Like Father, Like Daughter

Having started a one-man business out of the back of an old butcher’s van, John G. Baird never had any intention of his daughter following in his footsteps. She would go to university, carve a career as a well-educated young woman and become a teacher. But now, almost half a century after he set up, daughter Jane Bruce is running the North-east building contractors, after refusing to make a drama out of a crisis.

“Working in this industry is extremely satisfying,” says Jane “and when people recommend you, you know it’s on merit. Although my dad didn’t want me to get involved when I was young, I did because he needed me to be there. If he could only see me now...”

And she is steering the expanding enterprise from strength to strength, diversifying and doubling its turnover. Jane, 41, left teaching and took over the family business in 2004 after her dad became seriously ill. He died the following year, safe in the knowledge the respected family firm, John G Baird, was in the capable hands of his daughter and her co-directors, his wife Elsa and son Jon. But Jane is the linchpin, in charge of operations out of its Aberdeen and Peterhead offices where they specialise in property maintenance for the private and public sector, providing a range of services from roofing and joinery to painting and building work. Their clients include: Aberdeen and Aberdeenshire Councils, Grampian Police, F.G. Burnett, Aberdeen Art Gallery, Aberdeen Music Hall, and numerous private clients spread across the North East of Scotland.

The first will offer the mother of the bride or groom the most flattering selection of wedding outfits while the second one will be filled with a marvellous selection of hats, shoes and bags to provide the perfect finishing touch. With a pedigree positively glittering with a galaxy of Michelin stars it’s only natural that David Malcolm and his team should seek a showcase for their talents. Now they’ve found it – by creating their own exquisite dining experience. They’re taking culinary art in Aberdeen to a new high, literally, with a sumptuous tasting menu served in the elegant little Gallery Restaurant above Fusion Bar Bistro in North Silver Street. With just 20 covers, plus a small private dining room, and an 8pm sitting, it’s an intimate introduction to a tantalising array of chefs’ skills – honed in restaurants of Ramsay, Rhodes and Kitchin. And though the tobacco foam, basil tuille, strawberry soup and occasional “molecular” approach may sound mildly high-brow, a stiff white tablecloth is about as stuffy as it gets here where head chef David and his colleagues are pioneering accessible fine dining without any hint of intimidating atmosphere. Based on classic French techniques and using seasonal, top quality local and Scottish ingredients, the team democratically designs each new monthly menu, giving rein to their imaginations and often spinning retro favourites with a modern twist – Baked Alaska with crackling crystals.

And, as autumn descends, the dishes become richer with venison, partridge, apples and root vegetables taking over from the crisp summer menu. “There’s a gap in the market for real fine dining,” says David who oversees The Gallery and senior and junior sous chefs, Daniel Corbett, 24, and Paul Lobban, 22, “but we all want it to be accessible and our staff are incredibly knowledgeable so customers shouldn’t feel intimidated by the menu. “We’re trying something adventurous and quite creative. It’s exciting and so far the feedback has been exceptional.”

Tell us a bit about how you got started as a chef and how you came to be in your present role? I started out aged 14 working as a kitchen porter at Meldrum House and a year later I was promoted to a commis chef, which gave me a real taste of what life would be like as a chef. Whilst at college I continued to work my way up through the ranks at the Udny Arms Hotel and after three years I left to join Eat on the Green, before taking the reins as head chef of Cocoa earlier this year. What’s the best thing about your job? And the worst? I love the creativity - trying new and different combinations and turning simple ingredients into a delicious dish; the only downside is the working hours can be unsociable, but the positive aspects of the job certainly outweigh the negatives. What’s your signature dish? It would have to be slow cooked pork belly or confit of duck - braised, slow cooked meat has really made a comeback recently and I love this style of cooking, as the meat is exceptionally tender and oozes flavour.

