It is official – the holiday season is upon us. Full speed ahead into a whirlwind of turkey and trimmings, sweet spiral ham, Christmas cookies and pumpkin pie! As we sit here dreaming of all the delightful things coming, we are reminded that we are also launching into our second year of bringing you the most exciting local food dish every month. What better way to start this Thanksgiving issue than to say “THANKS” to everyone for their contribution to making TownTaster a success. We have been overwhelmed with an outpouring of warm welcomes, insightful suggestions and partnerships that have guided TownTaster to where it is today. Walking along side new restaurants as they open their doors and welcome in new anxious customers brings just as much excitement as the joy of learning the pure culinary genius of our local seasoned restauranteurs. They have so much to share – we can’t help but spread the good news. Speaking of good news - our amazing and talented writers go above and beyond each issue to enlighten you – and they are brimming with more to share. Seven Simple Ingredients for Thanksgiving We all have different family rituals for celebrating one of our country’s most beloved holidays. Some of us start the day with the big parade and mimosas. Some of us opt for football. Some of us have huge family gatherings. Some of us only set the table for a few. You can go healthy or heavy. You can choose afternoon dining or evening feasting. But, no matter which way you slice it, Thanksgiving is all about ending the day happy. And full. Seriously, you should be borderline uncomfortable when you go to bed that night. The Three Kitcheneers have a recipe that we’re sure will become part of your holiday rituals. Seven simple ingredients combine to make a dish that is supremely flavorful and a great accompaniment to other traditional fare. Freshly shucked corn, smoky chopped bacon and bright, flavorful basil will leave your family begging for more and more. So be sure to quantumdruple the recipe. Not sure what quantumdruple is? Neither are we, but it means something along the lines of ‘make a boatload.’ This dish will brighten up your Thanksgiving table by offering a more refreshing take on a classic pairing of corn and bacon. And we all know corn is mandatory at the Thanksgiving table - lest you be deemed unpatriotic! The trick to making this a standout dish is the quality of your ingredients. We suggest using only fresh corn as canned corn can alter the flavor, texture and sodium levels. The basil is really the star of the dish. It makes the dish. The combination of corn and bacon is absolutely, tremendously delicious on its own, but can be a little rich and heavy, especially on a table filled with other rich and heavy dishes - so the basil adds that pop of freshness that transforms the dish into something light and bright. PS - this is suuuuuper simple to make. Which is really nice considering your entree takes 8 hours.
Thanksgiving is all about ending the day happy. And full.

Corn with Bacon & Basil
Serves 4 2 tablespoons olive oil 4 strips hickory smoked bacon, such as Applegate Farms, chopped kernels from 6 ears corn 2 cloves garlic, minced sea salt and freshly ground pepper ½ cup fresh basil leaves, torn
In a medium skillet over medium-low heat, cook bacon until fat is rendered and just beginning to crisp. Add corn and cook, stirring occasionally, until beginning to brown in spots. Stir in garlic and cook just until fragrant, about 30 seconds. Season with salt and pepper. Transfer to serving bowl and toss with basil just before serving.

