Who are your fantasy dinner party guests?

Nigella Lawson, Marco Pierre White and Clare Smith. Nigella, because of the light touches she adds to food, Marco because he was the first reality TV Chef when I was training and he was fresh. I would have Clare because she has just had a wonderful start to her career that would be interesting to hear about.

What are your top three desert island ingredients?

Ideally, cigarettes, vodka and a lighter, but if I had to have one food ingredient it would be potatoes, because they can be re-grown.

What is your food heaven and your food hell?

My food heaven is chocolate fondant and my food hell is Pot Noodle – it is beyond me how anyone could eat them.

Which dish says ‘home’ to you?

My mum’s home-made poor man’s moussaka – she makes it with potatoes instead of aubergine and it is fantastic.

What’s always in your fridge at home?

My wife has just had a baby boy so at the moment, baby food!

What three words would your kitchen colleagues use to describe you?

Angry, loud and aggressive.

Method 1. Heat the butter and olive oil in a large, heavy-based frying pan. Add in the beef tournedos and fry, without moving them, for 3 minutes.

2. Turn the tournedos over and cook for a further 3 minutes, until the steaks are crusted on the outside but rare inside. Season with salt and freshly ground pepper and set aside to rest.

3. Heat the frying pan the tournedos were cooked in. Add in the foie gras and fry until just caramelised. Remove the foie gras and keep warm.

4. Add the bread slices to the pan and fry until crisp 5. Meanwhile, grill the field mushrooms until tender.

6. Place the fried bread slices in the centre of two plates, and then top each serving with steak, then the foie gras and then the mushroom.

7. To finish, garnish with chervil, watercress and pour over the jus.

What three words would your kitchen colleagues use to describe you?

Angry, loud and aggressive.

Method 1. Heat the butter and olive oil in a large, heavy-based frying pan. Add in the beef tournedos and fry, without moving them, for 3 minutes.

2. Turn the tournedos over and cook for a further 3 minutes, until the steaks are crusted on the outside but rare inside. Season with salt and freshly ground pepper and set aside to rest.

3. Heat the frying pan the tournedos were cooked in. Add in the foie gras and fry until just caramelised. Remove the foie gras and keep warm.

4. Add the bread slices to the pan and fry until crisp 5. Meanwhile, grill the field mushrooms until tender.

6. Place the fried bread slices in the centre of two plates, and then top each serving with steak, then the foie gras and then the mushroom.

7. To finish, garnish with chervil, watercress and pour over the jus.

Last year’s refurbishment to the restaurant and bar area in warming autumnal tones creates a welcoming environment. Despite being busy, service was spot on as usual, combining friendly professionalism.

I can’t see past roast rib of beef on a Sunday, and this didn’t disappoint. Thick, tender slices came with rich gravy and an enormous Yorkshire pudding (£10.95).

The children enjoyed a traditional roast turkey with all the trimmings (£11.50) and a very good potato-topped seafood pie. (£10.95)

Dinner Review: Ciao Napoli Ciao Napoli is housed over two levels in a granite townhouse providing two contrasting areas: the wood-panelled and more intimate street level, and the bright basement which was soon buzzing early on a Saturday evening.

We needed time to ponder the menu to take in the wide range of starters, pasta, meat and fish dishes. I’m a great fan of southern Italian white wines, so was pleased to see a Falanghina Del Benevento IGT 2007 from Antica Hiepinia (£17.50) on the totally Italian wine list, which covered many recognisable Italian regions. With scents of sweet almond and ripe melon, it was fresh and lemon zesty and proved to be a good partner for the seafood fest that I’d decided on.

The a la carte Sunday lunch menu features both North-east favourites and dishes with round-the-world influences.

Scottish produce is a regular feature.

Whilst I was saving myself for the main event, hubby and sons tucked into steaming bowls of flavour-packed soups – Scotch broth and lentil, potato and carrot (£3.30).

They were happy to oblige with my request to have one of the pasta dishes as a starter, and I really enjoyed my agnolotti all’aragosta - four plump lobster-filled pasta parcels, cooked perfectly al-dente with a creamy brandy sauce topped with king prawns. (£6.40/9.40). The intensity of hubby’s slow-roasted peppers with buffalo mozzarella and rocket was also a winner (£6.90).

