For most of us, December is a mad rush of preparation and present buying, cooking and clothes shopping, decorating and partying as we attempt to make the festive season special for our friends and loved ones. By contrast, January can often seem like a bit of a let-down, with dark days, self-imposed sobriety, frugality and swearing off chocolate for life, not to mention those quickly abandoned plans to get up an hour earlier and go running every morning. We see no reason why January should be every bit as fabulous as December, so we’ve been out exploring all that’s best in Aberdeen and Aberdeenshire at this time of year. LOUISE CARNEGIE, PHOTOGRAPHER Louise Carnegie is a twenty two year old photographer from Aberdeen. She first realised she had a passion for photography after completing an art course at Aberdeen College and went on to do the HND in photography in 2011. Her work mainly revolves around fashion and portraiture, working closely with some of Scotland's top agencies. She splits her time between Aberdeen and Glasgow, mainly working on fashion editorials or with agencies. Her work has been featured in numerous international magazines in both print and online, spanning from Australia to Canada. She works closely with many up and coming designers and fellow creatives from the Aberdeen area which she thoroughly enjoys as there is so much hidden creativity up here that deserves to be seen.

Every New Year leads to post-festive blues and often quickly broken New Year’s resolutions. If you want to stick to a resolution then my advice is to write it down and set yourself a six month target. From there you need to set mini targets for every week, fortnight or month. The next step is to plan your week to allow time for exercise and food preparation to help you reach your goals and stick to your resolution. Lots of companies make a fortune offering short cuts to weight loss and losing inches off your waist. Normally this is done by promising you results and selling you expensive shakes and energy bars. The elephant in the room is that these are a well branded and marketed method of simple severe calorie restriction
diets. If you can survive the short term pain then you will achieve weight loss, but as soon as you begin to eat ‘normally’ again you will put on weight as quickly as you lost it. The key to long term weight loss is to eat REAL food, prepared by yourself, and within a small daily calorie deficit (250-500 kcal/day) of your predicted daily calorie expenditure. So if you want to maintain a resolution past Easter then my advice is to work slowly and steadily towards your target. Enjoy the festive period in moderation and find time to do some exercise, so your January is not too bleak!

Alternatively, enjoy a glass of Champagne, a frozen Bloody Mary or a local apple juice from Cairn O’ Mohr while you browse the menu of classic breakfast dishes including kippers, porridge with raspberries and Drambuie, 28 day aged beefsteak or poached duck eggs on potato scones. Breakfast at Gleneagles is regarded as one of the best in the world and they even offer butteries, should you be feeling homesick!

You’ll probably want to sample the club leisure facilities, including the gym, fitness classes, pools, Jacuzzi, sauna, steam room or Alpine Onsen, if only to justify that buttery. My new year’s resolution is to stop drinking alcohol. I want to get fit and healthy but if I’m honest I’m not too sure if I am going to manage!

LEATHER CONTINUES TO BE A GREAT STAPLE AND WELCOME ADDITION TO ANY WARDROBE. WHETHER IT TAKES THE FORM OF A PAIR OF CLASSIC LEATHER BOOTS OR A MORE EDGY LEATHER DRESS, THERE IS SOMETHING FOR ALL. The Courtyard The Courtyard has long been one of the city’s favourite foodie haunts and I jumped at the chance to reacquaint myself with the menu and check out the recent refurbishments, promising a ‘relaxed dining experience, where the food, not the restaurant, is centre stage.’ As we perused the menu, we were treated to complimentary warm homemade breads with an olive infused butter, which was soon followed by piquantly moreish little haggis bon bons. The menu featured an array of tempting choices, and I decided on the House Smoked and Cured Sea Trout which arrived beautifully presented with avocado, brown bread crackling and a quail egg. My companion’s Beetroot Risotto blended earthiness with a smoky brie and toasted pine nuts. After a refreshing interlude with a mango sorbet, I opted for the Guinea Fowl Tasting Plate featuring an enticing selection of boneless wing, breast, crispy leg and served with artichoke and baby vegetables. It really did melt in the mouth. I tried a little of the hearty Highland Estate Venison Loin that my companion chose and was really impressed by the perfectly cooked game and the accompaniment of stovies made from venison shoulder. If there’s a problem with the Courtyard it’s that no matter what you choose from the menu and how happy it makes you, you’ll still end up coveting what’s on other diners’ plates - particularly when you get to dessert.

