EDITOR Hello again, Now that some of the restrictions that had been placed on us have been lifted, things are beginning to get back to normal. Well, a sort of normal. Some of us are back out there, shopping, popping into the pub or meeting friends for dinner, but many of us are still wary. For many of us, the world is now a scarier place and we’ve become used to cocooning ourselves at home. Isolation leads to a disproportionate level of fear, anxiety and concern for the future. It comes at a price. New figures suggest that one in six people in the North East is on anti-depressants. That’s astounding. Just as we have followed lockdown regulations, we now need to think about re-emerging. We need to find ways in which we can support our wider communities, both socially and
economically. If you don’t feel ready to return to a restaurant, then support them by ordering a takeaway. Go for a walk in the countryside. Buy from a local independent business online if you’re not yet comfortable with visiting the store in person. See a friend. Buy a gift voucher or two, or support a local charity which helps the less fortunate. Gently ease yourself back into the world by planning something for later in the year. Book pantomime tickets or a craft workshop, plan a weekend away, or perhaps get tickets for Trend’s festive Baubles and Bubbles at the Marcliffe on November 27th? When you’re ready to join the world once more, we’re there for you. Everyone at Trend

Loch Muick Circuit, Ballater Queen Victoria spent many happy days here with her husband Prince Albert basking in the tranquility of the surrounding area. She loved this place so much that after Albert died, she built the beautiful Glas-allt-Shiel lodge as a sanctuary where she could mourn away from the public eye. The trail stretches for 7.75 miles and it takes about 3 hours to finish, so make sure you have plenty of water and a light lunch packed with you.

Clachnaben, Glen Dye Clachnaben is a gradual hike with ancient ruins along the way and the views at the summit are breathtaking! There is also landscape diversity, from ferns and bushes at the start, to tall trees in the middle of the route and then back to bushes at the rocky top. Once you get on top of the Clachnaben, it might get a bit windy so make sure you are well equipped with a wind breaking jacket and a thermos filled with tea.
Stonehaven harbour to Dunnotar Castle Dunnottar castle is possibly the most enchanting of all Scottish coastal fortresses, perched on its sea cliff. Follow the route from the picturesque harbor to the dramatic War Memorial, and on to Dunnotter itself. The walk is pretty spectacular as the pathway takes you through poppy fields along a coastal road with dramatic sea views. Worth every minute of the climb!
Bennachie Bennachie is one of northeast Scotland’s most recognisable landmarks thanks to a very distinctive shape. People have lived here for thousands of years in a fort carved into the hilltop and on its rocky slopes, ruins of their existence and activity can be found scattered along the area, making it an even more attractive place to explore! There are 3 walking trails to follow here – the gentle forested Discovery Trail, the moderate slopes of the Colony Trail and the ruins of the ruined houses of the colonists and, Mither Tap itself, which rewards hikers with magnificent views and impressive Pictish fort on the top.

The elegant Haddo House always reminds me of the Palace of Versailles. The coffee shop in the grounds has moreish hot chocolate and scones and there is loads of land for dogs to run around on the estate. Walk up until the hill, past the golden gates and cross the footbridge. Follow the path at the north end of the main lake and you will meet the most beautiful views of the calm waters. There are two large Wellongtonia trees in the garden were planted by Queen Victoria whose stay at Haddo persuaded her to purchase Balmoral as her summer home.
Most of these walks should now be accessible, but do check that access is permitted before you head out.

