Kuchma Family How this young family combines old and new traditions for the holidays.

M

arshmallows, Burlington Downtown and two Christmas trees are a few of the ingredients that make up the joyful holiday season for Dareen and Greg Kuchma and their two young boys, George and Harvey.

Although the season officially kicks off December 1 with advent calendars and pyjamas for the kids, Dareen admits the home is fully decked out by early November, thanks to the kids’ unbridled excitement and Dareen’s own flair for design – a skill she’s honed through the Kuchma Real Estate Team which she leads with husband Greg. Merging old and new rituals, the young family has established their own holiday traditions to ensure their kids get to experience all the Christmas feels. Decorating the trees typically launches the start of all things merry and bright. “We have a kids’ Christmas tree in the upstairs hallway by their bedrooms and we do that together with kids’ decorations,” says Dareen. “Which leaves me to decorate the second tree how I’d like.” They immerse the family in more holiday charm with expeditions to Burlington Downtown.

“Downtown is transformed for the Christmas season,” says Dareen. “Brant Street is so lit up and beautiful. It's very safe and easy to bring the kids.” Festive storefronts boasting holiday displays add to the cheerful atmosphere. On their agenda, this year, is the Burlington Santa Claus Parade, the lighting of the Tree of Hope and the Festival of Lights. “It feels like there’s always something happening in downtown Burlington,” she says. To sweeten the holidays, the boys enjoy a baking date with Grandma – a tradition that began when Greg was a child. “More so than his three sisters, Greg was the one that baked with his mom every year at Christmas,” explains Dareen. Well into adulthood, he designated a day with mom in the kitchen to bake. Now George and Harvey have enthusiastically stepped in; Grandma even equips them with kid-sized aprons and baking tools. “She selects recipes that are not going to be super complicated for the kids to do,” says Dareen. Rocky Road Squares (included here) has long been a holiday favourite. Ideally suited to young chefs for its simplicity and flexibility, the recipe calls for marshmallows, but can include any variety of sugar-laden treats (gummy worms make a regular appearance.) With no baking required, it’s a fail-proof treat that can be whipped up for a quick dessert or afternoon activity. Holiday treats taste (and look) quite different for Dareen who is Middle Eastern and moved to Canada from Palestine at age 11. Traditional baked goods, like Kaaik, are made with dates or nuts and – unbeknownst to Greg – rosewater. When he tried one during their first Christmas together, he was alarmed. “He pulls me aside and says, I think your mom accidentally dropped perfume in the cookies,” she adds, laughing.

Aside from learning to appreciate the distinct baking styles of their cultures, Greg and Dareen have incorporated traditions from both sides of the family with great results. For Dareen’s Middle Eastern family, celebrations have always taken place Christmas Eve when they would dress up, attend midnight mass, share a feast and open gifts. For Greg, whose background is Italian and Ukrainian, Christmas morning is when the main festivities unfold. “It’s worked well for us,” says Dareen. “We’re with my family every Christmas Eve and the next day we make our way to Greg’s mom’s house for breakfast and everyone opens gifts together.” The relaxed, slow morning is a perfect conclusion to the whirlwind holiday season.

¼ 1/4 cup butter ½ 1/2 cup peanut butter ½ 1 cup semi-sweet chocolate chips ½ 1 bag of coloured miniature marshmallows ½ 1/2 cup peanuts or walnuts (optional) ½ 1/2 cup shredded coconut (optional) ½ 1/2 cup pretzels (optional)

Melt the butter with peanut butter in a large saucepan. Stir in chocolate chips until melted. Cool. Add marshmallows and any other ingredients you like until coated. Pack into a 9” x 9” pan lined with wax paper. Refrigerate. Makes 36 squares. Freezes well!

Basil Brined Roasted Chicken Supreme

Caramelized Onion Bread Pudding

INGREDIENTS

INGREDIENTS

¼ 4 large chicken breasts ¼ 2 tbsp salt ¼ 2 tbsp sugar ¼ 1 bay leaf ¼ 1 clove garlic, smashed ¼ 1 litre cold water ¼ 1 cup boiling water ¼ 4 oz fresh basil stems ¼ Salt and pepper

¼ 4 cups focaccia bread, cubed ¼ 3 eggs ¼ 8 oz Spanish onion, sliced ¼ 1-1/2 cups 35% cream • 1/4 cup roasted garlic cloves • 1/2 cup fresh basil leaves, chopped • 3 tbsp grated parmesan cheese • 2 tbsp butter • 1 tbsp vegetable oil • Salt and pepper

METHOD

Combine boiling water, bay leaf, salt, sugar, basil stems and garlic and whisk until the salt has dissolved. Pour the cold water mixture into the brine mixture and whisk, then place over top of the chicken breasts. Allow chicken to brine for 1 hour and then drain as much water off as you can. Pat the chicken dry. Season with salt and pepper and pan sear in oil in an oven proof pan until the skin is golden brown. Place the pan in the oven and roast at 350 degrees until the chicken is cooked through. Allow it to rest for 15 minutes before slicing and serving.

Paradiso serve this dish with a honey-dijon carrot puree, garlic seared green beans, and a kalamata olive tapenade. At home, any mixture of fresh vegetables will pair nicely.

METHOD

Caramelize onions in butter and oil on medium heat until golden brown. Add the roasted garlic and mash with a spoon until garlic cloves have broken down. Add the cream and bring to a simmer. Combine the eggs, parmesan and basil in a bowl and slowly add in the cream mixture. Then add the bread and allow it to soak up mixture for 15 minutes. Season with salt and pepper and place the bread in a parchment lined 2 inch deep baking pan and cover tightly with foil. Bake at 350 degrees for 45 minutes. Allow it to cool before slicing. Slice into portions and pan sear in butter until golden brown.
