EDITOR Welcome to our October and November issue of Trend. It’s definitely autumn now and we’re looking ahead to the festive season with anticipation and huge enthusiasm. We love all the Christmas shopping, menu planning, present wrapping, catching up with friends and family, eating too much chocolate, taking a trip to the pantomime and the way everything is magically covered in glitter and sparkle. We have three special festive events of our own at Trend, so join us if you’re feeling festive and want to get the season off to a great start. We have our afternoon Christmas Fayre at the Marcliffe on 10 November, with some fabulous gift ideas from local makers and businesses. Then it’s off to Edinburgh on our special shopping coach on 13 November. Grab a couple of friends and have a fun day getting your Christmas shopping done in one fell swoop.

Lastly, we’re back at the Marcliffe on 29 November for Bubbles and Baubles, a three-course lunch with a glass of fizz on arrival and a goody bag to take home, however this has been so popular it has sold out! Of course, it’s not all about Christmas! There’s plenty of ideas for things to do, places to visit and explore at this time of year, whether it’s wandering through the Art Gallery when it opens again, a walk in the woods foraging for mushrooms, strolling along a deserted beach, updating your winter wardrobe or personal style, catching a concert or two, or trying a new restaurant. inter exercise isn’t always easy. Running outdoors generally involves being miserably cold and wet, cycling involves too much Lycra and swimming can turn your expensive highlights a sickly shade of green. Let’s face it, most of us want to stay indoors and huddle on the sofa, bingeing on box sets till spring.

Yoga, however, could be your perfect form of exercise over the winter months. Classes are indoors, often in hot rooms, you can wear comfortable clothes and it offers enormous health benefits. You can even use YouTube and follow some yoga workouts without leaving the living room. Yoga is over 5000 years old and is practiced by more than 300 million people worldwide. It’s great for those of us who sit at a computer all day, helping to release tension in the neck and shoulders, boosting immunity, improving breathing control, helping with bloating, and reducing stress. Regular yoga practice

improves flexibility which in turn reduces the chances of overuse injuries and injury through muscular strain. Maintaining a good level of flexibility will certainly help you stay healthy, not to mention independent, later in life. Yoga also offers considerable mental health benefits. Now he’s passing on that family tradition to his daughter. ‘Sophie’s very much into baking at the moment, and cupcakes in unicorn colours is her current craze.’

POMMES ANNA 300g potatoes, semi waxy with firm flesh - Rooster or Maris Piper work well 70g unsalted butter, plus extra to grease Salt and pepper Grated Parmesan (optional) Grease two small, individual copper or cast iron frying pans with butter. Heat the oven to 180ÂşC. Peel and slice the potatoes very thinly - using a mandolin. Melt the butter in a pan and coat the slices of potato, seasoning well. Layer up the potatoes in the lined tins so that they overlap, and they are all used. Cover with buttered parchment paper and foil.

Roasted north sea cod with pommes anna, smoked bacon, peas & tartare sauce (serves 2)

Start to cook the Pommes Anna on a low heat on the hob for 4-5 minutes so that the bottom begins to turn lovely and golden. Bake for 40-45 minutes until tender and well-coloured. Remove foil towards the end of cooking to help brown if it is still looking a little pale. Sprinkle Parmesan over the top, if using.

TARTARE SAUCE 200ml mayonnaise 3 tbsp capers & gherkins, drained & chopped 1 small shallot, finely chopped Squeeze of lemon juice, seasoning 3 tbsp chopped fresh parsley Mix together all the ingredients in a small bowl and serve straight away or store in the fridge until needed. FOR THE COD 2 x 160g cod fillet Heat 1 tbsp rapeseed oil in a non-stick frying pan; season the cod with salt and place skin side down. On a medium heat cook 80% through on the skin side, flip and add 25g butter. Remove from heat and allow to finish cooking. Add squeeze of lemon juice. FOR THE PEAS 125g frozen peas 60g smoked bacon lardons 20g silverskin onions Defrost the peas. SautĂŠ the lardons till crisp, add the silverskin onions and cook until a light golden colour. Add the peas and warm through. Season and plate up.