How do you relax when you’re out of the kitchen? I’m a big film and music fan and enjoy going to the movies with friends, listening to music and playing my guitar – it’s definitely the best way to switch off after a busy day in the kitchen. If you could invite anyone in the world, from any time, real or fictional, who would you invite to dinner? Jamie Oliver – he has achieved so much at such a young age and his approach to cooking is exciting and dynamic, so as a fellow chef, it would be fantastic to meet him. What three ingredients would you take to a desert island? Chocolate, cheese and steak – these are certainly staple ingredients that I couldn’t live without. Which chef do you most admire and why? It has to be Marco Pierre White: he is an amazing and exceptionally talented chef and certainly an inspiration!

Crème brulee is definitely a dinner party winner and my Cocoa twist is a must for any chocolate lover: Cocoa Crème Brulee

Highlander shortbread (serves 6)

1 pint of double cream 6 egg yolks 100g caster sugar 1 vanilla pod 1 shot of espresso / 1 tsp coffee granules

280g plain flour 110g semolina 410g caster sugar 220g soft butter Demerara sugar

Put cream, split vanilla pod and coffee into a pan and bring to the boil, set aside.

For the shortbread, mix the flour, semolina, sugar and butter together to form a paste. Roll this into small sausage shapes and then roll in Demerara sugar. Wrap in cling film, then put in the fridge to set. Once hard, take out and slice into pieces, then bake at 165 degrees Celsius for 20 minutes.

Put egg yolks and sugar into a bowl and whisk until the egg yolks become lighter and the mix thickens. Pass the cream into the egg mix and whisk. Add mix into your ramekins, place in a bain marie and cook at 150 degrees Celsius for 30-35 minutes. To serve brulee sprinkle with caster sugar and glaze with a blowtorch and a couple of pieces of shortbread.

Jaffs I’m sure that you will have passed Jaffs Bar and Restaurant, situated about 5 minutes’ drive from Westhill, in the village of Dunecht.

was deliciously smooth, topped with a cranberry and red onion chutney and served with crumbly oatcakes.

We were given a warm welcome, and the friendly hospitality continued throughout our leisurely lunch.

The main courses include favourites such as deep fried haddock (in 3 sizes and available with gluten free batter if required), gourmet burgers and fish cakes. I went for the special of the day. A potato topped creamy fish pie packed with skate, haddock and salmon. It was comfort food at its best, especially given the torrential rain falling outside. My friend (I suspect with an eye on the dessert menu) went for a starter size Thai Beef salad with crispy noodles. The marinated steak was tender, sticky and glossy and complemented by a sweet chilli sauce.

The interior is stylish and comfortable; a mix of wooden floors and leather chairs. The selection of starters included Cullen Skink and bruschetta, but I went for breadcrumbed mushrooms stuffed with brie and sun-dried tomatoes with a garlic and chive mayo - a flavourful take on a classic. My friend’s chicken liver and brandy pate 34

Being lunch time, pudding was a shared affair and, whilst tempted by the sticky toffee pud, lemon tart, white chocolate and Baileys cheesecake and rice pudding, we settled on a gluten-free orange and almond syrup cake - spongy and tangy, it was an enjoyable finale alongside a couple of coffees. If you like home cooked, locally sourced food served with a smile (and reasonably priced too), then don’t just wait until you are out that way - make a point of visiting Jaffs! Boars Head Inn With a distinct autumnal chill in the air BBQ’s and dining alfresco are out of the question. However, it does bring with it the chance to go indoors and warm up with some delicious comfort food. Where better to sample some than at The Boars Head Restaurant and Pub, tucked away in the hamlet of Kinmuck. As you walk in to the restaurant you realise that it is everything you want a country restaurant to be, with its rustic wooden tables, exposed brick wall and cosy fireplace filled with flickering candles. Co-owner Jaclyn was there to greet us with a friendly smile and sat us down with some warm, freshly baked bread while she got us some drinks and we browsed the menu. For starters, Mum and I decided to share