We were treated to delightful hand crafted sweets to finish - a macaron and a gooey home-made fruit pastel each, which was a surprising, but delicious end to our meal. However, this did not stop me glaring enviously at the table opposite when their White Chocolate Cream Brulee arrived shortly afterwards!

Chef focus Damian Baranski from Rendezvous @ Nargile shares his passion for cooking and his recipe for oven roasted escalopes of monkfish HOW DO YOU SPEND YOUR TIME AWAY FROM THE KITCHEN? Out of work I like to go to the gym and spend time with my kids. Weather permitting I also really enjoy fishing.
WHEN DID YOU FIRST GET INTERESTED IN COOKING AND HOW DID THIS DEVELOP? I have always been interested in cooking. From a young age I enjoyed helping my mother and grandmother in the kitchen. Since moving to Scotland to start a new life and career I decided to make the change from mechanic to chef. Karen has helped and encouraged me to develop my passion for cooking. I am very honoured that she trusts me to run her kitchen now that she has moved on to new ventures.
HOW WOULD YOU DESCRIBE YOUR STYLE OF FOOD? At Rendezvous we utilise both local and authentically sourced ingredients to freshly prepare all dishes in the restaurant. The style of food is heavily influenced by Turkish and Mediterranean flavours. During my time in Turkey I realised the importance within their culture of sharing and this I feel is reflected in my mezes.

WHAT’S THE STRANGEST/MOST APPALLING THING YOU’LL ADMIT TO EATING OR HAVE EVER BEEN ASKED TO COOK? I was on holiday in Thailand a few years ago and ate deep fried spiders, scorpions and grilled snakes... not an experience I would go through again.
Damian's Firinda Fener Baligi (oven roasted escalopes of monkfish topped with tomato, basil and mozzarella, served on a lemon scented kus kus) INGREDIENTS 4 x 200g monkfish fillets 1kg vine tomatoes (peeled & chopped roughly) 50g fresh basil (finely sliced) 1 large white onion Buffalo Mozzarella Kus kus (1 coffee cup) 6 garlic cloves Salt Sugar Cracked black pepper
METHOD FOR THE SAUCE: Finely chop onion and garlic. Sauté in olive oil until soft in a large pan. Add tomatoes and fry for a further few minutes. Now add salt and pepper to taste and add white sugar if tomatoes have a bitter taste. Bring sauce to the boil and then simmer until thickened. Once thickened turn off and stir in fresh basil. MONKFISH: Cut each monkfish fillet into 3 or 4 large chunks and place in a roasting tray. Sprinkle with salt, pepper and garlic and drizzle with olive oil. Place in a preheated oven (220oC) for 10
KUS KUS: Place one coffee cup of water into a pan. Add a cube of butter and bring to the boil. Once boiling turn off heat and stir in kus kus. Cover and set aside for 5 to 10 minutes until soft and fluffy. Mix in one handful of chopped flat leaf parsley and the zest of half a lemon. PLATING: Place a large serving spoon of kus kus in the middle of the plate. Remove monkfish from oven and place on top. Sprinkle with sliced black olives and lemon to garnish.

