Editors’ etchings After hours of researching and online window shopping, my new barbecue finally arrived. After my partner had defied the two hour assembly rule on the discarded instruction booklet, the Barbie was wheeled into place on the deck for the heavens to baptise. We haven’t pressed the ignition switch since. As a team of optimists at Trend, we’ve nevertheless dedicated this issue to summer sizzlers and everything you could imagine to accompany the chargrilled chipolatas, succulent steaks, barbecued burgers and green sprinkled salad. Trend’s ‘sommelier’ Carol Brown, offers a few tips on appropriate wine to quaff at outdoor summer gatherings, while our new bar fly, Gomes, conjures up a cocktail to whet the appetite. If the sunshine continues to elude us, win a chance to escape to beautiful Barcelona with our fabulous Fly Globespan flights competition. I must admit, I’m guilty of leaving my TV on standby. I would like to walk more, but I have to drive to work. I don’t cycle, but I might now invest in a bike!

Lock up your cosmetics, girls... it appears that macho make-up is the latest must-have for the image conscious metro-sexual! red Hot hairdos are sizzling. Whether you go all out bold orange, like top model Agyness Deyn, or opt for a more subtle auburn, ginger is the cool colour of the moment. Auburn will be best for the Autumn-Winter 2008/2009 season. Chopped Crops are the cream of the late summer months. Peaches Geldof, Alexa Chung and Agyness Deyn are proof that short locks can be funky and make an instant statement. Crops can be super-sexy in either a scruffy, unkempt style, or slicked back sleek chic. Use products that give texture and movement so as to avoid hair that looks over-styled. Current Buns are the crowning glory. Buns don’t need to be dull and librarian-esque. The latest looks come in all shapes, from plait-knots to sleek, sophisticated twists.

Bangs are still bucking the trend. Fringes are still big news and if you’re thinking about getting one cut in, be prepared for some work to keep it looking groomed. Sun damage (also known as photo damage) can be seen in the form of fine lines, wrinkles, patchy or mottled darker areas of pigmentation and is caused by exposure to the sun. Ace of Blades, Aberdeen’s first traditional Turkish barber, offers an unparalleled male grooming experience for the man about town. As well as modern haircuts, they specialise in hot towel shaving (using an open razor) and the removal of ear and other facial hair by face-flaming or singeing. Brothers Fikri and Dogan Arslan first set up shop just over two years ago, and have since tended the needs of half the Aberdeen Football team as well as customers from eight to 81. The atmosphere is jovial, but it’s clear that the brothers have an extraordinary level of expertise.

Our brave volunteer opted for the hot towel shave, and was soon swathed in a wet flannel before Dogan works up a layer of foam with a traditional bristle brush. As he works with the open razor, he lifts the skin, explaining that this raises the hair and allows it to be cut below the normal level of the skin, creating a much smoother finish. Once all the hair has been removed, an eye watering alcohol wash is splashed over the skin. This is followed by a robust massage, which includes an invigorating back and neck rub. The final part of the process involves singeing off any stray ear hair by face-flaming, where a ball of cotton wool is held in long scissors, set alight

and brought near the offending hairs very quickly. Fikri mentioned that the brothers find it surprising that so few Scottish men have experienced ‘a proper shave,’ explaining that an 81-year-old had recently come in to try it. If you’d rather tone up and show up, than curl up and turn up on the beach this summer, then Ross Dunbar, personal trainer at David Lloyd Leisure in Aberdeen, has it all figured out… “In the three years I’ve been working as a personal trainer, I’ve never seen this level of demand,” admitted Ross, who spends an average of 30 hours a week creating bespoke personal training sessions for his male and female clientele.

Among his clients is Aberdeen mum, Laura Jarret, who has been a member of David Lloyd Leisure since it opened in Aberdeen 18 months ago.

“Some women are coming for personal training sessions in pursuit of the ‘bikini body.’ That involves lots of weight, cardio and abs training, as well as offering dietary advice.”

