Editor’s welcome Ah, April... It must be spring, because I’ve been able to abandon my outermost layers of jumpers and have finally emerged from the cocoon of my fake fur jacket. Unfortunately, I’m unlikely to be mistaken for a beautiful butterfly, so it’s time to refresh my wardrobe and finally admit that raspberry cheesecake doesn’t really count as one of my five a day.

Spring’s a great time for doing something new and making a few changes. Maybe take up a creative hobby at Gray’s School of Art, get out and about like Kate, or try snowboarding like our intrepid Courtney. Find somewhere new

to eat, invest in a new recipe book, get away for the weekend, listen to a new band, or take inspiration from our fashion and interiors pages and give yourself or your home a bit of a makeover.

Brunch Review, The Boathouse Cafe & Restaurant Just 15 miles south of Aberdeen, the coastal town of Stonehaven has long been one of my favourite places to escape to for a few hours.

The Boat House Cafe opened in 2005 and has a prime seaside location, overlooking Stonehaven Bay. For fine days (or if you are hardier than I am) there’s a patio area where you can pass the time watching the abundant sea birds diving for their lunch.

Inside, the cafe is light and bright with pale blue walls and seaside decorations. With a few tables, booking is recommended as it can get busy. The emphasis is on homemade and locally sourced produce, and the boys

wouldn’t let me leave without a selection of tray bakes.

There are all the usual breakfast rolls and also the full Scottish breakfast which my youngest wolfed down. The main menu had a good selection of paninis and homemade soup, and dishes which would satisfy if you’re wanting something more substantial. Late on a Sunday morning we were in brunch mood so I decided on the toasted smoked salmon muffin topped with spinach, poached egg and plenty of creamy hollandaise - it tasted as good as it sounds. My husband went for the Boathouse Benedict- granary bread, poached smoked

haddock, poached egg and hollandaise which was equally good. Our eldest had one of his favourites - a cheese and chorizo Panini which came with a generous side salad.

Coffees, milkshakes and marshmallow topped hot chocolate prepared us for the blast of bracing cold wind as we stepped outside.

Afternoon Tea Review, Raemoir House Hotel As chief bridesmaid to my sister, one of my duties was to organise a girly get together a couple of weeks before the wedding. I had covered the hen night and the bridal shower so I decided on a civilised champagne afternoon tea, and where else to enjoy it than ‘the Claridges of the North’, Raemoir House Hotel.

The afternoon began with the beautiful drive across Aberdeenshire to Raemoir House, which is nestled in glorious Royal Deeside.

We arrived at Raemoir with a friendly greeting from owner Neil Rae, who invited us into the grand drawing room, an opulent room with Victorian tapestried walls, 19th century family portraits and the welcoming

scent of a real log fire. We took our seats by the fire, where we also had a striking view of Scolty Hill.

The first of many treats began with a cool, crisp glass of champagne, which went down a treat. This was accompanied by a selection of delicate finger sandwiches fit for a Victorian lady and a dainty cake-stand filled with a selection of wonderful sweet treats, including mini millionaire’s shortbreads.

The

Cowshed

Sometime names can be deceptive. Just as Demetria Guynes turned into Demi Moore, the Cowshed has turned into one of the best new restaurants in the North East. Situated next to an old byre, the restaurant’s atmosphere is relaxed; the service professional and the views are almost, but not quite, as good as the food.

Michelin trained Head Chef Graham Buchan presides over a kitchen that turns out the best modern Scottish cooking. Dishes that give an inventive twist to top class ingredients are complimented by a well-priced wine selection that includes plenty of decent options available by the glass.

The food is so popular that many of the diners have signed up for classes at the newly opened cookery school.

Lunch is particularly good value and the tasting menu is well worth the trip. It’s no wonder the North East’s foodies reckon the Cowshed is a name to be reckoned with.

Why did you decide to become a chef?

Looking back, my mum was a huge influence.

She got me involved making homemade soups, stews and roasts. When I was twelve I began a job washing dishes at the old Courtyard Restaurant and found the chef really inspiring.

