PRESENTACIÓN

Chegamos este ano á cuarta edición da guía-anuario …E para comer, Lugo, a aposta da Asociación Provincial de Empresarios de Hostelería de Lugo (APEHL) por promocionar a nosa provincia desde o punto de vista turístico. En entregas anteriores desta publicación percorremos as comarcas luguesas, as festas populares e singulares dos concellos e as rutas xacobeas, respectivamente. Neste cuarto número quixemos facer un recoñecemento aos 67 termos municipais que integran a provincia de Lugo, reafirmando unha vez máis que somos a asociación que agrupa aos hosteleiros de toda a provincia. A vocación desta guía segue a ser difundir os atractivos da provincia luguesa, principalmente entre os visitantes foráneos. De aí que teña unha ampla distribución en habitacións de hotel, oficinas de turismo e feiras do sector. A propia concepción do libro, sinxela e moi gráfica, e o feito de optar polo inglés como segundo idioma, reforzan esta aposta por “vender” Lugo a todos os que nos visitan ou poden chegar a facelo. Deste xeito, pretendemos que este …E para comer, Lugo se convirta nunha ferramenta útil nas mans dos hosteleiros, os turoperadores, a Administración turística e, moi especialmente, todos aqueles que a empregarán como guía de consulta. Este ano queremos ofrecerlles un percorrido rápido (pero intenso) por todos os concellos lugueses, un mosaico de paisaxes, patrimonio e cultura incriblemente variado para unha provincia tan pequena. Somos conscientes de que os hosteleiros debemos custodiar un capital importantísimo, un intanxible chamado “provincia de Lugo” no que conflúen natureza, historia, etnografía e gastronomía. A nosa Asociación, en particular, decidiu sintetizar todo este conglomerado de sensacións baixo a marca …E para comer, Lugo. Entendemos, e así nolo confirman as estatísticas, que a gastrono-

mía está á cabeza das preferencias e motivos de satisfacción dos nosos visitantes. O sector da hostelería é o principal nexo de unión entre un territorio e aqueles que o visitan. Somos conscientes da importancia do noso traballo na consolidación da imaxe de Lugo e a fidelización do turismo. O labor de APEHL enfócase dun xeito decidido nesta dirección, co apoio dos nosos asociados, das diversas Administracións e de todos os implicados no sector hosteleiro-turístico. Sumamos esforzos no obxectivo común que nos une: poñer a provincia de Lugo no mapa dos mellores destinos. Alcanzamos este año la cuarta edición de la guía-anuario …E para comer, Lugo, la apuesta de la Asociación Provincial de Empresarios de Hostelería de Lugo (APEHL) por promocionar nuestra provincia desde el punto de vista turístico. En entregas anteriores de esta publicación recorrimos las comarcas lucenses, las fiestas populares y singulares de los municipios y las rutas jacobeas, respectivamente. En este cuarto número quisimos hacer un reconocimiento a los 67 términos municipales que integran la provincia de Lugo, reafirmando una vez más que somos la asociación que agrupa a los hosteleros de toda la provincia. La vocación de esta guía sigue siendo difundir los atractivos de la provincia lucense, principalmente entre los visitantes foráneos. De ahí que tenga una amplia distribución en habitaciones de hotel, oficinas de turismo y ferias del sector. La propia concepción del libro, sencilla y muy gráfica, y el hecho de optar por el inglés como segundo idioma, refuerzan esta apuesta por “vender” Lugo a todos los que nos visitan o pueden llegar a hacerlo. De esta forma, pretendemos que este …E para comer, Lugo se convierta en una herramienta útil en las manos de los hosteleros,

Este año queremos ofrecerles un recorrido rápido (pero intenso) por todos los municipios lucenses, un mosaico de paisajes, patrimonio y cultura increíblemente variado para una provincia tan pequeña. Somos conscientes de que los hosteleros debemos custodiar un capital importantísimo, un intangible llamado “provincia de Lugo” en el que confluyen naturaleza, historia, etnografía y gastronomía. Nuestra Asociación, en particular, decidió sintetizar todo este conglomerado de sensaciones bajo la marca …E para comer, Lugo. Entendemos, y así nos lo confirman las estadísticas, que la gastronomía está a la cabeza de las preferencias y motivos de satisfacción de nuestros visitantes. O traballo da Asociación Provincial de Empresarios de Hostelería de Lugo (APEHL), presidida por Cheché Real, axuda a combinar a faceta máis profesional da gastronomía de vangarda da nosa era, vinculada aos mellores restauradores e sumilleres galegos, coa cultura herdada dos nosos antepasados xeración tras xeración. Dende aquí agradezo aos membros da Asociación, así como a todos os lucenses e visitantes que xa coñecen esta terra e aos que desexan achegarse a descubrir os seus segredos, o traballo constante e a ilusión depositada en cada proxecto.

Con cada nova ilusión, con cada novo paso, contribuímos entre todos a vivir Lugo, unha cidade e unha provincia na que conviven os ecos do esplendor do Imperio romano, as brisas da Mariña e os ventos das altas montañas do Caurel e dos Ancares, os mosteiros da escarpada Ribeira Sacra ou o horizonte manso que debuxa a Terra Chá.

Quiero saludar a través de estas líneas a los lectores de la guía ...E para comer, Lugo. La ciudad y la provincia de la muralla romana mejor conservada del mundo resulta una parada obligada tanto para los visitantes como para los locales amantes de la buena mesa. El pulpo á feira, protagonista de casi todas las fiestas _entre ellas,

el sonado San Froilán_, la empanada, el caldo gallego, las truchas, las verduras de las huertas, las conocidas cortiñas lucenses, y cómo no, los sabores auténticos de sus apreciadas carnes, desde el capón de Vilalba hasta los chuletones de ternera o cerdo o las típicas androllas y botelos, constiuyen las materias primas fundamentales de los menús lucenses, una forma de acercarse también a conocer el carácter de una gente que puebla la provincia territorialmente más extensa de nuestra comunidad. En los más de 300 acontecimientos gastronómicos que se celebran a lo largo del año en toda la geografía gallega, Lugo es siempre referente. El trabajo de la Asociación Provincial de Empresarios de Hostelería de Lugo (APEHL), presidida por Cheché Real, ayuda a combinar la faceta más profesional da gastronomía de vanguardia de nuestra era, vinculada a los mejores restauradores y sumilleres gallegos, con la cultura heredada de nuestros antepasados generación tras generación.
