It’s difficult to believe that it’s February already and that winter is nearly over. The Best Sandwiches
The concept of the sandwich has been around for centuries but it was the 18th century English aristocrat, John Montagu, 4th Earl of Sandwich, who coined the term ‘sandwich’, so if it’s good enough for an Earl it’s good enough for Trend. I set out on a sandwich safari to sample some of the best sandwiches this city has to offer.
We like to keep it local here at Trend so if you are looking for a hearty sandwich made with fresh and local ingredients the Foodstory on Rose Street is the place to try. They have a great selection of breads and rolls from Aberdeen’s The Breadmaker with a variety of delicious fillings. My personal favourite is the seeded roll filled with a moreish free range egg mayo and topped with sliced tomato, yum!
As well as our local favourites Aberdeen is now home to a Pret a Manger. They may be a chain but the refreshing thing about Pret is that they are committed to preparing the food onsite everyday using all fresh, natural ingredients. They also have a fantastic menu to choose form, I went for the freshly baked, crisp baguette with pole & line caught tuna mayo & cucumber, one of my favourites whenever I visit a Pret.

If you fancy a change from bread then Prego have the perfect alternative, the wrap, they are by far some of the best wraps I have ever tasted! With thirteen different fillings to choose from you can be sure there’s at least one to suit every taste. Each wrap is made to order and served toasty warm, which meant the brie in my ‘French Connection’ wrap was all melty and paired perfectly with some bacon and cranberry sauce.
All in all I am one satisfied customer and look forward to my next sandwich wherever it may be from.

UDNY ARMS, NEWBURGH The Udny Arms Hotel is a popular and friendly place, situated in Newburgh a mere 20 minute drive north of Aberdeen. The hotel overlooks the Forvie Sands Nature Reserve and Ythan River estuary - a haven of tranquillity. Meals are available both in the bar and restaurant. We selected the bar. Titled the Lounge Whisky Bar, the decor is in keeping with the nautical theme with wooden panelled seating and alcoves, which creates an intimate ambience to what was an already busy room.
For my wife it was the Home-made Chicken Liver Pate with Chutney and Brioche - all beautifully presented. The wine-list offers a varied selection of European and New World wines from which we selected a steely dry Chablis, to accompany our lunch.
The menu offers five starters and ten main courses. I chose the Soup De Jour - a steaming bowl of traditional Scotch Broth, so welcoming with frost on the ground in the mid winter sunshine.
For the main course I could not see beyond the Beer Battered Haddock complete with fries, mushy peas, tartar sauce and lemon. The fish was crisp, generously proportioned and to add a twist of authenticity, served on yesterday's
newspaper. My wife predictably went for Rump Steak and chips with onion rings, sautéed mushrooms and chips. Two classic dishes well prepared and attentively served. Having walked the Forvie Sands prior to lunch, dessert had been earned although sharing was the order of the day. Local legend has it that Sticky Toffee Pudding was invented at the Udny Arms Hotel - In error! Some mistake! The Udny's Sticky Toffee Pudding with Clotted Cream Ice Cream is a signature dish, elegantly presented and delicious. Q & A's Trend puts Dave More, Head Chef at Aberdeen’s popular restaurant and music venue Musa, under the grill... How would you describe the style of food at Musa? I’d say we offer an eclectic menu inspired by world cuisine with interesting interpretations of Scottish staples. We use small local suppliers and you’ll find that our dishes are matched to beers from some of the best micro-breweries in the world.

What chefs or cooking styles have influenced you and how has your own cooking developed over the course of your career? The first chef I worked for was Tom Lewis at Monachyle Mhor in Perthshire. From day one I learned the importance of freshness and locality of ingredients. We cooked big bold flavours often sourced that day from the garden, farm or local woodland. The amazing thing with working with food is the near limitless abundance of styles and flavours used throughout the world; by encompassing this each day is a fresh new vibrant learning experience for myself and my team. What are your culinary ambitions? Having worked at MUSA from day one, I want to continue to offer up the freshest food possible and to continue to build on the vibe that my team and I have built up. I really enjoy working with great Craft Brewers from around the globe and guest chefs on our monthly dinners, too. What's your own favourite food? I am a lover of seafood. My father was a fisherman so I was brought up on the freshest of fish. How do you come up with new ideas for dishes? I read a lot of food blogs online by both professionals and amateurs. I also listen to

customers and often ask “What would you like to see on the menu at Musa?” I forage a lot locally during various seasons and love the challenge of incorporating wild garlic, mushrooms, seaweeds and berries that I have gathered in to menus.

