Editor’s welcome Trend really is a team effort and it’s amazing how many people are involved in bringing you all that’s new and interesting in each issue. Our stylists braved the cold of early January to find great clothes for our fabulous fashion shoot at Haddo House, while our hair stylist, make-up
artist, model and photographer made each shot really special. Our writers have been exploring everything from music, bars and restaurants to galleries and tai-chi lessons. We popped behind the scenes at the theatre and over to Pitoddrie. The Davids continue to champion local musicians and anything with an engine respectively, while Leigh and Jill and the events team keep everything running smoothly behind the scenes. The designers make each issue look wonderful while Jo makes sure our
spelling is impeccable. We’ve even roped in the boss to write the travel feature. As the editor, my job is just to take all the credit! We’ve discovered some fabulous new shops, galleries, services and places to eat that we know you’ll love. Cocoa Mention Cocoa to people and their first reaction is usually, ‘ooh, Prosecco on draught’ so that seemed to be an ideal way to start our evening; looking around the contemporary styled bar, we weren’t alone. After the fizz, we were led upstairs to the warming mocha tones of the bistro. Despite it being a busy and buzzing Saturday night, the friendly attentive service did not falter. The menu (4 starters,5 mains and 4 desserts) was well put together and I would have liked to have sampled all of it, but choices had to be made. The wine list too, had some interesting selections and conveniently lists the wines by style. I managed to entice my friend away from her usual Sauvignon 28
Blanc and experience her first Argentinian Torrontes – Norton La Colonia 2010 – crisp, fruity and dry with floral, ginger and spice aromatics and mineral finish, it worked well with our food choices.
My friend's pan-fried salmon was perfectly cooked and moist and came with a grape and Chardonnay cream, herb mash and wok fried greens- another winning, attractively presented dish.
To begin, I enjoyed a crisp puff pastry tartlet with just the right sweet and savoury balance of sweet onions, blue cheese and crunchy chestnuts and also dived into the warm black pudding and apple salad opposite. The accompanying salad garnishes to both dishes were well dressed.
To finish we shared a mulled berry and vanilla pavlova and a cheese slate with Strathdon Blue, smoked cheddar and brie. It was lovely to see the chef escape from the kitchen towards the end of the evening and speak with diners, and based on our experience that chat could only be complimentary!
For the main event, I went for slow braised belly pork with roast root vegetables and a puy lentil and pancetta casserole. The soft strands of pork contrasted with the crisp crackling. It was hearty and tasty.

Amicus Apple Few restaurant critics are vegetarian. Given that we’re often not given a choice of dish and the entire review would often read “Veggie Lasagne. Microwaved. Meh”, you can see why we normally send someone with a broader palate to check out the best new food places in town. Amicus Apple is a bit different, however, and I’m really glad to report that it offers a superb choice for both vegetarians and carnivores alike. When we visited, the cocktail bar and kitchen had only been serving food for a couple of days, but when a place offers such a good atmosphere, great food and decent value, word gets round fast and it was surprisingly busy. I was accompanied by my partner, a man who has been known to put away four
courses for breakfast and isn’t keen on anything that involves fiddly concepts or foam. He chose to start with a comfortingly creamy cauliflower and sorrel soup. I’m told it was delicious, but I didn’t get to try it as it had disappeared before I was halfway through my wild mushroom bruschetta starter. The generous portion of mixed mushrooms came on a large crouton which was so crispy I feared that bits might ping off and hit other diners. I plumped for a goat cheese salad since it was lunchtime. This arrived bejewelled with a beetroot dressing, a good mix of leaves, butternut squash cubes, cherry tomatoes and topped with rosemary. Somehow it managed to be both earthy and ethereal and unusually for me, I finished the plate. My partner reported that his Crombie sausages

What’s the first thing you learned to cook and who taught you? As a child, I can recall making crepes with my mum on a regular basis. lemon and sugar was the family favourite. What made you decide to become a chef and what career path would you have taken otherwise? At a young age I learnt that food made people happy, including me. I enjoyed the satisfaction of taking a recipe, cooking, and then taking in the pleasure it gave to my family and friends. Moving into a career as a chef was really just 32
a natural progression. Otherwise, perhaps a career in some manner of agriculture. Scotland has an abundance of great natural ingredients. How do you source ingredients for your menu and what advice would you offer to readers about finding great local produce? The sourcing of ingredients is vital to our kitchen. We use many suppliers throughout Scotland who can provide the quality and diversity we require. We generally favour suppliers who specialise in a certain area, and whose focus is upon the quality of their
ingredients. We are also currently beginning and exploring the possibility of foraging for ingredients ourselves. Readers should choose quality local independent small retailers. The quality and service they provide is fixed upon the individual and is truly local. I think we all need to show support for our local retailers and restaurants. How would you describe the food you make? I think the food we currently make here at

