My encounter with 8th Dan of the World Karate Confederation, gentleman Ronnie Watt, was an inspiration. Alison Daniels found out why there’s a six month waiting list and a £350 fee for an appointment with Andrew Barton, Saks’ International Creative Director and star of ‘Ten Years Younger’, when she submitted to the scissors at Saks salon in Aberdeen.

So how did you get started in hairdressing? I wanted to be a fabric designer when I left school. I was always pretty good at art and English, so I went oﬀ to Art College. Now I say that I design with hair, and I’m lucky enough to get a new project and the chance to meet people. What sort of people are your clients? I see a lot of normal women and I’m always very honest about providing advice. A lot of clients have seen me on TV and save up for a consultation, or their partners treat them. It’s all about the right style and colour. Your hair can change the way you feel about yourself

and the way others see you. You can make yourself look taller and slimmer with the right cut. Your skin glows and you can lose years with a softer, more ﬂattering shade. What projects are you currently working on? Well, I’m in talks about having my own TV show, I’m developing new products like branded hair accessories and brushes, and I’m writing a book about the cultural signiﬁcance of hair and how people can make the most of what’s available. The book draws on a lot of the characters I’ve met over the years.

Name your three desert island ingredients. Garlic, potatoes and lamb – it’s my favourite meat. Garlic, because I love the flavour. What’s the biggest compliment your cooking has received? It has to be from the Nargile owners. They started the restaurant 26 years ago and trust me to run it for them, which is a huge compliment to me. In the kitchen, are you hot and fiery or cool as a cucumber? Definitely cool. I enjoy my work and the pressure, and have a great team of staff so it's very rare that I get angry. Delia or Nigella? Delia, because I grew up watching her programmes with my mum. What’s the most bizarre request you’ve received from a diner? I once had a woman ask to have her whole meal blended together - the meat, rice and salad! Who’d be your dream dinner companion? Wayne Rooney. As simple as the conversation would be, the man's a hero. What’s the biggest sin anyone could commit in your kitchen? Anything to do with poor hygiene. I take great pride in the cleanliness of my kitchen. 26

Patlican Kizartma Lightly fried aubergine slices topped with seasoned onion, cream of yoghurt and a sprinkling of feta cheese, oven baked and served with a roasted red pepper sauce. Ingredients Aubergine, olive oil, large onion, garlic, seasoning, dried basil, tomato puree, thick set yogurt and feta cheese.

Sautee the ﬁnely chopped onion in olive oil, seasoning with salt and cracked black pepper, a teaspoon of crushed garlic and a dessert spoon of dried basil and tomato puree.

Preparation Thickly slice the aubergine, shallow fry, then set aside.

Bake 4 red peppers until the skin blisters, seal in a bag until cool, peel the ﬂesh and blitz in a processor with olive oil, season with salt to taste.

Dinner Review: 210 Bistro The floor to ceiling glass frontage of 210 Bistro on South Market Street offers views of urban skyline meets working harbour. The downstairs bar sofas are the type that you can easily sink into for the evening and in the inviting first floor restaurant, dark wood contrasts with comfortable moss green chairs and booths.

We opted for the asparagus and parmesan tart (£4.25). It was a light and spring like starter served with salad and mustard dressing. I also enjoyed three delicious seared scallops on top of a soft and creamy lemon risotto, which added a pleasingly sharp contrast to the natural sweetness of the scallops (£6.95).

The menu features six starters and six main courses with the addition of changing specials, and emphasis is on local and seasonal produce.

Given the proximity of the harbour I chose the pan fried sea bass for main course. Perfectly cooked, the skin was crispy and the flesh moist. Served with sautéed new potatoes, braised leeks and a rich tangy lemon and tarragon cream sauce, it was a delight (£14.95). My partner went for a special of the evening, beef stroganoff. Tender strips of beef and a flavour packed sauce made it a true winner. The banoffee

The wine list is fairly priced and also offers a selection by the glass. We enjoyed a bottle of Oscar Brilliant Les Aublers Sancerre 2007, £25.00. Fresh with grassy, grapefruit notes this had a refreshing apple and lemon zing. 28

Wine Dinner Review: Darroch Learg On a hillside above the town of Ballater, the Darroch Learg has uninterrupted views to the mountains. The former country residence is charming and characterful with a relaxing and welcoming feel. Under the ownership of Nigel and Fiona Franks, it has built up a well deserved reputation for the quality of the food and the wine list. They host occasional wine dinners, and on this occasion we spent the evening in the company of Jean Soubeyrand of highly respected Burgundian producer Olivier Leflaive, based in the village of PulignyMontrachet. The emphasis of the evening was on white wines and it was a great way to see the different terroir influenced styles of Chardonnay.