Most of us think of a garden as a place to enjoy during the summer months and for a large part of the year we nearly forget about it. It may seem greedy but I want to enjoy my garden at night and in winter as much as I do during the day and in summer, and many of my clients feel the same way so in response I have designed and created gardens to be enjoyed all year round, day and night. By using responsible and relatively inexpensive L.E.D lighting you can transform your outdoor space, creating mood and atmosphere, bringing life to an otherwise dead space. Other than just creating the feeling of an outdoor living space, a night garden offers wonderful patterns, shapes, textures and colours that are very different from the daytime garden. In the winter, by creating a flow of low level light in borders and up-lighting certain features you can create interest and a comforting glow to replace the stark darkness of the long winter months.
can be used to uplight larger trees and structures such as the walls of buildings whereas sculpture or feature lighting can make a statement. Walk over or recessed lighting can highlight steps and walkways and then there is under-seat strip lighting, rope lighting, Christmas lights…… the options are endless! All of this can be put onto a simple photo cell and timer with an override switch which means that once the timer is set you can simply forget about it; the lighting comes on at dusk and goes off at the programmed time, or you can turn the whole lot off with the flick of a switch when it suits.
To achieve this, try uplighters, such as garden spike lights that can be used to create a low level light in borders, to cross graze features such as statuary/sculpture or uplight small trees
There are more sophisticated systems that can be controlled from your iPad too. It’s worth making contact with a good lighting company for more complex systems. Whatever you do always make sure you consult a qualified electrician before undertaking any electrical works around the home….unless the lighting is solar of course. In my opinion solar lighting hasn’t been of a very good quality in the past but it is improving and there are quite a few sophisticated systems out

Turn left onto Rosemount Place at the top of Mount Street and pop into the Richmond Street Deli for a refreshing cup of loose leaf tea, snacks and home bakes or something to read. Next door is Wool for Ewe, an award winning store that’s a riot of colour and heaven for knitters and those who crochet or want to learn at classes. As you wander along, you’ll find that Rosemount has an astonishing number of hairdressers and beauty salons, suggesting the residents must all be immaculately groomed.

On opposite sides of the street, CloudyBlue and Peapod both specialise in quirky cards, gifts and cute stuff. Peapod is good for vintage furniture finds and clothing and is packed with unusual and unique pieces.
Next up is Herd’s the Butcher, which is a carnivore’s delight, with much of the meat sourced from the owner’s farm and an excellent selection of deli and bakery lines. Fifi’s may sound like yet another of Rosemount’s many salons, but it’s an appealing little café and bistro. Lastly, the windows of decorators and interiors specialists Kynoch and Robertson on the other side of the street will almost certainly inspire some redecoration plans, with their huge range of wallpapers and paints from Farrow and Ball, Morris & Co and eco-friendly Earthborn. Better yet, they’ll come and do the job for you while you head off to get your hair done!
A few doors up from CloudyBlue is Dancefit - the tutu capital of Aberdeen - then Four Seasons, which has been one of the city’s most innovative and gorgeous florists for forty years now. They always have stunning blooms on show. Next door you’ll find Humbug, the city’s best old-fashioned sweetshop. Nothing quite prepares you for the city of canals, because quite simply there is nothing else like it. From the water taxi that you catch from the airport and the vaporetti that provide the cityâ&#x20AC;&#x2122;s public transport system; to the bin men, couriers and emergency services and not forgetting the gondolas which await your romantic intentions, absolutely everything happens on the water. Or on foot of course, and the mixture of leisurely boat rides and Shanksâ&#x20AC;&#x2122;s pony all serves to ensure your holiday is a relaxing one.
If you love Italian fashion and designer labels, then head to Piazza San Marco behind which many big name flagship stores can be found. There are also many gems to be discovered as you pick your way around the maze of ancient streets, both artisan shops and leafy squares to discover with every turn. Eating and drinking in style is second nature to the Venetians, and the classic must-try aperitif which graces every menu is the Aperol Spritz, made with Aperol, prosecco, soda and a giant green olive, generally served with gratis snacks. Visit the splendid permanent al fresco Rialto Market to witness a truly breathtaking array of fresh fish and seafood, fruit, vegetables and flowers complete with cheeky Italian vendors and plenty of atmosphere.
Venice is made up of small islands set in a lagoon, many of which are easily accessible with a short vaporetto ride. We visited nearby Murano, a town on a small island famous for its glass. You are ushered off the boat straight into a huge glass-blowing workshop, where large men blow delicate shapes using centuries-old techniques. The island also has many colourful glass sculptures and is absolutely delightful for a day trip. Another island well worth a visit is Burano, famous for its colourful houses and traditional lace
making. Another short boat ride away is the Lido, an 11km long sandbar which is Veniceâ&#x20AC;&#x2122;s beach and the place for a swim.

