Like many of life’s little pleasures, The Boar’s Head at Kinmuck takes a bit of effort to discover. Located in the tiny hamlet of Kinmuck, on the road between Hatton of Fintray and Inverurie, it’s only a twenty minute drive from the centre of the city. Bar, restaurant, bakery, art gallery - the Boar’s Head is characterised by an eclectic warmth and a dedication to making sure customers are well fed. The thirty six seat restaurant has a relaxed country home atmosphere, complemented by co- owner Jaclyn Black’s paintings. She also makes all the desserts and it’s clear that the amount of care and attention that goes into the food is matched by the care and attention lavished on the customers. The seasonal menu includes home cooked favourites lifted out of the ordinary by the chef’s light touch. Comfort food classics like steak and ale pie, battered haddock, lamb chops and tender sirloin steaks make the deciding what to eat rather difficult.

What’s your first ever memory of cooking and the kitchen? Picking crab meat at the Newburgh Arms Hotel, aged 14, they had just landed at Cruden Bay and were extremely fresh and looked delicious! What would be your desert island dish? I am a true ambassador of local produce so it would have to be Aberdeen Angus fillet of beef, cooked rare on the barbecue, with a toasted ciabatta, smoked Scottish cheddar cheese and lashings of mayonnaise – a simple dish made special using great ingredients. In your life, who’s the amateur cook you most admire and why? My girlfriend Brooke, she always puts in a huge effort when cooking for me and she makes the BEST chicken fajitas.

Twenty year old Orry Shand has recently been appointed as head chef at Eat on the Green, a fine dining restaurant in the heart of Udny Green, by Ellon in Aberdeenshire. Born in Aberdeen, Orry was named Young Grampian Chef of the Year in 2008 and 2009.

Where did you last dine out and what did you choose? The two Michelin star and multi award winning Andrew Fairlie restaurant at Gleneagles - scallops, pigs cheek and apple sorbet was the highlight of the tasting menu and inspired me to create our own tasting menu which will launch later this year. What’s the one dish you can’t stomach? I know chefs are supposed to appreciate the whole of an animal but I can't stand kidneys, I hate anything to do with them, even kidney beans! Name your biggest junk food indulgence It has to be the humble baker’s pie – the steak pies from the Ythan Bakery in Ellon are out of this world. Pork belly can be a complicated and time consuming dish to cook but by following my recipe, even a stranger to the kitchen won’t make a pig’s ear of it! >>

Confit local pork belly, Parma ham croquette, crispy pig's ear, pancetta, apple, Stornoway black pudding jus Makes 4

cut into 4 circles. Heat butter, once foaming, add the apple and colour. Add 30g caster sugar and caramelise. Puree: core 3 apples and heat with 60g caster sugar. Once soft, blitz to a puree.

Ingredients: 1kg fresh pork belly (boned out), 6 tbsp sea salt, 4 slices of smoked pancetta, 1 onion, 3 slices of Parma ham, 1 stick celery, 2 pig's ears, 1 carrot, 200g pig skin, ½ leek, 150g Stornoway black pudding, 90g caster sugar, 7 Granny Smith apples, 2 medium rooster potatoes, 3 star anise, 30g unsalted butter, 4 bay leaves, 1 egg, 16 black peppercorns, 50ml whole milk, 3 sprigs of thyme, 100g plain flour, 500ml apple cider, 100g panko (Japanese breadcrumbs, 600ml pig stock, 1 tbsp rapeseed oil, 3 tbsp smoked paprika, 12 pea shoots, 100ml veal jus, Salt for seasoning. Method: Pork belly: score the skin, rub in sea salt then add paprika and cider paste. Marinade in tray, skin side down with 3 bay leaves, 3 star anise, 12 black peppercorns, 3 sprigs of thyme and sliced apple. Remove from the marinade, cover with pig stock, cider and cook at 120˚C for 8 hours. Leave to cool in the liquid then press between two trays overnight. Remove the skin and excess fat, cut and pan roast to colour and reheat in the oven. Peel all apples. Fondant: Core 2 apples,