The evening started in the lounge with a beautifully crisp glass of Bourgogne Les Setilles 2007. The grapes are sourced from both the villages of Puligny Montrachet and Meursault, giving a perfectly tuned rendition of Chardonnay. Poached Halibut in a creamy herb and endive sauce was well placed against a rich and buttery Meursault Clos Du Cromin 2006. With notes of baked apple and a savoury edge, it was lifted with a mineral acidity. Breast of chicken with truffled pommes purees, lardons and garden peas was married with my favourite expression of white Burgundy â&#x20AC;&#x201C; Puligny Montrachet. In this case it was a single vineyard, Les Meix 2006. With lively fresh notes of orchard

fruits, there were touches of creaminess with mineral and peach. The finish was elegant and lingering. A beautifully ripe Epoisses cheese finished the evening, accompanied by a lovely expression of Pinot Noir - a red berry and blueberry perfumed Cotes De Beaune Villages 2006. Ronnie Watt’s introduction to the sport that was to become his life’s work couldn’t have been more dramatic. As a 16year-old engineering apprentice with a promising career, Ronnie’s leg became trapped in machinery, leaving surgeons battling to save his limb. Ronnie spent much of his stay in hospital pondering how he would be able to take up a sport when fully recovered. “My friends were going horse-riding, even parachuting, but that was not for me. I tried judo, but there was something about it I didn’t like,” remembers Ronnie, (now 62) and 8th Dan of the World Karate Confederation. Then a trip to the cinema, which saw iconic Bond Sean Connery in a karate stand-off with Pussy Galore in ‘Goldfinger’, inspired Ronnie to try this other form of martial arts.“The training was primitive and very hard. The discipline was a culture shock,” admits Ronnie, who launched his Shotokan School in 1965 – only two years after his horrific accident. A passionate Ronnie has made five visits to train with the great masters at some of the toughest universities in Japan. In 2001, Aberdeen lured 900 black belts from 45 countries to the world championships, confirming the city’s rightful place as a karate world centre of excellence. Two thousand black belts have come through Ronnie’s organisation and students have won 38 medals in World and European events. His focus is now on shaping cadets and children in preparation for the next world championship challenge in Venice 18 months from now. Ronnie’s massive contribution to the karate world is the subject of a new book by acclaimed martial arts author, Dr Clive Layton entitled ‘Ronnie Watt, 8th Dan Director of Shotokan of the World Karate Confederation’. The book is to be published by the National Karate Institute Scotland, and it is hoped that the many people who read the book will be inspired by Ronnie’s struggle to get to the top of one of the hardest sports in the world. Gym Myths and Fears 1 Everybody is looking at me! Wrong. Once you get to know other members and the staff, you will feel more at ease. Liken it to your first day at a new job. 2 The personal trainers will be aggressive like Harvey from Fat Camp. The likes of Harvey are a dying breed. Think of trainers as a gym buddy with lots of knowledge. 3 But if I lift weights I will get big muscles? You should be so lucky! Even with all the weightlifting, eating and supplementation I take to help my muscles grow, I find it hard to put on more than 5-7lbs of muscle a year. Ladies, without the abundance of testosterone, your muscles will not grow very much at all. 4 I need to buy all the right expensive equipment. Not necessarily. Ask the gym staff or your trainer for tips on what is essential. 5 I won’t know what to do– I'm going to look stupid. No you won’t. Any good gym will offer a free induction and demonstration. Often you will get a free check-up every 6-8 weeks to make sure you are on the right track. 6 I'm too old to use a gym. Not true. Some of my oldest clients have been in their 70s. 7 I'm not very fit Good – you are in the right place, then! Try cycling for a short period (like 5mins) and record your distance. Try to cycle a little further every time.

8 I've been a member at other gyms and I get bored after a while. Set yourself goals and change your programme every 6-8 weeks to keep training interesting. 9 I don’t like using the gym. I feel uncomfortable with all those big men about. Some gyms are typically for bodybuilders only and can be loud and intimidating for other users. Find a gym that is right for your needs or perhaps train as part of a group or class. 10 How do I lose the fat from my tummy? I need to go on a diet. We cannot choose the areas where we want to lose fat. Activities like putting short bursts of eﬀort into your cardio or weights workouts will help to burn fat. Circuit classes are great for this. TAKE THE PLUNGE Aberdeen Watersports, on Waterloo Quay, is the only Padi 5 Dive Centre in Aberdeen.

They offer a variety of scuba options, which can be utilised by anyone from the age of eight upwards. Children can enter the ‘Bubble Maker’ programme, an introductory course to scuba, or the ‘Seal Team’ programme which lasts for six months and consists of 20 dives. Adults enter the ‘Discover Scuba’ course which is the best option for securing the Padi qualification. My instructor is the highly experienced Jane McInnes, veteran competitor and judge and star of a number of carriage driving training DVDs. Once we’re in the ﬁeld, it’s my turn and after an early tendency to veer left, we’ve mastered the art of going in a straight line. Next up, we’re slaloming left and right until I work out the right

degree of control. By the end of the lesson, I’m able to go round the field through various gates without any major incidents. Either I’m off to a promising start or the pony’s an expert! The centre also offers a hire service for brides that want to arrive at the church in style and several of the carriages have appeared in films. It also caters for pleasure drives and picnics through the forest or down by the Dee. Jenny points out that carriage driving is a friendly, family-oriented sport and that her customers range from business people relaxing after work to children of eight and upwards. Her oldest client was probably a lady who celebrated her 100th birthday at the centre. Like all Jane’s visitors, she had a great time. 47

