igel Barker has been head chef at the Ferryhill House Hotel for the past fourteen years, but he’s always got something new up his sleeve. 'As a youngster I remember watching my Aunt, who was a great cook, create fantastic dishes and I guess she inspired me to start cooking. The first recipe I made in college was a classic béchamel sauce. It’s one of those recipes that everyone should master as it can be endlessly adapted. I still rely on many of the basics, of which, are now second nature but nevertheless useful for so many dishes. 'Ferryhill is a family-friendly venue serving gastro comfort, homemade food. We are proud of our fresh produce and hearty cooking and try to source the

best local produce for our dishes. The menu is a mix of classics like our much-loved Cullen Skink soup along with the Ferryhill favourites such as our famous fish & chips. 'It’s not all about the old favourites, though. We update the menu regularly so we can showcase seasonal produce. We have daily specials on the menu which allows the team and I to create dishes that suit the time of year and the produce on offer. We also like to create more elaborate specials for the weekends. We also have a daily market catch

Nigel’s Cajun Blackened Salmon with sautéed potatoes, tomato sauce & grilled asparagus

Ingredients per person One medium Scottish Salmon Fillet

3 Asparagus spears

8 Baby Potatoes – sliced

One Onion – diced

Fresh chilli – ½ teaspoon

Tomato Passata

Cajun spice – ½ teaspoon

Method Pre-heat the oven to 170OC/ gas mark 7. Dust the salmon fillet in Cajun spice and roast in the oven for 8 minutes. Sauté the sliced baby potatoes in oil with the chopped onions and fresh chilli. Whilst the salmon and potatoes are cooking, char-grill

the fresh asparagus in another pan. Heat the tomato passata sauce and, when hot, place in the middle of plate. Top the sauce with the potatoes and onions. Once the salmon is cooked, place the fillet on top and garnish with the asparagus. Serve and enjoy.

s a self-confessed foodie, I often regale my long-suffering friends with my culinary adventures. I’ve never managed to provoke such murmurs of envy as this trip to sample the food at Eat on the Green garnered. Eat on the Green’s kitchen, under the guidance of Craig Wilson, known as the Kilted Chef, is rightly celebrated for its innovative use of local ingredients and superb culinary skills. This is matched by the impeccably dressed and attentive waiting team who serve up a warm welcome and quality fine dining in equal portions. It’s an upmarket yet cosy atmosphere. The charming back garden is the perfect backdrop for a few glasses of fizz during a summer’s evening, while the cosy lounge with open fire offers the perfect autumnal ambience. We took our table in the stylishly Scottish main restaurant and were presented with a delectably dainty array of canapés, followed by some interesting

My starter proved to be one of the best I’ve ever had - a mouth-watering combo of smoked salmon with yolky eggs and saffron mayonnaise. My main course Aberdeen Angus was a good cut of beef with onion, mushroom and carrot puree. My other half was in raptures over his slow cooked pork belly. Dessert may have had a hard act to follow, but the Little Taste of Eat on the Green meant we finished off with tiny portions of sticky toffee pudding, lemon posset, fudge cake and ice-cream. A little piece of amazing. With sophisticated yet simple and honest local fare, Eat on the Green certainly lived up to its reputation. If you get the chance, then go. Craig Wilson, the Kilted Chef of Eat on the Green, celebrates the game season. Once the province of landed gentry and midnight poachers, Autumn now brings a rich harvest of game birds. Your local butcher or an online game specialist may have grouse, woodcock, pigeon, pheasant and partridge.

Pan fry breasts of any game bird skin side down, baste with butter and garden herbs such as thyme or rosemary and then wrap in foil to rest. Try game in a slow pot roast, or game pie. For a divine taste make a sauce from caramelised red onions, gin, red currant jelly and a good stock. Simmer and reduce by half.