Local artist Lisa Brundretts has travelled the world, but it’s her contemporary North-east landscapes that are attracting attention... ainting on metal has a long history, with Rembrandt, El Greco, and Brueghel all using copper in place of canvas. Now Drumoak’s Lisa Brundretts is carrying the tradition forwards with her fresh studies of local landscapes painted on aluminium or steel. ‘I guess my paintings have been influenced by the many places I’ve lived. I was born in Cornwall, where the coastline and light are spectacular. The varied coastal scenery inspired me to sketch and paint while studying at school.

‘In 2001, I took the opportunity to study at Gray’s School of Art where I developed my current style. I experimented with a variety of materials before discovering brushed aluminium and stainless steel. Working in oils and inks gives my work a clean, modern feel producing pieces that are perhaps more in tune with a contemporary home. ‘I exhibited at the North East Open Studios event, and was thrilled when nearly all my work was sold. In some pieces I incorporated quotes or excerpts from poems, triggering some touching emotions amongst those who came to see my work.
‘When we married, my husband and I embarked on a journey round the world before moving to Drumoak, where we started a family. We lived in Stavanger in Norway for a couple of years and that’s where I first began to paint seriously. The fjords and mountainous landscapes proved endlessly inspiring.
‘I’m a member of the Stonehaven Art Club and Upper Deeside Art Society and regularly show at their group exhibitions. My work can also be seen at Touched by Scotland in Oyne and I can arrange home viewings of my latest collection or discuss commissions’.

At least, not when they are lucky enough to be sent to review Jersey Boys at the Edinburgh Playhouse they don’t. I knew very little about the back story to this musical, and even after looking the subject matter up on Wikipedia all I knew was that it was about Frankie Valli and the Four Seasons, recognised loads of the names of the songs and realised it had something to do with New Jersey. None of which prepared me for the sheer force of entertainment that is the Jersey Boys. From curtain up, the gritty beginnings of the Four Seasons are captured on stage by some very talented and personable young men including Tim Driesen as Frankie Valli and Stephen Webb as Tommy DeVito. Jersey Boys takes the audience through the story of the band, as told through the eyes of the four original members, in four separate seasons. This method of storytelling was appropriate since the writers kept getting different stories when interviewing the original band members, and it gives the show a very real feel.
make for a fascinating storyline now, but that would not have been the case in the Fifties. The show is very slick and employs quite a few clever motifs, utilising the stark industrial bones of the set. At one point the focus of the stage changes 180 degrees, giving the audience a glimpse of what it feels like to be backstage at a sell-out stadium concert! Sell-out being the operative term, we were there on a Thursday afternoon and more than 3000 seats were filled in the Playhouse. And I haven’t even mentioned the singing. Frankie Valli was responsible for popularising the falsetto style of pop-singing which is now so familiar, used by the Beach Boys, the Beatles and many others since then. At the time, his voice was revolutionary and changed the sound of pop music for ever - as Tim Driesen says, ‘People come for the music and stay for the show.’
As Stephen Webb says, ‘These guys were small-time criminals, headed for the army or the mob - this was a way out for them.’ Of course their shady histories

hen Cindy Douglas went on maternity leave to have her first daughter nine years ago there was more than just one new beginning in her life. Recording a demo of her vocals reawakened her love of jazz, and despite briefly returning to the corporate world of HR, at the end of those 12 months she decided to put her faith in her vocals and turned her back on the nine-to-five altogether. 'The improvisation aspect of jazz makes it incredibly current,' said Cindy. 'It is never done the same, and each time you perform, it’s dependent on the musicians you play with and your relationship with them. Jazz allows you to express feelings in a way that other music does not, where you can be restricted by notes on a page. But with jazz you have a lot of freedom in the way you deliver the music. It’s a very liberated type of music.' Eager to learn all she could about the medium has seen her study with leading jazz vocal educators, Mark Murphy, Sheila Jordan, Jay Clayton, Anita Wardell, and Liane Carroll, as well as picking up percussion skills in Havana with members of Cuba’s world-renowned Buena Vista Social Club.