Pigs ears: remove hairs and braise with chopped onion, carrot, celery leek, remaining peppercorns, bay leaves, star anise and a pinch of salt. Cook for 4 hours on a low heat. Leave to cool then dry, thinly chop and deep fry until crisp. Season. Croquettes: bake potatoes then remove the insides and pass through a sieve. Thinly slice the Parma ham and fry until crisp, add the potato, mix through and season. Form the croquette shape, wrap in cling film and refrigerate for 2 hours. Roll in plain flour, beaten egg and milk then breadcrumbs and deep fry until golden. Black pudding: cut 4 circles and grill. Place the rest in a pan with water and simmer, once cooked blitz, season and pass through a sieve. Pancetta: place slices on a tray and bake for 5 minutes until crisp then leave to cool Crackling: remove fat and cut into thin strips, add salt and bake in-between 2 trays for 12 minutes at 220˚C. Garnish: Cut the apples into strips, dress the pea shoots with the rapeseed oil and season. Heat the jus and plate up. 29

Dobbies Garden World Dobbies Garden World moved to its new location on the Lang Stracht in Aberdeen earlier this year. The many displays in this spacious, purpose built environment could keep shoppers happy for quite a while but as usual, my mind is on food. Next to the restaurant is the Food Hall. It’s stylish and the goodies available are attractively presented. The variety is perfect for putting together an alfresco lunch, afternoon tea or last of the summer picnic. For a more substantial menu, there is Davidson's the butcher. It was heart-warming to see a good selection of local and Scottish produce represented. In the abundant cheese 30

counter amongst the selection of British and European cheeses were those from the Devinick Dairy and the Cambus O’May Cheese Company. In the chill cabinet there was the ‘Gourmets Choice’ range of smoked fish from Portsoy and smoked trout, chicken, salmon and ham from the Inverawe Smoke House. There was a lovely range of fish pates from Findlaters and a selection from Summer Iles Smoked Foods and from the Deeside Smoke House in Dinnet, smoked venison. To complement this feast, I grabbed a bag of local picked salad leaves and Scottish grown tomatoes and then raided the deli counter for grilled olives, artichokes and aubergines from the antipasto selection.

There is also a ‘fill your own bottle oil and vinegar bar’ with the chance to taste before you buy (love the fig balsamic!) I went for a deliciously chewy walnut loaf from the good selection of breads baked in store and found myself surrounded by good looking pastries and sponge cakes – strange how that always happens. There is an interesting selection of grown up soft drinks, wines and beers and I really don’t have space to mention the Italian pastas, chutneys etc etc...... Prego After feasting on our hot picks from Dobbies, we’d suggest cooling off with a visit to Prego’s Ice Cream Parlour. You’ll be spoilt for choice with over twenty flavours to choose from and new surprises featuring all the time. We opted for one of their mixed boxes – you can buy these in either four, six or twelve scoops and they are popular for taking along to dinner parties as a gift or for dessert. Having sampled six of their finest offerings, I’d be willing to bet that most boxes never reach their destination intact. The blackcurrant sorbet from Mövenpick melts away to a blast of Ribena flavour and features whole fruit that burst in the mouth. They also offer a Panna Cotta ice

cream which came recommended, but was overshadowed by some of the other flavours we tried. The dog tries to join the sampling team by doing her best starving puppy eyes. Next up we turned out attention to their Swiss Chocolate which elicited small, yet disturbing moans of pleasure from a significant portion of the impromptu testing panel. Prego also supplied three organic, all-natural ices from Scotland’s Cream o’ Galloway. The vanilla was smooth, creamy and obviously used a top quality source for their vanilla. The Caramel Shortbread is a rich concoction studded with morsels of shortbread. Small territorial skirmishes broke out over this one, I’m afraid.

