked, and I tend to agree with him. I can’t remember the last time my face felt that smooth. Perhaps when I was an infant. Will I shave on my own again? Probably. But this was a truly special experience. I know I’ll be back.

owers & Wilkins is a major international company, with a network of distribution that reaches across 61 countries. However, in 1965 it started life with John Bowers hand-assembling speakers in the back of the electrical store he ran with Roy Wilkins in Worthing, West Sussex, UK. Bowers was a passionate music fan, who felt his needs were poorly served by the loudspeakers of the day. His stated aim was to develop a loudspeaker that neither added to nor subtracted from recorded sound. Following a bequest from an elderly customer called Miss Knight, Bowers founded B&W Electronics Ltd, and began designing and build-

ing loudspeakers in the garages at the rear of the shop. The first of these was the P1, and the profit from these loudspeakers allowed Bowers to invest in the company’s first calibration equipment. Bowers & Wilkins has always aimed to produce the finest loudspeakers across a broad price spectrum, and the Domestic Monitors in the form of the DM1 and DM3 soon provided a more affordable option. The Domestic Monitor has lived on for many generations of superb, affordable loudspeakers, right up to the current award-winning 600 Series. The 1970s brought technological advances that not only changed the way Bowers & Wilkins made loud-

speakers, but the way the whole world did. It also saw the launch of several iconic, groundbreaking products, the first of which was the DM70. Without this loudspeaker Bowers’ dream of the perfect transducer might have remained just that. Critics agreed that the sound from its 11-module, electrostatic midrange/high-frequency unit was a revelation, while its cool, curved slim-line cabinet changed the shape of loudspeaker design forever. In 1974, extensive trials of driver cone materials revealed that Kevlar®, a fabric used in bulletproof vests, could break up standing waves as efficiently as it stopped bullets. The ochre yellow Kevlar mid-range cone was to become a Bowers & Wilkins

patent and a hallmark of the natural sound of its speakers. That same year Bowers & Wilkins appointed Kenneth Grange, founding partner of Pentagram and one of the UK’s leading designers, to work on the design of its cabinets. The relationship produced many outstanding loudspeakers, right up to and including 2005’s Signature Diamond. Grange’s first design, the DM6, was also the first to feature Kevlar. The follow-up DM7 liberated the tweeter from the main cabinet, setting high frequencies free and creating what was Bowers & Wilkins’ most lifelike sound thus far. A greatly refined version of “Tweeter on Top” technology continues in the current Bowers & Wilkins speaker range, most notably in the 800 Series Diamond. Back in 1979 the original 801 heralded the modern era of high-end speaker design; superior drive units isolated in separate chambers produced sound of unheard-of-realism and made the 800 Series a fixture in the homes of audiophiles and top studios, including the world famous Abbey Road Studios in London.

In 1981 John Bowers created the Steyning Research Establishment (SRE), which houses a team of specialist acoustic and electronics engineers with a wealth of modeling, testing and design tools at their disposal. Bowers passed away in 1986, but his dream lives on, in large part because of the principles and ethos he instilled in SRE. Industrial design also remains an important element of Bowers & Wilkins strategy, and the appointment of Morten Warren in 1989 is testament to this. Warren went on to found Native, one of the UK’s most successful design agencies, and is responsible for Bowers & Wilkins’ current product design, including the iconic Zeppelin Air and P5 headphones. After five years of research, 1993 saw the launch of Nautilus™. Straight sides disappeared and along with them almost every trace of cabinet distortion. Nautilus changed everything; Bowers & Wilkins speakers would never look or sound the same again. The technology trickle-down got under way with the highly regarded Nautilus 800 Series, and 19 years

on, Bowers & Wilkins is still manufacturing Nautilus in Worthing for discerning customers around the globe. The arrival of a new century saw the development of another major technology: diamond dome tweeters. Continued on pg. 18

The company’s success since that time has been secured by a chain of technological achievements, each one rewriting the rules of how speakers should be engineered and designed. It’s a tradition of innovation that Bowers & Wilkins is proud to continue today.