Cults’ Unique Boutique has reopened Sonya Angus, owner of the Unique Boutique in Cults, marked her 50th birthday by re-opening the popular fashion and gift shop back in June. Although she’s firmly focused on customer safety, Sonya has worked hard to restore the boutique’s stress-free shopping experience. She explained, ‘There’s no red, yellow and black tape here. Refillosophy is a new store on Albyn Grove which aims to get Aberdonians refilling grocery containers and reusing household packaging to reduce waste and live more sustainably. Owner Gina Adie is hoping to foster community spirit with fresh local produce, products, billboards promoting local events and decorations celebrating the North-East's natural beauty. Mum-of-two Gina has been making the effort to be more environmentally friendly since her first child was born 16 years ago, when she chose to buy reusable nappies and baby wipes. Gina explained, ‘We all live busy lives, but making conscious choices when it comes to the cleaning products that we use, or the amount of waste created from grocery packaging can make a huge
difference. The idea for Refillosophy has grown from there. It’s all about making it easier for busy people to reuse and refill, rather than simply recycling. The Lonach Highland & Friendly Society sends hampers to the elderly The society which stages the annual Lonach Highland Gathering and Games in Strathdon, has assembled forty seven hampers containing food, basic household essentials and a few treats to help raise morale. The hampers were distributed to the oldest members of the society.
and Friendly Society, commented, ‘The society wanted to do something that would lift the spirits of our older members. The hampers were a small gesture. They have been a huge hit and really well received, bringing many smiles.
This year’s gathering, normally held on the fourth Saturday in August, has been cancelled, but the organisers got together with the Howse family who run the Spar Shop in Bellabeg.
‘Rural shops and post offices - such as in Bellabeg - are important to their communities, which has been shown in recent months. We all need to use them to ensure they thrive and prosper.’

We asked some of the city’s best chefs to share their favourite recipes for restaurant dishes you can make at home. . .
Make your own Chez Mal Burger Mal’s burger is perfect for an informal family meal for four. Ingredients 200g ground beef patty (70 % beef 30% fat) 4 rashers of streaky bacon 4 slices gruyere or cheddar cheese 4 brioche burger buns 1 baby gem lettuce 1 beefsteak tomato 1 red onion 1 pickled gherkin Salt and pepper Rapeseed oil
Method Light the chargrill or preheat oven to 180oC. Combine all burger relish ingredients together in a bowl and set aside. Season the burger on both sides with salt and pepper and drizzle with a little oil, before placing on the chargrill or in a hot frying pan for about 2 minutes on each side to seal the beef on both sides. Place the burgers on an oven tray and place in the oven for 8 mins until the centre reaches 72oC. Quickly cook the streaky bacon on the chargrill or in the same frying pan until nice and crisp. Set aside.
Burger relish (4 portions) 400g ketchup 200g French’s mustard 1x small red onion fine diced 1 table spoon chopped parsley
While the burger is cooking, toast the brioche buns lightly and spread the relish on the base of the bun, saving some for an extra dipping pot. Cut the base of the baby gem
and remove the outer leaves and wash, place one leaf on the relish and bun base. Slice the tomato into 2cm slices across and place 1 slice on top of the lettuce, then place thinly 3 to four rings of sliced red onion on top then some sliced gherkin. Slice the gherkin into 4 and lay on top of the onion rings. Bun prep done! By now the burger should almost be ready, if so, place the bacon back on the burger and the cheese on top and put back in the oven for a minute or two for the cheese to melt. Place the burger on the bun base, add the top and hold it together with a skewer. Serve with chips.

Recreate Poldino’s Spaghetti Carbonara for 2 There are so many different stories concerning the origins of spaghetti carbonara and what should be included in the recipe. Whatever you believe, there’s no doubt that Poldino’s version tastes great. Ingredients 1 tbsp olive oil ½ white onion - finely chopped 1 garlic clove 100g pancetta or smoked bacon – cubed 2 egg yolks Plenty of grated Italian hard cheese. Parmesan or Pecorino is fine Freshly ground black pepper A splash of double cream – optional Finely chopped fresh parsley – optional
Method Heat the oil over a medium heat. Add the garlic and cook until well coloured on both sides, then remove Sweat off the onions and cook the pancetta until any fat has been rendered down. Meanwhile, cook the spaghetti in a big pan of salted boiling water. If you were to use some cream now is the time. Add this to your pancetta and onions along with the parmesan and a good amount of cracked black pepper. Bring this up to heat and let reduce for a little while.
Once the pasta is ready, drain and stir though the other ingredients already in the pan. Add your parsley and eggs and stir well with a fork. Split between two bowls and finish off with a sprinkle of grated cheese and serve.