The cat, who was clearly a highwayman in a past life, makes it clear she favours the Cream of Galloway Vanilla, by attempting to stick her head in the sampling bowl and swiping a paw at passing spoons. We end with Cream o’ Galloway’s real raspberry, which is simply sublime – especially if you combine it with the Swiss Chocolate. In a word – yum. 21st Century Cocktalia... This issue we are covering a cocktail that is steeped in history. The first written record of a Mint Julep dates back to 1903, where farmers in Virginia would drink it before they started their workday. In 1938 it was adopted as the official drink of the Kentucky Derby, because of this we have chosen Woodford Reserve as our base spirit for the cocktail due to its links with the Derby every year. Although the classic serve is in a Julep tin, as shown in the photo, this cocktail is often served in a tall glass. 50 ml Woodford Reserve Bourbon 10 – 12 Mint Leaves 12.5 ml Sugar Syrup (2 parts sugar to 1 part boiling water then cooled) Gently muddle the mint leaves and sugar syrup to release the flavour of the mint, add the bourbon and stir. Fill the glass with crushed ice and churn with a spoon until the glass has a frost build up on the outside. Top with more crushed ice and garnish with a mint sprig. Given that the whole point of evolution has been to come down from the trees, preferably to somewhere palatial with at least four stars, room service, central heating and a bed the size of Belgium, I was a bit apprehensive about spending a night under canvas in a field. Thankfully, Cuckoo Down Yurts offers the chance to go camping without sacrificing luxury. The huge yurts, which can sleep six, offer a double bed, table, outdoor camp kitchen and toilet shed, with showers on site. This is ideal for families, as small children will find the composting loos endlessly fascinating, while dads can indulge their Ray Mears fantasies setting bonfires and keeping the yurt’s wood-burning stove going. Meanwhile, the girls will appreciate not having to sleep on the ground or having to fish earwigs out of their underwear. If you’re lucky, Moss and Buster, the friendly farm collies, will join you for dinner and breakfast, which you can follow up with any of Cuckoo Down’s onsite therapy treats including massages, reiki, yoga lessons or art therapy. It’s a long way from the traditional wet socks and midges miserable camping ordeal.

Those in charge of cooking will also appreciate the proximity of Dart’s farm, which is the farm shop equivalent of Fortnum and Mason. There’s a great choice of rustic breads, artisan cheeses, and local ciders and beers as well as vegetables, fresh meat and fish, and some scrumptious hand baked cakes. With such an abundance to choose from, it’d be easy to go overboard, but sadly you can’t take a week’s groceries back in your hand luggage. If you don’t feel like cooking, there are some excellent restaurants and inns dotted around the Devonshire lanes. Jack in the Green Inn is deservedly award winning. I can recommend the mini dessert selection and the cheese board, but I can’t vouch for chips - evidently they were too good to share. If you fancy a trip to the coast, Branscombe is the longest village in Britain and home to the excellent Mason’s Arms. The food here is inventive but also comforting. If you prefer an urban setting, then head for the region’s capital. Exeter is divided into five quarters, which is either excellent value or sloppy arithmetic. Continued on page 54 >

< Continued from page 53 There’s a good mix of cutting-edge fashion chains and cool independent stores, from vintage fashion to vinyl records, as well as tiny jewellers, chocolate shops and bookshops. You can also explore underneath the city centre in the medieval passages for a change of scene. As a contrast to our country campsite, Abode offered a decadent haven in the heart of the city. You can wallow in bubbles while watching tourists milling around the Cathedral Close, though it’s probably advisable to close the curtains before getting out of the bath. If you don’t feel up to tackling food that features foam in the hotel’s Michelin starred Michael Caines restaurant, then head for the less formal cafe bar or one of the city’s Gastropubs like the Fat Pig. Just out of town, Topsham offers a mix of boutiques, galleries, homewares and a fabulous antiques centre all set in a quaint high street. It’s like living in a Boden catalogue - perfect for a Sunday afternoon stroll. Grab something delicious from one of the bakeries and amble through the lanes. Even though it’s only a short flight away, there is just one tiny fault that niggles. Devon could easily be improved by a slight shift northwards. That way, we’d have even more delightful shops, great restaurants and cool places to stay at our disposal. Maybe it could go where Dundee is now? For little girls who just love to dress up, pretty hair clips, bands and slides are a prerequisite. Yet, as every little princess’s mum will tell you, the hair ribbons and bows on sale on the High Street inevitably fall apart or fall out. So, when former Press & Journal journalist Victoria Banks, resigned from her job after the arrival of her third child, she decided to experiment by making her own. Victoria, of Airyhall, Aberdeen, called on her artistic flair to create decorative, girlie hair clips, bands and bows for her daughters, Daisy (4) and Poppy (2) – big sisters to her one-year-old son, Harry. She ordered robust alligator clips as well as ribbons from the US, and her range of designs quickly grew. When 58