I’d chosen the ‘catch of the day’ a flavourful platter of salmon, king prawns and sea bass grilled with garlic butter and seasoned with black pepper and chilli (£23.95). I loved the lemony dressing on the accompanying salad.

Across the table, chicken breast stuffed with haggis and apple, and served with a grain mustard sauce (£10.25) was well received, the classical combination of flavours complementing each other well.

So generous were the portions that I nearly refused dessert - but how can you turn down a light sticky toffee pudding with abundant dates? (£4.50) You’ll be well looked after at the Atholl.

Comfortable surroundings and good food in one of Aberdeen’s gorgeous granite buildings make it an ideal venue for a family Sunday lunch.

We girls – and an ever increasing number of image-conscious men – all use cotton wool pads or cleansing wipes as part of our daily skincare regime.

Yet, only an aspiring young North-east entrepreneur with a passion for all that’s eco-friendly would recognise the humble facial wipe as the launch pad for a new range of natural hair and skin care products.

Meet Laura McComiskie, who founded Love the Planet after lamenting the waste caused by the cotton wool and disposable cleansing wipes she used daily to remove her make-up.

She created and brought to market washable cleansing pads – and was soon to join the finalists in the British Female Inventor of the Year Awards 2002.

Laura’s idea caught the imagination of 40

Lakeland Ltd, who signed a contract to stock her product.

Driven by her early success, Laura embarked on studies to give her the skills to manufacture environmentally friendly cosmetics suitable for use by vegetarians and vegans. She was soon producing tea tree and lavender cleanser, mandarin body wash, body butters and shower scrubs, eye bright gel and shampoo and conditioner – all made from natural, organic, raw ingredients.

All free from parabens, mineral oils, sodium lauryl sulphate, artificial fragrances and colours, animal derivatives and genetically modified ingredients, the Love the Planet range is approved by the British Union for the Abolition of Vivisection (BUAV) and the Vegan Society.

Laura and partner David Nicholson have created a purpose-built ecocabin at the back of their Peterculter home from where Laura carefully hand makes small batches of Love the Planet products in recyclable bottles and jars.

Available through gift and health shops across the UK and on-line, Laura has partnered with a distributor in Singapore, thanks to the attention she has received from glossy magazines, such as Marie Claire and Cosmopolitan.

Northern Ireland Having grown up in the west of Scotland, I’m not alone in sensing that there’s something quintessentially familiar about the gritty ‘Titanic town’ of Belfast. It’s a city that knows my kind.

Until now however, the lush environs, stunning landscapes and sleepy villages kneeling at the grand shipbuilding city’s feet had, for me, gone undiscovered.

Having collected our hire car from Belfast International Airport, we headed west to the historic town of Enniskillen.

The welcome at the Killyhevlin Hotel was warm, and our room fresh, contemporary, yet cosy. Idyllically set on the shores of tranquil Lough Erne, bordered by private grounds and gardens, the 4* Killyhevlin has recently undergone major refurbishment.

We made ourselves at home in the Beckett Suite, decorated in soothing coffee tones and with a comfortable lounge area and a generous, beautifully tiled bathroom.

I was to spend the day at the Belle Isle School of Cookery, which promised to introduce me to some of Ireland’s most innovative and exciting culinary concepts.

At our dinner table overlooking the grounds, my partner, Norman, opted for triangles of baked camembert, while I selected the platter of refreshing fruits. Each craving hearty fare, we plumped for the sweet, succulent, honey-smothered lamb shanks, accompanied by an abundance of fresh veg, and followed by a selection of pungent cheeses.

Entering a modern villa, I met my 10 fellow all-girl ‘students’ – and bubbly resident chef, Naseem. Each of us infected by the lovely Naseem’s enthusiasm for food and for Belle Isle, we got to work on red pepper and rosemary bread, learning how to knead and nurture the perfect loaf. Next was a spicy parsnip soup, impressive cabbage parcels stuffed with black bacon and chestnuts, delicious potato latkes, and a decadent dark chocolate mousse.