Pistachio Parfait Turkish Delight Cocktail, Lavender Macaroon Pistachio Parfait 4 Egg Yolks, 100g Caster Sugar, 300ml Double Cream, 25ml Vodka, 15g Pistachio Paste. Fusion is an amalgamation of many styles, many cuisines, and many inspirations. All facets of cooking have changed dramatically over the last decade. We attempt to fuse together various elements to produce a menu that is innovative and focused upon seasonal produce. How do you go about creating a new dish to go on your menu? We have a very experienced and knowledgeable team of chefs here at Fusion that has worked in a variety of Michelin starred kitchens and high standard restaurants throughout the UK. With that in mind we generally collaborate on many of the dishes that appear on the Fusion menu. It’s a very democratic and creative way of writing our menu. We also write our menu on a monthly basis, which gives us a great chance to keep seasonal produce as a focal point. What’s the one thing you won’t eat / can’t stand? There are very few things that I won’t eat, although I try to avoid cucumber and kidneys. What’s the best thing you’ve ever eaten and where did you have it? I think that due to the diversity of food and my own personal love of food this question is far too difficult to answer. I’ve had too many memorable meals with family, friends, and my especially my wife to choose a ‘best’.
Whisk egg yolks until white and resembling cream. Heat sugar and a small amount water, using a thermometer heat to 120 degrees. Slowly add sugar to egg yolks, whisking constantly, continue to whisk until mixture has cooled and thickened. In a separate bowl whisk cream, vodka and pistachio paste until whipped. Fold cream into egg, set in desired mould and freeze.

Turkish Delight Cocktail 45 ml White Rum, 3 tsp White crème de cacao, 1 tsp Violet Petal Preserve, 2 drops Rosewater, 25ml Cranberry Juice, Sugar to taste, To garnish: rose petals (optional). Combine all ingredients in a cocktail shaker, fill with ice. Shake, then strain into desired glasses. Garnish with rose petals. Lavender Macaroon 85g Ground Almond, 150g Icing Sugar, 3 Egg whites (Room Temperate), 65g Caster Sugar, 1 ½t sp Lavender Powder. Grind together almonds and icing sugar in a food processor. Whisk egg whites, slowly adding caster sugar to form a glossy French meringue. Gently fold almond/sugar into the meringue. Pipe penny sized amounts onto a non stick baking surface. Allow macaroon surface to dry. Bake at 190 degrees for 10 minutes. Fill with honeycomb.

A new era has begun in the life of a grand and much-loved Deeside Country House Hotel. Neil Rae and his wife Julie have taken over the glorious Georgian jewel, the Raemoir House Hotel, and are reviving it to combine heritage with 21st century living. Already proprietors of The Milton Restaurant at Crathes, the couple are stamping their own character on the Banchory gem, replicating the standards of their award-winning eatery. It’s a labour of love for the new owners who honeymooned there and have admired it for many years. “It’s been our dream to own this hotel and we’re delighted to have the chance to look after it and share its wonderful history with our guests,” said Neil. Their team includes The Milton executive chef David Littlewood and its events expert Jan Leatham. David is currently extending the menus and dining options which can include a champagne afternoon tea in the drawing room and a range of meals in the bar and dining room. All rooms feature log fires and overlook the grounds. Neil adds: “We are also looking at relocating the Milton Marquee to provide an outstanding venue for every type of function, from weddings to corporate events.” Set in 10 acres of stunning and completely secluded parkland, the main House, which many years ago carried the tag “the Claridges of the North”, dates back almost 200 years 38
and was extensively developed by the Victorians, just as Balmoral became the Royals’ favourite haunt. Bling Fling’s Trainers and Tiaras Charity Walk and Party is Aberdeen’s most glamorous girlie way of getting fit and raising funds for a great cause. We talked with the organisers to find out more...
Janine added, “As I was also involved with Archway – a local charity supporting children, young people and adults with learning disabilities, Sonja and I decided we would do it for both!”
Bling Fling started three years ago when mum of two Sonja Rassmussen was diagnosed with breast cancer. Along with her friend Janine Davies she decided to raise money to brighten up the chemotherapy ward. Sonja explains, “We devised a theme for a different kind of fundraising event that would celebrate life and friendship and fun, and so the Bling Fling Trainers and Tiaras walk and after party was born.”
“Last year we had 300 walkers who raised £52,000 on the day, with more money raised throughout the year. We funded a research project looking into the effect certain enzymes have on the effectiveness of chemotherapy, a research project into children’s cancers and a special therapy bathroom at one of Archways’ respite units”.