Bowers & Wilkins had long understood the benefits of a theoretically infinitely stiff and infinitely light dome, but it took time for science to reach the point where that dream could be realized. Chemical Vapour Deposition finally allowed the production of diamond dome tweeters that come close to this theoretical ideal. Created to celebrate Bowers & Wilkins 40th anniversary, the Signature Diamond is a mixture of the old and new. The old came in the form of the return of designer Kenneth Grange; the new in the newly developed diamond dome tweeters. Diamond domes now appear in all models in the flagship 800 Series Diamond, and have recently seen Bowers & Wilkins receive the Queen’s Award for Enterprise in Innovation. While developments such as diamond dome tweeters were revolutionizing high-end audio, the iPod® was changing the way millions of people listened to music. The ability to carry around thousands of tracks certainly changed music on the move, but the iconic, multiaward winning Zeppelin allowed people to get the best out of their digital music at home. Zeppelin Air was another first—the first premium iPod dock to utilize AirPlay, Apple’s easy-to use, high-quality wireless streaming technology. A

beer’s a beer, right? That all depends on how you experience it. I, personally, like to use all of my senses to their fullest potential. Until now, you may have thought you could only taste beer, but soon you’ll be able to thoroughly hear, see, smell, taste and feel your beer. The beginning of your beer journey begins with sound. The glorious crack and hiss of a can being opened or the sigh and jingle of a longneck bottle being uncapped; then the sizzle as it is poured into the appropriate clean glassware (that’s a whole other lesson). The sound a beer makes mostly indicates its degree of carbonation. I like to hear a billowing release of the built-up pressure in the container, followed by a strong fizzle that never totally dissipates. (I’m the weirdo at the bar with my ear in the glass.) As the beer is poured, my senses shift and I’m now really checking out my beer. While it’s being poured, I look to see how thick the beer appears coming out of the mouth of the bottle and as it flows down the side of the glass. Next, I admire the fabulous color of the beer and the formation of the head, the foam on top of the beer, which helps retain flavor and aroma. The color of beer is measured in degrees Lovibond, or more commonly the Standard Reference Method (SRM), which ranges from 1 to about 40. A score of 1 would be equivalent to a pale yellow or straw color and a high level of clarity, while a score of 40 would be black. The color can range from golden straw hues, glowing coppers and ambers, rich browns, warm reds and deep black. Also, as the beers become darker, they tend to become more opaque. After I’ve sufficiently ogled my beer, I stick my nose deep down in the glass and take quick little breaths in to smell all of its complex layers. The scents I try to pick out are a result of the magical combination of malted barely, hops, yeast and any adjuncts, which are not limited to oats, candy, various sugars, herbs and fruits.

Here are some examples of how these components can be explained. Malt is responsible for most of the sweetness and can be described as biscuit-like, earthy, caramel-like, coffee, toffee, roasted or toasted. Hops, which balance the sweetness, can be bitter, floral, earthy, resin-like, piney and citrusy. Each type of yeast brings out its own unique flavor profile as it consumes and converts (don’t forget, yeast is alive!) the malt sugars and can be described in similar terms. Yeast also affects the mouthfeel and color depending on whether the beer is filtered, which removes most of the yeast, or not. The last components are taste and mouthfeel. There are two parts to tasting a beer. First you want to make sure the beer is the proper temperature. Too cold, and your taste buds can’t function optimally. Take a sip of your beer while breathing through your nose to smell the beer and tie the senses together. Let it swish all around your mouth. Over and under your tongue and maybe even across you gums and teeth (I do that sometimes). Think about any flavors you discern and swallow. Then focus on the taste at the back of your mouth and the after taste. You might be able to pick out even the most delicate flavors. Savor them. A beer can be

described by an endless list of adjectives. No flavor is out of the picture. In addition to the aforementioned terms, a few more examples include sweet, sour, spicy, tart, astringent, acidic, floral, licorice, fruity, herblike, chocolate-like, bread-like, nutty, woody and balanced. You will taste any number of flavors all over your mouth, so just take your time. The mouthfeel is what a beer feels like rolling over and under your tongue and swirling down your throat. Mouthfeel can be dry (a little after

