Editor’s welcome Despite being next to each other in the calendar, December and January couldn’t be more different. The first is a mad whirl of shopping, preparing for guests, eating too many mince pies, tracking down the perfect party dress, trying to walk through slush in unsuitable shoes and

wondering why you seem to have ended up with a bigger pile of crushed up wrapping paper than presents this year. January is all about wondering if you’ll ever be finished hoovering up glitter and pine needles, regretting the size of our credit card bills and making resolutions that we’ll have broken before February is out. As usual, we’re here to help you make the most of the season and the opportunities the new year presents.

BEOX from Eclipse

the all gain, no pain Brazilian

There are words my mother thinks I don’t know. Most of them were unleashed when I got an e-mail containing the words “Alison will have a Brazilian”. On closer reading, I discovered that the Brazilian in question was Eclipse Hair Design’s special keratin treatment, BEOX, the secret to silky smooth locks. If I’m having a bad hair day, I look like one of those little plastic troll dolls, so when Eclipse promised that I could have sleek, manageable and shiny hair for up to four months with little effort on my part, I headed straight for Torphins. Eclipse is the first salon in the city and shire to offer the BEOX process, which strengthens and conditions the hair by locking into the hair’s own keratin and sealing the cuticle. The process is simple, but very labour intensive. After the hair is washed and dried, Eclipse stylists Karen and Tracie take small sections of hair and massage in the BEOX cream. After 15 minutes processing time, they blow dry and straighten the hair, again in tiny little sections. It takes around two to four hours. Most treatments of this type involve a 48 hour period where you can’t wash your hair, tie it back, tuck it behind your ears or get it wet. This would drive me insane, so it’s fortunate that the BEOX process requires just 24 hours before stage two begins and you can return to the salon for a wash and blow dry to finish the styling or do it yourself using recommended styling products. BEOX works best on medium to long hair, with prices from £120 upwards. So, does it work? Yes, yes, yes. See for yourself. I haven’t had a single troll hair day so far!

It’s not often that business travellers get four star accommodation and service at two star prices, but that’s exactly what the newly opened Lairhillock Lodge at Netherley offers weary travellers. The lodge is ideally located for business travellers visiting the industrial estates in Tullos, Altens, Portlethen and Stonehaven, while tourists benefit from being close to the coast, Deeside and the mountains. The spacious rooms are decorated in a tasteful palette of charcoal greys and neutrals and each has a large ensuite shower room, with plenty of fluffy towels and covetable toiletries. Kildrummy Castle Sunshine, showers and the ever-changing colours of Aberdeenshire in autumn made for a scenic 45 minute drive to the grand Kildrummy Castle Country House Hotel just in time for Sunday lunch. Aperifs and canapés are served in the oak- panelled bar overlooking the ruins of the nearby 13th century Kildrummy Castle . There’s a good selection of champagne and other cocktails. I chose a Portonic – white port served over ice and topped up with tonic water. The 4-course Sunday lunch menu at £28 per head offers a varied selection throughout.

I began with 4 expertly seared scallops, deliciously sweet and served with a moreish garlic, cream and brandy sauce, and stole a taste of grilled asparagus wrapped in Parma ham with a buttery tarragon sauce. The soup course gave a choice of Scotch broth or game consommé. It’s a long time since I’ve seen consommé on a menu and it didn’t disappoint. For the main event, I enjoyed a juicy, plump grilled duck breast served with an aromatic compote-like berry, orange and cinnamon sauce whilst my partner got stuck into a generous creamy beef stroganoff, and my son a chicken breast stuffed with haggis, wrapped in bacon and served with a turnip cream.

Desserts were spot on - an apple, raisin and cinnamon crumble, a decadent chocolate fondant and a rich, crispy caramel topped crème brulee. Lunch time entertainment was provided on the lawn by abundant bird life and acrobatic red squirrels vying for pole position on the bird feeder. After lunch, we settled into the comfy sofas in the relaxing drawing room for coffee and petit-fours. This is how Sunday lunch should be – unhurried, with good food , friendly and attentive service in stunning surroundings – what more do you need? The Courtyard Just like its sister restaurant, La Stella, The Courtyard is tucked away on a quaint, cobbled lane giving it character and a somewhat Continental feel. As soon as we entered the doors of The Courtyard we were greeted with a warm welcome from restaurant manager James, who took our coats and showed us to our seats. I was pleasantly surprised to see that they have Blue Moon beer on tap, which was my favourite drink while living in the US. However, on this occasion both my mum and I opted for a glass of the house Sauvignon Blanc. The Creations menu at The Courtyard is a carefully crafted menu which changes