“This year’s walk will be helping to fund a new breast cancer Care Centre at ARI, which
will offer support and specialist advice to patients diagnosed with Breast Cancer and their families in comfortable and relaxed surroundings. Bling Fling will also be helping Archway to fund a range of social outings, activities and specialist equipment which will benefit over 200 children and adults with learning disabilities in Aberdeen and throughout the North-east”, adds Sonja, with a smile. Turning cars into supercars Detailing is rather like treating your car to a day at a spa. After a bit of hightech pampering, it’ll come out looking like a supermodel once it’s been in the capable hands of Premium Detailing. The detailing process starts with a full valet with successive foaming, washing, drying and claying of the car to remove all surface contaminants before being machine polished to remove defects in the paintwork, and then multiple layers of wax or sealant are added to protect and enhance the finish of the paint. By day 28 yr old Fiona Kindness is a solicitor at McGrigors in Aberdeen. Fiona obviously has a passion for speed. Having just acquired her first car back in 2004 – a Subaru Impreza - she immediately took it to Knockhill to see how it would perform. “I wasn't expecting to win. It was more just to give it a try and to see if it was something I'd enjoy. I ended the day with a wrecked car from pushing so hard – I’m a lot more competitive than I had first thought!” Fiona explained. Her interest in Motorsport has now developed and at the weekends she takes her Nissan Skyline R32 GTR to major racing circuits all over the UK to compete in motorsport events called Time Attack. “I just love the excitement, the buzz, the competition, pushing myself to the limit! I've been doing it for a few years now, but before every race I still get nerves and excitement. Before the final last year, the competition was so close that I couldn't sleep for the week running up to it!” she enthused. Drivers compete against the clock to set the quickest lap time around the circuit. There are two levels – Club Championship and Pro Class: Fiona has already won the Club Championship and is now set to compete in the Pro Class. The entry fees alone are £2500 for the season and Fiona is hoping that local companies and motorsports fans might help with sponsorship. Time Attack originated in Japan where the owners of street tuned cars and professionally prepared cars could compete against each other. This allowed amateur drivers to go up against the professionals, so much so it has now become a major event in its own field.

Claremont has it all Aberdeen’s latest gallery, gift boutique and tea room is tucked away on Claremont Street just off Ashley Road. Claremont Studio is exactly the kind of place we love elsewhere but often moan about not really having in Aberdeen. Well, now we do. Yippee! Gray’s graduate Tracey Johnston has designed a cool and quirky space which is ideal for browsing or having a chat over some light refreshments. Virtually everything in the shop is hand made by local artists and craftspeople, with the one exception being a range of covetable hand crafted leather bound journals and sketchbooks made in Venice. Whether your taste is for the Scandinavian style folk art, handmade corsages, modern jewellery or something more avant-garde, Claremont Studio is worth a visit, not least because much of the stock is exclusively sold
at the gallery and not available elsewhere. You can find everything from delicate little lavender hearts, to Scentilicious soy candles, limited edition organic toiletries from So Mi Essentials and hand printed cards. Each season, Tracey hangs a new exhibition and spring will see the introduction of a selection of unique scarves designed by her sister Lindsay, as well as jewellery from Anne Marquiss and paintings by Claire Roberts. Over the summer Claremont Gallery will host a multi artist show and Tracey hopes to hold workshops so people can learn new crafts in the evenings. Handbag designer Heidi Mottram is gathering an international following for her bags and purses made from eel skin. A world apart from logo strewn “it bags” which last a season and inspire a million tacky copies, Heidi’s creations offer longlasting luxury and practicality, without sacrificing style. “When I was young I was always trying on my mum’s shoes and playing with her large collection of handbags. I loved the different skins and textures,” Heidi explains. “Even during my school days I always used to joke about
having my own label. It all became a matter of making it reality. I studied textiles at Central St Martins so I have a background in design with the focus on texture”. “When I first started my business I was designing and making corsets. I was travelling to various countries to look for materials and happened upon some eel skin accessories. I started to make a few enquiries as the feel is amazing. It is so soft but strong!” “I try to create new textures for my bags and purses. I also love colour. Everyone has a black bag and often chooses black as it is classed as the 'safe' option, but why not add a splash of colour to your wardrobe?” “Eel skin leather is a by product of the food industry. It is a luxury material that is incredibly soft but the eels are not farmed for their skin. It is also 150% stronger than cow hide of the same thickness. Eel skin leather dyes so beautifully, so it would be a shame to not make the most of that. All of my