At the age of 31, Laura was 38-weeks pregnant when – out of the blue – she experienced a stroke. Five days later, baby Hannah was born by Caesarean section. Initially, she was unable to walk

John’s winning menu consisted of trio of monkfish, slow braised shin and cutlet of Grampian lamb, pearl barley risotto, 22

Who is your favourite celebrity chef and why? I would have to say that there are two: Jun Tanaka and James Tanner. I greatly admire their creative imaginations and ability to transform the simplest ingredients into cutting-edge, innovative dishes. What, in your career, has made you most proud? Whilst working at the Antica Pesa Restaurant in Rome, I cooked for Woody Allen and Francis Ford Coppola, who both personally thanked me for an excellent meal.

What was your biggest kitchen disaster? I was catering for a large wedding reception in Italy. The prep was done in a restaurant kitchen and we then had to transfer to a mobile kitchen at the venue of the reception. Unfortunately, the oven timer at the remote site was broken, and after placing a baron of beef inside I carried on in another area with other dishes. When I returned, there was smoke and fire billowing out of the oven and the beef was more than well done. We very quickly had to source ingredients for another dish so as not to spoil the couple’s happy day. If you weren’t a chef, what would you be? My passion is motor racing, and I would love to have been a mechanic in a Formula 1 team (Ferrari, of course!).

What is your favourite comfort food? Any simple dish, as long as I have the pleasure of eating it at home with my family. For whom would you most like to cook and what would you serve? A special customer at Pavarotti’s who asked for something not on the menu. I prepared for them a butterflied fillet of Ballindalloch angus steak, stuffed with home-made pate, rocket leaves and pecorino cheese, with a sauce of marsala wine with speck affumacato – outstanding! Name your favourite restaurant on the planet and why? That’s easy. Michelin 2-star, DON ALFONSO 1890-Sant’Agata sui Due Golfi, between the gulfs of Naples and Salerno in southern Italy. Not only for the stunning position of the place, but also for the three principles on which their dishes are based: Mediterranean character, absolute quality in raw materials and modernity. What is the Scottish culinary scene’s biggest Achilles heel? Not cooking with simplicity or taking full advantage of the wealth of exceptional local produce on the doorstep.

Watermelon Agave Julep… Ingredients: Fresh watermelon chunks, 6 fresh mint leaves, 1 tsp. of vanillainfused sugar (or vanilla gomme/syrup), 2 oz Patrón Silver. Mint sprig (garnish) Method: In a 12oz rocks glass, fill half way with fresh watermelon chunks, add 6 fresh mint leaves and one heaped tsp of vanilla-infused sugar then muddle in glass until puree-like. Add crushed ice to top, and pour in 2oz of Patrón Silver, stir thoroughly with bar spoon, and top off with some more crushed ice. Garnish: mint sprig.

Dinner Review ‘Eat On The Green’ overlooks the village green of Udny Green, between Oldmeldrum and Ellon. The restaurant has built up a reputation under the ownership of chef/proprietor, Craig Wilson, and diners travel from miles around. Comfortable leather chairs and crisp white linen give a welcoming feel. On Saturday evenings, the usual a la carte menu is replaced by a three-course set menu at £39.00 per head. Canapes swiftly arrived and were devoured appreciatively. These were shortly followed by a selection of just baked, homemade rolls. Choosing from the six starters and seven main courses was difficult, only because I wanted to order everything. With food ordered, I could concentrate on the wine list, a good mix of classic old world regions and signature new world grapes. We went for a zingy, minerally, golden delicious inspired Chablis 2007 from Jean Durup (£23.50), and a red fruit, bramble, vanilla and cedar oak-influenced El Coto Rioja 2003 (£18.95). The starters were beautifully presented. I began with a baked marinated sea bass, with saffron and dill mayonnaise and a salsa verde; it was light and moist. I also enjoyed my friend’s melt-in-the-mouth slow cooked belly pork with apple puree and the crispest of crackling, and her husband’s cream of leek and smoked salmon soup, but couldn’t quite reach my hubby’s ‘savoury little taste of Eat On The Green’. 32

It’s a while since I’ve seen guinea fowl on a menu, so that sealed my choice. It was flavoursome with a rich port and mushroom jus. The other main courses were also winners, with ingredients thoughtfully put together and perfectly cooked. A crisp pastry lemon tart with a brulee top prompted plenty of ‘oohs’, and the selection of I.J. Mellis cheeses was excellent. Just back from a study trip to Sauternes, we had to have a half-bottle of Chateau Grand Piquey Sauternes AC 2004 (£28.00), with marmalade, marzipan and citrus traits; it was a luscious complement to both the cheeses and our chosen desserts.