In 2009, Nontsasa Nyovane founded the Siyakhathala 'We Care' Orphanage in the township of Khayelistha in Cape Town. A former orphan herself, Nontsasa was inspired to start the organisation after a 12 year old orphan girl was abused and raped by a person that was meant to be providing her with care. She now looks after 170 children vulnerable, at-risk, abused children from 5 primary schools in the area, with the help of 112 volunteers, one of whom is local student Darren Nicol from Inverurie. The organisation provides hot meals, additional education, and social

and psychology services. In holiday periods they try to provide the kids with a much needed break from day to day township life and take them to a holiday camp. Darren says, ‘The organisation desperately needs medium to longer term funding to care for the children with the aim of getting them though high school, into stable jobs and to shape them into pillars of the community. There isn't a better cause, these kids have been dealt a tough hand and after all everyone deserves a safe place and an education’. Pergola, arch, arbour, loggia, gazebo, so much choice! All these structures can create a great focal point in the garden and provide a planting opportunity too.

T

he entrance to any space is important, and arches and pergolas are brilliant for achieving this as well as making the transition from one space to another exciting and intriguing without being consciously divisive. They can be used to create tunnelled walkways, or just make a beautiful statement that adds grace to your garden all year round. Gazebos and loggias come in all sorts of sizes. They can provide a powerful focal point, as an alternative to a closed summerhouse. Arbours are associated with seating, mostly. I believe that every garden, no matter how small should have three seating areas -

providing three very different perspectives of your house and garden. When positioned at the end of a path they will hypnotise and lure even the most uninterested garden visitor! So what is the definition of each? The arbour is a seat with a roof and sides. Sometimes it has a backing and sometimes it is open. It is usually constructed from wood and is often painted and can be created in many different shapes. The gazebo or loggia is usually crafted from wood and is something you can sit in/under. The gazebo often has several sides such as an octagonal shape, and is open whereas a loggia tends to have three sides (sometimes open, sometimes closed) with an open front. The arch can be found in many forms: flat topped, round, gothic or pitched, made from metal, wood, willow...

The pergola is usually constructed from wood or metal using posts or pillars with a lintel on top, sometimes with shaped ends, sometimes plain and often with rafter ends over the lintels to create a shaded walkway or sitting area. All of these structures provide a wonderful opportunity for planting. A classic rose arch adorned with scented climbing roses winding their way up over the top is quite irresistible! Here is a small list of climbing plants that I think are tops for this job.

Climbing rose ‘New Dawn’ or if you don’t want those thorns then try Rosa Zephirine Drouhin - a very pretty pink and beautifully scented rose that is thornless. Lonicera japonica ‘Halliana’ with heavily scented flowers in late summer, Clematis Montana Rubens or if you have a warm and sheltered garden, how about trying Wisteria Sinensis? Here’s an interesting little botanical fact - Wisteria Sinensis is Chinese and it grows anti-clockwise whereas Japanese variety 'Wisteria Floribunda' grows clockwise!

4,500 acres of green space and woodland, a wildflower meadow, natural waterways and a ‘beach’ have been created at Countesswells, Aberdeen’s newest neighbourhood.

he multi-million pound investment in landscaping to create one of the greenest and most attractive places to live in Aberdeenshire is almost ready to unveil with the first park, Cults Burn now blooming. With the first residents now living in the first of the newly created homes, Countesswells – which will become a new 3,000 home community with schools, health and leisure facilities, as well as offices and retail outlets is fast becoming the place to live. A busy Autumn of tree planting and landscaping is bearing fruit with the wildflower meadow soon to blossom and the waterways and ponds, which run through the new community, starting to fill and attract wildlife. This work will continue through this coming Autumn when the final phase of tree planting and the planting of the orchard will be completed.

