It seems difficult for many of us to embrace the fact – even believe it – but in September Monica Bellucci turned 50. From the first panther creations, onyx was the stone most often used to represent the panther’s spots; and in 1935 Cartier created a ring that combined black enamel on yellow gold for the first time. In the intervening years craftsman have brought the animal to life in a sparkling range of creations featuring emerald eyes, onyx muzzles and diamond-set coats.

Andalucía and its delectable link with the sturgeon… and caviar This issue Diego del Río, head chef at El Lago Restaurant, gives us some culinary insight into another fascinating ingredient for gourmet cuisine: the sturgeon and its precious product, caviar. Caviar is synonymous with luxury, an ultragourmet product that is mostly produced in Iran and Russia – with Russians the main consumers of its global production. One fact which many people are unaware of is that, historically, Spain captured sturgeon in the Ebro, Duero, Guadiana and Guadalquivir rivers. The first written gastronomic record of its consumption dates to the year 1228 but caviar was consumed much further back in time – the Phoenicians, Romans and even the Catholic Monarchs were familiar with this exquisite delicacy. Andalucian sturgeon was considered among the best in the world in the 1930s and 1960s, its peak years, but the construction of a dam in Sevilla province, in addition to contamination and random fishing of the species, led

The first freshwater fish hatchery in Spain was founded in 1956, and the Riofrío (Granada province) fish hatchery was opened in 1963. Today this farm is considered to have the largest production of sturgeon in the world, and it is the only one with organic certifications for both caviar and sturgeon. The caviar is extracted by manual methods from female fish that are at least 16 years old, double the age of most traditional caviars. The Riofrío amenities are also located in an open natural setting, where the sun and fresh air create an exceptional habitat that produces highly pure caviar.

Many people are unaware of the wide and varied range of options it offers in gastronomy. Nikki Beach Marbella’s customary white décor was transformed into red for a day and night of spectacular entertainment and glamorous revelry to mark the end of the 2014 summer season. The theme of the traditional Closing Red Party was “Sharing the love with red kisses”, and that spirit was also reflected in the beach club’s decision to donate 10 per cent of ticket sales to local Marbella charity Ser Humano, which provides food to families that are unemployed due to the economic crisis.