Pretty soon I was learning more than just scrubbing pans.

Tell us how you came full circle to being Executive head chef of Beetroot Restaurants Ltd. After many years in the trade, it was my dream to run my own place, so we built up La Stella. After adding The Courtyard, I moved into executive Head Chef role overseeing our highly skilled teams of chefs.

What tips do you have for Trend readers on making the most of seasonal Scottish ingredients? There are some brilliant food magazines that are full of seasonal ideas. I’d also suggest exploring local farm shops and farmers markets as they supply amazing local produce. Spring is one of my favourite seasons with many delicious ingredients. Buy some rhubarb and try something different with it!

What do you love about cooking and your job? Absolutely everything! I love innovation, new ideas, the amazing produce we have to work and I love working with my Dad. I can honestly say the restaurants would not be as successful as they are without him to motivate everyone. He’s a truly great man!

What are your plans for the future?

My main objective is to grow Beetroot Restaurants and develop it into a training ground for aspiring young people who fancy a shot at the industry. I also want to write a cookbook and do more charity work.

Ever had a culinary disaster? Well, I did set a kitchen on fire while working in a city centre hotel just an hour before 200 people turned up for a wedding reception. Not my greatest moment.

Pan fried King Scallops with home smoked Venison, braised Puy lentils, beetroot slaw and lemon grass emulsion for four people

You’ll need something to hot smoke the venison. Smokers can be bought online or you can make your own with some woodchips, a metal tray and a cooling rack.

12 King Scallops – roe removed, 500g venison loin, 150g Puy Lentils – soaked in water for 2 hours, 2 shallots, 1 garlic clove, 200ml light fish stock, 100ml white wine, chopped flat leaf parsley, a large beetroot, tarragon sprig, a pinch of caster sugar, 25ml champagne vinegar, a bunch of Lemongrass, 2 egg yolks, a lemon, salt and pepper, 125ml Ola oil.

You’ll need something to hot smoke the venison. Smokers can be bought online or you can make your own with some woodchips, a metal tray and a cooling rack.

Slowly heat the oil in a pan with the bashed lemon grass, grated lemon rind & juice. Cool this mixture to room temperature. In a blender add the egg yolks & very slowly add the lemongrass infused oil & emulsify at high speed Finely dice the shallots and sweat until soft in a pan. Add the lentils and wine then reduce for ten minutes. Now add the fish stock and cook until the lentils are soft and the liquid has evaporated. Allow this to cool then add the parsley and check seasoning.

Season and seal the venison in a frying pan, then slowly smoke it for around an hour.

To make the beetroot slaw rate the raw beetroot and in a bowl mix with the tarragon, champagne vinegar, sugar, then season and add a glug of Ola oil.

Finally, dry the scallops off then cook in a very hot pan with a little of the oil until golden. Check the seasoning, assemble the dish and serve.

50ml Drambuie, 4 lemon slices, 12.5ml Honey, 8 mint leaves, Ginger Beer, Cracked Black Pepper

Muddle the lemon in a tall glass with the honey. Clap the mint between your hands (releasing the oils and aroma) and place into the glass. Add a scoop of crushed ice and the Drambuie, and churn all the ingredients within the glass thoroughly. Add more ice and a dash of ginger beer. Finally garnish with a mint sprig and the cracked black pepper.

We wanted a home that made the most of the views and gave a similar feeling to being aboard a luxury yacht.

the house on the bay If you live in ellon, cruden bay might not seem the most obvious place to build a holiday home, but local couple Nina and Graham Mackie loved the sandy beaches and sweeping sea views that they did just that.

The family had owned a chalet overlooking the golf course and out to sea for more than twenty five years, but decided to replace it with a more substantial home where they could entertain, relax and play golf.

“When we had the house built, we wanted a home that made the most of the views and gave a similar feeling to being aboard a luxury yacht. Our brief to Jane as our interior designer was to design something stunning and different and she’s certainly done that!” laughed Nina.