Lunch Review The Spice Mill Indian Fusion restaurant opened in a converted mill space in Grandholm Village this April. Set on two levels, the high-beamed ceilings contrast with exposed stonework, red walls and vibrant artwork, creating real warmth in the space. The menu lists many of the Indian classics as well as a number of interesting regional, vegetarian and low-carb dishes. Poppadoms, chutney, raita and pickle arrived immediately, and service was attentive throughout. A cool Cobra beer went down well.

We retired to the cosy lounge area for coffee and petit-fours. During the evening, Craig appears in the restaurant periodically to chat to diners. His approach of locally sourcing top quality ingredients and attention to detail, combined with attentive staff, make ‘Eat On The Green’ a ‘must try’ dining experience.

The restaurant was happy to oblige with smaller portions of a moist chicken tikka and a creamy, mild chicken korma for our boys, who began with chum chum chicken (crisp, deep-fried spiced strips of chicken).

When faced with an array of starters, it’s so much easier to take the easy way out with a mixed sharing platter which

contained both chicken and vegetable pakora, and lamb, chicken, salmon and king prawns, all in a tikka style. For main courses, we opted for dishes new to us. A Mangalorean chicken salom from southern India was a good sweet and spice contrast, enhanced by mustard seeds and curry leaves (£9.95). I went for king prawn elaichi marsala (£14.95) – four generously proportioned king prawns, marinated in yoghurt, garlic and ginger, cooked in the tandoor and served with garlic pilau rice. A crisp pastry lemon tart with a brulee top prompted plenty of ‘oohs’, and the selection of I.J. Mellis cheeses was excellent. Just back from a study trip to Sauternes, we had to have a half-bottle of Chateau Grand Piquey Sauternes AC 2004 (£28.00), with marmalade, marzipan and citrus traits; it was a luscious complement to both the cheeses and our chosen desserts.

Lunch Review The Spice Mill Indian Fusion restaurant opened in a converted mill space in Grandholm Village this April. Set on two levels, the high-beamed ceilings contrast with exposed stonework, red walls and vibrant artwork, creating real warmth in the space. The menu lists many of the Indian classics as well as a number of interesting regional, vegetarian and low-carb dishes. Poppadoms, chutney, raita and pickle arrived immediately, and service was attentive throughout. A cool Cobra beer went down well.

We retired to the cosy lounge area for coffee and petit-fours. During the evening, Craig appears in the restaurant periodically to chat to diners. His approach of locally sourcing top quality ingredients and attention to detail, combined with attentive staff, make ‘Eat On The Green’ a ‘must try’ dining experience.

The restaurant was happy to oblige with smaller portions of a moist chicken tikka and a creamy, mild chicken korma for our boys, who began with chum chum chicken (crisp, deep-fried spiced strips of chicken).

When faced with an array of starters, it’s so much easier to take the easy way out with a mixed sharing platter which

contained both chicken and vegetable pakora, and lamb, chicken, salmon and king prawns, all in a tikka style. For main courses, we opted for dishes new to us. A Mangalorean chicken salom from southern India was a good sweet and spice contrast, enhanced by mustard seeds and curry leaves (£9.95). I went for king prawn elaichi marsala (£14.95) – four generously proportioned king prawns, marinated in yoghurt, garlic and ginger, cooked in the tandoor and served with garlic pilau rice. We kick off with pannacotta with rhubarb and ginger compote. It’s easier than I expected. On to the navarin of lamb – which seems to be an upmarket version of a stew – and a fine herb risotto. Much stirring and tasting goes on. After a pleasant lunch, which we make ourselves, it’s back to the kitchen where we’re introduced to green garlic and each have to peel and chop about thirty cloves. All the ingredients come pre-weighed and all your dishes and utensils are removed and returned nicely washed by the kitchen fairies. If only real life was the same. Around 4pm, we’re all packed off with our remaining dishes in containers. At home,

