In a way, such adversity binds us together and creates a stronger community. By supporting our local businesses, by eating out, by visiting our castles, attractions, museums and our splendid natural heritage, by using local gyms and sports facilities, by going to the pub or a club, by popping into the hairdressers or beauty salon, we keep our communities strong. Eat, drink and don’t let it ruin your festive season Its nearly that time of year again: to eat, drink and be merry, but Christmas and New Year festivities are not always friendly to our gut!

F

or the one in five of us that suffer from regular gastro-oesophageal reflux (GORD) or the bloating and cramps of irritable bowel syndrome (IBS) the festive season can represent an endurance test. Some of our experts at the Aberdeen Clinic give tips on how to have a good time and not be ruled by your stomach over the next couple of months. Bama Kumar, specialist dietitian says, ‘Many patients manage to control their IBS by avoiding the foods known to trigger their symptoms, however this can be difficult when you’re out at a friend’s house or going to parties. Buffets are particularly problematic as pastries, fried foods, chocolates and mince pies are all notorious causes of IBS symptoms; try to stick to healthier options such as salmon, lean meats , chicken and fresh prawns’. Bama also gives many of us an excuse to avoid sprouts on Christmas Day. ‘For IBS sufferers foods such as pulses and beans can lead to bloating, and of course I would include sprouts along with these.’ Malcolm Valentine, General Practitioner says, ‘IBS can be worsened if you change your eating pattern, and I would particularly avoid eating too late. Don’t become a complete couch potato over the holidays, as exercise is good for your gut as well as the rest of you. Finally, enjoy yourself, if you spend the holiday stressing about whether everyone else is having a good time it’s a surefire way of ensuring your IBS takes control.’ Many of the foods that cause IBS also worsen GORD symptoms and much of the same advice about IBS is very pertinent to controlling reflux.

Ken Park, Consultant Surgeon, heads up our GORD team and explains, ‘GORD is caused when the stomach contents backtrack out of the stomach into the lower oesophagus or gullet. Many of the things we do over the Christmas holidays are almost a prescription to cause reflux. I don’t want to be a humbug and suggest you don’t have a drink or enjoy going out to parties with friends, but I would say that going to bed on a full stomach is probably the worst thing you can do for reflux. Fizz is not your friend if you suffer from reflux , so nice as it may be, the ubiquitous champagne or prosecco at this time of year will dilate your stomach quickly and cause reflux, better to pick something still. If you do suffer from GORD, ensure you have a stock of omeprazole, nexium or the equivalent at home as this is certainly the time of year you are going to need them’. What about the New Year? With all the resolutions to lose weight, take more exercise and live a healthier life style why not think about trying to get on top of your IBS or reflux for good. Fresh Faced Take a break from your beauty routine before the party season kicks off and go for a no-fuss natural look. Few of us would leave the house without our make-up bags yet a well-executed ‘no make-up’ look takes just a few minutes and only four products to pull off. Give your skin a chance to breathe and declutter your make up bag in one go! Skin still needs a moisture boost throughout the day and using a nourishing primer can offer a healthy complexion without covering natural beauty. Red is the colour of the season. From crimson court heels to scarlet knit sweaters, the daring shade was championed on catwalks from Fendi to Victoria Beckham and in seasonal high street edits. Surprisingly, red is easy to wear and suits every complexion depending on the hue. Primary red is most flattering on almost all skin tones. If you have warmer colouring with yellow undertones like Jennifer Lopez, or if you prefer gold jewellery, then look for peachy, coral or orange based reds. If your skin is cooler with a pink undertone, like Angelina Jolie’s, or if you prefer silver jewellery, aim for darker shades of burgundy, rich wines or rose pink crimsons. If head to toe red seems like too much, try bringing wardrobe favourites up to date with a pop of ruby. A smart red blazer is the perfect addition to a minimalist monochrome outfit or inject the red hue to a weekend denim look, with knitwear or a Breton stripe. his season, there’s lot’s to choose from, but quality, practicality and style all vary enormously. Look for longer lengths in padded jackets, ideally with waterproof high-tech fabrics and feather light down or hi-loft fillings. Most ski and outdoor stores carry the main brands in a range of muted tones that work equally well in the city or halfway up the Cairngorms. If you’re bulky, go for narrow channel insulation and avoid red or you may inadvertently remind people of an insulated hot water tank!