the homemade pate; served with toast and a tangy homemade plum chutney that complimented the smooth, rich flavour of the pate. For mains, I chose the pan-fried sea bass which arrived towered high on a bed of fresh stir-fried vegetable and crispy sauté potatoes with a flavourful garlic sauce. Mum picked the Mediterranean chicken - a generous portion of tender chicken in a sweet tomato and pepper sauce, served alongside a light and fluffy couscous and fresh honey roast vegetables. The dessert menu offers a delicious choice of baked goods all handmade by Jaclyn. Since we could not possibly decide on just one, Jaclyn offered us a sample plate of all

desserts for us to share. In a moment of sheer indulgence we sank our spoons in to a selection of sticky toffee pudding and ice cream, apple pie, banana cake and devil’s food cake. Although we enjoyed every last bite of each, we both agreed that our favourites were the moist banana cake and the light and chocolatey devi’ls food cake. La Stella has quickly become one of Aberdeen’s most sought after restaurants, with Head Chef Chris Tonner being renowned for his delightful menus, using the best seasonal ingredients. Just eighteen months after opening La Stella, Chris is happy to announce a new addition to his family, with the opening of The Courtyard, La Stella’s new sister restaurant on Alford Lane. It’s obvious that the news about the Courtyard is spreading fast, going by the number of reservations being made during Trend’s visit. Hosted by CityMoves - the North-east's main dance agency - Dance Live welcomes world class talent to the City and Shire for a packed six week programme of high-quality events. Silversmith Alan Baillie makes some of the most covetable jewellery and domestic silverware in Scotland, taking his inspirations from the rugged natural landscapes of Morayshire. Alan found himself drawn to metal during his time at art school, so it seemed a natural choice to take up a position at top Edinburgh silversmiths, Hamilton & Inches, before setting up his own workshop near Inverness fourteen years ago. “I have very eclectic interests in all things Scottish,” Alan explains. “The strata of pebbles and the flowing surface of rivers find their way into my work and I use local natural materials like agates, cairngorms and bog oak. I chase the natural contours into the surface of a piece

using small flat bladed steel punches, stopping to anneal the metal and working from both the front and the back until I have raised flowing liquid lines from the metal.” “A lot of time, work and skill goes into each piece. I think so many of us have lost the experience of making things, and the satisfaction that comes from making something uniquely individual, so I’m passing on my skills by running classes at the

I know you get a lot of letters telling you how much people enjoy the magazine and I have to agree that Trend really is a wonderful magazine. I’ve been to so many new places to shop and eat as a result of articles I’ve read, that I’d never have discovered otherwise.

I picked up my copy of trend magazine at the Hilton Doubletree hotel on arrival and just want to say what a fabulous resource it is for guests coming from out of town. It enabled me to plan the whole of my short break in Aberdeen, making the most of every minute both sight seeing, shoping and eating! It has whetted my appetite for a return visit to fit in many of the things mentioned in your magazine which I did not have time for last week.

I recently had a friend from Houston came to stay on holiday and I was able to take her to some really interesting places thanks to you. A couple of years ago, I would have thought that there was nowhere to go and she’d have had a pretty boring time of it. Instead, she went away with the impression that Aberdeen is a fabulous place to live. The only thing that didn’t come up to scratch was the weather, but I suppose you can’t be blamed for that. Paradise Sometimes we’re all so busy living our lives at a hundred miles an hour that we forget to make time to visit the places that make living in Aberdeen such a pleasure. If you need a change of pace, then relax and smell the roses in Aberdeen’s secret garden. The Cruikshank Botanic Garden is tucked away through a gate on the Chanonry in Old