Meet the Chef What could be better on a cool crisp day than to have the smell of sweet and savory barbeque lingering in the air. Take a trip to J & J Barbeque on 14th Street in Bradenton and you will know exactly what we are talking about. John McKinney, owner and chef of J & J Bar-BQue has the perfect recipes for barbeque that make him stand out in any crowd. He credits this reputation to good old granddad Anderson Carnegie who taught him the family’s secret to success. John & his father Julius opened their dream restaurant in 1979 which consisted of only 5 tables. If you are from around here – you may know that they have built their reputation through their catering and their visible presence in the community. They are the go to guys for BBQ at all local festivals, charity events and concerts. In 1984 they moved to their current location. John is open Tues-Sunday for lunch and dinner. It is where you will find many locals indulging on their lunch break or with the family for a evening bite to eat. Now, if you have ever tried the BBQ from J & J, you will agree that there is something special about all their recipes that make them truly the best around. While the pulled pork sandwiches is the typical crowd favorite, there is something to be said about the sweet tenderness of the ribs & chicken. The secret is in the sauce! A family recipe passed along for many years, it is clear why John’s family name quickly became well known. We would recommend to make sure you try his sides as well... his collard greens, baked beans, cole slaw and sweet potato pie can't be overlooked as they are a taste of perfection as well. It is clear that John’s whole heart is in his cooking – and it doesn’t stop at the restaurant. John loves to experiment at home with a variety of flavors and ingredients. And that passion is not the only things0 that can be clearly recognized in his food – but also the freshness. John is proud to make sure that their ingredients are fresh and homemade. Their meats all come in raw (never frozen), the hamburger patty recipe is made from fresh ground meat and all the sides are made fresh. “My Thanksgiving Wine” With this BLOG we’re going to talk about our favorite… “Thanksgiving Wine”! Our favorite wine for Thanksgiving is NOT made from grapes. It’s made from another fabulous fruit that hangs in profusion from stately trees. It comes in many magical colors, from reds to greens to colors mixed and in-betweens. Its taste can be sweet or quite tart. It can be eaten right off the tree, sliced into slices and baked into a marvelous pie, crushed and mashed into a delightful sauce, squeezed into a fresh cider or made into a…… “World-Class Wine”! This versatile and delicious fruit is, of course the….”APPLE”! For generations upon generations, we have relished the taste, flavor and bouquet of our ‘Thanksgiving Apple Wine’! All wine, of course, is meant to be shared and to be enjoyed in social settings. What setting could be more enjoyable than the gathering together of friends and family for “Thanksgiving”! I remember a particular Thanksgiving where my mother made a small mistake. Perhaps it was the mild confusion of laying out the bounty of the Thanksgiving table or having to referee a bout between my two younger siblings, but, regardless, the mistake was made. Instead of pouring my usual Thanksgiving glass of fresh apple cider (which, by the way, I loved) she poured into my glass the ‘Thanksgiving Wine’ that was meant for my grandmother. Our tradition was to wait until everyone was seated and the prayer was said. Then, everyone would raise their glasses in a toast of Thanksgiving and clink them together. Then, drink down their festive drink and proceed to enjoying the Thanksgiving meal. Well, as it turned out, this was my best Thanksgiving…EVER! As I raised my glass to my lips and tasted my ‘Apple Cider’, I realized that a small mistake had been made. There was actually ‘Thanksgiving Apple Wine’ in my glass!! I looked around the table and no one was looking at me. Everyone was just talking and enjoying themselves. I took another sip (just to be sure that it wasn’t my
imagination)…It wasn’t! Now, I have to tell you, this was NOT a large glass. It was a small toasting glass. There couldn’t have been more than three or four sips. What was I to do?? The answer came quickly. My grandmother asked my mother if she could have ‘another’ glass of that fabulous “Thanksgiving Apple Wine”. My grandmother raised her glass, as in a toast, towards me. As we clinked our glasses together, my grandmother….smiled knowingly. Even though my grandmother has been gone for a long time, and my mother never made this same mistake again, this Thanksgiving still ranks as my best Thanksgiving…Ever. So, if you want to experience your best Thanksgiving…ever… it’s my suggestion that you forget the grape wine for a day. Instead, bring out the ’Apple Wine’ and bring back a tradition! Just a word of caution, however, check out your grandmothers smile!! Salute and Happy Days!

I am curious about GMOs, do they cause gluten intolerance or celiac disease? Diana B. Teams of medical researchers in Parkville, Australia and in Albany, Ohio have identified specific proteins present in Monsanto GMO grains. These engineered proteins do trigger gluten sensitivity and can instigate celiac disease. Internationally, epidemic levels of gluten intolerance are being experienced. Over 40%, virtually half the U.S. population, now cannot metabolize gluten. A research team at the Walter and Eliza Hall Institute of Medical Research in Australia identified three proteins present in grains patented by Monsanto as disruptive to metabolic pathways, and as interfering with nearly all
systems of the human body, generating inflammation and immune dysfunction. The genetically engineered proteins disrupt inter-cellular communication: they prevent cells from communicating with each other intelligently, as nature intended. The scrambling of this natural communication causes inflammation and disease. Sensitivity and possibly celiac disease, are the results. A video at https://vimeo.com/51259453 goes into extensive details about the impact. Toxic proteins do exist in GMO grains. The offending proteins are listed as: w-5 gliadin (from wheat); g-3 hordein (from barley); and g secalins (from rye). Each of these triggers the production of anti-gliadin antibodies. This means that the body starts an immune response against these proteins. Once the antibody cascade has been triggered, inflammation sets in, normal functioning stops, the immune system becomes imbalanced, and free radical cascades are fired off at the body’s own tissues. In the case of celiac disease, this last part is very serious as it
can cause irreversible damage to the small intestine. These engineered grains, marketed by Monsanto, have been added to a vast array of everyday processed foods including crackers, seasonings (including soy sauce and tamari), chips, cereals, and breads and the introduction of genetically-modified whole foods has begun in the United States. Proposition 37 is on the ballot in California and should be decided on November 6 by popular vote. It is a regulation requiring genetically modified foods and ingredients to be labeled. This measure would likely result in the new labeling being used throughout the United States because the food companies would not attempt to have one set of labels for a market as large as California, and another for other states. So we all would benefit if the voters of California insist upon labeling. The introduction of labeling requirements in most other countries has driven the elimination of GMO foods and ingredients because of avoidance by customers.
