he holidays are a magical time of year for kids and adults alike. We all love the sight (and smell) of a Christmas tree with shimmering lights and festive ornaments, wreaths welcoming guests through the front door and holiday table settings that add that extra festive joy. Introducing a little North Pole magic to your home doesn’t have to be complicated, or expensive, but there are a few considerations to make before decking your halls.
Choose a Colour Scheme While red and green still reign supreme with the festive season, Christmas decor trends have long deviated from these classic colours. Recent years have seen pinks, blues and metallics grace the holiday covers of design magazines. But changing up your entire holiday decor every year along with the “it” colours of the season can be expensive. Katie Campbell, owner of Campbell & Co. Campbell suggests green as a base colour to design around. “It’s a classic that never goes in and out of style as other trends do,” she says. Using green as your base, pepper in some new ornaments or contemporary objects such as metallic, woodland inspired or ceramic objects to make your holiday decor more on trend.

Don’t Forget About Your Tablescape Whether you’re setting the table for a formal holiday dinner or having guests over for festive cocktails, creating a seasonal table can help set the mood. Chantal Ingram, owner of Flourish & Bask in downtown Oakville, says holiday glassware comes in a variety of colours to match any holiday theme. “I’ve seen monochrome white and silver tables trending as well as all shades of purple. You can mix these into both modern or traditional looks depending on the textures and glass you choose,” she says. While Ingram says the traditional red and green always has a place at a holiday table, she recommends adding some deeper rich jewel tones such as dark ruby paired with striking emerald for a trendier look. Don’t think you need to replace all of your glassware. “It’s less about having full matching sets and more about mixing and matching with pieces you already own,” says Ingram. If you’re looking to elevate your dining table or home bar for the holidays, start with some beautifully coloured wine glasses or coupes (glassware with a stem and wide, deep bowl) for pre-dinner cocktails mixed in with water glasses you already own.

Stretch Holiday Decor Beyond Christmas Day When the tree comes down, does all of your holiday decor have to go with it? Ok, yes, there’s the Christmas tree and the “Santa stop here” signs, the nutcrackers and reindeer, but if you want to stretch your seasonal decor beyond Christmas day, opt for some more white, green or gold “winter” decor that you don’t feel obligated to take down come January.

Since joining the gym four years ago to tackle some health issues, Barb says she is much stronger and has a much more positive attitude. “Our very qualified kinesiologists work with us individually every visit, making sure our own challenges are being addressed,” explains Barb. “They know just how far to go to push me, while fully understanding and appreciating any limitations. My mobility, stamina, flexibility and balance has improved greatly. My cholesterol numbers that were on the higher side have decreased and are within a healthy range. he Children’s Aid Foundation of Halton (CAFH) has always had much more on its plate than raising funds to help the region’s children, youth and families. Think of the charitable agency as a myth-busting action hero fighting deeprooted distortions about those who benefit from children’s aid. And while the foundation’s primary job is fundraising, its success is also built on its ability to ward off misconceptions that surround this kid- and family-centred agency. It’s not an easy task. “There’s a lot of stigma around children’s aid,” says Tina Blatchford, executive director for CAFH, who in one capacity or another has been working for the past 30 years to help stamp out negative stereotypes about the Halton Children’s Aid Society (CAS). A common mistake people make about the agency is who it serves, when, in fact, the families and children helped by CAS cross all walks of life, income levels, ethnicities and religions.

“It’s often children who’ve experienced some kind of loss, family trauma, or abuse and neglect,” Blatchford explains. “But mostly it’s families struggling with some kind of loss – mental illness, job loss, food insecurity.”