taste), wet, thick, thin, bubbly, heavy, light, smooth, chewy, sharp, dull, full, syrupy, crisp, clean, hot (due to alcohol burn) and prickly. Try and guess the alcohol by volume (ABV) by the way the beer feels. A good beer should feel balanced and not too heavy but in some cases a brewer wants you to experience a thick and weighty beer that coats the tongue and throat, leaving you warm and tingly all over! Bubbles will also tickle your palate and help lighten and balance a beer’s sweetness, bitterness and feel. If you’ve ever had a flat craft beer, you know how viscous and sweet they can be. However, cask beers purposely have a low carbonation level, which enables you to better taste all the components of the beer. This is why a Bud or Coors is served so cold and so carbonated, so you don’t have to endure its taste. A beer is your beer. You can never be wrong. Next time you grab a craft beer from your fridge or order one from a bar take your time and try to fully experience it. Start from the beginning. Listen, look, smell, taste and feel. No beer is one-dimensional and neither should your tasting experience. As the ever-evolving Sam Calagione, founder and president of Dogfish Head Brewery, once said, “The craft beer drinker is promiscuous.” Mingle and make love to all of the beers you can.

DAVID SOKOSH A MAN TO WATCH The time seems right for his new line of wristwatches. WRITTEN BY

T

he clothes, or in this case, the watch, doesn’t make the man, but it can make him look a heck of a lot better. A watch is smooth, suave, sharp. Every man needs one. We get them at bar mitzvahs, communions, weddings and anniversaries. Every watch has a story behind it, but do we ever wonder how it was made? Probably not, or not that much. Usually the person who sells us the watch, or who gifts it to us, isn’t the watchmaker himself. Over the years, watchmaking has become a more antiquated and specialized craft. But there’s one man in the heart of Brooklyn who has perfected the skill. He is a master and his name is David Sokosh. Sokosh’s line of wristwatches is unlike any other. At one moment in time, they were Swiss pocket watches. Sokosh was born in New England, the son of two amateur photographers. He was exposed to art, photography and design from an early age. Old technologies fascinated him, clocks in particular. Sokosh’s parents would take him to antique shows and auctions growing up, further spurring his keen sense of design aesthetics. Sokosh’s camera was always close at hand. After spending some time in college, Sokosh realized it wasn’t all he expected it to be. One day, when he was about 20, he saw an ad in the local paper. A family-owned clock shop in Connecticut was looking for an apprentice. Sokosh was interested. He went for an interview, was offered the position, and accepted. He gradually began learning the process of cleaning and restoring antique clocks, most of which were made between the 1850s and 1950s. fore moving to New York like many a twentysomething. He stayed, worked in photography for many years, and ended up opening up an art gallery in Dumbo, Brooklyn. Like many a small business, Sokosh’s gallery couldn’t survive the Great Recession. He closed his shop, and knew he had to get creative. Luckily for him, he had the place to do it… and the talent. In April 2008, Brooklyn Flea opened in Fort Greene and Williamsburg. Collectors, craftsmen and artists now had a place to show off their hip, vintage and highly collectible antiques and goods—some of which they had constructed themselves. Sokosh started buying and repairing antique clocks, and then selling them come Saturday and Sunday. The clocks were popular, but fleagoers kept asking him the same questions. “I was getting the sense that men were really interested in wristwatches,” Sokosh said over the phone. By actually showing up in person every time the market was open,