'Everyone in my family is good with their hands. My mum has great creative flair and my Grandad was always building boats and making sail plans. I was always encouraged to draw, so it’s no surprise I ended up in art school. I first discovered ceramics at Edinburgh College of Art, before winning a postgraduate scholarship', Morag began. 'As a student, a couple of summers working in America really influenced me. My degree show was brightly coloured Elvises on fairground rides made in clay! I was commissioned to make figures based on local workers and trades for a museum in Prestonpans and my current figural work developed from there. I also make an affordable range of pieces incorporating local Doric humour, which are great for storing knick-knacks. 'For me, clay is the ultimate sculptural material; it will do almost anything you want it to. I absolutely love the process - the patience, the sometimes methodical ways you have to work when making in clay. Unlike many other art forms, clay holds the marks of the maker for millennia. I love seeing 700 year-old pots that have the fingerprint of some lowly maker preserved forever… When it’s fired - it’s finished and can last for centuries! 'All sorts of things can inspire me, but travel normally sparks me off. When I start on a new range or figure, I hold lots of ideas in my head. I use sketchbooks to jot down phrases and words but each collection starts with a list. Accuracy is really important to me so I have a subscription to a few online historical photography sources. I collect lots of imagery and the sketch develops. I’ve been known to sketch daggers in the Gordon Highlanders Museum and trawl through the archives at Peterhead’s Arbuthnot Museum. Once I have decided on the figures, I only sketch up to a point,

the poses, faces and movements are dictated in the making, I much prefer to see how a figure develops rather than just recreate a drawing I have done. 'My figures are made in large or small collections, many with a local flavour. I have the Working Folk, which incorporates oilmen, fishermannies, gutting quines and all manner of recent and historic jobs in the North-east. My Ceilidh Collection is much more Scottish and features kilted figures - I love getting the outfits accurate and the ruffles in the right place. Mostly, my figures are made to commission and have various one-offs from retiring teachers to Muhammad Ali and Napoleon Bonaparte! 'I use the same paperclay technique I use on my figures to make my Doric Delft range of boxes, trinket plates and small interiors pieces. Over the past two years, I’ve also started working in Raku and really love the instantaneous process - it’s the antidote to the laborious figures. I have a range of vessels and sculptures all decorated with the shiny, smoky, crackly glazes. 'I teach art and design as well as ceramics and the range of students I meet is fantastic. I especially love seeing people progress, despite lack of confidence and experience. I need to be out and about and in amongst folk, it is the perfect antidote to hours in the studio with just the cat, the radio and the odd visit from one of our hens for company!' Although I generally make it a rule to not tread too close to any animal that is more than five times heavier than I am, my Texas upbringing means that horses have always been the exception. I was fortunate to do a bit of riding as a child but never had the pleasure of spending time with the gentle giant of the horse world the Clydesdale. Famous for their size and the long hair or feather - covering their ankles, these magnificent creatures were first bred in Scotland for farm work and haulage. Though they were once labelled endangered, today the breed is on the rise thanks to the passion and commitment of people like Ruth and George Skinner of Strathorn Farm Stables in Old Rayne, Aberdeenshire. Strathorn Farm sits in the middle of the rolling green countryside with the entire vista of Bennachie in sight. It is a place where travelling by horse suddenly seems much more sensible than by car, which is probably why so many people come here to learn to do just that. Long established as a riding school for over fives, today Strathorn is equally known for its