Ever had a culinary disaster you'd like to tell us about? I once had a kitchen porter many moons ago who strained consommé down the drain rather than into a pan! The problem was it was Christmas Day and it was too late to rectify the problem. I had to remove the dish from the menu at the last minute, so I ended up with a very red face and an even more annoyed manager berating me.
Ingredients 2 pheasant Supremes, from your butcher or game dealer 500g potato 1 peeled and diced celeriac 1 Granny Smith apple peeled and diced 100ml of honey 1litre of good quality beef stock reduced to 250ml 1 tablespoon of redcurrant jelly
What three essential qualities do you need to be a top chef? You need strong organisation and communication skills and to be highly motivated and happy in your workplace. That’s 3 or 4 depending on how you look at it but they are all key skills.

Roast the diced celeriac for approximately 40 minutes at 180.C until cooked. Meanwhile, boil, drain and mash the potatoes. Combine the potato, celeriac, apple and honey.
Pan fry the pheasant Supremes for two minutes on each side then allow to rest for another two minutes. Add the redcurrant jelly to the beef stock and allow it to dissolve. Serve with seasonal vegetables. Serves 2.

James Kelly is fast building a reputation as one of the North East’s most sought-after photographers, but you’re more likely to see his work in galleries, homes or Horse and Hound than in Trend. How do you follow up a vehicle so perfectly pitched at the premium market that it has sold over 12 million models since being launched in 1975? That was the problem facing the designers and engineers charged with producing the new BMW 3 Series models and it’s a challenge they’ve certainly risen to. The new BMW 3 Series Sedan launched just before Valentine’s Day and strengthens the North East’s enduring love affair with the marque. The new 3 Series Sedan offers a choice of refined, fuel-efficient engines that operate with the new BMW TwinPower Turbo technology. A full-hybrid version of the new BMW 3 Series will also be available in autumn 2012. 58
The new BMW 3 Series Sedan exceeds the performance of the previous model, but is more fuel-efficient. The vehicle also offers greater driving comfort and is noticeably more spacious. Smart lightweight construction ensures that the vehicle is still up to 45 kilograms lighter than the previous model, depending on the engine. In combination with fuel-saving EfficientDynamics technologies, this also has a positive impact on consumption: For instance, the 320d EfficientDynamics Edition with an engine output of 163 hp uses only 4.1 litres/100 kilometres in the EU test cycle, with CO2 emissions of 109 g/km. The BMW 335i with six-cylinder engine and 306 hp has a fuel consumption of between 7.2 and
7.9 litres/100 kilometres in the EU test cycle, depending on vehicle configuration. The Auto Start Stop function comes as standard for all engine-transmission versions. The new models let you choose different drive style set-up offering a sportier or more eco-friendly ride, but, as usual it’s the extras that make the 3 Series special. We liked the head up display, which projects information onto the windscreen and the ConnectedDrive infotainment and assistance services. With outstand performance, handling and comfort, we’re giving the new 3 Series five stars.

