elcome to North Lincolnshire’s Teapot Trail. Come and join us and indulge in the country’s favourite past time, afternoon tea.

Sometimes there is nothing better than an afternoon spent relaxing in your favourite tearoom with a friend, enjoying a hot drink and a slice of homemade cake and fancies. To celebrate the best of North Lincolnshire’s tearooms and cafés we have created the ‘North Lincolnshire Teapot Trail’. Our trail features everything from information on our tearooms to the cakes they sell in them. With 11 great tearooms joining us in the Teapot Trail there is guaranteed to be teas and cakes for all tastes across North Lincolnshire. If you love cake, then why not help us discover North Lincolnshire’s favourite in the ‘Great North Lincolnshire Cake Off’? Each tearoom has picked their most scrumptious cake, just ask for the Teapot Trail Special then close your eyes and let your taste buds decide. Don’t forget to vote for your favourite slice of cake. Why not give baking a try yourself with our favourite Lemon Drizzle Cake is so easy to make and the whole family will love it!

Ingredients

225g unsalted butter, softened 225g caster sugar 4 eggs Finely grated zest 1 lemon 225g self-raising flour For the drizzle topping Juice 1½ lemons 85g caster sugar

Method 1.

Heat oven to 180C or gas mark 4.

2.

Beat together the butter and caster sugar until pale and creamy.

3.

Then add 4 eggs, one at a time, slowly mixing through.

4.

Sift in 225g flour.

5.

Add the finely grated zest of 1 lemon and mix until well combined.

6.

Line a loaf tin with greaseproof paper, then spoon in the mixture and level the top with a spoon.

7.

Bake for 45-50 minutes.

8.

While the cake is cooling in its tin, mix together the juice of lemons and caster sugar to make the drizzle. Prick the warm cake all over with a fork, pour over the drizzle – the juice will sink in and the sugar will form a lovely, crisp topping.

9.

Leave in the tin until completely cool, then remove and serve.

earooms across North Lincolnshire are standing up to be counted and baking for your vote. Each one of our 11 tearooms will be offering a Teapot Trail Special cake for you to try. Simply visit each of our fabulous tearooms and ask for their Teapot Trail Special. Once you’ve visited as many of our tearooms as you can, don’t forget to vote for your favourite slice of cake, our tearooms need you!

The winning tearoom will be crowned the winner of the ‘Great North Lincolnshire Cake Off’ and awarded a trophy, whilst voting entrants will be entered into a free prize draw to win afternoon tea for two at the winning tearoom. Voting closes on 31st December 2014, all votes received after this date will not be counted. See page 21 for voting form.

If you haven’t yet discovered this wonderful cake combination then this is the perfect introductory recipe. You can even buy the beetroot and chocolate from our Farmers’ Market in Brigg. Try serving it with a dollop of crème fraiche.

Ingredients

200g butter, plus extra for greasing

1 heaped tsp baking powder

250g cooked and peeled beetroot

3 tbsp cocoa powder

200g dark chocolate

5 free-range eggs, separated

4 tbsp hot espresso

190g golden caster sugar

135g plain flour

Method 1.

Preheat the oven to 180C or Gas 4. Grease a 20cm cake tin with a little butter.

2.

Blend the beetroot into a rough purée.

3.

Melt the chocolate then pour in the hot coffee.

4.

Stir in the butter in small pieces and leave to soften.

5.

Sift the flour, baking powder and cocoa together in a separate bowl and set aside.

6.

Separate the eggs. Whisk the yolks in a bowl until frothy. Stir the eggs into the chocolate and butter mixture, and then fold in the beetroot.

7.

Whisk the egg whites until still peaks form when the whisk is removed. Fold in the sugar.

8.

Fold the sugar and egg whites into the chocolate mixture, and then fold in the flour and cocoa mixture.

9.

Pour the batter into the prepared tin and bake for 40 minutes, or until a skewer inserted into the cake comes out clean.

10. Allow to cool in the tin, then serve with crème fraiche or double cream.

North Lincolnshire is surprisingly easy to get to! By Road: The M180 runs into the heart of the area, giving direct access to the national motorway network. Less than an hour’s drive from the cities of Leeds, Sheffield, Lincoln and York. By Rail: Connections from Barnetby, Scunthorpe and Crowle give access to the East Coast Mainline at Doncaster.