regularly to offer the finest produce of each season. After taking one look at it I knew it wasn’t going to be easy to make a decision with so many great choices. After placing our order we were served a delicious amuse-bouche of haggis bon bon with a whiskey mayonnaise to tempt our taste buds. To start I chose the duck on toast, a full flavoured mix of confit duck leg and Scottish wild mushrooms on toast alongside a delicate radicchio salad and a perfectly poached duck egg. Mum opted for the large pot of mussels cooked in a creamy garlic sauce with pancetta and pear cider, giving it a perfect sweet and salty balance. To follow we were presented with a strawberry lime sorbet to cleanse our palettes for the main course. My choice for main came from the daily fish specials, a tender tuna steak marinated in lime, orange and tequila on a bed of ribbon

vegetables, topped with two light and crisp crab and ginger spring rolls served with a side of golden couscous and drizzled with a sweetcorn and chilli relish. Mum went for a classic dish with a modern twist, the posh scampi, which were meaty pieces of crispy bread crumbed monkfish served with a stack of freshly fried chips and a tart and tangy homemade tartar sauce. Unfortunately neither of us could manage dessert but it only gives us another reason to return as well as the changing menu and perhaps for a glass of cool, refreshing Blue Moon beer. Tell us a bit about how you got started as a chef, and how you came to be in your present role? I was in retail management and quite unhappy. A French chef friend opened his Bistro in Paris and I gave up things to help him get started. After working in Paris I decided I wanted to learn to cook seriously. On returning to the UK I approached John Webber at Kinnaird in Perthshire - he took me on as a commis and the rest is history, as they say.

I met Ian Sinclair over a year ago and we both agreed that Inverurie missed a really good restaurant. We are trying to do something a bit different. It’s been a low key approach with minimum advertising and mostly people are learning about us by word of mouth, and it’s going really well. What’s the best thing about your job? And the worst? The best part of the job is walking into a clean kitchen early in the morning and having the freedom to be creative. The worst part is being so busy that you don’t get time to be creative. What’s your signature dish? I am happy to say I don’t have one. I am always frightened of being labelled and put in a box. I’ve worked abroad as a chef for many years and my journey with food is all about authenticity. Going to a country, learning how they do it and bringing it back. I don’t really do “with twist” or signature. How do you relax when you’re out of the kitchen? Easy, I have a five-year-old son and we have a lot of fun when I am not in the kitchen. At the moment it’s autumn, so it’s off to the forest. My wife Ingrida, is an expert mushroom and berry picker.

If you could invite anyone in the world, from anytime real or fictional, who would you invite to dinner? A good dinner party would have to include Grace Jones, Bridget Bardot, Oriana Fallaci, Bill Hicks, Joe Strummer and me. That would be fun. What three ingredients would you take to a desert island? A block of Parmesan cheese, a bunch of lemons and two kilos of garlic. Which chef do you most admire and why? My favourite chef is Dario Cecchini. He is actually a butcher from Tuscany who makes beautiful things with pigs and cows. He is also a poet and general genius.

Recipe Recently I started making peanut butter ice cream to go with my spiced doughnuts, and saffron crème brulee. People are crazy for it. You don’t need an ice cream machine, so anyone can do it if you have a Kenwood or Kitchen aid. You can also use this recipe as a basic vanilla ice cream if you omit the peanut butter. My five-year-old son likes to eat these with homemade choc chip cookies.

Peanut Butter ice cream Ingredients: 250g egg yolks 200g caster sugar 1 vanilla pod scraped or a teaspoon of essence 750ml double cream 400g crunchy peanut butter (Skippy is best) 1. Whisk egg yolks, sugar and vanilla until really thick: about 5 minutes, high speed. 2. Scrape with spatula into mixing bowl. 3. Return mixing bowl, pour in cream and whisk until just thick. Don’t overdo it as it will make the ice cream hard. 4. Fold very gently some peanut butter into the egg yolk mix, then a third of the cream. Repeat the process until everything is gently folded together. 5. Pour into your preferred container and freeze. I sometimes add a good shot of Baileys at stage four. It’s a great combination.