The project will connect the woodland areas of Hazlehead and Countesswells together to create a sweeping vista that sticks true to the original masterplan for the site. A beach-themed feature is being created by expanding and channelling the natural watercourse through the area and installing water reeds, rushes and stepping stones. The ‘beach’ reuses many of the pebbles and rocks found during the building of the development and re-purposes them to complement

the landscape and provide natural 'stairways' for residents. The project is one of the largest in the country but it’s unique in that the level of consideration for landscaping and supporting natural wildlife has taken precedence over the construction of the homes. rom the sunsoaked Greek island set, to the timehonoured singalong songs, this performance is guaranteed to lift the lowest spirits. The premise of the show at first seems a tad contrived, but actually the idea to write a story that contains as many ABBA songs as possible is probably the work of a genius. Those songs are through us like a stick of seaside rock, whether we grew up listening to them on Top of the Pops or were introduced through the sound tracks of Muriel’s Wedding or Priscilla, Queen of the Desert, the tunes and words are just so familiar. The musical has been touring for 17 years to massive audiences and comes to His Majesty’s Theatre in Aberdeen from 19 September to 14 October, the furthest north in the UK that the tour will reach. Many of the backstage roles are filled by local people wherever the tour lands, such as scenery movers, dressers and laundry staff. One of the highlights of our

short wetsuits, flowery swimhats and flippers, dancing and flinging the bed about in a splendid Esther Williams-esque display of flipperography. The show is funny, sad and entertaining and the songs have been adapted so that men and women can sing them, either solo or in harmony. There are also several love stories intertwined through the performance, both tender and hilarious. Mamma Mia has to be one of the best feel-good musicals of all time, the perfect antidote to a grey sky or a Monday morning.

et, whether we’re visitors or have lived here all our lives, many of us have never seen much of our own country. Beyond the cities lies a mysterious mix of heather-clad hills, toecurlingly cold lochs, undiscovered wilderness and petrol stations that close inconveniently on Sundays. If you’d prefer to enjoy the scenery without being too far from urban civilisation, then the Trossachs offer a way of packing in much of the best that Scotland has to offer into a couple of days. You’ll find everything from mountains and walking trails in Scotland’s first national park, to sleepy little towns,

Scotland is a pretty small country, though we manage to pack in almost as much in the way of scenery as we do in unpredictable weather. outdoor activities and even an outlet shopping mall. Roughly speaking, the Trossachs area runs from Tyndrum and Killin in the north to Drymen and Balloch at the southern end of Loch Lomond. And from Callander in the east, to the Cowal Peninsula in the west. All in all, the National Park covers 720 square miles, complete with 21 Munros, 20 Corbetts, 22 larger lochs and the UK’s largest National Nature Reserve – the Great Trossachs Forest. There are also a dozen whisky distilleries in the Trossachs, as well as microbreweries and boutique gin producers. As you’d expect from such a touristfriendly area, there’s a great variety

of accommodation. Loch Lomond’s Cameron House is the perfect base for a luxury break. Golfers can take advantage of the championship courses, or try the fabulous food at Martin Wishart’s restaurant and a take a languid trip on the hotel’s own pleasure cruiser. Alternatively, MacDonald Forest Hills, combining a hotel with timeshare properties, has recently undergone an impressive renovation and offers a serene spa to help you unwind. If you’re planning well ahead, Monachyle Mhor at Balquhidder has a great reputation and pleasingly quirky décor, but it rarely has last-minute vacancies. If something smaller appeals, then the Roman Camp Hotel in

Callander combines boutique style with faded grandeur country house. Forest Hills, Roman Camp and Monachyle Mhor are all dog friendly. There are also a host of guest houses and plenty of campsites. For hardier specimens, it’s also possible to go wild camping, though permits are required. For something special, book two months ahead to camp on Inchcailloch, an island which offers a unique sense of calm stillness in a rich natural habitat. Just 12 people may stay on the island on any one night. It’s not just the hotels that provide great food. The area has several artisan food producers of note including Argyll Smokery at Dunoon and Loch Fyne Oysters, both known for their seafood. Katy Rodgers, at Knockraich Farm in the Fintry Hills makes superb Scottish yoghurt, as well as running a café and home interiors shop, while Cameron Skinner’s Extraordinary Sausage Company has a raft of unusual bangers, such as Banana and Madras available from the Woodhouse Deli. Lomond Chillies produces quirky chilli sauces, including the unlikely sounding Mad Monk, which combines chillies with the famed Glaswegian-favoured tonic wine, Buckfast. For something more delicate, it’s worth seeking out Chrystal’s Shortbread in the best local delis.