Returning to our suite, we opened the windows overlooking the waterbus stop outside and slept like logs.

As my Saturday was to be packed as full as my Great Grandma Clarkson’s larder, we agreed to skip the tempting hot breakfast at

The afternoon session was hosted by larger than life Irish-American chef, Joe Kelly, who tutored us in the art of the perfect beef Wellington.

Instead, we whiled away our Sunday afternoon by taking in Belfast’s Shaftesbury and Donegall Squares. Belfast wouldn’t be Belfast without a Guinness in the famous Crown Liquor, Saloon with its exquisite tile and glasswork and atmospheric snugs. We also savoured a light lunch and perfectly chilled Chablis at the delectable Merchant Hotel in Waring Street, where service was truly impeccable.

After recharging at the Killyhevlin, I returned, this time with Norman, to Belle Isle in the evening where we, the students, gathered around the grand table with partners to enjoy the meal prepared by our own fine hands – a heart-warming and gratifying end to the day, and a pleasure to be shared.

Shall we return to Northern Ireland? To be sure…

With time dwindling, regrettably we missed the opportunity to sample the delights of the divine Killyhevlin spa, or to tour the Giant’s Causeway, as we’d so hoped (it’s the perfect base from which to do so).

This issue’s assignment was looking good; the words hydrotherapy pool, spa and pampering suggested something a bit special – then the phrase, “your dog will love it!,” shattered my daydreams. So I packed the World’s Best Border Collie into the car for a trip to the K9 Hydrotherapy Centre at Findon.

The centre provides both clinical and conditioning services for dogs in a purpose-built eight-metre hydrotherapy pool. Injured dogs recover up to 60% more quickly using individually designed hydrotherapy regimens.

Professional snow boarder, Ben (20), of Banchory, is competing in the British team of the World Cup circuit, qualifying for the 2010 Winter Olympics in Vancouver.

Having competed in only two of the seven World Cup qualifiers, super-fit Ben has already met half of the qualifications criteria required to fly the flag for Britain in next year’s Olympics.

The early success gave Ben’s confidence a tremendous boost, placing him in pole position to take on the world’s elite next year in his chosen sport.

Ben’s snow boarding passion was ignited at the tender age of nine when mum, Jenny, booked lessons for him on the slopes of Glenshee. “It began as a leisure pursuit, and then I wanted more lessons,” remembers Ben, a former pupil of Banchory Academy. “Three years later, I travelled abroad for the first time, and experienced snow boarding in Austria.

I then started competing in Scotland, and became hooked on the competitive side of the sport.”

The World Cup circuit will see him travelling the globe. Currently training with the six-strong Team GB in Japan, he will move on to New Zealand this summer and Switzerland in September.

When at home, Ben participates in an RGU Highland Institute training and conditioning programme to ensure his fitness is at a peak.

When the season ends in March, he hopes to receive confirmation that the world’s eyes will be upon him in the 2010 Winter Olympics. He’ll then be bound for whichever country offers the best training facilities at that time.

Chase the Collie’s favourite things are retrieving toys, rolling in fox poo and having a fuss made of her, so she’s happy to start with a brush out in the capable hands of Hazel, who has 35 years’ experience of making the North-east’s pampered pooches look their best.

As Chase loves water, it’s no surprise she takes to the pool quite willingly, equipped with a floatation device and in the capable hands of Jo. After her swim, Chase is carried to the dog spa, which is basically a dog-sized Jacuzzi hot tub.

This helps increase heart rate, blood flow and endorphins. Once she’s got used to the idea, it’s difficult to get her to come out again.

The staff are hugely knowledgeable about canine physiology and anatomy, and work with several universities on

researching the benefits of hydrotherapy.

Not only do the dogs love it, but it’s great exercise with just two 12-minute swims at maximum resistance equating to a 30-mile run.

The centre also hosts some of Scotland’s elite show and agility dogs, who come in for conditioning in the pool and spa. There are plans to further augment its position as Scotland’s leading canine rehabilitation facility by adding a doggie playground and gym in the next few months.