Bake a batch of No.10 Bar & Restaurant Chocolate Brownies No.10 suggest that this makes 20 large portions, but doubtless a couple will disappear before serving. All good chefs know you have to taste as you go along! Ingredients 450g dark chocolate buttons or chopped up chocolate 150g white chocolate buttons or chopped up chocolate 113g cocoa powder 450g diced butter 8 eggs, whisked 900g light brown sugar 225g plain flour 4g baking powder 3g salt
Method Preheat the oven to 180oC. Melt the chocolate in a large bowl over a big pan of simmering water, then add the cocoa powder and butter and melt together. Remove from the heat and whisk in all the other ingredients, mixing well. Bake in a cake tin that has been lined with grease proof paper. It should take about an hour. The insides should be a bit gooey and the outside crisp. No.10 serve this with a salted butterscotch sauce, but you could try salted caramel sauce, chocolate sauce, a big dollop of ice cream or cream.

As the haze of summer slides slowly into the mellow days of early autumn, make the most of seasonal game, mushrooms, orchard fruits and hedgerow treasures.
HARVEST Eat on the Green’s Craig Wilson SAVOURS THIS SEASON’S TASTIEST PRODUCE
Use the last of the season’s juicy berries and incorporate them into your breakfast, sprinkled over granola, topped with natural yoghurt and drizzled with local honey. Strawberries are great with the soft fragrance of elderflower, which can be found in abundance in hedgerows and offers a fresh twist on desserts like pannacotta. As the game season comes around, venison’s rich, dark flavour goes really well with fresh redcurrants, rosemary and red wine. It’s best to treat game simply. Add a few ingredients and cook it in a foil parcel to seal in all those delicious juices and keep the meat succulent. Rest venison for at least 5-10 minutes before serving.
Buy what’s in season as this will give you maximum flavour. Wild mushrooms are great at this time of year. Try a simple soup which doubles up as the base for a pasta sauce, add cream cheese to wild mushrooms for an incredible vegetarian pate. Making things go further saves time in the kitchen and creates meals the whole family can enjoy. Damsons, brambles, pears and apples are perfect for warming crumbles or sponge puddings. Dried fruits such as raisins and apricots are often a staple in the store cupboard, and provide the ideal accompaniment to Moroccan or Indian recipes. The burst of sweet fruit against the fiery heat of chilli and milder spices such as cumin or turmeric, gives a great balance. Don’t be scared to experiment with different ingredient combinations, cooking is all about fusion of flavours so have fun!

It’s partly about sustainability, partly down to a growing appreciation for good design and also that our homes are increasingly important to us, especially if we have been working from home in recent months. Design classics are pieces that adapt well to any home, often combining strong shapes, excellent craftsmanship, outstanding functionality and innovation. For a piece to become an icon it has to have stood the test of time and been enjoyed and lauded, not only in the era it was created and popularised, but also for decades beyond that. They are timeless designs that work well in almost every setting.

Many of the most iconic furniture pieces were designed by architects who wanted the interiors of their building to echo the exterior. They wanted their design to be holistic and so created some of the most iconic furniture, particularly chairs. We’re all familiar with the Eames Lounger, Mies van der Rohe’s Barcelona chair, Philippe Starck’s Ghost chair or Arne Jacobsen’s Egg chair, even if we don’t know the names of the designers who created them. Originals can cost many thousands of pounds, but there are contemporary versions which vary from faithful high end reproductions to cheaper copies in less expensive materials.