Once you’re stuffed with local delicacies, take some time to explore. There are plenty of activities on offer, with boat trips, angling, cycling, climbing and hillwalking. You can simply choose to wander or take one of the scenic routes marked by the park’s individual architectural viewpoints. The Woven Sound pavilion at Falls of Falloch reaches out over the rushing water to provide a magical experience, while the Faerie Hollow, which looks out over Loch Lubnaig to Ben Ledi invites the weary hiker to rest and contemplate a while. If you’ve had enough of nature then head for one of the charming country towns and villages dotted round the edges of the park. Arrochar and Callander both have a good selection of independent shops and crafty little galleries. If you’re in need of sustenance, try Ben Arthur’s Bothy, which has great views and pub grub. Further south, Balloch may not have the Victorian charm of some of the other towns, but it does offer a bird of prey centre, an aquarium and Loch Lomond Shores outlet shopping. And if neither country towns nor natural scenery appeal, you can always turn sleuth and try to discover what exactly a Trossach is!

Connecting with the North-east’s makers

S

eptember brings the highlight of the creative year in the North-east, when hundreds of the region’s artists and craftspeople open the doors of their studios to the public during NEOS. Community venues and galleries from Findhorn to Johnshaven are also involved. This year’s North East Open Studios event runs from September 9th to the 17th and features over 260 artists. NEOS offers a unique opportunity to meet and chat to individual artists, see their inspirations and working methods and learn about the huge wealth of creative talent we have in the North-east of Scotland. There’s a wide range of work on show from

painting to printmaking, textiles, ceramics, photography, sculpture, heritage crafts and jewellery making. Not only does the event offer the chance to see and purchase some outstanding work, but it helps support the creative sector. Duncan and Jacqui Grant, two of Scotland’s most well-regarded jewellery designermakers, invite selected emerging jewellery makers to show at Lava in Peterculter. Duncan explained, 'NEOS is at the forefront of making new and existing talent publicly accessible. At Lava, we support this by hosting designer makers that we feel encompass what we represent.' Bruce Swanson is one of those exhibiting at Lava. Bruce works in silver and copper together with precious and semi-precious stones, wood and other found objects to

'In my enamel pieces, I use very finely ground coloured glass which is applied to the metal piece and then melted in a kiln. Many layers can be applied to build the design, with each layer being fired and finished before the next is applied. I like using natural form to create texture in the piece. Enamelling takes a long time to master because of the unpredictability of the process. If you leave something in the kiln for a few minutes too long, it can be ruined!' It might be as traditionally Scottish as damp summers, shortbread and midges but a trip to one of the North-east’s many Highland Games makes for an entertaining day out. Here’s our pick of a few of August and September’s best Highland Games:

p in the picturesque wilds of Strathdon, the Lonach Highland Gathering and Games was inaugurated Sir Charles Forbes back in 1823. This year’s event is on Saturday 27 August. It’s probably the best dressed of the games, since the Society has been dedicated to preserving Highland dress. This year’s event, as always, features the March of the Lonach Highlanders, who parade in the area at 1pm and 3pm followed by massed pipe bands. There are dancing displays, children’s races and heavy events throughout the day. If you’d prefer a smaller games then both Aboyne on Saturday 5 August and Ballater on Thursday 10 August will fit the bill since both offer a full programme of traditional events.