Sadly, they don’t offer gift vouchers. Chase would have bought one for the cat.

Textile designer, illustrator and screen printer, Johanna draws her inspiration from the flora and fauna that surrounded the rural fish farm on which she grew up near Ellon in Aberdeenshire.

Combining the delicate and the ornate, Johanna’s intricate designs – predominantly in black and white – are initially drawn by hand, ensuring each piece is unique.

Her boundless imagination for capturing the charm of nature has attracted the attention of the design world’s elite, earning her numerous accolades. In October last year, she scooped Channel 4’s 4Talent Wildcat Award, and the previous year clinched the Best Bedroom category in the coveted Elle Decoration Design Awards.

“Much of my work is inspired by botanics and wildlife,” explained Johanna, who graduated from the Duncan of Jordanstone College of Art and Design in Dundee in 2005.

“After graduating, I spent some time in London. Being a country girl, though, I found it difficult to make the transition to city living. The big city sapped me of

my creative energy.”

In 2006, Johanna established her first studio at her parents’ home in Auchnagatt.

A year later, she returned to Dundee and now works between the two.

Johanna (25) has created designs for big names such as DKNY, Heals and the Crafts Council at the Victoria and Albert Museum. Among her more idiosyncratic commissions was the design of a hand printed label for limited edition BrewDog bottles.

Her intricate designs can also be seen in Fifi & Ally in Glasgow’s Princes Square, and Concrete Wardrobe in Edinburgh.

She is now preparing to launch her new Midsummer Collection at the Indigo, Premier Vision trade show in Paris.

A year later, she returned to Dundee and now works between the two.

Johanna (25) has created designs for big names such as DKNY, Heals and the Crafts Council at the Victoria and Albert Museum. Among her more idiosyncratic commissions was the design of a hand printed label for limited edition BrewDog bottles.

Her intricate designs can also be seen in Fifi & Ally in Glasgow’s Princes Square, and Concrete Wardrobe in Edinburgh.

She is now preparing to launch her new Midsummer Collection at the Indigo, Premier Vision trade show in Paris.

Hidden Leaves are talking about their influences. Straight off the bat, bassist and musical encyclopedia, Stephen Keith has name-checked My Morning Jacket, Band of Horses, Ryan Adams, TV on the Radio and Ben Folds. Good start then. As he pauses for breath, the rest of the band chip in. Singer Greig’s heroes include Jeff Buckley, Mark Lanegan and Faith No More. Drummer Andrew is a fan of Too, while guitarist Chris Paterson opts for Pearl Jam as well as Brit bands such as Gomez and Blur.

“Back in the 90’s,” he laments, “British bands were making popular and innovative music. Not like the indie bands today.”

Rewind to a few days previously. It’s 10pm in The Tunnels, and a few moments from showtime. The lights are down. An expectant crowd has

gathered in front of the stage. Intro music is playing, and Hidden Leaves are feeling...a little unrehearsed.

In their defence, it has been a busy few months: in October, original member and guitar player, Nick Sivek left to concentrate on electronica. So the band got busy rearranging their catalogue of songs to suit Chris as solo guitarist, while they continued working on new material...and prepared to record their new EP. A fine November opening slot in Moshulu aside, Hidden Leaves haven’t had much time to work on their live show, so I’m not sure what to expect.

The first surprise comes in their second song. It’s called ‘Mr. E’, inspired by Greig’s son Elliot (himself named after songwriter Elliot Smith). Halfway through the song Chris steps to the front of the stage and unleashes a blisteringly exciting guitar solo. It’s impassioned, enthusiastic and – yes - innovative. The crowd goes wild.

Yet the highlight of their set is ‘Sunlight’.

Their best song, it boasts clever interplay between guitar and vocals in the first half, and a stirring reprise in the second.

Robertson is a talented and experienced singer whose voice has a clarity, power and pitch similar to that of Mike Patton or Perry Farrell. And when he gives his all at the end it’s formidable, stirring and the second genuinely thrilling moment of a very entertaining show.