Sokosh got to know his customers, or potential customers. He knew how to restore clocks, but watches were a whole new can of worms. He couldn’t just teach himself. It was time for another internship. For a year, Sokosh studied with a

man in Brooklyn, learning the craft. Three years ago, he launched Brooklyn Watches. “It really came from being at the market and selling clocks and really wishing I had something smaller that people could take away that said Brooklyn on it,” Sokosh said. The watches couldn’t just be any ordinary watches. He needed something to distinguish them. The idea of restoring old pocket watches came to mind. Pocket watches are cool, yes, but in this day and age, they’re not as en vogue as they once were. Why not make them into wristwatches? Sokosh determined that the Swissmade Unitas movement would be the best to work with. Unitas, now a defunct company, would manufacture a movement (the inside of the watch), and would then sell it to other companies who would place their branding on it. more modern movements, but Sokosh was always attracted to vintage materials. Also, they weren’t prohibitively costly. “I was kind of curious about older things partly because they were less expensive,” said Sokosh. He is constantly buying these old pocket watches, whether it’s from watch dealers, pawn shops or the Internet—wherever he can find them. Once he has the Unitas movement, he begins the process of extracting it from the pocket watchcase, restoring it and making a whole new watch. First he delicately takes apart the movement. Sokosh must then modify the watch slightly, as it’s held differently in a pocket watchcase than in a wristwatch case. He cleans it, re-assembles the movement, and then oils it. Depending on the model, either the same dial or a completely new one will go on. Some models have new hands placed on them. If he’s using a vintage dial, then the original branding

will have to be removed before putting on the new branding: Brooklyn Watches, which is done by a dial painter in Manhattan. Other than the painting, Sokosh does everything himself. The ability to use something over again is what Sokosh really likes. The end result is a magnificent collage of all the materials, and a classic, 20th-century men’s wristwatch. “The way the watches look is a natural outcome of the vintage materials that I’m finding, the new materials that I’m finding and kind of combining them,” said Sokosh. Some of the watches have a bit of a Boardwalk Empire feel to them, with beautiful leather, glass and metal. Coincidentally, Sokosh actually got to know some of the producers. His workshop in Clinton Hill is near where some of the HBO show is filmed. He sold them a few clocks to use on set, but his watches were not from the correct era, so that was a no go.

When he first started selling them at the flea market and online, there was one problem: naming them. People would say something like “Oh, I like the black one.” What better thing to do than name them after neighborhoods in Brooklyn? There’s the Williamsburg, Park Slope, Brooklyn Heights—it goes on and on. And there’s a reason for each name, too: “I do try to some degree to match the vibe of the watch to the neighborhood.” Now going strong, Sokosh still enjoys interacting with customers. The whole re-use concept is a thrill to him. “It lets me flex some aesthetic muscle in a very practical way,” he noted. Garden at the Ready Gearing Up for Colder Months WRITTEN BY

I

t’s that time of year when families are getting back into a routine, preparing for school schedules, cooler temperatures and earlier sunsets as new colors appear throughout our landscapes and trees. While the spectacular color symphony seems to be the most striking start of the official season, the true start to fall actually begins much earlier. Once the soil temperatures begin to drop in mid-August, the fall season is truly beginning. The soil is getting cooler due to the shorter hours of sun-

FALL 2012

light and cooler evening temperatures. Throughout the New Jersey area, the trend of outdoor living is becoming more prominent. And there’s no better time to enjoy the outdoors than during these last few weeks of cool, refreshing weather. Yet, while the seasonal changes are always beautiful to admire, there is also a lot of work to be done to prepare for the cold weather to come. This is a transitional time for trying to coax summer successes to hold on for just a little longer, and at the

same time hunker down gardens to survive through the winter. Decreasing temperatures bring many changes to your yard. Soil temperatures drop, leaves on the trees are slowly changing colors, dew is forming on the lawn, and the dynamics of your gardens are all transitioning. Due to the dew that is slowly beginning to arrive, and the change in temperatures in your soil, grubs, Japanese beetles, will start to become prevalent. If you start noticing brown patches in your lawn, it is possible that


it is due to grubs, which burrow in the ground and lay eggs this time of year. It becomes a vicious cycle that you will need to maintain. Fall is ideal for both planning and planting. Anything that gets planted in the fall will establish a deeper route system and will experience minimal exterior growth. There is much less stress on plants at this time of year. The natural dew forming on your yard from the warm days turning into cooler evenings will develop on the grass. This helps to promote the natural plant and tree growth, and will be especially beneficial to your lawn. This also allows specimens to flourish for the following season. A good key rule to keep in mind: when football season arrives, it is time to plant mums, considered the “football season plant.” Mums will last till Halloween, or through the first one or two frosts of the season. As that mum season ends, move on to plant ornamental kale and cabbage. These will last you through the winter months. You will begin to see