If you need a more formal option, look for a double or single breasted overcoat in a wool and cashmere mix or a waterproof trench coat. The single breasted option is more streamlined, but double breasted designs can be warmer. Pair it with a cashmere or

wool scarf in a bright stripe to lift the mood and some classic leather gloves. Stand out from the usual sea of greys and blacks in a herringbone or houndstooth check, or try a classic camel or a muted burgundy shade. Details such as colourful linings and soft velvet collars are on trend. A proper fit makes all the difference. You should be able to move your shoulders comfortably and sleeves should cover your shirt cuffs and suit sleeves. Lastly, consider the Borg jacket, named after the Swedish tennis maestro, rather than the Star Trek alien collective. Its shorter length combines a shearling or faux-fleece collar, in a bomber or denim jacket style, making it the perfect option paired with jeans and a t-shirt for milder days.

There, he and his business partner Ewen Lovie, own The Quayside restaurant and fish and chip shop, which has just been shortlisted in the final three in the UK for Newcomer of the Year in the fish and chip industry. ‘If I’m not in the kitchen working with our chef Joseph Hart, I’ll be pretending to be a superhero, playing Paw Patrol or watching Disney. Archie sets the agenda, but I love a great meal and great wine shared with Jenna and friends too. ‘The Quayside is about sustainability and the best ingredients. Our own batter recipe gives our fish just the right crunch and coating. We cook our chips in beef dripping for that authentic taste and we offer things you wouldn’t expect from a chippy, like side salads, sweet potato fries, grilled fish, lobster, mussels, whitebait, and langoustines. ‘If I could have dinner with anyone, I’d choose Rick Stein, Elon Musk and Danny Baker because he is just plain entertaining. To eat? It’s got to be fish and chips with mushy peas with loads of salt and vinegar!’

INGREDIENTS (Serves 4) Pinch of chopped parsley 1 x lemon-quartered Pinch of chopped mint FOR THE FILLING 200g haddock cut into 1” thick pieces 200g salmon cut into 1” thick pieces/cubes 100g hot smoked salmon 50g prawns 100g garden peas 50ml white wine 800g mashed potatoes, the creamier the better FOR THE SAUCE 40g flour 40g butter 1 bay leaf 100g smoked haddock (natural not dyed) 200ml fish stock 200ml double cream 2 cloves of garlic - crushed Salt and pepper to taste METHOD To make the sauce: Melt the butter and add the flour to make a roux. Add the fish stock, cream and garlic and mix thoroughly. Add the smoked haddock and the bay leaf. Stir and reduce by one third over a medium heat until the sauce develops a thick velvety texture. Remove bay leaf, season to taste. To make the filling: Add a little vegetable oil to a large, hot frying pan. Add the salmon, haddock and wine. Seal the fish leaving the centre on the rare side. Add the prawns, hot smoked salmon, 50g of peas and heat through. Finally mix the sauce and filling to your preferred texture. Decant the hot filling into a pie dish. Don’t fill the dish right to the top as you now need to add the hot mash topping. Keep it nice and rustic and for the little extra luxury touch brush with a little melted butter. Pop in the oven or under the grill till browned on top. Serve with a wedge of lemon, a sprinkle of parsley, and hot minted garden peas.

