he events of the last few years have brought into focus many important realities of life — who we are as individuals and the legacies we plan to leave behind. Being with our families and having the ability to connect with them and share our significant milestones has taken on a new meaning. As many Ontarians confront their own mortality, the value in appropriate estate planning and the creation of a Will is apparent. If an individual dies without a valid Will, their estate will pass in accordance with the laws of intestacy, which are set out in the Succession Law Reform Act. This article will not explore that process; suffice it to say that allowing the legislature and courts to determine your wishes rather than clearly setting them out is not ideal. When planning your Will, there are several key questions to consider. Who do you want carrying out your wishes and ensuring that your goals are met? This individual is called the executor of your Will and it is crucial to select the right person for you, as well as an alternate.
This person would have to agree to assume legal guardianship, standing in for you in your role as a parent. Again, this is also an appointment who must have an alternate. Other questions may arise with the distribution of your assets and making sure there is money left over to take care of your families needs. Motivation is one of the keys to beginning an exercise program and sticking to it. Live Well Exercise Clinic is a place where motivation comes from personal attention, customized programs, camaraderie and supervised exercise sessions tailored to your individual wants and needs. For clinic member Jackie R, the experience has been life-changing. What got her through the door was a desire to improve her overall health and well-being and to get relief from the pain of arthritis in her knee. “Our kinesiologists take into consideration your health history, medications, injuries, and other concerns when creating your exercise programs explains Kira Pattison, Live Well Exercise Clinic co-owner and registered kinesiologist. “The reason I decided to join is the accountability. It’s a huge positive. Interaction with my fellow members is therapeutic and makes me more motivated. Building the relationships keeps me coming,” says Jackie. Live Well offers a sense of community, a place where everyone knows your name. There’s a personal relationship between the staff of experts and members and often between the members themselves.
Classes have a member-to-staff ratio of six to one, ensuring individual attention that includes checking in on goals, progress and concerns.

“It’s one of the best things I’ve done for myself,” admits Jackie. Jackie’s husband Chris joined Live Well to support his wife but quickly found out that he needed to work on his balance and coordination. Regular sessions at the clinic have proven to Chris that exercise improves overall well-being and vitality. “I liked how the focus was on doing the exercise properly and having the oversight to help me progress,” recalls Chris who recently celebrated a one-year anniversary as a member. According to Live Well co-owner and registered kinesiologist Ryan Wight, the most common reason for coming to the clinic is weight loss. Conditions like high blood pressure and diabetes are also common motivators for joining.

L
ike many people, I started the new year with a few resolutions to better myself. Fresh from an indulgent holiday that stretched both my budget and waistline, it’s not surprising my goals centred around health and finance which, incidentally, mirror the top two resolutions of most Canadians, according to a 2023 Ipsos Reid survey. We will be a few weeks into the new year by the time this issue hits stands; and the commitment to my goals, by now, is anybody’s guess. Realistically, most of us will ghost our resolutions like a bad Tinder date long before next Christmas. (Personally, I’ll be elated if I’m still on track by spring.) I’ve learned over the years that my most successful goals are aspirational, yet achievable, and fit cozily within my personality and sense of purpose. Going to the gym five days a week will never be my thing, but I know signing up for a race will motivate me to lace up even the coldest of days. If fitness made your resolutions list — and you find you’re more tempted by the couch than the treadmill — this issue’s article on how to stick to your goals may help keep you on track. As we enter the bone-chilling days of winter, often the biggest challenge is simply staying upbeat as we pine for spring. This is when enjoying the simple pleasures of your day can make a world of difference. Even a morning coffee can be remarkably effective at raising your spirits. And, who better to understand the transformative power of a well-crafted java than coffee roasters? Look Local caught up with two local roasters to get the low-down on perfecting the coffee high. ong Canadian winters can be tough for even the most serious cold weather warriors as we spend increasing time huddled indoors. Creating a sanctuary in the home can be a valuable way to brighten our days, regardless of the weather outside. For me, it includes sinking into the plush velvet of my favourite chair, positioned to catch the morning sun, as my three puppies play at my feet. You know what else brings me joy to this space? My plants. While not everyone may want to add puppies to create their happy space, house plants fit any budget and home. More than just aesthetically pleasing, tropical plants breathe life into your home and uplift your spirits.