black-eyed Susans out now, as well as a second generation of knockout roses and carpet roses. The burning bush plants are turning red in color, and pansies and kale are being planted now to last through early winter. As the mums die back and your ornamental kale and cabbage are planted, this is also the time to plant bulbs. Bulbs need to be planted in advance in order to bloom in time for the next season. People often forget to plant bulbs on time and miss out on seeing them bloom during the first signs of spring. Bulbs should be planted in the ground before it freezes. Daffodils, crocus, hyacinths and tulips will all bloom in the springtime, when planted in the ground before the winter. A common mistake homeowners make is to wait for the beautiful weather to work on their gardens. Use your fall and winter months wisely. Start cleaning out and cutting back old perennials, cutting back plant material to help beautify your gardens and lay the

groundwork for the spring season. If a pool or outdoor living space is something you are considering adding to your yard, this is also the time to start making those plans. The schedules of landscape designers and pool builders get busy quickly. It is best to be on their list early on in the season. If you want to have a pool to enjoy by the summertime, the sooner you start making arrangements the better. Unfortunately, the colder months are inevitable. If we are lucky, we will have another winter that was as mild as last year. Since there are no guarantees, however, start preparing your yard in the latter part of fall to brave the dropping temperatures. Be sure to clean leaves that could damage your lawn, blow debris back into woods to form natural mulch and “put your lawn to rest” with the use of winter fertilizers. Rest assured, before you know it, early spring will arrive again, with those promising first signs of your budding spring bulbs.

Revel in the Richness Chef David Burke, of Manhattan’s hip David Burke Townhouse, decided it was time we stop worrying about hiding those extra “love handles” around the swimming pool and instead indulge in what we truly love—eating with gusto. That’s why he gave us three recipes that test our culinary capabilities, will impress all guests, and leave us feeling richly replete.

Parfait of Salmon and Tuna Tartars with Crème Fraîche (Yields 10 servings) Cooking with David Burke

Method Whip crème fraîche until thick, and stiff peaks are formed. Reserve in refrigerator. Combine shallots and olive oil in a small saucepan and sauté until shallots are translucent. Place shallots in a bowl and add capers, lemon zest, soy sauce, horseradish, coriander and chervil. Mix until combined. Divide shallot mixture into two equal parts. Combine one half with diced tuna; combine the other half with ground salmon. Add 1 teaspoon salt and 1 teaspoon pepper to tuna mixture and mix until all ingredients are combined. Lightly brush inside of 10 rings or molds with olive oil. Place waxed paper on a cookie sheet. Place molds on the cookie sheet.

1 cup crème fraîche 2 shallots, peeled and minced 4 T olive oil 2 T chopped capers 2 tsp lemon zest 4 tsp soy sauce 2 tsp ground horseradish 2 tsp chopped coriander

2 T chopped chervil 10 oz yellow fin tuna, diced 10 oz salmon, ground 2 tsp kosher salt 2 tsp freshly ground pepper Olive oil for rings 10 oz Osetra or other caviar (optional)

To Assemble: Place 2 tablespoon of tuna mixture in each mold. Smooth tuna mixture with back of spoon. Add 2 tablespoons of crème fraîche. Smooth with blade of flat knife, making sure that crème fraîche is level with top of mold. You should have 3 equal layers. Chill in refrigerator for 2 to 3 hours. Place each ring or mold on a plate and gently remove mold, leaving parfait on plate. Serve with toast. Continued on pg. 90