T

his casual, open eating space is dressed in natural textures and atmospheric lighting, but the star of this show is the monstrous bespoke pizza oven that is on fiery display in one corner, turning out fresh, Neapolitan style pizzas every sixty seconds. We visited on a Wednesday night, and the crowd made it clear how much this city needed a casual but authentic pizza restaurant. The menu is deliciously simple - a handful of starters and sides, and a selection of fresh, thin-crust pizzas topped with gourmet ingredients at an incredibly reasonable price.

To begin, we tried the garlic infused crostini, topped with plum tomatoes and the freshest pesto I’ve ever tasted. I created my own pizza, starting with the tomato base and adding a host of fresh toppings including artichokes, olives and chestnut mushrooms. My daughter was more adventurous, taking a vegetable-laden base and adding Mac’s nduja spicy sausage, which apparently packs a real punch. There are some great options for meat lovers, like the blaggis (black pudding and haggis), and vegan cheese for those at the other end of the spectrum. Whatever your taste, Mac’s has a pizza for you.

s the harvests come in and the game season kicks off, autumn brings out the best in local produce. In the restaurant, as well as growing our own veg and herbs, we use some of the region’s best food producers. The quality, flavour and freshness is unrivalled. Artisan products are so refreshingly different and have their own food story. Buying local makes sense in terms of food miles, but also in terms of quality.

Two particular favourites are worth adding to your own shopping list. The Veg Co (vegco.uk) produce some amazing sauces and jams, as well as growing chilies and tomatoes sustainably on their family farm near Ellon. e headed to Ballater on a sunlit autumn evening for our date with a tasting menu at Rothesay Rooms, the restaurant run by The Prince’s Foundation. The cosy, relaxed surroundings coupled with a friendly and knowledgeable team provided the ideal backdrop to sample first class Aberdeenshire produce. We’d come to try the six course menu with paired wines, and from beautifully tender venison to firmly flaky hake, unctuous duck to oozy cheese, each course just kept on delighting with taste, texture and presentation. Particular favourites were the venison shoulder and cauliflower on the confit duck. The optional

paired wines came with tasting notes from the expert team, and the open kitchen provided a cohesive feel to the whole room. Chef Ross Cochrane was on hand to explain his passion for culinary adventure, ‘We offer an experience rather than just choices on a menu, and we want that to be available whether you walk in off the street or book ahead. irstly, keep in mind that if you prune at the wrong time, it’s not the end of the world! It’s easy to correct in the next growing season by pruning at the right time. Here are some general rules for pruning: SPRING-FLOWERING TREES & SHRUBS: These flower on wood produced during the previous seasons’ growth and should be pruned soon after they stop flowering. SUMMER-FLOWERING TREES & SHRUBS: These flower from new wood grown in the same year, so prune these in late winter or spring before new growth starts Pruning trees and shrubs without flowers or fruit: These should ideally be pruned when they are dormant, which is usually between November and March. DECIDUOUS TREES (THOSE WHICH LOSE THEIR LEAVES IN AUTUMN): Most deciduous trees are best pruned when dormant, in late autumn or winter. Don’t prune in early spring as many trees bleed sap if cut at this time of year. The exceptions to the ‘deciduous tree’ rule are maple, horse chestnut, birch, walnut and cherry trees which all bleed even towards the end of the dormant season, so prune these in midsummer after the new growth has matured. If major surgery is required or where pruning is required at height, this should be undertaken by a qualified and registered expert. There are plenty of good tree surgeons around to assist with these tasks and they have the correct equipment and knowledge to do so.