Making the transition to garden design was not an obvious one for a woman who had spent 18 years in HR management and earned herself a respected position within her industry. When Kirsty McLean’s daughter Emma, was born, though, her professional focus shifted. Instead, she called on her creative talents to launch a burgeoning business that would see her working in an environment inspired by her rural upbringing. Kirsty – who grew up surrounded by farmland in the Udny area of Aberdeenshire – established The Garden Design Company Scotland a decade ago. She combined her business acumen with her ﬂair for 52

design. Buoyed by the results of her intensive market research, she undertook a series of business courses. She was soon to sign up for a garden and landscape design course with the Royal Horticultural Society, which included a year’s portfolio work. Coupled with press coverage about her talents, this led to a massive interest in her work. In 2001, she received a surprise call from the production company, Tern TV,

I am sure most of you have either heard or read about the Bugatti Veyron – the four wheel drive, 200 mph plus, three quarter of a million pound worth of super car, now owned by Volkswagen. I have never had the opportunity to drive one and probably never will but who cares, for today I had the pleasure of driving an authentic Bugatti Type 37. The speciﬁcation of the Type 37 is remarkable. Built in 1929, one of 286, it has a 1496cc, four cylinder engine, which develops 60 hp at 4700 rpm and the whole vehicle just weighs 750kgs; a Mini weighs in at 1135 kgs! Ettore Arco Isidoro Bugatti was born in Milan in 1881; his father Carlo Bugatti 58

signed the contract to manufacture Bugattis in 1902 and a legend was then formed. The outbreak of World War One signalled a turning point for the Bugatti family when they moved from Milan to Paris, and this is where Ettore designed eight cylinder and 16 cylinder aeroplane engines. After the war he went back to Molsheim (now French Territory) and reopened his plant at its original location. He then continued to build light elegant sports cars that won victories at Le Mans and thus began a

winning streak that lasted over ﬁve years with triumphs totalling 412. I am astounded by the attention to detail on the Type 37 and I must highlight certain of the engineering features which I think are quite amazing on a car of this age, namely the fully adjustable brake balance bar, only found today on the most expensive competition cars. The steering, suspension and brakes marry together to give this car an outstanding ride quality, considering it is 82 years old. I believe that on the back roads of Aberdeenshire it would give many modern cars a run for their money. The noise and smell of the 37 will linger with me for a very long time.

Believe me, these running machines seem to be everywhere at the moment and they’re making me feel totally inadequate! I made my usual trip for the Sunday papers at the weekend and these people were out in their hoards…. there they were, on every pavement, looking like they’d been exercising for hours but worse still, looking like they were ENJOYING it! I just don’t get it. 62

Once a week, my youngest and I like to partake in some sweet treats at our favourite coﬀee establishment after the morning school-run. It’s a very relaxing hour for us but even then I have to turn my back to the window to avoid the sight of the new breed of ‘Super Mum,’ who is not only track-suited and booted and ready to run a half marathon (makeup fully in place, of course) but she’s also pushing a three-wheeled (designer) buggy.

Aside from the occasional pilates class and yoga session, I’ve recently been fighting a fitness battle on two fronts - a bad back coupled with a long-standing cupcake addiction renders me powerless when it comes to pulling on my running shoes and joining the masses. So, cruelly confined to the house and office, I sit at my computer and fill out yet another sponsorship form for a friend who has decided to run for charity and personal achievement. Joking aside, I really do think you’re all terrific. I spent a year playing rugby in New Zealand when I left school before going to University in Edinburgh for four years to study Business & Accountancy.

After university, I started with Malmaison as a graduate in 2002, when we opened Malmaison in Birmingham. After two years mainly spent in food & beverage, I moved home to Glasgow Malmaison as Brasserie Manager. In 2005, I became Deputy General Manager in Glasgow and then took on my first General Manager’s role at Hotel du Vin (our sister company) in Tunbridge Wells at the start of 2007. This was a great first hotel to run and one that gave me the opportunity to grow in the role. I moved to Aberdeen in August last

Where in the world is your favourite room with a view? It would have to be the view from our table in Thomas Keller’s Per Se restaurant in New York. The dining room overlooks Central Park, and the view on the day was as spectacular as the meal that was served.

What ‘tip’ would you give anyone starting out in the hospitality business? Be prepared to work hard, learn from those you work for and with, and always keep a positive outlook.

What’s the most rewarding part of your job as GM? Building a team and seeing them develop their careers. It’s also always massively rewarding to see the team gaining recognition for their commitment to providing great hospitality. When you’re not looking after your guests, who is looking after you? My girlfriend Paula, who has put up with my long hours - fortunately she understands as she’s worked in the industry as an opening GM too! I am a fan of eating out when I get the chance, good wine and most sports. I was recently away skiing in the Alps, which is one of my favourite ways of switching off from work.