Interior designer Jane Davidson of Jane’s Design Studio in Stonehaven takes up the story, “As an interior designer, I get to know what each member of the family likes and take inspiration from that, from the sea and the idea of the house being like a yacht. We used lots of natural colours, rich creams with accents of turquoise, set off by the wooden floors.”

“I was keen to make the most of the open, airy nature of the space and the roof terrace, but without making things too sterile. Interiors have to suit the people who live in them and reflect their lifestyle and taste to be successful.”

“We had a number of pieces, such as chairs, headboards, lamps and the glass panels in the dining room made especially for the house. We know so many craftspeople and have so many contacts in the industry that commissioning bespoke pieces needn’t be very expensive and it can really lift a room out of the ordinary,” Jane continued.

The sumptuous master suite was inspired by Nina’s love of old school Hollywood glamour and Audrey Hepburn’s style and she confides that her friends gravitate towards her girlie dressing room during parties. While her son’s room features more masculine neutral tones and her daughter’s room sparkles with mirrored furniture and purple glass lamps, the guest bedroom is a serene oasis in silver, red and black.

“Whether I’m designing an interior for whole house, or just helping a customer find the ideal curtains or table lamp, my goal is to help make their home unique, just as special as the customer themselves,” Jane sums up.

So what’s next for Nina? “Well, we’re just enjoying the house for now, but I love Jane’s work so much that we’re already looking at a few projects for our home in Ellon!”

Recently I received an invitation from Mike Ward the Curator of the Grampian Transport Museum based at Alford in Aberdeenshire. I was intrigued to say the least and surprised to see the range of vehicles on display. I wandered out onto their track to have a look at the car they had prepared for me to test. It was a great pleasure for me to see a 1935 Morris 8 Tourer which had been lovingly restored by Sandy Shirras. As I drove this beautiful old car around the track,

it made me realise how far the motor industry has progressed in the last 70 years, technology has certainly bounded forward.

The Morris Tourer capacity of 956 CC, with three forward gears and amazingly for its day it has hydraulic brakes. I cannot give you a 0 - 60 speed, as I don't think the Tourer does more than 60 mph. It was a real treat to drive, the gearbox and suspension worked really smoothly. Life in 1935 must have been quite pleasant, certainly less stressfull!

All too soon I jumped back into my modern car and back to the real world of potholes and traffic jams.

The Grampian Transport Museum opens doors on 1 April and I urge you to take some time out to visit.

Cracking Craighaar If you’re based out near the airport, you’ve probably already discovered the delights of the Craighaar Hotel. If not, then it’s definitely worth a visit.

The Craighaar’s newly refurbished restaurant features custom wallpaper with restful views of Deeside as well as cosy banquettes. The menu benefits from the Brudolff Group’s policy of local purchasing, with the head chef encouraged to find the best local ingredients and suppliers. Everything is made from scratch and it shows in the careful presentation of dishes and the comprehensive menu. The staff say you won’t find a better steak in the whole of Aberdeen, and the warm chocolate brownie with vanilla ice cream and berries is definitely worth breaking a diet for. It’s not surprising to find that the restaurant is packed with regulars who enjoy lunch there several times a week.

What lifts the Craighaar out of the ordinary is the amount of care and attention to detail exhibited by all the staff, many of whom have worked there for years. The atmosphere is relaxed, welcoming and informal.

It’s not just a great place to eat, though.

The majority of the fifty three bedrooms have been redecorated in rich imperial tones of purple and gold, with the galleried suites being up next for a makeover. The ground floor offers wet rooms, with traditional bathrooms in the first floor rooms.

The Craighaar is an ideal spot for corporate events or private functions.

The library -all mellow wood panels and leather bound tomes - can seat twenty two round the outsized wooden table and provides a sophisticated backdrop that lends itself equally well to special family occasions or business meetings.

It’s a cracking place for a stay, or an awayday.