Rarely do you meet people as passionate about coffee as Alex Jackson of the Naked Bean. Costa, Starbucks, Cafe Nero, the Naked Bean... If Alex has his way his brand will one day be on the lips of the most discerning coffee drinker. Although this enthusiasm hasn’t always been the case: “I used to take my coffee white with two sugars, not really giving much thought to the taste of individual blends,” reflects Alex.

Such is Alex’s obsession for the perfect cup of coffee he even provides clients with training from one of the UK’s top barrister judges. “A bad product will always give a bad result; however, a good product still needs to be made well to achieve its full potential.” It will therefore be of no surprise that when it comes to the Naked Leaf Alex is equally pedantic, and has snubbed the teabag in favour of fresh tea leaves, believing traditional teabags are full of little more than tea dust. “The comparison is like night and day,” he says.

“It wasn’t until I was made a coffee using freshly roasted and ground beans that I became hooked. I was totally blown away.”

With the ‘Naked Cocoa’ under development, the future of the Naked Bean is certainly sweet.

Now Alex, who used to sell coffee for Mars, has his own coffee and tea brands – the Naked Bean and the Naked Leaf and supplies his unique blend of beans and leaves from his Aberdeenshire base.

So what’s next? “I’d love to travel the world sourcing my own tea leaves and coffee beans,” smiles Alex, “but for now I am happy in the knowledge that my brand is at the very top of its league.”

Charlotte writes: Having attended dozens of catwalk shows and schmoozed with designers in my attempts to find out where fashion is heading, here are my tips for what to buy to look on trend for spring and summer 2011. Invest in leather to see you through the dreary winter months and straight through to spring in the form of biker jackets, shorts and, for the more adventurous, leather mini-skirts. Team this with uber-feminine floral prints to add a hint of an exotic girly edge. Spring will bring an Eighties revival in the form of neon. 1940’s style tea dresses in exuberant pink and orange will certainly brighten a dull Scottish April’s day. This is a look that isn’t for the shy and retiring, so some readers may prefer the ladylike looks that will abound.

Pack away your skinny jeans as this season is all about the flared trouser. Team with a mannish blazer or an opaque floral shirt for the ultimate glam grown up look. This trend is brilliant, as it balances out both larger and smaller figures. Accessories are going to be massive. Huge bold bright jewellery will add funky accents to any mundane outfit. Belts must be worn with everything from trousers to dresses to cinch in those waists. Multi-coloured head scarves will make you feel like an African princess both on and off the beach. Pull out your neglected wedges, platforms and opentoed shoe boots from this summer as these are still going to be big news next year. Think bright and feminine with a harder edge to fully embrace Spring/ Summer 2011. And me, well, I can’t wait to see what Autumn/Winter 2011 will have in store for us!

Some of childhood’s fondest memories are woven from the threads of the simplest activities – exploring a secret den in the woods, discovering a fat caterpillar under a fallen leaf, and the quintessential childhood activity, making mud pies. Fortunately for Aberdeen, this knowledge has inspired one local Zoology graduate to create a business offering educational, hands-on outdoor fun sessions to preschool-aged children and their parents. Mandy Tulloch, who started Mud Pies in September 2009, has converted her own love of nature into an opportunity for parents to spend time discovering the natural world with their children. I met up with Mandy and a bundled-up band of tiny mudslingers for a recent adventure in Countesswells Woods, and it wasn’t long before I was squelching and squishing with the rest of them. There is nothing more contagious than the delighted squeals that accompany a troop of toddlers given the freedom to run, jump and splash to their hearts’ content. A typical ninety-minute Mud Pies session begins with an adventure walk through easily accessible woods, during which children are encouraged to collect interesting finds into a canvas bag. It only takes an outside observer seconds to see how quickly a child’s imagination takes over, as mossy logs suddenly become wild crocodiles and trees become giant aliens. The children eventually gather under a shelter in the trees, where they display their treasures for Mandy to identify with her impressive knowledge of local flora and fauna. Everyone then participates in a themed activity, followed by a snack and, of course, the creation of a mud pie.