products have my signature fuchsia pink wave zip pull so even those who choose the slightly 'safer' colours will still have a small splash of colour. I would say the mix of texture and colour is my signature and that is what makes the designs so special”. “I think we all need at least three bags a bigger day bag to carry everything but the kitchen sink in, a medium bag for general popping out for dinner, and then a smaller bag for those nights out or more dressed up events. My advice would be to really think about what colours you usually wear. Do you want
your clothing or accessories to be the focal point? If the accessories are to be the focal point then it is a great excuse to splash out on some key designs or colours”.

if you like to squeeze a lot into a few days, then hong Kong offers an ideal destination for spring when the climate is quite pleasant.
Every inch of the small territory is packed with new things to discover. Startling modern architecture competes with ancient shrines and teeming street markets for attention, neon signs cluster on every available surface and the pace is relentless. Hong Kong is so bewilderingly busy that the senses can be overwhelmed for a day or two. Hong Kong has more than 11,000 64
restaurants ranging from the Michelin starred to street food stalls serving wriggling delicacies that wouldn’t be out of place in a Bush Tucker Trial. It’s a great city for the gastronomically adventurous and ‘Café Gray Deluxe’, on the top floor of The Upper House boutique hotel on Pacific Place, stood out for us. Celebrated Chef Gray Kunz opened this flagship restaurant after closing his Michelin starred New York
location. With its enviable location, white gloved service and sumptuous dishes, dinner was worth the 11 hour flight itself. Hong Kong has several connections with the North East of Scotland, although Aberdeen Harbour bears little resemblance to its namesake back home, and while the day might start with porridge, thankfully, we’ve never thought to add fish to ours. If you’d rather explore than eat, getting about is easy, thanks to an excellent
travel feature
public transport system. The antiquated tram system rattles round a number of distinct neighbourhoods and the metro is easy and cheap. If you fancy a spot of peace and quiet, you’ll find that quite difficult, but head for Stanley and relax at one of the many promenade bars or restaurants and have a walk along the pier. A trip to the Peak on the tram offers a stunning panoramic view of the city, while after dark, a Star Ferry trip is a must to take advantage of the nightly Symphony of Lights son et
lumiére show. Even the keenest shopper will have to pace themselves as there’s just so much on offer - head to Pacific Place or Pedder Street for luxury brands, or haggle at the Temple Street Night Market for reproductions. The bird garden offers songbirds for sale, while Tai Yuen street is one giant toy store. Antiques hunters will love Upper Lascar Row while the Western Market offers a superb range of handicrafts. The dried seafood and herbal shopping districts are worth visiting, but purchases may
take too much explaining to customs officials when you get home. Best buys include tailoring, with made to measure options being well priced and quickly produced. Skilful bespoke workshops can work with an image or sketch and your measurements to provide custom fitted couture at a fraction of the price. Whatever you opt for, you can be sure of a fascinating trip.