Take a short course at Gray’s Ever fancied being a painter or perhaps learning to throw a perfect pot, maybe you’d love to take photos you can be proud of or want to make your own jewellery, clothes and accessories? If so, then the short courses at Gray’s School of Art are the ideal starting point.

David Henderson, Teaching Fellow & short course co-ordinator, explains, “Our courses encourage new ways of thinking, explore experimentation with craft and various materials, and fulfil the fundamental human need to be creative”.

“Each course provides students with the opportunity to develop their interest in art and design. The students are taught by specialist staff, many of whom run their own businesses, who offer practical advice and instruction together with personal encouragement in discovering individual creative skills.

There are courses to suit everyone from complete beginners to those with some experience, with prices ranging from £120 to £400. The school offers a wide range of subjects including Ceramics,

Carolina has a head for style‌ Hair accessories designer Carolina Samara may only have been in Aberdeen for ten months, but her fabulous fascinators and striking bejeweled hairbands have already been seen on some of the city’s most stylish heads.

Carolina came to Aberdeen by way of Honduras and has roots in both Latin America and the Middle East.

Her husband’s work in the oil industry brought her to the Granite City and we caught up with her when she had just returned from scouring the souks of Muscat for materials.

Carolina explains, “On my various journeys I see different textures, colours and delicate fabrics which I incorporate into every design. On my travels around the world I have collected many samples of jewelry, semi precious stones, and vintage brooches which I use in my handmade headbands and fascinators, making each one unique”.

“I started designing with a friend who is a famous fashion designer in my country. We started a brand called La Crème de La Crème. After I got married, I moved out of the town and I started my own label, Carolina Samsara Couture Accessories.

“My designs are for fashionistas, for people who like to make a statement; for those who always stand out! Most of my designs are available through my website, but there is a small selection on show at Rosie’s at Holburn Street”.

Carolina also works with clients on bespoke designs, perhaps using their own vintage jewellery or designing a piece to finish off an outfit for a special occasion. Unlike picture hats, which can be difficult to carry off, particularly for the petite, Carolina’s creations add elegance without encumbrance. These would be perfect for a summer wedding or graduation, with the added bonus of knowing that no one else will be wearing the same thing!

Carolina is keen to expand the business, “In time, I would like be able to distribute my label headbands and fascinators in the best known boutiques in the UK and Latin America, and would like to expand my label's by creating my own handbag line”.

If Carolina’s bags are as good as her hair accessories, Trend will be first in the queue.

If you crave cappuccino, don’t settle for black coffee. If you want a pair of Jimmy Choos, then Hush Puppies simply won’t do. And if you want a family holiday that your kids will never forget, there is no substitute for Disney. Unwilling to settle for anything less, I recently set out with my family for a three-night stay at the Newport Bay Hotel in Disneyland Paris.

You’ve only to clear the entry gates of Disneyland Paris before your senses are bombarded with the ‘Disney Magic.’ Within the first hundred metres, you’ll visit an old-fashioned American village complete with steam train, witness a spirited live street performance with characters ranging from Donald Duck to Buzz Lightyear, and explore a giant pink fairytale castle fit for any respectable princess and even a fire-breathing dragon or two. It is this ability of Disney to transport us to places that only exist in the movies – their movies – that brings fifteen million visitors through the gates each year.

If you’re looking for theme park rides, Disney has them covered – literally. So efficient is the Disney machine at managing their set, they have even succeeded in eliminating the noise pollution that is characteristic of most theme parks by covering their world-class rides and rollercoasters in elaborate sound-proof outer shells. Whether defeating the evil Emperor Zurg in ‘Buzz Lightyear’s Laser Blast’ or plunging ten stories in a haunted elevator in ‘Tower of Terror,’ you will lose yourself in the illusion created by these fully enclosed sets 64

where even the ride operators are so dramatic, they make Lady Gaga seem unspectacular.

If you’re anything like me, the rides eventually get the better of your equilibrium, which is the perfect time to visit the neighbouring Walt Disney Studios, where the focus is more on theatrics than thrills.