Silver Darling Words: Jan Leatham

For me there are few better wraparound views in Aberdeen, than that from the floor to ceiling windows surrounding the Silver Darling restaurant on Pocra Quay. Whether catching a glimpse of dolphins and seals playing around the harbour mouth during a summer lunch, gazing at the brightly lit sweep of the coastline in the evening, or that moment when you think the restaurant is moving, and you realise it’s the massive Viking on the Aberdeen - Shetland ferry silently sliding by, it’s always a stunner. This was my first trip to the Silver Darling since The McGinty’s Group took ownership at the beginning of October. There is a new menu showcasing some of the very best local seafood; the neighbouring table ordered huge Carlingford oysters to start, whilst we opted for the classic moules and a delectable crab and crevette cocktail complemented by pea puree, and a fennel and orange salad. Whilst we waited for the starters, there were olives and super-light rosemary focaccia bread to hold our attention, along with an accessible wine list and plenty of choice by the glass. Our mains arrived, and my roasted hake fillet was just right, flaky and light, resting on butterbeans, spinach, chorizo, salsa verde, cherry tomatoes and pine kernels; all of which provided a great feast of texture as well as taste. My partner’s steamed lemon sole was served simply with crushed potatoes, lemon and parsley sauce and topped with roast capers. Portions are well judged, as we felt up to a dessert and eventually decided on the chocolate delice with candied kumquats, and the spiced apple tart with hazelnut ice cream and warm cider sauce, both of which were absolutely delightful, as was the entire meal. The Silver Darling has retained its AA rosette for 2017/18 and the relaxed and unhurried, yet upscale feel to the place reflects that accolade. 1. Make the base for filling - use a scone cutter or glass to cut a round shape in a wrap or tortilla and press into a pastry case to form the base shape; use a smaller cutter to create the lid of the mince pie. 2. Mince pie filling - mix together in a pan about 30g fruit mixture as you prefer, from chopped up apples, pineapple, grapes, dried dates, dried apricots, stem ginger, glace cherries, nuts, add ground nutmeg, cinnamon, clove, mixed spice, add a splash of grape juice and simmer on stove for 2 minutes to soften the fruit 3. Assemble fruit pie - spoon the fruit mixture into the base and put tortilla lid on top- for a nice brown colour gently brush on an egg yolk wash with a sprinkle of cinnamon on top. 4. Cook pies - bake for 12 minutes in the oven at around 180oC

Slovenia is one of those places that deserves to be better known, but which retains its slow-paced charm precisely because it isn’t.

Part of this is down to our hazy grasp of middle European geography. We’re aware that Slovenia is vaguely Balkan, but probably couldn’t locate it on a map. You’ll find it wedged below Austria, to the east of Venice and Trieste, west of Hungary and just above Croatia. As a result, Slovenia is a cultural mash-up of Italy, Germany and a touch of the AustroHungarian, but somehow manages to remain distinctive. It’s got a bit of Adriatic coastline, ski-worthy mountains, a

ton of history, amazingly picturesque towns and villages with names that look like a particularly poor set of scrabble tiles, and a whole lot of forests. It’s also a great spa destination and perfect for those who want to explore the great outdoors. The capital, Ljubljana, is just a two hour flight from the UK, making Slovenia a possibility for a long weekend or longer stay. Easyjet flies out of Stansted or Gatwick, or – if you’re

looking for an adventure - you could try Ryanair to Trieste, then travel the remaining 60 or so miles by bus or hire car. Alternatively, spend a day or two in Venice, then take the train to Lake Bled or Ljubljana: www.seat61.com has the details. However you get to Slovenia, there’s plenty to see and do when you arrive. Ljubljana offers an appealingly baroque Old Town, complete with castle and the rather theatrical Stolnica Sv. Nikolaja gilded cathedral. Meander alongside the canals or wander through the Tivoli gardens and park. Pick up some lunch, Slovenian honey or local crafts at the market at Vodnik Square. The Museum of Illusions is great for kids or just having your mind bent with everything from puzzles to an anti-gravity room. After dark, Metelkova offers an artistic, edgy nightlife, rather like 1980s Berlin or Copenhagen’s Christiania used to be. If exploring more of the country appeals, Lake Bled is achingly beautiful, if touristy. There are caves, a castle, waterfalls, ravines and mountains to explore, or you can visit the island in the lake where the ancient Slavic goddess of love, Živa’s temple has been replaced by an atmospheric Gothic church.