all the dishes get the resident carnivore’s seal of approval, but for some reason he sniffs the garlic veloute and passes. I certainly learned much over the day. Not least that if you’re going to peel lots of garlic, you had better hope the train is pretty empty on the way home. With many projects lasting for months, rather than weeks, the prospect of a standard hotel bedroom is becoming less than appealing. More and more now these people are looking for a home away from home.

It would be a rarity for the Aberdeen socialites who frequent the acclaimed Simpson’s Hotel not to see its effervescent general manager, Martin Brown, in amongst the thick of it. You see, the hospitality business runs through his veins…

Here’s an example: the grandparents of new-born Jessica want to put some money aside for her future. Under the current rules, they can pay £3,600 a year into a pension. This contribution would receive basic rate tax relief, so they need only contribute £2,880 this tax year (08/09). Also, there are no Inheritance Tax or Capital Gains Tax complications.

It was in 1992 when a fresh-faced Martin Brown joined entrepreneur Ricky Simpson’s business as an ambitious young trainee manager. Drinkray Limited had in its portfolio Aberdeen hospitality stalwarts, the Craighaar Hotel, the Palm Court, Charlie’s Bar and the Word on the Web. He worked his way up through the line management ranks and was charged with the ‘Simpson’s Project’ in early 1998 as a senior manager. Martin’s big break came nearly six years ago when he took the helm of Simpson’s hotel as general manager. “Ricky obviously saw my potential in those early days”, said Aberdeen-born Martin. “I treated every decision and looked after every customer like it was my own business. I live and breathe the career, and believe that you’re only as strong as the people you hire.” 36

By making annual contributions until Jessica is 16 (assuming a 7% rate of growth), Jessica’s pension fund at age 16 will be £94,900. Not a bad start…

Simpson’s Hotel celebrates its 10th birthday this year with a 7.4% increase in turnover and a staff complement of nearly 100. “It’s been exciting times. After a change of ownership to Manorisms LLP, of which I am a director, we brought Kepplestone luxury apartments under the same umbrella. I’m now working on amalgamating the businesses and making them stronger and better,” enthused Martin (34), whose company is investing a six-figure sum in the refurbishment of Simpson’s Hotel’s 50 bedrooms. Despite flirting for a while with thoughts of a career in TV production, the hospitality

industry is Martin’s vocation. Although he frequently works an astonishing 70 hours a week, he shrugs that off – the way he sees it, it comes with the territory.

Should Jessica and her grandparents make no further contributions, leaving the fund to grow, the fund will be worth £1.3million by the time Jessica reaches 60 (again, assuming a 7% growth rate). What you get back, though, will depend on how your fund grows and the tax treatment of the investment.

Personally, I prefer the technology in a room to be as discrete as possible and have found ways to house or disguise what can be quite ugly objects and create something more aesthetically pleasing. Many companies are manufacturing units which house the television and all the other gadgets, boxes and wires that go with it. One of the best (and affordable) is Bo Concept’s unit with a sliding panel which allows enough room for a 50” LCD screen and gadgets on one side. Cleverly, you can slide the door across to hide it and reveal bookshelves on the other side. If you like to do your TV viewing in the bedroom, one decadent solution is to splash out on a TV bed. I love the ones from Mayflower designs on which, with a push on the remote control, the TV slides out of the footboard. For music lovers, have a look at Artcoustic’s range of wall-mounted speakers that feature interchangeable screens in an array of fabrics and decorative prints. My first tip to those disembarking from Aberdeen is to bring your brolly. But if it slipped your mind, I can guarantee that within the next half hour, you’ll buy an irresistible umbrella that will attract so many admirers, it’ll make your wet hairdo your new best friend.