Evergreen shrubs don’t usually need heavy pruning, just shaping, unless they have been left too long. Most evergreen shrubs can be pruned just before growth starts in mid-spring - provided that the frosts have passed. Evergreens that are still flowering or about to flower in mid-spring can be left until flowering has finished. Hedges are best pruned between spring and summer - remember to leave hedges wider at the base than the top to help it keep its balance and shape. BOX HEDGING & TOPIARY: It’s best to clip this at the beginning of June as long as the night frosts have passed. Don’t clip them in full sunshine and try to do it on a dry day if possible. Make sure that you clear up all the clippings and remove them. Immediately after clipping box hedges, spray the entire hedge with a good dousing of seaweed extract solution, which helps to maintain the health of the plant. Plants are at their most vulnerable when newly pruned. If you want to avoid blisters, I would recommend purchasing some cordless, rechargeable hand shears. It’s much easier on the hands when clipping metres of box hedge or complicated topiary! If you want more detail on specific plants and how to prune these, I can recommend ‘The Pruner’s Handbook’ by John Malins as a good guide. I hope these tips help but if you want more detail there is a huge amount of information on this subject available on the Royal Horticultural Society’s website at rhs.org.uk.

Five stars behind bars Peterhead Prison Museum has achieved a Five Star Visitor Attraction Quality Assurance award from VisitScotland. The former Victorian HMP Peterhead operated as a prison from 1888 to 2013. Getting there is pretty easy, with flights from Aberdeen to Gdansk in the north of the country, Edinburgh to Warsaw Chopin or low cost carriers out of Glasgow to Warsaw, Krakow, Katowice or Wroclaw.

rakow makes the perfect base for a long weekend or city break. It’s a typically beguiling Mittel-Europe mix of castles and cathedrals, winding Old Town Streets, food outlets and shopping centres. There are a number of river cruise options that while away a lazy hour or two. If you’re in a contemplative mood, then a tour of the AuschwitzBirkenau Memorial site will put your own troubles into perspective. You can also tour the Oscar Shindler Factory Museum, or a salt mine. In the city itself, the

Basilica Mariacka, Wawel Royal Castle and the former Jewish district provide a potted overview of the city’s history. Avoid the tourist souvenir tat and head for Kacper Ryx Historical Shop and Lunaria. Kacper Ryx sells handmade traditional crafts while Lunaria has a great selection of Polish art. Other shops worth popping into include Koza Dereza for handmade toys, many local galleries, craft and ceramic outlets and sweet shops as well as the local markets at Stary Kleparz and the Cloth Hall.

Relax after a weary day of trekking round Krakow’s attractions with a visit to Hammam Shahrazad, a traditional Turkish bathhouse where you can be massaged and pampered back to life and grab something to eat. Just as Scottish food is not all haggis and deep fried Mars Bars, so Polish cuisine has moved on from the days when every dish featured potatoes, cabbage and sausages. Try Art for a modern take on Polish specialities. Krakow offers a cosmopolitan selection of restaurants, with everything from decent sushi and a Taiwanese noodle bar to vegetarian options. Vegans have a slightly more limited choice, but Vegano offers some unusual and very trendy dishes. If you’re feeling more adventurous, the High Tatra mountains offer a wealth of snow sports and winter activities. It’s pretty close to Krakow and Katowice if a day’s skiing or snowboarding appeals, but if you want an all-action break then head for Zakopane, Poland’s winter sports capital. The town boasts some traditional Grand Hotels like the Stamary, alpine style chalets like the Aries Hotel and Spa and modern hotel chains, as well as a host of rental B&Bs. All can be surprisingly inexpensive.

The Tatras offer black ski runs as well as less challenging downhill routes, all terrain biking, mountaineering, canyoning, hiking and hillwalking, rafting, an aquapark and – for the very brave or very foolish – even a ski jump. Aberdeen’s new O music festival

ver the past few years, the city’s Soundfestival has become a firm favourite amongst those with an appreciation for new music, with a thoughtful line-up of events that are always interesting and entertaining. The 2019 event runs from 23 October to 3 November and there’s a great mix of innovative and sometimes challenging work. This year, Soundfestival has a focus on endangered instruments, particularly showcasing the oboe with a fascinating series of performances from Christopher Redgate on the Howarth-Redgate oboe. Redgate has reinvented the oboe bringing a new dimension to the traditional mellow sound. Don’t miss his concert on 24 October with Quatuor Diotima, one of the most in-demand string quartets in the world today.

