Climb onboard the Bicentennial exhibition The Next Indiana at the Indiana State Fair August 5 through 21 at the fairgrounds. The exhibit explores the state’s past through the lenses of transportation, land use, and community. The Bicentennial Train will be located next to Pioneer Village. Hop on and explore three box cars full of Indiana history. In the first car, visitors will learn about Indiana’s early history up to 1900, including our Native American and Northwest Territory-era roots, statehood, and 19th-century history. The second car covers the 20th century, and the third car illustrates our state from 2000 to today. Indiana Historical Society members can receive a free ticket to the fair. Household members are eligible to receive four tickets. Check indianahistory. org after July 13 for details. The Bicentennial Train is presented by the Indiana Historical Society, Indiana Rail Road Co. and Norfolk Southern, with support from Kroger; in partnership with the Indiana Bicentennial Commission and Indiana Humanities. Another Bicentennial attraction at the Indiana State Fair is the Bicentennial Commemorative Rifle. This beautiful, limited-edition commemorative rifle was commissioned for the State Bicentennial, and is engraved with images from Indiana’s past and finished with antique gold, shiny nickel, and black chrome. Indiana Celebrates 200!!! BY JYLIAN VIGAR
T
his year is Indiana’s 200th birthday and there’s a party to get to. But don’t worry, you won’t be late…it lasts all year and it is happening all over the state. The Indiana Bicentennial Commission – with the help of literally thousands of Hoosiers – created a variety of events and projects throughout Indiana. From festivals to museum exhibits to state park activities, there are ways for everyone to celebrate. The Bicentennial celebration is based on four key pillars: youth and education, historical celebration, nature conservation and community involvement. To highlight and emphasize these pillars, there are more than 1,300 endorsed legacy projects in place, representing all 92 counties. These legacy projects were submitted by individuals, groups and organizations to celebrate this historic year in their hometowns. Because the projects are happening all year and all over the state there is a variety of ways to celebrate, no matter where you are. The Commission is also planning a few large-scale events to get Hoosiers excited and involved. In the fall, the Bicentennial will travel 2,300 miles during the Torch Relay, a great way to celebrate the unique way each county has contributed to the state’s history and growth. The Relay kicks off September 9 in the state’s first capital, Corydon. From there, the torch will be carried by nominated torch bearers across its 2,300-mile journey. The torch will also be conveyed by hovercraft, farm equipment, a racecar, horse and wagon, antique automobile, and other unique ways to best represent each county. Celebrations will vary in each town and county. A traveling, mobile visitor center will follow the torch so that Hoosiers can learn more about Indiana history. The torch, inspired by the state flag, was designed by a group of Purdue University engineering students, staff and faculty. This high-tech torch is equipped with a GPS, HD camera and Wi-Fi. A lighter, more child-friendly torch will also be on the relay. The Relay will end on October 15 when the torch arrives at the State House in Indianapolis during Hoosier Homecoming. Make your way to the state’s capital for this family friendly event, where you’ll be invited to walk around the newly constructed Bicentennial Plaza. You can enjoy some Indiana food favorites and tell your family food stories - sample a breaded pork tenderloin or maybe some mashed potatoes

with chicken and noodles. Meet some well-known Hoosiers – portrayed by reenactors, of course – like Michael Jackson, Abraham Lincoln and John Hay. There will be lots to do for everyone in the family. You won’t want to miss it! On Friday, Dec. 9, 400 fourth grade students will gather at the State House to hear from the Governor and First Lady as well as learn about the meaning and importance of the Bicentennial. One student will be recognized for their prize winning essay. At three other venues downtown, another 900 students will also experience the Bicentennial up-close. They will get to meet the Bicentennial Bison, Abe, and participate in interactive learning games. Then it will finally be Statehood Day, Dec. 11 – better known this year as Indiana’s 200th birthday. On Statehood Day the “Ignite the Future” event will take place at the Indiana Farmer’s Coliseum as a way to end the year-long celebration. This event is a free, non-denominational service to celebrate the diversity of faiths in Indiana. The day will be celebrated with readings, musical and art performances, and dignitary remarks. The hope is that the event will inspire all Hoosiers to “Ignite the Future” both for themselves and for future generations. There are a few key events where Hoosiers can celebrate the Bicentennial, but the true celebration takes place every day. It’s when you share a story about growing up or you help a neighbor. One of the greatest things about the Bicentennial is that it serves as a reminder that no matter our differences, we are all Hoosiers together. That is why it is our job this year to leave a lasting legacy. So that when Indiana’s 300th birthday rolls around Hoosiers are just as excited to celebrate their wonderful state. Torch Relay FACTS • 2,300 mile journey across the state traveling through 92 counties • The Torch Relay will begin in Corydon, the state’s first capital, and culminate in Indianapolis on the Statehouse Grounds • The relay was designed to inspire Hoosiers and promote unity across the state by connecting people, communities, and regions • Starts on September 9, 2016 and ends October 15, 2016 • The torch will travel 6 days per week (Mondays rest day) for 5 weeks/32 days • Walkers, runners, and torch bearers employing modes of transportation that are representative of Indiana culture and heritage will move the torch along its route • Torch Bearers will be chosen from nominations by each county in the state • The torch will be accompanied by a caravan that includes a Mobile Visitors Center • The Torch Relay will conclude on the Statehouse Grounds with a grand celebration for all Hoosiers