Doomed! We are all doomed! Well, that is what the media would have us all believe. You cannot pick up a newspaper, switch on the TV or radio without hearing about the credit crunch, or some other more depressing news.

There is no doubt that the present economic climate affects us all and particularly the motor industry, but there has to be some positive happenings out there. My spirits were certainly lifted the other day when I was given the Mercedes C220 Cdi Sport to test. First impressions were excellent, all the controls fell easily to hand and I could connect my bluetooth telephone with no problem.

Once on the main road the 2.2, 4-cylinder diesel, which produces 170 bhp and 58

torque of 295, was certainly well up to the task of making the vehicle feel very much at home on A and B roads. There is no doubt in my mind that Mercedes have produced this car to be a creditable challenge to the BMW 3 Series.

One big talking point when ‘boys’ get together is how much bhp does their engine produce. Bhp is measured when an engine is being driven flat out – not much use in the current climate. Torque on the other hand, which I would describe simply as ‘passing power’, allows you to pull out behind a lorry doing around 50 mph and accelerate quickly to 70 mph, making the said manoeuvre quick and safe; therefore, the more passing power, the better the engine. The C220 certainly deserves a

double-take if you are in the market for a £30,000 motor car - I particularly like the Mercedes’ look, with its big grill and star. Not only is the engine powerful and smooth, it will return an excellent 46.3 mpg on the combined cycle. Standard equipment is excellent, with automatic climate control and safety items such as active headrests and knee airbags.

The new C-class, I think, will please both existing Mercedes owners and bring some new people on board.

World rugby legend is heading for Aberdeen ONE of the giants of world rugby is bound for Aberdeen to help one the city’s premier rugby clubs emerge from the ‘dark ages’.

The legendary New Zealand captain Sean Fitzpatrick, who earned 92 Test caps for his country, will be guest speaker at Aberdeen Grammar Rugby Club’s glittering fund-raising dinner for more than 200 guests at the Marcliffe Hotel at Pitfodels on February 12 – primarily to raise cash for the £35,000 which the club needs for upgrading the current floodlighting at its Rubislaw ground.

The four new lighting towers will bring a new dimension to facilities at Rubislaw which proves access to sport for more than 300 young men and women. The current floodlighting is less than 50% functional and presents problems in carrying out training exercises where highvisibility is required and introduces the risk of collision and injury.

Among the organisers of the dinner are Frank Maughan, managing director of leading Aberdeen office design specialists, ASM, and his wife and fellow director Isobel, and Welsh-born Lia Murphy, marketing manager of Aberdeen law firm Aberdein, Considine & Co. ASM has long been a prominent sponsor of Aberdeen Grammar Rugby Club and Frank and Isobel’s son, Patrick, has played for the club at junior level. However, Frank does come in for some ribbing at times as he is a former pupil of Robert Gordon’s College, whose rugby team, Gordonians, is one of Scotland’s premier teams.

The £35,000 floodlighting upgrade is phase one of a series of planned ground improvements at Rubislaw – including repairs to the grandstand seating.

Time out with. . . .

Matthew Finnie (36) began his career at the age of 19 as an apprentice in a retail jeweller in England before returning to Aberdeen. He has come a long way since then and is now a director of Finnies the Jeweller alongside his sister. Finnies was started 51years ago by his parents. Today it is a very successful manufacturing jeweller, making over 75% of the precious stone jewellery they retail, and is one of Scotland’s leading watch retailers with a staff of 36.

What makes Matthew Finnie tick?

Watches, definitely! Also being around good friends and ace colleagues, who I am lucky enough to work with on a daily basis.

What in your career has made you most proud?

Being voted third equal out of the top twelve watch buyers in Britain. The top five were all multiple jeweller watch buyers except for me. Having loyal customers, many of whom are now my friends, has also made me very proud.

How do you enjoy your time out?

I have a real passion for fast cars, so anything involving them. Eating out, in particular curries, and also enjoying a glass of red wine.

Who or what has been your biggest inspiration?

My parents: they taught me that we are born with nothing and everything afterwards is clear profit - there is no second chance to make a first impression.