The first week’s highlights also include a world premiere of composer in residence, Ailie Robertson’s new work about motherhood, featuring the sensational vocal ensemble EXAUDI. Tickets for this opening event on 23 October at the Lemon Tree will go fast, so book well in advance.


In the festival’s second weekend, Nicholas Daniel continues to showcase the oboe in a number of concerts including a portrait concert of work by John Casken on 31 October with the Fidelio Trio in association with the University of Aberdeen, and a performance of festival patron Sir James MacMillan’s Intercession for 3 Oboes with Dutch oboist Oliver Boekhoorn and French oboist Jean-Pierre Arnaud on Saturday 2 November. There are also events to mark the reopening of the city’s Art Gallery.

Saturday 26 October brings a timely cello performance in the shadow of BREXIT, with We need to talk / Il faut qu'on parle, which explores the relationship between two cellists from France and the UK and their shared and not shared language. This is an intimate performance piece which also incorporates text and movement, but worth extending your comfort zone for. This weekend also features Claudia Molitor’s Decay, a moving piece which embraces the melancholy of loss and rejoices in the promise of change; Written in Fire, an emotive new work created by violinist Rakhi Singh and pioneering electronic musician Vessel (Sebastian Gainsborough) inspired by Janáček’s string quartet Intimate Letters; and new works developed as part of a composer’s residential weekend with Red Note Ensemble.

On the previous evening, Scotland’s contemporary ensemble Red Note will be joined by local new music group Any Enemy for a concert featuring new music commissioned by sound from three pioneering composers, Tansy Davies, Linda Buckley and Luke Styles. As well as individual concert tickets, there are a range of festival passes available for those who really want to immerse themselves in new music for a week or two. There are also some free events and you’ll find lots of concerts and performances in towns and villages throughout the shire as well as in the city itself. There are workshops for composers and musicians, late night sessions, lunchtime concerts, family events and plenty of opportunities to speak to the musicians and learn more about today’s classical music. W

hen I first moved to Scotland from America 22 years ago, I had never heard of a Christmas pantomime. Needless to say, I did not know what to expect, as my only understanding of the word pantomime had me thinking I would be watching a silent man with a white painted face climb an imaginary ladder for two hours. I could not have been more wrong. Although many think it to be a strictly British custom, panto as I now know it has been inventing and re-inventing itself since the middle ages, taking on some characteristics of early Italian street theatre, courtly European masques, and traditional English Mummers plays. Today, most pantomimes follow a well-known formula that has cemented their place as a family favourite during the festive season. While it is true that most pantomimes are adapted from popular fairy tales, it is more likely that children love this form of theatre because it is one time when they are invited to openly and loudly boo and hiss at the performers, and even

engage in raucous debate as to whether or not something is as it seems - ‘Oh no, it isn’t’! Adult audience members may enjoy some boisterous input as well, but their laughs typically come from the localised quips and overt innuendo, usually delivered by the cross-dressing dame. Because of the popularity of the art form, pantomimes now run throughout most of December, and some even beyond Christmas. In and around Aberdeen, we are absolutely spoiled for choice. The 2019 Panto Season includes productions of Cinderella at both Aberdeen’s His Majesty’s Theatre and Inverurie Town Hall, Snow White at The Tivoli Theatre, Beauty and the Beast in Peterhead, and The Snow Queen in Stonehaven. Although it is not something I grew up with myself, I am glad that pantomime has become a holiday tradition in my own family. Apart from all the obvious reasons to love the Christmas Panto, it is a wonderful side-effect that this gregarious form of expressive art attracts a widely varied audience, who might not otherwise be exposed to the joys of the theatre.

Pet portrait artist Katherine Deans shares her love of drawing animals… I grew up in a small town in Surrey, England but moved to Aberdeen 4 years ago. I love living near the beach and the beautiful Scottish scenery. I recently bought my first house and I am glad to call Aberdeen my home. I come from a very creative family as myself and three sisters enjoy creating artwork, tattoos and textiles. Throughout school, art and graphic design were my favourite subjects and I carried on with these subjects until I completed my A Levels.