hat better place to commemorate Indiana’s Bicentennial than Corydon? As Indianapolis was still taking shape two centuries ago, Corydon already held rank as Indiana’s first state capital. The handsome Federal-style limestone structure that served as the first capitol building between 1816 and 1825 still anchors the historic downtown district of this friendly southern Indiana town. These days, visitors can tour the property, along with a list of other notable historic sites that includes William Hendricks’ Governor’s Headquarters, “Constitution Elm” under the shade of which delegates drafted the first Indiana state constitution in 1816, and Indiana’s only Civil War battlefield where the 30-minute Battle of Corydon occurred on July 9, 1863. Not surprisingly, Corydon plans on doing up this year’s state Bicentennial in a big way with a slate of events and festivities. The Birth of a State: The Indiana Exhibit pays a visit to the First State Office Building for a three-week stay starting June 10 and ending June 30 before returning to Indianapolis, giving visitors a chance to take a gander at the Indiana constitution, the first Indiana State Flag and other historical artifacts and memorabilia. This year’s first annual Corydon Capitol Days festival July 9 and 10 centers specifically on a Bicentennial theme. To honor Corydon’s historic past, the Indiana Bicentennial Torch Relay kicks off its 2,300-mile journey right here from

the State’s First Capitol Building on September 9, traveling on through each of Indiana’s 92 counties before concluding the relay in Indianapolis on Oct. 15. And on December 16, Corydon winds down this pivotal year with a time capsule ceremony at Bicentennial Park. Celebrating local history of a geological nature, Corydon offers proximity to some of the state’s oldest natural caves and caverns. Part of the Binkley Cave System (the longest in the state), Indiana Caverns boasts breathtaking underground formations, a waterfall and a cache of bones that date back to the Ice Age. Daniel Boone and his brother Squire were the first to discover Squire Boone Caverns in this neck of the woods back in 1790; the attraction now showcases a pioneer village and one-hour guided cave tours. Back on terra firma, there’s plenty more to see and do in Corydon, from O’Bannon Woods State Park and Hayswood Nature Reserve to several area swimming pools and the familyfriendly Golf Shores outdoor entertainment complex. If soaring’s more your style, check out the Squire Boone Caverns Zipline Adventure, a six-hop canopy tour and sky bridge crossing. With all that recreation and activity, you’re bound to work up an appetite. No worries. Corydon is home to a range of diverse dining establishments capable of quelling any hunger pangs. Albertos on the Hill serves up authentic Italian specialties, while Beef O’Brady’s caters to the sports pub crowd. Mexican, Chinese, steak, pizza, BBQ, coffee, breakfast – you’ll find it all here in Corydon. Just make sure to save room for a handcrafted cone at Emery’s Ice Cream or a sweet treat at Butt Drugs’ old-fashioned soda fountain. Temp your palette during your visit to the area with five local wineries in Harrison County, including Turtle Run Winery and Scout Mountain Winery in Corydon, Best Vineyards in Elizabeth, Indian Creek Winery in Georgetown and Quibble Hill Winery in Depauw. Or wash down your visit by sampling cold craft beer at Point Blank Brewing Company in Corydon’s historic downtown district.

The festival includes glassblowing demonstrations, the chance to meet and mingle with other glass blowers from around the country, a 5K benefit run, traditional German food, live music and a beer garden sponsored by Point Blank Brewing Brewery.