When it comes to design classics, only buy pieces that you love. They will undoubtedly be more expensive, but they will last a lifetime and may even be passed down to future generations. o fashionable home is complete without a houseplant or two. Not only do they look great, but they are great for both your health and the environment. Kirsty McLean of The Garden Design Company Scotland shares how to choose the best house plants for your home… Houseplants reduce carbon dioxide and pump oxygen into the air. Some act as air filters, increasing humidity and absorbing volatile chemicals such as toluene, xylene and benzene, which are emitted from furnishings and household cleaning products. Just having a plant on your desk can reduce airborne dust levels, reduce stress levels, increase work productivity, reduce blood pressure, increase attention span, and even reduce fatigue and headaches. All that and they look great! Here’s my pick of houseplants that are easy to look after and can be found in most garden centres…
SPIDER PLANT
PEACE LILY
Once you have one spider plant, you’ll soon have many more as you can repot the baby spiderette plants that grow from them. Spider plants are happiest in shade, partial shade or indirect sunlight. Don’t overwater.
The peach lily need to be kept moist and well drained. It’ll also need feeding around every six weeks
MONSTERA Monstera can grow very tall and is also known as a cheese plant because of the holes in the leaves. Prefers bright but indirect sunlight. Water once a week and spray the leaves.
DRACAENA OR DRAGON TREE Another plant that can grow up to 8 feet tall. Dracena likes a bright spot in indirect sunlight.
FICUS OR WEEPING FIG Ficus likes bright but indirect sunlight away from drafts. It will sulk if you shift it around as it reacts badly to change.
RUBBER PLANT Another old favourite. Look for one with variegated leaves for extra interest and keep it in good light. Keep the soil moist and spray leaves every now and again.
HEDERA HELIX Hedera helix is an ivy, which is easy to grow and works well in a hanging pot or where it can grow up a support. It prefers cool moist air and needs to be protected from drafts.
BOSTON FERN Another good choice for hanging pots. The Boston fern’s airy foliage likes a cool position with high humidity and indirect light.
MOTHER-IN-LAW’S TONGUE The spiky Sansevieria prefers shade or partial shade. Keep it damp but drier in winter
BAMBOO PALM OR LADY PALM This one is great for a well-lit bathroom as it loves a humid atmosphere.
COMMON ASPIDISTRA Totally retro, slow growing and much loved by the Victorians. It can be tricky as it shouldn’t be allowed to dry out but also dislikes been overwatered.
KENTIA PALM This palm prefers bright indirect sunlight but will tolerate shade. Allow the top of the soil to dry out before watering, do not overwater.
LAVENDER Fills the air with perfume and needs as much natural light as possible. Drench when watering but drain completely and allow the soil to become slightly dry before watering again.
ALOE VERA Best kept in a sunny location and don’t overwater.
CACTI & SUCCULENTS Come in a huge variety of shapes and sizes, but mustn’t be over watered. Ideal for people who go away of business trips or forget to look after their plants as they will survive without water for some time. Whether you have a tiny space of a windowsill, or want to fill a space with a huge specimen, there’s a houseplant that will suit you.

The scenery around the small town of Gairloch is spectacular and Sands Campaign and Caravan Site is the perfect place for a family holiday that’s fun-packed and fuss-free. There are plenty of superb beaches in the area, as well as the Torridon Hills and the unmissable Applecross Inn, famed for its remoteness and local ales. All bookings must be in advance at present.
Mallaig is a small but bustling town with plenty of atmospheric pubs and friendly locals to enjoy a drink with. You can go island hopping as Rum, Eigg, Muck and Skye are all just a ferry ride away. Stay in luxury at Driftwood House, with spectacular views over Camusdarach beach from your balcony hot-tub. Go out of your way to visit The Old Forge, which is on the Knoydart Peninsula. It’s the UK’s most remote pub. It can only be reached by an 18 mile mountain trek that takes a couple of days or a seven mile sea crossing from Mallaig. No contest! With fantastic local ales, a charismatic bar, limited Wi-Fi and no phone reception you’ll feel as though you’ve taken a step back in time. Keep in mind that there’s still some uncertainty about when many holiday venues, hotels, restaurants and cafes will reopen, so be sure to check ahead before booking a trip.