Cari Murdoch appears to be a one-woman whirlwind. The five times Gift of the Year winner somehow juggles a textiles course at Gray’s School of Art with running her own accessories company and blogging too. Cari has been fascinated by textiles for most of her career. After taking qualifications in embroidery, she moved on to designing cushions, then wedding accessories and corporate gifts before designing and supplying accessories for Monsoon, Accessorize, Clinton Cards and TopShop.

Now she’s back in Aberdeen and is combining her coursework with designing a great new range of distinctive collars, cuffs, and snoods which are ideal for the cold Scottish winter. It’s a refreshingly wholesome, familyfriendly city of woolly-hatted cyclists that comes alive in the run up to Christmas, with festive markets springing up all over the city. Browse the stalls at the fabulous Tivoli Gardens and combine buying presents with fairground rides, free concerts, about a billion white fairy lights, kids dressed as Nisser – a Scandinavian variety of pixie glasses of gløgg and apple dumplings. Market stalls include Hamleys and George Jensen as well as those selling festive decorations, cosy footwear and food. Even the breweries deliver their special festive ale by horse-drawn wagons to add to the atmosphere – and 64

if you take a trip to the Carlsberg visitor’s centre, you can even meet the horses and sample the product. For a serious retail session, head for Strøget and the surrounding streets, where you can find everything from Top Shop to Chanel, Gucci and Hugo Boss. The streets are scented with fir branches and decorated with traditional red and white. Randers Handsker, the world’s oldest glove factory, has a huge colour selection in the softest leathers, Royal Copenhagen’s display of Christmas tables is bound to inspire, and Strøget is

also home to several jewellers offering perfect gifts for the stylish woman. A block away, Notre Dame is like an upscale Lakeland with rustic and modern decorations, cookware and home goods – everything from twiggy wreaths to a set of twenty-four mini advent candles. This delightful small city is home to the huge Roskilde rock festival each summer, but also hosts a market twice weekly just outside the magnificent medieval Domkirken. This cathedral has everything from Northern Renaissance frescoes to stunning modern bronze doors and is well worth a visit, especially if you’re lucky enough to be guided by the charming Ola. A short stroll to the fjord takes you to the Viking Museum which is home to five restored longships and a host of reproduction vessels you can

Provost Skene’s House: A Timeless Treasure Trove > words by kate gray

Provost Skene’s House is tucked away on Guestrow, its turrets and rough stone walls pleasingly at odds with the surrounding buildings. I had never seen it before, and I am not sure how I have missed it. The house itself is a charming example of late medieval architecture. Inside, each of its rooms provides an insight into many of the periods that the house has seen in its 450 year history. There are eighteenth century rooms dedicated to the elegance of the Georgian period, Regency rooms that represent the splendour of the early nineteenth century, a late nineteenth century nursery, and even a costume gallery that regularly displays period fashions and uniforms.

All of these rooms are fascinating - they demonstrate the long and rich history of the house - but it is the seventeenth century rooms that have the most impact. The Great Hall seems almost spartan compared to the Georgian dining room, but its grandeur is in its simplicity, while the Painted Gallery – dark, solemn, and incredibly atmospheric - is home to one of the most unique examples of religious painting in Scotland.

An Aberdeenshire green waste recycling firm has teamed up with a large local business to reduce food waste and increase recycling rates. Keenan Recycling, based at New Deer, has helped Mitchell’s Dairy in Inverurie to implement a new commercial food waste collection scheme throughout the company. The scheme, which is the first of its kind in the North-East, allows organisations to recycle items such as leftover food, coffee grounds, cups and paper towels into BSI accredited compost.

Increasing our recycling capacity by around 60%.” With as many as 800 customers per day, the food waste recycling scheme is estimated to reduce their annual waste from 50 tonne to 10-20 tonne. Mitchell’s are also set to use Keenan’s recycled compost in their flower baskets. Keenan Recycling deals with tens of thousands of tonnes of food and green waste from local authorities all over Scotland and businesses in the North-east at their £3.2m facility in New Deer.