Purdue University is proud to boast they designed, developed, and created the torch that will make its way through Indiana’s 92 counties. Purdue University Engineering students created a torch that is all Indiana, from the design to the materials to the fuel. Inspired by the Indiana state flag, the torch has Wi-Fi connectivity, GPS, an HD camera for photos and videos connected to social media, and is fueled with Indiana-made E-85. It is a work of art that’s light will shine bright on the back of an Indy car racing around Indianapolis Motor Speedway at 200 mph. Lafayette-West Lafayette is home to the official caravan for the Indiana Bicentennial Torch Relay. Subaru of Indiana Automotive (SIA), has made 10 vehicles that will touch each of Indiana’s 92 counties during the 2,300-mile journey across the state. Subaru will provide the popular Outback and Legacy models, which will be wrapped in specially-designed Indiana Bicentennial Torch Relay decals. Bison are stampeding their way through Lafayette-West Lafayette. Indiana Association of United Ways launched a Statewide “Bison-tennial” Public Art Project in early 2016. The community jumped on board and is now home to five beautifully designed five-foot-tall fiberglass bison. The bison were designed by local artists with different depictions from Indiana heritage to rural Indiana scenes to a “native” approach as a theme for the Miami Tribe that extended their cultural roots deep into the soil of the Wabash River Valley. Many of the bison will be located along the path of the Torch Relay that will take place in the Lafayette-West Lafayette community on October 12, 2016.

To commemorate 200 years, the Lafayette Arts – Center Stage was initiated. It is a series of five bicentennial-themed public art installations combined as one project, located on Main Street in Downtown Lafayette’s arts and culture districts. The centerpiece of the bicentennial public art is a large, bicentennial-influenced, gateway sculpture that is being created by artist Jeff Laramore at the intersection at Main and 2nd Streets in Lafayette. It includes a “flame-like” element as a nod to the torch run. Artist Zach Medler has created his mural “Sunday Morning Wabash River” inspired by the 1884 Seurat painting “Sunday Afternoon on the Island of La Grande Jatte” and is located downtown Lafayette. A special event called Alleypalooza took place on May 14, featuring art lessons, music, food vendors and artists who worked together to install the mural entitled, “Extended Family.” The Art Museum of Greater Lafayette is hosting special exhibitions, “Indiana Now 2016: The Bicentennial” and” Indiana Artists Member Show 2016: The Bicentennial”, to showcase Indiana art. Lafayette-West Lafayette is home to over 25 Indiana Bicentennial Legacy Projects. Projects include the Feast of the Hunters’ Moon, the largest event of its kind in the Midwest taking place October 1-2, 2016; ArtSmart: Indiana, which teaches the history of Indiana from 1800 to present day through art; and Heritage Day: 200 Years of Work and Play in Indiana, an event that took place on May 7 and included historical activities and demonstrations for children and their families. In celebration of Indiana’s Bicentennial, the Tippecanoe County Historical Association, in partnership with Purdue University Galleries, is currently presenting to the community the exhibit “George Winter: Reflections on the Native Peoples of Early Indiana.” The bicentennial has sprouted special events popping

up all over these two great cities. The Haan Mansion Museum of Indiana Art is planting a sculpture garden, recognizing and celebrating Indiana artists from across the State, on the grounds behind the Museum. Exploration Acres is celebrating Indiana’s 200th with a bicentennial themed corn maze. This fall get lost in an 18-acre corn maze with more than eight miles of paths, rewards from local merchants, hayrides, pedal cars, and more. The city of West Lafayette is in bloom this summer with bicentennial’s yellow and blue flowers along with the planting of 16 assorted street trees along River Road. On November 5, the Lafayette Symphony Orchestra will perform “200 Candles: a Hoosier Birthday Bash,” which will include local talent, Hoosier songwriters and composers, and an audio-visual presentation of historic homegrown artwork in collaboration with ArtSmart: Indiana and the Art Museum of Greater Lafayette. October 12, 2016, marks Lafayette-West Lafayette’s major

celebration day, when the torch will be arriving and touring through the area via 56 Tippecanoe County Torchbearers. A special ceremony and party will begin at Columbian Park early morning on October 12. Then the torch will be carried through downtown Lafayette, across the Wabash River via canoes used by the Voyageurs, who were traveling fur traders in the late 1600s through the 1700s, and then onto West Lafayette and Purdue University. is nearing its 100th summer recreational season and working hard to make sure visitors have a good experience this year. Hundreds of improvements have been finished, or will be completed this year, to enhance campgrounds, restrooms and trails. The projects range from building new “cabin suites” at Brown County State Park’s Abe Martin Lodge, to opening a nature center at Summit Lake State Park. Indiana State Parks celebrates its centennial this year. The system began 100 years ago with the opening of McCormick’s Creek and Turkey Run state parks. The system has since expanded to 24 state parks and eight reservoir properties. Combined, there are more than 2,000 buildings, 700 miles of trails, 631 hotel/lodge rooms, 75 marinas, 16 swimming pools, 15 beaches, almost 8,400 campsites, more than 200 shelters, 160 or so playgrounds and 149 cabins. With a few exceptions, visitors won’t see a lot of new construction or major infrastructure overhauls in 2016. Many of the projects involve updating or improving existing facilities and making sure the park is up to visitors’ standards.
“There’s a lot of maintenance, and much of our time is focused on that basic facility care,” said Ginger Murphy, deputy director for stewardship. A list of park improvements is at stateparks.IN.gov/2441.htm. There are many other small projects and events not listed that also help manage and interpret the facilities, natural and cultural resources, and history of Indiana’s state park system. Partners and volunteers have helped with many of the projects. Non-profit “friends” groups have contributed thousands of dollars and hours. Information on joining or starting a park friends group is at stateparks.IN.gov/2442.htm. “Creative and dedicated employees stretch the dollars that you pay when you enter the gate, rent a campsite, launch a boat, or attend a special workshop or program,” Murphy said. The public can find information about activities and projects related to the centennial at INStateParks100.com. Some of the park improvements were dedicated as projects that commemorate the system’s centennial. These include
the new paved and accessible Centennial Trail at Raccoon State Recreation Area, which will provide a safe and scenic way to walk from the campground to the beach, and the restoration of the Richard Lieber memorial at Turkey Run State Park.