Another myth is that if a parent or guardian seek support, their child will be apprehended from the parent. To a lesser extent, parents and guardians may worry that their caregiving skills will be called into question and they will be deemed a bad mom or dad. But Blatchford says it’s important for families to know they can get support without fear of reprisals. “The CAS will do everything in its power to keep a child at home,” she says, noting that 97 per cent of the kids assisted by CAS live in their family homes and just three per cent are in care. Annually, about 5,000 children and youth in Halton receive help and resources beyond the basic operations that are covered by government funding. Children’s Aid provides a raft of programs – from beds to bursaries as it likes to say – assisting youth, including a mentor program around education and employment, a tutor program, an advocacy program for youth in care and a program for homeless youth. Bursaries are available for hefty expenses associated with post-secondary education, and so much more.

At this time of year, there’s a focus on their Holiday Dreams program which provides gifts, supplies and festive gatherings as well as other inspirational opportunities throughout the year. That program’s goal? Providing happy childhood memories.

If you’d like to help a local family this holiday season, Blatchford suggests a cash donation as the agency can use the funds where the need is most urgent. Gift cards, however, are also appreciated as 78 per cent of children and youth in care are over 12, so this allows them to choose what they would like. Gift cards also enable help for families seeking funds for groceries, winter clothing and to help buy presents for their kids. However, product donations are also welcome as the Children’s Aid hosts parties and everyone goes home with a present. “Anyone who has children knows children want to be like their friends. They want that Barbie doll, for example,” says Blatchford. “What we’re doing is helping parents provide that and often the kids don’t know it’s coming from donor families or CAS. But for older youth, that feeling of isolation is compounded and they can feel very lonely. Our holiday party for the older ones, it really has a lot of meaning that others in the community are thinking about them.”

arshmallows, Burlington Downtown and two Christmas trees are a few of the ingredients that make up the joyful holiday season for Dareen and Greg Kuchma and their two young boys, George and Harvey.
Although the season officially kicks off December 1 with advent calendars and pyjamas for the kids, Dareen admits the home is fully decked out by early November, thanks to the kids’ unbridled excitement and Dareen’s own flair for design – a skill she’s honed through the Kuchma Real Estate Team which she leads with husband Greg. Merging old and new rituals, the young family has established their own holiday traditions to ensure their kids get to experience all the Christmas feels. Decorating the trees typically launches the start of all things merry and bright. “We have a kids’ Christmas tree in the upstairs hallway by their bedrooms and we do that together with kids’ decorations,” says Dareen. “Which leaves me to decorate the second tree how I’d like.” They immerse the family in more holiday charm with expeditions to Burlington Downtown.

“Downtown is transformed for the Christmas season,” says Dareen. “Brant Street is so lit up and beautiful. It's very safe and easy to bring the kids.” Festive storefronts boasting holiday displays add to the cheerful atmosphere. On their agenda, this year, is the Burlington Santa Claus Parade, the lighting of the Tree of Hope and the Festival of Lights. “It feels like there’s always something happening in downtown Burlington,” she says. To sweeten the holidays, the boys enjoy a baking date with Grandma – a tradition that began when Greg was a child. “More so than his three sisters, Greg was the one that baked with his mom every year at Christmas,” explains Dareen. Well into adulthood, he designated a day with mom in the kitchen to bake. Now George and Harvey have enthusiastically stepped in; Grandma even equips them with kid-sized aprons and baking tools. “She selects recipes that are not going to be super complicated for the kids to do,” says Dareen. Rocky Road Squares (included here) has long been a holiday favourite. Ideally suited to young chefs for its simplicity and flexibility, the recipe calls for marshmallows, but can include any variety of sugar-laden treats (gummy worms make a regular appearance.) With no baking required, it’s a fail-proof treat that can be whipped up for a quick dessert or afternoon activity. Holiday treats taste (and look) quite different for Dareen who is Middle Eastern and moved to Canada from Palestine at age 11. Traditional baked goods, like Kaaik, are made with dates or nuts and – unbeknownst to Greg – rosewater. When he tried one during their first Christmas together, he was alarmed. “He pulls me aside and says, I think your mom accidentally dropped perfume in the cookies,” she adds, laughing.