her creations came to the attention of children’s boutique, Daisychain in Westhill, they snapped them up – and Victoria’s business, Harry’s Big Sisters, was born. “I use special liners in my hair clips that give a far better grip in hair than velcro, velvet or any other type of liner – even in a few fine strands of baby hair. It means you can also slip them into a little girl’s hair without her noticing. The clips will also withstand pulling and prodding!” explained Victoria. All designs come under the scrutiny of judges Daisy and Poppy, who frequently use baby brother Harry, as a model for sparkly pink tiaras!

Harry’s Big Sisters now produces ready-made party bags featuring a beautifully wrapped mini bow and a chocolate treat. Victoria can also create personalised hair clips bearing the party guests’ names. She also offers bows and bands to match flower girls’ and bridesmaids’ dresses. Taking Flight Ever wondered what boys do instead of buying designer shoes? After a trial lesson, I’m guessing they learn to fly a helicopter with HJS! > WORDS BY ALISON DANIELS

Like shoes, helicopters are small, fabulous and all about power and gaining height. I’m in the vastly experienced hands of Chief Flying Instructor Syd Simpson. Taking off is slightly disconcerting, but we’re soon climbing to 1200 feet. Syd’s meticulous yet calm approach means that I feel confident enough to take the controls; even though part of me knows we are only staying in the air through extreme willpower on my part. Flying a helicopter is the nearest you’ll ever get to understanding what an eagle feels like, although I suspect my own technique is more like that of a bumble bee that’s just collided with a window. HJS offer gift vouchers for both flying lessons and experience flights starting from. A 30 minute trial lesson will cost £95 with experience flights from £65. Either will take you over some of Aberdeenshire’s prettiest and most dramatic scenery and it’s infinitely preferable to see mountains from the comfort of the cockpit rather than have to trudge up to the summit yourself. If you get carried away, they offer full pilot training. It costs around £11,000 to complete the private pilot’s course and about £50,000 in total to qualify as a commercial pilot. It’s not the cheapest of hobbies, given that a Robinson R44 with set you back the best part of quarter of a million, but it is infinitely stylish. You can even charter a chopper if you want to make a dramatic entrance at a sporting event or a wedding. It’s an exhilarating way of indulging your International Playboy urges, all you need is a willingness to learn and some aviator shades. I come across Trend magazine whilst at an interview yesterday for a new job and was very impressed. I picked up my copy at Skene Business Centre, Aberdeen. September 2010 will once again see artists across the City and Shire opening their doors to the public as part of NEOS - North East Open Studios. NEOS has become one of most celebrated and popular events of its kind annually attracting around 20,000 visitors over nine packed days.

Let’s face facts: there are more obvious places to make a living in the music business than Aberdeen. London, Los Angeles, New York it ain’t. Yet despite the odds there are those whose musical obsession prevents them from even contemplating a career in other fields. For whom working with music isn’t a choice, it’s a necessity. Take Steven Milne for example. By day he’s one of Aberdeen’s premiere band bookers (having moved recently from the Warehouse to The Lemon Tree). By night, he’s a popular DJ, filling dancefloors in a variety of different venues (as well as this year’s T in the Park). In his spare time, he fronts popular band The Little Kicks. (Trend readers with good taste should have their album Boxing Clever by 64

now, as featured in this very column a year ago. If not, head to iTunes/1-Up and grab a copy - you won’t be disappointed.) And when he’s not writing, recording and gigging with the ‘Kicks? He’s…writing, recording and gigging his own solo material.. and to great acclaim. And now he’s about to release his solo album, titled ‘Chasing Phantoms’. And simply put, it’s great. If you like the idea of an introspective and emotive singer/songwriter (think Neil Young/ Bright Eyes/Richard Hawley) set to the melancholic atmospherics of Band of Horses or Fleet Foxes and laden with the choral harmonies of a Pet Sounds-era Beach Boys, you would do well to pick up a copy of ‘Chasing Phantoms’. The singing, musicianship and production