• At Clifty Falls State Park, the “Clifty Clubhouse” play area will open this summer, providing a playground near Clifty Inn. It will include a connecting trail to the nature center.

• At Fort Harrison State Park, the third play area of the dog park will open this summer.
• At Brown County State Park, 12 new “cabin suites” will open in 2016 at Abe Martin Lodge. Each suite will sleep up to six people. Also, 14 new vault toilets will replace existing toilets in the family and horseman’s campgrounds.
• At Indiana Dunes State Park, a new beach comfort station next to the pavilion has changing rooms and outdoor showers. Also, the Dunes Kankakee Trail was extended from the park to the Indiana Dunes Visitor Center, making the park more bike and pedestrian friendly.
• At Raccoon State Recreation Area on Cecil M. Harden Lake, the new paved and accessible Centennial Trail will provide a safe and scenic way to walk from the campground to the beach. • At Chain O’Lakes State Park, 46 campsites were lengthened and upgraded to 50-

from “Wildflowers of the Prairie” to “Birds of Prophetstown” hikes all year long. Hiking the Wabash Heritage Trail is a great experience if you are a bird watcher, outdoor enthusiast, history buff, or enjoy wildlife or just taking a walk. It starts at the Tippecanoe Battlefield and follows the Wabash River for 18 miles to Fort Ouiatenon. Lafayette’s Trail System consists of more than six miles of paved (and many more unpaved) trails within the city. Trails can be used for many activities including walking, running, biking, rollerblading and cross-country skiing. Four off-road mountain bike dirt path trails are available: Haan Trail, McCormick Woods Trail, Murdock Park Trail and the Tippecanoe County Amphitheater Trail. All except the Haan Trail are multi-use trails open to hikers, runners and mountain bikes.

Modern-Day Treasure Hunts Geocaching with Kids

Nine years ago, Jeni Smith was looking for an activity to enjoy with her teenage daughter.

Her friend suggested geocaching, a high-tech treasure hunt in which participants use GPS-enabled devices to locate caches (containers) hidden anywhere from city streets to state parks. Smith admits to being “geographically challenged” and felt certain geocaching would not be a good fit for her family. “I was the one who got lost on the way to my mother-in-law’s house,” laughs Smith. But after several outings, Smith’s perspective changed. She enjoyed the “spirit of adventure” she experienced while geocaching. Today, Smith, a Greenwood native, is a seasoned geocacher and a community volunteer reviewer for geocaching.com.

“When I began geocaching, I expected to find a pirate’s chest,” Smith chuckles. “That’s not what you find.”

Geocaching is a game of hide-and-seek that attracts adventure seekers of all ages. To start, an individual hides a cache and then logs the container’s GPS coordinates onto the geocaching.com website. Then, those interested in finding caches refer to the same website and type in a desired location to explore. Doug Payne, another community volunteer reviewer for geocaching.com and father of three young children, encourages reading the geocache’s description to ensure the excursion fits the family’s needs and capabilities. “Make sure the cache sounds family-friendly,” Payne recommends. “Find a park that has several geocaches and a playground. After finding several caches, take a break and let the kids play.” Once a cache route is selected, the only necessary equipment is a GPS unit. Most geocachers use a cellphone either through Google maps or a geocaching app. At some locations, cell phone reception may be tricky; standalone GPS devices can be purchased at sporting good stores or websites. Geocaching is more about the hunt than the loot. “When I began geocaching, I expected to find

Caches may be as tiny as a film canister to as large as a bulky plastic Tupperware. Trinkets to trade may be found inside the containers. (Per geocaching rules, finders must replace any items seized from a cache with things of equal or greater value.) Still other “container-less” caches can be tracked down, as the GPS-coordinates may lead to a unique place, rather than tangible items. Selecting a geocache location within the state is not a problem. With roughly 21,500 active caches hidden in Indiana, the opportunities to explore are endless. Close to her Central Indiana home, Smith advises geocaching in Crown Hill Cemetery in Indianapolis where 27 caches can be explored on cemetery grounds. “Crown Hill Cemetery is a lovely place that is more park-like than cemetery,” Smith says. “There’s a virtual cache at James Whitcomb Riley’s grave which happens to be the highest point in Indianapolis and a has a pretty view of downtown.”