BENEFITS OF INDOOR PLANTS Research has shown that indoor plants can increase feelings of peace and happiness in as little as 20 minutes. Certain plants are also known to purify the air, acting as natural air filters to make your living space a healthier environment – no small feat during the season of sniffles and flu bugs. Moreover, nurturing these green companions can be immensely therapeutic and calming. CARING FOR HOUSEPLANTS For those who have witnessed lush tropicals wither despite their best efforts, re-investing in plants may be a hard sell. But with the right planning, you can be a successful plant parent yet.

Michelle Varlese-Fox, the owner of The Floral Collective Inc. in Kerr Village, highlights the importance of proper placement for plants to thrive in their environment. "You want to keep plants away from direct heat sources, such as vents, and cold drafts like an entryway," VarleseFox says. She also points out that cooler temperatures, less humidity and fewer daylight hours will inevitably slow a plant's growth rate. When it comes to watering, Jennifer Klassen, the store manager and curator at Centro Garden in Burlington, says it depends on the plant's specific needs. "Some plants need water once a week to every 10 days (such as a Fiddle Leaf Fig, Pothos, Dracaena), and some can handle a lot less water (Snake plant, ZZ plant, Jade)," says Klassen. A good houseplant fertilizer is also important, yet often overlooked for newbie plant owners. "There are various types," says Klassen. The Japandi trend, which marries Japanese and Scandinavian, is popular and continues to mature, says Aaron Lamers, operations manager for Barton Bath + Floor in Hamilton. “Think soft tones and subtle textures paired with natural maple and beech wood and linear accenting.” Homeowners looking to brighten up their space, and rebuff the safety of beige, can find inspiration among tile lines offering bold gemstone shades, along with pastel green, peach and light blue. “They can be applied as cheery accents for bathrooms and kitchen backsplashes,” recommends Lamers. An up-and-coming trend for kitchen backsplashes is square ceramic tiles, says Di Fonzo, that offer a glossy Zellige (or handmade) look. However, retro patterns with smaller rectangle tiles are still trending, according to Lamers, along with longer subway tiles that have that same irregular handmade look and colour shading.

GO THE DISTANCE You don’t need to travel far to find cross-country trails in Halton region. Crawford Lake, Mountsberg and Hilton Falls are popular areas for Nordic ski enthusiasts. Mountsberg Conservation Area has two ski trails that run along the shoreline and through the woods and sugarbush. Bronte Creek Provincial Park is home to plenty of trails, although not all are maintained. Hilton Falls and Crawford Lake in Milton also offer various cross-country ski trails. For downhill skiing, the most accessible locations near Halton are Glen Eden in Milton, Chicopee in Kitchener and Hockley Valley near Orangeville. If you’re willing to take on a longer road trip, there’s Mount St. Louis Moonstone just north of Barrie and Blue Mountain in Collingwood. While there are more cross-country trails in Halton region than alpine ski hills, you are reliant on Mother Nature to grace those trails with snow. Alpine resorts will make their own snow throughout the season as long as the weather is cold enough.

If you’re new to downhill skiing, Leeming recommends a beginner lesson. “A lesson with a certified instructor will help make it safe and fun, ensuring you discover all the little tips and tricks to make it as easy as possible,” he says. ooking for the perfect excuse to not make dinner? Oakville and Burlington have a vast selection of great restaurants, with cuisine options from almost every corner of the globe. This winter, why not enjoy a relaxing night out without the stress of planning a meal, last-minute grocery shopping or hectic meal prep. Bonus: no dirty dishes to clean, either. As an added incentive, Taste of Oakville and Taste of Burlington are back this winter with prix-fixe menus at some of the area’s best restaurants. These popular events, happening back-to-back starting with Taste of Burlington on January 29, should be all the motivation we need to venture out into the chilly air and slushy roads for a foodie adventure. The participating restaurants have created unique, mouth-watering courses for both lunch and dinner to showcase their culinary talents. Since each prix-fixe offering is carefully crafted with flavours that complement one another, you don’t have to agonize over what to order (or pepper the server with questions). aced with so many tantalizing options on a coffee shop menu, my usual order is a basic drip coffee with milk — rather uninspired, I know. So this year, I aim to be more creatively caffeinated. Enter Juan Sarmiento, owner of Vereda Central.