Maribor, about 80 miles north east of Ljubljana, is the second largest city, about half the size of Aberdeen. The wine region, complete with the world’s oldest vine, sits to one side, with the ski slopes, summer sledging and cycle paths of the Pohorje mountain to the other. The Drava river winds through the centre, with lots of small avenues, restaurants and bars making it an appealing place to get lost. If the coast appeals more, then make for Portaroz or Piran. Portoroz offers a wealth of spa facilities and nature parks. Sečovlje Salina Nature Park has an outdoor spa where you can be caked in salt pan mud, while spotting some of the 270 bird species that visit. Take a stroll and visit some of the nearby Istrian villages, with olive groves, orchards and vineyards. Browse estate agent’s windows, or visit the harbour, watching fishermen mend nets, or women taking vegetables to market. It’s an ideal spot if you need to step away from the frantic pace of life and just chill out. Further down Slovenia’s tiny coastline, Piran sits on a spur jutting into the Adriatic. The pale, red-roofed buildings, winding streets, monastery and galleries seem to have been specifically designed to rekindle romance. Slovenia? S’lovely. There’s a good chance you may not want to come home.

January can be a bit of a social blank after the chimes of the New Year have passed, so why not celebrate our national bard’s birthday? You’ll find that most towns and villages have a Burns Supper around 25 January.

R

obert Burns was born back in 1759 and is regarded as a pioneer of Romantic poetry, often praising the charms of his latest paramour. Burns is surprisingly popular around the world, with the Russians being particular fans, perhaps because of the poet’s affection for a dram and a lovely lassie or two. Stonehaven has a Burns Memorial Garden, you’ll find it, somewhat incongruously, next door to KwikFit. Aberdeen opted for a statue on Union Terrace, which was paid for by public subscription. It was unveiled in 1892 and is the work of Henry Bain Smith. According to Visit Scotland, only Queen Victoria and Christopher Columbus have more non-religious statues dedicated to them. Given that Burns worked as an exciseman rather than discovering new continents or ruling an empire, that’s a pretty impressive legacy! His work has been translated into hundreds of languages, though he has never gained an audience in Japan. Perhaps because the original translation of “Fair fa' your honest, sonsie face, Great chieftain o the puddin'-race!” was rendered as the Japanese equivalent of “Good luck to your honest friendly face, Great King of the sausages”. In addition to being associated with just about every old pub in Ayrshire and Dumfries and Galloway, Burns also had a family connection to Aberdeenshire. Burns’ father was born near Stonehaven and the family farmed in the Mearns. Several of his ancestors’ graves can be found in the Glenbervie Cemetery. He also visited the city in 1787, but described Aberdeen as, “a lazy town”! He was

also less than complimentary about one of the local worthies, describing him as, “a little decrepit body with some abilities”. One of the largest Burns celebrations takes place at the Beach Ballroom on Friday 26 January and Saturday 27 January, with the £35 per person ticket including the obligatory haggis, neeps and tatties as well as a ceilidh. Most hotels, towns and villages will host Burns Supper events, so check local social media for details. If you can hold out till February, Nae Ordinary Burns Supper at the Beach Ballroom features Fiona Kennedy with special guest artists including award-winning actors, singers and musicians. Entertainers include John Bett, George Drennan, James Muldoon, Ainsley Hamill, Nils Elders, the University of Aberdeen Chapel Choir, conducted by John Frederick Hudson/Paul Mealor with Laura Urquhart, and champion highland dancers. There’s a three course dinner, fabulous entertainment, followed by ceilidh dancing to The Jacobites. Tickets from £85 per person, with tables of 8, 10 or 12 available as well as individual tickets. There will also be charity auctions in aid of VSA, NESMS, the University of Aberdeen Development Trust, FROM Scotland, The Archie Foundation and Birchwood Highland. So, seek out a haggis, grab some friends, recite a few lines and raise a glass to our national poet. As the man himself said, “I found that old Solomon proved it fair, That a big-belly'd bottle's a cure for all care.”