Heading North, Monica and Tim Lea, Crown Point residents and administrators of the Northwest Indiana Geocaching Facebook Group, tout the Indiana Dunes State Park as a popular geocache site. The couple prompts geocachers to visit the nature center and the many trails throughout the park. The Leas rave about a geocache at Chesterton’s Vietnam Veterans Memorial Wall, a smaller version of the National Vietnam Memorial in Washington, D.C. There is a four-part cache that takes individuals to four different locations. Moving East, Bill and Tanya Klauser of Richmond, enjoy geocaching with their grandchildren. Near their hometown, they geocache along Cardinal Greenways, a 62-mile rail trail that runs from Marion to Richmond in East Central Indiana. BEVERLY SHORES, Ind. – The Sanders family of northwest Indiana vacationed in Belize last winter. They were on a small boat in a remote Monkey River area when they realized strangers were waving at them from shore. When they docked, a little girl rushed over and blurted to Sanders’ son, “Aren’t you Ian from ‘MasterChef Junior’?” It’s a greeting the Sanders family has become familiar with, albeit in places far more ordinary and local than the jungles of Belize. But that’s what happens when you’ve been on Fox TV’s “MasterChef Junior.” This threesome – Dad, Mom, Ian – are all chefs. Dad Gary Sanders and mom Nicole Bissonnette are, of course, far more accomplished and definitely professional, but a kitchen is a large part of this family’s daily surroundings. For Sanders, there was extraordinary training under a classically trained French chef at The Cottage in Calumet City, Indiana, and then at Miller Bakery Café in the Miller Beach neighborhood in Gary. Three years later Sanders bought the café. For Bissonnette, there was studying at Le Cordon Bleu in Paris and then ownership of Bistro 157 in Valparaiso. The husband/wife duo opened Bartlett’s in Beverly Shores in 2008. It was, Sanders says, “a hit right out of the box.” That may be, at least in part, because both chefs had created names for themselves in northwest Indiana’s Region, and those diners followed them to Bartlett’s. The menu is New American, with “international flavors infusing thoughtful, locally sourced dishes.” Although the offerings change from time to time, there are signature dishes “that can never come off the menu.” Sanders says there’s been a change in what dining out means since he started working in restaurants. Then it was more formal and for special occasions, often for just a couple. Now it’s more casual and family-oriented with diners eating out several times a month. The outdoor patio is a popular summer spot, and there’s a play area with a lookout into the woods so kids can play while parents “can kick back and relax.” The couple is branching out with a food truck for festivals – think Taste of Michigan City in August, for example – and for catered events. It will also travel to the New Buffalo, Mich., farmer’s market on Thursday evenings as well as to the entry to Beverly Shores and Lake Michigan a few times a week.

The chefs’ philosophy? “Food is supposed to be fun,” Bissonnette says. There’s a lot of togetherness with this family – Bissonnette adds that “cooking is about family.” Ian learned to walk in the restaurant. He waited tables at 3. He knew how to scramble eggs by the time he was 4. And he loved watching “MasterChef Junior.” Last year, when he was only 8, he talked his parents into letting him apply for a spot on the show. Auditions in Chicago were the next day. He ended up being the season’s youngest boy competitor and made it through seven out of 12 shows. Ian’s culinary dream? A food truck. He’s already written a cookbook for it titled “Ian’s Insane Roadside Recipes.”

FRENCH LICK, Ind. – Paul Owens was 12 when his mother bought a fast-food restaurant. He and his siblings all worked in it. When he started, he was so small he had to stand on a milk crate to make fries. And for more than four decades now, the food industry has pretty much been in Owens’ life. Except for short periods of time, like when he told his mother he wouldn’t be back at her restaurant the next day. “‘You quit?” she said. “But you didn’t give me any notice.” So she grounded him. Made him spend the next two weeks at the restaurant. Working. Without pay. He stayed. Until that short stint in a factory, which he knew to be a mistake right away. And although he started college, he realized it wasn’t for him. When he was 19 and “no longer allowed to stay in school,” he remembers his dad taking him to a travel agency and asking him where he wanted to go. “I thought it was a reward,” he says. He chose Phoenix because he’d heard his parents talk about retiring there someday, so he figured he’d go there and wait for them. “But they never showed up.” His dad bought him a one-way ticket, saying it was time for him to grow up. He had $225 and the phone number of his mother’s bridge partner’s niece. On the last day of his money, he called that phone number and ended up with a night shift job in a restaurant. He was hired away by a franchisee in California, but after a year and a half there, “they closed the restaurant on my day off,” he says. He got on a bus and returned to Illinois. Stayed with his parents “about two minutes” and then got a job with a national restaurant chain where he eventually traveled all over as