A former bakery in Lumsden may not be the first place you’d go looking for a world-class sculpture facility, but for more than thirty years, the Scottish Sculpture Workshop has been attracting artists from all over the world to create new work here in the North-East. Artist Fred Bushe, OBE RSA, converted the bakery into studio spaces and accommodation for artists back in 1979. Thanks to a consortium of creative agencies supporting major capital developments, the Scottish Sculpture Workshop now has extensive facilities for working in a variety of mediums. SSW provides one of the only artist access foundries in the UK and staff to teach various casting techniques, metal and wood fabrication. The centre also offers metal and wood workshops, a ceramics studio, fabrication room, glass kiln, and a resources library, mobile radio station and recording equipment, studios and residential facilities. The SSW’s Creative Producer, Emily Wyndham Gray, is keen for more people to discover what the workshop has to offer, explaining, “You don’t need to be a professional sculptor to take advantage of the workshop, as the centre offers public access classes including nonresidential and residential courses. We have something for everyone from complete beginners to advanced students in stained glass, ceramics, metal casting and fabrication. “There are many ways to become involved at SSW. We have regular open events, from potluck dinners to public iron pours, exhibitions and artist projects. You can also take a workshop or course, come and spend time creating work as a resident or day artist, undertake an internship or volunteer. People are also welcome to take a tour of the facilities and meet resident artists; open access hours are Mon to Fri 10am to 5pm, and weekends by appointment”. “In 2000, I found myself living in the country with my husband, kids and a menagerie of cats, dogs, hens and pigs and I taught myself some basic sewing techniques when my three children were young. I was just making simple things like homework bags and baby bibs. I’ve always been keen on trying a lot of new things but I’m not the best at following instructions!
“I start with a very rough sketch then start making the piece. I often change the design as I go along – and there’s always something new to learn. For my own projects, I enjoy a challenge - taking an idea and seeing how large and fun it can become. I get quite carried away when I’m working. I guess that’s why I’ve made a quilted yurt and a Smart Car!
“I’d always been interested in quilting, but previously I’d had no time to take classes as I worked as a primary school teacher. I took a few rather complicated classes after 2005 but missed out on many of the fundamental beginner’s techniques, so I’ve taught myself.
“I also really enjoy teaching beginners to get started and helping competent quilters to stretch their quilting skills. I’m fortunate to have been invited to teach some of my techniques and ideas to groups of established quilters both here and in America.
“Quilting has become fashionable again all over the world - quilters communicate via the internet, blogs and Facebook. Some quilts are still traditionally made by hand for beds but there are many art quilters or textile artists using the latest machines and gadgets. It’s wonderful that quilts are gradually being accepted into the art world.
“The easiest way for people to get started in quilting is to get in touch with the Quilters Guild of the British Isles to find out about quilt teachers or local groups. Alternatively, find a basic book at the library or contact me if you’re interest in classes.
Both the V&A in London and the Metropolitan in New York have held exhibitions recently and there are specialist museums and major quilting festivals in Birmingham, Texas and Tokyo Japan which feature contemporary work. “Much of my work is inspired by the natural landscapes around me. I’ve also made pieces inspired by everything from architecture, the way colours work together, interesting fabrics and even motifs from wallpaper patterns. For some reason I get lots of ideas when I’m walking the dogs.
“I love seeing my projects in print in quilting and textiles magazines and I find teaching and talking about my work very satisfying and there’s nothing I enjoy more than working on a new quilt”. Treasure Hunting in Turriff Admittedly, I enjoy shopping as much as most women, and certainly more than my husband would like. I just love finding the perfect gift or hunting down a great bargain, but what I really take pleasure in is discovering a new place to shop – somewhere away from the city bustle that offers boutique-style shopping in a relaxed setting. Enter Turriff. After repeatedly hearing this small market town referred to as a premier shopping destination, I decided to make my way northwest to find out for myself. Within minutes of my arrival, I knew I wouldn’t be disappointed. The town centre boasts so many specialty shops; it would be a struggle not to find something for everyone.

Shopping can be hungry work, so a visit to some of Turriff’s quaint local eateries was practically a necessity. A mid-morning coffee in Celebrations gave me a real boost and, to see me through the afternoon, I ate a lovely lunch
in the Country Kitchen Café. An evening meal seemed a step too far, but I did make a mental note to return sometime to The Fife Arms, which stands proudly in the square in Turriff, and enjoyed a favorable review from one of Trend’s gourmet writers. My afternoon of shopping proved very enjoyable, indeed, and I made my way home with a fair few treasures as reminders. But the greatest treasure of all was Turriff itself – a shopping destination I definitely plan to visit again.

Winter Escape to Dubai Christmas was full of fun and excitement, especially for my seven year old daughter, but for me the prospect of an escape to Dubai for some winter sunshine over the New Year period definitely kept my spirits up and stress levels down.