It also offers some amazing snowboarding terrain, from the Dink Dink run for complete beginners to some of the steepest runs and most challenging sculpted terrain in the Cairngorms.

Lecht 2090 Lecht 2090 is based in the heart of Scotland’s largest National Park at the top of the pass between Tomintoul and Strathdon. The Lecht is especially good for beginners and intermediates. There are a total of 12 different lifts, including a three person chairlift and a magic carpet travelator to get young novices going on day one. You book hire equipment and clothing on line, or book lessons at the ski school. Aberdeen Snowsports Centre If it turns out to be a mild winter, then the artificial slope at Garthdee’s Aberdeen Snowsports Centre is a great alternative. Tubing is great fun for youngsters and requires no skill, perfect if you have kids of different ages or abilities.

Huntly Nordic Ski Centre

Huntly Nordic Ski Centre offers the UK’s only purposebuilt all-weather facility for cross-country skiing. The friendly staff provide tuition at all levels from novice to elite and there are facilities for Nordic Skiing, a 30 metre downhill mat for tubing and an 800 metre roller ski track, which kids love. Cross Country Skiing, done on flat ground, is surprisingly painful on the thighs, as adults will discover for a couple of days after a session. If the snow cover is good, the centre has access to high level trails in the Clashindarroch Forest and hires skis by the day. There are regular family roller ski courses priced around £25 per adult and £12.50 for juniors over the age of eight. An hour’s tubing is £8 for adults and £6 for children, with booking advised and there are a selection of one day and weekend courses suitable for all levels over the winter months. Meet Juliet MacLeod of The Cloud Pottery...

‘I WAS BROUGHT UP JUST OVER A MILE FROM THE DORSET COAST. OUR SUMMERS WERE OFTEN SPENT ON THE ISLE OF SKYE, SO THE SEA PLAYS A BIG PART IN MY LIFE AND WORK. After studying at Central St Martins, I worked as a graphic designer in London for over twenty years. My interest in ceramics stems from a combination of an inspiring teacher and discovering Lucie Rie’s work at the V&A Museum in London. When I moved to Aberdeen in 2010, I took a short course in ceramics at Gray’s School of Art and the fuse was lit. ‘It’s always a challenge to balance work and other commitments, especially when you are starting out. Luckily my making time is very much

ruled by school hours, and I try to keep paperwork and social media to evenings after our children are in bed. I also have a very supportive husband. ‘I think interest in ceramics is continually rising. Work by artists like Lucie Rie and Hans Coper demand increasingly higher prices at auction; whilst Grayson Perry, Edmund de Waal, Kate Malone and others have raised the profile of ceramics and pottery through their involvement with television programmes. ‘I’d describe my own work as contemporary wheel-thrown porcelain intended for everyday use. My mark-making and colours are inspired by Scottish seascapes. I’m always sketching and photographing, and spend a few weeks painting in the Outer Isles each year. The results

of these are the starting point for many of my designs. ‘To make a single pot involves many processes. Firstly, the clay needs to be worked to a smooth consistency, then weighed out and formed into balls ready to throw. Each pot is thrown on the wheel to specific measurements, then set aside for a day to dry slightly so that it possible to pick it up without distortion. At this point the pot is turned upside down and placed back on the wheel to have any excess clay trimmed away, and the foot formed. Another day or so later and the pot will be dry enough to add decoration using a mixture of liquid clay and pigment, called slip. This process can take a number of days to complete. Once fully dry the pot is fired for a first time in an electric kiln to just under