Aside from learning to appreciate the distinct baking styles of their cultures, Greg and Dareen have incorporated traditions from both sides of the family with great results. For Dareen’s Middle Eastern family, celebrations have always taken place Christmas Eve when they would dress up, attend midnight mass, share a feast and open gifts. ¼ 1/4 cup butter ½ 1/2 cup peanut butter ½ 1 cup semi-sweet chocolate chips ½ 1 bag of coloured miniature marshmallows ½ 1/2 cup peanuts or walnuts (optional) ½ 1/2 cup shredded coconut (optional) ½ 1/2 cup pretzels (optional)
Melt the butter with peanut butter in a large saucepan. Stir in chocolate chips until melted. Cool. Add marshmallows and any other ingredients you like until coated. Pack into a 9” x 9” pan lined with wax paper. Refrigerate. Makes 36 squares. Freezes well!

dvent calendars have certainly evolved over the years, leaving behind those flimsy cardboard calendars filled with often stale and ambiguously shaped chocolates. (Was that supposed to be a reindeer or a goat?) Advent calendars trace back to 19th-century Germany, where families marked the days leading up to Christmas by lighting candles or hanging religious images. The first printed advent calendar, as we know it today, was created in the early 20th century, featuring little doors to open each day through December 1 to 24. Over time, these calendars have become more creative and diverse, opening the door to a wide array of imaginative and personalized options. "You can get as creative as you like or keep it simple. The true magic is in creating fun, family-friendly ideas to get into the holiday spirit," says Sarah Gunn of Gunn and Co, who specializes in holiday decor.

Last year, Sarah's family counted down to Christmas with adorable DIY paper bag advent gingerbread houses. "The larger ones can hold colourful socks, small toys or sweet holiday treats. The smaller ones are perfect for a message from the Elf on the Shelf or a note with a suggestion for a holiday activity that the whole family can enjoy together." To create a quick and easy version of these gingerbread houses (pictured on the next page), fold over the top ¼ of a brown paper lunch bag and decorate it with a white paint pen and other embellishments. Then hole punch at the top, and tie closed with twine or red ribbon. Better yet, turn it into a crafting session; kids love decorating for the holidays, especially if hot chocolate and gingerbread cookies are involved.

With high inflation and ballooning food costs, families may feel the pinch this holiday season. However, you can still make it a magical time for your family without racking up additional debt. “This is a good opportunity to reflect on what your values are and what's most important to you,” says personal finance writer, Sandy Yong.

You may find some holiday arts and crafts or attire that you stored away that you can reuse.” There are also plenty of free apps to help you find the best deals, whether it’s Flipp for shopping for holiday groceries, or save.ca for gifts and electronics. Yong also suggests looking for deals during Black Friday and Cyber Monday. Or if you’re someone who is a last-minute shopper, you may score a great deal on early Boxing Day sales.

or a show stopping holiday dessert that delights the eyes as much as the taste buds, the English trifle is a top contender with its luscious layers beautifully displayed in a glass bowl.
Traditional English trifles first appeared in cookbooks in the 16th century as a dessert made of thick cream, flavoured with sugar, ginger and rosewater served in a silver bowl. Around the 1750s, it evolved into layers of wine-soaked biscuits, custard and whipped syllabub froth (made by curdling sweet cream or milk using an acid, like wine or cider.) Through the generations, many variations have emerged and, today, trifle flavours and presentations are limited only by the imagination. Serve a traditional trifle The traditional English trifle is made with layers of sponge or pound cake soaked in sherry, custard, fruit jelly and whipped cream. To create this classic version for your holiday feast, start with a footed glass bowl to elegantly display the tiers.

Make sponge cake, fingers or pound cake from scratch or buy ready-made, then soak in two to three tablespoons of sherry if you choose the boozy option. To create a fruit jelly, use gelatin, fruit juice and sugar; add chunks of natural fruit, if desired (fresh, not frozen). English custard (or crème anglaise) made from scratch requires only a few ingredients – egg yolks, vanilla, cream and corn starch – but watch your temperature as the eggs can curdle easily. Search for a recipe online and monitor the heat as you stir. Alternatively, you can purchase prepared custard from the grocery store. Whip up a carton of 35% whipping cream, adding one to two tablespoons of sugar to sweeten. Layer your trifle with cake on the bottom, fruit and jelly next, custard, then whipped cream. Repeat until your trifle reaches the top of the bowl, ideally three or four layers, and finish with whipped cream. Add chocolate shavings or a cluster of berries to the centre to complete the look.