Despite its reputation for glitz and glamour, a relative playground for adults with an array of sports activities available, bars, clubs and restaurants in abundance, look a little deeper and much thought has gone in to keeping the little ones occupied both day and night. After a little investigating as to what it would offer my daughter we took a trip to Kidzania in the Dubai Mall. This mini world theme park is where children can play at being grown ups, trying out various occupations such as doctor, dentist, radio presenter, bank teller... the list is endless. Whilst doing this they also earn money, the currency being Kidzania KidZos, which they use to go to art school, beauty school and take part in a variety of other activities. Our daughter was lost in her own little world for most of the morning and tearing her away proved rather difficult. We stayed at the Address Hotel in the Marina which is a smaller neighbourhood, something which Dubai is now focussing on, and there was certainly more than enough to
entertain us in and around this area without being lured to the busier uptown district with its big attractions. The Address is attached to the Marina Mall which offers a wide variety when it comes to that point of the holiday when a little retail therapy is required, fashion for all the family, beauty and pampering (with little lady packages too!) coffee shops, restaurants and a fantastic cinema. With the pleasurable temperatures at this time of year, you can enjoy being outdoors and the Marina Walk was right on our doorstep. This is the main thoroughfare which runs the whole length of the Marina and you will find it busy with people taking a stroll or, for those wanting to keep fit, it’s a great jogging and cycling track. If you’d rather relax and people watch there is an unlimited choice of restaurants and cafes to keep the whole family happy, all with outdoor dining. Children are made to feel very welcome in most of the restaurants. Cults and Stoneywood both had literary societies, we still had a workhouse and a lunatic asylum, fires and industrial accidents were almost daily occurrences and Trend 1912 would have been carrying ads for rupture trusses, corsets and patent pink pills!

Not many shops require directions that read ‘follow the winding country roads, through the small towns, past Queen's View, and on until you see a clock tower rising out of what looks like an old steading.’ Tower Antiques and Cabinet Makers is a bit unusual, though. The countryside is littered with ‘antiques this way’ signs, that promise much and deliver nothing other than bric-a-brac, but – ever dedicated to my quest for the perfect country shopping experience – I followed signs to Tarland and the minute I stepped over the threshold of the warehouse I knew this place was different. Furniture and lighting is the focus – not just bits and pieces – and there is a vast amount of it, all lovingly restored in the on-site workshop
of this long-standing family business. There is furniture from all eras – Victorian, Georgian, Edwardian, Regency – in all finishes – mahogany, rosewood, walnut, satinwood, oak – and in all sizes. Barely in the door, I was faced with vast armoires and wardrobes, stunning desks (writing, knee-hole, roll top), and chairs, stools and chaise lounges that have been carefully reupholstered in fabric that is nicer than anything I have seen on the high street.

What makes Tower Antiques even better is that the furniture is complemented by a genuinely charming selection of small collectables. I recommend a first trip around to take in all of the big pieces, and a second trip – a much slower trip – to make sure you don’t miss any of the silver, chandeliers, ornaments, mirrors, paintings, or china. And you can’t leave without a getting a demonstration of the old working music box…. I’m not going to say any more about it because I don’t want to ruin the surprise. Since 2003 Interesting Music Promotions (IMP) has added vibrancy to Aberdeen’s cultural landscape with a deceptively simple mission statement: to bring ‘an eclectic range of live music to venues in and around Aberdeen’.
“We grew up loving live music and the John Peel show,” co-founder Mike Tyers tells me, explaining the ethos behind IMP. “In a similar spirit we find fresh, exciting acts from around the world and bring them to Aberdeen. We try to create a positive, welcoming atmosphere on our nights. We want to people to leave with smiles on their faces!”
With approximately 250 events under their belt to date, they are responsible for scores of unforgettable evenings across the range of musical genres and have earning a loyal following along the way.

Nae Ordinary Burns Supper More than 200 people had a fantastic night at Fiona Kennedy’s ‘Nae Ordinary Burns Supper’ at the Mercure Ardoe House Hotel. Around £17,000 was raised and proceeds are proudly supporting three charities - VSA, F.R.O.M Scotland and Skillforce Scotland. But back to Jenny. She attributes some of her get-up-and-go attitude to a year spent in high school near Wichita, Kansas. “You certainly learn about the importance of service in the States,” she said. And is there time for a boyfriend? “Yes, indeed,” said Jenny. “He’s a baker but, please, no jokes about him having plenty of dough.” Happy to oblige.