Bookended by a haunting instrumental (which recalls The Band’s ‘Last Waltz’ theme) they are heartfelt, warm, sumptuous and little bit maudlin; perfect from those introspective autumnal moments. Steven Milne plays Snafu on the 16th September and the 1st October. The Little Kicks will be playing The Warehouse supporting Errors/Twilight Sad on Sep 29th. ‘Chasing Phantoms’ will be available from iTunes and 1-Up Records in Autumn. It is quite amazing what you can find in the back lanes of Aberdeen. On a recent visit to my good friends Scott & Dave, who operate a business named Motorwerks in Forest Lane, I discovered in their workshop a Ferrari 599 undergoing modifications to the tune of £40,000 to allow it to compete in the 2010 Gumball Rally. Motorwerks always have fairly unusual cars and has been a bit of a magnet for me, for many years. For those of you who do not know what the Gumball stands for – it is a 3,000 mile International Rally founded in 1999 by

Maximillion Cooper. The Rally is not a serious race, there are no prizes for being fastest, it is basically a road trip adventure. The route this year started on May 1st in London, onto Amsterdam, Copenhagen, Stockholm then over to Boston USA, though Canada, arriving back in New York on May 7th. Motorwerks remit was to change certain parts on the car to enable it to compete on this Rally which included changing the colour of the Ferrari and as you can see from the picture, it is quite stunning. However, the car was in fact

vinyl wrapped – which means that at any time the car can be returned to standard which in this case it is white. I did not have a chance to test the Ferrari which was a pity because its V12 produces over 600 bhp and Ferrari claim it can do 0 – 62 in 3.53 secs and has a top speed in excess of 208 mph. Dispensing optician Frances Duncan must be a bit of a visionary. How else to explain her rise to the top as managing director of Duncan and Todd Opticians, a business started in Peterhead by Norman Duncan and Stewart Todd in 1972. Today, it has 23 retail practices from Wick to St Andrews, as well as a corporate division which provides occupational eye care with an average of 30,000 DSE sight tests being carried out across the UK. She is aiming for a £10.5million turnover this year. It all began for Frances, when the 20-year-old student pitched up on April Fool’s Day in 1984, at 4 Belmont Street, Aberdeen, for a pre-registration year with Duncan and Todd. “From the start I loved the atmosphere at the firm and am proud of the fact that we have kept that good spirit in our branches,” she said.

The elegant Frances commutes to Aberdeen from her cottage home in Strathdon where she lives with her daughter Josie, 17, son Norman, 15, and husband Eric. She also has a house in the family heartland of Donegal, where she visits frequently to catch up with her ever growing family who still live in the area.

Bauhaus “Cocktails and Cakes” Bauhaus hotel hosts an event “Cocktails and Cakes” for the Walk the Walk charity. With Cosmo’s on arrival and entertainment including bra measuring, a DJ, mixology and a raffle, over £1,500 was raised on the night. Team Bumble Boob all successfully completed the walk on 19 June in just over 6 hours, raising over £4,000 for breast cancer research and achieving a few blisters along the way!

St Margaret's PTA Ball This year saw the successful return of the St Margaret’s School for Girls Parent’s & Teacher’s Association fund-raising ball. Approximately 130 guests attended the Ball at The Ardoe House Hotel. The musical entertainment for the evening was provided by some of St Margaret’s very own Musicians and the Steve Ransome Band, with MC duties for the evening covered by Craig Mathers.

The 32nd Aberdeen Oilman’s Golf Association was held in glorious sunshine at Gleneagles in early June. This well supported Industry event attracts competitors from all over the world and has raised nearly half a million pounds towards many charitable organisations in North east of Scotland. This year the £40,000 that was raised will be shared between Glencraft and other local charities.