Modern trifle variations Today’s trifle recipes come in many forms to suit a variety of themes and personal preferences. For a rich and decadent change-up, substitute the fruit with chunks of chocolate, paired with coffee or vanilla pudding instead of custard. Devoted chocolate lovers can use cubes of brownie instead of sponge cake and layer with whipped cream, caramel sauce and nuts. By switching up the traditional recipe for some seasonal flavours, you can create a delectable holiday sensation. A cranberry trifle is a popular festive alternative. Instead of a fruit jelly layer, cook frozen or fresh cranberries with water, sugar, crystalized ginger and orange zest. The cranberries release pectin to form a natural jelly, making this an ideal fruit layer for a holiday trifle. Layer sponge cake soaked in orange liqueur with the cranberries, substitute custard for a whipped cream cheese layer, and top with whipped cream and grated orange zest.

For a pumpkin gingerbread flavoured trifle, use broken pieces of gingerbread cake or cookies as your base, adding pumpkin pudding custard made with pumpkin puree, cardamom, brown sugar and vanilla pudding. Crumble ginger snaps over the pudding and top with vanilla whipped cream, crushed gingerbread and a sprinkle of pumpkin pie spice. Detailed versions of these recipes, and many others, can be searched for online. No matter how you build your trifle, the visual appeal of this dessert is always a delight for guests. Be sure to make your masterpiece a day ahead to allow time for the flavours and textures to blend and deepen. For a more intimate dinner party, create individual trifles by layering ingredients in small dessert bowls and serve with a specialty coffee or decadent liqueur.

INGREDIENTS

¼ 4 large chicken breasts ¼ 2 tbsp salt ¼ 2 tbsp sugar ¼ 1 bay leaf ¼ 1 clove garlic, smashed ¼ 1 litre cold water ¼ 1 cup boiling water ¼ 4 oz fresh basil stems ¼ Salt and pepper
¼ 4 cups focaccia bread, cubed ¼ 3 eggs ¼ 8 oz Spanish onion, sliced ¼ 1-1/2 cups 35% cream • 1/4 cup roasted garlic cloves • 1/2 cup fresh basil leaves, chopped • 3 tbsp grated parmesan cheese • 2 tbsp butter • 1 tbsp vegetable oil • Salt and pepper
METHOD
Combine boiling water, bay leaf, salt, sugar, basil stems and garlic and whisk until the salt has dissolved. Pour the cold water mixture into the brine mixture and whisk, then place over top of the chicken breasts. Allow chicken to brine for 1 hour and then drain as much water off as you can. Pat the chicken dry. Season with salt and pepper and pan sear in oil in an oven proof pan until the skin is golden brown. Place the pan in the oven and roast at 350 degrees until the chicken is cooked through. Allow it to rest for 15 minutes before slicing and serving.
Paradiso serve this dish with a honey-dijon carrot puree, garlic seared green beans, and a kalamata olive tapenade. At home, any mixture of fresh vegetables will pair nicely.
METHOD
Caramelize onions in butter and oil on medium heat until golden brown. Add the roasted garlic and mash with a spoon until garlic cloves have broken down. Add the cream and bring to a simmer. Combine the eggs, parmesan and basil in a bowl and slowly add in the cream mixture. Then add the bread and allow it to soak up mixture for 15 minutes. Season with salt and pepper and place the bread in a parchment lined 2 inch deep baking pan and cover tightly with foil. Bake at 350 degrees for 45 minutes. Allow it to cool before slicing. Slice into portions and pan sear in butter until golden brown.