I recently sat down with Juan for a crash course in all things coffee. By the time I finished my Americano, I felt equipped with the knowledge and confidence to make more exciting coffee choices. What does Juan personally recommend? "Americano, flat white or cafe latte tend to be popular orders, alongside anything seasonal," he shared. "For me, it's about the time of day and my mood. I like to mix it up." Santiago directly sources premium beans from Colombian farmers and ships them to Juan in Canada for roasting in their two on-site facilities. This direct process, bypassing middlemen and investing in infrastructure, goes beyond fair trade standards. Only top-quality beans, tested and rated, make it to the roasting process. With over 270 flavour profiles and countless brewing and ingredient combinations, how does one choose what to order? Juan suggests considering five key points to find your perfect cup: 1 Do you prefer your coffee milky or black? 2 Roast choice is influenced by acidity versus smoothness.
Go light for fruity acidic notes, dark for robust chocolatey depth and medium for balance.
3 Personal taste is also affected by extraction methods (espresso,
drip, pour-over).
4 Milk ratios (or milk alternatives) for espresso-based coffees

Extraction refers to the amount of caffeine and flavour extracted by hot water from coffee. The grind size determines the extraction rate — finer grind yields faster extraction while coarser grind slows it down. For instance, espresso, with its very fine grind, requires only about 30 seconds of brew time; UR any longer results in a bitter, overO EC G extracted taste. On the other hand, IMA a French press needs a coarse grind due to extended contact with hot water. HOT TIP (literally): Temperature matters! Aim for water at 93-96 degrees Celsius. Achieve this by letting your water rest for 30 to 60 seconds after boiling. Gustavo says to expect some trial and error, but this basic formula for common coffee methods and their corresponding grinds will get you started: • French press – coarse, similar to raw sugar • Drip – finer than French press, roughly like kosher salt • Pour-over – finer than drip, akin to sea salt Be sure to check out Vereda Central, Firebat Coffee, and other local specialty coffee roasters. INGREDIENTS
3 oz red onions (julienne) 3 oz red & yellow peppers (julienne) 2 oz napa cabbage (julienne) 1 oz fennel (julienne) 6 oz soba noodles (blanched) 4 oz ramen noodles (blanched) 1.5 fl oz canola oil 4 fl oz yakisoba sauce 1 egg (sous vided) 1/2 tsp black & white sesame seeds 1 oz fried chow mein noodles 1/2 oz fried leeks (julienne) 1/4 oz micro greens 4 edible flowers 2 oz heirloom vegetables 1/2 red chili (sliced thin, no seeds) 1 tblsp honey & lemon vinaigrette 1/4 tsp Himalayan pink salt 1 pinch black ground pepper METHOD 1

Heat a non-stick pan on medium to high heat. Add oil to pan and sautee the red onions, peppers, cabbage, fennel and noodles in pan. Season vegetables and noodles in pan with salt and pepper and continue to cook until vegetables and noodles are crisped up. Add the Yakisoba sauce to the pan and mix in well. Continue to cook in pan to crisp up the vegetables and noodles again in the sauce. Heat a sous vided egg in hot water for a few minutes. Once noodles are done in the pan, place them inside a mould in centre of a bowl and press down noodles into the mould. Place micro greens around the mould in the bowl.
This might be one of the more complicated recipes we've ever published, but it's also one of the most delicious! An absolutely stunning dish that is a total show-stopper - not to mention outrageously good. Try it at home if you're brave, or better yet, head to Prime Steak + Raw Bar in Downtown Burlington and try it on their menu today!

Toss heirloom vegetables in a small bowl with vinaigrette, salt and pepper and place over micro greens. Place a few red chilies and edible flowers over top of microgreens outside of mould. Now to finish the dish, place the hot sous vided egg in the mould on top of the noodles and remove the mould very carefully so the noodles stand tall and keep their shape. Sprinkle white and black sesame seeds on top of the egg and top with fried chow mein noodles and fried leeks.
Serve and enjoy!