a troubleshooter, solving problems. He moved to Indiana when someone offered him a stay-put job making less money and working more hours. “You can’t really turn that down,” he says and laughs. “You don’t get those opportunities every day, so I jumped on it.” Owens credits his mother’s interaction with people more than anything else in preparing him for a lifetime in the food industry. She stressed quality, loyalty, appreciation. “The whole thing for me was training,” he says. “I love being able to teach people. How to do things easier, how to get them done quicker. That’s the part I like most, the employees.” Owens is now the banquet/catering chef at French Lick Springs Hotel in French Lick. It’s pretty much his dream job because the Cook family philosophy matches his – to take care of the employees, take care of the buildings, take care of the guests. “It’s about respect, really,” Owens says. He still trains people, with the huge plus of working with quality foods in a family-like atmosphere where, he says, “they treat me like the expert.”

FAIR OAKS, Ind. – From the windows of Fair Oaks Farms’ restaurant, Chris Escalante can look out at the vast expanse of farmland. Thousands of acres and thousands of farm animals. This operation is big. “Fair Oaks opened my eyes to how responsible big organizations can be,” Escalante says. He’s talking about the self-sufficiency of the farm and its mantra to reduce, reuse, recycle, about its cause of putting education in the forefront, and about continually raising its own bar on quality. But he’s also talking about his role of taking care of individual diners as one of the restaurant’s chefs. “As a culinarian, I get the most passion out of my food by knowing where it comes from and understanding the nutritional value of it – and I really just love good food,” Escalante says. “It looks good, it tastes good, it’s good for you. Those are the three things I admire about cooking.” It’s a family thing with him. Always has been. “I’ve always been around food,” he says, citing his Mexican, Italian and Bohemian heritage. “My mom has an old video of me cleaning up in the kitchen. I wasn’t even talking, maybe just over a year, but I was wiping down anything I could reach, putting the towel back on the rack, dropping it, putting it back up.” Escalante grew up in Arizona and attended Le Cordon Bleu there, then interned at the Four Seasons in Dallas, Texas. But he says his No. 1 mentor was David Tallent in Bloomington. “I still call him Chef because I respect him wildly,” Escalante says. “He projected me out of the student mindset to the professional mindset. I will always owe that to him.”

At the core was good food. “When I worked at his restaurant, we’d have farmers coming up to the back door, dirty, but with a basket of the most beautiful vegetables I’d ever seen. We’d be cleaning off the bugs and shaking the dirt off. That’s what got that hook into me. And I said, this is what I want to do with food.” Escalante also worked at restaurants in northern Indiana as well as for Sodexo, feeding an entire healthcare system. And he taught hospitality at Ivy Tech in South Bend. He’s been at Fair Oaks since the restaurant’s opening in 2014, where his passion is to combine the preparation of food with educating others about all its aspects. He’s big on tradition. “In every culture you have two core components – family and food. They’re both necessary for a culture to survive. I want to help the next generations continue this.” His advice? “Get educated about food. Figure out what your area has to offer – understand what it takes to produce the food and enjoy the best quality you can. We want to eat good food. Even more so, we need to eat good food.”

NASHVILLE, Ind. – Eric Swanson served lunch to an Indianapolis couple on a bright, warm day in late May. One dined on duck breast with a salad of arugula, radishes and strawberries, the other on a ribeye steak with a spinach salad. They shared a plate of Story crackers with garlic-infused ricotta. All of the dishes were garnished with delicate thyme flowers. Swanson had picked the vegetables less than an hour earlier. It’s one of his perks as executive chef at Brown County’s Story Inn. “I love spring vegetables,” Swanson says. “The first-on produce of the season, there’s something about the pureness of it.” There are vegetable gardens on site with plans to add more. It wasn’t always about food for this creative chef, however. That imaginative side took the form of a bachelor’s degree in English from Indiana University with plans for an advanced degree and college teaching. “I deceived myself thinking I was going to grad school,” Swanson confesses. “Along the way I got a job as a dishwasher.” And he worked his way up from there, crediting knowledgeable staffs and sharing work environments for his advancement. He even created his own cornbread recipe while still classified as a dishwasher. It was a hit with diners. But Swanson wasn’t quite ready for the restaurant life. He even tried farming but was up against it with a drought and