Here, you’ll go behind the scenes, hurtling through space in a scene from Armageddon and braving a studio tram tour that is suddenly interrupted by earthquakes and tidal waves. But if there’s only time for one live show, it has to be ‘Moteurs… Action!’ – a tyresquealing extreme stunt show in which highly skilled stunt drivers recreate an explosive high-speed car chase right before your eyes.

There are those who will say that to get the full Disney experience, it has to be Florida, but I disagree.

If you’re looking for a short break from Aberdeen, Disneyland Paris is perfect. Think of it this way – it’s like ordering a Grande instead of a Venti. The coffee’s the same and although you’re getting a bit less of it, it’s still probably more than you need.

PERTHSHIRE > words by ALISON DANIELS I’ve always avoided the Trossachs, possibly because it sounds like a skin disease brought on by too much tartan and too many midges, but choose the right time of year and you’ll come home with an itch to visit the area again.

We pootled down through some of Scotland’s most spectacular scenery before meandering through Crieff and Lochearnhead, and drifting into Callander.

Callander seems to be Scotland’s knitwear Mecca, but it also offers a good sprinkling of delightful galleries, the Hamilton Toy Collection, old-fashioned sweetshops, bookshops and crafts retailers. Don’t miss Lady Kentmore’s Antiques, an eclectic emporium of antiques and collectables – everything 66

from old vinyl to vintage Dior costume jewellery – which could keep you enthralled for hours.

We stayed at the luxurious Roman Camp Hotel in Callander - a charming pink baronial pile which is set amidst 20 acres of gardens on the banks of the River Teith. The enviable library, with its wood panelling and secret chapel is a brilliant place to chill out and relax. The bedrooms far exceed the expectations of a Scottish Country House hotel and the formal three AA rosette dining room serves some of the best fare in Scotland.

Chef Ian McNaught’s six course tasting menu is sublime.

There’s plenty to do for active types, with the hotel being able to organise

fishing, and there’s shooting, trekking and plenty of hills on the doorstep.

Those concentrating on developing a glow might do well to head for a tasting tour of the Glenturret Distillery, or combine a trip on the Loch Katrine cruisers with a brisk lochside hike or bike ride. Nature lovers will be in their element at Inchmaholme Priory where you can combine history with birdwatching.

Whatever you choose, the Roman Camp Hotel certainly makes pootling through Perthshire deeply enjoyable!

Under normal circumstances, an invitation to strap my feet to a board and hurl myself down a slope would sound about as sensible as trying to drive a car with my hands tied behind my back. But these were not normal circumstances – firstly, because the invitation was for a private snowboarding lesson with a capable instructor from Aberdeen Snowsports, and secondly, because my kids wanted to hurl themselves down the slope and I didn’t want to spoil their fun.

Having driven past the very impressive, and very high, main slopes of the centre at Garthdee before, I was relieved to learn that the comprehensive dry ski 68

facility boasts a much less terrifying nursery slope. It was here that the children and I met Beth, our instructor.

After running through some essentials, like foot placement and stance, she taught us one thing that every beginner needs to know – how to get up after a fall, the biggest challenge of which is keeping your dignity intact.

Whether you fancy your chances on a snowboard, or prefer a pair of skis, Aberdeen Snowsports is the place to go. They offer everything from private to block lessons, holiday camps, parties, tubing sessions, and even an airbag session, for the criminally brave. If you fancy a day on the slopes, don’t bother checking the ski report – at Aberdeen Snowsports, the conditions are always good.

I would like to say that by the end of the hour I was ripping and shredding like Shaun White, but I need a few more lessons first. What I can say is that, using Beth as a human brake, I made it down the entire nursery slope without falling.

Pluscarden Abbey lies just six short miles from Elgin, but when you get there it feels like you are miles from anything you’ve seen before.

The abbey – founded in 1230 – is the only medieval monastery in Britain still being used for its original purpose.

Pluscarden is hugely important as a piece of historical heritage, but even more so as a home to a small, working community of Roman Catholic Benedictine monks.