Naturally, the next step is to create a fake college, with a fake campus, and a fake “no applicant denied” website to add legitimacy while telling your folks the false good news: “finally, I’ve been accepted.” In the movie, Justin Long’s character—aided by his nerdy friend (a young Jonah Hill) who was accepted to a real college—concocts the fake college website scheme only to have it spiral out of control when hundreds of elsewhere unaccepted students show up for their first day of college at a rented old psychiatric ward. Needless to say, an all-student, no-professor school with Lewis Black as its dean raises a few question marks. However, as we know from the movies, all stories that begin in despair, have a happy ending. Uncle Ben: You know a lot of people say that college is a time when young men and women expand the way that they look at their world, when they open their mind to new ideas and experiences, and when they begin that long journey from the innocence of youth, to the responsibilities of adulthood... The Nutty Professor Less about college life and more about being happy in your own skin and chasing the woman of your dreams, The Nutty Professor stars Eddie Murphy in the title role. Although he thinks he has all the things women would want on the inside, he never gets the chance to prove it because most women can’t get past his clumsy, bulky exterior. His sense of hopelessness is made even worse when, out on a date with a lovely grad student—played by Jada Pinkett Smith—Murphy’s character is heckled by a comedian for being obese. Driven by desperation, he injects himself with an experimental weight loss serum he’s successfully used on hamsters. He instantly loses 250 pounds, but his new alter ego, Buddy Love starts destroying all that was left in the professor’s life—his job, his home, his girl. Eventually, light meets dark at the pivotal climax of the movie. Order is restored and he learns the importance of being happy with who you are.

Back to School

Sometimes your son doesn’t want to go to college, yet you want to show him that education is a necessary (evil). What do you do? Well, if you’re corporate rags-to-riches titan Thornton Melon, played by Rodney Dangerfield, you enroll with him. In line with his typical comedic shtick, Dangerfield makes the movie laughable throughout. He proves to his son that education is important, culminating in a grand finale when Melon must pass all his finals. The rest of the movie becomes proof that brining your dad to party with your friends isn’t so bad, if he is Rodney Dangerfield.

Trendy Man: Mr. Melon, your wife was just showing us her Klimt. Thornton Melon: You too, huh? She’s shown it to everybody. Trendy Man: Well, she’s very proud of it. Thornton Melon: I’m proud of mine too. I don’t go waving it around at parties, though. Trendy Man: It’s an exceptional painting. Thornton Melon: Oh, the painting.

Rudy

In our first example that working hard, believing in yourself and getting an education are important, Rudy Ruettiger shows us a different kind of college. More or less, it is the classroom version, which most cinematographers are averse to showing. Although this also made our list for one of the best sports movies, it is Rudy’s newly attempted studious ways that get him to Notre Dame at all. His heart bleeding gold and blue, and a love for football that is unparalleled by those who were gifted enough to actually be good at it, Rudy’s dream of becoming anything more than a tackling dummy seems impossible. I’m now the proud owner of a blue and gold “Play Like a Champion Today” poster autographed by Rudy himself, so I guess something went right. Fortune: You’re 5 foot nothin’, 100 and nothin’, and you have barely a speck of athletic ability. And you hung in there with the best college football players in the land for two years. And you’re gonna walk outta here with a degree from the University of Notre Dame. In this life, you don’t have to prove nothin’ to nobody but yourself. And after what you’ve gone through, if you haven’t done that by now, it ain’t gonna never happen.

Teacher’s Pet In this 1958 film, Erica Stone, played by Doris Day, is a professor of journalism at a local university. Clark Gable, playing the part of James Gannon, is the know-it-all journalist invited to speak to her class. After turning Stone down in a cruel rejection letter, Gannon is forced by his boss to go speak to Stone’s students. Upon arriving to class, he overhears Stone reading his rejection letter aloud, and is understandably embarrassed. Rather than admitting he is the boorish author of the letter, he poses as a student, and becomes infatuated with the beautiful Stone. He also learns that his ways aren’t always the best, and that there is a lot of value to the kind of journalism taught in schools. Gannon continues to charm Stone but eventually his true identity is revealed. Will she be appalled by his deceit, or glad because she shouldn’t date a student anyway?