carriage driving lessons and its expertise in schooling horses of all sizes to ride and drive. But of all that is on offer, nothing compares to a ride in one of the hand-built drays, pulled by a pair of glorious Clydesdales. ince time began unions have been forged, wars have been waged and dynasties have been built based on one thing - bloodline. Historically, proving the right ancestry could mean the difference between prosperity and poverty, influence and impotence. A family name is more than just a label - it is a starting point on a journey that can take you back in time and tell you everything you want to know about your line of descent. So it is interesting that so few people know the full history behind their name. My own interest in genealogy began in a Parisian cemetery when I stumbled upon a gravestone bearing my maiden name. Having spent my entire life without ever meeting another person with that name, it prompted me to look into my own lineage. Today, I am still putting together the branches of my family tree and with the help of the Aberdeen and North East Scotland Family History Society, so can you. The Society is one of a network of
Scottish family history societies that assists locals and those with links to the area to trace their heritage. Established in 1978, the Society has a large research centre and library on King Street and operates on a membership basis, with a minimal annual subscription fee. Members are given access to a vast amount of data, to all Society publications and are invited to attend regular meetings and events. With all of the information that is made available, the first challenge will be deciding where to begin. Fortunately, there are volunteers on hand to impart their experience and the Society even runs regular Family
History courses, which are available to members and non-members alike. We spend a lot of time at school studying the history of others, it only makes sense that we should also study the history of ourselves. The aim of Friends of Hazlehead is to improve and enhance the facilities at Hazlehead Park for the benefit of local residents and the wider community. Over the past seven years these wonderful events have raised over ÂŁ500,000 to benefit charities in the North and North-east of Scotland. ‘Comfort food can still be healthy - try good old fashioned meat or vegetarian broths or stews. They’re far superior to processed alternatives. Add fresh herbs, chilli, ginger or garlic for contemporary twists that are also powerful immune boosters.
‘January crash diets? I’ve done a few myself, but eating cleaner, reducing the amount of sugars and processed foods, and getting off your backside will get you results,’ Craig suggests. ‘Eating seasonally is really simple. In December and January, pomegranates, apples and clementines are at their peak as are cabbage, parsnips, seabass and venison.
'Is there such a thing as a healthy dessert? My own favourite’s a brisk walk down the beach and sharing an ice cream! Why not try some vanilla roasted fruits with a dark chocolate fondue, healthy doesn’t have to mean boring or bland!’

Peter Mitchell became a valued Trend columnist nearly six years ago after 37 years on the Press and Journal, latterly as a Diary writer. For Trend, he has interviewed lots of prominent people including TV's Angela Rippon. He is also much in demand as an amusing MC and after-dinner speaker.
At 68, Jim Knowles pooh-poohs any notion of retirement. ‘Retirement, what’s that?’ says the former head of economic development at Aberdeenshire Council as we meet for coffee at Dizzy’s in Aberdeen.

Within minutes of starting our chat, I am dizzy at the range of roles he packs into an average day, including mentoring fledgling companies in far-flung corners of the North and North-east of Scotland.
That interest in the food sector continues for him as an adviser on food processing and marketing with the Scottish Government but Jim has also spread his net widely as a director of the Langstane Housing Association, a local executive board member of Northsound Cash for Kids, supporting the Prince’s Trust young business section, vice-chairman of Aberdeen FC Community Trust, chairman of the RunBalmoral event and a judge for Trend's Life With Style Awards.
However, top priority for him at present is chairing the fundraising committee which is trying to raise a public contribution of £700,000 towards the £8million cost of the planned Banchory Sports Village. Said Jim, ‘We are more than halfway to our target which we have to reach by September of next year. This will provide a superb facility for all age groups.’ The crusade was given a massive boost by former Banchory resident Stewart Spence, better known as the Marcliffe Hotel and Spa supremo. A dinner he sponsored at the venue raised £80,000. ‘Fantastic’, said Jim. So what to expect at the sports village? Well, it will include a six-lane swimming pool and learner pool, a four-court sports hall, exercise room, squash courts, fitness suite and café. Aberdeen FC regulars Andrew Considine and Peter Pawlett are among the project’s patrons. 'I always said that when I retired from the council after more than 40 years, I wanted to put 104
Oh, and there’s the mentoring as well. Jim advises a gin distillery in Caithness, producing Rock Rose gin and the Speyside Craft Brewery. He recently won a UK award at a ceremony in London for his mentoring of the gin company. He could be forgiven for having a healthy opinion of himself but soon brings himself down to earth with a bang when he recalls his first job with Stonehaven Town Council. ‘Yes, my first job on a Monday morning was to count the money collected from the public toilets,’ he said.