If you can only make one event, then head for the Braemar Highland Gathering which provides a grand finale to the games season, drawing competitors from all over the world. The best seats are snapped up by the Queen and her family, resplendent in tweeds. This year’s gathering is on Saturday 2 September. There’s a full day of piping, highland dancing, heavy events, and the world’s oldest organised foot races. Although the events start at 9am, it’s best to arrive earlier with crowds of up to 16,000 people. You can buy tickets and parking at braemargathering.org. If you get tired out just watching, then head to the beer tent or refreshment areas, or toddle round the stalls which sell local crafts and produce. he joys of being a child include the freedom to play, eating sweets for breakfast, enjoying yourself without restraint, bouncing off walls and having indulgent relatives. One of the joys of being a grown up is that you can now do all the things you would have derided as a moody teen and have enormous fun without being remotely ironic. This is what makes the North-east’s two new trampoline parks a joy for everyone from four to eighty four. It’s silly, energetic fun for the entire family. If you think a backyard trampoline is entertaining, imaging how this scales up when you factor in an enormous industrial building filled with thousands of square feet of wall-to-wall trampolines. Visiting friends or family is one of the main reasons people enjoy holidaying in the region, according to VisitScotland’s biggest ever survey. Carried out in the summers of 2015 and 2016, the national tourism organisation’s poll saw half of the respondents citing scenery and landscape as the main draw to the region, this was followed closely by visiting friends and family (45 per cent) and history and culture (36 per cent). The Insch Connection Museum, based at the town’s railway station, has already welcomed more than half of its typical annual visitor numbers - just two months since opening its doors in April - with people travelling from across Scotland and the rest of the UK. This year’s special exhibition, ‘Our Bobbies: Policing in the North-east’, has been developed in co-operation with Geoff Marston, a retired Grampian Police officer and volunteer curator for Police Scotland (North East Division). ZARA JANJUA

o borrow a phrase much used in her native Glasgow, Zara Janjua comes across as pure dead brilliant. The sparky 32-year-old is not only an Aberdeen-based roving reporter for STV2’s Live at Five teatime show, but is also creating waves on the stand-up comedy circuit. For starters, how about appearing with Joe Pasquale on the stage of the Playhouse in Edinburgh? I met her on the STV premises at Pavilion 3 of the Craigshaw Business Park in deepest Tullos, close by wall-to-wall car showrooms. It’s a far cry from the elegant West End boulevard of Fountainhall Road where was housed STV’s late-lamented predecessor, Grampian TV. My nerves shredded with fear, I used to join the sports presenter and former boxing champ Frank Gilfeather for live chat on Scotland’s chances in the Five Nations rugby, but my twitching left shoulder got more attention than any words of wisdom. How do TV reporters manage to stay so cool?

passion to me,’ she adds. ‘As a result, food features highly in my life and it has led me to write food articles and do a cookery show called Tea for a Tenner on TV.’ A former pupil of Bearsden Academy, Zara has acquired two degrees in addition to growing a varied and burgeoning double life in TV and comedy. ‘I started with a business management degree from Queen Margaret University in Edinburgh,’ she says, ‘but I didn’t know what to do after that and just took off to Bermuda where I worked in a rum bar for a year.’ She has since added an MLit in journalism, with distinction, from Strathclyde University. However, Zara is the first to acknowledge the inspiration she has gained from colleagues in the STV newsroom in Aberdeen. ‘There’s lots of energy there and I was fortunate that the frontline news presenter Andrea Brymer took me under her wing and helped me learn so much about presenting and the production know-how required.’

But what of Zara, who has settled happily into living in 'warm and friendly' Torry? ‘I come from a large Asian family and we are passionate about food,’ she says. ‘As a result, I always make far too much and enjoy sharing it with my Polish neighbours who return the compliment by giving me some of their food. You did not get engagement of that kind when I lived in a flat in Rosemount.’

Zara pops up all over the place on TV, not just as a roving reporter diving with sharks, for example, but also in adverts. She tells me she is to feature playing the part of a reporter in a global advert and poster campaign for Liz Earle skincare. And if you are quick, you can spot her in a recent Lidl ad.

So where does the surname Janjua come from? ‘My dad is from Pakistan and my mum is a very proud Glaswegian who learned to cook over there and passed on her