ince taking over the business in 2017 Charlotte has become renowned for creating stunning and high quality festive displays for clients across the North-east, Dundee and Edinburgh who want to embrace the magic of Christmas. Working with her dedicated team of elves from her workshop in Banchory, she spends the majority of the year coming up with creative ideas and bringing together samples, before sourcing decorations and installing them. Her projects include everything from designing beautiful garden lighting to embellishing a tenbedroom house from head to toe. She explains, ‘When I had my daughter, I decided to take some time out from my busy role in the events industry to find out what I really wanted to do. The reason I got into this business is I used to put five trees up at home so I thought it would be a great idea to make it a business. I did some research and found The Christmas Decorators and I loved what they did.’ Prior to buying the business in 2017 Charlotte worked in high profile events for nearly 20 years. Past events that Charlotte has had a hand in include the 2007 Free at the Dee open air concert in Aberdeen, Aberdeen’s Hogmanay Street Party from 2004 to 2008, a number of high profile corporate
dinners and conferences and pharmaceutical sales conferences hosting 1500 delegates over five days. She and her team are now starting to prepare for a busy few months as commercial and residential clients start to call on their services. Although much of the year is taken up with the design and conceptualisation of ideas the installation period is only 8 weeks long. During early November Charlotte and her team mainly install commercial clients with residential homes starting at the end of November and running right through to 23rd December. Her bespoke service includes design, installation, maintenance and removal. Four of Belmont Street’s leading restaurants and bars have teamed up to ask the council to license on-street seating areas, effectively turning the pedestrianised road into a continental style outdoor shared social space. Siberia, Melt, The Tippling House and Latinway are four independently-owned food and drink businesses eager to see the city centre, and specifically Belmont Street, evolve into a shared, safe social space, comparable to the likes of Ashton Lane in Glasgow and Rose Street in Edinburgh. There are similar case studies of pedestrianised leisure areas around Europe which have proven to drive footfall, regenerate and boost local trade. City architecture firm Albyn Architects have created artist impressions of the areas around the businesses to demonstrate the potential that the streetscape has to offer. Stuart McPhee, Director at Siberia, explained, “Cafe culture works. Cities such as Copenhagen and Stavanger, with climates similar to ours, engage with the concept. We executed a poll last week that had 297 respondents. Of those, 78% of those were in favour of a project like this, but understood that businesses needed to be listened too and issues ironed out. We are really encouraged at such a collaboration on our side of the street and to see other businesses
ready and raring to engage with it, such as ‘Cup’ and ‘Books and Beans’. Mechelle Clark, owner of Melt added, ‘There’s a massive sense of community on Belmont Street and it’s great to come together alongside the other businesses to welcome customers back safely to the heart of the city.’ Adrian Gomes, owner of The Tippling House, noted, ‘We're exploring a road-side seating area, working in partnership with street food outlet Latinway, to offer licensed areas outside both premises serving our drinks and their food. The support of our guests and regular Belmont Street users is crucial to this, so I urge everyone to consider the plans with an open-mind.” If given the go-ahead, the four businesses hope that this could be in place by the beginning of August.

Bikes offer teenagers more freedom and independence, which is increasingly important given that children are afforded far less roaming distance than a generation or two ago. For younger children, learning to ride a bike without stabilisers is definitely one of life’s early milestones. Smart trikes, a pushchair with pedals, are often the first cycle a baby experiences. Many combine a shopping bag and sunshade and can be converted as a child grows and is more mobile. Toddler balance bikes are a relatively new idea in the UK. They don’t have pedals or a drive chain, so it’s all about foot propulsion and learning to steer. Most balance bikes are designed for children of two and over and are made of wood or metal. Choose a balance bike that allows your child to put their feet flat on the floor. Look for a height adjustable model so your child gets some use out of it before progressing on to a pedal cycle. It’s best, if you can, to buy your children’s bikes from a specialist cycle shop which can make sure that you buy the right size and that the bike is suitably lightweight but robust. Don’t buy by age range as this is often both too wide and unreliable. Measure your child’s height and inside leg before going to choose a cycle as this
helps the shop staff narrow down your choices depending on wheel size and wheelbase. Wheels, and hence bike sizes, normally start at 14 inches and then go up in two inch increments, with the largest being 26” or 27”, sizes which also suit many adults. Buy the biggest wheel size that your child can comfortably fit on. This tends to be about the same as their inside leg measurement, but just like clothing, sizes vary according to style and brand. You also want to look for a short crank and narrower pedal tread, both of which make a bike easier to ride for children. Often, kids’ bikes are designed to be cheap, but that means that they can be too heavy and badly designed. Specialist brands like Frog Bikes and Islabikes combine thoughtful design with attractive colourways. If you buy second-hand or get a family hand-me-down, it’s worth having a service and safety check at specialist dealer. Safety equipment like helmets and elbow pads should always be bought new in case prior damage compromises safety performance. Rather than riding on the roads, there are plenty of safe places to ride, from disused railway lines and the beach boulevard to BMX parks and mountain bike trails to enjoy as a family. Heritage craftspeople who make baskets, bags, corn dollies, woven and other textiles, accessories and fishing flies all open their doors to visitors. Whether your taste runs to the flamboyantly colourful or monochrome austerity, contemporary figurative work or classical seascapes, you’re bound to find something that appeals. Many of the exhibitors offer cards, prints, badges and small items which are inexpensive and make good gifts. You can search the website to discover individual makers you love, or see