1000˚C. This makes the clay stronger, and ready to glaze. The pot is sanded and washed to remove any dust before being dipped in glaze, then fired for a final time to approximately 1260˚C. ‘My work is inspired by beaches, especially those in the Outer Hebrides, and the east coast. I could list a hundred artists and potters who inspire me, but particular favourites are Maggi Hambling, Cy Twombly, Eric Ravilious, Barbara Hepworth, Wilhemina Barns-Graham, Donald Ferguson, James and Tilla Waters, Barry Stedman, Akiko Hirai and Jack Doherty. ‘I’m hoping to have work at Junction Arts in Aberdeen and Baxters Gallery in Dartmouth spring shows. This time of year is busy with applications for next year’s shows. I do work to

commission, but I tend to have a six month waiting list.

She took third place, against some of the best rising talents in the world, placing her amongst the best in the industry.

Charity dinner thanks community heroes Cash for Kids recently hosted its annual Celebration Dinner to thank those who have helped it raise tens of thousands of pounds over the past year. Among those were Ellon couple Natasha Matthew and Grant Reid. Earlier this year the duo were one of six finalists who collectively raised more than £57,000 in the space of a fortnight for Cash for Kids as part of its Win Your Wedding competition. Natasha and Matthew were the couple who raised the most, over £12,000, which saw them win a luxury wedding at Meldrum Country House Hotel.

Aberdeen Amateur Athletic Club (AAAC) has launched a campaign to raise £60,000 for the expansion of its current facilities within the Chris Anderson Stadium at Aberdeen Sports Village (ASV). The funds will allow the club to construct a 20m2 photo finish and officials’ training room, therefore increasing the accuracy and efficiency of judges and match administration team, as well as taking the city’s athletics facilities to the highest level. The club currently trains almost 400 athletes.

t’s no secret how a writer’s mind works and I am no different. You want to cast a spell over your reader, using the power of words to convey subtlety, colour, verbal sleight of hand, wit and maybe a bit of wisdom. In short, you want them to be spellbound and appreciate all the tricks of your trade. So far so good but what happens when the tables are turned and you, the writer, are to be bewitched, bothered and bewildered by others wishing to cast a spell on you? I find out in the company of Jeff Burns and Ivor Smith of Fifth Dimension who have been

taking their brand of magic all over the world for a decade and, of course, I do end up agog, bamboozled and spellbound. We meet at Aberdeen’s Malmaison Hotel and repair to a veranda beside a rather chintzy private dining room. At first, the chat centres on what the lads did before taking flight on their own very special magic carpet. Says Jeff, ‘I am actually a trained accountant and worked for oil companies such as Talisman and Agip. I’d been interested in magic and my hero was the magician David Nixon.’

By contrast, Ivor worked in economic development for Aberdeen City Council long before the recent downturn in the North Sea oil and gas sector, so no prizes for guessing how much the city fathers would love to have him back in post to magic up lots of jobs. Ivor’s wife gave him a magic set one Christmas and he was hooked. The duo are in great demand in a variety of roles from teaching life skills to stressing the importance of safe practices at work and doing close-up magic at dinners and even weddings. ‘Yes, we do lots of weddings and they are great times for us,’ says Ivor, ‘not least because we have a special trick for the bride and bridegroom’. Sounds exciting or is it scary when they make a wedding ring disappear?

Fifth Dimension have performed in exotic locations such as Las Vegas, Hollywood and Thailand and once on the Orient Express when it had an outing in the North-east. However, the lads don’t get carried away and stay firmly grounded performing in and around Aberdeen. They have spent the last two years in between gigs creating a new show called Unbelievable. ‘We plan to take it on tour round the North-east so look out New Pitsligo,’ says Ivor. Inevitably, to end our chat outside before it got a bit chilly, Jeff and Ivor each involved me in card tricks. Suffice to say, they had me stumped by turning up the seven of hearts and the four of diamonds respectively and if I knew how they did it, well, that would be magic.