I’ve always loved animals, especially dogs. Ever since I can remember, I’ve been surrounded by pets through family and friends. Anytime a birthday or Christmas comes around I like giving people personal gifts, so I started painting pictures of their pets as presents for my loved ones. It wasn’t until I drew my sister’s Dogue De Bordeaux, Maximus, that people told me I should do something with my talent. Although I occasional get commissions for portraits of people, or even cars, I specialise in pet portraits. I enjoy drawing pets so much because I know how much they are loved by their owners and the style of my artwork is best suited for animals.

When I’m working on a pet portrait, I like to keep the background plain as I feel the pet is the main focus of the drawing. To add colour, I use watercolour paint for the fur. This is when I can start adding definition by creating shadows where the paint in more concentrated or water the paint down where there are highlights. Once I am happy with the watercolour I then use a black ballpoint pen/biro to create the lifelike features of the animal. I draw each fur stroke in the direction that the fur grows to make the drawing look realistic. I vary the pressure of the pen to create dark and light areas and layer the strokes to add definition to the fur. Once this is completed, I add some white acrylic to areas such as the eyes, teeth and tongue to create the illusion of a wet/glossy surface. People often ask how I can capture a pet’s likeness and personality. I like to work from several photos of the pet so I can make sure the features are proportioned and situated correctly on the page. I can portray their likeness through fur markings, eyes and mouth areas and the photos sent tend to convey the pet’s personality well. Each drawing takes a couple of hours as I like to take time to perfect the drawing.

Prices depend on size of the work and the number of pets to be portrayed. My Christmas diary will be open from the beginning of October and anyone buying a drawing for Christmas will also get a hand drawn Christmas card of their pet. the best possible start in life,’ she says, ‘and support for our aims comes in many different guises. For example, there is a knitting group which meets in Aberdeen’s Central Library. We also had an open day at the beginning of September and 22 people turned up, keen to find out how they could help, for example, in sorting out donations and helping deliver consignments for despatch by social workers, health visitors and teachers.’

The children’s charity AberNecessities is barely out of its infancy but already it has helped dozens of needy families in Aberdeen and Aberdeenshire with supplies of nappies, clothes and cots.

f proof were needed of the impact it has made, I saw for myself rooms bursting with donations from the public at Craigievar House, an unused office block in the Kirkhill industrial estate at Dyce given free of charge to charities. My guide was Michelle Herd, the part-time chief operating officer, whose position was made possible by the generosity of an old friend from her schooldays at St Joseph’s in Aberdeen, Miriam Smith, and her husband, Ian, a retired Domino’s Pizza supremo in Aberdeen. ‘They are both very valuable trustees of the charity,’ says Michelle, ‘and that is

exemplified by an extraordinary gesture of support they made at Ian’s 60th birthday party. Guests were invited not to bring presents. No, bring nappies, they said. The result was staggering. No fewer than 9,000 were donated and took up most of the space in the Smith garage for a while to EVERY the exclusion of any vehicles.’ Michelle is quick to give credit to her daughter, Danielle Flecher-Horn, for providing the impetus, as a mum of Freddie (3), and Nancy (1), to alleviate the pressure on young families with limited resources. ‘AberNecessities believes every child deserves

AberNecessities has also had to respond to wider needs that have been flagged up by families struggling to cope. Says Michelle, ‘We were asked if we could supply items for the bedroom such as beds, duvets, pillows and bedding and we have been fortunate to get generous discount from the local Sainsbury furniture firm in Aberdeen. We also try to give new mums toiletry bags for themselves. Another request we had was for wellies for playgroups and nurseries.’ Raising funds for the cause is another priority for Michelle who is keen to have companies choose AberNecessities as their charity for a given period. ‘We set out that intention at our launch in March and, of course, we need all the volunteers we can muster,’ she adds.