Fiona Duckett, ceramicist, Chair of the voluntary team of artists and makers which organises NEOS each year, explained why NEOS is so important for local makers. ‘For many artists and makers, NEOS not only offers one of the main selling opportunities of the year, but also a rare chance to meet their audience, to find out more about what people want to own. Visiting a studio connects people to creativity. Demonstrations spark conversations which lead to new ideas for the artist and often inspire people to learn more about making for themselves. NEOS fosters collaborations between artists and makers as well as attracting tourists to Aberdeenshire and enabling local artists and craftspeople to make a living.
‘Naturally, NEOS will operate differently this year, but we will still be using our Yellow signs! Some of the multi-artist venues will not be open this year, but it is still possible to visit individual studios, and groups. Social distancing measures will be in place and some venues are open by appointment only. SUSAN RENÉE Meet photographer & Burgess of Aberdeen...
‘As a child I was always making things - scrapbooks, working with clay and creating ‘perfumes’ in the sink. Although I was interested in art throughout school, I didn’t go to art school but decided to tag along with some friends who were doing their teacher training. ‘Teaching suited me well. I was a head teacher by 29. I went on to become an Associate Assessor in the Schools Inspectorate, reporting on the quality of learning and teaching for schools across Scotland. ‘Our family is close and I talk to my two sisters and my mother every day. She remarried after my father died and now lives in Romania, so I now have a lovely place to visit in the summer. ‘I discovered photography when I was on maternity leave with my first son. There were no iPhones back then, and so if you wanted a photograph of your

baby you had to either go to a photographer or learn how to use a proper camera. Once I started, I realised that photography could be my medium as an artist. I took a course of weekend workshops over a year. ‘One day my administrator asked me, ‘You take photographs, don’t you?’ I tentatively conceded that I did. She asked me to do her daughter’s wedding to an Aberdeen footballer. The wedding was fabulous. The bride ended up on the cover of magazines and from then onwards I was doing more than 30 weddings each year as well as my full time job. I treated each career completely separately, and gave 100% to each one. ‘In 2013, I moved into Aberdeen, bringing up my two sons as a single mum. I decided I needed to slow down as I was working 18 hour days. Nobody could believe I was giving up such a successful career, but I’ve never looked back.

‘We converted the stables in our new home into Kingshill Studios, so I could concentrate on new-born and family portrait photography. Every family’s life is full of special occasions. Falling in love, anniversaries, births, birthdays, starting a new school, graduating... to me, professional family photographs are a lovely way to hold onto those special times for longer than a moment. ‘I became a Burgess of the City of Aberdeen in 2020. Being a Burgess of Aberdeen essentially gives me full rights of citizenship in the city. Burgesses have been around since 1124. The City’s Burgesses now number around 1100. The ceremony was held in front of my family and the full council. Nomination came as a complete surprise but it’s a huge honour to be recognised for my charity work and services to the local community. I was incredibly humbled. ‘I’ve always played an active role in the local community, supporting local charities that care for vulnerable children and families. My photography studio runs limited edition Superhero Portrait Sessions where I photograph children who are facing challenges in life. I’m one of the photographers for Friends of Anchor’s Courage on the Catwalk event and the studio supports a range of local charities including Charlie House, AberNecessities and Clan through special events. This is the work that makes my heart sing. ‘It’s all about family. My sons are my world. They’re now 19 and 17, and have grown from babies into men right before my very eyes. I often look at old pictures and hug them to my chest. I want to give that same precious gift to the families I photograph’.