“It’s kind of ironic,” grins Myke Black as we prepare another photo set-up in Malmaison’s plush Balmoral suite. ”I woke up with a hangover this morning and wished I could spend the day in bed..” Earlier this year, Myke released a remarkable debut album called ‘Nice Little Earner’- ten songs which showcase a performer of considerable range, whose talent in writing heartfelt, memorably catchy songs is matched evenly by his ability to sing them. As you listen to the album for the first time, you’ll feel proud that a local lad has released something so impressive, something easily good enough to be on the radio and with considerably more depth than anything you’ll hear on X-Factor. And you may well look up

the credits to see who helped him out – who produced it, who his co-writer was, what studio he used..only to find that Myke did the whole thing himself, over the course of a year - in his bedroom! Thus, the photo location: a bedroom as uncommonly impressive as the record he’s promoting.  ‘Nice Little Earner’ is a winning combination of intimate lo-fi atmospherics, laid back simplicity and a sense of optimism that’s quite infectious. On a playlist, he’d sit comfortably between Bon Hiver, Newton Faulkner and Jack Johnson. When I tell Myke this he laughs, thanks me and adds Paolo Nutini to the list. He’s happy with the comparisons. “I want to write music that is accessible, that appeals to all ages,” he says.

Although Myke Black’s music has broad appeal, his credibility as an artist is certainly intact. At the start of 2009, Myke quit his full time job to concentrate solely on songwriting and performing. When he’s not promoting his own material, he pays the rent by playing around Aberdeen in venues such as The Albyn, The 210 Bistro, Sopranos and The Lemon Tree. “I do what I love doing”, he says. “I want to do this for the rest of my life. J-A-C-K Foundation Ball The inaugural J-A-C-K Foundation (Joining Against Cancer in Kids) Ball was held at Thainstone House Hotel in Inverurie and hosted by Mrs. Sylvia Koren, and was attended by the First Minister Alex Salmond MSP and 60 other guests. The aim was to raise money for a research project into Neuroblastoma Childrens Cancer currently ongoing at University College London Hospital. Music was provided by Tutti Frutti, and the evening raised more than £4.500.

Birthday Girl raises cash for Royal Aberdeen Children’s Hospital Louise Mackintosh recently celebrated her 40th birthday at the Carmelite Hotel in Aberdeen. Guests at the party enjoyed an entertaining night of music by vocalist Jason Porter and generously donated over £600 to the Archie Foundation, the official charity of RACH which is making a difference to the lives of children in the North East of Scotland.

An Evening of Elegance Image Fashions of Thistle Street held 'An Evening of Elegance' at The Marcliffe at Pitfodels in aid of the Fishermen's Mission. The fashion show featured outfits from their autumn/ winter collection which includes coats, day wear, party dresses and evening gowns. The audience were also treated to a sneak preview of Image's forthcoming spring/summer occasion wear. Handbags and shoes from the newly opened Image Shoes were also on show. hell itche Pet eteerr Mitc P For someone who hit the giddy heights of fame as the worldwide face of Chanel’s Allure perfume and lives at Crimonmogate House, a 19th century stately home near Fraserburgh designed by Archibald Simpson, the patron of the Marie Curie Cancer Care charity in the north-east, mother-of-two Candida Bond, is remarkably grounded. It helps that Lady Petersham and her husband, Will Stanhope, the son and heir of Viscount Petersham and brother-in-law of Viscount Linley, love country life and are delighted that their daughter Tirkana, seven, and son Augustus, five, are well settled in a local primary. “Yes, I was very much in the fast lane with Chanel but appreciate

the different pace of life here and love being involved in community activities,” she says. That has included being a judge at the Inverallochy baby show, no less. Candida succeeded Joanna, Marchioness of Aberdeen, as the charity’s patron in 2008 and says candidly: “It was a hard act to follow a former nurse who did such a splendid job for 12 years and raised awareness of how hugely important the Marie Curie nursing service is to terminally ill people and their families. “Every £20 we raise pays for an hour of a nurse’s time and we have over 40 of them in our area who bring great comfort to people in their own homes.”

Candida used her contacts in the fashion world to stage a glitzy fashion show last spring at the Marcliffe Hotel and Spa in Aberdeen which raised a whopping £41,000 for Marie Curie and at the same venue in September, the sixth black-tie Brain Game, sponsored by BP, brought in more than £22,200. The charity has an annual daffodil appeal and family tea parties will be staged next summer, notably at Crathes Castle.