Knowing this, I arrived at the abbey, parked at the gates, and set off up the drive with no idea of what to expect. For a short while beyond the gates there were just huge, ancient trees. After a few minutes I cleared the trees, and was

faced with a vast expanse of lawn and the entire East gable of the abbey.

If I had seen nothing but that view, the visit would still have been more than worthwhile. As it turned out, Pluscarden had a lot more to offer.

Stepping inside was like stepping back about seven hundred years. The place was vast – so vast that it is a stark representation of its founders’ dedication. The stone walls and floors mix with stained glass windows, arches and elaborate carvings, creating something that is both grand and very austere.

Pluscarden’s greatest strength though, lies in the welcoming presence of the white-robed monks. They bring the

history of the place to life.

The services that are sung in Gregorian chant have the profound and incredible effect of making the passage of the last six or seven hundred years seem nonexistent, narrowing the gap between past and present to almost nothing.

There are plenty of places that give you an insight into medieval life. There are very few that make you feel like you’re part of it.

I just wanted to let you know how great your fashion feature in the February issue was. As someone who doesn’t enjoy shopping much, but does like clothes, I can’t tell you how good it was to see grown up styles that I could actually wear without looking like an overgrown fourteen year old. You even managed to tempt me into town to look for a new red shift dress, rather than buying online.

I thought Haddo House made a super backdrop to the shots, too, lending them an easy elegance. The hair and makeup was superb and the photos really special.

Boars Head Kinmuck Hi guys, So many changes at the Boars Head Restaurant you have got to come down to see... I am now the full time chef. I use the term “chef” lightly as I am not trained in the art. I do however believe in good, home cooked food and work my socks off to make sure that is exactly what I am giving you... my food is prepared with love, respect and a certain southern (American) style.

I have two menus running at the moment from Wednesday to Saturday. There is my restaurant menu that has your favourites like fish and chips and steak and ale pie alongside some new faces like brown sugar crusted pork and white wine and chicken risotto. The second menu is my bar menu and has now become known as the boars mug menu. Comfort food like Mac and cheese, corn beef hash and Louisiana’s own jambalaya come served up in a Boars head mug as a snack.

So please come in and try the Boars heads new food. I really hope you won’t be disappointed.

Revamp Party Hilton Aberdeen Treetops welcomed 2011 by with the completion of an extensive refurbishment of the hotel. The hotel received a complete overhaul of its lobby lounge areas, reception space, bar, restaurant and ballroom. Guests enjoyed a night of food and entertainment in the newly refurbished ballroom to celebrate.

Local hero’s silver anniversary

Where were you on April 1, 1986? The north-east’s very own Open golf champion, Paul Lawrie MBE has the date seared on his memory because that is the day he turned professional.

The taxi driver’s son was a lad of only 17 and was taken on by Doug Smart, the pro at Banchory. “I can hardly believe it’s 25 years since I made the big step,” says Paul. “Mind you, in the early days I seemed to spend as much time with a Hoover in my hands as I did with golf clubs but that was all part of the job in a pro shop.”

Nevertheless, Paul soon saw his hard work on the practice ground rewarded when he went out and won his first event as a

pro- the Moray Seafoods Open at Buckpool.

His great short game had earned him the nickname of “Chippie”.

Paul’s path to winning the holy grail of golf, the Open championship at Carnoustie in 1999, included being tied for sixth place at the event six years before at Royal St George’s in Kent, which earned him a tidy sum of £33,166.

The Open returns to Sandwich in July and Paul will be hoping to repeat his feat of holing out for an eagle two at the 17th in his final round there in 1993.

At 42, six-footer Paul still travels the globe but is most at home with his family; his wife

Marian and their sons, Craig and Michael, in what estate agents would call a leafy suburb of Aberdeen. He has also given much of his spare time to his foundation for young golfers.

So, is there anywhere else on the planet that Paul loves dearly? Yes, he is a season ticket holder at Pittodrie and loves watching the Dons- honest!