As a parent, finding an activity that the whole family can enjoy together can be as difficult as finding the proverbial needle. Add to this the desire to make that activity beneficial both mentally and physically, and the task becomes virtually impossible. With this in mind, I jumped at the chance to attend a family class with the Jenny Bruce Tae Kwon-Do School in Kintore. Miss Bruce, a qualified dietitian and former Scottish Squad gymnast, is a 3rd Dan black belt who has been teaching Tae Kwon-Do for the past nine years. As my three children and I trudged through the ankle-deep snow towards the Kintore Parish Church Hall, we fell into a sea of adults and children, all dressed in white Tae Kwon-Do suits and a rainbow of brightly coloured grading belts. Ever looking for an excuse to bolster my wardrobe, I instantly knew this was going to be for me! After greeting our instructor with a bow, we proceeded with a warm-up that incredibly combined jogging, stretching, punching, kicking and eye-watering splits with more star 68
jumps than I’ve done in my entire life. The next hour passed in a pleasant blur of focused, challenging exercises and a period of sparring, punctuated only by the sound of Korean counting and the heavy exhales of people working hard. On our way home that night, my children and I did something we haven’t done for a while – we agreed we had found an activity that we would all like to try again. And as soon as my legs recover, we’ll do just that. I often go to His Majesty’s Theatre, not just because I enjoy the shows, but also because I love the auditorium. Stunning even in the dimmed light during a performance, I was eager to go for a tour and see it in more detail. The tours offer a wealth of information about the theatre and its history, and they really do take you everywhere. We went backstage to the wings and the orchestra pit and the dressing rooms, past costume rails and machinery, and down into a space under the stage that was packed with waiting set backdrops. At one point we rounded a corner to be confronted with half a dozen giant penguin suits! The entire backstage area was a big, fascinating warren - I wasn’t surprised to hear that people take a while to find their way around when they come to do a show – but the real highlight for me was getting to be in the empty auditorium.

Being in the dress circle was extremely impressive, but it was the view from the upper balcony that was really spectacular. The angle of the floor was incredibly steep, and initially alarming, but it didn’t take long for me to warm to the height of the balcony. I got a rare, eye-level view of the intricate details on the frieze that lines the top of the stage, and of the statues that seem so far away when you are down in the stalls or the lower balconies. Many people view the upper balcony with some trepidation, but I really think being up among those high seats when there is time and light enough to look around, and see the vastness of the theatre below, would make most people reconsider. Faster than you could say, “Eh..hang on, I’ve only got one song..”, a bemused Amber found herself playing down the phone to the DJ, who matched her mum's enthusiasm. A week later she found herself performing it in the Northsound studio..live on air. And that, as they say, was only the beginning… In time, Amber began charming audiences in local venues; her acoustic performances showcasing not just a singer with seemingly effortless, soothing vocal style, but a fine songwriter with a wry sense of humour. At 19, she opened for Amy MacDonald in The Tunnels. Her performance so impressed the singer’s band that they called some friends who were looking for a stand in lead singer for some upcoming gigs. Thus, in 2007 Amber took a break from playing the likes of Drummonds and the Tunnels to tour European festivals, fronting none other than chillout superstars Morcheeba.

Returning inspired by the experience, Amber focused on furthering her solo career by touring the UK, before a move to Orkney allowed her time to concentrate on writing and recording (taking time out to provide vocals for Idlewild guitarist Rod Jones’s solo album “A Sentimental Education”). Amber released her first EP, aptly entitled “This Is My EP” in 2010. A collection of four gently folky songs infused with more than a hint of laid-back Americana, it’s a great introduction to an artist who may recall shades of Norah Jones or Jenny Lewis, yet very much has her own sound. Amber will be preparing for the release of her second EP with a series of local shows in Spring. You must be slightly daft to want to manage a football club in the doldrums, especially if you have had your bus pass for a decade. Not so perky pensioner Craig Brown, the former Scotland manager, who is relishing the job at Aberdeen in tandem with his assistant, Archie Knox. “It’s a big club and one that is very important for the city and far beyond,” said Craig, whose two sons, Hugh and John, and daughter Valerie, have given him six grandchildren. “Archie and I are very committed to restoring Aberdeen’s fortunes. That means ensuring the club stays in the top division this season. A good cup run would be a bonus.” 86
At Pittodrie, Craig and Archie share a windowless wee office where much wheeling and dealing went on in January to bring new players to the club. “It certainly helps to have been around the game as long as I have,” said Craig, whose playing career started with Rangers in 1958 and ended at Falkirk in 1969. He’s never going to be asked to appear on Strictly Come Dancing, as a result of seven operations on his knees. In conversation, Craig drops in the names of fellow Scots such as Sir Alex Ferguson, Kenny Dalglish and David Moyes but only to illustrate the importance of high-level contacts. “I can
pick up the phone to these guys any time and they know who I am,” he said. Craig, who led Scotland to Euro 96 and the World Cup finals in France in 1998, also has a foothold in Europe. Last December in Warsaw he was elected one of the six vice-presidents of AEFCA, the Alliance of European Football Coaches’ Associations. He’s also much in demand as an after-dinner speaker but maybe not in Poland. And if he needs divine inspiration, Craig can also turn to his younger brother Bob, retired minister of Aberdeen’s Queen’s Cross Church.