bad back, so he returned to the kitchen. “I knew I was in it for good,” he says. More training followed at the highly-acclaimed Restaurant Tallent in Bloomington under award-winner David Tallent as well as at Bloomingfoods and at McCormick’s Creek State Park. Swanson has been at the Story Inn for two years where he continually develops menu ideas, building on what he calls New American cuisine with classical French roots that branches out to use local foods. Story Inn co-owner Jacob Ebel says he wants “to put Story back on the map” as a historic lodging and culinary destination, to “re-create an authentic destination that will take people off-guard. We want the culinary experience to be one of the driving factors of what Story is.” The entire Story experience comes as a surprise to first-time visitors. First there’s the thought that they might have taken a wrong turn, since Story is 10 miles off State Road 46 on narrow, winding 135. And the sight of the “dilapidated” general store – 100 years old this year – does a great job of hiding the high-end dining surprise inside. If it’s a secret, it’s one that’s getting out.

such a bridge. The spirits, fortunately, unable to zig end up in the water. More prosaically, the design forces walkers to pay attention to where they’re going and thus enjoy their surroundings more. Take a stroll around the two lakes that dot the 1,250-acre Notre Dame campus, stopping at the Grotto of Our Lady of Lourdes, a one-seventh-sized replica of the famed shrine in Lourdes, France, where the Virgin Mary appeared to Saint Bernadette 18 times in 1858. A favorite of the University’s founder, Father Sorin, he vowed to reproduce it on the Notre Dame campus, a dream that became possible from a donation made by a former student. In 1896, boulders, some weighing two tons or more, were moved from nearby farms to construct the stone grotto with its niches for statuary and candles. Read the letter written by Dr. Tom Dooley, known as the Jungle Doctor of Laos, as he lay dying in a far-off land. His longing for the grotto will bring tears to your eyes. The Wellfield Botanic Gardens, just a few blocks north of Elkhart’s historic downtown, encompasses 36 acres which includes18 acres of water and is located where, since the mid 1800s, the city has drawn its water. The gardens (over 20 in all) include the Waterfall, English Cottage and Japanese and are arranged around a large pond and also near Christiana Creek. There are statues and walkways and seating areas for rest and contemplation.

A part of Fort Wayne’s bustling downtown, the Foellinger-Freimann Botanical Conservatory is really three different gardens under glass – a Southwest desert garden filled with cacti, succulents, ironwood trees and yuccas, a showcase garden with a changing exhibit each quarter, and a tropical garden filled with palms and orchids with a pond and 2-story waterfall. Family friendly, the conservatory also features outdoor gardens, handson exhibits for children, and hosts events for children. The Hayes Arboretum in Richmond is 466 acres of woodlands, meadows, swamps and streams; unique plant, rock and fossil collections; as well as miles of hiking and running paths. Other features found on this property include 3% of Indiana’s old growth forest, as well as many acres of reforested woods. An 1833 dairy barn acts as their Nature Center and is filled with exhibits on regional flora and fauna. There’s an active beehive behind glass, bird viewing room, and the Hayes Museum. Interspersed with walking, biking (#6 in the Top 10 Indiana Best Trails) and even a driving trail, there are also several Adena and Hopewell Indian mounds Indianapolis is fortunate to have several wonderful botanical gardens including The White River Gardens at the Indianapolis Zoo, the first in the country to be accredited as a zoo, an aquarium, and a botanical garden by the Association of Zoos and Aquariums and the American Association of Museums. An urban oasis, the gardens are comprised of the indoor 5,000 square foot Hilbert Conservatory, the 65-foot ceiling and surrounding glass creates a tropical oasis. Outside, there’s

Would you like to experience a small tropical environment in the middle of Indiana? You can at the Rinard Orchid Greenhouse at Ball State University in Muncie. The Dr. Joe and Alice Rinard Orchid Greenhouse is the new home of the Ball State University WheelerThanhauser Orchid Collection and Species Bank, and a wonderful new Display House, in which tropical plants of many types, including orchids, are displayed. The Display House contains 700 square feet of plants from the world’s tropics. Even in winter, the Rinard Display House is always in full bloom. Changing educational displays, student art exhibits, and other seasonal features make the Rinard Display and Orchid Greenhouse a great place to visit throughout the year. Ball State created the Wheeler-Thanhauser Collection to conserve rare and endangered species of orchids, disseminate them for conservation, and use the collection for research and education. They display orchids with other tropical plants to give you the impression of being in a small tropical environment.
A terraced “mountain” and waterfall give you a hint of the cooler, highelevation rainforest environment and a glimpse of the cloudforest orchids that grow there. You will also witness a display of tropical poison arrow frogs, since rainforest conservation is about both plants and animals.