Chill out by the ponds, watch the wildlife and just get away from it all. Aberdeen, and it’s like entering a forgotten oasis. The further you go, the quieter it becomes and you can unwind in a world far from traffic jams and office politics, surrounded by greenery, wildflower meadows and wildlife. A picnic and a book make for a perfect day. Keen gardeners will find inspiration in the well labelled and thought out plant collections

which include many rarities and specimens that thrive here despite our chilly winters. The gardens host some of the first rhododendrons to come to Scotland, rare examples of the weeping elm, Mediterranean, North American and Asian gardens and an outstanding arboretum. It’s difficult to walk round the spectacular long border without making a mental note of plants worth buying for your own garden. You don’t need to be a keen gardener to appreciate the shady walks and sunny patio areas. Chill out by the ponds, watch the wildlife and just get away from it all. Visitors are positively encouraged and the knowledgeable staff and volunteers are generally happy to answer questions. Dogs are welcome too, provided they are kept on a lead. There’s no entry fee and the gates are open between 9am and dusk on Mondays to Fridays till March, and open at weekends too in the lighter months. For inspiration and relaxation, it’s difficult to think of a better setting. 71

Charity on a plate Prego Deli and Bistro held a charity event in aid of VSA’s Older People’s Services. A fantastic 3 course lunch raised an amazing £631.35 which will be used to buy some much needed equipment at their Forestgait establishment. They were delighted by the generosity of their customers, ‘It was a delightful, happy day a pleasure to have been involved in this extremely worthwhile cause’ said Stuart Murray, one of Prego’s owners.

Mad Hatters Tea Party

Despite the showers over 80 ladies and a few white rabbits turned Haddo Gardens into a Wonderland, the Mad Hatters Tea party which was organised by a group of friends in aid of Breast Cancer Awareness, Cruse and MS raised over ÂŁ1600 for the charities. While some ladies sampled Queenie's tarts, others were entertained with Skinner's Carriage rides and an illusionist while the Mad Hatter and the Mad March Hare presided over affairs. The highlight had to be the amount of monies raise through the efforts of many women who made the success from running stalls, baking, buying raffles and above all laughing in the rain.

The Broadstraik Inn held it’s 1st Ladies’ Lunch in memory of Jackie Spence to raise funds for Friends of Roxburghe House. Guest speaker Isla Traquair flew in for the event and made a very moving speech about Jackie who spent time there last year. To add a bit of fun a silent auction for donated designer handbags was held allowing the ladies present to “bag a bag”. Courtyard celebrates tasty opening After an eight week refurb by ASM, Chris Tonner has re-opened the doors of the Courtyard restaurant. Along with his business partner dad they aim to bring something special to the food scene in Aberdeen. Using the same ethos as La Stella, where customer satisfaction is 100% and using only the best produce available, The Courtyard is already proving very busy! They had the official launch party on Sunday the 12th to thank everybody involved in this amazing journey.

The last word with...

Full house notices were posted at Aberdeen’s Arts Centre in King Street for the return to the stage of a much loved north-east comedy duo, John McRuvie and Patrice, Sunday name Patrick Wight. The pair, both 51, had the audience convulsed with laughter as they recreated the characters they played on their Northsound Radio programme, Saturday Lie-In, from 1998 until 2003. “John and I go back more than 30 years since we were DJs in Aberdeen nightspots such as Fusion and Ritzy’s,” said Patrice, whose trademark routine is that of the camp hairdresser to the stars at the foot of Bennachie. 86

An Aberdonian, who served his time as an engineer at the city’s Broadford Works, he believes there is still a big market for humour in the Doric tongue but maybe not in Dundee. Meanwhile, John, a Kincorth loon, still plies his trade at Northsound with his own show, McRuvie in the Morning from 6am to 10 am during the week and with a four-hour Saturday show, the Golden Years. He spent five years in the Royal Navy after school and is a huge supporter of Aberdeen’s naval cadet unit, TS Scylla, at Pocra Quay.

John paid tribute on stage to the late Paddy Burns who also featured in the Saturday Lie-In shows. You can see him and Patrice “live” again at the Britannia Hotel, Bucksburn, on December 17 and 18 with their Christmas show. They also plan a return to the Arts Centre where this year’s panto from December 4-26 is Cinderella. No, Patrice is not playing the lead.