If it’s the hardy perennial High Street stores you seek, turn right after the ticket office at Queen Street Station, up the steps and left into Buchanan Galleries – they’re all there. But, why? Instead, stroll down Buchanan Street and take in the iconic Apple Store – exclusive to Glasgow in Scotland. As I make my way onto the small dance floor, my view of the stage is brilliant… because the fact is, there’s no-one else here!! I ponder this thought and wonder if this next hour or so is going to be worth it. The band make their way onto the stage and I’m enthused by their instantaneous energy and how, all of a sudden, my view is obstructed by a mass of fans, waving their arms and bopping their heads! Perhaps this won’t be so bad after all… rising onto my tiptoes, I can see four young guys bursting with sound, who immediately feed off the crowd’s energy. Before you know it, they’re laughing and joking with the die-hard fans at the front - although admiring from afar, I am loving the banter! “Sergeant” played a mixture of songs, all of which were fun-loving, playful tunes that had everybody dancing. “Sergeant” – four guys from Glenrothes – comprises of lead singer Nick Mercer, Scott Duncan on guitars, Bill Anderson on bass,

and Rory Buchanan on drums and percussion. This winning formula had Snafu’s intimate crowd of no more than 50 rocking till their socks dropped off… The band upped the ante with a refreshing amount of variety during the hour or so that they played, and it was awesome to hear everyone singing along…I also felt slightly fulfilled to know Scotland has masses of talent out there! Speaking briefly to lead singer Nick, I asked him how he thought the gig went. He thought it was great for a Monday evening and loved how the crowd were dancing and singing along – he couldn’t believe that they knew all the words! “Sergeant” have supported top Scottish band, “The Fratellis”, and even played at this year’s T In The Park. They will be gracing our stages again at the Tartan Heart Festival and Edge Fest, and there isn’t a doubt in my mind that they won’t rock yet again! Speaking briefly to lead singer Nick, I asked him how he thought the gig went. He thought it was great for a Monday evening and loved how the crowd were dancing and singing along – he couldn’t believe that they knew all the words! “Sergeant” have supported top Scottish band, “The Fratellis”, and even played at this year’s T In The Park. They will be gracing our stages again at the Tartan Heart Festival and Edge Fest, and there isn’t a doubt in my mind that they won’t rock yet again! What a little beauty! I am referring to the latest addition to the BMW stable – the 1-Series Convertible. From the moment you drop the hood, which just takes 22 seconds, you are aware of the fixtures and fittings, all of which make this car feel very expensive. I was impressed by the seating position and the chunky steering wheel. The gear box is a delight, as is the 2-litre petrol engine.

The purist in me particularly enjoyed the fact that the car is front engine rear-wheel drive and is properly set up, which makes it a pleasure to drive. BMW can claim wholeheartedly that this is the ultimate driving machine. To reinforce this statement with a car that weighs just over 1600 kgs, it has a neutral handling balance and lots of grip. If you decide to buy a 1-Series Convertible, you’ll be buying one of the finest handling, 4-seat soft tops on the market. Wherever you go these days, people are banging on about the price of fuel and their carbon footprint. BMW are addressing this situation and are right at the cutting edge when it comes to 54

What is your ideal holiday?

Where would we find you chilling out with trend?

As a family, we holidayed every year in the South of France. Eze, between Nice and Monacco, has stunning sea views and I’d love to return. This year, though, my birthday in September will be spent with two friends in Dubai.

With friends in the Bieldside Inn, or in Simpson’s, where we like to dine.

What do you like most about living in the North-east? I’ve had a lot of support from the people and businesses of Aberdeen. That’s because Aberdeen is such a small place and doesn’t have the fierce competition of other cities.

What makes Candice Simpson tick? Organising charity events. (Our next fashion show is on Wednesday, October 8, at The Marcliffe at Pitfodels). In aid of CRANES, the event is sponsored by Total, and clothes for the show will be supplied by Zoomp and Frox. Tickets are available from Zoomp.