But where did the name come from? Hoosier was already a widely used term in the 1830s, but its origins aren’t clear. Perhaps it stems from the word “Hoosa,” meaning American Indian maize or cozrn. Or it could come from a canal contractor named Hoosier whose employees were called “Hoosier’s Men.” But there are more colorful explanations, too. Indiana poet James Whitcomb Riley joked that the word came from a tavern fight. During the altercation someone’s ear was cut off and was left laying on the floor. The person who found the ear yelled out, “Who’s ear?” Another,

maybe not quite so far-fetched, theory is that early settlers responded to knocks on cabin doors with “Who’s yer,” meaning “Who’s here?” Wherever the word Hoosier came from, it now simply replaces the term Indianans. Hoosier reflects a birthplace, yes. But it also describes the characteristics of the people who are born and live there. Their self-reliant, independent

BLOOMINGTON, Ind. – It’s become an Ind. 37 staple, luring travelers off the highway for an oasis-like break from the traffic between Indianapolis and Bloomington. Welcome to Oliver Winery with not just a tasting room but also acres of luscious flower and Oliver Winery’s sculpture gardens with plenty of outdoor seating. It had its beginnings as a hobby of Indiana University law professor William Oliver in the 1960s. He helped create the Indiana Small Winery Act in 1971, which promoted the creation of small wineries. Now Oliver is one of the largest wineries in the eastern U.S. In 1994 Dennis Dunham thought he was on his way to medical school with a new bachelor’s degree in chemistry. When he didn’t get in, he figured he’d reapply and do a little teaching in the meantime. That didn’t work, either, so he sat himself down at his kitchen table to ponder his future when, seemingly out of nowhere, “this little winery popped into my head.” Among Oliver Winery’s newest awards That “little winery” he’d been driving past was Oliver. He became an assistant to Bill Oliver, and now he’s director of winemaking where “we continue to improve.” Perhaps because of his chemistry background, Dunham likes the problemsolving best. He characterizes the staff as “active learners.” He also likes “the whole magic of wine” which causes the experience, often a celebration, to become part of people’s memories. While some grapes and other fruits do come from beyond Indiana, Oliver has a Monroe County vineyard with grapes and other fruits bottled in its Creekbend series. “There’s a great relationship among most of the wineries in the state,” Dunham says. “That’s one thing about this industry – how collaborative everybody is in promoting the Indiana wine industry.” He says the entire industry, nationwide, is “a neat balance of hard work, craft and art. It’s a happy industry. People who are in it feel pretty good about being in it.” Dunham says Oliver has honed in on people, product and place. “Customer interaction is absolutely critical,” he says. “We are truly passionate about making wine that our customers like to drink, and we want to meet them.”

> Patoka Lake Winery BIRDSEYE, Ind. – So homey, so relaxing, so comfortable: Patoka Lake Marina in a nutshell. But traditional? Nah. These business partners have a penchant for mixing things up, putting their own signature on the leisure industry. Examples abound – floating cabins, houseboats, fisherman sleep rooms and now, silo suites in a new winery. Winemaker Steve Bartels classifies it as “the desire to be a bit revolutionary.” He’s coupling years of experience in making beer and wine at home with the idea of being a pioneer in the industry. So Patoka Lake Winery, opened just this spring, has plans for three series of wines – Classic, Artisan, and Lake Select. Classic is the single-material wines, such as Catawba wine from Catawba grapes, blackberry wine from blackberries. The Artisan series will blend fruits and/or vegetables, eventually getting around to items like carrots, tomatoes or dandelions. Lake Select – Bartels calls it the “uppity wines” – will be the higher end wines from more expensive grapes. The winery is the newest addition to the business that began with lake-related recreation, mostly fishing and boating. But the partners quickly saw their core business change from boat rentals to lodging. “We realized we needed to offer a place to stay in order to entice people to

People’s demand is, first of all, ‘Where can I stay?’ And then, ‘What can I do?’” He continued, “So we just keep expanding. Everything we do is about diversifying and adding more value for the customers’ stay.” That includes wine cruises with a different local winery – except their own – featured every other week through October. It’s Patoka Lake Marina’s nod to the camaraderie evident among Hoosier winemakers who continually offer support to one another. “We’re not competitors,” says Bartels. “More wineries mean more people, and that’s better for everybody. But we want to be different. We want to do some crazy things.” In addition to the lake activities, nearby are Wilstem Ranch with its elephant retreat, French Lick Resort with two high-end hotels, golf courses and a casino, and a little farther away, Holiday World and Splashin’ Safari and the Lincoln attractions of Spencer County.