Here Come the Co-Eds Abbott and Costello come together yet again to assert their ridiculous routines. Yet this time, it’s in a college setting. The setting is a cash-strapped all girls college, where Abbott and Costello become groundskeepers to accompany professional dancer Molly through her college years, and in doing so, take on the challenge of saving the university from foreclosure. Through outrageous stunts and downright silly routines, this film from 1945 will still keep you laughing today.

elevision is my favorite. I know the summer has some great shows. But nothing makes me more excited than the Fall TV season. This year is no different! But whether or not it’ll be a good or bad one remains to be seen. Last year, pretty much every network flopped with high-budget concepts a la Mad Men, but it didn’t stop them from trying again last year. At least there’s nothing as intense as Terra Nova. There’s not, right? Well, pretty close.

Last Resort (ABC)

You remember Lost right? This isn’t the same. Or is it? Okay, comparisons aren’t out of the question. A submarine refuses to accept orders from the White House, and is subsequently attacked. Ha. The crew ends up on a deserted island where hijinks ensue, all the while trying to clear their name. Okay, so maybe it sounds a lot like Lost. But the military aspect is heavily set in reality instead of smoke monsters and time travel.

Revolution (NBC)

Speaking of Lost, J.J. Abrams has a new show. He and Iron Man director Jon Favreau got together to create a show about the loss of technology, the loss of power and the loss everything you’ve relied on for the better part of your life. The world has turned on itself, and a group of believers want to save the U.S.A. before the rogue militia destroys it. There have been a few terrible ads for this show, but don’t let that distract you. This is an ambitious show, and ambitious is where Abrams really shines.

Go On (NBC)

Friends ended almost ten years ago. But like Seinfeld, none of the leads have successfully ventured back into television. (Cougartown maybe?) With two Friends now on premium cable, Matthew Perry returns to network. He’s had some misfires, but NBC seems to have faith. Perry is a great narcissistic funny man and grief counsel-

ing may be the place for that. Dramedies have to walk a fine line between funny and offensive. Hopefully basic cable can handle that.

Elementary (CBS)

Apparently, the world needs more Sherlock Holmes. Robert Downey, Jr. and a successful British miniseries are not enough! Now we have an updated American version. Set in present day Manhattan, Jonny Lee Miller plays Holmes, a recovering addict living in Brooklyn with a woman named Watson. Watson is Lucy Liu. Updated! This serialized drama is perfect for CBS, who pretty much owns that genre right now. Sherlock is going through quite the resurgence. So far, so good.

666 Park Ave (ABC)

Demon forces do have a way of possessing Manhattan hotels. Everyone knows that. But now there’s a sexy sci-fi drama to prove it. An attractive young couple co-manages a swanky hotel with the creepy, older owners. Don’t worry; the elders maintain the same amount of sex appeal. It’s going to be like all those classics horror films that scared you when you were young, but now with all the eroticism that ABC injects into drama. Terry O’Quinn’s on it, and he’s great.

Vegas (CBS)

Dennis Quaid vs. Michael Chiklis. Boom! In 1960s Vegas, the law is butting heads with new-in-town Chicago

mobsters. Sure, Quaid is now a mere rancher, but he doesn’t like what he’s seeing and how it’s affecting his land. Good thing he used to be a sheriff and knows a thing or two about roughing people up. This has everything you could want in a television series. Small town vs. big town. Good vs. bad. Dennis Quaid with a shotgun vs. a moving car? Maybe you didn’t know you wanted that, but you do now!

Following (FOX)

Although it is a midseason entry, Fox’s Kevin Bacon-fronted series about serial killers is highly anticipated. For one, Bacon’s on network TV! That’s exciting. For another, the plot revolves around an escaped killer who somehow unifies more killers and has them execute his dastardly doings. There’s a history with a specific girl and stuff, but from before: Kevin Bacon and serial killers! On the same show!

1600 Penn (NBC)

Though there is no set release date yet, 1600 Penn looks funny. Like, laughout-loud-funny. The story of the First Family and their delinquent collegiate son shows that sometimes high-humor, high-concept comedy can work. No one knows that better than the on-fire Josh Gad (Book of Mormon) as the son. Throw in Bill Pullman and Jenna Elfman for time-tested star power and you’ve got another classic TV family in the making. It’s like the Cunninghams or the Bradys, but, you know, with more power and less wholesome values.
